The new year is a welcome sight,
and I know 2022 brings with it a wide variety of new friendships, adventures, and exciting times! There are so many things to do in January, and we are thrilled to be a part of them. The first exciting thing on our calendar is the Winter Texan Expo, and we hope you’re already making plans to join us. The 29th annual event, sponsored by South Texas Health System, will be held at the McAllen Convention Center January 18-19. Bring your friends and enjoy a fun day of exploring what the RGV has to offer and the entertainment lineup we have selected for you! There’s no cost to get in, and we will have a number of new exhibitors you will definitely want to see! We have some exciting giveaways and surprises for you, too, so you’ll have to come and see us at the Expo for all the details. It’s a fun party, that’s for sure, and it makes me so happy to be able to provide you with the largest event for Winter Texans in the Rio Grande Valley. he 2022 Winter Texan Expo and Health Fair has been years in the making…most notably the past two years. Like many things, the Expo was put on hold last year, but it’s destined to be as informative and entertaining as ever. Admission is free for the two-day event. Which will take place Tuesday, January 18, and Wednesday, January 19, from 9:00 a.m. to 3:00 p.m. “Winter Texan” might be in the official event title, but all seniors are welcome.

The Christmas lights at Harlingen’s
Paradise Park RV Resort can be spotted from nearly a mile away, thanks to the efforts of Don Robertson. Robertson and his wife have been wintering at the resort for nearly two decades. They say it has become their second home, and they love to spend the holidays enjoying warm weather, along with their neighbors. But the Robertsons found just one thing to be lacking, compared to Iowa. “When I got here the first couple of years, I really missed the lights they have up north,” Robertson said. So he decorated his RV site, and his efforts caught the attention of the Park managers. Before he knew it, he was put in charge of lighting up the park with 25,000 to 30,000 lights. “It just got bigger and bigger and bigger,” he said. Anyone driving along U.S. Route 77 in Harlingen after sunset can catch a glimpse of the lights. Robertson said he is proud of how the lights have come along over the years, adding it’s all made possible with the help of volunteers. “It’s about a four-week task, and I’m
thankful to have such a supportive community who is always ready to help,” Robertson said. “I never could have imagined how much this would grow, based off this idea I had just a few years ago. It’s amazing to see.” In addition to ensuring everyone enjoys the holidays with the festivity of lights, Robertson is involved in other Park efforts. He launched and chairs the Veterans Project Committee, which honors all Park vets, with a plaque baring their name, visible to all in the community center. “Our Park vets get their names featured, and it’s at no cost to them,” he said. “I maintain and take care of it, and it makes my stay here feel very rewarding.” Robertson encourages Winter Texans and RGV natives alike to make a trip to visit or drive by Paradise Park to see the lights for themselves. “While much of last year’s festivities didn’t get to happen, our lights still brought cheer,” he said. “Everyone enjoys it, and it’s something we all look forward to when we come down. We try to add something every year.” •

e are thrilled to have the opportunity to take over the reins and produce the RGV Activity Director Entertainer Showcases! These two annual events bring talent from across the country to South Texas each January. Participating entertainers perform for nine minutes to activity directors from across the RGV with the hope of being booked to perform in their resorts the following season. The Showcases were founded 15 years ago by the RGV Activity Director Association and produced by Robert Ferguson. Robert and his wife, Billie, have decided it’s time to move back to Tennessee, and they approached us about taking over. Thursday, December 16, we purchased the rights to the show. ver wonder where you can spot a pastor, a cowboy, and a horse all walking into a…church? Look no further. Songs and poems have been written stating very clearly there’s a special place in heaven for cowboys. But a sweet tune isn’t going to get them through those pearly gates without a little help from above. Thank God for Cowboy Church. They have their very own nondenominational service filled with “Jolly Ranchers” singing songs of praise while being fed a hearty helping of God’s word. There are more than 1,000 cowboy churches worldwide, including eight in Canada and a handful in Texas, but this is the only one in the Rio Grande Valley.
Before you go, you should know, there are a few things that set Cowboy Church apart from most others. They aren’t big on soliciting for offerings, there’s no membership or dress code, and they are oftentimes held in a barn or stable. And don’t be surprised if you see folks being baptized in rivers, lakes, or even water troughs. If you haven’t visited one, here’s your chance. Just down the road, a bit off the beaten path, is where the cowboys go to give thanks. And you’re invited, year-round, to join in and find what the weekly stampede into church is all about. •

ave you ever wanted to travel to the place you call your “happy place” or just discover that place? The area, somewhere, that makes you feel complete, comfortable, and even restful? Some individuals find their happy place is participating in a sport, such as playing golf, and will travel around the USA finding golf happiness. Others look to various forms of escape and call that a happy place. When you purchase something you have wanted, the purchase brings you temporary happiness, and then there could be a letdown of emotion, and you have moved off the corner of Gratitude and Contentment to the alley of “Is that all there is?” How do you get past sadness and be thankful at the same time? Jesus was asked, “How can I be happy?” Alternatively, in other words, what can someone do to achieve true happiness? Jesus answered with clarity that it is not the treasures on Earth or the objects we obtain that we think are treasures. We can have the most significant, newest, exceptional, and biggest RV ever, but the happiness of “new” won’t last forever. The treasures we need to look for and seek are ones we can redeem in heaven. Serving others can bring an untold wealth of happiness and satisfaction; perhaps that would be an undiscovered happy place. Often, the service of giving either time, finances, or both becomes your place of contentment.

PI Market Days returns for another weekend of all-day shopping. The 25th Annual SPI Market Days will be held at the South Padre Island Convention Centre January 21, 22, and 23. The first two days, the event will run from 9:00 a.m. to 5:00 p.m., and the third day will be from 10:00 a.m. to 4:00 p.m. The event is open to the public, and we welcome everyone to stop by. There is an entry fee of $1.00 per person, free parking, and hourly door prizes, so the $1.00 cost to enter is definitely worth it. Multiple vendors will sell goods such as jewelry, clothing, fragrances, artwork, home decor, and gourmet food. This is a great event to support local vendors, mingle with other visitors, and enjoy
live music by Austen Brooks. You are sure to find something you’ll love during this shopping extravaganza. SPI Market Days will return February 25, 26, and 27 at the South Padre Island Convention Centre. This event will run exactly the same as in January, with a $1.00 entry fee, free parking, and hourly door prizes. Vendors may vary at the January and February shows. he Harlingen Concert Association is starting 2022 with the highenergy swing band Black Market Trust January 24 at the Christian Fellowship Church Auditorium, 901 N. Loop 499 in Harlingen. Black Market Trust is an American pop/vocal jazz band that combines the sounds of the great American crooners and vocal groups with the romantic Eastern European gypsy fire of jazz guitarist Django Reinhardt. The band, made up of five worldclass musicians, has toured the world extensively and has performed on some of the world’s biggest stages with some of the most renowned artists in musical history. The group has merged their musical tastes to reflect a wide-ranging musical style. Their repertoire reflects group styles from The Mills Brothers to The Beach Boys. Add to that, solo styles ranging from Sinatra to Lennon/McCartney and many more well-known artists. The band began to arrange lead and three-part vocal harmony lines to 12 of their favorite Great American Songbook standards. Using the vocal talents of all of the members, the band began to melt two distinctly different vibes: one of a gypsy campfire, the other a slick metropolitan nightclub. The result is a cohesive, stylish sound. Be prepared to enjoy Black Market Trust’s unique, organically created sound that is daring, fresh, and exciting. Yet the music is still familiar and inviting.
The fourth show in the HCA 20212022 lineup is familiar to the mid20th century pop music world--The Diamonds. They will perform their classic harmonies in a new program, Let’s Rock Broadway. The program will feature hits from favorite Broadway musicals, such as Jersey Boys, Grease, Mamma Mia and Motown. The program will also include their signature hits, “Silhouettes,” “The Stroll,” and “Little Darlin’.” The HCA season closes March 7 with talented singer Mark Kingswood. Mark is redefining what it means to be a modern-day crooner. He and his four-piece band perform original compositions but also more traditional songs of the genre and some you would not expect from a 21st century crooner. Mark brings his own special flair to an enduring musical songbook, making it accessible and relevant for a new generation of music lovers. The Harlingen Concert Association has been presenting internationally acclaimed artists to the community since the 1930s. This all-volunteer, nonprofit organization is committed to enriching the cultural life of the Harlingen area through live performances. Grapefruit Sauce for Fish • Three large ripe grapefruit • 2 shallots, minced • 1/3 cup white wine
• ½ cup grapefruit juice (see below) • 2 tablespoons white wine vinegar • 1 stick real butter, cut into chunks
Peel and segment two of the grapefruits, capturing any juice that drips out. Juice the third grapefruit to make the amount of juice needed for the sauce. Be sure to cut away the white pith from the segments, as it is bitter. In a heavy, medium-sized saucepan, place the minced shallots, the white wine, the vinegar, and the grapefruit juice. Bring to a boil and boil until it is reduced to about 2 tablespoons, stirring constantly to avoid scorching. Remove from the heat and whisk in the pieces of butter, 1 chunk at a time. If the mixture becomes too cool to melt the butter easily, return to low heat briefly. Chop the grapefruit segments and stir half of them into the sauce. Yield 2 cups • 2 Texas red grapefruits • 2 Texas oranges • ¼ cup sugar • 1 – 1½ tablespoons cornstarch
• 3 tablespoons water • 2 teaspoons margarine • 3 tablespoons chopped pecans, toasted • Dash of salt
Peel and section one grapefruit and one orange over a bowl, reserving juice. Set sections aside. Measure grapefruit juice; squeeze enough juice from other grapefruit to equal 6 tablespoons juice. Measure orange juice; squeeze enough juice from remaining orange to equal 6 tablespoons juice. Set aside. Combine sugar, cornstarch, and salt in a saucepan; stir in juices and water. Cook over medium heat, stirring constantly, until thickened and bubbly. Add butter and stir until melted. Stir in grapefruit and orange sections and pecans. Serve warm or at room temperature. Banana Nut Muffins
These delightful muffins are perfect for a casual weekend brunch, or an
afternoon snack on the go! Rich, moist and delicious - they are sure to make you smile! Bon Appétit! • • 2 1/2 cups all-purpose flour • 1/2 teaspoon baking soda • 3/4 cup brown sugar, firmly packed • 1/4 teaspoon ground cinnamon • 2 cups ripe bananas (about 4 bananas) • 1/2 cup vegetable oil
• 1/2 cup milk • 2 large eggs, at room temperature • 1/8 teaspoon fine salt • 1 teaspoon pure vanilla extract • 3/4 cups chopped walnuts

Preheat the oven to 425 degrees F. Lightly brush a 12-muffin tin with butter and set aside (or use muffin liners). Stir the flour, baking soda, brown sugar, and cinnamon together in a large bowl; set aside. Mash the bananas on a plate with a fork. Then whisk the banana, oil, milk, eggs, salt, and vanilla in a medium bowl. Make a small well in the center of the dry ingredients. Pour wet ingredients into the center; then stir gently with a wooden spoon until the dry ingredients are moistened but still lumpy. Do not over-mix the batter or muffins will come out dense and oddly shaped. Gently fold in the nuts. Divide the batter evenly into the muffin tin. Put the muffins in the oven and immediately reduce oven temperature to 375 degrees F. Bake until golden brown, about 25 minutes, rotating the pan halfway through the cooking. (Insert a toothpick into the center of a muffin to check if it is done. Toothpick should come out clean). Cool muffins in the pan on a rack for a couple minutes. Turn the muffins out of the pan and cool on the rack. Serve warm or at room temperature. •

knew her way around a kitchen, as she had been working in several since she was 11. The restaurant was an immediate success but its name is a different story. Back then, most called it “Cipi’s,” while others referred to it as the “Donna Country Club.” Eventually, Monte Carlo Cafe is the name they chose. Since then, three generations of women have led this restaurant to local iconic status with their home cooking and welcoming atmosphere. Cipi’s daughter, Sylvia Garza, took over when her mother threw in the dishrag after 61 years of working in the industry. Today, Sylvia’s daughter, also named Sylvia, can be found running their enchilada empire, but her mom is never too far away. “I’m the dishwasher now,” mother Sylvia jokes. We were lucky enough to be told about the Monte Carlo Cafe by locals who were bragging about the enchiladas and friendly atmosphere. They weren’t wrong. You walk in and instantly become family. We made new friends with everyone there that day and can’t wait to go back to visit and gobble up another plate of their famous, mouthwatering cheesy enchiladas. But we’re a new crop of fans. Locals have been eating their meals at the

Monte Carlo for decades and during several moments in history, including several wars--starting with Vietnam-JFKs assassination, and the first man walking on the moon. But the history they love to celebrate the most comes from right there in Donna. In 1961, the Donna Redskins football team made it all the way to State Champs. Their season was so miraculous that Hollywood came calling and made the movie Miracle at Donna. Some 60 years later, and the 1961 team still calls the Monte Carlo Cafe home. They meet there at least once a year to swap stories and to catch up. There are plenty of photos and clippings on the walls to highlight the 1961 win, but for the whole story,
you likely just need to look up and make eye contact with a local. These folks still beam with pride over their stunning victory and love talking about it, if given the chance. While you’re in Donna, be sure to also stop at the town square. This is in the heart of the historic downtown. It’s currently decorated for the Christmas holiday, but is beautifully kept yearround. Among the square’s native shrubbery and massive shade trees you’ll find a sculpture of the city’s namesake, Donna Hooks Fletcher. Her placard reads that, aside from her huge financial success, she was a God-fearing woman with a heart of gold who was charitable to the locals, as well as the Native Americans she held a special kinship toward. Across the street, you’ll find the Donna Hooks Fletcher Museum, where you can learn pretty much anything you might want to know about the area and the pioneer family that helped establish it. Then walk through the historic downtown, riddled with shops, stores, and eateries, each holding their own magical way of drawing you in. Just up the street from the downtown square you’ll find the world’s first hall belonging to the American Legion. The historic placard states it was dedicated in 1920 as the first one built or owned by any post in the
world. The structure stands solid and proud to this day. On the same street are a couple of old churches with stunning architecture that one can’t help but admire. And it wouldn’t be an article about Donna without mentioning the very humble, but Texas-famous, Gonzales Burgers. We didn’t get a chance to try them, but they are a local favorite, and after appearing on The Texas Bucket List as one of the state’s tastiest burgers, they can have a line out the door that goes around the block--so you know they must be something special. •
