Converted Texan Enjoys Decades of Friendship at Alamo Resort Ahlstedt spreads sunshine wherever she goes. Ahlstedt is Alamo Rose RV Resort’s official Sunshine Lady, a responsibility she does not take lightly. She provides reports at the weekly meetings, updating her neighbors on who’s sick and their conditions and who has an upcoming birthday. On birthdays, she delivers homemade cookies and a handwritten card. “Being the Sunshine Lady has been a godsend,” she said. “It has given me so much more than I give it.” In addition to serving as Sunshine Lady, Ahlstedt makes quilts for battered women and children and helps coordinate summer activities for the other yearround residents. They began water volleyball a few years ago, which quickly became a favorite. “We operate like a committee of the whole and sit and decide what we want to do,” Ahlstedt said. “I just try to help them make it happen. The ideas are truly

theirs.” Ahlstedt recently rang in her 90th birthday with a brunch attended by 74 Alamo Rose residents. She credits her active lifestyle and daily bike rides for keeping her sharp and in good health. “I have a tricycle I bought in 2013, and I ride it faithfully every day for about two miles,” she said. “It’s one of the best things I ever did because it forces you to get out. And here you can do that.” The warm weather is just one of the reasons she’s glad to call the RGV her home since moving down full-time from Chicago in the late 90s. She and her husband spent about a decade as Winter Texans first and were among the resort’s first residents. “People were so gracious and welcoming of us,” Ahlstedt said. “The Park has been so good to me all these years. It’s like a family. You really could not live on your own here. The Park is very close--close in age, close in needs. People are unbelievably kind.” •

McAllen Holiday Parade, presented by H-E-B and powered by Bert Ogden & Fiesta Dealerships, parade organizers recently announced more exciting news to celebrate the Christmas season in the official South Pole of Texas, this time with a Rio Grande Valley musical spectacular that will air across the country. A line-up of 13 of the region’s top high-school marching bands will be Rockin’ Around the South Pole as they perform in this year’s parade. Thanks to a delayed Spanish broadcast, the parade will air Saturday, December 25, 2021 on TeleXitos Network in 31 U.S. Hispanic markets. a day for the books you won’t soon forget. Rich in history, artifacts are still found from 1,000 years ago when the PaleoIndians called this territory their home. Battles among Spanish conquistadors, Mexican traders, and Aztecs took place here with one victory in mind--the lake’s precious salt. Once used to preserve meats, hides, medicine, and more, it was a valuable necessity to entire civilizations. During the Civil War, the Confederate Army would use camels to transport 600 pounds a load down to Brownsville for shipment out of Matamoros and Bagdad. Today, sitting on over 530 acres, the five-mile-wide lake is estimated to still hold about four million tons of salt and continues to attract visitors to its unique shores as part of the Lower Rio Grande Valley National Wildlife Refuge. The lake has also been recognized by the National Register of Historic Places for its “international significance.” The park is basically untouched, allowing you to experience the same natural majesty as the Native Americans so long ago. With that in mind, bring what you need, and be sure to take it back with you. There are no facilities, which includes bathrooms and trash cans. Your experience will be different, depending on the water level. We went when it was low, allowing us to walk deep into the shallow lake. The low waters revealed an eclectic mix of shells, artifacts, and salt crystals, among thousands of bird feathers and bones. (Note: Visitors are not allowed to take any of these home with them because La Sal del Rey is under the “protective umbrella” of the U.S. Fish & Wildlife Service.) When you go, pick a day with pleasant weather, and mild temps. If it’s after a rain, bring boots. Bird watching can be epic, depending on the season, so you’ll want to bring binoculars and a camera to get the most out of that experience. And like any eco-tourism spot in the RGV, bring lots of water. •

Head north on Hwy 281 for approximately 20 miles. Exit 186 East for approximately four miles until you reach the kiosk on the north side of the road.

From Cameron County:

Head north on Hwy 77 for approximately 24 miles. Exit 186 West and follow for approximately 22 miles to the kiosk.

Let’s Go to St. Jude’s Prayer Garden A special place to give thanks and reflect

ith Thanksgiving approaching, “Thanks” being the operative word, it’s a perfect time to take a step back from the weight of life and remember all we have to be thankful for. Folks do this in many different ways, like volunteering in their communities and donating to local food pantries. Some may begin their annual gratitude journals, and a few even take to Facebook with their own 30 days of Gratitude Challenge. Others devote their energy into giving thanks with their family during the holiday, with the traditional turkey dinner--complete with Grandma’s recipe for pumpkin pie. During this hustle and bustle, many seek out a quiet moment of refuge to give a personal thanks to their Creator. If this is you, St. Jude Thaddeus Catholic Church has a prayer garden perfect for exactly that. Tucked into a small neighborhood at 505 S. Ironwood in Pharr, this sweet parish has been offering respite for the heavy hearted, with an outdoor garden dedicated to prayer and meditation, since the 1970s. Its man-made cave is as picturesque as it is peaceful. The grounds are kept

beautifully, including native plants gracing the manicured garden and shrine. Locals and visitors alike flock to this peaceful slice of heaven on earth to bend the knee in prayer, light a candle for hope, and bask in the presence of the Lord among the gentle Texas breeze. St. Jude’s also hosts a gift shop open daily, with everything from rosary beads and fresh flowers to Bibles and statues of Catholic saints. The church holds regular masses in both English and Spanish. •

he Mercedes Area Chamber of Commerce will be hosting their annual Welcome Back Winter Texan Reception Wednesday, December 1. The event is scheduled to take place at the Rio Grande Valley Livestock Show Youth Center from 4 to 6 p.m. This event has been hosted annually by the Chamber for over 30 years and has become a huge opportunity for area business people to thank and welcome our Winter Texans back. There will be door prizes and about 200 goody bags, along with snacks and entertainment. We invite you to participate in this very successful and entertaining evening.

Local businesses assist in creating the goody bags by providing the items, such as pens, pencils, magnets, discount fliers. The Mercedes Area Chamber of Commerce also holds a Queen Bean Contest at this event. So whose beans are the best? Teams will cook hot (maybe spicy, maybe not) beans off site and bring them to the event to be judged. Prizes will be awarded, and all beans will be shared with our Winter Texans. The Rio Grande Valley Livestock Show Youth Center is located at 1000 North Texas Avenue in Mercedes. •

Iwo Jima Museum and Gift Shop by Gretchen Losi

ocated on the campus of Marine Military Academy in Harlingen lies the Iwo Jima Museum and Gift Shop. A favorite of thousands of visitors annually, the Museum is home to several prized pieces of military history, including weapons, uniforms, and memorabilia from the battle of Iwo Jima. But most importantly, from a Rio Grande perspective, is the

memorabilia of our own Cpl. Harlon H. Block, who most now know from the world-renowned sculpture of Marines raising the flag atop Mount Suribachi in Iwo Jima. The sculpture now proudly stands adjacent to the Arlington National Cemetery in Virginia at the U.S. Marine Corps War Memorial. While at the MMA in Harlingen, you can see the original, full-size

with Chaplain Shirley Maxson • Ya Can’t Put Out a Fire with a Squirt Gun…or Can You? •

Back in the day, one of my sons

decided to start a fire in a field across from our home. What a day! I look out the window and see him standing there with a squirt gun, trying to put this out-of-control fire out. I freak, grab a garden hose, and try my best to put it out. And the neighbors try to help by calling a fire truck; it was on its way. Which of these three things put the fire out? You may say the fire truck did. I may say the hose did. My six-year-old son stands there and says he did…with his squirt gun. We all three did our part in trying to control and put out the fire. In the Bible, 1 Corinthians 3:6 talks of the sower and the seed. It’s a great story about three different ways a seed was planted and watered. I relate my true story to this scripture. None of us can take pride or credit for controlling and snuffing out the fire that day. It was a joint effort on our part through the wisdom and knowledge we have gained over the years about how to accomplish this catastrophe of an out-of-control fire. Isn’t that just how God works! But some may only have the knowledge of the squirt gun and try to stand alone. Still others may depend on earthly things and knowledge of others to teach them; like the power of the fire truck. All three need God to control, guide, and trust the situation. need more than squirt guns, garden hoses, and fire trucks. We can’t stand alone in our situations. We need to work together for the good God has for us. In Matthew 5:13, Jesus speaks of the folks who are the salt of the earth, those who know Jesus as their savior. One crystal of salt, as a squirt gun, will not accomplish much. A shaker of salt, as a hose, may accomplish more, such as knowledge, power, and love of our Lord Jesus as we walk here on this earth. We need to help each other to grow, but we need God to show us His power and way, as the fire truck. My son learned a great lesson that day. You don’t play with something you don’t know about. Ask, seek, and you will find. We all need each other to show us the true Doctrine of God that only comes through reading and learning God’s Word, the Bible. •

Guerra is an eighth-generation Texan, born and raised on a working cattle ranch in South Texas. She is a self-taught culinary expert and food historian, specializing in the food ways of the American continent, especially Texas regional, Mexican, and Latin American cuisine. In this presentation, she will share delicious recipes and food samples featuring flavors of the southwest that you can make for your Thanksgiving table! Guerra’s passion for cooking, writing, photography, and South Texas is blended perfectly in her unique and innovative take on traditional Latin-American cuisine. Her inspiration comes from growing up in South Texas, along the United States and Mexico border. The diversity of the region has influenced the way she showcases her creations. Combining and celebrating the bi-culturalism of the Rio Grande Valley is as much of a delight as it is an artistic challenge. She has published two cookbooks featuring numerous recipes, The Texas Provincial Kitchen and Dishes from the Wild Horse Desert: Norteño Cuisine of South Texas. Her recipes

have received much acclaim and earned her finalist placings for the James Beard Award in the category of Foods of the Americas and the International Association of Culinary Professionals Award in the same category. Additional accolades include, being a member of Les Dames d Escoffier, a founding board member of Foodways Texas, and a member of The Culinary Institute of America Latin Cuisines Advisory Council Executive Committee. Guerra is also an adjunct professor and teaches food history and college writing at the Culinary Institute of Americas in San Antonio, Texas, and Hyde Park, New York. Rosemary Scented Orange and Grapefruit Compote • 1 cup white sugar • ½ cup water • 3 Tablespoons light corn syrup • 3 sprigs fresh rosemary • 5 oranges, Cara Cara preferred • 5 grapefruit, Cocktail preferred Combine the sugar, water, corn syrup, and rosemary in a medium saucepan. Bring to a boil over medium-high heat; boil for 5 minutes, stirring frequently to avoid burning. Discard the rosemary sprig. Cool syrup to room temperature. Peel and section the fruit over a bowl to catch any juice that drips. Be sure to remove any seeds and the white pith, which will be bitter. Place in a large bowl with the saved juice, and pour the cooled syrup over the fruit. Gently toss to coat the citrus sections. Chill until ready to serve. Spoon into individual bowls, and top each with a beautiful strawberry or a maraschino cherry. SANDY’S NOTE: Please feel free to substitute other varieties of oranges and grapefruit, but choose those known for their sweeter flavor. •

• 1 (18 oz.) package refrigerated slice-and-bake sugar cookie dough • 1 (8 oz.) package cream cheese • 1/3 cup sugar • ½ teaspoon vanilla extract • Banana slices (for rim) • Blueberries, pineapple, orange sections, strawberries, peaches (whatever fruits you enjoy) • ¼ cup apricot preserves • 1 tablespoon water Preheat oven to 375 degrees. Cut sugar-cookie dough into 1/8-inch slices. Line 14-inch pizza pan with slices overlapping. Bake dough for 12 minutes. Cook cookie crust. Blend cheese, sugar, and vanilla. Spread cream cheese mixture over cookie crust. Arrange fruit in circular pattern over cream cheese, starting with bananas on outside rim. Mix apricot preserves with water; spread preserves over fruit. Be sure to cover all fruit so no discoloration occurs. Today, The Border Cook is traveling to our northern border for one

of my favorite holiday treats--Sweet Chex™ Mix. I decided to make the switch because I noticed that H-E-B had Rice Chex™ on the shelf, unlike last season. We always end up making several batches of regular Chex™ Mix each season, but this recipe is special-and impossible to stop snacking on. When you read the simple instructions, this may sound like it would make a sticky mess, but it isn’t as bad as it sounds. Try it! • 1 C. brown sugar • ¾ C. white corn syrup • ¼ t. salt • 1 stick butter • 8 C. Rice or Corn Chex™--or a combination. Other cereals work as well. It’s not a magic recipe. • 1 C. cashews or mixed nuts. Add more if you want to. • ¼ t. baking soda • ¼ t. vanilla extract Place the brown sugar, corn syrup, salt, and butter in a microwaveable bowl and heat for 2½ minutes. Remove from the microwave, and stir the mixture until smooth. Heat for an additional 2½ minutes. Add the baking soda and vanilla. Stir until smooth. Put the 8 cups of cereal and the nuts in a paper grocery bag. Pour the microwaved syrup mixture into the bag, over the cereal and nuts. Shake well. Microwave the bag for an additional minute. While it is still warm, pour the mixture onto an edged cookie sheet. Spread it out every few minutes until it cools to prevent it from sticking together. When completely cool, store in a zippered foodstorage bag. Try not to eat it all in one sitting! • Randy Hoelscher is a transplanted Texan living in the Rio Grande Valley.
