did I know in 2014 how my life would change so dramatically! You see, that’s the year we bought the Winter Texan Expo from its previous owner, Holly Smith. She was ready to let it go but wanted to make sure it went to someone who would love and protect the show as much as she did. I’m so thankful she found us worthy! It is something we work on years in advance, and we know this year's event was the best we’ve done to date. Moving the entertainment to the ballroom allowed for wider aisles, more pass-throughs, and additional rest stops for our attendees. And what an entertainment lineup we had! It was a great show, great fun, and a way for us to show our appreciation for our Winter Texans. t was a sure sign Winter-Texan season was in full swing Wednesday, January 14, at the McAllen Convention Center. Hundreds lined the long, interior corridor well in advance of the opening of the 27th Annual Winter Texan Expo and Health Fair hosted by Welcome Home RGV. Over 200 vendors put the finishing touches on their booths, setting out fliers, brochures, coupons, raffle items, and freebies. Peer-led Art Class Leads Minnesota Visitor to Rediscover his Passion picked up a paintbrush, but after taking an art class at Weslaco’s Snow to Sun RV Resort, Denny Fjeld was immediately reminded of his enjoyment of the craft. That one class he attended in 2016 led him to further explore the arts. “I used to do it in high school many years ago, and I thought, ‘Well, I’d like to try it again,’” Denny said. “That’s kind of how it got started.” Denny and his wife, Barb, come from Minnesota to spend six months in the RGV. Since he started painting again, Denny said he’s created about 30 prints--ranging from WWII planes to lighthouses to the Statue of Liberty to rivers and scenes from nature. One area Denny is aiming to improve is his flowers. As for how he finds inspiration as to what to paint, Denny turns to Pinterest. “I look at pictures on there, and if I see something I like, I save it and download it to my photographs,” he said. “Also, I’ve become more aware of art in my surroundings. If we’re at a restaurant, I’ll see a painting I like and get up to take a picture.” On their way to South Texas, the couple stopped at the Grand Canyon and took plenty of pictures, so Denny said that’s a painting he’d like to create. Denny credits his neighbors and fellow painters at Snow to Sun for helping him advance his artistic skills. “We don’t have an art instructor. Everyone just helps each other and gives you ideas,” he said. “They’ve shown me techniques, such as how to blend colors.” It was a friend he made at the class who introduced him to a McAllen art studio that teaches woodcarving and wood burning. But his main form of creating is

with acrylic paints. To Denny, spending time working on art is relaxing. He listens to music to “get in the zone” and said once he starts, the time just flies. “It’ll be one o’clock and she’ll (Barb) say, ‘I’m going to the pool’ and I might have started painting, and I’ll say, ‘I’ll come in a little bit’ and I put my headphones on,” Denny said. “Pretty soon, she’s coming home, and it’s 4:30, 5:00 and it’s like, ‘Whoa! Where did the time go?’” He and Barb also enjoy visiting local art galleries. They said even the art they’ve seen from elementary school and high-school students in the RGV blows them away. As the Fjelds do not have the space to hang all of Denny’s paintings in their unit, they’ll give some away to friends or to a cause. At a recent silent auction in the park raising money for Mexican refugees, one of his paintings sold to a dentist in Nuevo Progreso, Mexico. And the Fjeld’s efforts to help the RGV community don’t end there. The pair volunteers with Weslaco’s First Baptist Church’s monthly food distribution-with Border Mission’s weekly service of feeding about 400 people a week--and have sponsored a child in Nuevo Progreso through a nonprofit agency. “When I volunteer, I always feel like I get back a lot more than I give,” Barb said. “Plus, everyone there enjoys what they’re doing, and you get to meet so many people you would never meet under other circumstances.” Denny expresses the same sentiment, adding: “It’s a positive thing. There’s so much negativity out there that it’s nice to be able to do something to help.” •

Michael Sander, orthopedic surgeon with UT Health RGV in Weslaco, will discuss arthritis and joint-replacement surgery during a free luncheon and health talk for Winter Texans and the community Tuesday, January 28, from 12:30 p.m. to 1:30 p.m. at the KMC Conference Center, a free-standing, two- Dr. Michael Sander story building on the west side of Knapp Medical Center, 1408 E. 8th Street in Weslaco. Sander, a Weslaco native, has treated orthopedic-surgery and sports-medicine patients in the MidValley for more than 10 years. He is board certified in orthopedic surgery and sports medicine by the American Board of Orthopedic Surgery. “We have been serving the orthopedic needs of the Mid-Valley since 2006,” Sander said. “I am a Rio-Grande-Valley native who returned to the area after 15 years of education to practice medicine and raise my

family. I am proud of my family’s history here, which includes a tradition of health care and community leadership going back two generations in the Mid-Valley and Brownsville areas.” Sander received his medical degree from the Baylor College of Medicine, graduating with honors. He went on to complete a residency in orthopedic surgery at the University of Iowa Department of Orthopedics and Rehabilitation, as well as a fellowship in orthopedic sports medicine at the University of Texas Health Science Center San Antonio. recognizing the importance of educating our winter visitors on what they provide. “We think it’s important to educate our community as far as the services we offer,” shared Vanessa Camacho, South Texas Health System marketing manager. They offer services across the Rio Grande Valley. They also offer an array of workshops and seminars, including Doc Talks Tuesdays and Stop the Bleed. For a complete list of locations, services and information events visit southtexashealthsystem. com. Kay and Kendall Kahl utilized a South Texas Health System emergency room last year. The couple hails from Wisconsin and spends their winter at Tip O’ Texas in Pharr. They attend the Winter Texan Expo every year. Kay said, “Even though we’ve been coming for eight years, we still need to know where to go if we have an emergency.” In addition to health services, the Expo offered a vast array of vendors, among them, dining, museums, excursions, charitable organizations, and volunteer opportunities. The Expo was not lacking in travel information opportunities. Travel by Welcome Home shared information on upcoming Caribbean cruises and adventures to Mexico City. Texas neighbors to the north and south were represented, as well, including Oklahoma, which had a large contingent providing extensive material for those who pass through the state on the way to and from the Rio Grande Valley. The State of Tamaulipas’ booth was an immersive experience, complete with art displays, traditional toy demonstrations, and folkloric dancers. After visiting the Corpus Christi booth, the Kahls are now interested in exploring the beachfront city. Visit Corpus Christi has taken part in the Expo for several years. This is the first year they partnered with the city’s top two attractions, the U.S.S. Lexington and the Texas State Aquarium. Director of Visitor Services Meredith Darden shared enthusiasm for the Winter Texan Expo and its patrons. “We absolutely love this event!” Darden said. “We’re super grateful for the Winter Texans coming to spend their time in Texas, and we just hope they make a day trip or two while they are here.” Dates are already set for the 2021 Winter Texan Expo and Health Fair: January 12 and 13, 2021. 2020 Census Brings Job Opportunities for Older Texans Special to Welcome Home RGV

he 2020 Census count is fast approaching, and its bringing opportunities for Texans looking for short-term work. "The Census is a great opportunity for persons--particularly older workers--in search of flexible hours and temporary work," says AARP Texas Director Tina Tran. “Besides, these Census jobs only come along once in a decade.” The U.S. Census Bureau is seeking responsible, dependable problemsolvers to take on a variety of tasks, like canvassing neighborhoods, as it recruits to fill hundreds of thousands of temporary positions across the country. Jobs for the 2020 Census offer competitive wages that are paid weekly. Authorized expenses, such as mileage, are reimbursed for employees doing fieldwork. Apply for a Census job at the website 2020census.gov/en/jobs.html If you need more information about the Census, visit aarp.org/census. The 2020 Census is crucial, as it will determine Texas’ and other states’ representation in Congress, and it will help determine how funds are spent for schools, hospitals, roads, and more. The Census also serves to

guide decisions by local businesses. Texas is one of only a handful of states that chose not to establish a statewide “Complete Count” Committee to help with boosting awareness and motivating residents to participate in the 2020 Census. Without a state-count committee, Tran adds that it’s even more important that local organizations work to ensure that all families are educated about the Census. Tran encourages all Texans to participate in the Census. She said AARP members and other older adults need to make sure they are not left out of this very important process. Here’s how it works: Between

March 12 and 20, the majority of households will receive a postcard invitation to respond online to the 2020 census. Those who don’t answer will then receive a traditional paper form in the mail. If individuals within a household still do not respond, the Census Bureau will send a census taker to knock on the door and collect the household dwellers’ data. People who live in areas the Census Bureau has determined are most likely to lack broadband internet service will receive a traditional paper form in the first mailing. The Census Bureau digitized the 2020 Census to save money. The last Census, in 2010, cost $10.2

billion and was the most expensive in history. Taking the Census online, at least partially, is projected to save an estimated $5.2 billion. Tran said it’s important to know that those who don’t want to take the Census digitally won’t be forced to do so. “No one has to take the Census online,” she said. Census information can only be used for statistical purposes. The Census Bureau does not share information with the FBI, ICE, or local police. All Census Bureau employees take a lifetime oath to protect your information and can be fined and put in jail for violating the oath. •

Astorga’s passion for nature and the outdoors began as a child in his native country, Honduras. Currently, he is the ranch manager at the Santa Clara Ranch, a photography ranch that hosts nature photographers from all over the globe. He leads and conducts photography tours and workshops at multiple locations in North America, Central and South America, Europe, and Africa. Astorga is also a multiaward-winning wildlife photographer. He has consistently won the country's top professional photography contests, including those sponsored by Wildlife in Focus, National Wildlife Federation, North American Nature Photography Association, Valley Land Fund, and Nature's Best Windland Rice International Awards. Gazebo Dedication Honors Former Texas Trails Cook by Rocio Villalobos

e’s gone, but to his friends and family, he will always be remembered for his kindness, humor, and selflessness. And the community of Pharr’s Texas Trails RV Resort will be reminded of him every time they drive or walk past the park’s racetrack, where a gazebo was donated in memory of Don Sharp. At the dedication ceremony, Don’s wife, Nancy, and friends gathered to honor his memory and to take comfort in one another. He died during the summer while many of his and Nancy’s friends were back home, so once the Winter Texans returned, they immediately started planning something to honor his memory. Don worked as the resort’s cook for three years and was described Don Sharp by his friend, Brenda Knoakes, as “thoughtful” and “generous with his time and resources.” “When he was here, the prep he did for all the events involving food became a production, and he helped to raise a lot of money for our activities here,” Knoakes said. “So we’re dedicating this building to all his hard work.” A couple in the park donated the construction, and they and others worked together to assemble it. The park manager said it’s available for anyone to use, and they’ve already had ice-cream parties and fish fries under the shade of “Chef Don’s Den.” Nancy said she has been overwhelmed with kindness and support since her husband’s passing and is grateful her neighbors decided to do something special to honor him. She and Don moved to the Rio Grande Valley nine years ago, and while it’s far away from

her family in Michigan, Nancy said she’s gained a new family at Texas Trails. “It’s beyond words,” Nancy said. “I never expected it. It makes it feel like home, and I wouldn’t ever think of leaving now. These people did this out of love.” Nancy shared that cooking for others and connecting people over meals had always been Don’s passion and that, to him, it hardly felt like work. Prior to retirement, Don served as a cook during the Vietnam War for two tours. After returning, he opened his own catering business then worked as a cook for Michigan’s Department of Corrections. They spent 43 years married, and Nancy said her husband lived life to the fullest. He had an adventurous spirit and tried scuba diving, and he was well known in their Michigan community for his involvement in Lion’s Club. Knoakes knew Don for the three years he lived at the park and said he’s one of the best cooks the park has ever seen, adding his legacy will forever be remembered. “Everything he did…he was a perfectionist, and he wanted every last detail to be perfect,” Knoakes said. After everyone had the opportunity to share some words during the dedication of Chef Don’s Den, Nancy played the song “Angels Among Us,” which contains the following lyrics: I believe there are angels among us…they come to you and me in our darkest hours to show us how to live, to teach us how to give, to guide us with a light of love. •

An Abundance of Fresh Sounds and Nostalgic Favorites in Upcoming Harlingen Concerts Special to Welcome Home RGV

ith the Winter-Texan season in full swing, Valley calendars are chock full of fun festivals, special events, and live entertainment. Harlingen Concert Association (HCA) also is busy, gearing up for four outstanding shows in February and early March. All HCA shows are in the 1515-seat Harlingen Municipal Auditorium, 1204 Fair Park Boulevard, and begin at 7:30 p.m. An exciting young group, Sons of Serendip, will take the stage Thursday, February 6, creating beautiful music through the use of harp, piano, cello, and voice. Serendipity brought these gifted musicians together while graduate students at Boston University. They’ve been gaining popularity since appearing on season nine of America’s Got Talent as finalists and moving on to America’s Got Talent: The Champions in February 2019. Sons of Serendip now has three successful albums to its credit and a very dedicated following. Their repertoire ranges from standards like “Moon River” and “Fly Me to the Moon” to pop hits, such as “Stop in the Name of Love” and “Signed,

Sealed, Delivered, I’m Yours.” The quartet loves to mix things up for each performance and engage audiences with their creative and emotionally stirring arrangements, as well as original compositions. Dan Miller’s Cowboy Music Revue rolls into Harlingen next, with an entertaining variety show Friday, February 21. This talented group from the award-winning Buffalo Bill Center in Cody, Wyoming, has been featured on RFD-TV, The Travel Channel, ESPN, and GAC. Their music ranges from Americana and Western to bluegrass and gospel. Nostalgic favorites, such as “Home on the Range” and “Happy Trails,” are a regular part of the show, along with songs made famous by Johnny Cash, Patsy Cline, Dolly Parton, George Strait, and other countrymusic stars. Wednesday, March 4, the auditorium will rock with the sounds

of a lively, youthful Beach Boys tribute band. Sail On plays all of the Beach Boys’ classic hits, plus numerous treasures from the band’s brilliant extended catalog. With over 80 shows a year, the group is the most booked Beach-Boys tribute band in the world. As band member Paul Runyon noted in an August 2018 review, Sail On differs from other tribute bands, many of which don wigs and costumes and try to imitate the original groups. Instead, Sail On focuses on the music. “We

try to give the essence of the group, right down to the harmonies and playing,” Runyon said. The concert will be completely live and rich in detail. The HCA season closes Friday, March 13, with Burlap to Cashmere, an outstanding folk-rock trio that draws from many influential artists, including Simon and Garfunkel, Van Morrison, James Taylor, and Bob Dylan. Over the last five-and-a-half years, we have grown from two full-time volunteers to 22, PLUS regular class instructors who also donate their time and energies helping out around the shop. We have an amazing group of volunteers, and we would like to introduce you to a couple. Meet Aylen. She is a “Shepherd in Training” who has been volunteering here for three years. Aylen is pictured here teaching our friend, Erika, to loom knit. What a fun afternoon that was! Aylen also helps teach crochet and loom-knitting classes for young people. She always jumps right into the day and works with another Shepherd when she is here. Aylen also helps with donation counts in our Donation Chest, displays, and shop upkeep, just like any other Shepherd. She can give you a full tour of the shop any time and help you pick out just the right yarn for

your next project. We do so love our time with her! One of our goals here at The Lamb’s Loom is mentoring the next generation, not only in fiber arts but by encouraging them to see and serve the needs of others. With Aylen, we like to think we are mentoring her and giving her a sense of volunteering. Truth is, her excitement and wonderful attitude inspire the rest of us to keep at it every day!

All Shepherds have regular days they volunteer and do everything from stocking and teaching classes to sweeping the floor. So now you know why, around The Lamb’s Loom, every day is Hug-A-Shepherd Day! Llano Grande Quilting Bee Presents the 11th Annual Quilt Show - A Kaleidoscope of Diamonds Special to Welcome Home RGV

Kaleidoscope of Diamonds is the theme for the Llano Grande Quilt Show being presented Tuesday, January 28, from 9 a.m. to 3 p.m. at the Hynes Event Center, 2215 E. West Boulevard in Mercedes. The Llano Grande Quilt Show is highly anticipated in the Valley each January, and this year is no exception. In addition to the many year-to-year activities, such as the boutique, purse-and-tote drawing, 10 quality vendors, and the informative demonstrations, be sure to see the antique/vintage quilt display and our new display categories featuring the Best Use of Recycled Materials and Unique Umbrellas! And, of course, you can expect to see more than 250 new, never-before-shown quilted works of art. From quilts of all sizes to wall hangings, landscapes, art quilts, table runners, jackets, purses and totes, the Hynes Event Center will be jam packed! The annual Opportunity Quilt provides the theme for the show, and A Kaleidoscope of Diamonds is aptly named. It may be the most stunning, colorful quilt we have ever created. The dictionary describes a kaleidoscope as a harmonic visual composition created through the motion of color and shapes. The

word kaleidoscope is derived from a Greek word meaning beautiful form; an observation of beautiful things. This is a perfect description of the Opportunity Quilt and the Llano Grande Quilt Show! The quilt is 104” x 108,” multicolored in diamond shapes with a lightweight wool batting. Tickets to win this quilt are $1 each or 6 for $5 and can be purchased from any Bee member or at the show. n the spirit of the Christmas season, the Paradise Park-McAllen Activity Committee hosted a reverse Advent food drive for Park residents. Each day during Advent, people were encouraged to drop off a specific food item at their collection point or to donate cash. The list of items was

determined by asking the staff at the Food Bank what they needed most. After Christmas, volunteers delivered 515 food items to Food Bank of the Rio Grande Valley in Pharr, along with $220 cash that was donated. •

he holidays have come and gone, and soon we must say goodbye to “Sand-ta” and all the other “Christmassy” sculptures under the Ferris wheel. According to our counters, some 70,000 visitors have walked through our tent, and this during two of the slowest months of the year! But Lucinda Wierenga and her friends at Sandy Feet Sandcastle Services hate to see a good sandpile go to waste, so they have decided to see if they can extend the sandy holiday love for a bit longer by re-carving some of the existing piles into something more… “Valentiney.”

The re-carving commenced once the tent came down (around January 13). Some of the existing sculptures, i.e. Turtle Lady and New Year’s Baby, will be fenced off and maintained. If they are left untouched, they could be viewed and enjoyed by many throughout the Winter-Texan season. They also plan to leave Santa’s Throne largely intact and open so anyone can use it for a special photo opportunity. We are actively seeking sponsorship for the new sculptures and our Wall of Valentines. Interested businesses and individuals can visit Sandcastle Island, Inc., a registered 501(c)(3)

Like Father, Like Son by Rev. E.B. Holschuh

n his 1988 book, A Cradle of Haloes: Sketches of a Childhood, Elton John’s nearly career-long lyricist, Bernie Taupin, offers a number of telling glimpses into his formative years. One in particular caught my attention: “I'm proud to say that my parents never struck me in anger, although God knows they had cause. Whenever one of us did something to displease them, it was always the silent treatment that we received and, believe me, there was nothing worse. When you're used to parental love, the way we were, alienation from that love in any form is crushing.” Sadly, many in the world have never experienced parental love; however, as awful as that is, even worse are the multitude who were forsaken (or felt forsaken) by one or both parents as children, even only for brief periods, as a response to disobedience or disappointment. I can’t imagine the shoulder of a parent in the life of a child--the very shoulder meant to cry on--turning cold. I can’t imagine what that kind of suffering feels like. But I know it’s real. And in our broken world, it happens.

“The shoulder of our God is never a cold one but rather a place to rest a weary head. Or shed a tear."

Now that Christmas is fading in the rearview mirror, the presents have all been opened, many now already returned, exchanged for something better, or re-gifted. The baby Jesus and his crèche-mates have been boxed up and returned to the crawlspace to sleep in heavenly peace until Walmart reminds us in August that it’s about that time again. And so we move through the rest of the Christian calendar year, oblivious to the baby Jesus who’s growing so quickly. By the time you read this, he will have had his second birthday, escaped death at the hands of a psychotic, half-breed king (Really!... check out the second chapter of Matthew’s Gospel), and has already emerged from the Jordan River under the watchful eyes of a doting parent, God the Father, who was moved to exclaim about Jesus from heaven,

“This is my beloved Son, with whom I am well pleased!” (See Matthew 3.) When the calendar turns to the Friday before Easter, the Son will cry, “My God!” not “My Father!” and God will make no reply (Matthew 27). One commentary notes: “With his dying powers, he cries to God and now no longer sees in him the Father, for a wall of separation has risen between the Father and the Son, namely the world’s sin and its curse as they now lie upon the Son. Jesus thirsts for God, but God has removed himself.” This turns Taupin’s statement (“When you're used to parental love, the way we were, alienation from that love in any form is crushing.”) into a profound understatement. It’s been said that the closest experience to hell on earth is to be abandoned by someone you thought loved you. Divorce, desertion, rejection. Jesus knew this hell. Yet, from the cross, he cried out, “My God, my God, why have you forsaken me?!” This is a lesson in faith, believing in God even when we don’t feel Him. I’m certain that someone reading this suffered alienation from parental love, but that was never God’s intention! It was love that set the baby in a manger on a collision course with God’s wrath, to suffer and die for you and me, in our place. We human children have, in Jesus, a Savior who bore the pain of parental alienation so we would never have to! The shoulder of our God is never a cold one but rather a place to rest a weary head. Or shed a tear. Like Father, like Son. •

Years later, in 1969, a mysterious murder in a nearby swamp draws the attention of the local sheriff…and the community. Their prime suspect is the wild, beautiful, and misunderstood creature known as “The Marsh Girl.” Written by retired wildlife scientist Delia Owens and first published in 2018, Where the Crawdads Sing is at once a murder mystery, a beautiful tale of quiet solitude, and a poignant story

of coming of age in close communion with nature. of my favorites are those big, shiny green avocados. This delicious dip is made with a ripe avocado; choose your favorite type. It’s good with sturdy dippers, such as “scoops” or thick tortilla chips. •

Zippy Avocado Dip Submitted by Sandy Olson

• 1 large ripe avocado • 2 tablespoons sliced green onion • 1 tablespoon lemon juice • 1 cup real mayonnaise, not salad dressing • ¼ teaspoons each, hot pepper sauce, celery seed, and dry mustard • 1/8 teaspoon white pepper • 2 tablespoons real sour cream, not low-fat • 1 teaspoon white sugar • 2 teaspoons Worcestershire sauce • 2 teaspoons soy sauce Cut the avocado in half and remove the pit. Using your fingers to loosen the skin, insert a teaspoon gently between the flesh and the skin to slide the avocado out of its peel; that way you don’t lose any of the delicious “meat.” Dice the avocado and place it, along with the onion and lemon juice, into a blender. Process until smooth. Add the remaining ingredients and process with a few pulses until well mixed. Scrape into a serving bowl, bury the pit in the dip (this is supposed to keep it from turning dark), and cover tightly with plastic wrap. Chill thoroughly; serve with dippers. Serves 8-10 • 6 pound brisket of beef • 3 teaspoons celery salt • 3 tablespoons Liquid Smoke • 3 tablespoons Worcestershire sauce • 3 teaspoons garlic salt or powder • Pepper to taste • 3 teaspoons onion salt Cover brisket with the first four ingredients. Let this stand refrigerated overnight in an oven baking bag. The next morning, cover with the remaining two ingredients. Bake at 275 degrees for 5 hours. Barbeque Sauce: • 1 cup ketchup • ¼ cup Worcestershire sauce • 1 teaspoon salt • 2 cups water • 1 teaspoon celery seed • 1 onion, chopped • ¼ cup brown sugar • ¼ cup vinegar Mix all ingredients together and boil 15 minutes. these cooler months, incessant baking is one of my favorite activities. I’m always looking for a fun, new bar cookie to bake for my friends. This one is not exactly new but it is a classic that EVERYONE will love, I promise. It will be perfect on football Sunday for the playoffs for that sweet finish after the nachos and queso have disappeared or just as an afternoon snack with an ice cold glass of milk. Happy baking and snacking! Bon Appétit! • • 2 sticks unsalted butter, at room temperature • 1 cup light brown sugar, lightly packed • 1/2 cup granulated sugar • 2 teaspoons pure vanilla extract • 2 extra-large eggs • 2 cups all-purpose flour • 1 teaspoon baking soda • 1 teaspoon kosher salt • 1 1/2 cups chopped walnuts • 2 1/2 cups semisweet chocolate chunks (not chips)

Preheat the oven to 350 degrees. Grease and flour an 8 x 12 baking pan. In the bowl of an electric mixer, cream the butter, brown sugar, and sugar on high speed for 3 minutes, until light and fluffy. With the mixer on low, add the vanilla, then the eggs, one at a time, and mix well, scraping down the bowl. In a separate small bowl, sift together the flour, baking soda and salt. Turn the mixer on low and slowly add flour mixture to the butter mixture. Turn the mixer to the lowest speed and gently mix in the walnuts and chocolate chunks. Spread the batter evenly into the prepared pan. Bake for 30 minutes – no more than that. These bars will be dry if they are over baked. Cool completely in the pan and cut into bars.
