I hope everyone
had a wonderful Thanksgiving! We host Thanksgiving at our house each year, and by doing so, I get out of having to cook the turkey. Assignments are made early on, and I’ve got it down to where all I really have to do is the mashed potatoes! I have never pretended to enjoy cooking. I’d much rather wash dishes and clean up than cook, and let’s not even talk about baking! I always get excited for Thanksgiving because, along with time for reflection and gratitude, I get to spend some quality time with my family. I call it the calm before the storm! We all know there’s another wave of Winter Texans who make the trek south as soon as the pumpkin pie has been served! If you’re just checking in for the season, I want to take this opportunity to welcome you to South Texas! We’re glad you’re here. And if this is your first time wintering with us, you are in for a treat! Mission Converted Texan Forms Quilting Group to Give Back to the Community Eldorado Acres RV Park received a large donation of fabric, park resident and Converted Texan Fran Mansfield seized the opportunity to combine one of her favorite pastimes with helping those in need. She created a quilting group, Caring and Sharing. In its first year, she and other volunteers from the Park were able to make 32 quilts for children in the community. Last year, the group grew, and they were able to complete 40 quilts. This year, they’re at 83 quilts and are expecting to have at least 100 by the new year. As a small park with fewer than 150 sites, Mansfield said they are a tight-knit community, and she and her husband instantly made connections after relocating from Illinois. Most everyone from their park family helps with this project in some way. “It’s a lot of caring people sharing their talents, women and men,” Mansfield said. “Even if they can’t sew, they’ll come help sandwich them. Some just donate money. If everyone does one thing, everything gets done.” With the volume of quilts, the

group will be making donations to the Mission Food Pantry, Child Protective Services, and a local foster-care organization. “I don’t need to know who they are; that’s not important,” she said. “We just ask that the organizations ensure they’re given to people who need them. There are people without a place to live, sleeping in streets or cars, and our nights get very cold. We’re thankful to at least be able to provide them with the comfort of warmth.” Mondays and Tuesdays are designated sewing days as a group, but many of the members take work home with them. “You see some beautiful, creative people,” Mansfield said. “Last year, we had a few Winter Texans return to the Park with armfuls of quilts. There are five of us who sewed all year. COVID didn’t stop us. It’s a small park with a lot of giving people doing a wonderful thing.” With the group continuing each year, Mansfield looks forward to being able to expand their reach to more community organizations. •

he International Museum of Art & Science (IMAS) presents a community Holiday Market to kick off this year’s annual Christmas Tree Forest, Christmas in the RGV, Sunday, December 5! The annual exhibition of trees, presented by the IMAS Guild, has been an IMAS tradition for half a century. Each year, participants decorate their trees with handcrafted ornaments and decorations according to a theme. This year’s theme is Christmas in the RGV, and participants include Junior League of McAllen, McAllen ISD, IDEA College Prep, Florence J. Scott Woman’s Club, and student groups from McAllen ISD, PSJA North, and IDEA College Prep, among others. But don’t stop there. After you discover your new favorite restaurant, grab your blue suede shoes and walk two doors down to find what’s left of Little Graceland. Once filled with all things Elvis, the home/museum was a popular tourist destination for those passing through. Local retired school teacher Simon Vega served in the Army with Elvis. While in Germany together, the two became lifelong friends. Over the years, Vega turned his home into the sweetest little Elvis shrine this side of the Mississippi. Unfortunately, Vega died in 2017, and the museum closed. But the fanciful gate, a mini replica of Graceland, still remains, along with a few other things one can see from the sidewalk, including “Elvis” above the front door. If you pop into town in February, be sure to make time for the Los Fresnos Rodeo. Known as “the biggest little rodeo in Texas,” it packs a lifetime of excitement into three days. n The Lamb’s Loom, there is a special area we affectionately call the BaaBaa Boutique. It is where you will find all kinds of wonderful, handmade items, from dolls to shawls! Many of our crafter friends have lent their talents to provide fun jewelry, project bags, shawls, scarves, and so many other things. We like to call these “Presents with a Purpose” because when you shop here, you are contributing to this ministry. Another part of our “Presents with Purpose” comes from our Donation Chest. This is the area where, all year, lots of y’all add blankets, dolls, hats, and scarves that are then sent out all over the world with different missionary groups. This year, we also have a special request from a group that serves the homeless for cloth (not plastic) shopping bags. The fall is our biggest time of distribution for all the Donation Chest items. They will be headed out this year to several groups in Mexico, homeless missions in various parts of the country, and many local mission efforts. We often say we all get the fun of playing with yarn, and God is in charge of distribution. You just never
know who the recipients of these gifts will be, but we do trust in the love and care with which they’ve been made. That is the encouragement given to each person who receives, that they walk their journey with another. What a practical way to demonstrate His love to our hurting world. And if you are not a crafter but would like to join in the blessing of others in this ministry, monetary donations are also gratefully accepted in order to pay the costs of shipping of these gifts and our overhead expenses. AARP Foundation Tax-Aide Is Looking for Volunteers
We are looking for compassionate and friendly people to join our volunteer team. We'll provide the training and support to help you learn new skills, and you'll get a grea feeling from helping those in need. The program is lookin for individuals to volunteer virtually or in person in a number of roles to provide help to taxpayers. Our volunteers come from a variety of industries and span from retirees to college students.

D
id you know the Rio Grande Valley is now home to a wildlife park? Fragile Animal Wildlife Park is home to juvenile camels, a pair of sloths named after a famous animated Disney couple, an enormous iguana you can hand feed, otters you can swim with, and a rescue monkey with a bit of an attitude. (According to her handlers, she’s earned it.) Fragile Planet Wildlife Park is located relatively close to downtown Los Fresnos. If you drove past it, you would not know it was an animal park. That’s by design. The Park is open by scheduled tour only, allowing animals time to rest and handlers time to tend to their care. It was founded by a group from New York state who, just like Converted Texans, chose the Valley for its yearround tropical climate and practically zero snowfall. It’s not a big production; it’s just a nondescript house on over 30 acres of land, with a newly built pavilion, animal enclosures, and corrals. But the small size actually adds to the enjoyment of the tours. No big crowds, relatively little walking, and more opportunity for one-on-one experiences with the animals (the ones that are up for it, that is).
The caregivers put emphasis on letting the animals choose, so to speak, if they want to be showcased. For example, during one of the Park’s first tours last summer, the resident capuchin monkey was not up for being part of the educational presentation; neither was Gaston, the sloth, but his partner, Belle, was in the mood to enjoy visitors handfeeding her carrots. Then she--ever so slowly--made her way down her climbing post and took a nap. The variety of tours offered at Fragile Planet Wildlife Park is geared toward educating visitors and promoting conservation. The amphibian lab is not only used to showcase exotic frogs, salamanders, and toads, among other animals; it’s also a working lab, focusing on prolonging the existence of various species. Tours range from an hour and twenty-five minutes to two hours, unless you opt to swim with the otters, which is a three-hour event. Have
you ever wondered what the Bible means when it reads in 1John3:8 that Jesus came to destroy the works of the devil since we live in such a wicked world? Didn’t Jesus accomplish His goal, since it’s totally impossible for Him to fail? Think about this for a moment: Genesis 50:20 basically says what Satan meant for evil (through evil men), God meant for good. We can apply this to Jesus’ life as well as to our own lives. - Satan arranged for Jesus’ death on the Cross, while Jesus arranged for Satan’s complete destruction. - Satan thought he was forcing Jesus on the Cross, when all he was doing was playing into Jesus’ hands. - Satan thought he was trapping Jesus, when all he was doing was falling into Jesus’ trap. - Satan thought he was ruining God’s plans for Jesus, when all he was doing was helping expedite God’s plans for Jesus. 1 Corinthians 2:8 reads says had Satan and the demons known God’s wisdom, they would never have crucified Jesus. - Satan thought he was ending Jesus’ life and power, when all he was doing was helping to usher in Jesus’ everlasting life and power to all believers. - Satan thought he was gaining the victory through Jesus’ death, when all he was doing was bringing on his own defeat. - Satan thought he was stopping God, when all he was doing was helping God. - Satan was so proud of himself for victoriously killing Jesus, when all

he did was embarrass himself for falling into Jesus’ plan for victory and triumph over him. - Satan thought he was triumphing over mankind and keeping us forever in his grip, when all he was doing was ensuring our way of escape and freedom from his dominion. Romans 8:28 says that all things work together for good for those who love God and are called according to His purpose. - This even applied to Jesus when He was trusting God on the Cross to raise Him from the dead. - Satan thought he would prove he was smarter than God, when all he did was prove he was clueless. - Satan thought he would prove he was more powerful than God, when all he did was prove that he had no power at all against God. - Satan thought he would be the victor, when all he did was help make Jesus King of Kings and Lord of Lords. Yes, I’d say Jesus did destroy the works of the devil! Truly, our God is well able to turn evil into good on our behalf. All we have to do is love, obey, and believe He will do it. •

echnically, there are two Delta lakes located just north of Monte Alto. The original Delta Lake sits to the west of Farm-to-Market Road 88, adjacent to the larger, manmade Delta Lake 2 to the east. The latter is home to a large outdoor recreation area known as Delta Lake Park. The Hidalgo County website boasts the park has been recognized by the state for its scenic environment. Dance for the Children with Leslie Blasing Raises Funds for Annual Christmas Project

hh… winter in South Texas is anticipated this time of year-especially this year, as so many who couldn’t come last year are heading to the Valley. As Winter Texan residents are returning, here at Lakewood RV Resort in Harlingen, that means it’s time to prepare for our 28th Christmas for the Children project. We are providing Christmas for 14 less-fortunate families from our local elementary school, where many of our Lakewood RV Resort Winter Texans have spent precious hours mentoring students. This all started with our Worship Committee years ago. Our fundraisers for this project include a Dance for the Children with Leslie Blasing December 8 from 7:00 – 9:00 p.m. The dance is open
to the public. Donations at the door go toward fundraising for our annual project. We also have a raffle for a quilt made by our quilting ladies. Raffle tickets will be available at the dance. As chair of this project, I would like to personally invite you and your friends to come and have fun at the Dance for the Children with Leslie Blasing. On the day of the Christmas for the Children party, the families come to our RV resort for a special morning with Santa, Mrs. Clause, and our residents. They enjoy cookies, punch, and fellowship and receive their groceries, gifts, and a handmade quilt for each child. We receive a warm sense of the season in our hearts, serving God through His work. •

The little, baby, seedless melons are so sweet and juicy it’s hard to improve on that experience. But here is a recipe for a refreshing drink you can enjoy on the porch when the beautiful RGV weather cooperates. •

Watermelon Margaritas

1 ripe watermelon, large enough to yield 4 cups of cubes ¾ cup fresh lime juice Kosher salt for coating the rim of the glasses 1 tablespoon white sugar ½ cup good-quality tequila 2 tablespoons orange liqueur
Remove the rind from the watermelon, and cut the flesh into 1-inch cubes. (You’ll need 4 cups of cubes.) Place them on a baking sheet, and pop into the freezer for at least an hour. You want them fairly hard. Put the salt on a plate, and put ¼ cup of the lime juice in a shallow bowl. Dip the rims of the glasses in the juice and then in the salt to make a nice coating. Set aside to dry. In a blender, place the remaining lime juice, sugar, tequila, and orange liqueur. Add a few frozen melon cubes and whirl. Keep adding more melon, a few at a time, until the drink has a thick, smooth consistency. Pour into the prepared glasses and serve immediately. •

Lemon Cranberry Loaf Submitted by The Junior League of McAllen, Inc.
Yield: 1 loaf • 1 (8 oz.) package cream cheese, softened • 1/3 cup margarine • 1¼ cups sugar • 1 teaspoon vanilla extract • 3 eggs
• 2 tablespoons lemon juice • 1½ cups chopped cranberries • 2¼ cups flour • 2 teaspoons baking powder • ½ teaspoon baking soda
Preheat oven to 325 degrees. Grease and flour a 9x5 loaf pan. Combine cream cheese, margarine, sugar, and vanilla in a large mixing bowl; beat well with an electric mixer. Add eggs, one at a time, mixing after each addition. Stir in lemon juice. Toss cranberries, flour, baking powder, and baking soda together in a large bowl. Add cream cheese mixture and mix just until moistened. Pour mixture into prepared pan. Bake for 1 hour and 15 minutes.
Glaze: • 1½ cups sifted powdered sugar • 4 tablespoons lemon juice

Combine powdered sugar, lemon juice, and butter to make glaze. Allow bread to cool 5 minutes; glaze. cAllen’s Holiday Parade returns this year with in-person attendance, and after last year’s virtual parade, expectations are high for a large turnout. The theme for this year’s parade is “Rockin’ Around the South Pole.” The City of McAllen has always had a love of culture, music, and movement. They wanted a theme that would unite the tradition, fun, and holiday spirit from previous years while expressing their love of music. This year’s parade is shaping up to be one of the largest they have ever hosted. Aside from the usual light-up floats, character balloons, and marching bands, this year the parade will have a special step-off presented by the United States Air Force Honor Guard and Drill Team. Along with the announcement of the theme and special guests, the City of McAllen also announced its new parade partnership with South Padre Island.
South Padre Island is a sponsor for this year’s McAllen Holiday Parade and will have a dedicated portion of the parade route. The dedicated part is named “SPI La Vuelta Zone” and covers one-and-a-half miles of the parade route. Once the balloon handlers reach this section of the parade, they will begin to spin their giant balloons similar to how a person would do a vuelta. In Mexico, when someone asks you to do a vuelta, they mean for you to do a twirl so they can get a whole look at your outfit. The SPI La Vuelta Zone will be modeled after the New York Countdown Ball Drop stage and will have a celebrity host MC and a DJ. Attendees will also receive an SPI Vuelta Zone t-shirt and noisemaker with their ticket. There will only be 1,000 seats available for this area, and tickets are $10. Creamy Corn Chowder
This soup is fabulous and comforting at any time of year, even now, when
corn is not in season because good quality frozen corn works well here. Or maybe you bought too much corn for your Thanksgiving table so this is a wonderful use for that. Be sure not let your onions brown and also take care when blending the warm soup, or use an immersion blender. Enjoy with a crisp Lager beer or a glass of Sauvignon Blanc. Bon Appétit! • • 1 yellow onion, diced • 4 tablespoons unsalted butter or olive oil • 6 ears of corn (or ~ 4 Cups frozen if fresh not in season) • 6 cups vegetable or chicken stock, unsalted or low sodium • ½ cup heavy cream • 2 teaspoons salt • Freshly ground black pepper • Minced parsley for garnish

Using a sharp knife, cut the kernels off the ears of corn. Omit this step if using frozen corn kernels. Place a large saucepan over medium-low heat, and add butter or olive oil. Add diced onion and sauté until translucent and soft, about 20 minutes; do not allow to take on any color. Add corn kernels and sauté until slightly translucent, about 5 minutes. Add the stock to the pot of corn kernels. Return to medium heat and simmer until the corn is soft, about 2 minutes. Add heavy cream, reduce heat to low, and cook for 15 minutes. Remove half the soup and allow to cool until no longer steaming when stirred. Working in batches, purée the cooled half of the soup in a blender until kernels are partly broken, or smooth, depending on your preference, then return to pot, reheating gently if necessary. Season with salt and a few grinds of black pepper. Divide among four bowls, and garnish with minced parsley. •
