I can’t tell you how excited I am about this season! It has been a long time since we were all able to gather together, and I’m ready to see all our Winter Texan friends! We stayed busy this summer by hosting monthly meetings for our RV resort managers at different parks throughout the Rio Grande Valley. These meetings keep us all connected, moving forward, and informed of what other resorts are doing and are planning to do. We also brought back our Summer Supper Club, which was so fun, trying new places and meeting new friends. Summer Supper Club is simply a way to get out of cooking. We select a different restaurant each week and invite all of our Converted Texan friends to join us. Our grand finale--our last supper-was held just last weekend at Riverside Club in Mission, and over 130 people joined us to celebrate! If that was any indication of what this season is going to look like, then it’s time to dust off my party hat! Whether you are already in the Rio Grande Valley or reading this online from afar, I want you to know your safety is our top priority here in South Texas. The rooms were filled with laughter, chatter, and dancing to live entertainment by Curt James. This celebration was the culmination of Welcome Home R.G.V.’s 2021 Summer Supper Club.

different local restaurant almost every Wednesday. A Dutch-treat gathering of Converted Texans, former Winter Texans who live in the Rio Grande Valley year-round. The goal: to engage the summer crowd while supporting local restaurants. The retired couple from Wisconsin made their first visit nearly 10 years ago and immediately fell in love with the warm weather, food, and friendly people. “I say it’s Disneyland for elderly people,” Larry said. “You can do as little or as much as you want. The culture is just unbelievable.” They are now Converted Texans living in Mission’s Lamp Lighter Mobile Park, where they feel right at home, having fostered a second family. Instead of escaping the harsh winters of Wisconsin, they now spend their summers traveling in order to avoid the scorching temperatures of South Texas. And whether their trip is spent visiting their home state or attending RV rallies across the country, they enjoy serving as unofficial ambassadors of the RGV, promoting its growth and prosperity by encouraging any and every one they encounter to visit. Before heading out of town, they make a stop at the Welcome Home RGV office to pick up stacks of papers and materials to distribute to their new friends, whom they say typically have no idea how many activities and 55-and-up parks the South

Texas region has to offer. “I always heard that if you want beaches, you go to Florida, and if you want friendly people, you go to Texas,” Larry said. “I’ve found that to be 100-percent true. Others are starting to realize the wonders of the Valley, and we’re seeing more and more Winter Texans become Converted Texans, like us.” Over the years, the Mainzes said, at least a dozen of the friends they’ve made along their cross-country travels have made it down, with one couple even buying a unit in Lamp Lighter and becoming their neighbors. While they had to skip out on traveling the past two summers, they were still able to enjoy some local adventures. “We did travel to Corpus Christi twice this year in our motor home, and we also went to South Padre Island for a week,” Jan said. “Plus, we’re close to Nuevo Progreso. It’s nice to go to Mexico because we get to enjoy the best of both worlds, and we always like to bring back a lot of their delicious candy.” And though many of the parksponsored activities have not returned, they’re just as content sitting out on their porch, basking in the sunshine and welcoming their neighbors to join them and visit. •

the week between two and five,” Riester says. The finale event mirrored many of the gatherings throughout the summer. A few weeks prior, upbeat music piped through speakers could be heard just over the full house at Mambo’s Seafood in McAllen. Converted Texans took over nearly half the restaurant. Servers took orders table-side as people caught up with each other, some meeting for the first time, sharing a table out of necessity. Soon, trays full of freshly prepared seafood were served, and the lively chatter dulled somewhat. Roger Stansberry and his wife, Doris, refer to Wednesdays as their “day off.” The couple has an active summer schedule at Bentsen Grove Resort in Mission… except Wednesdays. They attended every Summer Supper Club gathering from April to October, including the finale event at the Riverside Club. When it comes to trying a new place or returning to a favorite spot, Doris says, “We make a day of it.” The Stansberrys were often joined by other full-time Bentsen Grove Resort residents. Decked in signature Welcome Home R.G.V. bright orange, wearing a ‘Winter Texan’ ball cap adorned with a “Summer Supper Club” pin, Chico Garvis, also from Bentsen Grove Resort, was a regular fixture, along with the Stansberrys. “[Summer Supper Club] gave us many opportunities to try many different restaurants.,” Chico said. “Now we go back into the park and can say, ‘Hey, we’ve been here! Try it out; you’ll like it!’” Word of mouth was key to the success of Summer Supper Club. The first event included all of five people, three of whom were associated with Welcome Home R.G.V.

The ever-popular Arturo’s in Weslaco hosted a large turnout of Summer Supper Club goers.
“We were worried,” says Riester. “We thought we’d bit off more than we could chew.” But, as Riester recalls, “Word spread, and each week during that first year in 2019, the event grew. By the end of the summer, the final gathering had to be split between two restaurant locations.” Mambo’s manager Jose Luna is a restauranteur who recognizes the value of the Winter and Converted Texan market. “A lot of Valley businesses, their annual sales depend on them,” Luna says. The benefits of a full crowd at his restaurant with Converted Texans on a mid-week afternoon has a ripple effect. “It fills up our restaurant. People see a lot of cars in the parking lot and they say, ‘Wow! Something’s good there.’” When something is good, word spreads. The Stansberrys say they enjoy trying new restaurants and have been known to drive 40 miles one way for a good meal. They will even head to South Padre Island for lunch, on occasion. During Summer Supper Club, the couple shares, they particularly enjoyed trying new places. Roger shares, “I take a look at the quality of the food and the service. I’m not too worried about the price, for the most part, if it’s a little bit

more, usually you get a little more food.” Doris adds, “Often times you can get two meals out of one.” “We’re trying to change the perception of what the Valley has to offer while also showcasing the impact Winter and Converted Texans have on our community,” says Riester. Two rooms over, the crowd could be heard joining in to sing the choruses of “Sweet Caroline” and “Elvira.” The dance floor was often packed, especially when the line-dance favorite, “Cupid Shuffle,” played, as less confident dancers focused on the feet of the well-heeled. During a break, Riester and his wife, Stella, also a member of the Welcome Home R.G.V. team, along with WHRGV owner Kristi Collier, doled out door prizes, including a raffle drawing for nearly $400 in gift cards contributed by participating Summer Supper Club restaurants. And, as lively as it was, just like that…it was over. Patrons gathered up leftovers as they made plans to attend ‘Happy Hour’ and go dancing. “It’s been really good,” Doris shared. “It was nice to get out this year.” The mood and vide of the Summer Supper Club’s second full season was a celebration, alright, with hope it lasts throughout the year. •

(HCA) has announced the lineup for the 2021-2022 season. While the concert stage went dark in 20202021, the HCA worked remotely to craft an exciting new lineup for 2021-2022. Five outstanding shows are planned at the Harlingen CFC Auditorium for the fall and winter concert season. HCA 2021-2022 season tickets (a very affordable, five-show package) are now available. Elite RedFish Tournament Returns to South Padre Island Special to Welcome Home RGV

oin us October 23 for the triumphant return of the Elite RedFish Tournament to South Padre Island. The Elite RedFish Tournament allows anglers to compete at the highest professional level for a full day of high-intensity fishing and competition. The Elite RedFish Tournament has reached high popularity due to the Elite Fishing League TV Tour’s inaugural success on Discovery Channel, airing every Sunday morning at 7:00. So come on down October 23. The event begins at 6:00 a.m. with the captains’ meeting and rules briefing, followed by the boat launch at safe light around 6:30 a.m. The weigh-in starts later in the afternoon at 3:00, followed immediately by the awards ceremony. The event is open and free to the public, and everyone is

Road Project at Pharr South Completed Special to Welcome Home RGV

South residents are celebrating the completion of a twoyear project to completely replace all the roads in the Park. Pharr South teamed up with Foremost Paving, Inc. of Edcouch, Texas, on the project. Half the project was done in 2020, and work was completed this September. Residents of Pharr South
own their lots, and spreading out the project over two years allowed for a more affordable payment structure for our owners. The Park was established about 40 years ago, and the blacktop was at the end of its useful life. The new roads are a vast improvement in the Park and will be appreciated by residents for years to come. •

• Help! I Fell or Failed and Can’t Get Up • I remember when I fell, broke my
leg, and couldn’t get up. My leg is now healed, but the scaring is what I must live with. One even better than that is when I spanked the wrong child. Having nine kiddos, when they all say, “I didn’t do it,” you make a judgment call. You know which one usually gets in trouble, and I chose. Only it was the wrong child. You find that out years later. Our guilt--and people--are great reminders of how many times we have fallen or, better yet, failed and can’t change what happened. We feel that emptiness of ‘Help! I have fallen’ or ‘Make it right; I can’t get up.’ Some say time heals all wounds, but the earthly scars, people and self, are still those reminders. Because of this emptiness, we begin to judge others like others have judged us. Some carry the pain inward throughout life, and more judgment comes on them. That’s me. Guilt is a terrible thing living inside of us. My mom told me not to climb that tree. I should not have gotten so angry with the kids. God has given us the Mosaic Law, which is the 10 Commandments, but like our past generations, we carry many inward laws we judge people by. We make those up as we go. God provided those 10 Commandments

he Deep South Texas Master Gardeners welcome our Winter Texans back and would like to help you start you winter vegetable garden. Unlike in the north where gardening is done during the summer months, we here in Texas do our gardening in the fall and winter. Many of those wonderful vegetables you enjoy back home can be grown here in Texas during the winter months. October 16, the Master Gardeners will offer a workshop on Fall Vegetable Planting. The cost is $5.00 and is payable in advance. The class will teach you how to prepare the unique soil we have here in Texas that will provide the proper growing media for your plants. The class will also teach you which varieties of vegetables grow best in Texas and how to take care of your plants once they start growing. Now, if you do not have space for an in-the-ground planting bed, let the Master Gardeners show you
how to grow all the vegetables you need in pots. A Container Vegetable Gardening workshop will be held November 13. For this workshop, the cost is $10.00, and you will receive your own potted garden to take home. Again, the cost is payable in advance. This workshop will teach you how to make your own potting soil and the proper spacing for your plants in pots. All of the Deep South Texas Master Gardeners’ workshops are held at our educational garden located at 509 E. Earling Road in San Juan. The free event, Earth Tones: Exploring the Creative in Nature, will take place Saturday, October 23 from 8 a.m. to 4:30 p.m. at Estero Llano Grande Valley State Park in Weslaco. The one-day, in-person retreat will be held indoors and outdoors at the Park, a World Birding Center site. Participants, including teens 14 and over, will be able to choose from one of three tracks: visual art, photography, or creative writing. The park-entry fee and retreat costs will be covered for each registrant, but pre-registration is required. Each track will be facilitated by expert faculty from the Valley. Ruth Hoyt, a certified interpretive guide and certified Texas Master Naturalist, will lead the photography track. This indoor/outdoor workshop will include guided hikes around the Park. Participants are encouraged to bring their own cameras, though simple ones will be available. The drawing/painting/illustration session will be led by South Texas College professor Rachael F. Brown. “As a kid, I was introduced to the outdoors and nature by my grandfather, a World War II veteran,” Brown said. “We’d spend hours outside observing plants and trees, animals and birds that visited the farm pond, and exploring nearby parks, using sight, sound, and smell to tune in to the environment around us.”

While some material will be provided, participants are encouraged to bring their own supplies; but travel lightly. Weatherpermitting, this track will primarily be stationed outdoors. “For those new to visual arts, I’ll offer some grounding activities that don’t pressure the participant to make a ‘masterpiece,’” Brown said. “And for those with more experience, I’ll offer some tips on using color and tone to create depth and visual interest in landscape compositions.” The creative writing track will be facilitated by award-winning poet and author Katherine Hoerth, assistant professor of English and editor-inchief of Lamar University Literary Press. Participants are encouraged to bring their own writing implements, though some tools will be provided. Lunch will be provided, and every attempt will be made to include persons with disabilities, which necessitates pre-registration in order for accommodations to be made. ne of my high-school classmates came into town one day in about 1968 and discovered his name boldly emblazoned across the local water tower. Needless to say, the authorities weren’t too pleased. Of course, he had a bit of ‘splainin’ to do, and the rest of us all got quite a chuckle out of the whole drama. In his defense, he didn’t do it; now, this many years later, after the statute of limitations is up, we know who did.
It has been a long time since I have heard of any of my classmates engaging in a good practical joke. I know. We had a targetrich environment back then, with classmates to prank, teachers’ cars to jack up, and rival communities to hassle before their homecoming games. I don’t think they have yet found the fellows who lit our homecoming bonfire pile up a day early one year, so we may even still owe some payback to someone. I suppose we all grew up and moved on from that stuff. Then again, as adults, who needs the jail time? But what has happened to our sense of fun and adventure? It was all pretty innocent stuff back then. Any damage was measured in a few dollars, not in lives. It was

Oh, We Need a Little Mischief pretty natural to think up elaborate pranks in a town with not much else to do. But come to think of it, most of us seniors in rural communities today are sitting in towns with not much else to do. One of the stores in my town had a little box on the counter that read, “Open me.” When you did, out jumped a toy mouse, causing a startle. It was fun to see the reaction of folks as they jumped back. No harm, no foul, just fun. Maybe we all need a box like that. One of the things I have noted among older folks who seem to be enjoying life is a sense of mischief. You see that twinkle and just know they are up to something. The statute of limitations is likely up on your own good stories. Who

exas A&M AgriLife Extension invites the public to attend the Annual Craft Fair Saturday, October 23, from 9 a.m. to noon. The craft fair will be held at Firemen’s Park Pavilion, 201 N. 1st Street in McAllen. There will be no entry free. In addition, there will be a grand door prize for those who visit us. Are you looking for unique gifts for the holiday season? Come purchase items to decorate your home or a gift for the holiday season. There will be different vendors and items for everyone. The Master Clothing Volunteers will be selling are aprons, table runners, table matts, kitchen towels, jewelry, handbags, and more. The Master Clothing Volunteers in Hidalgo County are a volunteer group supported by Texas A&M AgriLife Extension Service. Master Clothing Volunteers is designed to develop leadership and to teach

skills using textile techniques and garment construction, heritage sewing, and home décor. These volunteers are trained to work in our communities to assist youth, families, and community groups, learning how to buy, construct, and care for garments. The classes are at NO COST. These volunteers meet every Tuesday from 9:00. to 11:30 a.m. at the Texas A&M AgriLife Extension Service-Hidalgo County office. The Master Clothing Volunteers have mentioned they have learned these skills to increase their income. Others come to the classes to help them in other ways, such as their well-being by creating friendships. Not only do they learn how to make items, but they give back to the community. In the past year, they have made stuffed bunnies to donate them to Driscoll’s Hospital, drawstring bags that were donated to the Department of the Family & Protective Services and wheel-bag compartments that will be donated to a nursing home. Serves 1 - 2 • 1½ cups blanched almond flour • ¼ cup coconut sugar • Poppy seeds • ½ tsp baking soda • ¼ tsp salt • 1 Tbsp. tapioca flour • 2 tsp. vanilla extract • 2 eggs • 1 Tbsp. grapefruit zest • ¼ cup grapefruit juice • Almond milk (added if needed to thin) • Oil or ghee for skillet
Whisk all ingredients together in a large bowl. Consistency should be thick, but add almond milk if not all almond flour has been absorbed. Heat oil or ghee over medium heat in a large skillet and add ¼ cup mix for each pancake. Let cook for 5-7 minutes on one side, being careful when flipping, as flourless pancakes are fragile. Primarily green, with a blue-black head, the Green Jay is commemorated around the city in mosaic murals, paintings, and photographs. It is even represented in a quadrant of the city seal. he Border Cook is back in the Valley for another season. Over the past several years, I have concentrated on Mexican and Tex-Mex foods. This year will be a bit different because, this summer, we embarked on the Keto diet. Without getting into details (plenty of information can be found online), the Keto diet is high in fats and low in carbohydrates, similar to the Adkins and other low-carb diets. The Keto diet does not allow for many ingredients found in Mexican cuisine, so you will see fewer recipes with beans, rice, chips, and tortillas. This week’s recipe is for pitas stuffed with a fruity chicken salad. It takes only about 15 minutes to prepare, and when my sister, Shiela, made them for us this summer, I knew I had to share it. This recipe makes two servings; that’s four stuffed pita halves.
• 1 cup cubed rotisserie chicken or poached chicken breast • ½ cup chopped sweet apple • ½ cup chopped celery • ½ cup drained, unsweetened crushed pineapple • ¼ cup dried cranberries (craisins) or raisins – your choice • ¼ cup mayonnaise or Miracle Whip (with a touch of Dijon mustard and ranch dressing – optional) • 1 tsp. lemon juice • ¼ tsp. onion powder • 1 pinch of salt • 4 pita halves Combine the stuffing ingredients. Divide stuffing
between the pita halves, Serve. •
