One thing is for

sure; doing things with friends is more fun than going it alone. The same goes for travel. Going on an adventure with a group is so much more fun than going by yourself. Even if you're going somewhere you’ve been before or someplace you frequent, it is more enjoyable if you're with friends. You see things differently when you are with others. Perspectives change, and you may even travel at a different pace. Cruising is my favorite thing to do as a group because once you’re on the ship, you can see as much of (or as little of) the people you’re traveling with as you choose.

But don’t get me wrong. Cruising is not the only type of trip I like to take! Just a few short weeks after we get back from our cruise, we’re going on another group trip, this time to Mexico City. Seeing the monarchbutterfly sanctuary has always been on my bucket list, and I’m ecstatic to report that I will share that experience with those traveling with us.

To further boost your memory, she often oversees the Texas Tornado cash-grab booth as a representative of Texas Regional Bank. One Saturday in January, Jackie was once again giving away cash and prizes on behalf of Texas Regional Bank. The event was the Texas Freedom Chili Fest, a full-on show of appreciation for Texas Freedom account holders. Executives from the bank squared off in a challenge to prepare the best chili. Wilczek appreciates the opportunities, he says. “Winter Texans come down, they like to know a little bit about what’s going on down here. The bank keeps us informed.” The chili cook-off takes the place of the January meeting. T.R.B. employees volunteer their time to serve the meal and visit with members. Spending their time off engaging with the community is commonplace for Texas Regional Bank employees. “We had over 9,500 volunteer hours last year in the Rio Grande Valley,” shared Brent Baldree, South Texas Regional president and chili competitor. “We all see the importance of being engaged and involved in the community.” Texas Regional Bank not only sees the importance of engaging with the community

through volunteerism but also through community partnerships. Travel by Welcome Home was recently invited to take part in the Texas-Freedom accountholder gatherings as a trusted travel agency. Russell says her customers enjoy exploring and want to feel safe when they travel. “Travel is a big part of their lives. It’s their time to enjoy life!” Russell said. In total, 182 account holders enjoyed chili, door prizes, and giveaways during the Texas Freedom Chili Fest. The big prize of the day, presented by Kristi Collier with Travel by Welcome Home, was a weekend at Beach Park at Isla Blanca on South Padre Island, including a sunset dinner cruise with Breakaway Cruises and dinner for two at Shrimp Haus. he International Museum of Art & Science will host its 8th Annual Lunar New Year Festival Saturday, February 8, from 10:00 a.m. to 4:00 p.m. Celebrate the Year of the Mouse (Rat) alongside the RGV’s Asian community. Visitors of all ages will explore China, Korea, and Taiwan, with traditional performances, lantern art, story times, calligraphy, and Korean games, plus food sampling from local restaurants. Entertainment includes special performances by X Studio and Bob Davis Martial Arts. Boba tea will be for sale at the event by the Filipino Student Association from UTRGV. Each year, the IMAS hosts a Lunar New Year Festival, which celebrates the rich traditions of Asian cultures. While the Gregorian calendar that is used in the United States is based on the solar year, the calendar used in most Asian countries, including China, Taiwan, Korea, Vietnam, and Tibet, is based on the phases of the moon. unday, January 19, a group of Winter Texans organized a successful fundraising dance at Ranchero Village Park in Weslaco for the Shriners Transportation Division in the RGV. This was the Park’s sixth annual event, and this year the group exceeded previous years in the funds they raised. Jack Nelson and Texas Turnaround provided the entertainment, and the dance floor was full most of the afternoon. The Silent-Auction table was packed with articles donated by businesses in the Valley, as well as from private donations. The group sold 50/50 tickets, and many monetary donations were received from generous individuals who attended. Two-hundred-seventy-nine people attended this great party, including over 15 Shriners from Canada and a number of different states. The Shriners purchased a van with the money the residents of Ranchero Village Park have raised. The names of Evan and Margo Graham are on the van because they are the inspiration behind this annual fundraiser. All additional monies now go toward the upkeep of

the Shriner vehicles. The Shriners in the Valley, along with other volunteers, ran 12 trips a month this year, transporting 600 kids from the Valley to Houston for treatment. The Rio Grande Valley Shrine Club in La Feria hosts clinics throughout the year, with the Houston medical staff coming to the Valley to treat the children. The La Feria Shriners and the visiting medical professionals see up to 200 children in two days. All of these clinics are staffed by volunteers. January 29, a mini clinic was held in La Feria at the Shrine Club. The sewing ladies of Casa Del Sol

Special to Welcome Home RGV

he sewing ladies of Casa Del Sol come from all over the U.S. and Canada every winter and dedicate themselves to two major projects--quilts and Benjamin-Smile pillows. The fabric for these projects is made possible through the generous donations of Park residents. The Park Activity Fund supplements the cost of other materials and supplies to complete the projects. The ladies put in countless hours making the quilts and pillows, knowing the finished products will enhance the lives of many women whose lives have been impacted by domestic violence and children who are dealing with cancer and other life-threatening diseases. Every year, the ladies make approximately 30 quilts for the women's shelter. These quilts are then delivered to the shelter, and the staff takes care of disbursement to those in need.

The Benjamin Smile Project started in 1999 after little Benjamin, age six, was diagnosed with cancer. His mother came up with the idea of making a little pillow for him to hold onto and to give him some comfort. Benjamin passed away the day before Thanksgiving in 1999, but the project is still going on today. The Casa Del Sol ladies make approximately 60 Benjamin-Smile pillows each year, and they are delivered to the Edinburg Children's Hospital. Our hope is that these pillows make the lives of children a little better. These wonderful ladies do not do it for glory or recognition but because they believe everyone should do what they can to help those less fortunate. We want to express our appreciation to these wonderful ladies and wish them the very best. •

he St. Baldrick’s Head-Shaving Event and Raffle will be held Saturday, February 15, at the Edinburg Conference Center at Renaissance, 118 Paseo Del Prado. Music, the raffle, and a silent auction will begin at 10:00 a.m. Shaving starts at 10:45 a.m. The St. Baldrick’s Head-Shaving Event helps fund research into cures and better treatments for childhood cancer. The St Baldrick’s Foundation began in 2000 as a casual conversation between friends and has exploded into the world’s largest volunteer-driven fundraising program for childhoodcancer research. Over $39 million was raised in 2019, bringing the total grant awards since 2005 to over $270 million. The St. Baldrick's Foundation awards more grants for childhood-cancer research than any other entity, except the U.S. government. (Childhoodcancer research receives less than

four percent of federal cancer-research funds.) This is the 12th year of participation for the Rio Grande Valley, and over $300,000 has been raised in previous Valley events. atin Dance Instructor Solenne Reyna is coming to share her expertise and exciting dance moves at Quinta Mazatlán’s Nights at the Mansion Speaker Series. Join Reyna Thursday, February 13, at 6:00 p.m. as she leads Valentine’s Salsa Night, Beginners Bachata Class. Historically, Latin dance originated in the traditional dances of indigenous cultures of Mexico, South America, Central America, and the Caribbean. Like many cultures around the world, dance was essential in communal ritual life. Dances were performed during rituals and festivals as a symbolic representation of cultural beliefs. Dance is a form of self-expression and has also been known to be a great way to stay healthy and active. Latin and salsa dance-oriented classes, in particular, are known to help improve cardiovascular endurance, coordination and balance, muscle tone, and reduced body weight. Reyna has danced for over 10 years and is originally from McAllen. She is known for her superb technique and her infectious energy. From hip-hop to tango, she has a wide knowledge of dance, so much so that she has participated in professional dance showcases for three years. Currently, Reyna is a dance instructor at the

Rhythm Room Studio in McAllen. The studio offers dance instruction in a variety of dance styles including salsa, bachata, country, ballroom, cumbia, Zumba, and more! Thread Reimagined Exhibit by Linking Threads at Art Walk February 7 Special to Welcome Home RGV

riday, February 7, the McAllen Creative Arts Incubator will feature Linking Threads Fiber’s Thread Reimagined exhibit. The beautiful, handmade wallhanging art consists of individually crocheted or dip-dyed strands that, when hung on a frame, create an overall image. Some designs are abstract, while others depict actual images with various styles, including modern, bohemian, and contemporary art. The creative process consists of making a design and then determining the stitch type, yarn, and width that will allow for the execution of that specific design. About the Artist: Maria Cristina Torres was born in Northern Mexico into a family that was artistically inclined. Her mother was passionate about music and played piano and guitar. Some of her aunts painted with oil and others made crafts so beautiful that many considered them "true works of art." Torres’ passion is painting. She started with artistic drawing during primary and secondary school and continued with oil-painting classes during high school. After high school, Torres pursued a bachelors’ degree in economics and

worked at a state accounting office. "It wasn't until a few years ago, when I learned some crochet, that I considered using it to do something really innovative and valuable!" said Cristina. "Talking to my daughters, Sofia and Mariana, we discovered they were also contemplating a business activity, so we decided to dedicate ourselves to a family business where art and crafts were combined." During Art Walk in McAllen’s Arts District, you can find upcoming artists like Sofia Castedo, Maria Cristina Torres, and Mariana Rengifo exhibiting their works. Through Art Walk, McAllen paves the way for artists to express their artistic passion, increase interest in the arts, and promote awareness in appreciation of all art and culture. The public is invited to visit the exhibit and meet the artists February 7 from 7 – 9 p.m. at the McAllen Creative Incubator, 601 N. Main Street in McAllen. The exhibit will be on display at the Incubator until February 24. This is the first fall/winter season where this tropical, and strictly coastal, subspecies of yellow warbler has wintered in our wetlands. This

tropical bird's range barely reaches the United States in the southern coastal tip of Texas where it specializes in black-mangrove habitat! Look for the Mangrove Yellow Warbler in the black mangroves along the first half of the boardwalk. •

he Rio Grande Valley Alumnae Chapter of Kappa Delta Sorority is trying to connect with members who are making their winter home in South Texas. As part of its outreach program, the RGV chapter has organized a Galentine’s Day lunch Saturday, February 8, at 11:30 a.m. at Nana’s Taqueria, 1802 S. International Boulevard in Weslaco. “We welcome all Kappa Delta alums in the area to join us for some fun, relaxing ‘gal’ time,” said Carol Hudsonpillar, local chair. “We would like to get to know our visiting KDs and invite them to participate in our social gatherings, as well as our philanthropic projects.” Hudsonpillar said the RGV chapter shares the same goals as the national KD organization and is focused on services to children. The chapter’s local philanthropy is the Children’s Advocacy Center of Hidalgo County, which assists children and families affected by abuse and neglect. Last year the RGV chapter created and furnished a play-therapy room at the CACHC’s Mission location. Funding for the project was through a $6,500 Kappa Delta Foundation KiDs grant. Foundation grants offer KD alumnae an opportunity to make a direct, positive

Ultimate Beach Boys Tribute Band Coming to Harlingen March 4

he most-booked Beach Boys tribute band in the world is coming to the Valley. Sail On: The Ultimate Beach Boys Tribute Band performs at Harlingen Municipal Auditorium Wednesday, March 4, at 7:30 p.m., courtesy of the Harlingen Concert Association (HCA). Tickets are on sale at the Auditorium Box Office, 1204 Fair Park Boulevard in Harlingen, and online at HarlingenConcert.com. Sail On plays all of the Beach Boys’ classic hits, plus numerous treasures from the band’s brilliant extended catalog. All of the tribute band’s members are professional musicians who share an affinity for the golden age of pop music and love sharing the genius of Brian Wilson and the Beach Boys with audiences across the country. Wyatt Funderburk (bass/vocals) is a Nashville musician, songwriter, and producer. Since self-releasing his first record as a teenager, Funderburk has toured the U.S. and abroad with his own bands and several others. He also works in his studio with some of the best rock and pop artists in the nation. Mike Williamson (keys/vocals) is a multi-instrumentalist and singer with many years of experience on stage playing everything from folk to jazz. He is also a veteran of the studio, serving as a composer, arranger, musician, engineer, and producer on recordings that have appeared in various media in North America, Europe, and Japan. The other three Sail On members also live and work as professional musicians in Nashville. Matt Thompson (guitar/ vocals) contributes to several bands, including playing for indie/pop artist Whoa Dakota, a 50s rockabilly group, Good Rockin' Tonight, and the Nashville Celts. Originally from North Vernon, Indiana, Thompson graduated from Berklee College of Music in Boston, where he studied arranging and composition and became fixated on the intricate harmonies of the Beach Boys. Paul Runyon (keys/vocals) plays and

records with his band, The Explorers Club. A native of Charleston, South Carolina, Paul has played keyboards with Mark Lindsay from Paul Revere and the Raiders and currently with folkrocker Reuben Bidez. Ben Potter (drums/percussion), originally from Reading, England, was raised in India, where he began playing the drums as a child. Eventually arriving in America, he studied at the Musicians Institute in Los Angeles and spent seven years as a professional drummer/percussionist on stage and in the studio for a variety of musical projects. Like most people, Ben was drawn to the carefree feeling in much of the Beach Boys music and loves sharing that fun with audiences as the newest member of Sail On. Harlingen Concert Association has been bringing internationally acclaimed touring artists to the Valley since the 1930s. This all-volunteer, nonprofit organization is committed to enriching the cultural life of the Rio Grande Valley through live performances. During the concert season, HCA also sponsors mini concerts and master classes at private and public schools in conjunction with their scheduled artists. Steamboat Bell Caught in Feud during Early 20th Century Learn more at Winter Texan Wednesday February 19 at MOST History Special to Welcome Home RGV

ho would want a 400-pound bell? In the early 1900s, the famous bell, once used on the steamboat Bessie, was caught in a feud between two Catholic parishes. Learn more about the history and timeline of the bell during Bell of the Bessie, a presentation on Winter Texan Wednesday, February 19 at 3 p.m., featuring Father Greg Labus. It is hard to imagine that the Rio Grande was once a highway for steamboats. For a time, up to 35 steamboats were up and down the river, dropping off passengers and goods, such as cotton. However, steamboats were put out of business at the turn of the 20th century with the arrival of the railroad. The 400-pound bell that was on the last steamboat, the Bessie, found new life as a community symbol in the city of San Juan. It also became a disputed artifact claimed by two Catholic parishes in the Rio Grande Valley, St. Joseph the Worker Catholic Church in McAllen and St. Joseph Catholic Church in Edinburg. Father

Labus will make his case that St. Joseph Catholic Church in Edinburg is the real home for Bessie’s Bell. Labus is currently the pastor at St. Joseph Catholic Church in Edinburg. He is a longtime Edinburg resident and music enthusiast. Winter Texan Wednesday is included in the fee for regular museum admission. No reservations are required. McAllen Public Library to Launch

Celebrating South Texas!

World Language Collection at International Festival Special to Welcome Home RGV

he McAllen Public Library is launching a new World Languages Collection with an International Festival, which includes food, visual displays, story time, and arts and crafts Saturday, February 8. The Festival will celebrate the successful introduction of new materials offered in Korean, Tagalog, and Hindi, adding to the library’s wide selection already offered in English and Spanish. According to Library Director Kate Horan, “The New World Languages Collection will act as a gateway to introduce people in our community from diverse group to the Library’s many services. We are excited to bring this new collection to the public, and we plan to expand it in the future.” People of all ages are invited to the free, family-friendly World Languages Festival that day, where guests will enjoy stories featuring multi-lingual storytellers Cat Avila and Dr. Mohammed Uddin, among others. Additionally, on display and set to delight festivalgoers will be the temporary exhibit of Korean lanterns on loan to the City of McAllen from the City of Jinju, South Gyeongsang Province, South Korea. The City of Jinju famously hosts a world-renowned lantern festival every year. The Library is set to glow with more than a dozen giant, lit sculptures depicting Korean characters, folk games, animals, instruments, and other shapes of cultural significance. Festivalgoers will enjoy complimentary food samples from some of McAllen’s diverse restaurants, including Kusina, Kabob Guys, Seoul Asian Market & Café, and many others.

In addition to food and stories, families will enjoy free children’s crafts and activities provided by the library and collaborating community organizations, including St. George Orthodox Church, Al Khair Islamic Society of RGV, India Association of the Rio Grande Valley, RGV K-pop Shop, India Association of the Rio Grande Valley, and more. Rounding out the entertainment will be an energetic demonstration of K-pop, or Korean popular music, by Moonlight Dance Team. The World Languages Festival is a part of a week-long celebration of international culture and languages. This is quite possibly the easiest appetizer, snack, or veggie recipe you will ever read! You won’t believe how delicious it is and with such a small amount of effort. Enjoy! •

Carol’s Ranch Mushrooms Submitted by Sandy Olson

• 2 packages (8 oz. each) fresh, white, button mushrooms • 1 package Hidden Valley® or similar dry ranch dressing mix (not the dip mix) • 1 stick real, unsalted butter. No margarine ever, please! Brush any visible dirt off the mushrooms with a damp paper towel.

Never soak mushrooms in water; they are like sponges and will become waterlogged quickly. Remove a thin slice from the bottom of each mushroom stem if they look dry or dark brown. (NOTE: A way to determine if the mushrooms are fresh is to make sure the gills under the cap are tight against the stem, not starting to pull away.) Place the mushrooms into a small slow cooker. (A 3-quart will work well; anything larger is unnecessary unless you are doubling this recipe.) Sprinkle the dry dressing mix over the mushrooms and lay the stick of butter on top. Cover the cooker and set on low. Cook for about two to two-and-a-half hours. The butter will melt and mix with the dressing mix to form a delicious sauce. Stir the mushrooms gently about halfway through cooking. Serve right from the slow cooker (set on warm) with toothpicks. Note: The newer cookers are hotter than older ones. At the end of two hours, taste a mushroom to see if it is cooked thoroughly, tender but not mushy. If they need more time, cook for another 30 minutes or so. • 2 oranges, juiced • 2 jiggers brandy • 1 (7 oz.) bottle sparkling water

Mix wine, sugar, lemon juice, orange juice, and brandy. Chill. Baked Potato Soup

If we’re being frank, a baked potato isn’t really about the potato. It’s

about the “stuff” that goes on top: luscious sour cream, silky butter, yummy cheese, salty bacon, bright scallions. This soup hits all of those. And as a bonus, in this recipe, we make fanciful use of the skins of the potatoes by frying them into a salty “chip” like garnish. You can use to make this soup smooth or textured, and you can also skip the bacon and make it vegetarian if you like as well. Bon Appétit! • • 6 slices bacon, or 3 tablespoons unsalted butter (if making vegetarian) • 1 bunch scallions, white and green parts thinly sliced separately • 4 garlic cloves, minced • 2 pounds russet potatoes, peeled and cut into 1/2-inch cubes, large skins reserved • 6 cups whole milk • Kosher salt • 1 tablespoon extra-virgin olive oil, plus more as needed • Black pepper • 1/8 teaspoon cayenne • 1/8 teaspoon garlic powder • ¾ cup sour cream, plus more for serving • ¾ cup freshly grated Cheddar (about 3 ounces), plus more for serving

In a large pot or Dutch oven over medium heat, cook the bacon until crisp, 10 to 12 minutes. Transfer the bacon to a paper-towel lined plate. Return the pot with just 3 tablespoons of the bacon fat to the stove. (If there’s not enough fat, supplement with butter to total 3 tablespoons.) **Note: If making the soup vegetarian, omit bacon step and melt butter in a large pot or Dutch oven over medium heat. Over medium-low heat, sauté the white parts of the scallions and the garlic until golden brown, 2 to 3 minutes, stirring frequently and adjusting the heat as necessary taking care not to burn the garlic. Add the potatoes, milk and 2 teaspoons salt, and bring to a boil over mediumhigh heat. Once at a boil, lower the heat and simmer covered until the potatoes are tender, 10 to 15 minutes. As soup simmers, prepare the potato peels: Warm the olive oil over medium-high heat in a large skillet. Working in batches if needed, add the potato peels in a single layer and cook, flipping once, until crisp and golden-brown, about 3 minutes. Transfer to a paper towel-lined plate, then sprinkle with kosher salt, pepper, cayenne and garlic powder. Crumble and set aside. Once the potatoes are tender, take the pot off the heat, and purée the mixture with an immersion blender if you’d like a smooth soup. (Mash with a potato masher if you’d like a more textured soup.) Stir in the sour cream and cheese until combined, then season with salt and pepper. Serve topped with crumbled bacon, more sour cream and Cheddar and the green parts of the scallions. Top with the fried potato peels as “chips”.
