And just like that, the holidays

are here. Last year--and much of 2021--seemed never-ending, and it feels like we are making up for lost time in the tail end of 2021. I’m OK with that, but I’m sure I’m not the only one ready for a fresh start in 2022. We have a number of exciting things in the works for the rest of this season, and I am happy to tell you that we already have a number of new things planned for the 2022-2023 season! The first new thing for us is our Bayside Fiesta Winter Music Festival, which will be held at Louie’s Backyard on South Padre Island January 26. We have an amazing entertainment lineup, and we look forward to a wonderful day on South Padre Island. January will be here before we know it, so enjoy the last few weeks of 2021. If you plan to travel home for the holidays, please don’t bring the cold weather back with you! • We’re just connecting the dots,

he McAllen Holiday Parade returned to an in-person event in spectacular fashion. The illuminated floats, giant character balloons, and marching bands wowed the crowd gathered in the stands of McAllen Veterans Memorial Stadium and all along the parade route. The theme of this year’s parade was Rockin’ Around the South Pole. The City of McAllen was officially deemed the South Pole of Texas in 2019 by Governor Greg Abbott at the request of then mayor Jim Darling.

Winter Texan from Illinois

Helps Create New Holiday Tradition year, Sandy Ivey brought a piece of Illinois to Mission’s Restful Valley Ranch. Up in her home state, they have a wintertime tradition, Festival of Trees, and Ivey volunteered at the event for decades. But for the last eight years, the RGV has been her second home. So instead of missing the festival from afar, Ivey committed to creating a Restful Festival of Trees benefitting the park. To help bring the vision to life, she got right to work forming a committee. Through park funds, they were able to purchase 19 small, artificial Christmas trees, and residents donated the decorations. “We had a lot of ornaments and things that were donated, so we laid them all out on the tables and decided what type of theme we were going to do with each tree,” Ivey said. “We spent two days decorating the trees, and then we had people come up to bid on them in a silent auction. In just over a week that the trees were on display, they raised $870, which will go into the general park fund to help with maintenance and activities. The committee also helped get word of the auction out on

social media, which drew Winter and Converted Texans from neighboring parks. “It was so successful, we even had a couple of bidding wars going on,” Ivey said. Among the most popular was a snowman tree. And beyond giving the park a boost, Ivey said residents got to enjoy themselves and were delighted to help spread some extra holiday spirit. “People had so much fun,” she said. “I think, each year, we’ll take baby steps and decide new things to add. You can really get carried away with it.” One idea she has is to add descriptions and create memory trees in honor of late Restful Valley Residents. “That’s one of the things back home that I know is so touching to everybody to get to read some of the stories,” Ivey said. “People can write about why they went in a certain direction with their theme--how they came up with it, what the purpose is, and even just giving it a name.” For 2022, they plan to add wreaths, as well as more trees, and keep the auction open for a longer period, beginning in late November. •

The 8th annual procession kicked off just after 6:00 Saturday evening, December 4, in the Stadium and travelled at a snail’s pace south on Bicentennial Boulevard toward Business 83, as spectators oohed, aahed, and cheered. The United States Air Force Honor Guard Drill Team marched in precise unison as they led the procession. Dallas Cowboy cheerleaders, escorted by Rowdy, the team mascot, cheered in a replica stadium float as players Trevon Diggs, Michael Gallup, and Cedrick Wilson Jr. accompanied city leaders on individual floats. Meanwhile, adjacent to the Stadium, McAllen Municipal Park was alive with dance performances and carnival rides, as local food favorites were served and artisans shared their creations. This is all part of the annual event known

as Christmas in the Park, which coincides with the Holiday Parade. Back on the parade route, a smiling Kemps ridley sea turtle, Mighty Mouse, and Elvis Presley made appearances as giant character balloons, floating high above the crowds as volunteer handlers guided them through the route. The floats, balloons, and bands all made way for the official arrival of Santa Claus in his sleigh, led by reindeer in mid-flight. The illuminated procession is the largest holiday parade of its kind in Texas, drawing thousands of visitors each year to enjoy the extravaganza. Deadline to Register for Texas Master Naturalist Certification Program December 17 Special to Welcome Home RGV

The opportunity to learn about the

amazing habitat of the Rio Grande Valley and how to help preserve it comes along once a year. December 17 is the deadline to apply for the January 2022 training. The South Texas Border Chapter of the Texas Master Naturalist invites residents over the age of 18 and Winter Texans in Hidalgo, Starr, and Cameron counties to join this unique educational volunteer program to become a certified Texas Master Naturalist. Texas Master Naturalist is sponsored by Texas A&M AgriLife Extension Service, Texas Sea Grant Program, and the Texas Parks and Wildlife Department. Students attend virtual classes each Tuesday from 6 to 9 p.m. January 4 through March 22. Attendees will need internet access and a computer, iPad, or Android tablet. (Using a smartphone is not recommended.) In addition, field trips are a required element of training that will provide unique access and learning opportunities. Field trips will be held in person following current county and departmental public-health guidelines. Classes are taught by local university professors and other field experts, including those from the Texas Parks and

Wildlife Department, National Oceanic and Atmospheric Administration, and U.S. Department of Agriculture. There are hundreds of local opportunities available to volunteers, from helping develop public nativepollinator gardens and training as docents and nature guides at local wildlife preserves to undertaking citizen science projects and from joining programs about bird migration and bird counts to studying shore birds, the Gulf, and beach inhabitants and trends. With social distancing, trainees will be able to join volunteer teams with other Chapter members and work among local partners on activities at federal, state, and local wildlife parks, coastal naturalist programs, cities, schools, and other public entities. The Chapter has monthly guest speakers, the third Monday of each month, at 6:30 p.m. Meetings are currently virtual but are still free and open to the public. he ornaments on the Christmas tree sparkled at the Mission Event Center Thursday, December 2, but nothing shone as brightly as the smiles on everyone’s faces as the party got started for Welcome Home RGV’s Homecoming 2021. “At Welcome Home RGV, we can’t tell our Winter Texans enough how excited we are that you chose South Texas as your winter home,” said company president Kristi Collier. “So what better way to show our appreciation than to throw a party?” And what a party it was, with popular entertainer Curt James enticing singles, couples, and line dancers to spend most of the event out on the dance floor and with boxes of Church’s chicken meals providing the energy for them to keep on movin’ and groovin’. Among those enjoying the party were Mike and Jane Phillips. After spending two years as Winter Texans, Mike and Jane returned to Missouri, sold their home in two days after putting it on the market, and returned to the Valley to claim their new title… Converted Texans. That was in 2014. The couple lives at Ranchero Village. “I enjoy the activities and the people,” Jane said, “and we’ve been volunteering with the Red Cross since 2017.” “The weather and the people are nice,” Mike added. Jane said the couple has been to other WHRGV events and sailed on a Cruise with Kristi. “So when I saw a post on Welcome

Home’s Facebook page about Homecoming 2021, I thought it would be fun,” she said. Jane invited their friends, Don and Debbie Conner, who make their winter home at Siesta Village. Debbie shared the story of how they became Winter Texans. “We bought a mobile home in Missouri and met some people who said, ‘Why don’t you come to Texas?’” she said. “We followed them here.” That was in 1989, and the Connors have wintered in the Valley ever since. They have recruited others, too. Although Don and Debbie are also from Missouri, the two couples met in South Texas, and they’ve been having fun together ever since. At Homecoming 2021, Edward and Nancy Rodgers from Aladdin Villas earned the coveted titles of Homecoming king and queen. There to applaud them were our Homecoming 2018 king and queen, Fred and Linda Sauer. “This year’s event was extra special because we haven’t been able to gather in a long time,” Kristi said, “and we are already planning next year’s event!” Kristi and her team at WHRGV aren’t the only ones already making plans for 2022. Winter Texan Ed Sims and Valley local Jane Garza are newly engaged and planning their January 2022 wedding. Congratulations! The season and the dancing are both in full swing, and we can’t say it enough…Welcome Home! •

Ernie Ford and Elvis Presley made popular the hymn “Peace in the Valley.” Both of their deep, baritone voices soothed the notes asking for peace. We all want peace in our lives, with our spouses and children and including the people we interact and work with. A sense of comfort, happiness, and contentment are attributes we strive for. However, life gets in the way. There are bills to pay and repairs to be made to our RV, our home, and us. It seems like doctors’ appointments, aches, and pains come more frequently. Then peace gets shoved under the calendar of events and replaced by stress, discomfort, and frustration, but peace in our soul is always possible. Jesus said, “Come to me, all you who are weary and burdened, and I will give you rest. (Matthew 11:28) What He is saying is, in so many words, I will take your burden. I will carry your uneasy feelings. I will disperse your fears. You do not have to do it; I will. His gift to mankind was His sacrifice, and this gift of sacrifice is offered to every one of us freely. All we have to do is ask Him to be our Lord and Savior. Will our burdens be entirely lifted, and will our lives be joyful every minute? No, but our savior is our comforter, our refuge. He becomes the foundation of our burdens. The weight is lifted when we lift our lives to Him. It has been proven; those who

he Texas Historical Association plaque positioned on the chimney pictured, standing tall along the Rio Grande in Mission, reads: Chimney Park, Site of Mission Canal Co. Pumping Plant. In 1907, John J. Conway and James W. Hoit began the Mission Canal Co. Irrigation System, which was instrumental in the early agricultural growth of the area. Here they built the first pump station out of hand made brick from Madero. The 106-ft. chimney carried smoke from wood-fired boilers which produced steam to drive the pump. The plant was later operated by John H. Shary and by Hidalgo County Water Control and Improvement Districts No. 7 and No. 14. The property was developed for recreational use after a new pumping plant was built upstream in the late 1950s. •

Meyer lemons are one of South Texas’ favorite fruits.

A cross between a tart lemon and a sweet orange, the trees were brought from China to the United States in 1908 by Frank Meyer, for whom they were named. The following recipe is a refreshing treat that cools the palate during our hot summer days…or anytime! • Lifelong foodie, restaurant reviewer, cooking teacher, and summer Iowan, Sandy Olson spends the Winter-Texan season at Palm Shadows RV Park in Donna. This season, Sandy will be sharing recipes to help readers enjoy the abundance of delicious fruits we find in our local markets. Sandy claims she’s been “a bit fruity” since childhood. Yield: 1 loaf

• 2 cups sifted flour • ½ cup pecans, chopped • ¾ cup sugar • 1 teaspoon orange peel, grated • 1½ teaspoon baking powder • 1 egg, beaten • 1 teaspoon salt • ¾ cup orange juice • ½ teaspoon baking soda • 2 tablespoons salad oil • 1 cup cranberries, coarsely cut Preheat oven to 350 degrees. Grease 9 x 5 loaf pan. In a large bowl, sift together first five ingredients. Stir in cranberries, pecans, and orange peel. Combine egg, juice, and oil in a small bowl. Add to dry ingredients, stirring just until moistened. Bake for 50 minutes. Remove from pan and cool. This is great sliced and spread with cream cheese or butter. •

Mexican Hot Chocolate

Meyer Lemon Sorbet (This recipe uses an ice-cream maker.)

Making simple syrup: Combine equal parts of white sugar and water in a saucepan. Bring to a boil over high heat, reduce to medium-low, and simmer 3-4 minutes or until the sugar is completely dissolved. Cool. Leftover syrup can be stored, airtight, in the fridge for at least 3 months, so begin by using 1½ cups of each ingredient, as too much is better than not enough. Making the sorbet: • 1½ cups chilled simple syrup • 1 tablespoon grated zest from the lemon peel

• 1 cup fresh Meyer lemon juice • Sprigs of fresh mint for garnish (optional)

Combine the syrup with the juice and zest, mixing well. Pour into the bowl of the ice-cream maker and proceed, using the manufacturer’s instruction for using the machine. When ready to serve, scoop into small bowls and garnish with a sprig of mint. •

Serves: 4 • 4 ounces Mexican chocolate or 3½ ounces semi-sweet chocolate plus 1 teaspoon cinnamon • 4 tablespoons sugar • 4 cups whole milk, scalded • A pinch of salt • 1 teaspoon vanilla, preferably Mexican • 2 eggs Break the chocolate into pieces. Place in food processor using the metal blade. Pulse several times to break up the pieces; then run machine continuously until finely chopped. Add the sugar through the feed tube with the motor running. With the motor still running, pour 1 cup of the scalded milk through feed tube. Add the vanilla, salt, and eggs in the same manner. Process until you have a good froth. Transfer to the remaining scalded milk in the saucepan, stirring constantly over low heat. Serve immediately.•

French Onion Soup Gratin

I do get quite a few requests for this recipe especially around the holidays. This is

a beautiful and soul satisfying soup which is also relatively easy to prepare. This is a family favorite of ours and while it may seem elegant, it is most certainly not fussy nor expensive to make. All you really need are some onions, a little dry white wine, a baguette and a little cheese – well maybe a few other things but not much. It is guaranteed to transport you on Sunday afternoon from your kitchen to a quaint little sidewalk café in the country-side of France. Bon Appétit! • Chef’s Note: Always remember to taste the wine you are going to cook with. If it has turned, is old or does not taste good or fresh – throw it out. If it is not good enough to drink it is not good enough for your recipe and it will ruin your dish. • 2 1/2 pounds yellow onions, halved, and sliced 1/4-inch thick (8 cups) • 1/4 pound unsalted butter • 1 bay leaf • 1/2 cup medium-dry sherry • 1/2 cup brandy or Cognac • 1 1/2 cups dry white wine, like a French white burgundy or white table wine • 8 cups beef stock, preferably low or no sodium • 1 loaf country style French bread • Kosher salt • Ground black pepper • Splash of Cognac (optional) • 1 cup Gruyere cheese, grated

In a large stockpot on medium-high heat, saute the onions with the butter and bay leaf for 20 minutes, until the onions turn a rich golden brown color. Deglaze the pan with the sherry and brandy and simmer uncovered for 5 minutes. Add the white wine and simmer uncovered for 15 more minutes. Add the beef stock and salt and pepper to taste. Bring to a boil, then simmer uncovered for 20 minutes. Remove the bay leaf, taste again for seasoning, add salt and pepper as needed. Remove from heat and add the additional splash of Cognac (this is optional) Cut country bread in rounds large enough to fit mouth of oven safe soup crocks or use multiple rounds if using a small loaf such as baguette. Place the slices on a baking sheet and place under broiler for 1 minute, taking care not to burn them as the bread will brown quickly. Ladle soup into bowls leaving one inch to the lip. Place bread rounds, toasted side down, on top of soup and top with grated cheese. Broil until cheese is bubbly and golden, 1 to 2 minutes. •

A Tejano Christmas Carol – Back by Popular Demand Special to Welcome Home RGV

t was the night before Christmas, and a distasteful Rio Grande Valley attorney by the name of Ezequiel Codos, played by 18-year-old Frankie Hooton from Weslaco, was working late in his office Christmas Eve while his overworked and underpaid employee, Pablo Gomez, played by 16-year-old Raul Ceron from McAllen, typed away on the water-right contracts for Codos before heading home. Suddenly, a charity worker comes in, and Codos runs him out with snarls and complaints. He also throws out his nephew, Beto, who stops by to invite the old miser to Christmas dinner. And so goes the familiar story, but with a twist of characters. This contemporary version, set in the Rio Grande Valley, includes the appearance of Tejano singer Selena, played by 12-year-old Brooklyn Dillard from Weslaco, as one of three spirits and plenty of other tweaked characters that make up the South Texas setting for this classic Dickens tale. “This play returns for its fifth year in a row,” said Pharr Community Theater Co. Producer Pedro Garcia. “But this time, all the roles, except two parts, will be played by teenagers and children making it fun—animated, if you will--for the entire family.” All of the youngsters in this quick, two-act play in English are under the guidance of director Seres Jaime Magaña from McAllen. “I’ve directed the play the last two years with adults and children, but this time the challenge was with a younger cast, and I was up for it,” said Magaña, a 30-year-old UTRGV graduate, husband, and father of four. “I love the voices of the kids and their demeanor in these roles. They add a new dimension to spirit while keeping

true to their interpretation. Everyone is going to have a blast.” Hooton is also the president of the IDEA Weslaco Pike College Prep Student Council. “Frankie has been in this play a couple of times in the past, playing other parts, and in several other PCT productions,” said Garcia. “He’s one of our young veterans and has improved each time as an actor. He’s entering college soon, but before he does, he’s taking on his biggest role yet, and he’s going to be delightful.” “Playing the role of Codos takes a lot of time and emotion, conveying this incredibly stingy, hateful man who detests holidays, especially Christmas. Because of choices and things that happened in his past-and then showing his transformation-turning a new leaf is taxing, and it takes time to get it right; it’s challenging, but I’m enjoying the experience,” added Hooton. The play runs from December, 14 through December 19, including two outdoor shows and three indoor shows, all in Pharr. Tickets will only be sold at each show, starting one hour before curtain. At the outdoor shows, donations will be accepted as your admission; pay whatever you wish to give. At the indoor shows, tickets will be $5 per person and two tickets for $5 or $3 each for those under thirteen. “There are nearly 18 youngsters involved in the telling of the story, each adding their embellished personality and some doubling parts,” said Garcia. “It’s an experience of a lifetime for them.” For more information, please visit the Pharr Community Theater Co. usty Rierson is a native of South Central, KS, namely Leon. Growing up on the family farm, he fell in love with agriculture and pursued a degree in agricultural economics at Kansas State University. Rusty graduated in 2008 and then completed a master’s degree in animal science, at K-State as well, in the summer of 2011. Rusty got into music when he was 14 years old. He started singing in church. Soon, it became a passion. He has toured in all 50 states and abroad in Canada, Mexico, Central America, England, and Scotland. He was named 2019 Rio Grande Valley Male Vocalist of the Year and very much enjoys Winter Texans and Valley culture. Rusty always pays tribute to George Strait, Don Williams, and some of his other heroes and also performs his original music.
