this issue, I know we have so many new friends who have just arrived for the winter, and we want to welcome you home with open arms! This is our 12th year of serving the needs of our Winter Texans, and whether you’ve been with us since the beginning or are new to the party, we welcome you to South Texas. The party has started, and we can’t wait for our first official event... our Winter Texan Homecoming December 12! We hope you’ll join us! This is our third annual event, and each year we get bigger and better. This year, we’ve moved the event to the new Mission Event Center, and we have a great deal of surprises in store for you. We’ll have live music by our very own Jeff Gordon, lunch served by Ranch House Burgers, and plenty of door prizes and fun for all. Tickets are just $10 per person, and we want YOU to be there! ACTIVITY DIRECTOR Boot Camp Connecting Resorts and Local Activities Story by Eryn Reddell Wingert
I
n the Rio Grande Valley, the Winter-Texan season officially begins November 1. During the early weeks of the season, resort activity and tour directors are hard at work preparing for residents to arrive. Welcome Home RGV connects these directors with local cities, sites of interest, and businesses through an annual Boot Camp. Boot Camp provides opportunities to see, firsthand, what Valley cities and organizations have to offer our Winter Texans during the season. Directors from 43 resorts signed up for activities and tours that would appeal to winter residents in their respective parks.
This year, Welcome Home RGV provided tours of sites on South Padre Island November 14 through 17. Those who signed up experienced a true South-Texas winter over the course of a weekend. Directors bundled up for sightseeing tours Friday during the tail end of a cold front but shed jackets and hats Saturday and Sunday under clear blue skies and with warmer temperatures. Other tour opportunities included the McAllen International Airport, the historic William Jennings Bryan House in Mission, the Valley Nature Center in Weslaco, and the City of Pharr.

now to Sun RV Resort in Weslaco has its own Purple Heart recipient. His name is Bill Leir, and he’s been coming to the Valley from North Dakota for the last 15 years. In 1951, at 18 years of age, Leir entered the National Guard to serve in the Korean War. Although, at the time, there was a military draft, Leir enlisted on his own because he felt a “sense of duty” to serve the country. As a forward observer for the field artillery, Leir was responsible for “spotting the enemy” and reporting back to his troop so they could direct their attack. “It was probably a little more dangerous than being back further,” he said, “but somebody had to do it.” October 9, while out on the field, Leir was hit by a mortar shell. As a result, he lost his left leg. He was taken to a hospital in Japan. Over the course of a few months, Leir was transferred to California, Alabama, and then Michigan. In May of the following year, at age 20, he received a prosthetic leg. “It took about two weeks to learn to walk with it,” Leir said, “but it worked out pretty good, and I have no problem with the leg.” Leir added he is thankful for his

years spent in the National Guard because it taught him discipline, critical thinking, and how to take care of himself. Since being discharged from the military and honored with a Purple Heart for his bravery and sacrifice, Leir has remained a c t i v e , working in construction sales after college and now involving himself in Snow to Sun’s woodshop group. Leir said he mostly works on small projects, like repairs, but also enjoys working on upkeep and renovation for his and his friends’ units. “Down here, I’ve helped a couple guys remodel their units and add on to them,” he said. “I like carpentry work, so it’s something to keep me busy.” Every Friday, the woodshop group leaves the park to try a new restaurant in the Rio Grande Valley. He said he’ll try any type of food at least once. Apart from woodshop, Leir likes to dance when the park brings in live music performers, particularly when the genre is country western. He sticks to the two-step. “I don’t line dance. I need to have someone holding me up,” Leir joked. “But I’m out there during happy hour every day, and it’s a lot of fun; plus, it’s good exercise.’ •

Share the Warmth by December 15 Special to Welcome Home RGV
A
group of Winter Texans in Long Island Village, Port Isabel, realized we all have warm winter clothing we no longer need. Because we spend our winters in the South, we knew there were people who could use this warm clothing--the folks who live in the Valley and don’t have the resources to buy winter clothing for the cold days to come. So we cleaned out our closets up north and packed up jackets, coats, hats, gloves, and scarves and brought them down with us. Sue Smith, organizer in Long Island Village, contacted the Salvation Army in Port Isabel, and they were delighted with the idea. Working with local schools, names of families in need are being
gathered. The items will be distributed by the Salvation Army to families through the schools. The South Padre Island Convention and Visitors Bureau and the SPI Chamber are spreading the word and serving as collection centers. They are also posting on their Facebook pages. “This is a great way to help out our winter neighbors who can’t afford to buy winter outdoor clothing,” Smith said. “If Winter Texans throughout the Valley want to help, all it takes is a call to your area Salvation Army!” We’d love to see other RV parks get onboard and assist. If you’d like to do this in your winter community, all it takes is a phone call. Think of all the people we can help! •

The City of Pharr provided a multistop tour by trolley. The day started with breakfast al-fresco at the Pharr Economic Development Corporation offices housed in a Spanish-style home surrounded by lush gardens. Mario Lizcano, chair of the Greater Pharr Chamber of Commerce, emphasized to the group during an initial presentation, “All of us appreciate you coming down and joining our community.” After breakfast, a presentation, and a folkloric performance, two trolleys carted campers from the E.D.C. to the Pharr International Bridge, Pharr Community Theater--where campers were treated to a skit--Top Golf, and
lunch at Fazoli’s. Barry Wallage, activity director/ kitchen volunteer for Tip O’ Texas RV Resort, generally visits six months out of the year but is considering a permanent move to the Valley. While visiting the Bryan House for a tour and lunch, Barry shared his appreciation for the opportunity to take part in the tours. “You’ve got such beauty here; the people are so friendly,” he said. Austin-based artist Joel Laviolette will be lighting up the forest with live electronica at Illumina Fest. Experience this choreographed, outdoor performance, along with other light and music shows, December 13-14 from 7 to 10 p.m. at Quinta Mazatlán.

housands of luminarias and several unique art installations will magically light Quinta Mazatlán’s Thorn Forest December 13-14 for Illumina Fest. The two-night, after-dark, art-and-music event will feature Austin artist Joel Laviolette, along with a variety of local artists and musicians. Guests will travel the quarter-mile Luminaria Trail and get a glimpse of how the world celebrates with light across the seven continents. Laviolette, an award-winning artist, will color the forest with light and music in the stone amphitheater. Laviolette is a composer, educator, builder, and connector. His musical experience spans genres and crosses borders, weaving in elements from electronica to African marimba and mbira traditions. Joel’s rich, musical past has shaped his presentday focus on fusing varying musical styles into his compositions.
Community artists to be featured along the trail include the Tuba Euphonium Quartet, STC Guitar Group, Cuerdas Y Vientos de Alabanzas, Ambleside School, Vanguard choirs, the nationally recognized Fossum Choir, Flowbotics LED Hula Hoop Dancers, Stilt Walkers, Fire Art, and more. Food and drinks will be available for sale by local vendors. Children are invited to bring a decorated, paper-bag luminaria--for a dollar off their ticket-- for placement along the trail. Quinta Mazatlán will supply the sand and candle. Other children’s activities include a visit by Santa Claus, cooking marshmallows, and art. This year, the money we raise from our Bake Sale will be donated to Women Together/Mujeres Unidas, a nonprofit, community-service organization whose mission is to provide shelter and support services for victims of domestic abuse. •

Announcing New Class for Texas Master Naturalist Program Special to Welcome Home RGV
T
he Rio Grande Valley Chapter of Texas Master Naturalist is offering a new class to their recognized program of enlightening and educating a corps of volunteers about the natural resources of the Rio Grande Valley. Most participants of this program volunteer at local state parks and wildlife refuges, nature centers and nature festivals, clubs, and organizations. If this sounds like something you would like to do, classes begin January 15 and are offered every Wednesday night for 10 weeks, paired with Saturday field trips. It is an opportunity to learn from local professionals about the plants, birds, butterflies and dragonflies, animals, trees, stars, geology, sea life and other natural forces in the Valley and to experience the relationship of these forces upon our parks and natural areas. The second portion of the Texas Master Naturalist program is finding your niche where you enjoy volunteering and sharing your knowledge and enthusiasm with school groups, Winter Texans, tourists, or the general public. Perhaps working with
your hands is your talent and therapy; there are plenty of reserves that need gardening, planting, trimming, and watering. Classes will be held at the Cameron County Annex Building (Hwy. 77/83 at Williams Street, San Benito) through March, with graduation April 10. This session is limited to 25 people, and the tuition is $150. There are scholarships available. More information is available on the RGVCTMN webpage: rgvctmn. org/2019-class-information. And Then, Advent Comes by Rev. E.B. Holschuh [Note: The Christian liturgical season of Advent lasts for four Sundays leading up to Christmas.]

ietrich Bonhoeffer is one of my heroes, a man who stood up for the Truth in a time when the truth had become perverted by a demagogue, Adolf Hitler, and a people who had become blinded by nationalism. His friends arranged lecture tours in America; Bonhoeffer went, but soon returned to Germany and joined with those who were seeking the overthrow of the Nazi regime… Bonhoeffer led a double life as a pastor in the political underground movement. Such involvement was foreign to the whole tradition of the Lutheran Church, which recognizes the distinction between the authority of the church in things spiritual and that of the state in things political, while acknowledging that both, of course, fall under the authority of God.
“The unending comfort of the Almighty God comes to us, humbly and in the form of a child, his Son.” On September 4, 1940, Bonhoeffer was forbidden to speak in public. He was arrested on April 5,1943, and remained a prisoner until his death in 1945. He was executed by the Nazis on April 9, 1945, less than a half a year before the end of World War II and the end of Hitler’s government. On November 21, 1943, Bonhoeffer wrote these words in a letter to a friend while imprisoned by the Nazi government on charges of espionage: “And then, Advent comes. So many beautiful memories we share of that season. You were the first to open up for me the world of its music, which we have played together year after year during the Advent weeks. A prison cell is like our situation in Advent: one waits, hopes, does this and that—meaningless acts—but the door is locked and can only be opened from the outside. That is how I feel just now.” Three years earlier--in 1940 while imprisoned--Bonhoeffer wrote a Christmas sermon, which, unfortunately, he was never able to deliver. Almost 80 years have passed,

Have our hands, soiled with daily toil, become too hard and too proud to fold in prayer at the sight of this child? Can we not forget all our stress and struggles, our sense of importance, and for once worship the child, as did the shepherds and the wise men from the East, bowing before the divine child in the manger like children?” And then, Advent comes. Football season is in full swing. Walmart’s Christmas starts before Halloween. We turn the clocks back and get out the sweaters. And then, Advent comes. Thanksgiving gives way to Black Friday, holiday parties, wish lists, and Linus Van Pelt telling us what Christmas is all about (Man, he was spot on!). The baby Jesus again takes his rightful place in the crèche on the mantle. And then, Advent comes. She shall bear a Son and call His name Immanuel (“God with us”). We wait, hope, do this and that— meaningless acts—but the door is locked and can only be opened from the outside. •

Join Winter Green Estates and Send Hugs to Soldiers Year Round Special to Welcome Home RGV

he Winter Green Estates (WGE) Ladies Activity Group (LAG) and WGE residents went above and beyond again this year in their drive to collect items for Hugs for Soldiers. Ron and Nancy Herbertholz, RGV coordinators, were very pleased with the number of items donated. Ron and Nancy were also surprised by all of the calls they received from readers who read the article about Hugs for Soldiers featured in the November 7 issue of Welcome Home Winter Texan. The outpouring of participation and interest from readers was wonderful. Hugs for Soldiers is a year-round program, sending care package items to soldiers. Care packages are a welcome treat for deployed service members.

Join us on National Wreaths Across America Day Special to Welcome Home RGV

ach December, on National Wreaths Across America Day, our mission to remember, honor, and teach is carried out by coordinating wreath-laying ceremonies at Arlington National Cemetery, as well as more than 1,600 additional locations in all 50 states, at sea, and abroad. Join us by sponsoring a veteran’s wreath at a cemetery near you, volunteering, or donating to a local fundraising group. Philosophy for Everyone UTRGV Series at the IMAS Special to Welcome Home RGV

A
team of volunteers, led by Wayne Tennison, received thousands of shoe boxes between November 18 and 25 at BT.Church McAllen. Box donations were received from as far away as Falfurrias, filled with trinkets, toys, and basic necessities to be delivered to children around the globe. Individuals and organizations from across the Rio Grande Valley, such as Edinburg Rotary, multiple Girl Scout troops, and Tropic Winds RV Park participated in this year’s Operation Christmas Child. BT McAllen served as the drop-off point, where the donations are counted, packed, and shipped to the distribution center in Dallas. This year, nearly 3,000 boxes are expected to be delivered to children around the world from the Valley and Laredo.

he International Museum of Art & Science (IMAS) has teamed up with UTRGV Department of Philosophy faculty to present a series of thoughtprovoking, philosophical talks for the general public. The topics range from art to science and the universe to “Espanglish” and animal morality. The first of these talks was delivered to a full house in the Science On a Sphere (SOS) theater November 9 during the Family Fun Night: Ancient Cultures event at the IMAS. Dr. Dahlia Guzman and Dr. Thomas Pearson gave an overview of the philosophical treatments on the concept of evil from the Greeks to the 19th century. Dr. Pearson discussed the many studies by anthropologists about the questions, “What was considered evil?” and “How did evil get into human existence?” Dr. Guzman followed with further analysis, stating, on the discussion of evil, “We have some sense that we could control it; if we controlled ourselves, perhaps we might be able to control this notion of evil.” Sunday, November 17, Dr. Anthony DeSantis presented Science Explains the Truth About the Universe? Ha ha, that’s funny – No Way! to a warm response from lecture participants. Afterward, participants were able to explore the fine-art galleries and hands-on spaces on the Free Family Sunday Funday. Up next, Dra. Mariana Alessandri will present in Spanish Thursday, December 5, at 6:00 p.m. with her talk ¿Es Espanglish Feo? Drawing inspiration from Gloria Anzaldúa, the talk will explore the genesis of “Espanglish” in the Rio Grande Valley. Dr. Bradley Warfield presents Why We’re Often So Bad at Talking to Each Other Online Saturday, January 25, 2020, at 2:00 p.m. As it is now commonplace for people to recognize and lament the lack of quality, respectful discourse online, he offers
a perspective to explain just why it is happening. This talk coincides with Educator Open House, which is a free day for formal and informal educators to visit the museum and benefit from shared resources. Dr. Remei Capdevila tackles The Impossible Question – What is Art? Thursday, February 6, 2020, at 6:00 p.m. at our Family Fun Night: Art Bash. She will present philosophical theories about art with respect to the IMAS art collection. Are non-human animals capable of acting morally and immorally, or do moral concepts apply only to humans and our actions? Dr. Michael Jaworski dives into this question with Animal Morality Thursday, March 5, 2020, at 6:00 p.m. Rounding out the series, but bringing it all back to the beginning, Dr. Paul Saka discusses ideas of the beginning of life in his talk, What Came First? Concepts of Life Saturday, April 11, at 1:00 p.m. during our spring cultural event. Philosophy for Everyone talks are included with daily General Admission. Sunday admission is free, and talks are included at no extra charge. College students and UTRGV faculty receive discounted admission with valid school I.D. Public PreK12th teachers receive free admission with valid school I.D. The museum is located at the intersection of Bicentennial Way and Nolana Avenue at 1900 W. Nolana in McAllen. OR.... if you like, you can come to The Lamb’s Loom Christmas Bazaar beginning December 6 and purchase unique gifts of handmade soaps, dolls, toys, clothing items, jewelry, project bags, shawls, scarves, and so many other fun things. We like to call them “Presents with a Purpose” because when you shop here, you are contributing to this ministry! We also want to invite you to our little neighborhood Block Party the first Saturday of every month. The Lamb’s Loom is so blessed to be located in a really cool neighborhood of antique, secondhand, and craft shops. It’s an older part of McAllen, just off 10th Street, and every first Saturday-September through May--everyone moves things outside to the “yards” and has a fun time all day. This year, The Lamb’s Loom and all our craft people have joined in the fun, and we would love to have you come check things out! There are wonderful shopping finds and terrific people to be found up and down the streets. Our peeps specialize in handmade items. You’ll find leather work, crocheted and knit shawls and dolls, soaps and scrubbies, bags and totes…and the list goes on! And Uncommon Grounds, the neighborhood café, always has something yummy for lunch! If you have items stockpiled you do not intend to use as gifts, we invite you to add them to our donation chest. You donations would be greatly appreciated. This time of year is our largest distribution time. We give all of the donated items we have collected
during the year to various groups around the world. These are gifts of love to someone desperately in need of warmth and a touch of love. Many of them feel blessed that someone they don’t know-and will never meet--has sent them a gift to demonstrate appreciation for God’s love and provision. So many of us are blessed, and this is an opportunity to pass some of those blessings on. Monetary donations are also gratefully accepted in order to pay the cost for shipping these gifts and to cover our overhead expenses. We do hope you’ll come and visit, hear a few stories of the encouragement these gifts have been to so many around the world, and become a PEG! South Padre Island Holiday Activities Kick Off with Giant Sand Sculptures Sandcastle village, parades, and more planned for Island visitors Special to Welcome Home RGV

he holiday season begins on South Padre Island with a whole host of special events, including a treelighting ceremony, followed by a Christmas parade down Padre Boulevard, a lightedboat parade, breakfast with Santa, and, of course, a holiday-themed sandcastle village! An Island holiday is one of the most festive ways to celebrate the season and a great excuse for a weekend getaway to Texas’ best beach! The Holiday Sandcastle Village opened November 25, with unique holiday sand sculptures built by incredibly talented sand artists. Santa’s sandy Christmas throne, a Sand Snowman, and more will be part of this exhibit, complete with a lighted musical performance! Located near Louie’s Backyard and Gravity Park and open through January 13, the Holiday Sandcastle Village is perfect for your unique Christmas-card photo! Free for the public.

December 6 - Tree Lighting Ceremony and Annual Christmas Parade are Island traditions. Join residents and visitors alike for this fun-filled ceremony on the steps of City Hall; then stay for the parade! Hosted by the City of South Padre Island Parks and Keep SPI Beautiful Committee, the parade takes place immediately following the tree lighting. Filled with lighted floats, special guests, and live music, it’s all the festive fun you can pack on Padre Boulevard! Free and open to the public.
December 7 - The Annual Lighted Boat Parade will launch from South Point Marina in Port Isabel, lighting up the bay with holiday spirit. Boats of all shapes and sizes will be decked from aft to stern starting at 6 p.m., with judging taking place at Jim’s Pier. This free event is on everyone’s do-not-miss list! December 8 - Have breakfast with Santa himself at the Hilton Garden Inn from 9 to 11 a.m. This annual event could be the kids’ final opportunity to
put in a good word with the king of the North Pole. Shopping and art events are also taking place on the Island throughout the holiday season, including a Gone Surfin’ St. Jude fundraiser painting party at Beachside Bar & Grill and a “Shop the Island” shopping spree giveaway. he Christmas Party at Chimney RV Park in Mission is a little different. You can actually steal gifts. Each person brings a wrapped gift in a bag marked for a man or woman. Each partygoer gets a numbered ticket, and Santa (the emcee) draws numbers. When the first person’s number is drawn, he or she chooses a gift, shows the gift to everyone, and then sits back down. As more numbers are drawn and gifts are shown, the person whose ticket is drawn may choose a wrapped gift or steal someone else’s gift. Each person can only steal once. If a person’s gift is stolen, he or she may choose an unwrapped gift or steal but cannot take back his or her stolen gift. Usually five or six attractive items are stolen several

Saddle Up and Head On Over to Harlingen Special to Welcome Home RGV for a Great Show M
ake plans now to saddle up and head on over to Harlingen Friday, February 21, 2020, for a fabulous evening with Dan Miller’s Cowboy Music Revue. This entertaining group from the award-winning Buffalo Bill Center in Cody, Wyoming, will share their Western songs and stories at the Harlingen Municipal Auditorium starting at 7:30 p.m. Tickets are available online at HarlingenConcert. com and at the Auditorium Box Office at 1204 Fair Park Boulevard in Harlingen. Dan Miller has had an interesting career as an entertainer and musician, performing on stages in Reno, Tahoe, and Las Vegas and touring from Alaska to Florida. He also has hosted a wide range of television shows on ESPN, TNN, GAC, and The Outdoor Channel, including Xtreme Bulls, The Best of the West, American Magazine, and Top Card. While entertainers of his caliber seldom settle in small-town Wyoming, Miller found Cody the perfect place to raise a family and pursue his passion for music and entertainment. As he explained in a recent interview, his Cowboy Music Revue grew from a desire to provide the popular tourist region’s visitors with an experience of
“the authentic west that people crave-cowboys moving cattle, cowboys singing songs around a campfire.” Standards such as “Home on the Range” and “Happy Trails” are a regular part of the show, along with songs made famous by Johnny Cash, Patsy Cline, Dolly Parton, George Strait, and other country-music stars. For the past 15 years, Miller and his band have shared their engaging mix of music, entertainment, and cowboy poetry with more than 160,000 visitors from 65+ countries. “It is truly a fantastic, thoroughly entertaining variety show!” said Barbara Mandrell, two-time CMA Entertainer of the Year. Winter, when visitors to Cody dwindle, is the perfect time to take it on the road. Key members of the band appearing with Dan in Harlingen include his daughter, Hannah, and guitarist Wendy Corr. Hannah Miller has been performing since the tender age of six, when she would appear on stage to recite a cowboy poem, get a dollar from her dad, and exit. At the age of nine, Hannah began playing a few fiddle tunes each night, to the delight of visitors. Soon after, she added harmony vocals and became a full-fledged band
member after adding the mandolin to her repertoire of musical skills. Wendy Corr joined the band in 2008 as bass player and harmony vocalist. Wendy’s musical background goes back to her college years as a musicaltheatre major. She has performed in community-theatre productions and sung at local events for many years. Wendy also is the news director for the Big Horn Radio Network, leads worship at First Presbyterian Church in Cody on weekends, and works with clients as a certified holistic nutritionist. Dan Miller’s Cowboy Music Revue is presented by the Harlingen Concert Association (HCA), which has been bringing internationally acclaimed
touring artists to the Rio Grande Valley since 1933. This all-volunteer, nonprofit organization is committed to enriching the cultural life of the community through live performances. During the concert season, HCA also shares these incredible artists with students via free mini-concerts and master classes at local schools. This appetizer is called “Not Quite Pizza” because while it has all the zesty flavors of our favorite snack, it doesn’t take any oven time and doesn’t need slicing! •
Not Quite Pizza

• 1 tablespoon olive oil • 1 pound Italian sausage, hot or mild, removed from casing or purchased bulk • 1 cup chopped yellow onion • 2 jars (14 oz. each) good quality pizza sauce • 1 medium green bell pepper, seeded and chopped • ¼ cup grated Parmesan cheese • 3 cloves fresh garlic, minced • ¼ teaspoon salt • 1 cup mozzarella cheese In a large, heavy skillet over medium-high heat, heat the oil. Sauté the sausage and chopped onion for 6-8 minutes or until browned, breaking the sausage up into smaller pieces. Drain away the extra grease. In a 3-quart slow cooker, combine the pizza sauce, green pepper, Parmesan cheese, garlic, and salt. Mix well; then add the cooked sausage/onions and mix again. Cover and cook on LOW for 4 hours.

Serves 12-14 • ½ cup dark seedless raisins, optional • ½ cup chopped pecans, optional • ¼ cup heated Kahlúa • 8 large eggs, separated • ½ cup sugar • 9 ounces Mexican chocolate or 8 ounces German sweet chocolate plus ¼ teaspoon cinnamon
• 1 ounce unsweetened chocolate* • ¼ cup boiling water • Pinch salt • Pinch cornstarch • 2 cups heavy cream, chilled • 1/3 cup powdered sugar • Additional powdered sugar • Unsweetened cocoa
Preheat oven to 350 degrees. Butter 17x11-inch jelly roll pan and line with buttered wax paper, having the paper overlap the edges of the pan. Soak the raisins and nuts in the warm Kahlúa for 2 hours.
Cake:
Beat egg yolks with the sugar until very thick. Set aside. Break the chocolate into 8 pieces; in food processor, finely grind chocolate. Pour the boiling water through the feed tube to melt the chocolate. Cool the chocolate by placing the work bowl in the freezer for about 10 minutes. Do not solidify. Return work bowl to machine base, add the beaten egg yolk mixture, and pulse once or twice to combine. Leave in work bowl. Using a clean mixer bowl and beaters, beat the egg whites, salt, and cornstarch to stiff peaks. Pulse several spoonfuls of the egg whites into the chocolate mixture to lighten, then fold in the remainder by hand. Spread the batter in the prepared pan and bake 10 minutes. Lower temperature to 325 degrees and bake an additional 10-15 minutes until cake is firm but not dry or browned. Remove from oven and cover immediately with a cool, slightly dampened towel. Refrigerate at least 1 hour.
Filling:
Whip the chilled cream until thickened. Then add the powdered sugar. Remove about ½ cup of the whipped cream and place in a pastry bag fitted with a star tip and reserve to garnish the dessert. Drain the raisins and nuts and fold into the remaining cream. To assemble the cake roll: Remove the cloth from the cake, dust lightly with cocoa, and invert onto a piece of wax paper placed on a work surface. Use the overlapping edges of wax paper in the pan to loosen the cake. Peel off the wax paper and dust the cake with cocoa. Spread the Kahlúa-flavored cream over the cake, leaving about 1½ inches on the long sides free of filling. Roll up from the long side, using the wax paper as an aid. Transfer, using the wax paper to lift, and place seam side down on a serving platter. Decorate the cake roll with rosettes or whipped cream and dust the entire surface with additional powdered sugar and cocoa. Cauliflower Gratin with Leeks and White Cheddar
Vegetarian but definitely not vegan (cream and cheese abound!) this
dish is slightly lighter than your traditional potato gratin with the use of cauliflower and leeks. If you were craving a crunchier texture, feel free to add bread crumbs tossed in olive oil and seasoned with salt and pepper when the aluminum foil is removed. Bon Appétit! • • 1 small-ish head cauliflower (about 2 pounds), green leaves removed • Pure olive oil or Canola Olive oil blend • 1 small leek, white and light green part only, very thinly sliced (washed well) • Kosher salt and black pepper • ¾ cup heavy cream • 6 ounces sharp white Cheddar, grated (about 1 1/2 cups)
• • • Heat oven to 425 degrees. Slice cauliflower head lengthwise into 1/2-inch thick slices, including the core and leaves. Save the smaller bits that will fall away because you’ll use them as well. Drizzle some olive oil onto the bottom of a 2-quart baking dish. Layer about a third of the cauliflower along the bottom, and about a third of the leeks. Season with salt and pepper, and repeat until all of the cauliflower and leeks are used. Season with salt and pepper and drizzle cream over. Scatter cheese on top, and season again with salt and pepper. Lightly cover with foil and place in the oven. Bake until cauliflower is nearly tender, 10 to 15 minutes. Remove foil and continue to bake until cream has thickened and reduced nearly completely and the top is golden brown and crisp, 35 to 40 minutes. Remove from oven and let cool slightly before serving. •
