ovember is always a flurry of activity around our office as we brace ourselves for what’s to come shortly after Thanksgiving. The summer months are filled with meetings and interactions with our RV park managers, and around mid-October, we switch gears and start focusing on our activity and tour directors as they make their way back to South Texas. What people don’t understand is that our RV-park activity directors basically hit the ground running once they ‘land.’ In many cases, activities for the season are pre-planned a year in advance, but as we all know, some things don’t always work out the way we expected. The popular tours depart from J & B’s Café, 204 E. Jackson, at 9:00 a.m. and last approximately 90 minutes. You should dress for the weather, wear comfortable walking shoes, and be prepared to have fun. Come and discover which JacksonStreet building was the mortuary, the Woolworth’s, and the Piggly Wiggly and learn how ice made Harlingen famous. You’ll hear about frontier days, midcentury boom times, and modern Harlingen, as your guide provides an inside look at a town whose colorful

>> BOOT CAMP CONTINUED FROM PAGE 5 Next, we take them on what we call our Activity Director Boot Camp. No, it’s not an exercise program; we do burn a few calories, but not enough to make a dent. It’s a group training of sorts, where we educate and inform, tour a variety of venues, and explore other opportunities for group activity. The hope is that not only will they learn something about the Rio Grande Valley, but that they will also have an opportunity to network and learn from each other at the same time. Each year we rotate venues and attractions so it’s always something new. You already read about our trip to Mexico City. That was the kick-off to this year’s lineup. From there, we toured the Museum of South Texas History (MOSTHistory) in Edinburg, did a trolley tour in Rio Grande City, spent an afternoon in Port Isabel, took a Port-of-Brownsville cruise out of SPI, sailed off on a sunset dinner cruise, rode a catamaran, and visited Sea Turtle Inc.’s new facility. Of course we managed to have a few happy hours sprinkled in. It’s called Boot Camp because we go-go-go. So maybe it could be called a workout, after all. I think I’ll go with that.•

gears up for 21st concert season

he Rio Grande Valley Concert Band is gearing up for its 21st concert season. Since 1998, both Valley residents and Winter Texans have joined forces to create this seasonal band that only performs December through March. The purpose of the RGV Band is to provide an outlet for music expression for both local residents and Winter Texans by

performing for the general public concert-in-the-park style music using the 55+ parks as the concert hosts. The band typically begins the season with a Christmas concert, followed by bi-weekly concerts January through March. The 2018 Christmas concert is scheduled for Sunday, December 9, at 3:00 p.m. in the Activities Center of Our Savior Lutheran Church, 1105

W. Fern Street in McAllen. This venue is where approximately 62 band members gather each Saturday at 9:00 a.m. to practice. The Christmas concert is given in appreciation to the church for allowing the band to use its facilities. There is no charge for admission, but a freewill donation will be collected. •

on’t you find it irritating when people move things you know darn well should be right where you last put them, or at least saw them? I hate it when that happens. My wife and I recently paid a visit to my hometown. We had some time to kill so decided to take a drive around and check out some old haunts. I thought it would be fun to visit a nearby lake where my father and I

used to fish, so we headed out on a gravel road to the spot three miles east of town. I was quite perplexed when we got out three miles and there was no lake there. We continued on and still no lake at four miles. Or five miles. What was going on here? Then finally, at six miles, there it was--sort of, but different. It had a resemblance to the lake in my memory, but the point we fished from was all different. Then I figured it out. Someone had moved it and not quite gotten it put into the new spot correctly. I felt better now that I understood what had happened. It did seem a bit odd, though, that I had not read anything in the paper about them moving the whole lake.

This happens often to me and. I suspect, to many of us. The comb I lay on my dresser, because that is where it always goes, shows up in my pocket. My shoes, which are always by the door, aren’t. The car, which we parked in row two at Walmart, somehow finds it way over to row four while we are shopping. I know the elves and pixies can be pretty mischievous but a whole lake? That is a pretty good one. One of the things I have learned in life is that there is usually someone else to blame when I can’t find stuff. Sometimes it is actually true. My wife did move it. Other times she denies it, leaving a big mystery. Oh well, at least I know it wasn’t my fault. I’m just sayin’. •

very day we are amazed at how much more The Lamb’s Loom has become than we originally dreamed. As an all-volunteer organization, we are extremely grateful to each and every one for all you do to help make this dream a reality! Over the last four-anda-half years, we have grown from two full-time volunteers to 14, in addition to our regular class instructors who also donate their time and energy to help out around the shop. We have an amazing group of volunteers, and we would like to introduce you to a few. Three shepherds you need to know are our “shepherds in training”--Gigi (12), Aylan (11) and Arianna (8). These young ladies help with donation counts from our Donation Chest and with displays and classes, just like a regular shepherd. They can give you a full tour of the shop any time and help you pick out just the right yarn for your next project. Gigi, Aylan, and Arianna team up regularly with other shepherds, like Deb. They help keep us organized and ready for yarn fun every day! We like to think we are

mentoring them and giving them a sense of volunteering for when they go out on their own; truth is, their excitement and wonderful attitudes inspire the rest of us to keep at it every day! All shepherds have regular days they volunteer and do everything from stocking and teaching classes to sweeping the floor. So you can see why, around The Lamb’s Loom, every day is Hug-A-Shepherd Day! We do hope you’ll come to visit and hear a few stories of the encouragement these gifts have been to so many around the world and become a PEG!--Pray, Encourage, Give. The Lamb’s Loom is not just a yarn shop. It’s a ministry and a mindset. As a Christian-based ministry, not affiliated with any particular church or denomination, we believe in love, laughter, and living life to the fullest as we serve others. make decisions all the time. Some decisions do not have a lasting effect on our lives, but some do, and people make them like it really does not matter. God, in His wisdom, makes a way for us to make good decisions, but Satan also encourages us to choose the wrong way. The decision to choose Jesus in the forgiveness of sin is the best decision anyone could and should make. I would like for us to look at two men who have a choice to make. One makes a good choice, and one does not. Now all of us will fall into this situation, and we will have to choose. Look at the first man. He chose not to walk out of the counsel of the ungodly nor stand in the path

of sinners, but he took delight in the law of the Lord. He mediates on the law day and night. He is like a tree planted by the rivers of water, and he prospers in whatever he does. The other man had the same choice, but he chose the way of the world, and he became like chaff the wind blows away. He will not be able to stand in the Day of Judgment nor sit in the seat of the righteous. He seems like he has it made. He lives like a lot of people who think they are good men and women, and they do a lot of good for others and think everyone will be OK in the end of times. But the Lord is not fooled. He knows the way of the righteous, but the way of the ungodly shall perish.

Chicken Pozole Soup

which means ‘hominy,’ is a traditional soup from Mexico. Hominy is corn that has been processed in lye or lime. When ground, it becomes ‘grits,’ but pozole uses the whole kernel. Corn, or maize, was a sacred food of the Aztecs, so this recipe goes back centuries. We recently sampled pozole at a restaurant in Mexico City and liked it. It is usually made with pork or chicken. In Mexico City, I ordered it made from pork and pig’s head meat. There are basically three processes to make it. First, poach the meat, creating a broth. Second, make a chili sauce to add to the broth. Third, serve the soup with a variety of toppings. This recipe will serve from 6 to 8 people. Enjoy! Buen apetito! • Ingredients for the meat and soup stock: 1 lb. boneless and skinned chicken breast meat 2 – 32-ounce packages of chicken broth – add more broth or some water, if needed, to cover the meat. ½ yellow onion – peeled and quartered 8 cloves of garlic – skin removed 5 small bay leaves Ingredients for the chili sauce: 2 dried Ancho chilis – split with seeds and stems removed and softened in water 2 dried Guajillo chilis – split with seeds and stems removed and softened in water 2 Tbsp. olive oil ½ yellow onion – roughly chopped 3 garlic cloves – roughly chopped 1 tsp. dried Mexican oregano ½ tsp. cumin ½ tsp. cayenne pepper (optional) ½ to 1 cup of water reserved from soaking the chilis, as needed for blending Ingredients to complete the soup: 2 – 19-ounce cans hominy – drained and rinsed 1 can garbanzo beans (chick peas) – optional – drained and rinsed 1 can pinto beans – optional – drained and rinsed Use sliced radishes, sliced cabbage, tortilla chips, sliced avocado, lime wedges, chopped fresh cilantro, Mexican crema, and Queso fresco as toppings. You could also serve the toppings in bowls and let each guest select their own favorites. Instructions for the broth and meat: Place the chicken and chicken broth in a stock pot and add broth or water, as needed to cover. Add the onion, garlic cloves, bay leaves, and salt. Bring to a boil and simmer for 2 hours. Remove the chicken and set aside. Shred when cool enough to handle. Strain and reserve the broth, discarding the onion, garlic, and bay leaves. Instructions for the sauce: Split the dried chilis and remove the stems and seeds. Break peppers into pieces and soak in hot water for a half hour, until softened. While the chilis are soaking, heat the oil in a stock pot, add the onion, and cook on medium heat until translucent. Add the chopped garlic, oregano, cumin, and ½ tsp. cayenne pepper (optional), and stir until fragrant. Using a slotted spoon, scoop the cooked onion mixture into the blender. Discard excess oil. Add the softened peppers, along with ½-1 cup of the reserved liquid from soaking the peppers and purée the sauce. Completing the soup: Add the sauce mixture and shredded chicken to the reserved broth. Add the hominy and optional chickpeas and beans. NOTE: This is for a 6- or 8-quart pressure pot; the 3-quart mini is too small • 2 teaspoons salt • 1 teaspoon black pepper • 3 pounds beef chuck roast • 2 tablespoons olive oil • 1 chipotle in adobo, chopped (seeds removed for less heat) • 1 tablespoon of the adobo sauce • 2 teaspoons dried oregano • 2 teaspoons dried cumin • ½ teaspoon chili powder • 1 cup tightly packed fresh cilantro, roughly chopped • 1 medium onion, peeled and quartered • 1 green bell pepper, seeded and cut into large chunks • 1 cup water Salt and pepper the roast, to taste. Turn on the sauté option in your pressure cooker, and brown the roast in the oil, on both sides, until completely browned. Cancel sauté option. Remove roast and drain any excess grease or oil. Place roast back into pot and spread the chipotle pepper and adobo sauce on top. Sprinkle with the spices and then spread the cilantro over the top. Add the onions and green pepper. Pour the water around the sides of the roast. Set the pressure valve on seal and cook on manual-high for 60 minutes. Turn cooker off and allow pressure to release naturally. Take the meat out. Remove veggies, but retain the liquid. Shred the meat with two forks and return to the pot. Stir in the liquid. Spicy Coconut-Chicken Bites

Yield: 50 bites • 2 pounds boneless, skinless chicken breasts, cut in 1-inch pieces • 1 jar Chef Pal Prudhomme’s Poultry Magic spice or Zatarain’s Creole Seasoning

Mix

• 2 eggs, beaten • Dijon mustard • 3½ cups sweetened shredded coconut, toasted

Spray 2 large cookie sheets with non-stick spray. Place spices in plastic bag; add chicken pieces. Shake to coat. Dip chicken in egg, roll in toasted coconut, and place on cookie sheets. Refrigerate 1 hour. Preheat oven to 400 degrees. Bake 12 minutes or until golden brown. Serve warm or at room temperature with Dijon mustard. This easy, slow-cooked chili is not your average “bowl of red.” With

chicken, sweet potatoes, tomatillo salsa, and pinto beans, it’s more of a cross between chile verde and white chicken chili. Just a few ingredients and easy prep gives you a flavorful and satisfying “bowl of green.” Bon Appétit! • • 3 pounds boneless, skinless chicken breasts • 2 large sweet potatoes, unpeeled, cut into 1” cubes • 1 (16-ounce) jar tomatillo salsa (salsa verde) • 2 cups low-sodium chicken broth • 2 teaspoons ground cumin • 2 teaspoons kosher salt • 1 teaspoon freshly ground black pepper • 2 cans pinto beans, drained, rinsed

• Sliced avocado • Cilantro leaves • Sour cream • Finely diced onion

Special Equipment

• A 6-quart (or larger) slow cooker Mix chicken, potatoes, salsa, broth, cumin, salt, and pepper in slow cooker. Cover and cook until chicken shreds easily with a fork and sweet potatoes are tender, about 4 hours on high or 6 hours on low. Add beans during last 30 minutes of cooking. Shred chicken in slow cooker with 2 forks. Taste and season with salt and pepper, if needed. Serve topped with avocado, cilantro, sour cream, and/or onion, if using.

Chef’s Note

This chili can be prepared on the stovetop in a Dutch oven or large pot. Bring to a simmer and cook, covered, over medium-low heat until chicken shreds easily with a fork and sweet potatoes are tender, about 1 1/2 hours. Add beans during the last 30 minutes of cooking. •
