I’m writing this after spending four wonderful days in Puerto Vallarta, Mexico. I woke up this morning relaxed, recharged, and ready for just about anything that might be thrown at me! This trip was unique in that it was for travel professionals from across the Rio Grande Valley, a FAM tour (short for familiarization) sponsored by the airline, Aeromar, and the hotel, the Westin Resort Puerto Vallarta. Did you know you can be in Puerto Vallarta in five hours? It’s a quick trip out of the McAllen International Airport, with direct service via Aeromar to Guadalajara and a quick connecting flight to Puerto Vallarta. And oh, the food! You can’t even begin to believe all the options to tempt and tease your taste buds! We swam with the dolphins, we danced to live music (on multiple occasions), and we shopped (at retail stores, flea markets and craft markets) ‘til we dropped into bed. We took some time to pamper ourselves at the spa, took a cooking class, did a tequila tasting, and toured the city--eating everything we could find along the way!

t was a lively Thanksgiving at Eldorado Acres in Palmview. Nearly 90 residents turned out to enjoy turkey and ham--donated by the Martin family, owners of the resort--and all the trimmings. Native Texan Finds Solace Through Friends, Helping Others at La Feria Resort it was his time to retire, he felt called to the Rio Grande Valley. While he lived and worked only hours away in Wharton, 2020 proved to be a difficult year for him, with the loss of his mother and brother to COVID-19. Araguz said his faith got him through, but he was ready to change his environment and leave certain memories behind. Over the years, he battled fires, drove cross country, and worked in maintenance and in oil fields. In July, he settled in at La Feria’s Kenwood RV Resort, which proved to be just what he needed. “Something told me to stop and just take it easy. So that’s what I’m here now getting to do--relax and take it easy,” he said. “I just get out of my chair, sit out, look at the trees, look at everything around and pray. I pray for everybody. We all need prayer. I’m a believer in prayer to change and help people.” With a year-round population of just a couple of dozen people

at the park, Araguz quickly made friends and came to enjoy the small-town environment of the community. “For 10 years, I drove crosscountry and met a lot of people,” he said. “I find that people here are very friendly, and now that the Winter Texans are starting to come down, I’m making even more friends. Since moving down here, I really enjoy it compared to up north, which, to me, was a little too fast paced.” And though Araguz enjoys now having the time to relax, he’s the most content when he’s helping. Araguz involved himself in the Resort’s activities, often lending his skills. Whether it’s volunteering in the kitchen to help cook for parties or repairing things around the park, Araguz never hesitates to step up. “I like to check in at the office to see if they need any help. I’m like a handyman. I work with electrical, lights…all that,” he said. “I just enjoy doing it because it keeps me moving around.” •

Bringing Holiday Joy to Children Special to Welcome Home RGV
E
ach year, children across the RGV look forward to Christmas toys provided by the United States Marine Corps Reserve’s Toys for Tots. According to their official web site, harlingen-tx.toysfortots.org, the Marines supported over 20,000 children in 2020, with 21,166 toys distributed in the Rio Grande Valley. Many of those toys came from one retirement community in Weslaco. In fact, in 2020, Siesta Retirement Village donated five boxes of toys and $3,600 in cash. This made the community the second highest sponsoring organization in the entire Valley. SRV has a long history of providing for the Toys for Tots. Don and Amy Van Deest have organized the community’s toy drive for 13 years. Don is a Marine, and the couple was inspired to make a difference for the children of the RGV. “As most of the people in the 55+ parks are grandparents, we love the kids. But it was easy to see so many children down here don’t have the same advantages as our kids, grandkids, and even great-grands have up north,” said Amy. “So we decided to carry on with the Toys For Tots Drive Don started in Wisconsin in

1987, together with businesses and schools in his electric co-op territory there.” Originally, the couple chaired the Taters for Toys dinner, a bakedpotato dinner that capped off the community’s toy drive. That was impossible last year due to COVID safety restrictions. “With COVID putting a damper on all activities, we thought we may have a lean year, but Siesta Village’s residents did not let us down,” said Don. The Van Deests instead organized a golf-cart parade through the community to cap off last year’s toy drive. Residents decorated their golf carts and drove the streets, collecting more toys and cash donations. “The wonderful residents in Siesta Village really open their hearts--and wallets--to the children in the Valley,” said Don. “Their generous spirit of giving is a huge source of pride for us. We only organize; the residents fulfill the dreams for the kids.” Donation boxes are already set up, and the golf-cart parade will continue again this year. Village residents are excited about another successful Toys for Tots this year. •

Sandy Rogers said as she shared details about the event. They had so much that the chef invited anyone who would like to take home an extra meal to feel free. For her contribution, Rogers went outside her self-professed comfort zone to tackle a bit of baking. Inspired by Anne Marie Martin, a member of the aforementioned Martin family, and widely known as a baker of delicious seasonal grapefruit pies, Rogers chose to bake a strawberry pie. To her own surprise, her pie came out delicious and was well received. When she shared with others that she baked it, Rogers says, with a chuckle, the response was often, “YOU did?” She reported that quite a few French Canadians have made their way down to Eldorado Acres this season and joined in on the Thanksgiving feast. “They loved it!” she said, and raved about the food. The early-afternoon gathering was a big hit, said Rogers. “Everybody was laughing and having a good time!” Coming off the heels of a successful and enjoyable Thanksgiving, Rogers and Park Managers Shirley and Gary Thurman immediately shifted focus to Christmas preparations. Along with a small but eager group of volunteers, they set up holiday decorations in the Recreation Hall, resulting in a glistening tree, tinsel, and trimmings throughout. One resident crafted burlap bows to adorn small shrubs outside the entrance to the office. Meanwhile, a group from Bit-OHeaven RV & Mobile Home Park in Donna delivered donations for the Eldorado Acres Holiday Drive in support of the Penitas Community Food Pantry. The Penitas Community Food Pantry serves impoverished residents in the nearby town of Penitas. In the five years she has served the park as activity director, the Holiday Drive has been a pet project for Rogers. “I just can’t bear to think of a child going without at Christmas.” Park residents step up in support, she said. “This Park is a very giving
park.” Residents from Eldorado Acres donate or contribute to the purchase of items. Word of the donation drive has spread. The Bit-O-Heaven crew arrived with a minivan loaded with boxes filled with trinkets, toys, goodies, and necessities. The Park reached out to Rogers after learning about her annual drive on social media. The donations included shorts, dresses, small quilts, and stockings-all handmade. Small backpacks donated by a local store are filled with special items, the stockings stuffed to the brim with little treasures. Rogers was overwhelmed by the contributions and expressed her gratitude to the Bit-O-Heaven group over and over, completely thankful for their generosity and support. Coming up for the residents of Eldorado Acres…Dirty Santa. Similar to White Elephant, participants purchase a gift in the range of eight dollars. Numbers are drawn, and a person can keep their item or ‘steal’ one that has already been opened. Keith Burns of the country band Trick Pony is playing December 21. Burns’ in-laws live at El Dorado Acres, and he occasionally performs at the Park. He is performing free of charge. “He’s funny! He sings great, and he just loves to entertain,” said Rogers. Last year, he performed in the back of a pick-up as residents pulled up lawn chairs and passed the boot-instead of a hat. Burns will take the stage and perform from 7:00 to 9:00 p.m. The performance is open to the public, and donations are welcome. The holiday season at Eldorado Acres will culminate with communal meals on Christmas and New Year’s, including a traditional serving of black-eyed peas; according to southern legend, the peas bring good luck in the new year. The shared meals, the celebrations, the camaraderie, the sense of community--it’s all part of holiday resort life in the Rio Grande Valley. •

Fiesta de Noche Buena Returns to MOSTHistory Special to Welcome Home RGV
T
he Museum of South Texas History presents Fiesta de Nochebuena, a borderland-spirit holiday event featuring traditions, crafts, and Cowboy Santa from 1:00 to 5:00 p.m. Sunday, December 12. The popular Posada Por Tiempo will take guests through the museum’s signature Rio Grande Legacy exhibition while acting through song of the biblical story of Joseph and Mary seeking lodging for the birth of baby Jesus. This Posada Por Tiempo performance is scheduled at 1:30 and at 3:30 p.m. The talented Edinburg North High School Mariachi de Oro will perform classic songs at 2:30 p.m. in the Grand Lobby. Before and after the mariachi performance, guests can participate in Holiday Karaoke fun in the Grand Lobby from 1:00 to 2:00 p.m. and 3:30 to 4:30 p.m. Be sure to practice those favorite holiday tunes! Families and visitors are invited to enjoy fun make-and-take-home activities, which are included with the regular museum admission fee. Museum staff will showcase how to make memory ornaments, paper poinsettias, and reindeer ornaments. Practice lasso skills to “Wrangle Reindeers” in the Will Looney Legacy Park, followed by the breaking of a piñata at 4 p.m. Meet Cowboy Santa in the upstairs galleries and share favorite Christmas memories with him. Free
photos with Cowboy Santa will take place between 1:00 and 5:00 p.m. Keepsake Polaroids are available for purchase at the Museum Store. Additional crafts, art, and jewelry will be on sale by vendors Sew Young Embroidery, Zoquitl Studio, and Iba Sisters Handmade Jewelry & Accessories. Come hungry, and bring some extra cash to enjoy classic Mexican dishes, such as tamales, pozole, and champurrado. For dessert, the Boy Scouts will sell pan dulce, aguas frescas, and sodas. To pair with the pan dulce, La Catrina Coffee will sell ethicallysourced roasted coffee beans and provide free, small coffee samples. Admission fees for Fiesta de Noche Buena are $9 for adults (ages 18+); $6 for seniors (ages 62+), active military and students (ages 13+) with ID; $5 for children (ages 4 to 12) and free for children ages 3 and younger. Helping Hands at Palm Gardens RV Park in Harlingen Special to Welcome Home RGV
W
hat do felt Christmas stockings and wheelchair ramps have in common? For most people, nothing. But for residents of Palm Gardens RV Park in Harlingen, they both mean an opportunity to provide helping hands. Most days in our park are spent enjoying activities and spending time with friends. Every now and then, someone in the park may need help and knows all they have to do is ask and people in the park will step up to help out. In November, our quilt group was asked if they could help make the
holidays a little brighter for some of the Texas National Guard. An organization was planning to give the Guard some small gifts but were looking for a way to present them. So ladies from our quilt group and others from the park stepped up to make HELPING HANDS AT PALM GARDENS CONTINUED ON NEXT PAGE >>

and decorate over 700 felt Christmas stockings to donate to the organization for this purpose. Then, one of our residents needed a wheelchair ramp built. A group of men spent a few days redesigning their deck and adding a ramp so the residents would have easier access to their home. This is not the first time these men have helped out. For the past several years, we’ve been fortunate to have many talented and dedicated men and women in the park providing “helping hands” to individuals who needed some assistance, whether it was building a ramp, power-washing a unit, and helping with weeding and yard work, to name a few. TubaChristmas Concert Returns December 12 Special to Welcome Home RGV
T
ubaChristmas is back! The 32nd Annual Rio Grande Valley TubaChristmas Concert is set for 2 p.m. Sunday, December 12, at the McAllen Performing Arts Center, 801 Convention Center Blvd. in McAllen. This will be the first TubaChristmas in two years. after the 2020 event was canceled due to COVID-19. This unique and entertaining Christmas concert will be free. Since 1989, TubaChristmas has featured several hundred tuba and euphonium players from the Rio Grande Valley and beyond. This ensemble will include members of the Rio Grande Valley Symphony Orchestra, the McAllen Symphonic Band, Valley band directors, and the finest high-school and junior-high students from many RGV schools. In recent years, this concert featured students from McAllen, Edinburg, Pharr-San Juan-Alamo, Mission, Valley View, Donna, La Joya, Rio Grande City, Roma, Mercedes, Sharyland, Edcouch-Elsa, Weslaco, Harlingen, Los Fresnos, Hidalgo, Brownsville, Rio Hondo, and Port Isabel. The Rio Grande Valley TubaChristmas Concert has grown in recent years to become the largest
TubaChristmas event in Texas and one of the largest in the world. This year’s guest artist will be elite brass soloist Adam Frey. He has soloed with many famous orchestras, including the Boston Pops Orchestra, the Harvard Pops Orchestra, the Atlanta Philharmonic Orchestra, and the U.S. Army Orchestra, also performing in at least 17 nations. A native of Atlanta, Frey is an assistant professor of music at the
University of North Georgia and is a Yamaha Performing Artist and clinician. His performance is made possible by a grant from Melhart’s Music of McAllen. TubaChristmas is a series of nationwide concerts that runs each year between Thanksgiving and Christmas Day. Each year, there are more than 150 concerts in 46 states plus Canada and Switzerland. Performance group sizes can range from just a handful to several hundred. It all began in 1974 when about 300 tuba and euphonium players gathered at New York City’s Rockefeller Center to honor the memory of William Bell, born Christmas Day 1902, and to celebrate his considerable achievements as a performer and teacher. Bell was a member of John Phillip Sousa’s band, the Goldman Band, the NBC Symphony Orchestra, and the New York Philharmonic and was on the faculty of Julliard School of Music, Manhattan School of Music, and University of Indiana. Arturo Toscanini, conductor of the NBC Symphony Orchestra, considered Bill Bell to be the world’s greatest tubist. •

One of our new favorite pastimes
is taking a drive along the border. Let us loose on Military Highway, and we’ll spend an entire day exploring every nook in that corner. No destination, just peace of mind we’re going to discover something new and exciting in-between taqueria stops. This is how we stumbled upon La Lomita Chapel, a tiny white gem nesting atop a “little hill,” or La Lomita, in Spanish. This treasure was a special find for me. I remember my grandparents fondly talking about the chapel years ago… and it didn’t disappoint. The structure immediately brings you to another era. Sandstone walls that endured the test of time. Handmade wooden pews that have quietly supported parishioners for generations. A handful of homemade wooden crosses tucked under an old tree. And a traditionally built beehive oven. This is all that remains. But all are worth seeing. La Lomita has been around pretty much since the border’s conception. After the Mexican-American War, the Catholic Church needed a way to maintain a presence along the new U.S. border, so it built a series of missions. La Lomita was among them. At one time, the property was bustling with life and activity. This included a five-room residence with a three-room guest house, a blacksmith shop, a general store, and stables used mostly by the missionaries and Wells Fargo, who used it as a station on the line between Laredo and Brownsville. According to the Oblate School of Theology, there were also at

least a dozen thatch-roofed huts used by the vaqueros, cowboys or cattle drivers who worked the land. The chapel served as the anchor for this small community until a hurricane devastated the area in 1933. It wiped out all of La Lomita’s structures except the mission and the community beehive oven. We went on a Friday morning but wished it had been a bit later in the day to catch the evening mass. We had no idea it was a working mission, at the time. We hope to go back one evening and be a part of such a special moment. If you are interested in experiencing mass while visiting this special corner of the world, we were told the chapel holds them regularly. Otherwise, the chapel is open daily to welcome those looking for a moment of solace or prayer. There are also park facilities and picnic tables just off in the distance to make your stay even more memorable. •

UTRGV South Padre Island Classic Special to Welcome Home RGV
T
he University of Texas Rio Grande Valley women’s basketball team will be hosting the second annual UTRGV South Padre Island Classic December 17 and 18 at the South Padre Island Convention Centre. The Class is a four-game tournament with teams from UTRGV, UTSA, Liberty, and Grand Canyon. December 17 will feature Grand Canyon vs. Liberty at 3:00 p.m. followed by UTRGV against UTSA at 6:00 p.m. Then, on December 18, UTRGV will face off against Liberty at 1:00 p.m. followed by UTSA vs. Grand Canyon at 4:00 p.m. Come cheer on your favorite teams alongside UTRGV’S pep band and cheerleaders. The Vaquero mascot will also be ramping up the crowd for a day full of excitement. UTRGV Athletics is excited to bring college basketball to South
Padre Island and have attendees experience the Island lifestyle while visiting for the games. UTRGV Athletics is dedicated to making itself the Valley’s team and uniting the Valley to come together at events when hosted locally. Fans looking to attend the games have a variety of options when it comes to tickets. Single-day passes will be available closer to the event, but season passes are available now with General Admission or reservedseating options. A multi-sport pass is available for fans looking to attend all UTRGV games, including season tickets to their volleyball, basketball, and baseball games. O
ne of my favorite Christmas memories is from when we lived in Georgia. We had a home on five acres with about half woods. Every season I would buy a Christmas tree in Atlanta and take it home late at night after working second shift. When the kids left for school, I would drill a half-inch hole in the bottom, then take the tree out in the woods and place it on a piece of rebar I had pounded into the ground. When Amy got home from school, we would go out into the woods looking for our Christmas tree. After a few minutes of looking, Amy would call out, “I found one dad. Cut it down.” I went through the motions of cutting, and we dragged the tree to the house. All were thrilled. We did this for several years, and she never knew the secret. One year, Amy and her friend went looking before I bought a tree and gave me the sad news that there were no more Christmas trees in our woods. Well, I got one that night, set it up the next day, and told the kids that we’d better go look again. Amy’s eyes lit up, and her smile was heartwarming. We had to move to Minnesota in
’89. As the first Christmas rolled around, we headed to the local tree seller’s lot to pick out a tree. Amy looked for a while and said, “These trees aren’t as nice as the ones we grew in Georgia.” My wife, Rosie, and I had to walk away because we were laughing so hard on the inside. Our Amy never knew our secret. She died at 28 from cancer. We will never forget the joy she had, walking through our woods in Georgia, looking for that perfect tree. •

Public’s Help Needed in Reporting Wintering Monarchs Special to Welcome Home RGV
W
e asked, and, thankfully, you answered. Now we need your help again. Last winter, volunteers from across the Southeast and Gulf states provided more than 5,800 observations of monarch butterflies. This winter, the partnership of universities, agencies, and other organizations called Monarchs Overwintering in Southeastern States is requesting the public’s continued involvement in reporting sightings. Sonia Altizer, a University of Georgia ecology professor and director of Project Monarch Health, said the information can help scientists determine if these iconic, but declining, butterflies “can overwinter as non-breeding adults in the southern U.S. and how this might affect future population numbers.” The monitoring will also help document how winter-breeding activity might be affecting the annual migration to Mexico. Understanding migration and overwintering behavior is crucial to conserving monarchs, a candidate for listing under the Endangered Species Act. Thousands of monarchs stream across the South each fall on their way to wintering grounds in Central Mexico. In the spring, this eastern population of the butterfly returns to the U.S. and Canada to breed. But not all monarchs migrate to Mexico. Volunteer observations over the past two decades have helped scientists better understand how and why some monarchs breed throughout the winter in the southern U.S. Scattered reports also suggest that some monarchs can overwinter in coastal regions in a non-breeding state, similar to their wintering behavior in Mexico. The goal this winter is to collect more data for a growing partnership that has expanded to include organizations such as Florida Natural Areas Inventory and the North Carolina Natural Heritage Program.
Gabriela Garrison of the North Carolina Wildlife Resources Commission said the monarch is a species of greatest conservation need in North Carolina’s Wildlife Action Plan, as in the action plans of many other states. “So monitoring overwintering populations and learning more about their behavior is critical.” The public is encouraged to report monarch sightings from Dec. 1 March 1 in North Carolina, South Carolina, Georgia, Florida, Alabama, Mississippi, Louisiana, and Texas. Observations are entered in Journey North’s online data portal, where they are transformed into real-time mapping visualizations of monarch migration and breeding. Journey North is an organization designed to engage people across North America in tracking wildlife migration and seasonal change. Program Coordinator Nancy Sheehan said the public has a long history of being a part of scientific discoveries. “Journey North is excited to provide a platform for engaging citizen scientists in this targeted monitoring effort.” Susan Meyers, co-chair of Monarchs Across Georgia agreed. “Volunteers are vital to this effort. If you enjoy being outdoors and exploring your local ecosystem, this is an easy activity that can be done alone or with your family.” Wildlife Biologist Anna Yellin of the Georgia Department of Natural Resources said project partners are grateful to all who reported sightings last winter. “When we come together as a community as we have with this effort, we stand a better chance of protecting the monarch butterfly for future generations.” HOW TO TAKE PART • Step 1: Create a free account at journeynorth.org/reg. • Step 2: Learn how to report monarch sightings at journeynorth. org/monarchs . • Step 3: From Dec. 1 - March 1, submit monarch observations at journeynorth.org/sightings . •

The Band Wanted plays original country music, made famous by Johnny Cash, Patsy Cline, George Jones, and Dolly Parton, as well as current country hits, classic-rock favorites, gospel, and some of their own award-winning originals. Candy and Joshua are loved for their smiles and their beautiful harmony, both on and off the stage. Joshua’s unique style of piano playing is remarkably mesmerizing. Their dream of singing and traveling together was born in Colorado where they were married. They have three grown children. The couple enjoys meeting new people as they travel small-town USA together in their “Band Wanted” tour bus. “We want to inspire others to be the best versions of themselves by

F
or 49 years, Blain and Brian Swabb, the identical-twin duo, have entertained audiences across the country, 15 of those years owning and performing in their own nightclub restaurant, My Brother’s Place. With their constant touring and almost daily performances, they are always perfecting and mastering their skills. Their longevity alone is a testament to their success and to the magnetism that draws audiences to their shows—more than 425 a year. Blain and Brian love to sing and play their instruments as much as they love to entertain an audience. They have opened shows and shared the stage with Neil McCoy, Larry Gatlin and The Gatlin Brothers, The Casinos, David Allen Coe, Trace Adkins, Gary Allen, Faron Young, Margo Smith, Bill Anderson, Confederate Railroad, and Lady A, among others, and have been featured on RFD TV several times. They intertwine wonderful harmonies with excellent musicianship and mix it all with comedy, audience participation, and a high-energy show. ur family recently gathered and spent a whole weekend together. Among our activities was getting out the old videos from our earlier life and plunking them in the DVD player. They had been converted from the older VHS format, so you know how old they were--mostly from the mid-1990s. It was fun to see the little kids again being little kids. We tend to forget what our now-30-40-year-old children were once like, back when life was so innocent. It was also fun to see myself with dark hair and my
brother-in-law with hair. It was especially nice to see people who are no longer with us. It is good to have memories, but watching a movie of dad just being dad in normal life, that was sweet. Those video recorders tended to come out at special events. I kind of wish we had some showing just quiet life in our home--kids doing homework or playing Candy Land with me or Barbie dolls on their beds. Those don’t make a lot of memories, but they were times when the kids were just kids, with little drama around them and small cares. As their lives have advanced, their cares and dramas have grown significantly, too. That is as it should be, as adults are made to do significant things and survive through trials and
rock. If you catch a show, you will also likely hear Motown, bluegrass, and blues. Blain and Brian are two of the most versatile, fun-loving, enthusiastic performers you will ever see. With extensive and outstanding musical skills and a terrific variety of finetuned comedy routines, they will surprise and delight you. With their “twin telepathy,” they think and perform as one. Only siblings could produce their vocal blend and harmony. Return bookings from Ohio to Florida to Texas and Arizona, and all over the Midwest each year say it all! •
tribulations. We have all been there. But sometimes it would be nice to be able to just go back and be a kid again, even for a few minutes. Maybe mom could read me a story, or maybe I could spend some time in the boat with dad again. It won’t happen, and we are all at a point in our lives where our roles are no longer children’s roles. One of the things I have learned is that life goes on. I wish there were videos of my own family in the 1950s, but there aren’t. If you are lucky enough to have them, for any time in your family’s journey, don’t let them sit in a box. Get them out. Go back in time for a few minutes. See the world through children’s eyes. Pause and enjoy the moment. I know not every childhood memory is a great one for
some. It is my hope that yours are. Don’t lose them. I’m just sayin’. •

Valley Symphony Celebrates the Season with A Touch of Frost Special to Welcome Home RGV
J
oin the Valley Symphony Orchestra and celebrate the holiday season this Friday with A Touch of Frost, the annual holiday concert sponsored by Frost. The performance will take place at the McAllen Performing Arts Center at 8:00 p.m. December 10. Under the direction of Maestro Peter Dabrowski, the Symphony will perform holiday classics such as “Sleigh Ride,” “Feliz Navidad,” selections from The Nutcracker, Handel’s Messiah, and Latin favorites “Besame Mucho” and “Conga del Fuego Nuevo.” For the first time since 2019, the Valley Symphony Chorale will join the Orchestra and will perform a capella. The Chorale is made up of 45 vocalists from UTRGV and the broader community and performs under the direction of UTRGV’s Dr. Sean Taylor. The concert will feature
Taylor performing a solo vocal selection, and Symphony musicians Lindsey Gamble (assistant concertmaster) and Patrick Hopkins (assistant principal cello) performing a movement from Vivaldi’s Concerto for Violin and Cello. The concert will be presented without intermission, and masks are optional for those who are vaccinated. “Holiday music is some of the very best music there is,” said Dabrowski. “We love playing it just as much as our audiences love hearing it, and it is a joy to be celebrating with music once again after COVID.” Tickets for A Touch of Frost are currently on sale and can be purchased online at valleyorchestra. org or by visiting the McAllen Performing Arts Center Box Office, Monday – Friday, 10 a.m. - 5 p.m., or calling 956-681-3800. •

Yes, the avocado IS a fruit! The definition of a fruit is that which has seeds inside, so technically, a strawberry (one of our very favorites) is not a fruit as its seeds are on the outside. Go figure! In the RGV, we are blessed to have wonderful avocados readily available and inexpensive. They can be used so many ways (Think avocado toast…yum!), but this recipe is traditional and so delicious. Don’t be put off by the anchovies; the dressing won’t taste ‘fishy,” and they are necessary for a true Green Goddess salad dressing. If you want to use only half of the number the first time you make this recipe, try that and move up from there the next time around. • Lifelong foodie, restaurant reviewer, cooking teacher, and summer Iowan, Sandy Olson spends the Winter-Texan season at Palm Shadows RV Park in Donna. 1 cup real sour cream, not low-fat ¼ cup real mayo, not Miracle Whip 1½ tablespoons fresh lemon juice 1 drop hot pepper sauce (Tabasco®) Kosher salt and black pepper, to taste
Place all the ingredients into a blender and whirl until smooth. Taste and adjust for seasonings. If the dressing is too thick, add a few drops of milk until it’s of pourable consistency OR leave it thick and use as a dip for tortilla chips. It can be made in advance and kept, tightly covered, in the refrigerator for 3 days. NOTE: The anchovies are salty, so go light on any additional salt. •

• 1/3 grapefruit, zested and juiced • ¼ cup cashew butter • 1 8 oz. package dried cherries • 1 Tbsp. flax seeds • 1 cup almond flour • Coconut and grapefruit zest, for topping Blend grapefruit juice, cashew butter, and dried cherries until smooth. Add flax, almond flour, and zest and blend until a thick paste forms. Chill the mixture for an hour before forming into bites. Top with coconut and grapefruit zest and store in the freezer. If I only invested in IBM, or Apple,
or Bitcoin when I had the chance. If I only had bought some real estate before the pandemic, I could make some money selling it. If only I had married that girl or guy. Discussions we have with ourselves and the games we play with “If I only “can lead to regrets or reminding us of a past mistake. Sometimes our “if I” discussions can help us grow and learn. The Bible uses the word “if” many times. Jesus teaches and guides us with lessons concerning that little word “if.” In Luke 12: 22-34, Jesus explains to his disciples about the anxiousness of worldly possessions, food, and clothing. He does not say they are wrong, but he does say seeking after them to have more and more is not very smart. In verse 25, Jesus asks, “Which of you by being anxious can add a single hour to your life?” He goes on to say, “If you can’t do this, why worry about the rest?” Jesus concludes the lesson in verse 31. “Instead, seek his kingdom, and these things will be added to you.” In John 11, the account of the death of Lazarus takes place. Martha, a devoted follower of Jesus, approaches him and says in verse 21, “Lord if (only) you would have been here, my brother would not have died.” I wonder how many times in our lives we have questioned God in that way. “Lord, if only such and such…” The question seems perfectly correct and appropriate at the time in our grief and anguish. Jesus, in his concern and compassion, however, gives the best answer in verse 25. “I am the resurrection and the life…Do you believe this?” Jesus is

telling Martha and us that He is the answer to our grief, anguish, and loss because He is the answer to life. I wonder, sometimes, when my own use of the “if I” statements are really pointed at God, as if to say to him, “I really know what would have been best for me” and then, “I could really rely on myself, and my pride and I don’t need you, Lord.” One more “if” statement is found in Matt 23:37. This time, Jesus is lamenting over Jerusalem in its unwillingness to turn to him for salvation. “How often, Jerusalem, (if only) you were willing, I would have gathered you as a hen gathers her chicks under her wings.” Sooner or later, there will be no more “if.” Jesus will come to claim this world for His own. This season, our prayer is that we do not worry about past regrets or failures that lead to anxiousness. We pray that past successes and gains do not lead to a false sense of pride and security. We pray that we seek the kingdom of God through the Savior of the world, Jesus, the Christ. •

Dark Chocolate Bread Pudding
I am a huge fan of bread puddings of any kind really.
They are never as difficult as they sound to prepare yet they yield this completely amazing, lovely and scrumptious dessert. It will completely wow your guests and equally delight your palate! This one is particularly fabulous, featuring dark, rich chocolate and cream (of sorts). Happy Baking! And.. Bon Appétit! • • 1 1/2 cups semisweet chocolate, chopped, or chocolate chips, divided • 1 cup sugar • 1/2 cup unsweetened cocoa, Dutch-process or natural • 3 cups milk or half & half, divided • 6 large eggs • 1/2 teaspoon salt • 2 teaspoons vanilla extract

Preheat the oven to 325°F. Lightly butter the bottom and sides of a 2-quart baking dish, 9" x 13" pan. Toss the bread cubes with 1 cup of the chopped semisweet chocolate, and place in the prepared pan. Set aside. In a saucepan, combine the remaining 1/2 cup chopped chocolate with the sugar, cocoa, and 1 1/2 cups of the milk or half & half. Set the saucepan set over low heat. Cook, stirring, until the chocolate is melted and the mixture is thickened and smooth. Transfer the mixture to a large bowl, and whisk in the remaining 1 1/2 cups milk or half & half. Whisk in the eggs, salt, and vanilla. Pour the mixture over the bread cubes and let rest for 30 minutes or so at room temperature, until the chocolate custard has been absorbed by the bread. Bake the pudding for 45 to 50 minutes, until it's set. Remove from the oven and let cool for 10 minutes to allow the custard to fully set before serving. Do not over bake. Serve warm with whipped cream, ice cream, or dusted with confectioners' sugar. Pudding can be stored, refrigerated, for up to 5 days. Chef’s note: A 1-pound loaf of bread or brioche should yield about 6 1/2 cups bread cubes. Otherwise use 10 to 12 slices of bread, cut into 1/2" cubes. •
