hard to believe Christmas is right around the corner. Where did December go? Time sure flies here in South Texas! Every day is filled with fun, activities, and friendship. Every day that passes means we have new arrivals, old friends to see, and new friends to make. It was so much fun last week at our 3rd Annual Winter Texan Homecoming! In case you missed it, the event is a big welcome-home party, filled with three of your favorite things: food, fun, and door prizes! Over 400 of our Winter-Texan friends came out to celebrate with us, and we all had a great time. This will be your last Welcome Home Winter Texan of 2019, as we will skip the December 25 issue and roll right into the New Year so our staff can enjoy the holidays with their families and not worry about deadlines! We’ve made sure the calendar runs through New Year’s Eve. We will be back on schedule starting New Year’s Day. Digital expert keeps Victoria Palms residents updated on events, technology

and is always eager to share her social media and tech-savviness with her neighbors at Donna’s Victoria Palms RV Resort. Shirley Knocke of Kansas City, Missouri, has been traveling to the Rio Grande Valley with her husband, Ron, for over a decade, and the pair has stayed at Victoria Palms since 2006. Prior to landing in Texas, they were winter Floridians and Arizonians. Then, on the recommendation of friends, they came to South Texas. “People kept saying, ‘Come to the RGV; you’ll never want to leave,’” Knocke said. “So I didn’t want to come here because I didn’t want to go anywhere I didn’t want to leave because I love traveling. And once we came here, sure enough, we didn’t want to leave.” But through trips to Nuevo Progreso, Mexico, and South Padre Island, Knocke fulfills her love for travel while in the RGV. And while at the park, she volunteers her time taking photos of events and updating Victoria Palms’ Facebook page. “I just try to keep everyone informed so they can participate in all the fun things there are to do here,” Knocke said. “I take them on my phone; I have the iPhone 10XS. It takes excellent pictures,

and editing them is very easy.” Knocke also helps with the park’s classes, teaching residents how to operate their iPhones, iPads, and other smart devices. She adds her door is always open when a neighbor has a question or an issue. “I love living in this time and having all this available, and I love sharing my knowledge with other people,” Knocke said. Another favorite tech device of hers is the Fitbit, which is a step tracker. She aims to reach 7,000 steps a day and has friends who use the gadget, as well, so they challenge one another. “I have low expectations,” Knocke joked. “But if I exceed 7,000 steps, I feel good.” She said the highest number of steps she’s ever walked was while on a cruise. In April, Shirley and Ron have plans to board a cruise ship to Hawaii. They enjoy entertaining guests and set up an outdoor lounge by their RV, which they call the Knocke Korner. “Whenever the mood strikes,” they host karaoke, games, and other activities. “We turn on all the lights, and people know it’s open and start to pop in,” Knocke said. “There’s only one requirement to come here — to enjoy happy hour — and it doesn’t matter if alcohol is involved; just be happy.” •

from other cities, Pharr is expanding their use. “We had an event a couple of weeks ago with Winter Texans, and we told them about events coming up in the city of Pharr,” Nuñez said. “And they asked, ‘Would it be possible for y’all to come get us?’ I brought it up to Mayor Ambrosio Hernandez, and he said, ‘Of course. We have to unite as cities and help each other out.’” James Kropenske, activity director at Mission Bell, said after he told the park’s residents about the trip to see a play in Pharr, tickets to the production sold out in fewer than 30 minutes. Each trolley seats 15 people, and a trip back to Mission Bell the next weekend to invite residents to attend Pharr’s Christmas Posada was already in the works, this time the trolleys making two trips to take 60 residents. When Nuñez shared the news about the second trip, a few people aboard one of the trolleys asked him to explain what a posada is. He informed them that Pharr has an annual Christmas Posada, which is like a party featuring rides, live music, crafts, food, and a visit from Santa. While they won’t be able to attend the posada, Chris and Anita Noce,

first-year Winter Texans from Ohio, said they were glad to have gotten tickets to see the play and were excited for the trip. “We enjoy plays back in Ohio, so we wanted to see what the local plays were like” Chris said. “Plus, we haven’t been to Pharr, so we wanted to see that, too.” The trip from Mission Bell to Pharr is about 20 minutes, and with the sun setting earlier since daylight savings began, Kropenske said a lot of residents don’t like to drive when its dark, so they are grateful to Pharr for their efforts to include them. “I’ve gotten a lot of comments from some Winter Texans who have gone to other states and say no one has treated them the way the City of Pharr has treated them, and that makes me happy because that’s what it’s all about--helping our Winter-Texan family,” Nuñez said. “So what we’re doing here is just a little way to show them our appreciation for choosing the Rio Grande Valley.” He added the city is planning a number of events to celebrate their time here before the Winter-Texan season ends. •

Winter Texan Quilts Comforting Families of Organ Donors Special to Welcome Home RGV

uilts made by the Winter Texas Grandmas at Casa del Valle are providing valuable comfort to families when their loved one becomes an organ donor at hospitals across the Rio Grande Valley. Since starting a partnership with Texas Organ Sharing Alliance (TOSA), the organ procurement organization that provides organ donation and recovery services for families in Central and South Texas, 20 donor families have received a handmade quilt. Seven years ago, Don Uecker of Wisconsin was making funeral arrangements for his wife, Darlene, when he asked family and friends to consider making a financial donation in her honor to the Texas Grandmas. Years later, his relationship with the group--and his volunteer work with TOSA--led him to connect the two groups to provide something special for grieving families. “I know she would have liked this,” Uecker said as the Winter Texans worked around him. The group collects their fabrics from donations, oftentimes even material from families within the park. The size of the group varies as Winter Texans start returning to the Valley for the season, but often the Crafts Room has

about a dozen people working inside on a variety of tasks to complete a quilt. Each week, the group meets, and they can complete about 300 quilts in one season. They donate their quilts to a number of organizations but say no matter where they go, they’re happy to know they can bring comfort to families. “It’s nice for us to have a community for us to serve,” said Sandra Johnson of Ontario, Canada. “It’s good for us to hear how they’re used and know they’re needed.” TOSA recently was gifted another eight quilts to use for upcoming donor cases. Families often drape the quilt over their loved one and take it home with them once the organ recovery is completed. For many families, the personal touch of the quilts provides them solace that feels like home, which is difficult to come by in the hospital setting. Texans are encouraged to register at the Texas Department of Public Safety or the Texas Department of Motor Vehicles to be a donor. Ranch-raised Cowboy and Four-Time Author Herman W. Brune to Present at Quinta Mazatlán Special to Welcome Home RGV

erman W. Brune, president of the Texas Outdoor Writers Association, will present Thursday, December 19, at Quinta Mazatlán’s Nights at the Mansion Speaker Series. Brune will be reading excerpts from his newest book, as well as tantalizing the audience with a storyteller’s insights. Brune is a ranch-raised cowboy from the Post Oak Savana in Colorado County. This area is often described as the place where the Old West meets the Old South. In his grade-school years, Brune was a pianist and LutheranChurch organist. After a stint at Texas A & M University, he married, and in 1978 moved to northern Montana. Brune became a PRCA saddle-bronc rider, a mule packer, and a wilderness guide in Montana’s Bob Marshal Wilderness and Absaroka Beartooth Wilderness and in Wyoming’s Washakie Wilderness.

Upon returning to Texas, Brune guided hunters in Old Mexico and once more tried a domestic career building a dairy…at which he failed. Then he promptly turned the milking barn into a country watering hole. In 1996, Brune re-enrolled at TAMU and studied journalism. He has labored in the oil patch, rice fields, hay fields, and construction sites, and has worked as a cowboy. However, Brune relates that his best job was being a single dad. In addition to freelancing for established and reputable publications, Brune has also hosted The News from the Camp House on KULM 98.3 FM out of Columbus, Texas, since August 2000. Brune has authored Tales from the Lost Rider of Yaupon Creek, Christmas Tales from the Lost Rider, and The Lost Rider ~ Friends. Nights at the Mansion Speaker Series presents noteworthy speakers

and scholars, like Herman W. Brune, to present lectures related to our global environment, local cuisine, and the arts and culture. The program takes place Thursday evenings at 6 p.m. through May 2020. The program fee is $3 per person, and no advance reservation is required. City of McAllen to Begin

Bicentennial Boulevard Extension Special to Welcome Home RGV

he Bicentennial Extension Project will construct Bicentennial Avenue from Trenton Road to State Highway 107, an additional 2.8 miles. The improvements include a four-lane curb-and-gutter roadway with center turn lanes at each intersection. The project was designed by Halff Associates, Inc., and the construction contract was awarded to Texas Cordia Construction, LLC of Edinburg in the amount of approximately $12.6 million, with a contract time of 359 working days. Funding for the project came from the Federal Highway Administration, Texas Department of Transportation, the Rio Grande Valley Metropolitan Planning Organization (RGV-MPO), and other local sources totaling $10.6 million. The remaining $2 million is being funded as a result of the 2013 Bond Election. According to McAllen City Manager Roel “Roy” Rodriguez, P.E., the delay in getting the 2013 bond project

started was, in part, because the City of McAllen took the initiative to expand the project from its original design and then submitted it to the RGV-MPO for consideration, approval, and funding. “This delay, completed, turned out be a blessing in disguise, as not only did additional funding opportunities become available for this more enhanced project, but the bids came in much lower than anticipated,” Rodriguez added. “It was more important for us to do this project right than to do it quickly and not as complete. Once this project is finalized, the immediate impact to the traffic flow in the area will allow for motorists to spend less time in traffic but may also allow for further development and growth. It’s a win-win for the entire McAllen community.” •

he Lower Rio Grande Valley National Wildlife Refuge was created to conserve over 275 miles of the Rio Grande River and manages lands in four counties. Thursday, January 2, at 6:00 p.m. at Quinta Mazatlán will host refuge manager Bryan Winton for its Nights at the Mansion Speaker Series. Winton will present recreational and ecological services of the Lower Rio Grande Valley National Wildlife Refuge, and you do not want to miss it! Winton grew up on family-inherited Delaware Indian tribal lands in northeastern Oklahoma and graduated from high school in 1982. He then joined the U.S. Marine Corps and served honorably from 1985 - 1989 as a combat engineer. He earned his bachelor’s degree in wildlife and fisheries ecology from Oklahoma State University in 1991 and went on to earn his master’s degree in environmental sciences (renewable natural resources) in 1996. Winton became a member of the Wildlife Society as a certified wildlife biologist in July of 2000 and since then has been working within the

federal service for 30 years, 24 of those with the U.S. Fish and Wildlife Service. In 2006, Bryan became the refuge manager for the Lower Rio

Grande Valley National Wildlife Refuge, which means he has served a total of 13 years as refuge manager. His work primarily focuses on the preservation, conservation, and sustainability of over 275 miles of river habitat and endangered species (such as the ocelot) and maintaining the integrity of USFWS-managed lands along four South Texas counties: Starr, Hidalgo, Willacy, and Cameron. he Senior Texas Softball League is preparing for the 2020 season and is looking for men and women over 55 to add to 10 teams. Each league will have a 17-game schedule, including playoffs. The Senior “A” League is designed for top-ability and competitive players. It serves as an option for players who want to keep their competitive juices flowing. Games are at 9, 10, and 11 a.m. Tuesdays and Thursdays. The Senior “B” League is more recreational and is for adults of intermediate ability. These players play because they love the game, friendships, and exercise. Games are at 9 and 10 a.m. Mondays and Wednesdays. Pre-season play started November 5 and continues through December 31. The McAllen Wind Ensemble Presents an Evening Special to Welcome Home RGV

of Carols and Holiday Spirit

he McAllen Wind Ensemble continues their 45th anniversary celebration with an evening of magical holiday fun sponsored by the Family Health Center of Mission. The December 20 event, Tinsel and Tutus, will feature, the Deborah Case Dance Academy in an encore performance of several of the dances from the world’s favorite Christmas ballet, Tchaikovsky’s famous Nutcracker. The McAllen Wind Ensemble will provide live music for the performance by the Rio Grande Valley Ballet. The Wind Ensemble will also feature the unforgettable voice of Alberto Escobedo, the Singing Barber of Rio Grande City. Alberto Escobedo, owner of Esco Spa and Salon, has earned the reputation as the Singing Barber of Rio Grande City. He has not received formal vocal training since his highschool experience, but his talent is a true testament to the strength and quality of the Rio Grande City Fine Arts Department. Escobedo is also

an active member of the community. He is the driving force behind Casa de Esperanza. Casa de Esperanza serves as a soup kitchen, and the building serves as a shelter for the homeless. “We rise by lifting others,” Escobedo said. “I bring together my profession and my passion for giving back to my community through Casa de

Esperanza in different events. I hope to inspire the younger generations to give back to our community because, after all, there is no place like home.” Escobedo will lend his stirring vocal abilities to Schubert’s “Ave Maria” at Friday evening’s concert. No McAllen Wind Ensemble holiday concert would be complete without a Christmas-carol sing-a-long. Escobedo and the McAllen Wind Ensemble’s own Annabelle Zapata will lead the audience in a medley of favorite Christmas carols. Tinsel and Tutus will be held December 20 at the McAllen

Performing Arts Center. Tickets, starting at just $10, are available at the McAllen Performing Arts Center Box Office, through Ticketmaster, or at the door. December Family Fun at Edinburg World Birding Center Special to Welcome Home RGV

elebrate the holiday season at the Edinburg World Birding Center (EWBC) with some family fun during the month of December. The EWBC is offering family-friendly programs throughout the month to engage and entertain the whole family. Begin the season by joining the EWBC for Ornament Craft Day Saturday, December 14, from 2 – 4 p.m. Instead of buying new ornaments and decorations this holiday season, make fun and creative ones out of recycled and natural materials. The fee for this program is $2 for EWBC members and $4 for non-members. Registration is required, as supplies are limited. Parents and grandparents--school’s out, and holiday prep is in full swing. Instead of having the kids underfoot, why not bring them out to the EWBC for a fun afternoon of nature and play? Monday, December 23, from 11:30 a.m. – 4:30 p.m., we will provide children with lunch, activities, games, and more as you tackle last-minute holiday preparations. This program is for children ages 5 - 10 years old, and

the fee is $15 per child. Registration is required by December 18. Saturday, December 28, is Spectacular Saturday. The last Saturday of each month, the entry fee is waived for all visitors from 7 a.m. to 5:30 p.m. Spectacular Saturday visitors can enjoy indoor crafts or activities or a walk in the gardens. Monthly themes include Puppet Play from 9 a.m. – 4 p.m. (December), Outdoor

Games from 2 – 4 p.m. (January), and Alien Animals from 10 a.m. – 3 p.m. (February). Children can also read a book at the mini children’s library or color a favorite animal at the Center’s coloring tables. Families with children are invited to rent a Junior Ranger Field Pack or Children’s Garden Play Set to use while on the grounds. Ranger Packs and Garden Play Set rentals are free; however, a valid picture ID is required

o much of human heartache stems from miscommunication, misunderstanding, and misplaced intention. In one Peanuts comic strip, Lucy exclaims to her brother, Linus, “You HAVE to give me a Christmas present! It says so in the Bible!” In my job as a pastor, I hear a lot of things. Sinners we are all—mistakeprone and often too easily swayed, not so much by conventional wisdom but by popular opinion. What does the Bible say about giving Christmas presents? We actually have a great, unchanging reference manual from which the truth would rise up and bubble out if we’d open it. The Bible says a lot of things (about a lot of things!), but it doesn’t say, “You HAVE to give me a Christmas present!”

“To take a ‘leap of faith’ means ‘to believe in something with no evidence for it’ or ‘to attemp an endeavor that has little chance of success’”. In a very general sense, I would say that the Bible—God’s Word—in all of its many versions and forms, is too often misquoted and misunderstood. Without our help or good intentions, the Bible is the greatest love story ever told. It’s about the Creator’s undying (and, sadly, unrequited) love for His creations, a sentiment repeated over and over within its pages (most notably in John 3:16). ‘Tis the season for that oldie-butgoodie, We Three Kings of Orient Are. Were the magi, these “three kings,” really three? Or kings? (See Matthew 2). During certain cycles of life (like the frenetic holiday season), we can feel overwhelmed, as though the tide has come in and we’re slowly drowning in debt, schedule conflicts, health and relationship issues, etc. It’s then that the well-meaning churchgoer sidles up alongside to offer this nugget of advice, meant to help us get a grip: “God never gives us more than we can handle.” This is simply not true (see 1 Corinthians 10-13), and yet one missing word really makes all the difference. “God never gives us more than we can handle ALONE.” Sometimes we need “a leap of faith,” another cliché not found in Scripture.

To take “a leap of faith” means “to believe in something with no evidence for it” or “to attempt an endeavor that has little chance of success.” A biblical step of faith is far from a blind leap (see 2 Corinthians 5:7). But what about those words and topics that cause so many in the world today to wield God’s Word like a flaming sword (see Genesis 3:24) to defend a behavior, doctrine, or agenda? A few that come to mind are “abortion,” “homosexuality,” “trinity,” “rapture,” “gender issues,” and my personal favorite, “the definition of marriage.” Of these, the first four aren’t even words found in the pages of Scripture. But God speaks to each. When reading the Bible, God’s love story, it’s very important to follow two cardinal rules of thumb: 1) We cling to what God says, not to what He doesn’t say, and 2) we let Scripture interpret Scripture to more accurately discern God’s Word. For example, while the word “trinity” is not used by God, He clearly reveals Himself to us in Three Persons—Father, Son, and Spirit (Luke 3:21-22, Matthew 28:18-20). “It says so in the Bible!” Being clueless about God’s Word complicates matters for a world that surely doesn’t believe that after God forbade Eve from doing so, a talking snake goaded her into eating a forbidden apple (see God’s version in Genesis 3)…or the more incredible story of the birth of Jesus (whose name means “God saves”). Instead of Rudolph the Red-nosed Reindeer, why not read Luke 2:8-20 on Christmas Eve? (And guess what? God has a sequel planned! I know, because “It says so in the Bible!”) •

e want y’all to meet one of our dear friends, Helen, who is 93 years young and who continues to inspire us all. We met Helen through her daughter, Deb, who is a retired Winter Texan and one of our Shepherds here at The Lamb’s Loom. A few years ago, Deb was visiting up north and taught her mom how to loom knit hats. That first year, Helen made hats and sent them down to our Donation Chest. She has kept at it, and now, several times a year, Deb mails off a box of yarn to her mom for more hats in the making! Next thing you know, we have bags and bags of hats to add to the chest…hundreds of them! Helen reminds us that we are never

through helping others. We just need to act on each opportunity. For those of us who grew up here, we have watched generations of Winter Texans come down here for a season. And like Helen, you are not “retired.” So many pour your time and energies into a need you see in South Texas. You serve and give your talents to make this little part of the world a better place. We here at The Lamb’s Loom remain thankful to all of you who have donated items, your time and talents, and your hard-earned money to keep us going. As an all-volunteer organization, we rely on--and are truly blessed by--your continued help and support. Tropic Star Hosts Teddy Bear Happy Hour December 10, 2019

Tropic Star RV Resort in Pharr hosted its annual Teddy Bear Happy Hour. Entry to the event was a new teddy bear. Patrons also brought appetizers and their preferred beverage. Three officers from the Pharr Police Department were on hand to receive the bears as part of their Blue Angels Program. The department will deliver the donated teddy bears to children in hospitals across Hidalgo County. Sisters Vicki Bautch and Kathy Breu organized this year’s event and put out a call to top last year’s donation of 125 bears. This year, they surpassed their goal with 151 teddy bears collected. •

Here’s a quick, easy “cool” appetizer for your holiday parties.

No cooking, no “strange” ingredients and lots of flavor. If you don’t make your own hotpepper jelly, buy a good brand at the supermarket. The less inexpensive store brands are not too great in this recipe. •

Pepper Jelly Bites Submitted by Sandy Olson

• 6 medium flour tortillas (Again, a good brand-name product is best here.) • 6 tablespoons real cream cheese, not low-fat or fat-free, softened • 6 tablespoons jalapeño pepper jelly • 1 cup finely chopped pecans

Trim each tortilla into a 6-inch square. Spread each with 1 tablespoon cream cheese then 1 tablespoon pepper jelly. Divide the pecans six ways and sprinkle them over the other two layers on each tortilla. Roll up, jelly-roll style. and wrap each individual roll with plastic wrap. Refrigerate for at least 1 hour. When ready to serve, remove plastic wrap and slice each roll into 1-inch pieces. Note: If you don’t like the heat of pepper jelly, these still make a nice appetizer by using a fruit jam or jelly. Serves 6-8

Chocolate Pecan Crust:

• 2 cups chocolate cookie crumbs • ½ cup margarine, melted • ¾ cup finely chopped pecans Preheat oven to 350 degrees. Combine ingredients for crust. Press into 9-inch pie pan, covering bottom and sides. Bake 10 minutes; set aside to cool. Filling: • 1 envelope unflavored gelatin • ¼ cup cold water • 2 cups whipping cream, divided • 6 ounces semi-sweet chocolate chips

• 2 eggs • 1 teaspoon vanilla extract • 22 caramels (about 1 cup) • 2 tablespoons margarine

In a small saucepan, sprinkle gelatin over water; let stand 1 minute. Stir over low heat until completely dissolved. Stir in 1 cup cream. Bring to a boil. In blender, process gelatin mixture with chocolate chips. Add ½ cup cream, eggs, and vanilla. Process until chips are melted and mixture is well blended. Pour into bowl and chill until thickened. In a small saucepan, combine caramels, scant ¼ cup cream, and margarine. Simmer, stirring frequently, until caramels are melted. Pour into cooled crust. Let stand for 10 minutes. With whisk, beat thickened gelatin mixture until smooth. Pour gently over caramel layer in crust. Chill until firm, 4-6 hours or overnight. Overnight Christmas French Toast

The last thing you need to be doing or worrying about on Christmas

morning is standing over the cook top, cooking slice after slice of French toast for your overnight guests. Here is a stunning and delicious alternative which is made the day before (yay!) and bakes in the oven, making you look like the super hero you are! It’s best made with bread that is a tad bit stale (like a week old or so). It’s likely you’ll have a loaf or two lying around that you didn’t get to enjoy amongst all of the other holiday baked treats. Bon Appétit! • • 2 tablespoons unsalted butter, softened, plus more for baking dish • 1 pound enriched bread, such as brioche, or challah • ¼ cup golden raisins • 6 large eggs • 2 ½ cups whole milk • ½ cup heavy whipping cream • 1⁄3 cup light brown sugar • ½ teaspoon ground cinnamon • Pinch of freshly ground nutmeg • ½ teaspoon pure vanilla extract • ¼ teaspoon kosher salt • 1⁄3 cup pecans, chopped (optional) • Confectioners’ sugar for dusting • Maple syrup, for serving

Butter a 2-quart baking dish. Butter the front sides of the slices of bread and shingle the slices upright in the dish, overlapping as necessary. Place the raisins evenly between the slices of bread but not on top. In a large bowl, whisk together eggs, milk, cream, sugar, cinnamon, nutmeg, vanilla and salt until well combined. Pour the milk mixture over the bread and press the bread gently to absorb. Cover with plastic wrap and refrigerate overnight. In the morning, heat oven to 350 degrees. Remove the plastic wrap. Sprinkle the pecans evenly over the top. Bake until puffed, golden and set in the center, 50 to 60 minutes. If during the baking process, the top begins to darken too quickly, tent with foil. Let stand 10 minutes. Dust with confectioners’ sugar and serve with maple syrup.
