I have to say, I’m
a huge fan of cruising. And cruising as a group...well that’s just the icing on the cupcake! There’s something really fabulous about cruising. Sure, part of it may be that you don’t have to cook, clean, do laundry, take the trash out, or go to the grocery store! But there is so much to do on the ship it’s not even funny. So much, in fact, that even though I’ve been on the Liberty of the Seas four times now, I still have yet to watch the ice-skating show! We all have our own ‘thing’ on a cruise, and for me, it’s part getting caught up--on both work and rest-and part socializing--primarily with those in and around the blackjack table or out by the pool. There is truly something for everyone, with card rooms, libraries, workout facilities (They even have a pickleball court!), day spa, cooking classes, night clubs, and the list goes on and on. Never in my wildest dreams did I think ‘Cruise with Kristi’ would get to where we are today, and I have to say it has become one of my favorite things about the season! It's not just cruising; it's making new friends along the way who will forever be in my heart! • We’re just connecting the dots,

he first day of February, Winter and Converted Texans loaded up five tour buses and headed for the Port of Galveston. The goal: to explore the Western Carribean aboard the Liberty of the Seas. The 4th Annual Cruise with Kristi set sail February 2 for Roatan, Honduras and Puerto Costa Maya and Cozumel, Mexico. The adventure was hosted by Travel by Welcome Home, a division of Welcome Home RGV. Cruisers whiled away the days lounging poolside, line dancing, touring the ports of call, and partaking in fancy cocktails and endless buffets. our groups of musicians will present a concert for the Valley Friday, March 6, at 7 p.m. at The Center Church, 4801 N. Cage Boulevard in Pharr. The Sweet Adelines, Men of A-Chord, Senior Ambassadors, and the RGV Band offer this combined concert. All four groups perform throughout the Valley from December through March. They are comprised of both local residents and Winter Texans. Performers include band and music teachers and students, plus both Converted Texans and Winter Texans from across the United States and Canada.
Since 2005, these four groups have gathered biennially to perform favorites from well-known tunes. This year’s program includes rock and roll, marches, and patriotic and classical numbers, as well as “oldies but goodies.” The concert promises to rekindle the memories of the music that has delighted music lovers throughout the years. Tickets are $8 each and are on sale now from members of each group. Unsold tickets will be available at the door the night of the concert for $10, but seating is limited. •

Ed Martens
I
f you are reading this and have ever played in, or been a spectator at, any of the Senior Texan softball games, you would have seen a low-key, unassuming gentleman dressed in a softball hat, uniform shirt, and blue jeans moving from the players to managers to umpires and then sitting on the bleachers interacting with the fans. This would be Ed Martens. For the past 27 years, Winter Texan Ed Martens, a resident of Bentsen Grove Resort, has always been the driving force behind Senior Winter Texan softball in the Rio Grande Valley. He first came to the Valley 30 years ago with his wife, Mary, from his home state of Minnesota and began organizing softball here in 1993. He has been involved with softball throughout his life, playing in high school, in college, and with the Air Force 44th Fire Bomber Squad serving under Commanding Officer Frank Borman II, who would go on to become a NASA astronaut commanding Apollo 8 and flying to the moon. Ed likes to tell us that he played ball in Manila in the Philippines for $5.00 a game. Ed brought this passion for ball to the Valley and started playing in this area with a handful of players. Over the years, this has grown to a well-run league of several teams, consisting of well over 100 players playing at different skill levels, from leisure to competitive with a recreational division in between. The Senior Texan Softball League consists of senior men and women, 55 years of age and older, from all over the USA and Canada playing in a professionally run league. The teams also include many local RGV players who then get to interact and become close friends with the Winter Texans on and off the field. Teams play twice a week on the ball fields at West Side Park on Ware Road January and February, with championship games in early March and culminating in a Canada-USA game in March that attracts several hundred spectators. This Canada-USA game has going on for 21 years and is a very competitive, but fun, experience for players and fans alike. There is also a banquet after the season for all players and their wives. Ed has been totally dedicated to--and the central organizer of—all of these activities. Ed has organized every aspect of the season almost single-handedly, including finding sponsors and seeking media coverage, and he manages to keep everything running smoothly. The production of a softball league involves many activities with the help of quite a few volunteers. Ed has been the focal point and glue that has kept it all together and running smoothly. Now in his 88th year of life, he has begun to delegate more of the responsibilities and has increased volunteer involvement with running the league and putting in place a solid plan for the continued longterm future of the league. Despite how busy Ed has been running the league, he always manages to call every player by his or her name and knows the background and skill levels of each one. He mentors players, is a role model, and continually reinforces his core beliefs in firm discipline, good sportsmanship, and, above all, excellent camaraderie. He attends every game and always brings equipment and first-aid supplies to the field. His firm philosophy is, “We do not get old and stop playing; rather we stop playing and get old!” He truly exemplifies his motto. Ed also believes in giving back to the community and has been involved in various community work. Over the years, under his guidance, the league has contributed to food banks and children’s orphanages in Mexico. In the off season, he has traveled to other parts of the U.S. to lend his knowledge and support for other leagues that are just beginning to organize. Ed has made an amazing contribution to the betterment of life for Winter Texans and for many other residents of the Rio Grande Valley. We applaud you, Ed Martens. and thank you for your outstanding contribution to senior softball and to the betterment of McAllen and the Rio Grande Valley. We will always look up to you!

Exploring Oklahoma’s Cultural Destinations
From banjos to mummies, state’s collections will delight visitors Special to Welcome Home RGV
W
hether it’s Egyptian mummies, a museum filled with banjos, or the world’s most comprehensive collection of Western art and artifacts, Oklahoma is filled with cultural destinations that will fascinate and educate visitors. Many of those are in the capital city of Oklahoma City, which is home to 20 museums, including the American Banjo Museum and the Oklahoma City National Memorial & Museum, both of which are just minutes from Interstate 35. The American Banjo Museum features the world’s largest collection of publicly displayed banjos. Visitors can try their hand at the instrument and enjoy listening to jam sessions. The Oklahoma City National Memorial & Museum stands in tribute to those killed in the April 19, 1995, bombing of the city’s Alfred P. Murrah Federal Building, and in 2020, it is honoring the 25th anniversary of the event. Inside the museum, videos, audio recordings, and artifacts take guests, minute-by-minute, through the morning when so many lives changed forever. Outside, a field of 168 empty chairs represent each life taken in the bombing. East of Oklahoma City along Interstate 40, the city of Shawnee is
home to the Mabee-Gerrer Museum of Art, where visitors can see the only Egyptian mummies on display in the state. Many other treasures also reside in the museum, including numerous Egyptian, Greek, and Roman objects. The city is also home to the Citizen Potawatomi Nation Cultural Heritage Center, a free attraction that educates visitors on the lives of the early Potawatomi people and the harsh changes brought about by removal. In Eastern Oklahoma, many museums and cultural centers share the stories of the state’s Western and American-Indian heritage. Among the notable ones are Tulsa’s Gilcrease Museum, which is located just a 10-minute drive from Interstate 44. It houses the world’s most comprehensive collection of art and artifacts of the American West-including many Frederick Remington works--along with thousands of pieces of Native-American art and material. In Muskogee, the Five Civilized Tribes Museum highlights the history and cultures of the Cherokee, Choctaw, Chickasaw, Muscogee (Creek), and Seminole nations. It also has an art collection that includes pieces by Muscogee (Creek)-Seminole artist
Jerome Tiger. Further northeast in the Route-66 city of Miami, the Shawnee Tribe Cultural Center is a free attraction that shares the story of the Shawnee people. Another of Oklahoma’s rich cultural cities is Ponca City, which is just a

t was a beautiful day to play shuffleboard! The 7th Annual Shuffleboard Tournament was held at La Floresta Park in Mercedes Saturday, February 8. Seventy-two players participated in the double-elimination event. Winners of the A-Bracket were Danny Howe and Judy Jenks. Winners of the B-Bracket were Wilf Trudeau and Eva Dueck. Special thanks to George Link and his committee--Gerry Mason, Trudeau, Hans Mohr, and Al Birtwhistle, all from Canada. The committee prepared the shuffleboard draw (brackets) and ran the event. Link was instrumental in organizing the first shuffleboard tournament at La Floresta. He explained that they enjoyed curling in Canada and saw similarities with

shuffleboard, except that shuffleboard is done on a court instead of on ice. The celebration continued into the evening with an UFTA Taco Night! All-you-can-eat tacos and numerous toppings were served. Dinner was served by Morris and Kay Haverland, who were assisted by Barb and Guy Desautel and Jerry and Arleen Bier. •
he annual Charity Golf Tournament between Trophy Gardens and Winter Ranch was held February 12 at Winter Gardens Golf Course. The tournament supports both parks’ 1st-Responder programs. Burns Motors sponsored hole-inone prizes of a new car and a five-day adventure cruise. Unfortunately, no one took either of these prizes home. Cornerstone Hospital sponsored the pulled-pork-sandwich lunch for all golfers. Winter Ranch won this year’s tournament, while golfers from Trophy Gardens took the individual prizes. Lorne Skogberg had the longest putt, and Maureen Thompson won the prize for “closest to the hole.” Best of all

Using Music to Educate and Inspire Future Generations Special to Welcome Home RGV
E
ducation and inspiration long have been at the heart of Harlingen Concert Association’s (HCA) mission. This season, with the generous support of community sponsors, HCA has offered several free, educational, outreach programs for local students prior to evening performances for the public at the Harlingen Municipal Auditorium. The energy and excitement at the Harlingen CISD Performing Arts Center were palpable when Sons of Serendip took the stage February 6 following a brief video of their stellar performance on Season 9 of America’s Got Talent. Over 900 students, ages six through 18, were mesmerized as Mason Morton settled in behind his golden Concert Grand harp and angelic tones issued from its 47 long strings. Within 10 minutes, as Morton and his uber-talented colleagues, lead vocalist Micah Christian, cellist Kendall Ramseur, and pianist Cordaro Rodriguez, completed beautiful arrangements of Debussy’s “Clair de lune” and the 1976 hit “Carry on Wayward Son,” the youngsters’ excited screams and enthusiastic applause were deafening. Moving renditions of several original tunes and other pop hits soon followed.
Many times during the show, former English teacher Christian employed time-tested techniques to engage the students and emphasize commonalities. Christian talked about each of the band member’s favorite foods and favorite colors, and
orchestrated audience sing-a-longs to popular songs like “A Thousand Years” and “Don’t You Worry Child.” He told the students at what age each member started playing and performing, explained their individual journeys to becoming professional
musicians, and inspired all present to pursue their dreams. For more than 30 minutes after their performance, the group laughed and shook hands, gave hugs and high fives, answered questions, and took selfies with dozens of star-struck youngsters and their chaperones. Among those getting Sons of Serendip autographs were several middle- and high-school students who had enjoyed a more intimate HCA outreach program in their school’s Band Hall a few weeks prior. y wife, Sally, and I have been wintering at Palm Resaca Park in Brownsville for 15 years. One thing that impresses us all the time is the excellent service we get from restaurants in the Rio Grande Valley. Back home, what especially grates on my nerves is when my server uses the word “youse,” like in “What can I get youse?” One time a server even used the word in its plural form and asked, “What can I get youses?” Can’t you just hear fingernails on the chalkboard? Getting a second cup of coffee is sometimes as hard as finding the Holy Grail. One time, in a very posh restaurant in Stratford, Ontario, the server came out and plopped the salad in front of us. It took only a few moments for me to notice a dead fly right on top. Right on top! How could the server have missed that? You think she would have had the decency to flick it off before serving it. The RGV is a whole different story. Wait staff are quick, courteous, attentive to our needs, and extremely friendly. In fact, they sometimes fill me up with so much coffee that I think I can hear it sloshing in my belly. At the new IHOP on Ruben Torres in Brownsville, I talked to J. Torres, the area manager for the entire Rio Grande Valley. He said he feels
pretty confident he can pick out good servers. “They need to have a great smile and a great attitude,” Torres said. “I don’t worry about how much experience they have. We can teach someone how to be a good server, but we can’t teach someone how to have a good character.” Gregory Clark manages this IHOP. He has been in the restaurant business since 1985. He told me there is always room for improvement. “Every issue is an opportunity to learn and get better.” Daisy Silva, one of 55 servers here, told me the goal of a good server is to help customers and make them very satisfied with their experience. “There’s also a family attitude among servers. We are quick to help each other if we see one of the other servers needs a helping hand. We also want to treat our customers like a guest in our house and give them the best service possible.” There is a strong emphasis on family and family values in this area, and believe me, it is such a refreshing attitude! Harlingen Park Hosts Pet Show Encouraging People to Adopt, Train Their Pets by Rocio Villalobos
W
hen Sharon Battacletti started coming to the Rio Grande Valley from Missouri 11 years ago, she noticed some people were not caring for their animals properly and were treating them like “throw-away” pets. So in an effort to encourage better pet-ownership practices, she created a Pet Fun Match Dog Show at Harlingen’s Sunshine Resort and invited people from other mobile-home and RV resorts to attend with their dogs and learn about some of the local resources available to keep a happy, healthy companion. The show is in its second year, and proceeds benefited the Humane Society of Harlingen. "I want people to come in and experience what pets are really about,” she said. “And that’s the purpose of this event--to make people aware of what they can do with their pet. They’re
part of your family.” Battacletti moved into the resort full time six years ago and said the only thing she misses about her home state are the pet shows. “We had nothing in the Valley like that, so I created this just so we could experience what we have up north, and I wanted to make it educational and fun,” she said. Battacletti and organizers invited dog trainers to teach the hundreds of attendees and their canine plus-ones basic tricks. The event also featured a few competitions in which contestants had the chance to win a gift card, including a timed race of how fast a dog can run across the stage to its owner and a look-alike contest. Brenda Jeneson entered with her three-and-a-half-year-old schnoodle (half poodle, half schnauzer), Rey. They
wore matching pink, glittery outfits with cowboy hats. The pair come from Tennessee and have been visiting the park for five years. Jeneson said not only does she have fun participating in the contests, but she also enjoys learning about the many pet-care services in the area. “It’s really beneficial just knowing what resources are available in the area and learning more about the Humane Society,” she said. The Humane Society of Harlingen brought along a few dogs and cats for $14 adoptions. At last year’s event, Sara Cano, communications coordinator for the shelter, said about four dogs were adopted, and they were hoping for the same, or more, adoptions this year. Cano encouraged everyone visiting their booth and checking out the animals to neuter and spay their pets.
And thanks to people becoming more aware of the importance of spaying/ neutering, as well as some systematic changes within the Humane Society and partnerships with other animalrescue organizations, the shelter now has an 80-percent live-release rate, compared to December 2018 when that rate was around 20 percent. The shelter intakes about 6,000 animals a year and hopes to become a no-kill shelter (which requires a 90-percent live-release rate) by the end of 2020. owned by her family in Brownsville. “To be successful,” she said, “the owner should work in the restaurant to ensure that it runs well.” Each of the three Ricardo restaurants has a family member running it. Jacqueline actually graduated with a criminal-justice degree from UTRGV but decided she wanted to go into business with her family. She said she hires servers on their ability to communicate, to keep up the pace,
and to display a positive attitude. “We want our customers to be happy and content and wanting to come back. One bad comment and we could lose a whole lot of business.” These strategies must be working at these restaurants because they were both very busy and I saw a lot of smiling faces. It is so refreshing to be served everywhere in the RGV by such friendly staff. It makes me love eating out. •

he Texas Association of Mariachi Educators (TAME) hosted its annual State Mariachi Competition in Seguin, Texas, February 7 and 8. With over 15 groups in the competition, Mariachi Los Coyotes earned second place in the 6A Division. The group earned three superior ratings at the regional event in December to qualify for the state competition. They performed Guadalajara, El Torito, and Leña de Pirul for nationally known judges from Mariachi Reyna, Mariachi Sol de Mexico, and Mariachi Cobre. Mariachi Los Coyotes will perform alongside Grupo Folklórico Tabasco at their upcoming shows Saturday,

he South Texas Irish Festival is a free community event that will bring Irish cultural arts to the Rio Grande Valley via food, music, dance, and drink. This all-day event, with the McAllen Chamber of Commerce as an invaluable sponsor, will be the premiere of an annual festival to bring culture and tourism to the greater McAllen area, with a global reach across the border. It will represent the Irish cultural-arts community in South Texas and will promote local small businesses. There will be continuous entertainment, exhibits, and activities suitable for the whole family. Food and drink will represent the best of the Rio Grande Valley, spotlighting local
establishments. One special event will be whiskey tasting. The event will take place April 4 at the McAllen Creative Incubator, 601 N. Main Street, and there will be a hotel block at the historic Casa de Palmas, Wyndham, on the same street. McAllen Irish Arts is a new music and dance studio, directed by Angelika Eleni Gualberto, at the McAllen Creative Incubator. With regular free social events, such as the monthly Art Walk Ceili, a weekly jam session, and now the first annual South Texas Irish Festival happening April 4th, McAllen Irish Arts engages all ages and experience levels through community building and cultural appreciation. •

About eight years ago, the Valley View Estates Mobile Home Park Drama Team invited several DreamValley folks to try out for parts in their annual production of skits. That did it! We were hooked right away. January 30-31, our Dream Valley Ranch Stars on Stage production, directed by Eileen Martin and Mary Lou Curll, kept us royally entertained. With everyday sitcoms, music with funny lyrics, and emcee Ken Martin’s jokes, they set the hall ringing with lots of belly laughter. In Clerical Errors, they couldn’t get clear answers. Have you ever thought about being trapped in an elevator? Elevator Misadventures puts you right there. Silent Movies was all action, with no one speaking a word. It was truly funny when two guys sat side by side. The Challenge of Bureaucracy makes you recall all the trouble you face just trying to receive a lost social-security check. I’ll tell you what. I wanted to jump up on stage and shout, “Get me somebody in that government office who knows something!”
I lost a ring once down the drain and had to call a plumber. But, heaven forbid, I hope I don’t have to ever search through the city garbage as portrayed in Dumpster Divers. The sign down the hall reads “Dating Service” as a guy tries to ask a lady out for a Gin and Tonic, and the situation gets funnier by the minute. This gives you a glimpse of healthy fun. Please join us next season, February 4, 2021, at 7 p.m. and February 5 at 2 p.m. It takes many volunteers and lots of work to pull it off, but it is worth it when you see the smiling faces and hear the hearty laughter. •

According to Smithsonian magazine, these Neanderthals likely made tools, used fire, buried their dead, and cared for their sick and injured and probably had some facility for language. Winter-Texan Volunteers and Kites by Malcolm Callister, Canadian Winter Texan
O
n the mudflats north of the Convention Centre on South Padre Island, the tide was going out. Small streams still drained this beach. WinterTexan volunteers followed the retreating tidal water to map the safe kite-flying display and parking areas. These Winter Texans would be back later, holding orange flags, directing spectator traffic, and helping to launch the giant kites. This was in January, the weekend of the South Padre Island Kite Fest. The American Kitefliers Association (AKA) had not chosen South Padre Island for the sun and the sand, as most visitors do. They had come to fly their kites in January for the wind and the abundance of Winter-Texan volunteers. Winter Texans help the local chapter of AKA make the South Padre Island kiteflying event a success. The small, six-foot kites, each controlled by one person, fly at high speeds, gyrate disco-style to the
rhythm, and sometimes march on the ground. In the teamwork display, up to six kites performed like synchronized swimmers, high in the sky. However, it was the 160-foot squid and the 30-foot shark flying high over the SPI beach, along with many other sea creatures, that got my attention. Kite flying is a highly competitive sport. Competitors come from countries outside the USA, but some are our homegrown Winter Texans who join with local people to bring competitive kite flying to South Padre Island--people like Bob, who I met a week earlier while he was test flying his two new kites. It was Bob who invited my wife and me back for this weekend. "If you have never been to a kite fest, you don't know what you are missing,” he had said, and he was right. There is a risk of attending events like this. You may want to volunteer next year. •

imagination. The production is presented through special arrangement with Musical Theatre International, based in New York City. Matilda is under the direction of Holly Putegnat and Michele Wolding, in collaboration with Lopez Choir, Dance, Band, Guitar, Piano, and Visual Arts departments. The orchestra is comprised of students in the Band, Guitar, and Piano departments. The set is designed by Holly Putegnat and constructed by Holly and Christian Putegnat and Brownsville ISD Carpentry. The Visual Arts students, under the leadership of Roxana Cantu, assist in bringing the design to life. For this special production, the industrial arts were asked to collaborate by constructing two large set pieces created by the students in welding. The students, administration, and personnel at Lopez would like to invite the community to come and enjoy this unique entertainment experience. The curtain rises at 7:00 p.m. Thursday, February 20, and Friday, February 21. The matinee, Saturday, February 22, begins at 3:00 p.m. Doors open 30 minutes prior to each show. Admission is $10. Third Annual Old-Tyme Gospel Singalong March 8 in Alamo Free and open to the public Special to Welcome Home RGV
T
he Patriots are a group of people who love their country and love their Lord. Most of them are singers from park church choirs at Casa del Valle and Bibleville, both in Alamo. Each one of the Patriots was hand-picked by entertainer Paul Pagel. Pagel has entertained in the Valley since 2006, playing at happy hours, shows, and dances and even appearing at Borderfest with his five-piece polka band, Midwest Bellows and Brass. Currently, Pagel limits his appearances to assisted-living facilities and the Alfredo Gonzalez Texas State Veterans Home in McAllen. He plays the keyboard and sings. Gary Dais, who many will recognize as the emcee at Bibleville’s gospel concerts, sings harmony and adds groaner-type humor between songs. This year’s newest member of the Patriots is Emily Cate, who is a very popular regular at many local country and gospel jams. Cate is from Northwest Arkansas and has been singing since age 14. She sang in the church choir, including solos, and was in her high-school choir. She also sang in a gospel quartet for 15 years in and around Arkansas, Oklahoma, and Missouri. The enthusiastic Patriots join in on the singing and give the vocals a complete sound. As hoped for, the entertainers are not the only ones who sing at events. The residents are the ones who turn the
event into a true singalong. Veterans have expressed that they are happy to feel a part of the event, and they truly enjoy singing along. Although the Patriots often share their copy of the lyrics with a resident, it is not unusual to see a resident who knows all the words to all of the songs by memory! This winter, the Patriots have volunteered five times at the Veterans Home, and it has been a very gratifying experience to entertain those who served our country. The staff told us attendance at Patriot performances has risen dramatically. The feedback from residents reflects their sincere appreciation. They know and enjoy this type of music, and it brings back
great memories. Some say the Patriots are the best entertainment they have ever had. One staff member said, “It’s great that you people bring Jesus to our residents. To God be the glory!” Because the Patriots have enjoyed great success in this, their third season, they want to share their songs with people in the RGV. They will present their free Old-Tyme Gospel Singalong Sunday March 8, at 2 p.m. at Casa del Valle, 1048 N. Alamo Road in Alamo. After last year’s singalong, the feedback was overwhelming, and the consensus was, “We want more!” One final note: This is a singalong, not a jam. You will not be disappointed. •

uesday, February 4, marked a big milestone for PPL Motor Homes President Diana LeBlanc. The Houston native and radio personality known as “RV Nana” celebrated her 40th anniversary with the company. “What a fun and exciting rollercoaster it has been,” noted LeBlanc. “I started as a receptionist in 1980 when the company had only four employees. An active mother and grandmother, LeBlanc loves the RV lifestyle and served as president of the Texas RV Association from 2011 to 2013. LeBlanc currently serves on the board of the Texas Association of Campground Owners. In addition to overseeing day-to-day operations at all three PPL locations, LeBlanc writes a bi-monthly newsletter for

at San Benito Veterans Memorial Academy were treated to a brilliant performance of works by Haydn and Beethoven, as well as traditional Scottish folk music. The charming young men from Glasgow made quite an impression, w i t h explanations about their colorful kilts, the small communities where each of them grew up, and their high-quality instruments, including two 17th century violins. Four additional HCA outreach programs this season were scheduled at other venues. These include Lee H. Means Fine Arts Academy and Sam Houston Elementary in Harlingen, Raymondville High School, and Dr. Raul Garza, Jr. STEAM Academy in San Benito. Financial support from several local businesses has helped make these student-outreach programs possible. HCA sponsors include Benchmark Outdoor Advertising, Bert Ogden Toyota, Boggus Ford Harlingen,

This recipe is for a sweet “appetizer” or little treat to serve with
coffee or tea. It uses that waffle iron you might have sitting around collecting dust since we all go out for pancakes and waffles these days! •
Waffle Cookies Submitted by Sandy Olson
• 1½ cups sugar • 4 large eggs, beaten • 2 cups all-purpose flour • 1 cup real butter, softened • 2 teaspoons pure vanilla • ½ cup baking cocoa (not hot-chocolate mix) • Dash of salt Mix all ingredients together, whisking until you have a smooth batter. Pre-heat the waffle iron; then pour in enough batter to cover the bottom of the cooker with a thin layer. Close and cook 1-2 minutes, Don’t over bake them or they will be hard rather than crisp. Cool and frost with your favorite chocolate frosting, homemade or canned. Makes about 48 thin cookies. Serves 6 • 2 fresh Anaheim (also known as California) chilies • 1½ cups whipping cream • 1 cup thinly sliced red onion • 1/8 cup chopped fresh cilantro • 1 clove garlic, minced (or ¼ teaspoon garlic powder)
• 6 boneless chicken breast halves • ½ teaspoon salt • 1/8 teaspoon pepper • ¼ teaspoon garlic powder • 1 large tomato, peeled, seeded, and chopped
Prepare barbeque grill. Char chilies over gas flame or in broiler until blackened on all sides. Wrap in a paper bag and let stand 10 minutes to steam. Peel, seed, and chop chilies. Combine chilies, cream, onion, cilantro, and garlic in a large saucepan over medium-high heat. Boil this mixture until reduced to a thick sauce, stirring occasionally, about 5 minutes. Season chicken breasts with salt, pepper, and garlic powder. Place chicken on prepared barbeque grill and cook until springy to the touch, about 5 minutes per side. Cut chicken diagonally into thin slices. Add tomato to sauce and simmer. Season sauce with salt and pepper. Spoon sauce onto plates. Originally created as a delicious and inexpensive way to make use of leftovers
and to extend meat further during tough times, meatloaf now has become one of the top comfort foods of our time. This recipe is a classic version, blending ground beef and pork with simple pantry seasonings you already have on hand. Milk and half & half soaked bread ensures a tender meatloaf, and the addition of bacon, well, what needs to be said about that. Baking it as a free-formed loaf on a sheet pan, rather than stuffing it into a loaf pan offers more surface area for the tangysweet glaze to caramelize as it bakes. If you are lucky enough to have any left-over slices, they liked to be crisped in a sauté pan and can be served as is or snuggled into a delightful sandwich. Bon Appétit! • 6 SERVINGS Meatloaf: • 1/4 cup minced Italian parsley • ½ cup milk • 4 eggs, lightly beaten • ½ cup half & half • 12 thin bacon slices • 6 bread slices, torn into small pieces • 1 pound ground chuck beef Glaze: • 1 pound ground pork • 1/2 cup ketchup • 1 cup grated Parmesan • 6 tablespoons brown sugar • 1 teaspoon Kosher salt • 1 teaspoon prepared yellow mustard • Freshly ground black pepper • 1 teaspoon Worcestershire sauce • 1 tablespoon prepared yellow mustard • Hot Sauce to taste (such as Tabasco)

For the meatloaf: Preheat the oven to 350 degrees F. Pour the milk over the bread and allow it to soak in for several minutes. Place the ground beef, pork, milk-soaked bread, Parmesan, salt, some pepper, mustard and parsley in a large mixing bowl. Pour in the eggs. Using your clean hands, mix the ingredients until well combined. Line the bottom of a broiler pan with foil. Form the mixture into a loaf shape on top of the broiler pan, which will allow the fat from the meat to drain into the bottom of the pan. Lay the bacon slices over the top, overlapping slightly, tucking them underneath the meatloaf at the edges. Make the glaze: In a medium bowl combine the ketchup, brown sugar, mustard, hot sauce and Worcestershire sauce. Stir the mixture until well combined. Pour 1/2 of the sauce over the top of the meatloaf and brush or use your hands to spread evenly. Bake for 45 minutes, and then pour the remaining ½ over the meatloaf. Raise the temperature to 375 and bake for an additional 25-30 minutes; or until the bacon is nice and crispy and a little dark. The meatloaf should be no longer pink in the middle. Allow to sit 10 minutes before serving.
