There’s
one thing I know for sure; there is a whole lot of talent in the RGV! Two of the things I enjoy most this time of year are eating and being entertained. And when the two happen at the same time, I just feel like all things in the world are right. I was invited by Mary Anne Barthel to the Aladdin Villas dinner theater last week, and boy am I glad I accepted the invitation! It was so nice to turn off the world for a few hours and watch the hilarious production of Those Crazy Ladies in the House on the Corner, which was performed by the Aladdin Villas Community Playhouse. (Not to mention, lasagna was on the menu, and the serving was so big I got to enjoy it again for lunch the next day!) The play was definitely something to witness, from the volunteers who were ushers to the waitstaff to the kitchen crew--in addition to all of the volunteers who donated their time and talents on decorations, sound, lights, and setup and the cast themselves. It truly put the “community” in “Community Playhouse.” A standing ovation to the cast, crew, and volunteers who made my Friday night out so very special! • We’re just connecting the dots,

very Thursday morning, Ronnie Schutz can be found in the Tropic Winds RV Resort Community Hall kitchen baking dozens of cookies for Friday’s Jam. Prior to retirement and moving permanently to the Rio Grande Valley from Virginia with her husband, Schutz worked as a cook for Project Hope, a global health and humanitarian-relief organization. So baking treats with a group of volunteers she leads--called the Ladies Community Service--for the entire park to enjoy makes her happy. “We do six kinds of cookies, and we do double-batch as well,” Schutz said. “I love baking cookies, baking bread, just cooking. And it’s not always following a recipe. It’s usually a little bit of this, a little bit of that.” Schutz and her husband prefer southern food, and some of her favorite dishes to make include pork chops, cornbread and beans, and liver and onions. Schutz adds they are one of the few couples at Tropic Winds that eats most of their meals at home. In addition to volunteering in the park’s kitchen as part of Ladies Community Service, Schutz manages a crafts group that meets once a week, also on Thursdays, to make quilts for a local crisis center.

“I call it their gossip time because they sit and do their work and gossip,” she said. “It’s a good way for people to get together.” The center distributes the quilts to abused women and children, which Schutz said is a cause she and the volunteers are happy to support. “It hasn’t happened to me, but I’ve seen people who have gone through it, and it makes me happy to know they get a little bit of security,” she said. “It’s an absolutely wonderful feeling.” Over the 10 years she’s been involved, Ladies Community Service has donated more than 1,000 quilts, and each week, the group of seven women can finish up to six new quilts. To raise money to buy fabric and materials, they sell 50/50 tickets at the jams and raffle tickets to win a quilt during the park’s once-a-month craft show. Schutz said these events typically raise about $500 per month, and it all goes back into Ladies Community Service. Although most of her family is back in Virginia and in other states across the country, Schutz said she feels right at home in Harlingen and her roughly 800 neighbors are like a second family. “It has just all fallen into place,” she said. •

Fred readily exclaims when talking about the labor-intensive day. Every Friday--except during a twomonth period when the couple returns to Arkansas in the summer--Fred heads for Border Missions in Hidalgo, arriving well before 8 a.m. Typically, he is among the first of approximately 10 to 12 organizations lining up to pick up food. With help from others waiting in line, he fills the back of his pick-up and flatbed trailer with allotted cases of fresh produce and the occasional cases of snack food donated by local produce companies and grocery stores. He then drives the load to Mi Sueno (My Dream) Street in Alton. “It’s not just a Friday-morning job. It’s 24/7,” Leila shares. “You never know when a call will come in,” adds Fred. Throughout the week, the couple fields calls for contributions, arrange to pick up donated clothes and other goods, and package and sort donations. Often, donations are anonymously delivered to the recipient’s front door. Leila stresses that Caring Hearts Ministry is a group effort. While extremely humble, the couple is a driving force, tirelessly dedicated to serving the needs of this community. They recruit help via their network of local resort ministers, including support from Mission Bell and Big Valley. Through a chance meeting a few years ago, they teamed up with Ida Sifuentes, a member of Iglesias Bautista Emmanuel in Alton, who helps coordinate the weekly distribution. Upon arriving at the Colonia, volunteers unload the food and supplies; an assembly line is quickly formed, and Ida leads the group in prayer before items are evenly distributed. Every family will receive the same amount of food. The ministry serves approximately 90 to 130 families each week.
Single-Mingle Success at Rudy’s BBQ in Pharr Special to Welcome Home RGV

elcome Home RGV’s first single mingle was held Thursday, December 5, at Rudy’s BBQ in Pharr. The event was BYOB (buy your own breakfast), and we had a great time mixing and mingling with singles from across the Rio Grande Valley. This was the first of many single mingles planned for this season. The next one is at Rudy’s Thursday, December 19, at 9 a.m. We had 11 people join us December 5, which is more than double the number who attended our first Summer Supper Club event last May. This is encouraging because at our second
Summer Supper Club, we had over 40 attend. If we do our math correctly, that’s more than an 800 percent increase! If we have an 800 percent increase at our next single mingle, we should anticipate over 80 people December 19. The purpose of the single mingle is for those ‘flying solo’ to meet new people and plan fun outings throughout the season. We’ve got a lot of fun things in the works, so come on out and enjoy a breakfast taco, coffee, and conversation December 19. Get ready to mingle! •
During one Friday in November, the Preusses arrived with a brand new wheelchair donated by a Ranchero Village resident. Ida says right after learning about the donation, she received a call from a woman recovering from knee surgery and in temporary need of a wheelchair as insurance would not cover the cost. There is already a waiting list for the wheelchair, which Ida will facilitate on a check-out basis from the church. This is just one example of a surprise donation filling an immediate need. Leila, Fred, and Ida share they often witness answered prayers through the Caring Hearts Ministry. Ida says she recently prayed specifically for ham to serve to the community during the holidays. “The next day,” she says, “Fred is calling me and says, ‘Guess what? We’re getting hams!’ I hadn’t even mentioned it to him.” Fred and Leila received a call offering 104 small hams, with a promise of more to come. “Nothing goes to waste,” Leila says. They utilize all donations to the best of their ability. Once they received an unusual donation of four reclining medical chairs. They contacted Ida, who found a family with a son with cerebral palsy. The versatility of a special chair allowed him to sleep more comfortably and join his family at the table. Ida says, “God is working with this ministry, and we can see his miracles are everywhere.” While Fred and Leila acknowledge that soon they may not be able to continue to participate, Ida says she prays not only for someone to take over the ministry but also to expand services to the Colonia residents. City of Port Isabel Announces
Annual Christmas Tree Lighting and Hometown Christmas Holiday Parade Special to Welcome Home RGV
T
he City of Port Isabel will kick off the 2019 holiday season with their 12th Annual Community Christmas Tree Lighting Ceremony. Saturday, December 14, at 7:00 p.m., Beulah Lee Park will once again be the site for the Christmas Tree Lighting Ceremony. The event will feature live performances by groups from Garriga and Derry elementary schools and Port Isabel High School. Vendors will be selling festive foods and drinks. Vendors will open at 6:00 p.m. The public is invited to come together with the community for this holiday tradition. Also on December 14 is the
Hometown Christmas Holiday Parade. Staging for the parade will take place at 4:30 p.m. in front of the Laguna Madre Youth Center on Port Road. The parade will begin at 6:00 p.m. The parade route will head east on Queen Isabella Boulevard (Hwy 100) and end at the Port Isabel Event & Cultural Center. A chalupa fundraiser will also be held December 14 at 5:00 p.m. at the Port Isabel Community Center. Proceeds raised will be used for the Laguna Madre Youth Center. International Festival December 14 - A Seasonal Tradition in the Valley Special to Welcome Home RGV
E
very Saturday since September, parishioners and friends of St. George Orthodox Church in Pharr have been cooking up vast quantities of handmade baklava and other international food delicacies, preparing for this year’s International Festival. Held on the second Saturday of December each year, the International Festival is a much-anticipated holiday event for the local community, families with children and Winter Texans alike. This year’s Festival will be Saturday, December 14, from 9 a.m. – 4 p.m. at St. George Orthodox Church, 704 W. Sam Houston in Pharr. It features the sale of a variety of homestyle foods and beverages from around the world, including Greece and Eastern Europe, as well as vendors selling fine handcrafted gifts, handmade soap, local honey, preserves, pickles, and more. With free entry, parking, children’s activities, and a wide variety of music and dance performances, there’s always something for everyone to see and do. The festival is a fun, educational event for the entire family. Activities and information will be shared by the Museum of South Texas History, the McAllen Public Library, South
Texas Border Chapter of Texas Master Naturalists, Deep South Texas Master Gardeners, UTRGV CHAPS, Milkweed & Monarchs, and more. While you shop, purchase some native host and nectar plants to attract butterflies to your yard. Our favorite RGV Bluegrass music returns for this year’s festival. The day’s entertainment includes holiday favorites from the wonderful UTRGV Tuba and Euphonium Quartet, as well as the much-beloved Edinburg Folklorica dancers and the Mariachi Nueva Tradicion. Returning to the festival stage will be the talented colibrí children’s choir. The last performance of the day will be the South Texas Indian Dancers, led by Robert Soto. Tish dazzles with her one-of-a-kind blend of folk, country, Latino, and pop and will be accompanied by her longtime musicians Marvin Dykhuis on guitar and mandolin and Chip Dolan on piano and accordion. Tish has been a featured artist on Austin City Limits, has performed at the White House, and has teamed up with artists such as Joan Baez, Booker T. Warthogs now on exhibit at Gladys Porter Zoo Special to Welcome Home RGV

hey have finally arrived! Two male warthogs (Phacocherus africanus) have made their debut in late November at the Gladys Porter Zoo. These two brothers, Leonardo and Rollo, arrived from the Indianapolis Zoo and have earned the title of Gladys Porter Zoo’s very first warthogs. They may not be the most attractive-looking mammals, but they are incredibly intelligent and can quickly adapt to their environment. Native to Sub-Saharan Africa, warthogs will typically eat vegetation, such as roots and grasses, but will occasionally eat meat when the opportunity arises. When startled,
warthogs can run up to 30 miles per hour or, when necessary, may use their face bumps and sharp tusks for selfdefense. Although their conservation status is listed as Least Concern, warthogs are targeted for their tusks and still face endangered habitats and fractured breeding grounds. The Sixth Annual McAllen Holiday Parade took place December 7. Nearly 100 illuminated floats, giant helium balloons, marching bands, and celebrities--including Dallas Cowboys legends and current players--made their way from McAllen Veterans Memorial Stadium down Bicentennial Boulevard to Business 83. The parade is considered Texas’ largest illuminated holiday parade, drawing approximately a-quarter-of-a-million people to watch along the route. The McAllen Holiday Parade takes place each year on the first Saturday in December.

recently attended a baseball game at the team ball park in our local town. There were perhaps 200 people there as I took a seat right behind home plate, three rows up. I was watching the game but frequently found myself distracted by small groups of young kids walking in front of me between the bleachers and the backstop fence. I eventually started paying attention. There were several groups, mostly with kids between 7-10 years of age. They
were mostly girls, but there were a few boys mixed in. I started watching for one particular group. They would pass by, right to left, talking, giggling, and jostling. A couple minutes later, they came back again, this time left to right. A couple minutes later, here they came again, heading back the other way. This time they kept going away from me, and I turned back to the game. Oh wait! Here they came again from the same direction as last time. They had circled all the way around. I tried to figure out where they were going. Then it hit me. They weren’t going anywhere. They were on parade. I remember those days back in school. It seemed important then to hang out with the right crowd, to declare our social status by being seen with the right people. Maybe if we hung out with the cool kids, some
of their cool would rub off and others would consider us cool, too. I wonder what folks would think if adults did that. I think it would be really weird. I suspect most of us figured out, somewhere along the way, that parading around with certain people doesn’t make us cool. There is little value in being someone else’s groupie. One thing I have learned is that our “cool” doesn’t come from others. It comes only from us and what we bring to our own relationships. We can’t borrow it from someone else, and we can’t put it on parade. Some are born with it, naturally; others have to work at it. But whichever, we choose to be people others are drawn to with our character, compassion, generosity, and friendship. Actually, I guess those are always on display, aren’t they? I’m just sayin’. •

This enchanting story features the epic journey of Princess Anna, Olaf the snowman, and Ice Harvester Kristoff and his trusty reindeer, Sven, as they journey to save the kingdom from an endless winter. Breaking Elsa’s ice spell won’t be easy, though, for these characters will face challenges from frozen hearts to two-faced fiancés. With a cast of beloved characters and a story loaded with magic, adventure, and plenty of humor, Frozen JR. is sure to thaw even the coldest of hearts! are two Texas Master Naturalist chapters in the Rio Grande Valley. Both chapters offer monthly meetings--with guest-speaker programs and social time—that are free and open to the public. The Texas Master Naturalist organization is a unique educational volunteer program sponsored by Texas A&M AgriLife Extension Service, Texas Sea Grant Program, and the Texas Parks and Wildlife Department. The Rio Grande Valley Chapter meets the second Tuesday of the month at 7 p.m., at the Cameron County Annex Building, located at Williams Road and Highway 83/77 in San Benito (1390 W. Expressway 83). The social begins at 6:30 p.m., followed by a speaker and a business meeting. Snacks are served at the social. The South Texas Border Chapter meets the third Monday of the month at St. George Orthodox Church Hall, 704 W. Sam Houston Avenue in Pharr. The social, which includes snacks, begins at 6 p.m.; the presentation is at 6:30 p.m., followed by the chapter’s monthly business meeting. January Training Both chapters are accepting registrations for their January training

Harlingen Native Plant Walks Rio Grande Valley Texas Master Naturalists offer free, guided, native-
plant walks the first Friday and third Saturday through May 2020 at Harlingen’s Hugh Ramsey Nature Park, where many native plants are highlighted in specialty gardens around the park’s Ebony Loop. Meet the guides in the parking lot, where the two-hour tour begins at 9 a.m. Ebony Loop is an easy quartermile, level caliche trail. Wear sturdy shoes and bring water and bug spray for yourself, if desired. Restrooms are located at the park entrance. Hugh Ramsey Nature Park is at 1000 South 499, two miles south of Harlingen’s Valley International Airport or go north on Ed Carey Drive, just north of the Arroyo Colorado River Bridge. Rain cancels the walk; the threat of rain does not. •

Another reason for the festival is a food-and-fund raiser for the very active St. George Food Pantry, which serves over 115 families. irst United Methodist Church of La Feria will host its Live Nativity Saturday, December 21, and Sunday, December 22, from 6 - 7:30 p.m. At the Live Nativity, the church parking lot transforms into the town of Bethlehem. Visitors can either drive or walk through the village and see the original Christmas story of the birth of Jesus Christ. The Live Nativity will feature Joseph
and Mary, as well as a full cast of townspeople, angels, wise men, kings, soldiers, shepherds, and live animals. The event will also include live and recorded music. heir music has been in the soundtrack of our lives for decades, with lyrics that make the world seem sunny, hopeful, and fun--like the ebb and flow of waves crossed with the eternal promise of youth. Even if the Beach Boys weren’t your favorite band growing up, seemingly everyone loves listening to their songs. If you’re nostalgic for the days when young love, cool cars, sand, and surf were all that mattered, come enjoy a fun evening with Sail On, the ultimate Beach Boys tribute band. This talented and energetic group will perform at the Harlingen Municipal Auditorium Wednesday, March 4, 2020, at 7:30 p.m., courtesy of the Harlingen Concert Association (HCA). Tickets are on sale now at the Auditorium box office, 1204 Fair Park Boulevard in Harlingen, and online at HarlingenConcert.com. Sail On plays all of the Beach Boys’ classic hits, plus numerous treasures from the band’s brilliant extended catalog. With over 80 shows a year, the group is the most booked Beach Boys tribute band in the world. A big part of Sail On’s appeal is their solid musicianship and authentic sound. “I couldn’t have asked for a better Beach Boys Tribute than Sail On,” said Krystel Zepp, lifestyle director for Del Webb Ponte Vedra in Florida. “The band truly captured the sounds of the original group.” As band member Paul Runyon noted in an August 2018 review, Sail On differs from other tribute bands, many of whom don wigs and costumes and try to imitate the original groups. Instead, Sail On’s focus is the music. “We try to give the essence of the group, right down to the harmonies and playing.” Sail On performances are completely live and rich in detail. Runyon, who lives in Nashville and plays and records with his band, The Explorers Club, also has played
keyboards with Mark Lindsay from Paul Revere and the Raiders. Band members Wyatt Funderburk, Mike Williamson, and Matt Thompson also are Nashville musicians, songwriters, and producers who have toured the U.S. and abroad with their own bands and with others. All share a lifelong affinity for the golden age of pop music and love sharing the genius of the Beach Boys with audiences across the country. Harlingen Concert Association has been bringing internationally acclaimed touring artists to the Valley since the 1930s. This all-volunteer, nonprofit organization is committed to enriching the cultural life of the Rio Grande Valley through live performances. Thanks to season ticketholders and sponsors, these concerts can be offered at affordable, family-friendly prices. During the concert season, HCA also sponsors mini concerts and master classes at private and public schools in conjunction with their scheduled artists. forget is almost humanly impossible. When someone has wronged you, that wrong stays in your mind somewhere forever, but when you forgive, the wrong takes on a different scope of feelings. The memory of the wrong is there, but the effects of the wrong can change depending on how you react to the wrong. If you let it burn in your heart and simmer for years, you yourself are caught in the web of restriction--restriction because you cannot get over the hurt, deception, or betrayal. But if you let loose of that restriction through prayer and the act of forgiveness, you have reached a new freedom, a freedom from the weight of unforgiveness weighing you down. “Be kind to one another, tenderhearted, forgiving one another as God in Christ forgave you.” Ephesians 4:32
The word forgiveness is actually mentioned 14 times in the NIV version of the Bible, but the concept of forgiveness is actually mentioned 166 times. Forgiveness is woven throughout the message of the entire Bible. Some verses are very familiar to everyone, and some are totally forgotten or obscure. Almost every Christian has recited The Lord ’s Prayer, instructing us on how to forgive. “Forgive others as I have forgiven you.” That type of forgiveness is the unconditional agape type of forgiveness. What does forgiveness actually mean? According to the dictionary, it is “to stop feeling anger for or about someone or something, to stop blaming, or even to stop requiring a payment.” To stop feeling anger takes

time for the heart to heal, to stop blaming is to realize the fault does not always fall on that one person but perhaps even yourself, and to stop requiring payment is the truest sense, the actual wiping away of a monetary debt. Have you looked at the emotional sense of stopping payment of a debt, the feeling that vengeance is not for you to decide, the feeling of satisfaction when something bad happens to the person who has wronged you? When you free yourself from that type of thinking, you truly have broken the bonds of imprisonment. You will live in the freedom you will have from revenge and the feeling of ‘getting back at someone.” When you truly forgive, you will find that the forgetting becomes much easier to live with. The burden is then lifted from you, and you are able again to enjoy the freedom of total forgiveness. •

An evening of holiday fun with the McAllen Wind Ensemble December 20 Special to Welcome Home RGV
T
he McAllen Wind Ensemble continues their 45th anniversary celebration with an evening of magical holiday fun. The December 20 event, Tinsel and Tutus, will feature another of McAllen’s artistic institutions, the Deborah Case Dance Academy. Dancers from the Deborah Case Academy will be featured at the holiday concert, performing selections from Tchaikovsky’s famous Nutcracker Ballet to the McAllen Wind Ensemble’s live performance of the suite. Deborah Case, director of the dance academy and Rio Grande Valley Ballet, began her dance training at the age of three. Her dedication to teaching the Vaganova (Russian method) of dance has brought unbelievable dance professionals to teach at her dance academy. Through the Bolshoi Ballet Academy teachertraining program, Case received an official certificate from the Russian government. The Rio Grande Valley Chamber of Commerce has awarded her with “Most Distinguished Woman in Arts and Entertainment.” Every year since 1972, Rio Grande Valley Ballet offers matinee performances of The Nutcracker to all students in the Rio Grande Valley, and they see 7,500
school children come to their shows at the McAllen Performing Arts Center. This 47th anniversary season, they will have entertained over 337,500 students. The Rio Grande Valley Ballet held two full performances of The Nutcracker--Saturday, December 7 and Sunday, December 8. The McAllen Wind Ensemble is excited to host the Ballet’s encore performance of several of the dances from the world’s favorite Christmas ballet. Tinsel and Tutus will be December 20 at the McAllen Performing Arts Center. San Antonio Flow Arts Performance Group to Light up ILLUMINA FEST Special to Welcome Home RGV

lowbotics of San Antonio will light up the night at Quinta Mazatlan’s premier celebration, Illumina Fest! The two-day art-and-music event is a global celebration of light taking place Friday and Saturday, December 13 and 14, from 7 – 10 p.m. Guests will travel the quarter-mile Luminaria Trail and get a glimpse of how the world celebrates with light across the seven continents, experiencing unique performances, like Flowbotics, along the way. “We are thrilled to light up the night with McAllen, Texas!” said Flowbotics Founder Whitney Watts. Flowbotics Hoop Troupe is a Flow Arts Performance group that specializes in daytime, LED and fire hula hooping, as well as other flow props. Flowbotics is dedicated to promoting and advancing the performing, visual, and creative art of flow arts through an ongoing series of local and special events, workshops, and other community outreach programs, inspiring health, wellness, and creativity. While the simple love and joy of a hula hoop originally drew the team together, today, the team consists of five talented flow artists, including Watts, Co-Founder Tori Villarreal, Cassandra Flores, Amber
Guitron, and Michael Morejon. “We are so excited to have Flowbotics sharing their light at Illumina Fest and invite everyone to come shine their light! You never know how much light you have to give until you share it with others,” said Lisa Ramirez, supervisor at Quinta Mazatlan. There are two ways for guests to share their light at Illumina Fest: (1) Dress “illuminated” for chances to win prizes, and (2) bring a decorated paper lunch bag (luminaria) to place on the luminaria trail. Compost will be provided to weigh down the paper luminaria bags, along with LED tealights. Children who bring a paper luminaria bag for the trail will receive a glow band as a gift for sharing their light! Tickets are $5.00 per person, with children 2 years of age and younger free. Our volunteers and other supporters have spent the summer busily making more wonderful gift items. There are more shawls and scarves, of course, plus new kids’ toys, leather and bead work, toddler clothing, baskets, and more…ALL handmade and just lovely! When you purchase a gift from The Lamb’s Loom, you are giving a present with a purpose. For those new to the area, let us introduce ourselves. We are an ALLvolunteer, nonprofit, prayer-shawl ministry, and we have opened a yarn shop and boutique to help fund the many things we are doing. Our wonderful group of volunteers--we affectionately call them The Shepherds--are eagerly waiting to help you out! Our concept is simple: We have the yarn and gift shop to help raise funds, people bring in donations of handmade items we disperse to help benefit children and less-privileged people all around the world, and, as a 501 (c) (3), we are able to accept financial donations, too! Well, it’s a long-time favorite sandwich filling, and sometimes you find it stuffed into tomatoes or avocados. But this twist is best eaten open faced on a fresh pita! •
Spicy Turkish Egg Salad Submitted by Sandy Olson
• 8 large, hard-cooked eggs, cooled and peeled • 2½ teaspoons Turkish Aleppo pepper flakes (NOTE: If you can’t find them in your supermarket or ethnic store, you can substitute regular crushed pepper, but use only 1½ teaspoons because it’s much hotter. After the salad is combined, you can adjust for seasonings, if necessary.) • 1 teaspoon kosher salt • 1-2 tablespoons olive oil • 1 loosely packed cup of coarsely chopped fresh, flat-leaf parsley
Cut each egg in quarters lengthwise. Then cut each piece in half crosswise. Place the eggs in a bowl, add the remaining ingredients. and toss gently to coat the eggs and moisten the parsley with the oil. Allow to remain at room temperature for 30 minutes to let the flavors bloom. You can then serve it at room temperature or cover and chill to serve later. Spread onto fresh, pocket-style pitas, which have been split to make two thin circles; then cut in half. Serves 4 • 4 ounces Mexican chocolate or 3½ ounces semi-sweet chocolate plus 1 teaspoon cinnamon • 1 teaspoon vanilla, preferably Mexican • 2 eggs
• 4 cups whole milk, scalded • Pinch salt • 4 tablespoons sugar
Break the chocolate into pieces. Place in food processor that uses a metal blade. Pulse several times to break up the pieces; then run the machine continuously until finely chopped. Add the sugar through the feed tube with the motor running. With the motor still running, pour 1 cup of the scalded milk through the feed tube. Add the vanilla, salt, and eggs in the same manner. Process until you have a good froth. Transfer to the remaining scalded milk in the saucepan, stirring constantly over low heat. With Thanksgiving behind us, let the holiday baking begin!
I love this recipe because it is rich, fancy and decadent! Even its name says so. The marriage of shortbread with luscious caramel and rich chocolate is, for me, the trifecta of holiday baking ingredients. Even better, these bars make for a lovely baked gift as well and would definitely steal the show at your office cookie exchange this year! Bon Appétit! • For the Shortbread layer:
• 12 tablespoons unsalted butter (1 1/2 sticks), at room temperature • ½ cup granulated sugar • 1 ½ cups all-purpose flour • ½ teaspoon kosher salt
For the Caramel layer:

• 1 (14-ounce) can sweetened condensed milk • 2 tablespoons light corn syrup ½ teaspoon pure vanilla extract
• 4 tablespoons unsalted butter (1/2 stick) • ½ teaspoon kosher salt
For the Chocolate:
8 ounces semisweet chocolate, chopped
• • • Directions: Make the shortbread layer. Heat oven to 325 degrees. Line a 8-inch square baking pan with parchment paper, leaving a 2-inch overhang on two sides. In a large bowl, beat together butter and sugar with an electric mixer on medium until fluffy, about 2 minutes. Add flour and salt, and beat on low just until the mixture is evenly combined and resembles the texture of coarse sand. pour mixture into prepared pan, and press down firmly into an even layer. Bake until top is dry and light golden brown, 30 to 35 minutes. Place on a rack to cool. Make the caramel layer: In a medium saucepan, combine condensed milk, butter, light corn syrup and salt. Cook mixture over medium heat, stirring constantly, until it has thickened and changed from a milky yellow color to the color of butterscotch pudding, 10 to 20 minutes. It should read 220 degrees to 225 degrees on an instant-read thermometer. Adjust the heat as necessary to keep the bottom from scorching. Stir in vanilla extract. Immediately pour the caramel over the baked crust and spread it into an even layer. Prepare the chocolate: In the microwave (in short intervals) or over a double boiler, melt the chocolate, stirring often. Spread melted chocolate in an even layer over caramel. Chill until chocolate is set, about 30 minutes. To serve, cut the parchmentfree sides away from the pan with a sharp knife, then transfer the shortbread to a cutting board using the parchment overhang. Cut into 32 small bars. • • • • • • •
