You see, I’ve lived in McAllen all my life, so I’ve never know life without our winter visitors. How lucky am I? I love the Rio Grande Valley and all it has to offer, so marry that with my love of Winter Texans and, quite frankly, I created a dream job for myself! Everything we do is done with love, and it gives me great joy to have found such a profound purpose in life. You all, whether you know it or not, are such an integral part of why the Valley is so unique! It wouldn’t be the same without you; it would, in my opinion, be quite boring! You show us how special the Valley is from a fresh set of eyes--full of wonder and excitement--much like a child at Christmas time. ayor’s Wellness Council, the health and wellbeing council formed by the City of McAllen as part of its ongoing efforts to change the perception and image of McAllen as an obese and unhealthy community, has officially launched its website, livewellmcallen.com, as a one-stop resource for health-and-wellness information. The council was formed as part of the City of McAllen’s participation in the It’s Time Texas Community Challenge, and this website will help in this ongoing initiative by promoting and providing information regarding health and wellbeing. One active feature of the website is a calendar listing of health-related activities. Additionally, anyone hosting a wellness activity of any kind--physical activity, health-related information or any food, spiritual, financial or other type of event--may submit the event for consideration to be posted on the website, regardless if the event is taking place in McAllen or not.

“The idea is that there are so many wellness journeys that we all can take, and we want the community to recognize all aspects of healthy living, which is why this council’s motto is ‘Live Well McAllen.’ We want everyone’s goal to be happy and healthy by living well,” said McAllen Mayor Jim Darling. “We also recognize that there are so many great health, active-living, and well-being events and activities taking place throughout the Rio Grande Valley. We don’t want to limit people’s opportunities to start on their wellness journeys because the event takes place outside of our city limits.” While the site has officially launched, it is still a work in progress and will need the entire community to build the calendar by submitting events. In addition, WHRGV hosts monthly meetings for these groups throughout the year to discuss topics of interest, the changing dynamic of retirees, and how to market to the WinterTexan demographic utilizing modern tools, such as digital marketing and social media. “I think it’s important--and our duty--to elevate the quality of information we provide and to share it in ways that accommodate for personal preferences,” Collier said. “We are constantly looking for the best ways to provide information.” This includes moving into the mobile-app genre, with the Welcome Home RGV smart-photo app, which provides information on events, activities, and eateries in the palm of your hand. While Welcome Home has always promoted the best of what the Rio Grande Valley has to offer, Collier recently created a travel division. “Winter Texans love to explore not only the RGV but places accessible from South Texas,” she said. Travel by Welcome Home facilitates group excursions to sites like Mexico City, Caribbean cruises out of Galveston, Texas, and historic tours of San Antonio, just to name a few of the exciting adventures Welcome Home now offers. WHRGV continues to expand services to accommodate the needs of the Winter-Texan community. One service involves providing support for the resort parks’ 1st Responders program. Welcome Home hosts monthly meetings and facilitates training in CPR and first aid and works with local hospitals to provide the 1st Responders with educational opportunities that address the medical resources available to local seniors. While winter visitors are a primary focus for Welcome Home, the team also acknowledges the growing ‘Converted-Texan’ population, folks who have decided to call South Texas home year round. Recognizing the economic impact ‘Converted Texans’ have on the region, a new focus for Welcome Home is to create events and experiences throughout the Winter-Texan off-season, such as Summer Supper Club, a weekly meet-up at participating local restaurants during slower hours of operation. This allows ‘Converted Texans,’ a term Collier coined, to mingle throughout the year rather than just when their Winter-Texan friends roll into town. The team at Welcome Home RGV recognizes the importance of Winter and Converted Texans on the

Burlap to Cashmere Brings Folk Rock of the ‘60s and ‘70s Special to Welcome Home RGV

Add in James Taylor, Van Morrison, and some elements of Greek folk music, and the result is the hauntingly beautiful, unique sound of Burlap to Cashmere. Harlingen Concert Association (HCA) is proud to bring this exciting folk-rock trio to the Valley this season for one show, Friday, March 13. Tickets are on sale now at the Harlingen Municipal Auditorium Box Office, 1204 Fair Park Boulevard, and online at HarlingenConcert.com. Singer-songwriter Steven Delopoulos and his cousin, John Philippidis, have been playing music together their entire lives. Burlap to Cashmere was born out of a theater project Delopoulos wrote and performed in college. Their childhood friend, Theodore Pagano, joined the group shortly after the cousins began gigging in legendary Greenwich Village coffee houses like The Bitter End in the mid-90s. Burlap to Cashmere quickly became known for their energetic, live show, introspective lyrics, and remarkable musicianship. Their first full-length CD in 1998, Anybody Out There, sold nearly a half-million records, propelling Burlap to stardom and resulting in the release of a live album and an extensive tour schedule across the U.S. and through Europe and South America. The band was proud to perform for U.S. troops in the Middle East and play before the Pope in Rome to a crowd of over three million. After an extended hiatus, the group reemerged in 2011 with a self-titled reunion album. Burlap to Cashmere was highly praised in numerous media outlets, including USA Today, New York Post, and American Songwriter Magazine. “Mature, complex, and sophisticated,” declared critic Glenn McCarty, with traces of Simon &

to Harlingen Garfunkel, Donovan, and the Gypsy Kings but “as refreshingly original as it is heartfelt.” NPR host George D. Graham hailed it as “first-rate, both lyrically and musically” with vocals “in the spirit of the folk-rock days, including their nice two-part harmonies.” Now, Burlap to Cashmere has put together a show that takes audiences on a journey back in time to the magical stages of Greenwich Village where it all began. Celebrating folk music from the ‘60s, ‘70s and beyond, they shine a light on their influential roots with firstrate renditions of folk-rock classics, such as “The Boxer,” “Like a Rolling Stone,” “Fire and Rain,” and many others. Harlingen Concert Association has been bringing internationally acclaimed touring artists to the Valley since the 1930s. This all-volunteer, nonprofit organization is committed to enriching the cultural life of the Rio Grande Valley through live performances. The Lamb’s Loom collects donated knit and handmade items and then distributes them to people in need all over the world. Our Donation Chest is at the heart of all we do. There are people who will receive their gift of warmth from Deep South Texas (And we do have a lot of warmth to pass around!), and that is a wonderful thing. One Hundred Years of Elegance Continues by Alden Moore

magine playing golf with a 98-yearold woman who still walked the course. Imagine knowing a 100-year-old woman who still travels to exotic places around the globe to have a pig roast. Palm Resaca Mobile Home Park’s own Helen Grant is such a person. Helen was born a hundred years ago on December 1, 1919, in Hillsboro Wisconsin. She was the second of 11 children born to Alois and Cynthia Sosinsky. Being well-educated, hardworking farmers, they were able to survive the Great Depression of the 1930s. “My dad was one of the few people who didn’t lose his farm because he could build and fix things,” said Helen. “He was a very creative man and good at problem solving.” Throughout school, Helen got straight A’s and was the valedictorian of her high-school graduating class in 1937. “I had to spend a lot of time helping out at home, so I didn’t get involved in many social activities at school,” Helen said. After graduation, she received a scholarship to the University of Wisconsin. Growing up in a big family taught

Helen a lot about life. “You learn how to get along with others and accept that you don’t always get your own way. I realized just how hard my parents worked to raise their children,” Helen said. She managed to pay for her own room and board while in college, working several different jobs. “I got paid 25 cents an hour, but that went a long way in those days,” she said. Helen eventually got a fellowship with Dr. C.G. King, who was recognized as the discoverer of Vitamin C. Helen met James Grant at the university, and they married during their senior year. James became an

electrical engineer for Westinghouse in Pittsburg, and Helen worked in a chemistry lab that made war products. After transferring to Chicago, Helen got a job in a biochemical research lab at the Illinois Institute of Technology, where she worked for 10 years. Then she and James moved to Milwaukee, where she got a job as a blood chemist at Mount Sinai Hospital. In 1952, Helen and James had a son, Tommy, a bright young lad who taught himself to read before he went to kindergarten. The couple was ONE HUNDRED YEARS OF ELEGANCE CONTINUED ON PAGE 19 >>

Couple Continues Giving for Thirtieth Straight Year Special to Welcome Home RGV

teve and Jean Fisher met 30 years ago in Richmond, Indiana. Jean had been the CEO of a haircare company based out of New York City. Managing 15 salons in the NewYork area, Jean made a mark during her 11 years in the hair-care industry. She won many awards, including one of the company’s highest, the Most Outstanding Performance Award, which was open to all of their employees in seven countries. Deciding to chase here dreams, Jean changed her career and decided to drive a semi across the country. After putting herself through truck-driving school, she was employed by CRST International. This is how she met Steve, who was driving for the same company, based out of Cedar Rapids, Iowa. Steve had been with CRST since 1984 when he started his career driving for the over-the-road carrier. In September of 1989, Jean and Steve met at a terminal in Richmond. They teamed up, and for 15 years, they traveled the United States, winning many awards. Steve became a member of the Two-Million-MilePlus Club and Jean a member of the One-Million-Mile Club, one of the few

female drivers to earn this award. Together, they were nominated by CRST to be one of the first husbandand-wife teams in the nation to be on the America’s Road Team, one of the trucking industry's highest achievements. When Steve had 20 years in the industry, he said to Jean, “We've been teaming together 15 years, and I'm ready to change careers. We've seen the country and have many memories on the road and have left our tracks in

many places.” Steve went into road construction and Jean into retail. Christmas was always one of the Fishers’ favorite times of the year. Jean grew up in foster homes and was told by the people in the last home she was in on a farm in Upper New York that she would always be a “welfare brat” and “a nobody.” “I guess she proved them wrong,” Steve always tells people when they ask about Jean’s past. She always

said, “Someday, I hope I come back here with a car long enough that when I turn into the driveway, it is still out on the road.” This is one of the reasons the couple gives back and donates to a charity each year. They have been Winter Texans for four years, the first at the W & I Resort in Mission and the last three on South Padre Island. Food Bank RGV Hosts Farm Dinner 2020 January 25

he Food Bank of the Rio Grande Valley will be hosting its annual Farm Dinner from 5:30 to 9:00 p.m. Saturday, January 25, at the Food Bank RGV, 724 N. Cage Boulevard in Pharr. Proceeds from the Farm Dinner will help support the Gem Valley Farm, a community garden at the Food Bank RGV. Tickets for this popular fundraiser are available at foodbankrgv.com and is expected to sell out. A Night in Tuscany will be the theme for the evening that will begin with a cocktail hour on the farm, followed by an elegant, five-course meal inside the Food Bank RGV. Chef Larry and Jessica Delgado of house.wine.+bistro., SALT: New American Table, and Salome on Main will prepare the gourmet dinner with all locally sourced and natural foods. “Ever since I found that many people in the Valley don’t have access to food,” Chef Larry said. “I felt it was our duty to help in any way that we could. participating in Food Bank RGV events where we can donate time or services – we just want to support the Food Bank RGV and get people fed.” Chef Larry and Jessica Delgado have partnered with the Food Bank RGV for the fourth year to help support the Food Bank RGV and the Gem Valley Farm. The Farm Dinner fundraiser will help Gem Valley Farm continue to grow and expand its program to teach participants about self-sustainability, natural chemical-free farming, and healthy nutrition. Future goals of the website will be to help gauge the true health of the community with benchmark data and other metrics. “For the City of McAllen, we feel that the label of being an obese community is not entirely accurate,” said Jolee Perez, director of employee wellness for the City of McAllen. According to Perez, the data used in most obesity studies is gathered from medical claims processed through insurance companies. For the Rio Grande Valley, this typically represents those suffering from chronic illnesses related to obesity. Claims for healthier individuals are typically only a small portion of overall claims because many healthy individuals are rarely seen in doctors’ offices. The studies do

not gauge the healthy activities of the entire community or represent the larger population that wouldn’t be represented solely by using claim information. “For the past two years, the City of McAllen has won the It’s Time Texas Community Challenge and, in fact, last year had the most points of any city in Texas. This competition measures the healthy activities of an individual. That tells me that McAllen does indeed live well,” concluded Perez. The It’s Time Texas Community Challenge began Monday, January 6, and runs through Sunday, March 1, at 5 p.m. Communities earn points when registering as individuals of their city and can also earn points for their school district and place of employment. Once registered, participants earn points by snapping healthy selfies of themselves working out and eating healthy, such as eating a salad or an apple or drinking water. Compulsory Measures Exhibit Opens

at the International Museum of Art & Science Special to Welcome Home RGV

n a fast-paced society heightened by the busyness of the holiday season, Compulsory Measures, a new exhibit at the International Museum of Art & Science, encourages us to slow down and take time to examine the current world around us. Visitors to Compulsory Measures will see the work of eight outstanding artists and over 30 works of art that entices viewers to pause and reflect on pressing issues faced by our civilization today. Jorge Benitez, Kristy Deetz, Al Denyer, Joan Elliott, Reni Gower, Steven Pearson, Jennifer Printz, and Tanja Softić explore issues such as environmental crisis and global marginalization through a range of mediums. including painting, drawing, collage, and printmaking, prompting museum visitors to take a closer look and to let the intricate patterns made through repetitive measures provoke contemplation. Compulsory Measures saw its birth in the panel of “Obsessive Compulsive Disorder vs/ Organized Chaos Delivers,” co-chaired by Reni Gower and Kristy Deetz, for the 2017 Southeastern College Art Conference.

As the participants discussed how an artist can provide an antidote to our overstimulated and chaotic present-day world, these eight artists came together over their shared interest in creating complex patterns and representational systems, by hand, using painstaking methods. These artworks resist visual skimming and invite the viewer to examine them more deeply, both closeup and at a distance. As such, Compulsory Measures took off and has been on display at the Esther Prangley Rice Gallery in Westminster, Maryland, The Art Museum at the State University of New York, in Potsdam, New York, and for the first time in South Texas at the International Museum of Art & Science in McAllen, now through May 3. Compulsory Measures is included in the cost of general admission and is free for IMAS Members. WIC and EBT cardholders can visit the museum for $1 per person. Admission is free on Sundays, thanks to the support of the H-E-B Tournament of Champions. The exhibit is organized by Wylie Contemporary, Inc., and supported by CARATS. •

toys to the Methodist Church in Port Isabel for their Angel Tree. One day going into a Walmart in Brownsville, Jean and Steve saw a sheriff’s deputy outside the store with a sign on a cart reading, “Collecting toys for the Cameron County Sheriff’s Department Toy Drive.” Seeing that there were only two toys in the cart, they asked the deputy a few questions and went into Walmart. Jean and Steve looked at each other, and Jean said, “You know what to do.” Steve went to the boys’ toy aisle and Jean to the girls’ toy aisle. Seven shopping carts full of toys later, they went to the deputy and told her all of the toys were for the toy drive. She was overwhelmed. The couple had more errands to run, and one of them was at another Walmart. They felt they wanted to do more as the deputy told them the toys were for the neediest of the needy in the Brownsville area. Steve and Jean filled 15 more carts with toys. With more toys then would fit in their pickup, Steve told the Walmart associate he would call 9-1-1. The 9-1-1 dispatcher asked him what the emergency was, and Steve told her it was not an emergency. He told her he and Jean had some toys for the toy drive. She said, “Thank you very much” and said some deputies would

soon be there. Tuesday, December 17, the sheriff invited the Fishers to the Sheriff's Department to be there while a couple of TV-station and newspaper reporters interviewed him and took pictures of volunteers wrapping the gifts that had been donated. The sheriff was overwhelmed by the Fishers’ generosity. Over 1,000 toys and a couple hundred items of new clothing totaling over $13,000.00 were donated by the Fishers. One of the reporters asked the Fishers why they do this. Jean replied, “If we can impact a child's life or an adult’s life, that's what's really important. It is not about the giving or the getting; it is letting them know that someone cares.” •

McAllen Wind Ensemble to Premier New Composition for Concert Band Special to Welcome Home RGV

he McAllen Wind Ensemble has been given the honor of premiering the composition “Angels in the Sky” by composer Aaron D. McMichael February 11. McMichael composed the piece specifically for the McAllen group as they celebrate their 45th year of performing in the Rio Grande Valley. The February 11 concert, sponsored by Thurmond Eye Associates, is titled “Something…Old, New, Borrowed, and Blue.” The event will feature a musical potpourri of concert-band works from each of the categories of the old wedding rhyme. McMichael’s works definitely belong in the “something new” category. Even though he has started composing seriously in just the last three years, McMichael’s parents started him in music at the age of five. When he started middle school, he switched to trumpet and was an instant success. After graduating from high school, he earned a scholarship at Jones County Junior College in Ellisville, Mississippi. There he met the composer Robert W. Smith, who extended a full scholarship to him to Troy State University. When McMichael graduated in 2003 with his bachelors’ degree, he began teaching

at Victoria High School. Since then, he has taught at several high schools and middle schools in districts across the state of Texas, including Brownsville ISD, Mercedes ISD, San Benito ISD, Mission ISD, and Victoria ISD. After graduating with his masters’ degree in 2010, McMichael dabbled in writing marching-band shows for Progreso and Weslaco high schools. Time passed, and in 2018, he decided to pick up the mouse,

computer, and midi keyboard to start writing again. McMichael’s first written song was a piece called “I Love Donuts” for a middle-school band. In April of 2019, he submitted music to the Texas Band Masters Association and was contacted by officials to program his new music. His piece, “Winter Storm,” was selected to be performed at the Indiana Music Educators Convention. Since July, McMichael has written

15 compositions, and more are in the works. When he is not writing music, he focuses his attention on his son, wife, house duties, working, and working out. The McAllen Wind Ensemble is excited to bring McMichael’s music to the Rio Grande Valley. The February 11 concert will also feature guest artists Christopher A. brilliant botanist, Benito Trevino, will present on the many endangered and threatened species of plants and animals in the Rio Grande Valley. South Padre Island Kite Fest - It's Time to Tie One On (Again)! Special to Welcome Home RGV

t's that time of year again. Time to head to South Padre Island and watch kite fliers from around the world as they 'tie one on' for a weekend filled with amazing kites and performances. January 30 and 31 and February 1st (Thursday night, Friday, and Saturday) SPI Kite Fest will descend once again on the town of South Padre Island. The festival kicks off Thursday evening with Indoor Kite Performances held at the SPI Convention Centre from 6:30 to 8:30 p.m. The indoor-performance lineup boasts an array of internationally known kite fliers. John Barresi holds 31 national championship titles and is the 2018 Open Individual Unlimited Ballet champion. John will be joined by the 2014 AKA National Indoor Champion, James Fletcher (Baltimore, Maryland), as well as many other talented fliers--Mario Di Lucca and

Steve De Rooy (Victoria, British Columbia), Jeremy Wharton (Andover, Hampshire, UK), Spence Watson (SeaTac, Washington), Paul de Bakker (Oak Harbor, Washington), Paul Lamasters (Germantown, Maryland), Eli Russell (Medford, Oregon) and Brett Marchel (New Boston, Michigan), to mention just a few. Helen is such a delightful person to talk to. You quickly realize she is an intelligent, independent person who possesses strong values. She is definitely an inspiration to others. “I enjoy living here in the warm weather with all the friends I have

made,” Helen said. I asked her if living in Palm Resaca six months a year has helped her to live so long. She thought a moment, then smiled at me and said, “I don’t know, but it hasn’t caused my early death.” •

devastated when Tommy died from a congenital heart condition when he was only seven years old. Helen realized she would have to move on with her life, so she became a school teacher. “I wanted to work with young children who would be the same age as my son,” Helen said. She poured her heart and soul into teaching and twice made the cover of Milwaukee Journal because of innovative things she would do in the classroom to motivate her students. She once had kids create art on pieces of muslin and then write stories. “I put all the pieces together and made a dress, which I then wore,” said Helen. “Needless to say, it got a lot of attention.” After Helen and James retired, the couple eventually moved to Palm Resaca Mobile Park in Brownsville in 1979 for the winter because James’ brother, John, already lived there. Helen has been a member of the board of directors and the Rec Club and

continues to be involved in many park activities. While they were still young, Helen and James helped start a travel club with several of James’ engineering friends. Each year, members would pick a destination and travel to different parts of the globe. “We always end our excursions with a pig roast,” said Helen. After 42 years, this club is still going strong and now has over 60 members. Helen can remember riding in a Land Rover at dawn among the wild animals of Africa. She has walked the Great Wall of China, eaten “the best lamb chops in the world” in New Zealand, visited Paris and London, walked on the ice of Antarctica, and even visited a brothel in Las Vegas. “We have been to all seven continents and returned with wonderful memories,” Helen explained. She continued traveling with the group, even after James died from mesothelioma in 1993.

ove is a word we use a lot to describe our affection for things, and in America, we love a lot of things. We love our kids, love our spouses, love our freedom, love our sports teams, love chocolate, and we love our dogs. We love a lot of things. Do you ever think we have overused the word love so much that we no longer really know what love is? Maybe, in your lifetime, you have wondered what love really is. Campus Knitting Club Donates Homemade Scarves to Local Nursing Home Special to Welcome Home RGV

tudents from Raul Yzaguirre Middle School's Knitting Club in the Pharr-San Juan-Alamo School District visited with residents from the San Juan Nursing Home prior to the holidays to donate dozens of scarves. It took the RYMS Knitting Club about two months to make a total of 50 scarves. According to Club Sponsor Sahara Hedrick, the school has been doing this work for about 11 years as a way to brighten up someone’s day during the holidays. “My students are going above and beyond by not only learning how to knit but donating their fruit to those

that are less fortunate,” said Hedrick, a Spanish teacher at Yzaguirre Middle School. “It is such a rewarding experience to see my kids knit. With each knot and chain, I know they are leaving a great part of their heart in their scarves for those who need a warm gesture in their life.” During their visit, the students also got to spend time with the residents of the nursing home and hear from them as they shared stories about their lives and families. •

Texan Wednesday is a program that welcomes Winter Texans and retirees to enjoy an afternoon at the Museum of South Texas History in Edinburg. The program will feature a presentation titled Louis de Planc, followed by a highlight tour of part of a museum e x h i b i t . The presentation starts at 3 p.m. Wednesday, January 22, in the Courtyard Gallery. During the 19th century, the Rio Grande Valley experienced tumultuous wars and devasting hurricanes. Still, a diverse and cosmopolitan community emerged on both sides of the Rio Grande. Documenting it all was Prussian photographer Louis de Planc, who is famous for photographing historic figures and the everyday people along the Rio Grande. Historical interpreter Camille Marie will discuss

the exciting life and family of Louis de Planc and the documents and photographs de Planc left behind on the Rio Grande Valley. Winter Texan Wednesday is included in the fee for regular m u s e u m admission. No reservations are required. Resort/park groups are w e l c o m e to enjoy this program. y wife and I recently stopped in at a South-Texas beach bar. There was live music, dancing, singing, and beverages galore. The place was packed, and everyone was having a great time. We joined the crowd and stayed for two hours. Oh yes, it was also spring-break season. You can imagine the scene. Actually, no, maybe you can’t. The odd thing was that there was no one in the bar under 65 years old. Many were significantly older. It was strange. This was no random accident. All of

these people came to that bar because they wanted to be there. They wanted to have a good time and enjoy the music and comradery. That same idea was put vividly into my mind a year or so ago when I accompanied my mother on a visit to her friend who lives in an assistedliving facility. The place had a couple musicians providing entertainment in the lobby. It was a fine show of mostly old musical standards, though I couldn’t help but notice that the audience seemed bored. It was pleasant music, but it wasn’t stirring their souls. After the couple finished and we were having coffee around the tables, I asked the ladies present if they preferred a program like we had just heard or if they would prefer some old rock ‘n roll, maybe like Elvis. My

mother’s 95-year-old friend perked right up and said, “We may be old, but we aren’t dead. Give us Elvis.” The image in my mind of old folks did not include rock-‘n-roll party scenes. Old folks are supposed to be calm, dignified, and maybe a little boring. Their music should be the Ray Conniff Orchestra, Mitch Miller, or maybe a polka or some old country western. Elvis? No way! At some risk to my own reputation, I have started taking a one-man, oldtime-rock-‘n-roll show to some senior facilities. They love it. The toes tap, the heads bob, and no one falls asleep. It’s great. I have learned that we older folks still like our fun. Don’t be making assumptions about our age changing who we are. We still want to boogie. I’m just sayin’. •

Almost everyone likes deviled eggs and almost everyone has a different way of making them. This one is hot, with raw chili peppers. If you like less heat, use a mild chili instead. TAM jalapeños have no heat. •

Fiery Eggs and Cheese Submitted by Sandy Olson

• 6 extra-large eggs, hard-boiled, peeled, and cooled • 3 tablespoons finely shredded sharp Cheddar cheese • 1-2 tablespoons real mayonnaise, not “salad dressing” • 2 tablespoons fresh, snipped chives, plus more for garnish • 1 small red, hot chili pepper, seeded and finely chopped • Salt and freshly ground black pepper to taste • Lettuce leaves to serve Cut the eggs in half lengthwise and carefully scoop out the yolks into a fine sieve or strainer. Put the egg whites aside for the moment. Rub the yolks through the sieve so there are no lumps as they fall into a small bowl. Add the remaining ingredients, except the egg-white halves. Mix well, combining all of the ingredients. Adjust for seasoning. Spoon the filling into the egg-white halves and arrange them on top of the lettuce leaves on a serving platter. Sprinkle with a few more chives, if desired, for garnish. hot peppers. Warm the salsa before serving. Serves 12 • 3 large Ruby Red grapefruits • 1 tablespoon sugar • 1 (16 oz.) can apricots • ½ cup chopped pecans • 1 (3 oz.) box lemon gelatin • Poppy seed dressing, optional Cut grapefruit in halves. Remove pulp from rind so rind remains intact. Cut enough segments to fill one cup. Squeeze enough juice for 1 cup. Drain juice from apricots; reserve. Add grapefruit juice to apricot juice, which will be two cups total. Heat juice; add to gelatin and sugar. Cool slightly. Mash apricots. Add apricots, grapefruit segments, and pecans to gelatin mixture. Fill empty rind halves with mixture; set in pan in refrigerator to congeal. To serve, cut each half in quarters. Serve on fruit leaves or English ivy leaves. Poppy seed dressing poured over each quarter is a nice addition. •

Serves 1 • 1 Texas red grapefruit Cut a grapefruit in half; loosen each section with a sharp knife. Cover with desired topping and place 3 to 5 inches from heat source. Broil until bubbly, about 3 to 6 minutes. Several topping ideas are: brown sugar and cinnamon, maple or fruit-flavored syrup, melted butter mixed with chopped nuts, brown sugar and coconut, brown sugar mixed with your favorite liqueur or flavoring. Try brandy, sherry, kirsch, Grand Marnier, or amaretto. Broiled grapefruit is quick and easy. It is delicious as a breakfast treat, a light appetizer before dinner, or even a refreshing dessert. • The Junior League of McAllen, Inc. envisions significantly improving the quality of life of the children and youth of our community by preserving the innocence of childhood, encouraging responsibility, and promoting a safe environment. Roasted Cauliflower Soup

I probably don’t offer enough vegetarian recipes so here I present to you

a lovely soup full of flavor and depth. In this soup, cauliflower florets and leaves are roasted in the oven with cumin and coriander until browned. The vegetable’s deep, nutty flavors are released by the intense heat. Reserve some roasted florets and leaves for garnish, then simmer the remaining cauliflower mixture with turmeric and potato, which adds creamy texture to this thick, velvety soup. It’s hearty, delicious and also presents beautifully to guests at a dinner party. Bon Appétit! • • 1 large head cauliflower (about 2 pounds), stem discarded, florets cut into 2-inch pieces, leaves reserved (if available) • 2 medium white onions, halved and thinly sliced (half moons) • 3 tablespoons extra-virgin olive oil • 1½ teaspoons ground cumin • 1½ teaspoons ground coriander • Sea salt and ground black pepper • 2 tablespoons unsalted butter • 4 garlic cloves, crushed • 1 large potato, skin on, cut into 1-inch pieces • 1 teaspoon ground turmeric • 1 quart unsalted vegetable or chicken stock • 2 tablespoons sliced almonds • Coarsely chopped fresh parsley leaves, for garnish

Heat the oven to 400 degrees. Arrange the chopped cauliflower, any cauliflower leaves and the onions on a large baking sheet. Drizzle with the olive oil and sprinkle with cumin, coriander, 1 teaspoon salt and 1/2 teaspoon pepper. Toss with your hands, then arrange in an even layer. Roast until the cauliflower is browned and cooked through but still has some crunch, about 25 minutes. Meanwhile, melt the butter in a large saucepan over low heat. Add the garlic and cook until fragrant, about 3 minutes, taking care not to burn it. Stir in the potato and turmeric, add the stock and bring to a simmer over medium heat. Cover and cook until the potato is soft, about 10 minutes. When the cauliflower is done, reserve about 1 cup cauliflower for the topping (including leaves, if you have them) and add the remaining cauliflower and onions to the soup. Return the soup to a simmer and cook until flavors meld, about 5 minutes. Using an immersion blender, blend until smooth. Taste and adjust the seasoning. Toast the almonds in a dry skillet over low heat, stirring occasionally, until golden, about 4 minutes. When you are ready to serve, ladle the soup into warmed bowls. Top with the reserved roasted cauliflower and a few of almonds and parsley.
