having a party, and you are invited! It’s that time of year when everyone is here and parties are in full swing! It’s so exciting to see everyone out and about having a great time. Our office has been hopping as we prepare for the biggest Winter Texan bash in the Rio Grande Valley--the Winter Texan Expo--and this is the 27th Annual WTE! The Winter Texan Expo will be held January 14-15 from 9 a.m. to 3 p.m. at the McAllen Convention Center, and admission is free! We have over 175 vendors participating in the show, so there is literally something for everyone. We have live music both days, too. We’ve increased our footprint this year and will utilize the ballroom for entertainment this year to allow for wider aisles and more seating areas for our guests. Our entertainment lineup includes Naomi Bristow, Tom Wurth, Jeff Gordon, The Baker Family, Leslie Blasing, Lindley Creek, Shake Rattle & Roll, and the La Joya ISD Mariachi and Folkloric dancers. Chimney RV Park Tradition of Helping Families at Christmas Continues Special to Welcome Home RGV
Five
families in the Mission area had a brighter Christmas thanks to a tradition at Chimney RV Park that dates back to 2001. Each year, winter residents donate money to purchase food, clothing, shoes, laundry detergent, and toys for families selected by Mission Food Bank. Food shoppers In December, a group of 14 “elves” volunteered to help Chairperson Joann Manley of Iowa and her assistants, Sandy Morrison of Missouri and Ruth Anderson of Nebraska, shop for 10 children and six adults. Manley filled in for Patty Woodruff, who chaired the event in previous years. Manley thanks Mission H.E.B. Packing food boxes and Fallas Paredes Discount Stores for their excellent customer service. Thrivent Insurance was a contributing sponsor. Carmen Flores coordinated efforts at Mission Food Bank. Each family received ingredients for a complete Christmas dinner, including a turkey. They also received a family game, a throw blanket, and Loading truck a soccer ball, as well as a month’s supply of groceries and other staples.

Harlingen Resort Donations to Serve Thousands in RGV and Mexico by Rocio Villalobos
In
fewer than three weeks, residents at Harlingen’s Paradise Park RV Resort collected enough food items to feed children in Nuevo Progreso, Mexico, for a month, as well as others in need of meals. Every year around Christmastime, park residents select an organization to rally behind with donations. This year, they partnered with two nonprofits--Sow the Word, which provides meals to children and pregnant women in Nuevo Progreso, and Loaves and Fishes, which serves the hungry and homeless in Harlingen. Gathering the items to donate based on an advent calendar, which listed a different item to donate each day, residents had fun with their charitable giving.
“I got the idea from something I saw and thought this would be good for our park residents to do during the holidays,” said Sharon Bargel, a Winter Texan at the park. “So we put together a list of items, and it just took off. ome celebrate with us as we kick off another great year at The Lamb’s Loom! Your generosity over the last year is what encourages us all in our mission efforts. In 2018, we surpassed the donations received by over 1000. That meant over 3200 handmade knitted and crocheted items were given to those in need in 2018! We do want to extend a special thank you to everyone who comes in and adds so many lovely items to the donations chest! You are a blessing to so many! We are excited to see what this year holds and grateful for your participation in what is ahead. Our 2020 kickoff is our Fifth Annual Yarn Tasting, when we will announce the final DonationChest count for 2019. The Lamb's Loom is a powerhouse of prayer and comfort for thousands of people around the world. Operating out of a small brick house in an older part of McAllen, volunteers and donors create and collect items of comfort and distribute them locally and around the world. Each month, members count donated items--also known as "blessings"--such as blankets, shawls, and hats and mark the tabulation on a wall chart that shows each month's collection numbers. This year's goal was to surpass last year's, which the organization has accomplished by the hundreds. Winter Texans play a big part in providing items for distribution. Volunteer Jeanie Rowell shares the Lamb's Loom donations go way up when Winter Texans arrive in the Valley. Lamb's Loom is located at 1102 Tamarack in McAllen. Celebrating Decades of Great Live Music in Harlingen Special to Welcome Home RGV
G
reat entertainment at a reasonable price, that’s been the mission of Harlingen Concert Association (HCA) since its inception. For more than 80 years, this all-volunteer, nonprofit organization has been committed to enriching the cultural life of the Harlingen area through live performances. In 1933, soon after Harlingen Municipal Auditorium was built, the Rio Grande Valley Civic Music Association formed to bring top-notch entertainment to the area. In the 1940s, the Association began working with a booking agency out of New York City. Groups like Civic Concert Services, Inc. helped music lovers around the United States work together to bring reasonably priced artistic attractions to their communities. By raising money, first through memberships, and having a secure tour route of suitable venues, artist fees were kept reasonable and tickets affordable. Between 1945 and 1950, the number of community-concert
associations nationwide rose to an all-time high of 1,008. The Rio Grande Valley Civic Music Association was superseded by the Harlingen Community Concert Association in the 1960s and now is known as Harlingen Concert Association. The list of performers who brought musical scores to Harlingen Municipal Auditorium over the years reads like a “Who’s Who” of international and American stars. Sergei Rachmaninoff, Paul Robeson, the Von Trapp Family Singers, the Tommy Dorsey Orchestra, and Guy Lombardo are among the more familiar names. “America’s Foremost Tenor” boasts the program for Jan Peerce’s 1945 appearance. The yellowing playbill for
violin virtuoso Heifetz waxes eloquent on his favorite instruments, a 1731 Stradivarius and a 1742 Guarnerius, which accompanied him on all of his concert tours. In the ‘70s, oboist, conductor, and recording artist Mitch Miller of the popular television series, Sing Along with Mitch, came to town. By the ‘80s and ‘90s, offerings had expanded to include influential vocalists, musicians, and performers, such as John Raitt, Floyd Cramer, the Toronto Dance Theatre, the Crescent City Jazz Band, and many more.
Harlingen Concert Association now offers six outstanding live performances each fall and winter. Artists range from pop and country to classical, jazz, Broadway, Celtic, and a variety of international musical styles. in Harlingen kicked off its 50's & 60's Jam in late December. The jam is open to all genres of music, but this year the resort is putting more of a rock ’n roll emphasis on the weekly sessions. Activity Director Margaret Hendricksen shares the reason behind this year’s up-tempo theme: “We feel there is a need and a demand for rock ’n roll in this part of the Valley.” During the jam sessions, musicians and singers sign up to perform a number, and the rest of the musicians join in. Playing an instrument is not required to participate. There is plenty of table seating, and the dance floor is always open. Attendees may b.y.o.b. or purchase beverages at the jam. Free cookies and popcorn are provided. Musicians who would like to participate are invited to arrive between noon and 1 to set up. Alison Booton, visiting from Cottonwood, contributed to the first jam with
her washtub bass. She says the instrument is not only a good way to meet people as a conversation starter but is also versatile, allowing her to participate in most genres of music. Open to the public and free of charge, the 50's & 60’s Jam is held every Friday during the Winter-Texan season from 1 to 3 p.m. at Tropic Winds RV Resort, 1501 N. Loop 499 in Harlingen. cAllen High School Theatre and Choir are proud to present Disney’s The Lion King. The always-popular musical is based on the Broadway production directed by Julie Taymor and the 1994 Disney film. This production features over 40 amazing McHi students. The Lion King tells the story of the epic adventures of a curious cub named Simba as he struggles to accept the responsibilities of adulthood and his destiny as king. Along the way, the young lion encounters a colorful cast of characters, including spunky lioness Nala, charismatic meerkat Timon, and loveable warthog Pumbaa. To claim his rightful place on the throne and save his beloved Pridelands, Simba must find his inner strength and confront his wicked Uncle Scar. The Lion King features classic songs from the 1994 film, such as “Hakuna Matata” and the Academy Award®-winning “Can You Feel the Love Tonight,” as well as additional songs penned for the Broadway production. "We are thrilled to be staging the epic story, The Lion King,” said Jason Barrera, director of McHi Theatre. “Aside from the iconic songs and lovable characters, what drew us to
this particular show was the potential to tell the story in a reimagined style. The evocative choreography and detailed stage effects enhance the emotional impact of the music. I don't think it'll look like any other Lion King you've ever seen." “This is a large jump from last year’s musical, Newsies,” said Alejandra Tamez, president of McHi Theatre. “Newsies was really fun and energetic, whereas The Lion King is more of an artistic show. It requires more technique, grace, and getting out of your comfort zone to create
beautiful visuals. McHi’s adaptation of The Lion King truly will be something you haven’t seen before. There is a great deal of dedication and sacrifice being put into this production that is really amazing to see. She added that some people who were unable to go out and do their own shopping donated money so extra items could be purchased. December 20, during a “Burger Friday” at the park, residents met to enjoy lunch and listen to music. But the gathering also served as an opportunity for park residents to present the items they had gathered to the organizations and to thank all who were able to give. Several tables were lined up along the stage, bearing the donations. Among the items were canned foods, notebooks, candy, detergent, soap, and other useful products. It is a weekly tradition at the park for attendees to wear red, or R.E.D, which stands for “Remember Everyone Deployed.” Dr. Bill Harrison, founder of Sow the Word, said the donations from Paradise Resort are going to go a long way toward helping to feed children. “Right now, we’re feeding about 1,000 people a week,” Harrison said. “This organization has given us lots of food, and we think with what they’ve gathered here today, it may last us as long as a month.” Harrison is a chiropractor in Nuevo Progreso, and in 2013, he and his wife decided to start a nonprofit. “We started out by giving shoes and clothing to the children, and what we
found out was they were selling the clothes and shoes to buy food,” he said. “So we started feeding children on the street… then moved to a larger facility, and we now feed six days a week.” Harrison has three employees to help serve the food, which, along with the rent of the building, is paid for out of his own pocket. “The Lord has been very good to me, and I just feel like I need to give back because I’m very blessed,” Harrison said. “We appreciate what these people have done here today, and it means a lot to our ministry.” While the entire park was able to work together for this large collection near Christmas, Bargel said people at Paradise Resort are always helping others. “We volunteer at hospitals, and we have a variety of other things around the region, as well,” Bargel said. “It’s just our nature. We appreciate being able to be here, and we like to help the community.” •

I'm Taking the 'Angst' Out of Auld Lang Syne by Rev. E.B. Holschuh
M
ost English speakers in the world are familiar with the melody and, perhaps, the first few lines of “Auld Lang Syne,” that Scots anthem that rings in the New Year. At 11:59:50 on New Year's Eve, as the countdown starts, glasses and hopes are raised in cheer, a chorus of voices promises to not forget the faces and experiences of the year gone by ("Should old acquaintances be forgot, and never brought to mind..."). The year ahead sparkles and effervesces like all those champagne flutes raised overhead. For most of my adult life, however, I have welcomed each and every New Year with some regret and faced the angst of whatever awaits me over the course of the next 12 months. I habitually look back upon the year

While everyone resolved to lose 30 pounds or take up guitar or learn another language, I preferred to dwell for a time on what could have been and simply blink catatonically at what the future holds. Would the coming year leave me, as Tennessee Ernie Ford sings in “Sixteen Tons” (the pessimist's Auld Angst Syne), just "another year older and deeper in debt?" Sigh. No! In 2020, things are going to be different. It's time for a new New Year's outlook and even a few resolutions, the first of which is to no longer allow ghosts of the past year to haunt me. We can’t go back. I know there were times in 2019 when I failed, when I wronged someone, betrayed a trust, or put myself first. Most regrettable are those decisions I made that didn't include God, when I selfishly grabbed the joystick from Him and played alone. Most of the world forgets that pastors are sinners, too. I am resolved to recycle the bad, to

let last year teach me how to better live in this one. I will put forth a sincere effort to try and right past wrongs, to give to God those I can't, and, rather than stare into 2020 like a deer in the headlights, I will try and do the very best I can with all I have been given. I look forward to making my 35th year of marriage the very best so far, to new outreach ministry possibilities, to taking better care of myself and the world around me, to another year of trying to help folks who are grappling with an increasingly divisive, disordered, and dysfunctional world, and to get a grip on what’s important. In fact, I think I can even help to make this New Year brighter for others, through something as simple as an expression of gratitude. I resolve to remember to thank those who serve and whose services I rely on every day—police officers and other first responders, servicemembers and veterans, Border-Patrol agents, grocery-store clerks, my growing list of medical professionals, mail carriers, etc., and, of course, my wife. Most importantly, I will continue to daily thank God, who is at the top of a seemingly infinite list of those who do for me (and you). This new 2020 and I still need to get to know one another a little better, but I have a good feeling about this one. No weight loss vows, no promises to learn to play the piano or speak Chinese (okay, I may have to put a little more effort into Spanish…), and no angst. This New Year I’m taking the "angst" out of Auld Lang Syne! •
unday, January 19, a committee of Winter Texans is hosting a fundraiser dance to support the Shriners RGV Transportation Division. The dance will be held at Ranchero Village, 2100 S. Bridge Avenue in Weslaco, from 2-5 p.m. The Shriners is a nonprofit group, consisting of members who give of their time and hearts to help children with medical needs. All children up to the age of 18 with orthopedic conditions, burns, spinal-cord injuries, or a cleft lip and palate can receive care in a familycentered environment, regardless of their families’ ability to pay. The La Feria Rio Grande Valley Shrine Club hosted a clinic December 12 and 13, 2019, and treated over 170 patients coming in for consultations, adjustments, and treatments. This
event would not be possible without the help of volunteers. Doctors and health-care professionals come down from Houston to work these clinics. The clinics make it easier for patients in the Rio Grande Valley and Mexico to see their doctors for regular follow-ups and fittings or to pick up custom-made braces. Shriners Hospital has over 15,000 patients who need long-term medical care. Trips are also made to Houston for these children to be seen by doctors at the hospital. All travel expenses are covered by donations, either from fundraisers or through the generosity of donors. To donate or to purchase tickets for this dance, please call Terry at 204795-0657. Two Local Texas Master Naturalist Chapters Offer Speakers to Local Groups Special to Welcome Home RGV
R
io Grande Valley Chapter and South Texas Border Chapter of Texas Master Naturalists have speakers bureaus that offer more than 50 presentations to local groups, nonprofit organizations, and non-political events and meetings. Presentations are free. Topics are about the Rio Grande Valley’s unique ecosystem from birds, butterflies, and native plants and trees that attract birds and butterflies, shrimping the Gulf of Mexico, composting, and water features on a budget, to information about amphibians, bats, beach combing, and archeology and advice on planting community pollinator gardens. Many presentations are designed to be 50 minutes in length and electronically projected to large audiences or tailored to 20-minute, stand-up, informational programs with questions and answers. Texas Master Naturalist experts also are available for guided native-plant walks. Twoand three-hour photography, writing, and presentation-skills workshops are available for a fee. Texas Master Naturalists have chapters throughout the state. The organization
is an educational volunteer program of the Texas A&M AgriLife Extension Service, Texas Sea Grant, and Texas Parks and Wildlife. AgriLife Extension Agent Tony Reisinger and Estero Llano Grande State Park Superintendent Javier de Leon are sponsors for the two chapters. Chapters are made up of volunteers
over the age of 18, including Winter Texans, with diverse interests and involved in myriad activities who learn how to help sustain the Valley’s native habitat and the critters that depend on it. Volunteers work with local partners, including federal and local wildlife parks, coastal naturalist programs, naturalist organizations, cities,
schools, and other public entities. In addition to providing information and program presentations, volunteers help maintain gardens and trails at local nature centers, act as docents and nature hike and plant guides, and write photojournalist articles for local newspapers. Chapters also have guest speakers at their respective monthly meetings. The Rio Grande Valley Chapter meets in San Benito. Their members generally are from Cameron, Hidalgo, and Willacy counties. The South Texas Border Chapter meets in Pharr and attracts members from that end of the Valley’s Hidalgo County, as well as those living in Starr and Cameron counties. Meetings are free and open to the public. Both chapters are recruiting for their winter class enrollment. he Freddie and Sheila Show returns to the RGV January 6 - 25 with a new show. This year marks their 20th year of performances in RV and golf resorts in the sunny southern USA. “We stumbled across the resort venues when we visited a friend in Brenda, Arizona (not far from Quartzsite), and performed at an event he was organizing,” Sheila said. Not long after performing in the Arizona and California areas, they made their way to the RGV. “We’re extremely grateful to have found this market and the wonderful people we play for,” Freddie said, adding that this year’s show is all about saying thank you to everyone who has supported them over the years. Their ‘all-live’ show features Freddie on lead acoustic and electric guitar and vocals and Sheila on vocals and rhythm guitar. These accomplished musicians deliver an exciting show with a full sound and lots of laughs. Their show will include rock/pop and country classics from the 60s and 70s. Freddie has spent a lifetime learning the Chet-Atkins style of picking guitar instrumentals so you will hear some of that, as well as Freddie’s own style of clogging his feet and playing the guitar at the same time. They mix in some funny, novelty tunes, with Sheila yodelling a tune or two for a well-rounded variety show. Freddie spent many years playing lead guitar for singer-songwriter Ian Tyson, who wrote songs like “Four Strong Winds” (by the Carter Family) and “Someday Soon” (Judy Collins and Suzy Bogguss). Famed Branson bluegrass group Goldwing Express has invited Freddie and Sheila to perform on their 1st
Annual West Coast Music Cruise, which departs Long Beach, California, February 2 on the Carnival Imagination. Mission Bell/Tradewinds Resorts in Mission have been long-time sponsors of the Freddie and Sheila Show. Freddie and Sheila are offering guitar lessons in Friendship Hall at Mission Bell every Monday, January 6 - 27 from 1 - 2:30 p.m. These dropin group sessions are free to Mission Bell/Tradewinds residents and $10 per lesson to out-of-park guitarists. No preregistering is required, and all levels are welcome, from beginner to advanced. Participants must provide your own guitar. Tiny Meatballs with Tomato-Pepper Salsa Submitted by Sandy Olson
• 1 medium red onion, finely chopped • Olive oil • 18 oz. lean ground pork • 1 large egg, beaten • 2 teaspoons freshly squeezed lemon juice • ½ teaspoon ground cumin • 2 tablespoons very finely chopped cilantro (OR parsley if you don’t like cilantro’s taste) • Pinch of cayenne pepper • Tomato-and pepper-salsa Sauté the chopped onion in about 2 tablespoons of oil over medium heat until soft but not brown. Remove from skillet and let cool. In a large bowl, add the onion to the rest of the ingredients, except salsa. Mix with clean hands; then take a small piece and fry it to taste for seasonings. Adjust, if necessary, with salt and pepper or more cayenne or cumin. Shape the meat mixture into tiny meatballs, about ¾-inch round. Fry with a bit more oil in the same skillet, working in batches to avoid overcrowding. Serve warm with a good-quality jarred salsa containing some hot peppers. Warm the salsa before serving. Yield: 2 loaves
• ¾ cup sugar, divided • 2 packages dry yeast • ¾-1 cup warm water (105 degrees) • 1 cup oil • 6 eggs, well beaten
• 1 tablespoon salt • 8 cups flour, sifted • 1 egg yolk • 2 tablespoons water • Poppy seeds
Preheat oven to 375 degrees during third rising. Mix together approximately 2 tablespoons sugar, yeast, and 1 cup water. Let stand about 10 minutes, until it bubbles. Add oil, eggs, salt, rest of sugar, and 2 cups flour. Beat with mixer. Cover. Let rise 45 minutes. Add remaining flour and let rise for 2 hours. Sprinkle wooden pastry board and hands with flour. Punch down dough and separate into 6 pieces. Roll these pieces into long strands. Braid 3 strands together tightly for each loaf. Place the 2 loaves on a lightly greased baking sheet. Cover and let rise in a warm place until double in size (1 hour). Brush with a mixture of 1 egg yolk and 2 tablespoons water. Sprinkle with poppy seeds. French Onion Soup Gratin
This is clearly soup season. And my all time, hands-down favorite is French Onion

Soup Gratin. I am often asked by our local guests at the Ocean Grille to prepare it as our soup du jour. As a little girl, I remember my mother and father preparing it lovingly along-side colorful stories of their life in France before I was born. This delightful soup has a rich and welcome place in our family book of memories. There are several versions of the history of French Onion soup. A commonly held version is that in 1765 a Parisian entrepreneur opened a little shop selling a highly concentrated inexpensive soup, which he called “restaurant”. This means to restore something. The soup was advertised as an antidote to physical exhaustion. This, according to food blogger Gary Willicott, prompted the modern use of the word restaurant. Legend has it the first French Onion Soup was created by King Louis the XV of France when all that could be found in the pantry of his hunting party’s lodge was butter, onions and champagne. What is not to love about that combination? It is said that he combined these ingredients to create the first French Onion Soup. It is unclear if this story is myth or fact, but it is a wonderful story just the same. Onions have been a common and popular staple in preparing meals from as far back as the Roman Times. Onions are easily grown in most soil; they are inexpensive and have a relatively long shelf life. Bon Appétit and Enjoy with Champagne! • • 2 1/2 pounds yellow onions, halved, and sliced into 1/4-inch thick strips (approximately 8 cups) • 1/4 pound unsalted butter • 1 bay leaf • 1/2 cup dry sherry • 1/2 cup Cognac • 1 1/2 cups quality dry white wine • 4 cups beef stock • 4 cups veal stock** • 1 loaf French baguette bread • Kosher salt • Ground black pepper • Splash of Cognac (optional) • 1 cup Gruyere cheese, grated **If you can’t get or don’t have veal stock, use additional beef stock

In a large stockpot on medium heat, sauté the onions with the butter and bay leaf for 30 minutes, until the onions turn a glossy golden brown color. Add the sherry and brandy to deglaze the pan and simmer uncovered for 5 minutes. Add the white wine and simmer uncovered for 15 more minutes. Add the beef and veal stocks and season to taste with salt and pepper. Bring to a boil, then simmer uncovered for 30 minutes. Remove the bay leaf. While soup is simmering, cut French baguette into rounds. Place the slices on a baking sheet and broil for 1 minute until just dry and crispy. Taste soup for seasoning and adjust with salt, pepper as needed. Add additional cognac (optional). Ladle soup into crocks leaving 1/2inch to the lip. Place bread rounds, toasted side down, on top of soup and top with plenty of the grated cheese. Broil until cheese is bubbly and golden, approximately 2 minutes. Serve immediately, taking care not to burn your mouth on this very hot soup!
