find it only fitting that this column is dedicated to our singles population as this week’s cover story is, as well. I’m proud of all our singles who come to South Texas each year. Whether you are single by choice or after the loss of your loved one, you know you can come and enjoy our warm weather and all the activities that occur throughout the winter, and that makes us so happy! Even though many of our parks have their own singles activities, we decided to host ‘single mingles’ of our own to allow singles from throughout the Valley to mix and mingle. We’re not matchmaking; we’re just providing another avenue for singles to connect and do fun things as a group. Our mingles are on the 2nd and 4th Thursdays of the month at 9 a.m. at Rudy’s BBQ in Pharr, and we invite all of our single friends to join us! It’s very casual--buy your own breakfast and join in the conversation. We are also working on fun outings as a group. In fact, coming up is an afternoon at Riverside Club in Mission. The Fun-N-Sun Singles Rally also welcomed residents from nearby mid-Valley resorts. Visitors took part in various activities, such as operating remote-control cars, shuffleboard, and dancing. Groups also ventured to South Padre Island and Nuevo Progreso, Mexico. The event cost $45 per person for full access to activities, plus three meals and three dances. Chennault credits the combined efforts of the coordinators and the full support of the resort management for the rally’s success. She gauges the success of the event based on the number of visitors who had never visited the Valley, the number who subsequently planned return trips, and those who arrived before and stayed after the rally. “It turned out to be so much more successful than I ever dreamed it would be,” she said. Plans to host another rally are not yet in the works. (Fun-N-Sun RV Resort recently learned it will be the site of the 2021 World Shuffleboard Championships.) While Chennault likes to joke that she will be on a cruise whenever the next Singles Rally is scheduled, she already has ideas about improving the event. “I would like to see something a little bit longer and expose more of the Valley to visitors,” she said. •

he Winter Gardens RC Group was instrumental in designing and building (and remains instrumental in maintaining) the new remotecontrol race track at Winter Ranch RV Resort in Alamo. The allvolunteer group, along with other racers, are now enjoying the fruits of their labor. Every Thursday at 1 p.m., the covered stands and sidelines fill up with spectators to watch six different classes race. The classes include 2-wheel and

4-wheel drive stock, modified, and unlimited. The Thursday events are open to Wilder RV Resorts property residents; however, Winter Ranch is hosting a Valleywide race for 55+ February 20 at 11 a.m. Winter Ranch RV Resort is located at 600 TX-495 in Alamo. inter Texans at risk for falling can receive a free screening at Knapp Medical Center in Weslaco. “We recommend this screening for those who are at risk of falling, those who have fallen before, and those who are afraid of falling,” said Jon Carithers, PT, physical therapist and director of Knapp Rehabilitation Services. For people age 65 years and older, one out of three will fall each year. In some older people, a fall can result in a broken or fractured hip, which can be debilitating and, in some cases, lead to life-threatening complications. The free screening takes only a few

minutes, during which the patient stands on a specialized machine, the Biodex balance system, on the first floor of the hospital in Weslaco. Physical, occupational, and speech therapists at Knapp Medical Center have received many accolades from patients for the advanced treatments they provide to help Winter Texans who are recovering from a stroke, accidents, and surgeries, as well as patients with arthritis and other conditions. Club members display their antique tractors, equipment, and other items related to old farm life. The Club provides demonstrations, such as rope making (where kids are able to make their own rope), blacksmithing, corn grinding with oldfashioned grinders, broom making, a duck-race game using old-fashioned pumps, and how to make sauerkraut the old-fashioned way. The Club also provides hay rides for individuals and families to enjoy. These activities are to keep alive old farming traditions by sharing, teaching, and exploring them with the younger generation. It is also a walk through memory lane for those who grew up during those times. •

Victoria Restaurant Omelet Chef Serves 100,000th Omelet by Rocio Villalobos

For 11 years, Dave Rountree has risen from bed at 4:45 a.m. to arrive at his omelet station by 5:30 a.m. and begin preparing for the 7 a.m. opening at Victoria Restaurant at Victoria Palms RV Resort. Recently, he hit a milestone in his career--he made his 100,000th omelet. Rountree was born and raised in Alamo but spent most of his career in Missouri for various cook and restaurant management positions. Before moving back to the Rio Grande Valley full time last year, he and his wife operated a bed and breakfast in St. Louis. For 10 years prior to that, they would visit South Texas during the Winter-Texan season and run their bed and breakfast back in Missouri during the summers. At Victoria Restaurant, Rountree said he makes between 350 and 500 omelets a day. He remembers his busiest day, which was in January of 2017, when he and his team served 710 omelets. “My true love has always been cooking,” he said. “That’s why I love the job I have now at Victoria Palms. I love to make omelets and talk to people. I get to meet people from Canada, Michigan…all over the place.” While most of the restaurant’s customers are regulars who have been wintering at the park for years, the recipient of the 100,000th omelet was a first-timer. “It just so happens the lady that got the 100,000th plate was in her first year as a Winter Texan and her first time at the restaurant,” Rountree said. “I thought that was odd that that would coincidentally happen.” Rountree works six days a week and said people will stand in line for as long as 30 minutes for an omelet. To determine the milestone-omelet recipient, a special plate printed

with “Dave’s 100,000th omelet recipient” and a picture of him was placed somewhere in the stack of plates. And although the woman who received it had never before eaten an omelet by Rountree, he said she was happy to have been at the right place in the line. “She was excited as she could possibly be,” he said. “You would have thought she won $100,000, not the 100,000th omelet plate.” In addition to being surprised with a day to commemorate his years of cooking omelets, Rountree also received Employee of the Year for the restaurant. As for how he perfected his technique of making omelets, Rountree says he learned the precise method at a restaurant where he once worked. “When they had that opening at Victoria, I said, ‘Oh, I know how to make omelets,’” Rountree said. “So that’s how I started making them here. I always say, ‘It’s just an omelet,’ but

you wouldn’t believe how many times people come up to me and say, ‘It’s the best omelet I’ve ever had.’” Rountree enjoys cooking so much that once a month, on his Monday off, he invites his neighbors to enjoy waffles and omelets on his porch, made by him and his wife. “One of my four days off a month, I do omelets for 52, which brings me

Frontier Times Magazine Highlighted Rio Grande Valley Borderlands Special to Welcome Home RGV

he Rio Grande Valley might have seemed like an isolated place from the rest of the state of Texas, but that wasn’t the case for Frontier Times Magazine, published in Central Texas. In the upcoming Winter Texan Wednesday program, Frontier Times, guest speaker René Ballesteros will present on the magazine’s connection to the Rio Grande Valley. This program will take place Wednesday, February 5, at 3 p.m. at the Museum of South Texas History. Frontier Times Magazine published many unforgettable stories of America’s western frontier, with testimonies from witnesses and participants of historical events in the Central-Texas town of Bandera and the Rio Grande Valley. Those stories highlighted where America’s frontier met with Mexico’s northeastern frontier. Ballesteros’ presentation will be followed by a half-hour highlight tour within a part of a museum exhibit. Ballesteros is a graduate of the University of Texas-Pan American (now the University of Texas Rio

hen I bought my first car at the age of 20, I had the maturing experience of going in to meet with a local banker. I got to look him in the eye and explain how I planned to pay him back for the car loan I was hoping to obtain. I had to take personal responsibility and make a commitment to a person I would meet on the street on a daily basis. It made me feel mature and responsible, but more importantly, it put the pressure on me to perform. He had my word. It occurs to me that ours is the last

generation to experience many things that made us responsible. The world that made us has passed, and I don’t think we are better for it. I recall years in our home when we had no television. When we finally got one, it had one channel. The news was on the radio in the kitchen, but I don’t even recall any nostalgic evenings with the family gathered around listening to Jack Benny. We just didn’t need entertainment. We played outside, where we built relationships with other kids, hung out with other families, and explored a big, wide world that covered a couple square blocks. Even at that young age, we were responsible…at least most of the time. We had given our mothers and our friends’ mothers our word. We don’t have a lot of opportunities today to actually give someone our word. We just click the mouse or swipe the card. It is all very slick and impersonal. Ours may be the last

generation to grow up where giving our word--even as very young children-was truly an act of committing to responsibility. One of the things I have learned in life is that most people (of any generation) are trustworthy. We desire to live honorable lives and, for the most part, we do. I just wonder, though; I paid my first loan to a man I knew by name who lived in my town. My last loan I paid to a corporation in Arizona I had never heard of. The first loan I paid out of a sense of relationship. I desired his trust and approval. The last one I paid out of a sense of staying out of legal trouble. I think our nation has gained much over a multitude of generations that operated by the integrity of personal relationships. Today’s kids are growing up in a much different environment. Is that a difference that will have an impact? I’m just askin’. •

Cosmic Connections: The Metaphysical Practice of Kirk Clark Opens at the IMAS Special to Welcome Home RGV

he International Museum of Art and Science presents the retrospective exhibition of artworks produced by Kirk Clark, which opens to the public Saturday, January 25. An opening reception will be held after hours Thursday, January 30, from 5:30 to 7:30 p.m. The reception is free for IMAS members, and general-admission rates apply for non-members. Throughout a 60-year period, Clark has engaged in a lifelong practice of art making, as well as collecting an enviable body of work. He is a prolific artist by any measure, having created over a thousand mono-prints, hundreds of paintings, and dozens of sculptures and other artworks in various media. Having initially trained as an undergraduate in fine art at the University of New Mexico, where he studied under the tutelage of sculptors Charles Madox, Steve Dubove, and William Goodman, Clark has continued to seek out instruction from highly skilled ‘craftspersons’ throughout his six-decade-long career

and has worked collaboratively with such illustrious artists as printmakers Michael Vigil and Shinzaburo Takeda, as well as painters and sculptors Thom Wheeler, Jonathan Sobol, and (Enrique Carbajal González) Sebastían. Clark has pursued an artistic practice founded in the metaphysical principles of Wassily Kandinsky and has primarily worked in a style that is informed by abstract expressionism. Yet rather than simply being derivative, Clark has expanded upon mid-century formalism in a manner that is both innovative and authentic. Cosmic Connections: The Metaphysical Practice of Kirk Clark will be on exhibit at the IMAS from January 25 through July 5. The exhibit is included in cost of general admission and free for IMAS members. WIC and EBT cardholders can visit the museum for $1 per person. Admission is free on Sundays, thanks to the support of the H-E-B Tournament of Champions. •

Four Friends Making Beautiful Music: Sons of Serendip Performs in Harlingen Special to Welcome Home RGV

he Billboard-charting group Sons of Serendip will perform at Harlingen Municipal Auditorium Thursday, February 6, at 7:30 p.m. Tickets for this exciting group are available online at HarlingenConcert.com and at the Municipal Auditorium Box Office, 1204 Fair Park Boulevard in Harlingen. Sons of Serendip consists of a harpist, cellist, pianist, and lead vocalist. This creative quartet was a finalist on Season 9 of America's Got Talent, gaining popularity by offering fresh interpretations of popular music. They particularly impressed Judge Howie Mandel, who called them “the most musically talented contestants on the show.” The group also participated in America’s Got Talent: The Champions in February of 2019. Sons of Serendip has appeared at many prestigious concert halls and performing-arts centers, including the Dolby Theatre in Los Angeles and Atlanta’s Symphony Hall. The group was invited to perform with the Boston Pops twice in 2015, graced the stage at the Creative Arts Emmy Awards in 2016, and collaborated with the Cincinnati Symphony Orchestra and acclaimed actress and vocalist Cynthia Erivo in 2017. The four friends who comprise Sons of Serendip met while graduate students at Boston University. Micah Christian, a former teacher from Randolph, Massachusetts, is lead vocalist. Cordaro Rodriguez, a former attorney from Charlotte, North Carolina, plays piano and guitar. Cellist and vocalist Kendall Ramseur also is from Charlotte, where he formerly was a cello instructor. Harpist Mason Morton formerly was a teacher in Atlanta, Georgia. Each of them has been playing his instrument

since childhood, but in 2014, they began working together in what they hope will be a long journey of creating music that touches people’s hearts. The group now has three successful albums to their credit and a very dedicated following. Their self-titled debut album, released in January 2015, placed in several categories on the Billboard charts, reaching No. 4 on Heatseekers, the weekly barometer of “up-and-coming musicians.” Their second album, Christmas: Beyond the Lights, was released that fall and also made the Billboard charts. In July 2017, the quartet released their third album, Life + Love. The Sons of Serendip performance is sponsored by Harlingen Concert Association (HCA), which has been bringing internationally acclaimed touring artists to the Rio Grande Valley since 1933. This all-volunteer, nonprofit organization is committed to enriching the cultural life of the community through live performances. Chicken Chimichangas

fter a break to do some website work for our park, I had to come up with something easy to make for happy hour this week. I decided on Chicken Chimichangas—mini chimis; it wasn’t dinner, after all. In keeping with a theme for keeping recipes simple to make, this one uses almost all prepared ingredients. The chimichanga is similar to a burrito, the difference being that the chimichanga is fried in oil after being rolled up. For this recipe, I used prepared, spiced chicken and canned, diced tomatoes in order to cut down on preparation time. This recipe made 20 mini chimichangas. • 20 6-inch flour tortillas • About 1.75 lbs. meat – I used Mi-Tienda-brand diced chicken seasoned with chili verde from H-E-B (Note: The meat is available as seasoned chicken, pork, beef, and pork al pastor) • 1 can refried beans • 1 can diced tomatoes – drained • Shredded Mexican cheese blend • Oil for frying – I use corn oil • Toppings of your choice – shredded lettuce, sour cream or Mexican Crema, guacamole, avocado, etc. The chimichangas are only fried briefly, so it is important to completely fry the chicken and heat the refried beans before placing them in the tortilla. Heat about ½ - ¾ inch of oil to about 350 degrees in a sauté pan (or fryer, if you have one). It is hot enough if a tortilla chip sizzles a bit when dropped in the oil. You will need to roll each chimichanga by hand. Place one half of a tortilla on a flat surface and spread about a tablespoon of beans on it. Don’t get too close to the edges. Add a tablespoon of chicken and a pinch of shredded cheese. Fold the tortilla over onto the ingredients and pull the stuffed part of the tortilla into a tight roll. Next, fold the sides over the stuffed tortilla to close the ends, and finish rolling the tortilla to make a fully closed tube. If your tortillas crack when folding or rolling, they need to be softened. (To soften them, place a few tortillas on a pile of several damp paper towels in a microwave and cover with an inverted plate. Heat them for about 30 seconds.) It’s OK to use a toothpick or two to keep them closed. You can reuse the toothpicks as you go. Gently place the tortillas in the oil, folded side down. Fry until lightly browned; this happens quickly, so watch them closely. Turn them once to brown the second side. Place them on a wire rack or paper towels to drain. Serve warm with all of the special toppings you prefer. You will not use the whole package of meat; leftovers can be used in an excellent chef’s salad. Enjoy! Bueno apetito! •

Feta cheese can be an acquired taste as it’s quite tangy.

It is most often found in chunks on Greek salad, but biting into a large piece can be overwhelming. This recipe combines the tasty cheese with some ingredients to “soften” the traditional flavor. It can be spread on crackers or on bread rounds, topped with a slice of tomato and lettuce.•

Feta Spread

1 pound crumbled Feta cheese, either goat or cow, at room temperature 4 hard-boiled eggs, peeled and finely chopped 3-4 cloves fresh garlic, peeled and finely minced ½ teaspoon freshly ground black pepper ½ teaspoon dried dill weed ¾ cup regular sour cream, not low-fat or non-fat Small jar of diced pimiento, drained

Place all the ingredients, except the pimiento, into a large bowl and mix well. This can also be done by very quickly pulsing the ingredients in a food processor, but you want some texture to the mixture, not a puree. Gently fold in the chopped pimiento. Tear off a large piece of plastic wrap, about 24” long. Place the cheese mixture in the center and wrap tightly, pulling the edges up to completely enclose the cheese. Refrigerate at least 2 hours, but overnight is best. When ready to serve, unwrap the cheese and place on a plate. Use a rubber spatula to smooth it into a ball or rectangle (your choice). Serve with sturdy crackers or unflavored bagel chips. Serves 12-14 • 4 medium ripe avocados, peeled and pitted • ½ teaspoon Tabasco sauce • 1 clove garlic, minced • 4 green onions, chopped • 5 tablespoons chopped fresh cilantro • 1 tablespoon sliced pickled jalapeños, with juice

• 3 cups sour cream • 1 cup buttermilk • 8 cups chilled chicken broth • Salt to taste

In a blender or food processor, combine avocados, garlic, green onions, cilantro, jalapeños with juice, and Tabasco. Process until smooth. Add sour cream; process again. Stir in buttermilk and chilled chicken broth. Taste for salt. Cover; refrigerate until very cold.
