I come from a nonprofit background. My first job was development director for the RGV American Red Cross. I saw firsthand how our Winter Texans mobilized in times of disaster or helped by raising much-needed funds for the organization. It makes me proud to see all you do for others, so effortlessly and without the need for recognition. “I
t is the world’s largest Christmas project for children,” says Elizabeth Dukquits, area coordinator for Samaritan’s Purse/Operation Christmas Child. In 2018, 10.6 million gift-filled shoeboxes were shared with children worldwide; 8.8 million of those came from the United States. Overall, 168 million children have received a shoebox since the

Texas Master Naturalist October 28 Meeting Focuses on South Texas Archeology Special to Welcome Home RGV
S
outh Texas archaeology is the presentation topic at the October 28 meeting of the South Texas Border Chapter of Texas Master Naturalists. Guest speaker is Donna Otto, a 25year member of the Texas Archeology Society, a member of the South Texas Archeological Society, and a Texas Historical Commission archeological steward. She is also a South Texas Border Chapter Texas Master Naturalist. Otto’s presentation is in honor of October being Archeology Awareness Month and promotes the appreciation
of scientific archeology, prehistory, and American Indian cultures and the stewardship of Texas’ irreplaceable archeological resources. The presentation begins at 6:30 p.m. The public is invited to meet with chapter members at the 6 p.m. social and attend the general meeting after the presentation. reparations are well underway for the 24th Annual Texas Butterfly Festival in the place USA Today declares “the butterfly capitol of the USA”! Everyone is invited to join in this seasonal celebration of the Rio Grande Valley’s exceptional bounty of butterflies, regardless of age or familiarity with the outdoors. The festival kicks off with the 3rd Annual Running of the Monarchs at 8 a.m. Saturday, November 2. Participants must pre-register for this 5K Trail Run and 1 Mile Fun Run across the National Butterfly Center’s grounds and gardens in order to receive their beautiful, collectible Monarch Medal. The entry fee for this 2 Run Crew production is $24 for adults and $12 for children and supports the
environmental conservation work of the center. Native seed bombs are provided to all participants to toss along the route of this scenic run to help restore the landscape for Monarchs and other butterflies with native host and nectar plants. The fun run is followed by the festival’s free open-house event known as Community Day, which will take place from 9 a.m. – 2 p.m. and features educational activities and games for the whole family. Drawing on their Christian faith, Elizabeth and “Big” Lew Corya are leading the charge to collect four thousand boxes from Laredo to Corpus Christi and the Rio Grande Valley. They are embarking on a four-week blitz, spreading the word about Operation Christmas Child and inviting individuals, groups, and organizations to participate in the non-denominational project. Step one is filling the shoebox. Big Lew suggests gathering items for children from a bargain store. Elizabeth shares that simple toys and even school supplies can have an impact, not only on the child who receives the shoebox but also on the community where they live. For example, a jump rope or a soccer ball can be enjoyed by more than one child. “To them, it’s everything in the world,” says Big Lew. A personal note or photograph can also be included in the box. “It’s overwhelming for them to know that someone clear around the world packed this shoebox for them and cared about them and loved them enough to do this,” says Elizabeth. A $9 donation per box is welcome, but it is not a requirement to participate. “The only people that benefit are the ministries and the children in these third-world countries,” shares Big Lew. The donation provides for shipping and allows tracking of an individual shoebox gift. Elizabeth shares that last year a local church packed 300 boxes but could not afford the shipping; Samaritan’s Purse/ Operation Christmas Child covered the cost. Once shoeboxes are filled, deliver them, unsealed, to BT McAllen, 2001 Trenton Road (956-686-5296) during National Collection Week, November 18 - 25. Pre-printed boxes are available from Operation Christmas Child and from various local businesses. Altar Exhibit, Halloween Bash, and Dia de los Muertos Festival Special to Welcome Home RGV
F
all is the perfect season for visiting the International Museum of Art & Science to enjoy themed events and activities at two of its biggest programs of the year. The IMAS kicks off fall cultural programming with its annual Halloween Bash and Dia de los Muertos Festival. Celebrate All Hallows’ Eve at the annual Halloween Bash Saturday, October 26, from 10:00 a.m. to 5:00 p.m., with a Pumpkin-Carving Contest, planetarium presentations, optical Halloween art, skull-touch table, ghost scavenger hunt, and guided gallery tours. Visitors are encouraged to come in costume and participate in the costume parades at 11:00 a.m. and 3:00 p.m. This year’s event will feature a display of artistically carved pumpkins. Community members can enter this contest, and the most creative design, voted on by visitors, will win an IMAS Family Membership! The deadline to enter the contest is October 18, and more information can be found on the IMAS website at theimasonline. org or at 956-681-2800.
New and on exhibit October 20 through November 17 is Altar de Muertos, an exhibition of art representing the spirit of the Day of the Dead in conjunction with the annual display of community altars. The exhibit includes the work of 17 artists, each one representing one of the altar offerings--the cempasúchil flower, the sugar skull, and the candle,
among others--from the artist’s particular vision, honoring death and life and taking this beautiful tradition of the Day of the Dead altars beyond our frontiers. Altar de Muertos is presented by the Asociación de la Plástica de Garza García A. C. An opening reception will be held October 20 from 2:00 4:00 p.m. •

Free Fall-Prevention Screenings October 24 in Weslaco Special to Welcome Home RGV
F
ree screenings for balance and hearing, as well as a free fitness class, will be available in Weslaco Thursday morning, October 24, from 9:30 to 11 a.m. during a Fall Prevention Festival at the KMC Conference Center, a freestanding, two-story building on the west side of Knapp Medical Center, 1408 E. 8th Street in Weslaco. The free Ready, Steady, Balance, Go! event will also include free refreshments, healthy snacks, and door prizes. Participants, including senior adults who may be prone to falls, will learn about various ways to prevent falls and resulting injuries. Participants can also attend a demonstration of Tai Chi, a form of meditative exercise featuring slow circular and stretching movements, which can help participants achieve positions of balance in the body.
The risk of falls is greatest in adults 65 and older. Injuries from falls can diminish the quality of life for older adults, resulting in reduced mobility, reduced activity, and a loss of physical fitness. In some cases, injuries from falls can lead to a loss of independence and even a loss of life. The Fall Prevention Festival in Weslaco is sponsored by Weslaco Regional Rehabilitation Hospital and Knapp Medical Center. It is free and open to the community. he McAllen Wind Ensemble, under the baton of Music Director Roger Olivarez, will open their 45th season with a concert dedicated to our American heroes. The event, titled simply America, will feature the music of America, American composers, and the patriotic favorites that have been the McAllen Wind Ensemble’s standard fare throughout the years. The ensemble will perform music by Leonard Bernstein, Aaron Copland, Morton Gould, Frank Ticheli, and, of course, no concert would be complete without the marches of John Philip Sousa. The McAllen Wind Ensemble’s special guest artists for the evening will be the Magic Valley Chorus chapter of the Sweet Adelines. The Magic Valley Chorus is an all-female barbershop chorus under the direction of Sandy Seitz. The chorus began in November 1990 and has been going
strong ever since. The Magic Valley Chorus members are active performers in the Rio Grande community and have won frequent awards for their performances. The McAllen Wind Ensemble is excited to share our concert with these talented ladies of song. This exciting start to the 201920 season will be held Tuesday, November 12, at 7:30 p.m. on the McAllen Performing Arts Center stage. All veterans, current service members, and first responders are invited to be guests of the McAllen Wind Ensemble with free admission to the concert. The Maxwell Quartet consists of four great friends who grew up playing classical and folk music together across Scotland. This charming Glasgow-based group has received rave reviews at festivals and venues throughout Europe for their “brilliantly fresh, unexpected, and exhilarating” performances. Their program will include selections by Beethoven and Haydn as well as original arrangements of Scottish folk music. Chicken Tinga – Tinga de Pollo
People are often surprised to discover a tortilla is not just used for
a soft taco, burrito, or “chimi” (chimichangas). The versatile “flour pancakes” are used here to make an unusual appetizer that will impress your guests.

6 large flour tortillas ¼ teaspoon ground nutmeg 2 large ripe pears, cored and thinly sliced ½ cup dried cranberries, diced 2 teaspoons lemon juice 2 tablespoon finely diced walnuts ½ teaspoon ground cinnamon 4 oz. Brie cheese, very thinly sliced
Cut four circles, three inches each, from EACH tortilla. In a medium bowl, toss together the pear slices, lemon juice, cinnamon, nutmeg, cranberries and walnuts. On half of each tortilla circle, layer one slice of Brie, 1 pear slice, and a bit of the cranberry-walnut mixture. Top with another slice of Brie. Fold the tortilla over and press to form half-circles. Repeat using the rest of the ingredients. Heat a large, heavy, DRY frying pan or griddle over medium heat. Place several quesadillas in the pan or on the griddle and cook until golden brown, 2-3 minutes per side. Serve while still warm. Serves 6-8 • 2-pound fryer • 3 cloves garlic, peeled • 2 teaspoons salt • ¼ cup oil • 1 teaspoon pepper
T
his is part two of the recipe for Chicken Tinga Sopes. Last week, I provided the recipe for the chicken tinga filling. If you do not want to make sopes, no worries. The filling is great for tacos or tostadas. This week, we will complete the sopes with two simple salsas and the sopes themselves. Again, the salsa recipes will work with many dishes or by themselves.
• 3 tomatoes, chopped • 1 onion, chopped • 1 serrano pepper, chopped • 3 large bay leaves, chopped • Grated cheese
Place chicken, garlic, and salt in pot; cover with water and boil until tender. Skin, bone, and shred chicken and place in skilled with oil; sauté. Add remaining ingredients; simmer about 10 minutes, covered. Can be served in flour tortillas topped with grated cheese or as a meat dish with Spanish rice and frijoles rancheros. • The Junior League of McAllen, Inc. envisions significantly improving the quality of life of the children and youth of our community by preserving the innocence of childhood, encouraging responsibility, and promoting a safe environment. Corn-and-Black-Bean Salsa • 1 can black beans, drained and rinsed • 2 cups frozen whole kernel corn, thawed • About ½ cup diced red onion • 1 can fire-roasted, diced tomatoes with garlic, drained • 1 avocado, seeded and the flesh diced • 2 Tbsp. fresh lime juice • 1 Tbsp. red wine vinegar • Salt and pepper to taste • Optional: cilantro and jalapeño pepper to taste
This is real simple. Cook the corn in a non-stick frying pan over medium heat for about 10 minutes, turning frequently, until corn shows some charring. This is easier than actually roasting ears of corn, which you could also do. Combine all ingredients in a bowl and stir gently to combine. Refrigerate until needed – it will keep a few days in the fridge.
Green Avocado and Tomatillo Salsa • 3 fresh tomatillos, husks removed, washed, and roughly chopped • 1 jalapeño pepper, seeds and webbing removed, chopped • 2 Tbsp. chopped onion • 1 medium size avocado, scooped from shell • About ½ cup lightly packed cilantro, chopped • 1/3 cup water • Salt to taste Place all ingredients in a blender and process until nearly smooth. (I made it thin so I could serve it in a ketchup squeeze bottle.) Instructions for Sopes (edged shells made from tortilla dough) I was preparing to make the sopes from scratch until I discovered them premade in the H-E-B dairy counter--10 sopes for $2.99. I bought them, still aiming to keep it simple. Toast the sopes, flat side down, in a comal or dry frying pan over medium heat. You want the shells to be lightly toasted on the bottom only. If they “puff up” while toasting, press the bubble down with a spoon so it flattens out. Set the toasted sopes aside. Next, heat some cooking oil in a deep-sided frying pan over medium heat (375 degrees). The oil should only be deep enough to fry the bottom and sides of the sopes without filling them. Fry until the sides and bottoms are golden brown; then turn them carefully and fry the rim. The bottom inside of the shell will be browned. Remove from the oil and drain well on paper towels. Now assemble your chicken tinga sopes! Serve the sopes while still warm. Heat some refried beans and put a smear of them in the bottom of the sope shell. Add some of the warmed chicken tinga mixture. Add some corn-and-black-bean salsa. Drizzle with the tomatillo and avocado salsa. (I recommend topping the sope with crumbled queso fresco, chopped cilantro, hot sauce, and maybe even a bit of lime juice.) You’re going to get rave reviews for these! Enjoy! Gloria’s Favorite Blueberry Scones
I’m not a baker as you all know. But I love to bake just the same. Sometimes
you can just put more multi-colored sprinkles on the donut or mousse and everything looks brighter somehow. Anyway. I’ve been a little obsessed with scones lately and I don’t know why. I think it’s the texture and the fact that they are slightly moist but are not too sweet. And also that they aren’t exactly EASY to make so when they turn out perfectly, it is such a special treat and gift to yourself and your loved ones. Trust me, you really do owe it to yourself to master the art of the scone. The key is to not over mix or knead the dough. Just mix enough to barely combine it. Here is a fool proof and easy recipe for lovely blueberry scones (my mom Gloria’s favorite). If you would rather try a different variety, feel free to substitute the blueberries for cranberries (and add a little orange zest too) or maybe even chocolate chunks. All scones are fabulous in my world! • • 2 cups all-purpose flour • 1 tablespoon baking powder • 1/2 teaspoon salt • 2 tablespoons sugar • 5 tablespoons unsalted butter, • 1 cup fresh blueberries cold, cut in pieces • 1 cup heavy cream, plus more for brushing the scones Lemon Glaze • 1/2 cup freshly squeezed lemon juice • 2 cups confectioners’ sugar, sifted • 1 tablespoon unsalted butter • 1 lemon, zest finely grated

Preheat the oven to 400 degrees F. Sift together the dry ingredients; the flour, baking powder, salt, and sugar. Using a pastry blender (or two forks), cut in the butter to coat the pieces with the flour. The mixture should look like coarse crumbs. Gently fold the blueberries into the batter. Take care not to smash or break the blueberries or their color will bleed into the dough. Make a well in the center and pour in the heavy cream. Fold everything together just to incorporate; do not overwork the dough. Press the dough out on a lightly floured surface into a rectangle about 12 by 3 by 1 1/4 inches. Cut the rectangle in 1/2 then cut the pieces in 1/2 again, giving you 4 (3-inch) squares. Cut the squares in 1/2 on a diagonal to give you the classic triangle shape. Place the scones on an ungreased cookie sheet and brush the tops with a little heavy cream. Bake for 15 to 20 minutes until lightly golden brown. Let the scones cool a bit before brushing on the glaze. Mix the lemon juice with the confectioners’ sugar until dissolved in a heatproof bowl over a pot of simmering water (double-boiler). Whisk in the butter and lemon zest and continue whisking in the double boiler. Whisk the glaze to smooth out any lumps and then drizzle the glaze over the scones. Allow to set a minute before serving. •
