hard to believe the holidays are right around the corner. Each year, it seems they get here faster than the year before. This year, I’m thankful because I’ve been able to see so many of our Winter Texan friends, whereas last year, if we saw each other, it was via Zoom. Our office closes the week between Christmas and New Year’s, as we have found over the years that our Winter Texan friends are busy with golf-cart parades, holiday parties, and stuffing stockings. It also gives us a bit of time to breathe, enjoy our families, and celebrate and allows us the opportunity to get some much-needed rest. We know exactly what will be waiting for us after our break. Come January, it’s go-go-go, and we need our rest to keep up with all of you! From our families to yours, we wish you a wonderful and safe holiday. special and holy to visit this Christmas season, Rio Grande City has just the spot for you. A longtime tradition, running several generations in the Rio Grande Valley, is the illumination of the Lourdes grotto at Immaculate Conception Catholic Church. Nearly 100 years ago, a Germanborn priest, Rev. Gustav Gollbach, immigrated to Texas. He spent some 20 years spreading the Gospel around the state before finding his
way to Rio Grande City, where he served 13 years at Immaculate Conception. Here is where he accomplished his most memorable work, a replica of the miraculous Lourdes grotto of France. The original destination in France, with its healing waters, attracts more pilgrims than any other Christian shrine in the world. Rev. Michigan Sisters Enjoy Decades as Winter Texans
1980s, sisters Gloria Lamey and Dawn Powers are 4 Seasons RV Resort’s longest-returning winter residents. When she and her husband began contemplating heading somewhere warm for the winter, Lamey, 96, chanced upon an ad for the resort in a magazine back in her home state of Michigan. The pool was the big sell. “I thought, ‘That’s for me!’” she said. “That first year we came, we fell in love. We did everything. We learned to play shuffleboard. We danced up and down the Valley. We fished. We loved the food. We learned a few words of Spanish and just had a great time. So, of course we came back the next year.” This time she brought her sister and brother-in-law, who also quickly committed to becoming Winter Texans in the RGV. Over the years, Lamey convinced more and more people to visit and check out the Valley for themselves. “Eventually, I had more than 30 of my friends from home follow me down,” she said. “We had an exodus every year from Michigan to Texas.” Lamey and Powers’ husbands have both since passed, but the

trips remain a family tradition. Lamey’s son and daughter-in-law have been wintering at 4 Seasons for the last 26 years. They share they are blessed to have enjoyed plenty of adventures over their years in the RGV and look forward to many more. “We have wonderful friends here,” Powers, 98, said. “We plan to come back forever.” One memory they hold close is their travels to Mexico. For 30 years Lamey operated a travel company out of Harlingen, which would take upwards of 35 Winter Texans on a two-week bus trip to different cities in Mexico each year. “If things ever change and things get back to safety, I’d have a bus out there tomorrow,” she said. They remain active in the park’s activities and in community work--like helping fundraise for Brownsville PD’s annual toy drive--and credit their energy and good health to a strong mindset. “I say you always have to have a plan,” Lamey shared. “Always plan ahead like something is going to happen for you. And you can’t dwell on the past. You just have to move on. It’s easier to walk forward than it is backward.” •

France, built this special garden for prayer as an homage to the original. History records that Rev. Gollbach built much of the 33-feet-wide and 90-feet-high grotto himself, bringing in materials like wood and petrified rock from surrounding areas, including Roma and Escobares. Standing humbly in the garden, surrounded by native landscape, is a seven-foot statue of the Madonna in her white gown and blue sash. She can be found looking down on a lifesized statue made to look like the 14-year-old Bernadette Soubirous, the young girl who discovered the original miraculous waters in France. Today, the garden remains a yearround haven for those in need of a quiet place for prayer, reflection, and a closer communion with God. No matter when you visit, a special spiritual energy flows throughout the grotto, but it seems especially bright during the holidays. This is when the grotto is decorated, using tens of thousands of lights attracting tourists, Winter Texans, and locals to bask in its charm and beauty. Visitors from all over the world come to witness Rev. Gollbach’s labor of love. This year, the grotto is in the middle of some refurbishing,
but even during a makeover, the magnificence and beauty of the grotto shines bright. Our Lady of Lourdes Grotto in Rio Grande City is located at the Immaculate Conception Church at 101 E. Third at North Britton Avenue. The shrine is open to the public, free of charge, except during services. •

he Texas State Historical Association reports that shrimping in Port Isabel dates back to at least the middle of the 19th century. The industry took off in the 1950s, and Texas is one of the three top producers of shrimp, alongside Louisiana and Alaska. 24th Annual Polar Bear Dip on South Padre Island Special to Welcome Home RGV

tart the New Year with a shock to the system by participating in Clayton’s Beach Bar and Grill’s 24th Annual Polar Bear Dip, a longstanding tradition for many on South Padre Island to come together and enter the chilling water. The event will be held New Year’s Day, January 1, 2022, with registration opening at 8:00 a.m. The event is open to the public. Once registration is closed, the dip will be at noon. Afterward, you can warm yourselves up with a hot meal from Clayton’s and enjoy some refreshing drinks to celebrate the first event of 2022. This is the perfect event to kick off the New Year, if you are ringing in 2022 on South Padre Island. The water will feel freezing for many as South Padre Island natives are not used to the cold temperatures during the winter months. But for many visitors from the north, this dip will feel like a warm swim, as water
temperatures average between 60 and 70 degrees. During the event, Friends of Animal Rescue will be selling polar-bear t-shirts; all profits will benefit their shelter. Friends of Animal Rescue is a nonprofit, no-kill shelter that focuses its efforts on the animals of South Padre Island. They believe in finding a home for every homeless animal and ensuring the animals are healthy and safe. If you are visiting South Padre Island and wish to help the shelter, you can visit their Resue Me Resale store, where they sell various items, both new and used. All profits from the store are used to offset the costs of the shelter. You won’t want to miss out on South Padre Island’s first event of the year! he Salvation Army Winter Texan bell ringers are enjoying being an important part of the gifts of joy for our children in need in Hidalgo County. Next year’s plans for all of the parks that assisted the Army include assessing this year’s location, deciding what days of the week are best for all in the park, discussing if a small kettle in the park would let all park members be part of the good the Army does, and laughing as you contemplate if you have to smile under your mask next year, too. The distribution of gifts December 10 and 17 by the Army has many families looking forward to a celebration of the joy of Christ’s
birth. If your park did not ring this year, now may be a good time to get your team together for 2022. Pick a day of the week that works best for your residents and a proposed business location where you would like to ring the bell. Ring times are for two hours, starting at 10 a.m., 2 p.m., 4 p.m., and 6 p.m. on the day(s) you select. Midland to Headline 12th Annual McAllen International CarFest 2022 Tickets now available Special to Welcome Home RGV

he 12th Annual McAllen International CarFest returns to the McAllen Convention Center February 4-6., 2022. The car festival will be larger than in previous years, with a special performance from Midland happening February 5 at 8:00 p.m. McAllen International CarFest will feature over 300 cars on display, live music presented by local artists, local vendors, and delicious street food. Car enthusiasts will see a mix of 55 categories, ranging from

Things I Have Learned by Bill Ward
A somewhat random and reckless look at life from a fairly old guy

The other day I was helping my son-in-law build a shed. It was fun to actually have a “guy” project for a change. He did the ladder stuff, and I did the ground stuff, a lot of which was actually down on the ground… on the grass. The first few trips down there were no problem. I managed to find my way back up fairly easily. However, as the afternoon progressed, the trip up became more difficult. Eventually, I found myself looking for something to pull on to aid my poor legs in their quest for “verticalness.” I was reminded of a friend who once told me that when he is on the floor, he looks around for something else to do while he is down there. It is too hard to make the trip twice. Standing up didn’t used to be difficult. The legs were strong, and the energy was good. Not so much today. What the heck happened? Well, like many of you, I’m no spring chicken anymore. That bothers me. I miss the days when physical work felt good. I miss the days I could walk a nature trail with family and not worry if the trip would be too long. I miss the time I could climb a ladder 50 times a day painting the second floor of a house. I miss the old me. I suspect most of you can relate. Age, wear, and tear take their toll. I have become more conscientious about working to
keep what strength I still have. Exercise and walking help. So do keeping active and avoiding spending too much time in the chair. But I have also become more aware of the value of functionality. I didn’t give it much thought when I was 30. It was just a given. Now in my 70s, it seems more of a scarce commodity. That makes it precious--precious enough to make good use of my fitnesscenter membership in order to keep that fitness. We will never be able to do what we did in youth. But what we can do now is be more appreciative and protective of what we have left. At our age, there is no guarantee. A lot of my high-school classmates are not even here anymore. I am here; I can stand, walk, climb stairs, and build sheds. I am lucky. I am grateful. My cup is still half full. I’m just sayin’. Note: Oh! In case you haven’t been in a fitness center in a while, half the people there are our age. It is becoming a cool place to hang out with old people. Go figure! •

ark Staggs is an award-winning celebrity impressionist/comedian whose impersonations have been called “excellent” and “spot on” by his audiences. But there one is regarded as “epic,” and that is his impersonation of Festus--Festus Hagen from the TV series Gunsmoke. When Mark wears his Festus outfit, people are amazed that he is not the original actor. Buck Taylor, who played Newly O’Brien on Gunsmoke, said, “I feel like I am talking to Festus again right now!” after seeing Mark impersonate him. Mark brings Festus to life in his clean, awardwinning Festus Live Comedy Show, which he performs all across our country. •
A
35-plus-year veteran of Branson Entertainment, Rick McEwen has performed with some of the biggest entertainers in show business. He has a passion for performing classic rock, classic country, rhythm and blues, and soul music. Rick is a member of the Traditional Country Hall of Fame and has been nominated for Male Vocalist of the Year in Branson, Missouri. Rick spent eight years honing his skills in Nashville before moving to the live music capitol of the world, Branson, in 1984. He has performed with such greats as Earl Scruggs, Webb Pierce, and The Dillards (known as the Darling family on The Andy Griffith Show). Randy opened many shows for Waylon Jennings, George Jones, Loretta Lynn, Dottie West, and other country-music legends. After moving to Branson, Rick was the featured singer with the great Jim Stafford for 14 years. He has produced eight musical shows, 10 albums, and music for a Walt Disney

Kainoa Kamaka Brings Passion for Culture, Ukulele to Winter Texan Expo 2022 Special to Welcome Home RGV
K
ainoa Kamaka was born in Hilo, Hawaii, and moved to San Antonio in 2003. He learned the ukulele by ear. He went to college in Hawaii to study music in order to understand what he was playing. Kainoa said he took the ukulele seriously once he moved away to the island of Kauai after college. Kainoa’s mother was a hula dancer, and his dad was a musician. He was raised with a family that loves to share their culture through entertainment. He has been an entertainer throughout his life.
In 2016, Kainoa became a sponsored ukulele artist by KoAloha Ukulele Company, based in Hawaii. He received a proclamation from the lieutenant governor of Hawaii, Shan Tsusui, as an Ambassador of Aloha for sharing the Spirit of Aloha in communities throughout Texas. Kainoa worked at the University of Texas at San Antonio College of Sciences until 2018. He was the director of the State Science and Engineering Fair, a program that supported all students in the state of Texas to learn the scientific method in the fields of STEM
(Science, Technology, Engineering and Mathematics) and to present their research. He even received a proclamation from Texas Governor Greg Abbott for his work. Today, Kainoa enjoys entertaining at senior-living properties, local venues, private parties, and community events. Since 2018, he has had the pleasure of entertaining Winter Texans. Outside of entertaining, Kainoa is passionate about coaching people to better their health through products that are all-natural and beneficial for their well-being. •

It’s hard to believe those teeny, tiny, dark green key limes have any flavor or juice inside. It takes a ton of them to fill a bag. The following recipe calls for only ½ cup of juice, so it’s possible to get it done and worth the effort. •

A Park Full of Character - While Reinforcing It by Gretchen Losi
T
here’s a park in La Feria that pays tribute, through its handpainted murals, to the six pillars of character: trustworthiness, respect, responsibility, fairness, caring, and citizenship. The park opened in 2008 as a labor of love between the City and Mary Garcia’s fourth-grade class, before being renamed the Carmen Tinajero Tiny Town Park to honor a devoted city daughter. Tinajero is noted for having devoted herself to serving her community and its residents in a variety of ways, including volunteering at local adult-day-care centers. The park’s murals are illustrations from local artists and school children,
each with a special message of hope, reassurance, or direction--under the six pillars of character--and include Martin Luther King, as well as characters from fables. These murals were done as a fun and elegant way of reinforcing morals and character. The park is small and great for a picnic lunch, walking among native landscape, or just sitting under a mammoth shaded tree. •

This season, Sandy will be sharing recipes to help readers enjoy the abundance of delicious fruits we find in our local markets. Sandy claims she’s been “a bit fruity” since childhood. Key Lime and Pistachio Parfaits

41/3 cup shelled pistachios 3 tablespoons real butter, 2½ tablespoons sugar ½ cup graham cracker crumbs

1 can (14 oz.) sweetened condensed milk 1½ tablespoons grated key lime zest ½ cup fresh key lime juice ¾ cup chilled whipping cream
NOTE: Remove the zest from the little limes before squeezing the juice. Then pop all the fruit into the microwave for 10 seconds to make them easier to juice. It might take 10 limes to get ½ cup of juice. Roughly chop the nuts and toast them in a heavy, dry skillet until lightly browned, stirring constantly so they don’t burn. Set aside. Melt butter in a small skillet; add the sugar and graham cracker crumbs. Cook, stirring constantly, until the crumbs brown nicely, 3-4 minutes. Remove from skillet and place on a plate to cool. In a large bowl, mix the sweetened condensed milk, lime zest, and juice. Combine well; mixture will thicken. Set aside. In a large bowl (Chill the bowl in the fridge for an hour first, if possible.) beat the cream with an electric mixer until stiff. Fold this into the lime mixture. Add the toasted nuts to the graham-cracker mixture. In each of 6 parfait or large-mouth wine glasses, place about ¼ cup of the lime mixture. Top each with a generous tablespoon of crumb mixture, sprinkling evenly. Add another ¼ cup of lime mixture, smoothing out the tops as evenly as possible. Top with the remaining crumb/nut mixture. Refrigerate at least 2 hours before serving. •

Bourbon Salted Caramel Sauce
OMG, Christmas is around the corner! Well, I’m sure your baking is in full swing by
now. Here is an amazing (read: completely out of this world delicious!) dessert sauce you will want to literally put on everything. I just made it for this past Chef’s Wine pairing dinner and we drizzled it over our dark chocolate croissant bread pudding. Let me tell you it was truly a marriage made in Heaven! Bon Appétit! • Chef’s Note: Do take care when adding the cream to the hot sugar mixture, it will bubble up, it is supposed to – but don’t panic, just keep whisking until it becomes caramel sauce, which it will – I promise! • 2 cups granulated (white) sugar • 1/2 cup water • 1 cup heavy whipping cream • 1/2 cup unsalted butter
• 2 teaspoon vanilla extract • 4 tablespoons quality bourbon whiskey • 2 teaspoon sea salt or coarse/kosher salt

In a medium heavy-bottomed saucepan, place the sugar and water. Give them a quick stir together until combined. Turn the burner on to medium-high heat. And then wait patiently and do not stir or touch the pan until the sugar has caramelized. This will take a few minutes, maybe 10. Once the sugar reaches a boil, it will go from being completely clear, to a champagne color, to a light golden color, and then to increasingly darker shades of amber within a few minutes. Keep a close eye on the sugar, as it starts to darken quickly. Once the sugar reaches a deep amber color, remove the saucepan from the heat. This next step requires some care and attention. With no heat or fire, add the remaining ingredients. Slowly and carefully pour the heavy cream into the sugar mixture, whisking as you pour to quickly incorporate the cream. (The mixture will bubble furiously when the cream hits the hot sugar, so be very careful!) Then add in the butter and whisk until combined. Lastly, add the vanilla, bourbon and salt, and whisk until combined. Allow the sauce to cool slightly and enjoy right away or store in a covered glass container, refrigerated, for up to 2 weeks. •

• How is Your Parrot Doing? •
W
ill Rogers once said: Live in such a way that you would not be ashamed to sell your parrot to the town gossip. That is sage advice. Another way to say it is in how we live. All the time, we should be the Bible everyone reads, and we should be the large-print edition. Sometimes that is more than difficult. We get into emotionally demanding, troubled situations, and we have a harsh time liking who we are. Sometimes that emotion spills over to us being angry at God. There is a hymn, “It Is Well With My Soul,” and it reflects upon a tragedy that happened to the author, Horatio G. Spafford. He writes in a submission to God, and here are the words he scribed: “When peace, like a river, attendeth my way, When sorrows like sea billows roll – Whatever my lot, Thou hast taught me to say, It is well with my soul.” Spafford received a telegram from his wife after a tragedy at sea: “survived, alone”. In a collision with another ship, he lost all of his children. Yet he went on to express his deep, abiding faith in our Lord: “And Lord, haste the day when my faith shall be sight, The clouds be rolled back as a scroll: The trump shall re-sound and the Lord shall descend. Even so, it is well with my soul.” The loss of one’s living legacy--I cannot even imagine…perceive…the descending sorrow one would begin--and not end-feeling. Yet this successful businessman knew there was a rejoiced reunion waiting for him with his daughters in Heaven. He accepted God’s provision, God’s grace, and God’s mercy and trusted God in all things. You know his parrot could live with the town gossip. Today, with Facebook, LinkedIn, instant messaging, and cell phones, cyber gossip is everywhere. How

are we living? What happens to us? Is it well with our souls? Do we willingly follow God’s will in our lives? I know, in my case, it is sometimes a challenge, with one broken heartbeat at a time. That doesn’t mean things will always be difficult; it means I can view the cup as half empty or half full. Either way, my cup is filled with blessings from God; halfway is good for me. But my perception of “half full” could be running over as God sees it. Therefore, I will be grateful for the blessings He gives to me, the ones I keep, the ones I don’t see, and the circumstances that--to me--are negative at the time. I will continue to strive to accept Romans 8:28: “And we know that for those who love God all things work together for good, for those who are called according to his purpose.” (ESV) I like the word “all” in the verse; it just says it all.
