I am a retired teacher and the editor of Welcome Home Winter Texan. Kristi allowed me to step in this week to let you know how you can share your RV park/resort stories in our paper. We know you have parties, jams, dinners, and volunteer activities in your parks and resorts, and we want you to know you have a place to share them with other Winter Texans and retirees across the Rio Grande Valley. That place is in Welcome Home Winter Texan. We would love the opportunity to send you our easy-to-follow deadlines and guidelines for submissions. Just have your activity director or park manager send us an email (welcomehomergv. com) to ask for those, and we will email them right over to you. Then you can get started submitting your park/resort stories to us. I was born and raised in Peoria, Illinois. I became a Converted Texan at the age of 21 when I moved to McAllen to teach. I get so excited every year when I start seeing license plates from Illinois and other states in the Midwest and beyond because it reminds me of my other home. It is the season of gratitude. I am certainly grateful that Kristi gave me the opportunity to serve as editor, and I feel fortunate that I have the opportunity to share your stories in Welcome Home Winter Texan! Alamo Winter Texan Spreads

Donate Life Message across the RGV of our weekly spotlight, created to help you get to know fellow RV resort and mobile-home-community friends! These individuals have an extraordinary story or are making an impact in the RGV by serving others in some special way. Don Uecker has spoken before hundreds of people to share his wife Darlene’s story. She died in 2011 and has since helped give life to more than 100 people across 23 different U.S. states — and even one person in South Korea — as an organ, eye, and tissue donor. Don spends his winters at Alamo’s Casa Del Valle Resort and the rest of his time back home in Webster, Minnesota. This is his twenty-first year at the park, and for close to a decade, he has volunteered with the Texas Organ Sharing Alliance (TOSA) to encourage people to become organ donors “Anybody that’s willing to stop for 30 seconds, I’ll talk to them,” said Uecker. “I’ll talk to anybody just to get the word out.” In 2013, Donate Life, a nonprofit working to increase the number of organ donors, invited Uecker and one of Darlene’s daughters to its annual Rose Parade, held in California, where his wife was to be one of the 72 donors honored on their float. “We got to go out to where they were decorating the float and

actually place a rose,” he said. “Every year I still donate two roses.” This experience gave him inspiration to continue advocating for ‘donating life’ by visiting hospitals, local organizations, and even Vipers games during halftime to talk about the impact one can have by registering as an organ donor. He is especially busy with events and speaking engagements in April, National Donate Life Month. According to Donate Life, as a donor, a person can save more than 70 lives. But in Darlene’s case, she was able to save 130. Don learned that the youngest person Darlene helped save was a five year old and the oldest 75. Last year, Uecker visited GenCure, a regenerative medicine facility in San Antonio, to tour the facility and learn about the process of storing organs and tissue for future use. “It was amazing to be able to see it. They showed me how they get it ready and how they can keep it for five years,” Don said. “And they’re hoping to extend that time period.” In addition to his involvement with Donate Life, Uecker stays active in his park by leading a fivetimes-a-week, 8 a.m. exercise class, volunteering with the kitchen crew for Tuesday jams, and being a part of the First Responders group. When someone is in need of help, he adds, “They have my number. They can give me a call.” •

2019 Hugs for Soldiers Seeking Help

ith help from Winter Green Estates (WGE) Ladies Activity Group (LAG) and WGE residents who collected items all summer for “Hugs for Soldier,” they have collected double what they did last year. They have collected many of the items listed below, including Christmas cards for deployed service members. If your park, church, or school would like to participate in this project, the RGV coordinators are Ron and Nancy Herberholz. The 2019 Hugs for Soldiers project in the RGV in in full swing. Below are ways you can help with this project. Donations can be dropped off at the Herberholz’ retail shop in the Weslaco Indoor Flea Market on the south side of Expressway 83, next to McDonald’s on Texas Boulevard. They are in booths C3, C4, D1, D2, D3, and D4. The shop is open Thursday, Friday, and Saturday from 10 a.m. to 5 p.m. and Sunday from 1 - 5 p.m. Nancy can be reached at 956-532-4259. Care packages are a welcome treat for deployed service members, especially when they are away from home during the holidays. Some of our troops are still serving in dangerous areas. You can help WGE send care package to our deployed troops. The deadline for donations is Tuesday, November 19. • CHRISTMAS CARDS: There are thousands of deployed troops who would love to receive a card from you with holiday wishes, letting them know we are thinking about them at this special time of year. Cards can be handmade or retail, signed by you with a note of thanks. Children may use colorful construction paper as long as you stay within the paper-size limit of 8½ x 11. (Teachers and leaders of student organizations are welcome to write or attach a label on each card with your class/program name, address, grade level, and a contact name so the Soldier who receives your card will have an opportunity to write back.) worms,’ with no further description. At first glance, the dessert table showcased cupcakes, pretzel twists, and a seemingly disheveled cake. Upon closer inspection the cupcakes had ‘teeth’, the pretzels had ‘eyes’, and the cake was creatively disguised as a very realistic kitty litter box! During the light-hearted celebration, a beaming Christine engaged with the crowd as she effortlessly oversaw the event’s agenda of activities; putting aside, for the moment, her recent losses and the ever-present stress of coping with an ailing loved one. “This year was hard for me because everything happened this year,” Christine said. She shared that her father passed away; her mom was diagnosed with cancer, and, most recently, she suffered the loss of a beloved pet. Fellow volunteer Beverly Blough readily offered her admiration and support for Christine, “We’re such a

close family that we close ranks on someone when they are stressed. You hold each other up, and that’s was makes this area--and particularly this park--so nice.” Beverly went on to say, “It’s just amazing how much stress she’s been under, yet she puts on a happy face and sings and dances and has a great time.” Christine was quick to reply, “It’s Halloween!” She didn’t miss a beat as she moved from handing out drawing prizes; tabulating the pumpkin-decorating and desert contest votes, and determining the winner of the resident costume contest. As the celebration wrapped up, Christine took to the microphone to give credit to the supportive volunteers and to thank everyone gathered for giving her a night off from her recent stresses. Holding back tears, she ended her speech with this: “I am so thankful for my Alamo Rose family.” •

Amigos Bring Christmas to Children Special to Welcome Home RGV

s you may know from living so close to the border of Mexico, many children go without proper food, shelter, and essential medical care every day due to a variety of factors. This need is magnified when so many children are denied even the blessings of the Christmas season. Amigos de Los Ninos de Mexico (Friends of the Children of Mexico) was organized in 1990 to address this need through gifts of friendship, love, food, and presents. Serendipity Brought Them Together… Dedication and Talent Drive Their Success Special to Welcome Home RGV

arlingen Concert Association (HCA) is pleased to announce that the Billboard-charting Sons of Serendip will perform at the Harlingen Municipal Auditorium this season as part of HCA’s 86th season of bringing live music to the Valley. This popular group’s performance will be Thursday, February 6, 2020, at 7:30 p.m. Tickets are available online at HarlingenConcert.com and at the Municipal Auditorium Box Office, 1204 Fair Park Boulevard in Harlingen. Sons of Serendip consists of a harpist, cellist, pianist, and lead vocalist. This creative quartet was a finalist on Season 9 of America’s Got Talent, gaining popularity by offering fresh interpretations of popular music. Since the talent competition, the ensemble has toured nationally, performing at many prestigious concert halls and performing-arts centers, including the Dolby Theatre in Los Angeles and Atlanta’s Symphony Hall. The group was invited to perform with the Boston Pops twice in 2015, graced the stage at the Creative Arts Emmy Awards in 2016, and collaborated with the Cincinnati Symphony Orchestra and acclaimed actress and vocalist Cynthia Erivo in 2017. Sons of Serendip proudly returned to the AGT stage in February 2019 to compete in America’s Got Talent: The Champions. Sons of Serendip beautifully interprets pieces ranging from standards like Moon River and Fly Me to the Moon to pop hits such as Stop in the Name of Love and Signed, Sealed, Delivered, I’m Yours. They love to mix things up for each performance and engage audiences with their creative and emotionally stirring arrangements,

as well as their original compositions. It was serendipity that brought the four musicians together in 2014. Lead vocalist Micah Christian, cellist and vocalist Kendall Ramseur, pianist Cordaro Rodriguez, and harpist Mason Morton had all been involved with music for years, playing their instruments since childhood. They met while graduate students at Boston University, completing degrees in theology, cello performance, law, and harp performance, respectively. The group now has three successful albums to their credit and a very dedicated following. Their self-titled debut album, released in January 2015, placed in several categories on the Billboard charts, reaching No. 4 on Heatseekers, the weekly barometer of up-and-coming musicians. Their second album, Christmas: Beyond the Lights, was released that fall and also made the Billboard charts. In July 2017, the quartet released their third album, Life + Love. Harlingen Concert Association has been bringing internationally acclaimed touring artists to the Rio Grande Valley since 1933. This allvolunteer, nonprofit organization is committed to enriching the cultural life of the community through live performances. During the concert season, HCA also shares these incredible artists with students via free mini-concerts and master classes at local schools. When

I was a Navy recruiter stationed in the DFW area years ago, I signed up to help adults learn to read through the Tarrant County Literacy Coalition and had to go to a one-day training session. I recall entering a conference room with about a dozen tables and a flip chart on an easel with a cover over it (Curious!). The facilitator introduced herself and announced that we all had to prove that we could read at an adult level before we could begin the training. She then asked for a volunteer to read aloud in front of everyone. I raised my hand, and she picked me. Then she told me to read as much of the text that was on the easel as I could as soon as the cover was removed. She pulled off the cover, and I saw Russian…and so started reading. The look on the woman’s face was priceless; she probably thought I was being a smart aleck. She then asked me if I knew what language I was reading. When I told her “Russian,” she practically barked, “What’re the odds of finding one literacy volunteer in Texas who can read Russian?!” The literacy training folks apparently

“Best of all is that a literate reader can let God speak directly to him or her through the Bible” try to find a language that will be totally foreign to prospective volunteers in order to simulate what English looks like to someone who can’t read, just like the title above, which is the (You guessed it!) Russian word for “literacy” (pronounced GRAHM-ot-nost). If you can’t read Russian, then this gives you an idea of what they were trying to show us during that training. I bring this up because English literacy—or illiteracy, rather—is a rampant social ill affecting not just Texas, as a whole, but, in particular, the Rio Grande Valley. In fact, according to the Rio Grande Valley Literacy Center, half of all residents in Hidalgo County cannot read a newspaper in English. Many other obvious social ills can be traced to illiteracy, such as unemployment, poverty, and secondary drop-out rate; the less obvious are intolerance, bias, racism, crime, addiction, unplanned/ unwanted pregnancies, and the list

goes on and on. As a pastor and former public-highschool teacher, I can confidently say that a person with access to books who learns to read is more likely to become a better global citizen. Those who read can, for the most part, try to see the other person’s point of view. They learn that there may be more than one way to solve a problem. They become more curious and more tolerant and start to think more freely for themselves. Best of all is that a literate reader can let God speak directly to him or her through the Bible! My congregation, Zion Lutheran Church, is situated right in the heart of the Rio Grande Valley, an area that statistics show is plagued by illiteracy. Last year, we partnered with the Lutheran Literacy Project to reach out to anyone and everyone in our community with a free book (English or Spanish, illiteracy is bilingual). We collect donated books and distribute

The discussion will take place in the library’s Community Room at 6:30 p.m. Everyone is welcome to attend and discuss the book. Dr. Bonny Blankenship needs to get away from her disintegrating marriage and yearns for some rest after an emergency-room error that threatens her medical career. So she returns to Watersend, South Carolina, where years ago she spent her childhood summers with best friend Lainey McKay. Watersend, a breezy, beautiful place where Spanish moss clings to the trees and the river meets the tide, is a sanctuary of memories as Bonny returns to her old river house and the bookshop she knew, accompanied by her teenage daughter, Piper, and joined by Lainey and her children. But Watersend is also a place of long-ago mysteries, deep secrets, and tragedy that strain the bonds of family and friends, a place where the past and old flames return with the tide.

Written by Patti Callahan Henry and first published in 2017, The Bookshop at Water’s End is a story of loss, betrayal, forgiveness, and the power of goodness—a tale that asks: Are we the ones who tell about our life experiences, or do our life experiences tell about us?

Homemade Sopes for Chicken Tinga – Tinga de Pollo

Most Winter Texans remember the 60’s. Well, one of the tastiest

appetizers of that era was clam dip, usually served with rippled potato chips. Yum!

1960s Clam Dip Submitted by Sandy Olson

• 1 package (8 oz.) real cream cheese (not low-fat or non-fat), softened • ¼ cup real sour cream (again, not low-fat or non-fat) • ½ teaspoon garlic powder • ½ teaspoon onion powder • 1 teaspoon Worcestershire sauce • 1 teaspoon lemon juice • 1 can (6.5 oz., approximately) chopped claims, drained with juice reserved Mix all of the ingredients, except clams, blending well and stirring until smooth. Fold in the clams, plus as much of the clam juice as needed to get the right dipping consistency. Refrigerate for at least 2 hours; overnight is okay, too. Serve with low-salt chips, if you can find them, as the dip has plenty of salt and flavor. Sopa De Fideo (Vermicelli) Submitted by The Junior League of McAllen, Inc.

Serves 6-8 • 2 cloves garlic • ½ teaspoon cumin • ½ teaspoon peppercorns • 1/3 cup cooking oil • 1 (10 oz.) package vermicelli

• 1 (14½ oz.) can whole tomatoes • ¼ cup chopped green bell pepper • Salt to taste • 3 cups boiling water

Grind garlic and spices. Add a little water; set aside. Break up vermicelli. In skillet on low heat, add oil and vermicelli; fry until golden brown. Add spices, tomatoes, bell pepper, salt, and boiling water; simmer 15-20 minutes. his is part three of the recipe for Chicken Tinga Sopes. In the October 16 issue, I covered the chicken tinga filling. Next I provided recipes for two toppings, Cornand-Black-Bean Salsa and Green Avocado and Tomatillo Salsa. I also suggested purchasing the sope shells ready made from your local grocery store. This week, I will provide the instructions to make your own sope shells. It is easier than it sounds, and working with the masa harina is oddly satisfying, mainly because it does not get sticky like when making bread with white-wheat flour. This recipe makes a dozen shells.

Sope Shells • 2 cups masa harina • 1¾ cups hot water

• 1 tsp. salt • Cooking oil – I used corn oil

Mix the masa harina flour and the salt in a bowl. Gently fold in the water and knead the dough with your hands until a soft dough forms. Cover the bowl, and let it rest for about 5 minutes. Briefly knead the dough again, and divide it into 12 equal pieces. Roll the pieces into balls and set on a cookie sheet covered with parchment or waxed paper. Cover the dough balls with a damp kitchen towel or damp paper towels to prevent the dough from drying out. Now press the dough balls into disks about 3½ inches across. Do this by pressing the dough balls between sides of a plastic storage bag with the sides and ziplock top removed. Use a clear pie plate to press the dough so you can see what you are doing. The disks will be thicker than a corn tortilla. When flat, open the folded plastic bag and use your fingers to form a raised edge about ¾-inch high. Place the finished sopes back on the cookie sheet and keep covered until you cook them. Begin by frying the sopes in a dry frying pan or comal until the bottoms are browned. Set them aside. Next, put cooking oil in a frying pan to a depth not quite half as high as the edge of the sopes. Heat to medium – about 375 degrees – and fry the sopes in batches. Start frying with the bottoms down. When golden brown, carefully flip them over and brown the rims of the shells. When the edges are browned, remove from the pan and drain them on paper towels. Serve the sopes warm. If you are not going to use the sopes right away, they can be stored in the refrigerator overnight. Just place them on a baking sheet after dry frying the bottoms. Cover with damp paper towels and plastic wrap. Remove from the fridge and fry them in the oil just before serving. Serve the sopes while still warm or microwave for a few seconds to reheat. Enjoy! Wild Mushroom Bread Pudding

upEtovenThanksgiving. before I was a chef, this was always my favorite time of year. The weeks leading I would spend hours (when I had them) planning different side

dishes to try for our family celebration of thanks. The time planning the meal can be as fun as preparing it and this rich vegetarian casserole is a serious contender for a new and different compliment to your roasted bird. It is best assembled in advance the day before, refrigerated overnight, then baked just before serving. That alone makes it an ideal Thanksgiving side dish because anything you can knock out the night before is one less thing to think about on the big day of the Bird and Football. Delicate brioche is the ideal bread for this pudding, and it is available in the grocery store usually in the form of hamburger rolls, so just look for those and remember not to stress. This plan ahead deliciousness is going to help you relax and your family will love it on the table and in their tummies! Note: This is best if prepped the night before. Bon Appétit! • • 1 ounce dried porcini mushrooms • 2 tablespoons unsalted butter, plus more for greasing the pan • 8 fresh sage leaves, sliced thinly, plus more for garnish, if desired • 2 small shallots, halved and sliced thinly • 2 teaspoons kosher salt, plus more to taste • 3 large leeks, white and pale green parts only, halved lengthwise, sliced thinly and well washed • ¼ teaspoon ground cayenne • 12 ounces brioche (or 6 large brioche buns), cut into 1/2-inch thick slices

• 1 tablespoon olive oil • ½ pound mixed fresh mushrooms, such as cremini or shiitake, trimmed and sliced 1/4-inch thick • 2 tablespoons cognac • Black pepper • 6 large eggs • 1 ½ cups heavy cream • 1 ½ cups whole milk • 2 ounces grated Gruyère (about 1 cup) • 1 ounce finely grated Parmesan (about 1/2 cup)

Boil 1 cup of water in a small saucepan. Add the dried porcini mushrooms and soak until softened, about 15 minutes. Using a slotted spoon, transfer the mushrooms to a cutting board and finely chop; set aside. Carefully pour remaining mushroom liquid into a large bowl, making sure to filter out any grit. Set bowl of liquid aside. In a large sauté pan, heat 1 tablespoon oil and 1 tablespoon butter over high heat. Add fresh mushrooms and cook, stirring occasionally, until browned, about 8 minutes. Lower heat to medium. Add sage, shallots and chopped porcini, and cook, stirring, until shallot is translucent, 3 to 4 minutes. Add cognac, if using, season to taste with salt and pepper and cook, stirring, 1 minute more. Transfer to a plate. In the same pan, melt 1 tablespoon butter over medium heat. Add the leeks and a healthy pinch of salt and cook, stirring, until wilted, 5 to 7 minutes. Return the mushroom mixture to the pan and stir to combine with the leeks. Remove from heat. To the bowl of mushroom liquid, add eggs and whisk to blend. Add cream, milk, cayenne, 1½ teaspoons salt and plenty of black pepper. Whisk thoroughly to combine, then mix in the Gruyère. Grease the bottom and sides of a 9-by-13-inch baking dish with butter, then add about 1/4 of the fresh mushroom mixture and arrange in an even layer. Arrange the bread slices on top in an overlapping pattern. Sprinkle the remaining mushroom mixture over top, tucking it in between the bread slices. Ladle the custard mixture over top, evenly distributing the cheese. Refrigerate, covered, overnight (see tip). When ready to cook, remove the dish from the refrigerator about 30 minutes before baking. Heat the oven to 350 degrees. Before placing it in the oven, top the pudding with Parmesan and bake for 40 to 45 minutes until set in the center (it will puff a bit). At the end, run it under the broiler for 2 to 3 minutes to brown the top, watching carefully. Let sit 10 minutes, then serve warm. •
