there’s one thing we love about South Texas, it’s the weather! This has been a great winter--an occasional ’cold’ blast but relatively nice and sunny. Sure beats Wisconsin!

We are lucky to have such great weather and equally blessed with a great weather team at KRGV Channel 5, under the leadership and direction of Chief Meteorologist Tim Smith. Not only are they good at what they do, but they do so much to help the community, too, off the set and on their own time. I’ve know Tim personally for the last 20-plus years, and over those years, we have worked and served together on many different projects. He’s like the energizer bunny; he just never seems to stop. If you think I’m always on the go, try following Tim around! We applaud the work Tim does for our community and are thankful that he instills the community-service mindset in his team! Two special guests are in the audience, Marty Moore from D&M Cleaners in Pharr and KRGV-5 Chief Meteorologist Tim Smith. Maryilin Cherry invited the duo to officially announce the number of items collected for the local charity drive known as Tim’s Coats. The meeting starts with a surprise presentation. Residents of the resort acknowledge the activity directors, Jeff

and Susan Thomas, for all of their hard work throughout the year. As a show of their appreciation, the couple is presented with a generous cash gift. Prior to the meeting, Susan shared the work that goes into notifying resort residents and visitors about seasonal events, including the opportunity to participate in Tim’s Coats, inviting everyone to clean out closets for donation items. anuary 22, 359 Kansans from all over the Rio Grande Valley met to commemorate the anniversary of the state’s January 29, 1861, admission to the Union. Attendance topped the 2019 event by 100. Wow! And maybe more spectacular is that 150 were first timers for this celebration. This year’s event took place at Trophy Gardens RV Resort. Much appreciation to Russel and Kathy Cropp and their team for setting up all of the tables and chairs. A great lunch was prepared and served by Balli’s Catering of Mission. Entertainment was provided by Rusty Rierson, home-grown entertainer from Augusta, Kansas. We heard many

positive comments about the speed of delivery, taste of the food, and entertainer. Jan Bergman, chair of the event, and Larry Schmitt, communications and reservations, facilitated the day’s events. Ken Naysmith served as the official photographer. The committee also thanks all of the volunteers who facilitated registration, money collection, and distribution of the prizes. Before Cherry announces the grand total collected, Smith is given the opportunity to greet the crowd. He opens with a Winter-Texan-themed joke. “Is there anyone here from up north?” As expected, the majority in attendance raised their hands, amid laughter. Smith continues by thanking the crowd on behalf of the parties involved with the project. He and Moore admit they have lost count of how many years they have been collecting winter items but estimate it to be 35. “We probably, on the conservative side, have collected five to seven thousand a year,” Moore shares. The 2019-20 season of collecting appears to be a banner one. D&M Cleaners is just one of the dry cleaners participating in Tim’s Coats. Moore tells the group he has received three to four thousand coats already this year. He continues with a plea for blanket donations, in addition to coats. “A lot of us have the privilege of adjusting our thermostat up or down. But there are a lot of people who don’t have that luxury.” As part of Tim’s Coats, participating dry cleaners receive, mend, and clean

donated, gently used coats, which are then given to the Salvation Army and Catholic Charities of the Rio Grande Valley to dispense locally. Every donated item has a story. Smith shares a story of his wife’s student, who returned a coat he received a previous winter. When she asked him why he was returning it, Smith says the child responded, “Last year, I needed a coat because I was cold, but I’ve outgrown it, and I wanted to give it back so you can give it to another kid who needs it.” The presentation continues with the grand-total announcement. Cherry, who coordinates the coat drive effort at BitO-Heaven, presents Moore and Smith with a child-sized jacket in various shades of pink. She shares, “This little jacket represents 1,147.” The hall erupts in applause as she continues. “That is 124 more than we had last year.” After the presentation, donut in hand, Smith shares that Winter Texans contribute approximately 30 percent of the total donations to Tim’s Coats. He says, “Every project we do, the Winter Texans are such an important part of, and this is no exception.” •

Pleasant Valley Resort Plays Host to Golden Age Olympics Darts and Pétanque Tournaments Photos special to Welcome Home RGV Story by Eryn Reddell Wingert

on Speidel of Pleasant Valley Resort in Mission took up darts in college and then played a little over the years. But after retiring, he and his wife, Brenda, looked for a hobby they could do together, and they turned to darts. Speidel shares that after 45 years, it all came back to him. “Even my wife, a self-professed klutz, found darts to be something she excelled in.” Speidel is not only an an avid player. He was one of the designers of the six-lane Dart Room set up at Pleasant Valley. The park hosts dart games Mondays, Wednesdays, and Fridays at 1 p.m., and on any given day, 10 to 40 people participate. “We’ve got the best Dart Room in the Valley!” Speidel boasts, making it the ideal spot to host the Golden Age Olympics Darts Tournament.

Sponsored by the City of McAllen Parks & Recreation Department, the Golden Age Olympics takes place throughout the Valley over the course of weeks and includes 30 different competitions. Ranging from the relaxed to the athletic, there is something for

La Floresta Derby Held in Mercedes Special to Welcome Home RGV

ommie Brixey, owner of La Floresta Park in Mercedes, reported that the first annual La Floresta Derby was held the first Saturday in February at La Floresta Downs. It drew quite a crowd, and Winter Texans arrived in large, extravagant hats, enjoyed mint-julep jello shots, and cheered as the horses “raced” by. Excitement mounted during the weeks preceding the race, as teams were created to decorate the horses and

choose a jockey. The six horses, among the best of the best, were all first-time participants at La Floresta Downs. The jockeys were Winter Texans who came from all over the United States and Canada to participate in this prestigious race in the Rio Grande Valley. inter Texans are invited to a free Senior Health Fair Tuesday morning, February 18, from 8:30 to 11 a.m. at the KMC Conference Center (on the west side of the Knapp Medical Center campus, 1401 E. 8th Street in Weslaco). The event will include free health screenings, information on local health services, giveaway items, refreshments, and door-prize drawings, including gift certificates to local restaurants. With February being National Heart Month, the Senior Health Fair will seek to help address two of the most important health conditions affecting the senior population--high blood pressure and diabetes. Dr. Dionisio Calvo, internal medicine physician and medical director for the Advanced Primary Stroke Center at Knapp Medical Center, noted that high blood pressure is one of the major causes of stroke and controlling blood pressure is critical in reducing a person’s risk for suffering a stroke or heart disease. Calvo recommends that patients check their blood pressure at home, ideally early in the morning or a few

minutes before going to bed, to help ensure more accurate readings. Blood pressure tends to go up during the day when people are more active. The Senior Health Fair is also being hosted in conjunction with Knapp Medical Center’s 58th anniversary of serving the health-care needs of the Mid-Valley. The hospital opened in Weslaco in January of 1962 and remains the only acute-care hospital serving the Mid-Valley. Empty Barrels IMAS and Artist Project Supports Food Bank RGV Special to Welcome Home RGV

he International Museum of Art & Science (IMAS) has organized the first-ever Empty Barrels: A Food & Fund Drive to benefit the Food Bank RGV Inc. Empty Barrels is a collaborative project that aims to bring artists and communities together to raise awareness and funds to fight hunger in the RGV. Empty Barrels is a special project of the 12th Annual Night at the Brew-seum, organized by the IMAS. Six wine and whiskey barrels have been donated by 5x5 Brewing Co. in Mission and Hilmy Cellars in Fredericksburg to serve as artists’ canvases and then food-donation collection vessels. Local artists answered an open call to participate in this project and are transforming these barrels with their unique art form. Project partners include Clark Chevrolet, Clark Knapp Honda, and L&F Distributors. The talented group of participating local artists include James Jenson, Jason Perez, Celina Michel, Irene Uribe, Sandy Magallan, and Kirk Clark. progress.) Empty Barrels will be displayed in the community in late February and March to collect food and monetary donations. Brew-seum is an annual event that raises funds for the museum, a 501(c)(3) nonprofit organization

whose mission is to promote a deeper appreciation of the arts and sciences through exhibitions, cultural events, and educational programs. The IMAS serves over 63,000 visitors a year, with over half of those visitors being under the age of 12. It is located at 1900 West Nolana Avenue at the corner of Nolana and Bicentennial in McAllen. Early-bird Brew-seum tickets will go on sale to IMAS members February 14 and to the general public February 17 at a discount. Tickets will be available

for $75 (general admission) and $100 (VIP). Ticket prices increase March 29 to $85 general admission and $110 VIP and on April 3 to $100 general admission and $125 VIP. Dan Miller’s Cowboy Music Revue will share western songs and stories at Harlingen Municipal Auditorium Friday, February 21, at 7:30 p.m. Standards such as “Home on the Range” and “Happy Trails” are a regular part of the show, along with songs made famous by Johnny Cash, Patsy Cline, Dolly Parton, George Strait, and other country-music

Dan Miller and his Cowboy Music Revue have been entertaining audiences from around the world for over 15 years. Her musical background dates back to her college years as a musical-theatre major. She

has performed in community theatre productions and has sung at local events for many years. Corr also is news director for the Big Horn Radio Network, leads worship at First Presbyterian Church in Cody on weekends, and works as a certified holistic nutritionist. Stephanie Wilson, a native of Billings, Montana, started playing piano and violin at age seven and grew up performing in her parents’ band. A home-schooled student throughout her elementary and high-school years, she graduated with a degree in exercise science from Rocky Mountain College in Billings last year. In addition to fiddle, the 22-year-old also plays mandolin, and will be bringing both instruments to Harlingen. Branson’s Ozark Jubilee Presents Stars of the Grand Ole Opry Special to Welcome Home RGV

The all-star cast of the Jubilee will perform the music of great stars of the Grand Ole Opry, from Roy Acuff, Patsy Cline, Tammy Wynette, and Ray Price to George Jones, Merle Haggard, Charlie Pride, Porter Waggoner, and many more. This year, the Jubilee features Australian Sensation Jennifer Simmons. Simmons has traveled around the world and has performed with many Opry stars. The new male vocalist for the Jubilee is Doug Driesel. Driesel is a phenomenal vocalist with a five-octave range. The Jubilee also features Branson’s funniest comedian and world-class fiddler and violinist Doofus Doolittle. “Doof” has performed with many of the legends and will be sharing stories from his experiences with such artists as Mel Tillis, Roy Clark, Ray Price, Bill Anderson, and Porter Wagoner. incredibly talented young lady on this tour. Shelbi McNeil is a fourthgeneration Cody native who has been musical her whole life. She learned to play piano at age seven and picked up the classical violin at age 12. McNeil was brought up playing hymns with her family and went to Northwest College in Wyoming on a music scholarship after graduating from high school in 2012. Since then, she has nurtured her love for horses, becoming a certified horsemanship instructor and working within that industry for the last six years. Dan Miller’s Cowboy Music Revue is presented by the Harlingen Concert Association (HCA), which has been bringing internationally acclaimed touring artists to the Rio Grande Valley since 1933. This all-volunteer, nonprofit organization is committed to enriching the cultural life of the community through live performances. During the concert season, HCA also shares these incredible artists with students via mini concerts and master classes at local schools. Reflections on Alamo Palm RV Resort Quilt-Making and Networking Show by Malcolm Callister

ednesday, January 29, the men and women of Alamo Palm RV Resort Quilters Group held a quilt show as a fundraiser. The display of the group’s quilting skills and artistic talents was put on in the main hall at Alamo Palms. Talents and creative ideas were enthusiastically shared around the hall, and phone and email addresses were exchanged. Small groups could be seen moving out of the flow of admiring viewers to continue their discussions at the coffee and dessert tables. This was an artistic networking group in action. There is a clean, fresh scent that I associate with linen and sewing; the

hall at Alamo Palms had that scent. The main displays of quilts formed four double-sided rows in the main building. A continuous stream of quilt enthusiasts paraded past the rows of quilts, quilters looking for new ideas and non-quilters happy to view the skill and artistic talents of others. The hall was tastefully decorated with a quilt theme and pastel colors. Quilt-material suppliers were on hand to provide material to the experienced quilters and information on quilting to people, like myself, who knew nothing about quilting before the show. Individual quilters with work on display took the time to discuss the

process they employed to reach the finished article. Quilting clearly brings people and families together. It could be seen to link generations. On display were quilts finished almost 100 years ago, quilts started by grandmothers, finished by mothers, and displayed today by daughters. A quilt started nearly in the early in the early 1920s and not completed due to emotional memories. Donna Holfmann showed a quilt she made from discarded bird prints her mother had when Donna first started school. Donna described how she had to clean the old bird prints before she

Pleasant Valley hosted the Pétanque tournament as part of the Olympics. “The game is really popular; a lot of folks come and play,” says Williams. It’s so popular that residents play every day, except weekends, making

it no surprise Pleasant-Valley teams won gold, silver, and bronze during the Golden Age Olympics. The darts and Pétanque tournaments took place January 28 and 29 and February 4. Two-hundred-and-fifty people gathered to watch the games. “We’re fortunate that we have these two great amenities for our residents,” says Williams. Between the displays of intricate sewing work and the required creative flair, it was a remarkable show, fundraiser, and networking event. Shows like this keep artisan skills alive. •

McAllen High Mariachis Qualify for State UIL Special to Welcome Home RGV

cAllen High Mariachi Oro qualified for the State University Interscholastic League Mariachi Contest following their outstanding performance at the Regional UIL event January 25. McAllen High earned a Division 1 Superior Rating at the Regional UIL Mariachi contest in La Joya and will compete at the state level February 21-22. “This is an incredible UIL State Festival, where we will be competing with more than 80 of the top Mariachi ensembles from across the state of Texas,” McAllen High Mariachi Oro Instructor Alex Trevino said. “McHi Mariachi Oro currently stands as the only high-school group in the entire state, across all classifications (1A6A), to have attained straight Division 1 Superior Ratings four years in a

row.” They have also received Group Outstanding Performer accolades three times. “We are very proud of their dedication and love for the music that makes this possible, and we will continue to put in the work to maintain that level of musical excellence,” Trevino said. McAllen High Mariachi Oro will also compete at the state TAME (Texas Association of Mariachi Educators) event February 6-8 in Seguin. Mariachi Oro has won five state titles since 2014. •

A competition was held, and much thought and hard work went into designing masterpieces for this special event. ebruary is here, and that means Valentine’s Day is near! It is the time when couples are in search of the perfect gift for their significant other to show their love, but don’t we owe our hearts some love first? Heart disease is the leading cause of death in the United States in both men and women. The heart is one of the most important organs in the human body, and learning how to take care of it should be something that becomes a routine. This American Heart Month, let’s take a few minutes to get to know our hearts and how to better care for it. Our hearts takes care of pumping blood throughout our body and supplies the oxygen and nutrients our bodies need while also removing c a r b o n dioxide. According to the National Heart, Lung, and Blood Institute (NHLBI), your heart is about the size of your fist and is made up of multiple layers of tissue. If a cardiovascular disease (CVD) were to occur to the heart, it would not be able to function properly and other organs in the body will not receive the correct amount of blood needed. Simple changes like adding less salt to your food, getting some exercise, and quitting unhealthy habits can improve your heart’s health. Quitting an unhealthy habit, such as smoking, can be a tough journey, but if you are thinking of quitting cigarettes, the time is now. Smoking tobacco only increases the chances for CVD. The American Heart Association states that CVD accounts for about 800,000 U.S. deaths every year. This

means CVD is the leading cause of death in the United States. According to the U.S. Department of Health and Human Services (USDHHS), almost 20 percent of those deaths happen because of cigarette smoking. Keeping this in mind, the best way to protect your heart is by staying away from smoking. The earlier you quit, the better it will be for your heart and your health in general. The Centers for Disease Control and Prevention (CDC) states that even if you are a long-time smoker, you can see rapid health improvements when quitting. The USDHHS reports that just 20 minutes after you quit smoking, your heart rate drops; 12 hours after quitting, carbon monoxide in the blood drops to n o r m a l l e v e l s , allowing more oxygen to get to vital organs like your heart. There are so many toxic chemicals in cigarette s m o k e that get in the way of our organs and our bodies working properly and efficiently. That is why the best way to save our hearts is to avoid smoking. The 2018 Texas School Survey of Drug and Alcohol Use measures student responses to substance use. When asked about the dangers of substances, 61.2 percent of students in grades 7 to 12 think there is a perceived risk of harm when using tobacco products. New Black-History Museum Slated to Open in San Benito Special to Welcome Home RGV S

Take a Blast to the Past during Pioneer and Ranching Crafts Day February 15

magine if you could taste heritage, touch history, and feel the rhythm of culture. It can happen during Pioneer and Ranching Crafts Day at the Museum of South Texas History February 15 at 10 a.m. This community event presents the heritage and culture of South Texas and Northeastern Mexico through music, food, and historical and hands-on activities. The event will open with the singing horns, strings, and voices from Edinburg North High School Mariachi Oro. This talented group of students has impressed crowds with beautiful Mexican ballads. Following the mariachi tunes, local folklórico groups will color the stage with their flashes of bright skirts on the brick Gran Paseo area. Los Cucuys de Rodney Rodriguez will present live Conjunto music during their debut performance at the museum. Rodney Rodriguez began his accordion career at age 16 and played with Los Fantasmas del Valle. In 2017, he formed Los Cucuys de Rodney Rodriguez, which includes bajo sexto (sixth bass) player Siji Perez, bass player Beto Perez, and percussionist Javier Perez. Pioneer and Ranching Crafts Day makes history come to life with handson activities that will keep you engaged with the past. Visit the Make & Stamp booth to stamp a piece of shaped metal and take it home. It might make a great gift! CHAPS from the University of Texas Rio Grande Valley will have Civil-War uniforms for you to try on. In the museum’s Will Looney Legacy Park, Texas Master Naturalists will present native plants, and the Gladys Porter Zoo will showcase native animals. Other hands-on activities include

basket weaving and churning butter (which you can taste on a piece of bread). Other homestead skills, such as knitting, leather work, cro-hooking, woodcarving, wood burning, soap making, weaving, and more, will be located throughout the Museum grounds. Make it a day at the Museum and choose from a variety of regional foods and beverages, such as barbecue favorites prepared by Q’in’ It Up BBQ. Other regional foods include tacos de guisados en olla de barro (meats cooked and prepared in clay pots), pan dulce (sweet bread), nieve Mexicana (Mexican snow cones) and aguas frescas (fruit beverages). If you haven’t visited the Museum exhibits, you can experience the world-class Rio Grande Legacy exhibition with gallery hosts dressed in interpretive historical costumes presenting and examining authentic artifacts and the sophisticated dioramas. an Benito CISD has graciously granted the San Benito Historical Society a lease on a historic school building, Joe Callandret School, to establish a museum dedicated to the AfricanAmerican experience. The Callandret Black History Museum will be the first museum of its kind south of Houston. Joe and Fannie Callandret came to San Benito in 1908 and established their family farm. In 1949, Fannie Joe Callandret donated land for the district to build a school for black children in the area and for her own children to have a school to attend during the days of segregation. The school opened in 1952. The museum will feature programs on African-American history and culture and the original intent of the school. The Callandret school building is located at 305 Doherty on the corner of Stenger and Doherty in San Benito.

A grand opening will be held in conjunction with Black History Month February 29 at 10 a.m. Volunteers are needed for this event. The San Benito Historical Society is seeking the donation of vintage classroom items for the new Callandret Black History Museum. Items needed include the following: wooden 1950s desks, 48-star, classroomsized flag, 8×10 or larger classroom-style pictures of presidents George Washington and Abraham Lincoln, and anything similar you would like to donate or loan to the classroom exhibit. On display will be over 400 pieces, including quilted items of all sizes, from king-sized quilts to throws, wall hangings, table runners, placemats, purses, and bags featuring a wide variety of techniques. The impressive creative-arts collections will feature needlework, hooked rugs, knitted and crocheted pieces, artwork, paintings, jackets, Hardanger embroidery, stained glass, woodcarvings, woodworking, beading, pine-needle crafts, scrapbooking, and card making. Among the highlights of the show, the SQS Room will also have a

display of pieces created for this year's challenge. Imaginations worked overtime to create a special piece. What an amazing feast of creativity! Vendors will have a variety of fabrics, tools, and gadgets available for purchase to help you plan your next project. Scissor sharpening will also be available. There will be several informative demonstrations throughout the show, including fish printing, embroidery on paper, diamond beading, finger knitting, and making dresses from men’s shirts. id y’all know that at The Lamb’s Loom, we have several talented weavers in our midst? For many, this seems like a lost art, but not around here! We are thrilled to see all of the beautiful works that come off these rigid heddle looms. Our youngest weaver’s name is Ari. She took to this like a natural, as she and her teacher, Peggy, warped and wove their way through the days this past summer. Like many of our fiber arts around here, weaving is offered as a class. This one-on-one workshop is a funfilled day that teaches the basics of rigid heddle weaving. We have all you need right here, so give us a call and set up your very own workshop! As an all-volunteer, prayer-shawl ministry, we make and accept donations of handmade items to be sent all over the world. The classes we give are part of our mission to teach others and help them grow in a craft they can use to help others. he other day, my wife and I were driving when we suddenly encountered a large, white, bird glop spread across the windshield, right in front of her. When we got home, I decided to do the honorable thing, even though it was not on my side, and clean the window. I filled a bucket half full of water, grabbed a sponge, and took care of the situation. She had also been complaining that the car was dirty, and I recalled she had recently gotten her pants soiled from rubbing against the door. There I

was, with a half pail of water and the ability to be the hero and save her next pair of pants. I was also impressed with myself that this had actually occurred to me. I washed the dirt off her door and, still having a little water left, kept going. I made it nearly from headlight to taillight. With the water then exhausted, I dutifully put the pail away as I have been trained. When she came out, she noticed the car was clean and was genuinely impressed. She said, “Wow! Did you wash the whole car?” “No. I washed the window for you and had some water left, so I cleaned off your side,” I said, expecting her thanks. “Wait! You washed half the car?” “Well, yes. I ran out of water.” Somehow, the conversation had taken a direction I hadn’t anticipated. When the neighbors stopped over, the story was out that I had washed half

a car. No one seemed to acknowledge that I had washed the most important half--hers. One of the things I have learned is that we all go through life with different perspectives. My good deed became the neighborhood joke. I do see their point, and I think they saw mine, but I was still the butt of the joke, something I have grown used to at this age. It only takes a few minutes of watching the news to see the problem we have created. Everyone is upset with someone over something. It gets too easy to criticize and too unthinkable to see another perspective. Some stuff is important enough to get upset about. However, at our age, we have learned that a lot of it isn’t. Sometimes we just need to chill out and have a laugh. And, in my defense, yes, I eventually did go and wash the whole car. I’m just sayin’. •

hef Abe De Leon will share his culinary techniques at Quinta Mazatlán’s Nights at the Mansion Speaker Series Thursday, February 20, at 6:00 p.m. The theme of his cooking demonstration is Cracking the Culinary Code in Cooking for Two. Chef Abe has been submerged in the culinary world for over nine years, and while his career as chef was launched in Seattle, Washington, he is originally from McAllen. Known for his Mexican cuisine, his first break as chef was for Little Water Cantina and later Bang Bang Seattle. In Houston, Chef Abe cooked for Pass and Provisions, Hugo’s, and the Reef. Presently, he is the restaurant manager at University Drafthouse in Edinburg. Chef Abe’s cooking demo at Quinta Mazatlán will feature samples served on a firstcome-first-served basis. Nights at the Mansion Speaker Series presents noteworthy speakers and scholars delivering lectures related to our global environment and local cuisine, as well as the arts and culture. Sun-dried tomatoes come in two form: packed in oil in a jar and

dry packed, which are usually in pouches. Since the tomato flavor is concentrated, you don’t need much to make a recipe pop! •

In-the-Pink Spread Submitted by Sandy Olson

• 7-10 sun-dried tomatoes packed in oil, with excess oil dripped back into the jar • 1 package (8 oz.) real cream cheese, not low-fat or no-fat, softened • 2-3 cloves fresh garlic, peeled. Remember, the entire garlic is a “head” and the individual pieces are the “cloves” • 1 tablespoon oil from the jar of tomatoes • 1 teaspoon kosher salt • Dash of black pepper Place all of these ingredients into a blender or food processor. Blend/ Process for about 1 minute or until smooth. It’s OK if there are tiny bits of tomato showing. Place in a serving bowl and cover with plastic wrap. Refrigerate until ready to serve, at least an hour. Serve with crisp pita chips, unflavored bagel chips, and/ or thin slices of toasted Italian or French bread.

Salted Caramel Cookies

here did January go? I don’t know but it’s nearly Valentine’s Day - Cupid’s special day. So I’ve found a way for you to show your special someone all your love with this delectable and richly delicious treat. This cookie is fun and a little different than your average drop cookie. And the best of all, it features salted caramel! What is not to love about that? Happy day of love and Happy baking! Bon Appétit! • FOR THE COOKIES: • ¾ cup unsalted butter (1 1/2 sticks), at room temperature • 1 cup light brown sugar • 1 large egg • 1 ½ teaspoons vanilla extract • 2 cups all-purpose flour • ¾ teaspoon baking soda • ½ teaspoon kosher salt

FOR THE CARAMEL: • 8 ounces store-bought soft caramels, unwrapped • 2 tablespoons heavy cream • Flaky sea salt

Position oven racks near the center and heat the oven to 375 degrees. Line two baking sheets with parchment paper. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and brown sugar until light and fluffy, 4 to 5 minutes. Add the egg and vanilla and mix until well combined, about 1 minute. Scrape down the sides of the bowl. Add the flour, baking soda and fine sea salt and mix until fully incorporated. Scrape the dough out of the bowl and divide it in half. Wrap each piece in plastic wrap, patting into a 1-inch-thick disk. Refrigerate for at least 30 minutes. Scoop the dough into 1 1/2-tablespoon-size portions (you should have about 20). Using your hands, roll the dough into balls and place on the baking sheets, leaving about 2 1/2 inches between pieces. Wipe the bottom of a glass with a damp towel and use it to press the cookies flat (they should be about 1/3-inch thick). Bake the cookies, rotating the sheets halfway through baking, until the edges are golden brown, 9 to 11 minutes. Let cool completely. Take care not to overbake them. Place the unwrapped caramels and heavy cream in a small saucepan over medium-low heat, stirring until melted and smooth. Once the cookies have cooled completely, spoon a generous teaspoon of caramel into the center of each cookie. Spread the caramel evenly over the surface, leaving a 1/4-inch uncoated edge. Sprinkle flaky sea salt on top. Note: If the caramel becomes too thick as you work, reheat over medium-low heat on the stovetop, stirring, until fluid. Let the cookies cool at room temperature until the caramel sets, about 15 minutes, before serving.
