is here, and so is the action! The month speeds by so fast that if you blink, you’ll miss it. We kick off the month of November and the start of the season with our annual Connection Fair. This event allows us to reconnect with our activity directors and resort managers and allows them the opportunity to connect with local service providers, area attractions, and other resources available to them (and to you) throughout the season. We spend the afternoon networking, making plans for the season, and often times planning ahead for the next season. Our 2019 Connection Fair was last Tuesday, and it was definitely a success! I’m sure your activity directors and managers will be filling you in! Immediately after the show, we start our annual Activity Director Boot Camp. This ‘event’ is actually 10 adventures in one as we introduce your activity directors to things to do across the Rio Grande Valley by actually experiencing them! Just last week, we toured the Valley Nature Center in Weslaco and the Museums of San Benito. If you haven’t been to both of these Valley treasures, make plans to do so this season! T
he Welcome Home RGV Connection Fair took place November 5 at the McAllen Convention Center. The annual event provides a unique opportunity for Rio Grande Valley businesses and organizations to network directly with RV resort owners, managers, activity directors, and tour directors. The three-hour event provided a targeted networking experience. This year’s Connection Fair hosted over 130 vendors and 275 attendees representing over 100 RV resorts across the Valley, from South Padre Island to Palmview. Shirley Thurman, manager of
Eldorado Acres in Palmview, appreciates the opportunity to meet directly with so many local businesses all in one place. “I find it very helpful because we can go to one place, and all the vendors are there. We can see how they are going to fit into our activities.” The Welcome Home RGV Connection Fair is an annual event that takes place in November. Clifford Johnson
elcome back to another edition of our weekly spotlight, created to help you get to know fellow RV-resort and mobile-home-community friends! These individuals have an extraordinary story or are making an impact in the RGV community by serving others in some special way. Clifford Johnson has been a construction worker, member of the army, truck driver, and now--although retired--a craftsman and inventor. Johnson preferred materials are PVC pipes and wood. Using these materials, he has fashioned a bike rack, an end table that fits between his recliners, napkin holders, and more. For woodwork, his wife helps by painting and varnishing. He is self-taught and goes by “trial and error.” Even before his retirement, Johnson liked to create things to solve problems; the only difference, he said, is that now he can work on his hobby whenever he feels like it. “I spent many hours driving a truck, so when you get an idea, to pass the time, you figure out how to make it,” Johnson said. “Now that I’m retired, I have no time schedule, and time goes by fast when I’m working on things” Johnson is so handy with pipes-and so well known for it--that for his 80th birthday, which he celebrated in September, a friend made him a cake out of various-sized PVC pipes. Not only does he build things for his and his wife’s use, but Johnson also helps create things to solve problems around the park, Eldorado Acres in Palmview, where they spend eight months out of they year to avoid the North-Dakota cold. For instance, Johnson helps set up

the speakers and musical equipment for Eldorado’s jams. A 100-foot cable is involved, but only about a tenth of it is needed to reach from point A to point B, so the remainder of the cable ran up and down the floor. When it came time to put everything away, bundling the long cable felt like a chore, Johnson said, which led him to think, “There’s got to be a better way.” So using spare reels he had lying around--along with a few PVC pipes to provide structure--Johnson created a device to keep the excess cable wrapped up, effectively reducing set-up and take-down time by half, he said. Johnson has a shed right outside of his and his wife’s RV where he keeps all of his supplies neatly stored; many of his tools are kept in storage he designed to maximize visibility and ease of reach. “If you don’t know where something is, you might as well throw it away,” Johnson said. One of his inventions he is most proud of is the rain cover on his golf cart, which he made by fastening weatherproof plastic to PVC pipes to frame a passenger door and the windshield. Outside of his hobby, Johnson enjoys going to his park’s Saturday-night dances with his wife and visiting with their friends who he calls “extended family.” While he doesn’t get around to working on a project every day, Johnson said he intends to continue building and inventing things that help make life simpler. “I find it relaxing, enjoyable, and what I like doing is making something new,” he said. “Doing things like that is what keeps my mind going.” •

Cultural Storytelling, with Laughter and a Tear or Two, at Quinta Mazatlan Texas historian and premiere chronicler of Texas lore to present a cultural storytelling masterwork November 14

hursday, November 14 at 6 p.m., Quinta Mazatlán will host Dr. W.F. Strong as guest speaker for our Nights at the Mansion Speaker Series. He will discuss and share excerpts from his book, Stories from Texas. Dr. Strong writes, “If all goes as planned, you should find plenty of laughter here and maybe even a tear or two. There is humor and pathos, joy, wonder, and some melancholic longing for a Texas that once was but can never be again.” Stories from Texas is a collection of 75 radio broadcasts celebrating his home state. In 2010, Dr. Strong first began sharing stories from Texas vignettes on NPR stations. He now has his own podcast, also Stories from Texas. His distinct Texan tongue weaves stories from “How to Talk Texan” to “Texas Bards and Troubadours, from tall Texas tales to Lone-Star icons like Charles Goodnight, Tom Landry, and Blue Bell ice cream, and from legends and heroes of the past to some heartfelt memories of his own. Dr. Strong is a professor of communication and culture and a Fulbright Scholar at The University of Texas Rio Grande Valley. He also writes, occasionally, for Texas Highways magazine. The Nights at the Mansion Speaker Series is free with park admission and takes place every Thursday at 6 p.m. through May 2020. Park admission is $3 for adults and $2 for seniors and children 3 to 12 years old. Children 2 years and under are free. to the place you call your ‘happy place’ or just discover that place, the area—somewhere--that makes you feel complete, comfortable, and even restful? Some individuals find their happy place is participating in a sport, such as playing golf, and will travel around the U.S.A. finding golf happiness. Others look to various forms of escape and call that a happy place. When you purchase something you have wanted, the purchase brings you a temporary happiness, and then there could be a letdown of emotion, and you have moved off the corner of Gratitude and Contentment to the alley of, “Is that all there is?” How do you get past sadness and too thankful? Jesus was asked, “How can I be happy?” Alternatively, in other words, what can someone do to achieve true happiness? Jesus answered with clarity; it is not the treasures on Earth or the objects we obtain that we think are treasures. We can have the most significant, newest, exceptional, and biggest RV ever, but the happiness of ‘new’ won’t last forever. The treasures we need to look for and seek are ones we can redeem in heaven. Serving others can bring an untold wealth of happiness and satisfaction. Perhaps that would be an undiscovered happy place. Often, the service of giving either time or finances (or both) becomes your place of contentment.

new urologist in the Mid-Valley, Dr. James Sander, will speak during a free health luncheon Tuesday, November 19, at 12:30 p.m. at the KMC Conference Center, a free-standing, two-story building on the west side of Knapp Medical Center, 1408 E. 8th Street in Weslaco. The health talk is free and open to Winter Texans and Valley residents and will include a light lunch and a drawing for door prizes, including gift certificates to local restaurants. As part of his talk, Dr. Sander will discuss prostate cancer, as well as answer questions on various topics related to urology conditions. Dr. Sander is a board-certified urologist who treats adult and pediatric patients with urologic conditions. His specialty practice includes minimally invasive surgical treatment options. ack in my law-enforcement days, I had an interesting experience. I was searching a dark house by flashlight. As I rounded a corner, I suddenly lost my heart. It was stuck to the ceiling. There in front of me was an erect, black suit of armor holding an ax. Fortunately, no one was inside the suit. I’m sure the homeowner has some good stories about that particular decoration. Now I do, too.
That was a fear-response moment I had not anticipated. It was sudden and short, followed by a good chuckle. No harm. One of the things I have learned in life is that fear responses are not unusual. We all have them. When we were kids, they tended to be about spooky things: ghosts, spiders, or the thing that lived under the bed. Most of us have gotten over those fears. We have gravitated toward adult fears. As an older adult, my fears have changed to bigger issues. They now include stuff like missing out on things I want to do, failing at something important, or losing a loved one. Our readers will all have your own lists, which are also likely bigger and more far reaching than ghosts and spiders. Perhaps, as we mature, we are able to
handle bigger fears, or perhaps we just gain a better understanding of the big world and our role in it. I have also learned there are different responses to fear. The bad one is letting it paralyze you. The coping skill of avoidance drives one to escape the feared result by avoiding the activity. Fear can lead us to live less. The good response is allowing your fear to motivate achievement. Charging forward and conquering it allows one to dispel the fear factor. In doing so, we live more. I no longer fear the monster under my bed. He moved out. Just don’t ask me to go skydiving. I don’t fear it; I understand it. But it ain’t happening. No how! Never! Nope! I’m just sayin’. •

These hilarious America’s Got Talent finalists will delight audiences of all ages as they stampede through Broadway’s greatest hits. The evening will include songs from classic musicals, such as Hello Dolly, Guys and Dolls, and Oklahoma, to more recent smash hits like Cats, Phantom of the Opera, and Les Misérables. Talented and versatile vocalists like Matthew Lord, Blake Davidson, and Jonathan Frugé just don’t come along every day. Lord, a native of California, has a voice capable of repertoire ranging from the 18th Century to contemporary compositions. His stage work is consistently praised for its naturalness, intensity, and commitment. Lord made his New York Metropolitan Opera debut in January 2004 in Boris Godunov and played Piangi in the Hamburg, Germany, production of Phantom. Other concert appearances include engagements with the Detroit Symphony, the Juilliard Orchestra, the San Francisco Symphony, and the Santa Fe Symphony, to name a few. He is a proud graduate of the prestigious Juilliard Opera Center. Blake Davidson’s resume is equally impressive. Davidson is an awardwinning singer who has performed all over the world. His experience includes opera, symphony, and musical theatre, as well as solo concerts at Lincoln Center, Carnegie Hall, and the Tokyo Opera House. Davidson has sung with the Anchorage Opera, the Dallas Opera, the Dallas Symphony (on whose Christmas CD he is the featured soloist), the Fort Worth Symphony, and
The Florida Orchestra. Performances outside the U.S. include New Zealand’s Auckland Philharmonia and the Filharmonico de Jalisco (Guadalajara, Mexico). Early in his career, Davidson was seen off-Broadway at 2nd Stage and was the ringmaster for the Shrine Circus. Jonathan Frugé, the third part of this talented trio, has been hailed as “always funny,” “always good for a smile,” and “gripping” in his vocal performances. A native of Lubbock, Texas, Frugé holds a B.A. in music performance and an M.A. in vocal performance from Texas Tech University. Broadway Bound is one of six performances presented by the Harlingen Concert Association (HCA) during its 2019-2020 season. Since 1933, this all-volunteer, nonprofit organization has been committed to enriching the cultural life of the Harlingen area through live performances. The Lamar Academy/IB Student Council works year round to promote a sense of community. Our recent projects include working with the Catholic Charities to help immigrants who need assistance, clean-ups with the City of McAllen’s Keep McAllen Beautiful and Texas Recycles Day,
anti-bullying rallies, Say YES to LifeSuicide Awareness Event, Domestic Violence Awareness Event, and our Mental Health Fair. We also promote spirit at school activities, literacy at different school-sponsored events, and social consciousness about serious topics, such as suicide, depression, cancer, and bullying. Making all of this happen requires sizable funds. This year, we decided to host a fundraiser that makes money but also gives back to our community. Fall Festival at IB Festive was the answer. We are also raising funds to send our students to the annual State
Student Council Convention. The Texas Association of Student Councils hosts a convention where over 5,000 Texas students come together to learn new ideas for promoting a sense of community, not just in our schools but in our city. This is the second year our student council will compete with the other student councils in the state in the areas of “Top 10 Video” and “Top Ten Projects.” The funds raised will pay for registration, hotel, transportation, and meals. In the words of Ralph Waldo Emerson, “To know even one life has breathed easier because you have
lived---this is to have succeeded.” This is what we hope to instill in all Lamar Academy/IB Student Council members and in the people we serve. We don’t usually think of eating whole-kernel corn cold. I have seen Corn Dip

• 1 cup real sour cream (not low-fat or non-fat) • 2-3 fresh jalapeños, seeded and chopped • 1 cup real mayonnaise (not Miracle Whip®) • 2 cups shredded Monterey Jack cheese • 2 regular-sized cans whole kernel corn, drained • 1 cup chopped mild green chiles • Cayenne pepper, to taste, if more heat is desired Mix sour cream and mayonnaise, combining well. Gently add the rest of the ingredients, mixing thoroughly. Refrigerate at least 1 hour (longer is better) before serving. Serve with a sturdy chip, such as Scoops®, to hold this hearty dip. Serves 6-8 • 2 cloves garlic • ½ teaspoon cumin • ½ teaspoon peppercorns • 1/3 cup cooking oil • 1 (10 oz.) package vermicelli
• 1 (14½ oz.) can whole tomatoes • ¼ cup chopped green bell pepper • Salt to taste • 3 cups boiling water
Grind garlic and spices. Add a little water; set aside. Break up vermicelli. In skillet on low heat, add oil and vermicelli; fry until golden brown. Add spices, tomatoes, bell pepper, salt, and boiling water; simmer 15-20 minutes. 6 jalapeño peppers – nice, big, firm ones 1 bell pepper – color does not matter; they taste the same 1½ cups distilled white vinegar 1 cup water – use bottled or filtered water if your tap water tastes like a swimming pool 2 tsp. kosher salt 4 Tbsp. sugar – I used 2 each of white and light-brown sugar 1½ tsp. pickling spice 4 cloves garlic – cut in half – one clove per jar ¼ large yellow onion – sliced into thin strips
hese peppers are quite spicy. Use them as a condiment to add some ‘kick’ to your sopes, tacos, or other dishes. They are also good enough to eat right out of the jar. The dish we experienced with the chicken tinga sopes while in Minneapolis used Fresno peppers, which are red. I have not found Fresno’s here; they are more often found in California (probably around Fresno, eh?). No worries, though, as Fresno peppers are similar to jalapeño peppers in flavor and heat. The biggest issue is that Fresno peppers are red, not green, so their use, along with a red bell pepper, makes for a more colorful brine for your peppers. Using green jalapeños and an orange bell pepper (as I did) made for a zesty pepper mix but NOT a beautiful brine or picture.
Wash the jalapeño peppers and slice into thin rings. Use a paring knife to remove the webbing and seeds from the pepper rings. (That’s where the heat comes from.) Use rubber gloves when handling the jalapeños to prevent your skin from burning. Stem the bell pepper and cut into thin slices, removing the thick webbing and seeds. Place the vinegar, water, salt, sugar, and spices in a pan and bring to a boil, stirring to dissolve the sugar and salt. Mix the peppers and onion and pack tightly into sterile jars, adding two garlic pieces to each jar. Add the pickling brine to the jars. Tap the jars to jiggle out air bubbles. Cover and refrigerate. Refrigerated peppers can be kept up to a month. It will take a few days for the brine to permeate the peppers, so they get better with time. At first, they will be very spicy. You may wish to can the peppers by placing the covered jars in a boiling-water bath for about ten minutes. After the water bath, cool and check that the lids have sealed. If not, refrigerate the jar. New England Clam Chowder
I was reflecting on a girl’s trip I took to Boston a few years back. What
a fabulous city and the food is truly remarkable. I was feeling nostalgic so I thought I’d share this yummy recipe. This is a classic comfort soup that most everyone loves. Creamy, velvety goodness together with fresh clams and bacon - what is not to love? This is not difficult to prepare either and if you want to make it even easier, you can substitute a can of good quality chopped clams for the fresh ones in the shell. It will be just fine. I would pair this delectable goodness with a lovely chardonnay, such as La Crema. Bon Appétit! • • 3 pounds littleneck clams, scrubbed • 6 slices thick-cut bacon, diced into lardons • 2 tablespoons unsalted butter • 3 stalks celery, finely diced • 1 medium onion, finely diced • 2 teaspoons chopped fresh thyme leaves • 1/3 cup all-purpose flour • 1 large russet potato, peeled and cut into 1/2-inch cubes • 1 cup heavy cream • 1 cup half-and-half • Kosher salt and freshly ground pepper

Rinse the clams several times under cold running water and place in a large pot and add 3 cups water. Bring to a simmer over medium-high heat, then cover and cook until the clams open, about 6 minutes. Strain through a fine-mesh sieve into a large bowl; reserve the broth. Transfer the clams to a bowl and cover with plastic wrap, this will prevent them drying out. Cook the bacon in a large pot over medium heat until crisp, about 10 minutes; remove with a slotted spoon and drain on paper towels. Melt the butter in the same pot over medium heat. Add the celery, onion and thyme and cook, stirring occasionally, until soft, about 10 minutes. Add the flour and cook, stirring, 1 minute. Stir in the reserved clam broth, 1 1/2 cups water and the potato. Bring to a simmer and cook until the potato is tender and the soup thickens slightly, about 15 minutes. Meanwhile, remove the clams from their shells and roughly chop. Reduce the heat to medium low. Whisk in the half-and-half and cream and heat through, without boiling. Remove from heat and stir in the chopped clams; season with salt and pepper to taste. Ladle the soup into bowls and top with the reserved bacon. •
