This
week’s cover story is near and dear to my heart for many reasons. First of all, we are honored to support the work that Christian Resort Ministries does throughout the season...and the year. It’s more often than not that we receive an email, phone call, or letter thanking us for publishing their columns, and we are honored to give them another avenue to fulfill their calling. The other reason is that I know I was called to do the work we do at Welcome Home RGV. Even though I don’t show it as often as I’d like, on Sunday mornings, my faith is solid. I know we are doing God’s work in serving the Winter-Texan community. I also know I have been guided through the last 11 years of service because, in all honesty, I didn’t know where we were headed. It was through blind faith that we plowed ahead, breaking barriers and charging into a world of unfamiliar territory. I started this business on my diningroom table in 2008. My timing, if you’ll remember, wasn’t so great--right smack dab in the middle of the recession. But having been laid off from my ‘real job,’ and having a little daughter at home, I needed something that was flexible so I could take care of her. I had a vision in the middle of the night, a vision of what Welcome Home RGV was supposed to be. I just didn’t have the road map. So off I went, not knowing where I was headed but with faith that I would be guided in the right direction. I know God has watched over us every day as we try to make a difference in your lives. Some days we succeed, some days we don’t, but I always know we are not alone in this journey. This Thanksgiving, I’m thankful for you, for the opportunity to be of service, and for allowing me into your lives. Happy Thanksgiving from my family to yours! • We’re just connecting the dots,

“There is an old saying,” said Rev. Jim Troutman, 76, as he stood
in front of his congregation giving his weekly sermon. “Better to have people think I have nothing on my mind than to open my mouth and remove all doubt.” A chuckle and head nods move through the crowd of 22 souls this Sunday morning inside the recreation hall at Citrus Valley RV Park in McAllen. They are gathered to hear the word of the gospel from Troutman, one of many chaplains of Christian Resort Ministries in the Rio Grande Valley.

ach year, WHRGV takes activity directors through our Activity Director Boot Camp. The idea behind Boot Camp is to showcase different venues and attractions across the RGV so activity directors can see, first hand, what tours are available for their residents and what those tours are like.
This past week, we took a group tour of the Museum of South Texas History in Edinburg. If you have not had the chance to spend an afternoon at the museum, grab some friends and make a day of it. You’ll take a step back in time and learn all about our South Texas heritage. •

aint Joseph Academy’s parent organization, Parents at Work (or PAWS), will be hosting its annual ‘tis the Season Market Days the first weekend of December. More than 30 vendors selling jewelry, art, unique gifts, gourmet foods, and holiday decorations will assemble in the school’s Brother Francis Student Center for this threeday holiday extravaganza. A preview event, complete with hors d’oeuvres and beverages, will be held on Friday, November 30, from 6 to 9 p.m., allowing guests to get some earlybird shopping done before doors open to the general public the following day. Entrance to the preview event allows the ticketholder complimentary reentry for either December 1 or 2. ‘tis the Season Market Days opens to the
general public Saturday, December 1, from 10 a.m. until 6 p.m. and continues Sunday, December 2, from 10 a.m. until 5 p.m. Tickets to Friday’s Market Preview Party are $35 per person, and general admission tickets for Saturday and Sunday are $5 per person. A
Veterans’ Breakfast was held Monday, November 12, to honor the veterans at VIP La Feria RV Park. It consisted of ham, eggs, hash browns, homemade cinnamon rolls, orange juice, coffee, and fresh orange
slices. The morning began with the Star Spangled Banner, a flag salute, and a prayer. Those in attendance represented many years of military service, dating back to World War II. •

KTEX hosts 9th Annual Ten Man Jam benefiting Food Bank RGV December 1

en Man Jam is back, with great artists like Runaway June and Everette. This annual event provides over 100,000 meals for children in the RGV. The 9th Ten Man Jam is December 1 at the Rio Grande Valley Livestock Show Grounds, 1000 N Texas Avenue in Mercedes. Tickets are only $10 presale. Tickets can also be purchased at the gate for $20. The gate opens at 1 p.m., and music starts at 2 p.m. Tickets are available Valleywide at The Boot Jack and Craig’s Furniture and can also be purchased at the KTEX studios in

Troutman’s service this morning cautions against the use of idle words. “Gossip is no good. It causes hard feelings,” said Troutman before citing Proverbs in the Bible. “A whisper separates the best of friends.” Troutman continued, “Part of what God will hold us accountable for, I believe, are missed opportunities. Things that might have been if we had kept our word to Him or to someone else.” The opportunity to preach for Troutman was nearly missed before he went on a mission trip about 10 years ago. “The first trip was to Kenya,” said Troutman. “I had never preached before in my life. The Lord had me where he wanted me. I couldn’t run, so I had to preach in that little African church.” Troutman continued his missionary work in Kenya, Venezuela, Liberia, and deep Mexico before coming to the Valley in 2011. “It just so happens that Vicki (Troutman’s wife) and I had been praying for about three years on how we could get into RV (preaching). We wanted to use it for Gods’ glory.” The Troutmans were visiting from Oklahoma when they happened to attend a service by a Christian Resorts Ministries chaplain in Alamo. “It’s just like He (God) answered the prayer,” said Troutman. “We signed up with them. We had a choice of parks and we chose this one. We’ve been here ever since.” Now the Troutmans spend about five months out of the year in the Valley. Their summer home is in San Angelo, Texas. As people filed into the simple metal building before the service, there were lots of hugs, as many people were seeing each other for the first time this season. When Carol Case embraced Glen Lehman and asked how he was doing, Lehman responded jokingly, “I haven’t been in the hospital this year.” “I think the friendliness, everyone is so close,” said Barbara Dossett, 77, on why she comes to this church. “They care about each other. I think that was the big thing about the park itself and then especially with the church. Very caring people.” Dossett has been a full-time Texan for the past eight years after being a Winter Texan in the park for 10 years before that. “I do go to a brick-and-mortar church when they are gone,” said Dossett. “I try to support this one because I think it is very important.” Dossett is on the church board, sings in the choir, and helps set up the service.
“We try to come up, my husband and I, on a Saturday night and help them set up for church. It’s fun; it’s rewarding.” The ability to wear many hats is also a must for Vicki Troutman. “I am the preacher’s wife, so I am good at multitasking,” she said. “I do the bulletins, I do the prayer sheets, I direct the choir…” Vicki Troutman also plays the piano, where she is seated for most of the Sunday service, playing hymns such as The Church’s One Foundation and All Hail the Power. Inside the prayer sheets today is a list people seeking prayer for their ailments: Hip replacement surgery, heart irregularity, internal bleeding and breast cancer. Jim Troutman said that by the height of the season, the prayer list will be four pages long. Those prayers continue when he is away from the Valley. “I do a lot of phone calls in the summer with our people,” said Jim Troutman. “Especially if they get sick. We have a park website and people put stuff on there. A ministry goes on all summer when we are gone. They depend on us.” Living in the same park as the congregation provides a unique experience for the Troutmans. “We are on call 24/7,” said Vicki

Troutman. “If there is an emergency, we are like first responders. If an ambulance comes in, we go to the scene and find out what is going on. We go with the family to the Emergency Room, we assist them in any way that we can. Whether you are a resident, full-time, Winter Texan, if you work in the park, if you are staff, we are here for everybody. Anybody who has a need.” Jim Troutman finished his sermon on idle words saying, “Some might

he 30th Annual Rio Grande Valley TUBACHRISTMAS Concert will be held Sunday, December 2, at 2:00 p.m. at the McAllen Convention Center, 700 Convention Center Boulevard. This concert is free, and all are encouraged to attend this truly unique and entertaining concert of Christmas music. TUBACHRISTMAS is an ensemble comprised of over 600 tuba and euphonium players from throughout the Rio Grande Valley and beyond. This ensemble will include members of the Rio Grande Valley Symphony Orchestra and the McAllen Symphonic Band, Valley band directors, and the finest high school and junior high musicians from most of our Valley schools. Last year’s concert featured students from McAllen, Edinburg, Pharr-San Juan-Alamo, Mission, Valley View, Donna, La Joya, Rio Grande City, Roma, Mercedes, Sharyland, EdcouchElsa, Weslaco, Harlingen, Los Fresnos, Hidalgo, Brownsville, Rio Hondo, and Port Isabel. The Rio Grande Valley TUBACHRISTMAS Concert has grown in recent years to become THE largest TUBACHRISTMAS event in Texas and one of the largest in the world. Last year we had over 600 tubas, which is more than the present Guinness World Record. This year we have applied with Guinness, prepared for the Rio Grande Valley TUBACHRISTMAS Concert in McAllen to set a new record for Largest Tuba Ensemble! This year’s guest artist will be Dr. Kevin Wass. He is the professor of tuba/euphonium at Texas Tech University and is the current president
of the International Tuba Euphonium Association. It will be a very special performance. One of the most popular features of the RGV TUBACHRISTMAS Concert is the tuba-decorating contest. Several of the performers have elaborate decorations for their instruments. This is one of the reasons this concert is unlike any other Christmas concert. TUBASCHRISTMAS is a nationwide concert event that begins each year after Thanksgiving and continues until Christmas Day. There are over 150 concerts in 46 states, Canada, and Switzerland by TUBACHRISTMAS ensembles. These groups have from four to 500 members. The first TUBACHRISTMAS was held Sunday, December 22, 1974, on the Ice Rink Stage of New York City’s Rockefeller Center. Over 300 tuba and euphonium players gathered to honor the memory of William Bell (born Christmas Day 1902) and to celebrate his considerable achievements as a performer and teacher. Bell was a member of John Phillip Sousa’s band, the Goldman Band, the NBC Symphony Orchestra, and NewYork Philharmonic and was on the faculty of Julliard School of Music, Manhattan School of Music, and Indiana University. Arturo Toscanini, conductor of the NBC Symphony Orchestra, considered Bill Bell to be the world’s greatest tubist. Anyone who has heard a TUBACHRISTMAS Concert will never forget the experience. It is no wonder that since 1974, TUBACHRISTMAS has become a tradition in cities throughout the world. •

he first group of Winter Texans to arrive at Chimney RV Park in Mission honored military veterans in the group with a breakfast Saturday, November 10. New park managers, Dean and Linda Schutter of Topeka, Kansas, welcomed some 30 veterans with free tickets. Spouses and other park residents attended, as well. Dan and Rodney Woodward handled the cooking. At 10:30, members of the American Legion Honor Guard from Post 93 in Mission arrived to present the traditional rifle salute and playing of taps. The rainy morning seemed fitting for the somber salute to all those who served and sacrificed for our country. This was Post 93’s ninth year to present at Chimney Park Back inside the hall, folks warmed up with coffee and heard a presentation by Linda Olson on the meaning for the

Patty Woodruff read the poem Name on the Wall, which is a tribute to veterans who lost their lives in service. I should claim false advertising with regard to this column’s title or at least admit to leaving off the punchline. The title provides a nice launch point into the everyday phenomenon of how differently each one of us processes what we hear and see in the world around us—even those of us with the same “label.” Once upon a time in northern Indiana, I went out for a lengthy walk during which I crossed three rivers-the St. Mary, the Maumee, and the St. Joseph. If I leave that factoid as it is, you will interpret it based on a) personal experiences, b) a knowledge of rivers in northern Indiana, c) what Pastor E.B. One of my favorite atheist-turnedChristian authors is C.S. Lewis. In his book The Great Divorce, he wrote, “There are only two kinds of people in the end: those who say to God, ‘Thy will be done,’ and those to whom God says, in the end, ‘Thy will be done.’” Now think for a minute. What conclusion can be drawn from what you say, how you interact with others, and the company you keep? We would all do better to listen, then consider the facts; respond in kindness, not in judgment; and get the rest of the story before drawing a conclusion. As for me? I am still married to
my “first wife.” (She hates it when I call her that.) My second language is not Spanish, nor is my daughter a Spaniard. I may be white, but I’m far from wealthy. I’ve been to New York twice and never set foot on the campus where I got my degree. I really did walk to North Dakota in 2007 by crossing a bridge over the Red River, which separates North Dakota and Minnesota (from Moorhead into Fargo). And yes, I do believe in God. Life with Him is so much easier than life without Him. So, if you must label me, call me “Christian.” That one suits me just fine. •

Vocal Trash performs in Harlingen Special to Welcome Home RGV
I
f you like percussion, movement, Glee, and Stomp, you will love Vocal Trash! This exciting, green-minded troupe uses the universal language of song and dance to entertain, inspire, and reconnect us with our planet. Best of all, Vocal Trash will be at the Harlingen Municipal Auditorium Thursday, November 29, at 7:30 p.m. kicking off the Harlingen Concert Association’s 85th season of bringing live entertainment to the Rio Grande Valley. Tickets are on sale now at the auditorium, 1204 Fair Park Boulevard in Harlingen. All seats are reserved. Vocal Trash has rescued items from landfills to create up-cycled percussive props, a milk-urn bass, and toolbox guitars to accompany their skilled singing, breakdancing, and comedy. Their unique show leaves audiences not only entertained but inspired to spread peace, love, and recycling. Along with their annual coast-to-coast touring, Vocal Trash has recently performed in Europe, Asia, and the Middle East, promoting their new original musical collection/CD, Let Peace Begin. Now, more than ever, it’s vital we think in terms of recycling to make a cleaner, healthier planet for future generations. This has been the mission of Vocal Trash since their inception. The group’s lead singer and choreographer, Kelsey Rae, takes their recycling and repurposing message a step further in her unique children’s book, THINK … Before You Throw It Away. The energetic Rae has been wowing audiences throughout her life. She first performed at the tender age of five, playing the spunky orphan Molly
in the award-winning musical, Annie. With a golden voice and amazing presence, she went on to star in over 30 stage productions. Rae’s other accomplishments include singing the National Anthem at a Seattle Seahawks game at 11 years old and appearing in more than a dozen major television commercials. Vocal Trash creator and award-winning songwriter Steve Linder pursued drums and percussion throughout his school years, both in organized and informal groups. His mastery on the drums soon led to keyboards, trumpet, bass, and harmonica. As for his vocal talents, Linder downplays his abilities and considers himself mainly a musician. But his many fans agree--he is a standout front man and vocalist with incredible comedic skills. Linder studied percussion performance at Hardin Simmons University and currently arranges and produces all of the music for Vocal Trash. Greg Dugan and Anthony Silva are among the other talented musicians and dancers in this large, crowdpleasing group. The SaberStagers are the recipients of five Hidalgo County PALM Awards, including Best Musical, the most of any high school nominated. owntown Harlingen will be celebrating Shop Small Saturday November 24 from 10 a.m. to 5 p.m. Shops will offer special sales and refreshments. There will be outdoor music on the Lozano Stage. Come and meet the men and women small-shop owners in the Downtown Harlingen District and hear their stories about operating their successful businesses (and, of course, support them and shop!). The history of this event began as an effort to support local shops that make our communities strong. American Express launched Small Business
Saturday on the Saturday after Thanksgiving to encourage people to “Shop Small” and to bring more holiday shopping to small businesses. In 2011, the Senate unanimously passed a resolution in support of the day, and officials in all 50 states participated. It even received recognition from the president of the United States. In 2013, more than 1,400 individuals and organizations signed up as Neighborhood Champions to rally their communities with events and activities on Small Business Saturday, and that number continues to grow. By 2017, there were more than
7,200 Neighborhood Champions across all 50 states. Small Business Saturday continues to be an annual holiday shopping tradition — just one part of the larger Shop-Small Movement to support small businesses every day and everywhere. Easy Philly Cheesesteak Pasta
Egg Salad - No Peeling!

• 2 tablespoons real butter • 1 tablespoon minced garlic • 1 pound lean ground beef • 8 oz. sliced baby bella mushrooms • ½ teaspoon Kosher salt • 2 tablespoons catsup • ½ teaspoon freshly ground black pepper • 3 cups beef broth (canned or homemade) • 1 tablespoon Worcestershire sauce • 8 oz. medium shell pasta, uncooked • 1 green bell pepper, diced • 2 cups shredded provolone, Swiss or • 1 medium yellow onion, diced mozzarella cheese
Start your pressure cooker on the sauté option. Once it is hot, melt the butter. Add the ground beef and let it cook, without stirring, for about a minute. After that, break it up with a wooden spoon or spatula. Once the meat is browned, add salt and pepper and Worcestershire sauce; stir to combine. Add the green pepper, onion, garlic, and mushrooms. Stir and cook for about 2 minutes. Add the catsup and broth and stir to mix. Add the pasta and stir again. Cancel the sauté setting and cover the pot, making sure the pressure valve is set to “seal.” Cook on manual/high for 5 minutes (this is for al dente pasta; cook for 6 minutes if you like your pasta softer). When time is up, do a quick release. Unplug the pot and open it carefully. Stir, then sprinkle the cheese on top. Put the lid back on, but don’t seal or turn on the pot. Allow a couple of minutes for the cheese to melt; then stir to combine. Serve hot. Makes 6 servings. •

• 1 cup water
Spray an oven-proof bowl or pan that will fit into your pressure cooker. Break up to 12 eggs into the pan. Put 1 cup of water into the cooker, and set the trivet into the water. Put the bowl of eggs on top of the trivet. Put the lid on the cooker, making sure the pressure valve is set to seal. Cook on manualhigh for 5 minutes. Let the pressure release naturally. Carefully open the cooker and test the eggs to see that they are hard-cooked. Remove the pan or bowl from the cooker and let the eggs cool. Then just chop them up and add whatever ingredients you like in your egg salad. Turkey Delight

Serves 6-8 • • • •
1¼ pounds fresh ground turkey 2 tablespoons cooking oil 2 medium onions, chopped 1 cup chopped green bell pepper or celery • 2½ cups chicken broth • 1 (7 oz.) package elbow macaroni
• 1 (15 oz.) can tomato sauce • 2 tablespoons vinegar • 1½ teaspoons sugar • 1 teaspoon chili powder • 1 teaspoon garlic salt • 6 tablespoons grated Parmesan cheese • 1½ tablespoons snipped parsley
Heat oil in Dutch oven over medium-high heat. Sauté ground turkey, onion, and pepper until meat is no longer pink. Drain, reserving juices. Set aside meat. Return juice to pan, add broth, and bring to a boil. Add uncooked macaroni; simmer 10 minutes, stirring often, until broth is almost absorbed. Stir in all remaining ingredients, except 2 tablespoons Parmesan cheese and parsley. Simmer 10 minutes. Bon Appétit! • • 5 garlic cloves, divided • 1 tablespoon unsalted butter, room temperature • 2 medium shallots, quartered through root ends • 2 1/2 cups heavy cream • 1 tablespoon kosher salt • 1 teaspoon freshly ground black pepper • 1 tablespoon thyme leaves, plus more for garnish • 4 pounds russet potatoes, scrubbed, and very thinly sliced on a mandoline • 3 ounces Gruyere, finely grated • 1 ounce Parmesan, finely grated

Preheat oven to 325°F. Cut 1 garlic clove in half and rub the inside of a 3-qt. shallow baking dish with cut sides. Smear butter all over inside of dish. Bring shallots, cream, salt, pepper, 1 Tbsp. thyme, and remaining 4 garlic cloves to a simmer in a small saucepan over low heat; cook until shallots and garlic are very soft, 15–20 minutes. Let cool slightly. Transfer to a blender; blend until smooth. Arrange potato slices in prepared dish, fanning out a handful at a time and placing in dish at an angle (this ensures every scoop will have tender potatoes from the bottom and crisp edges from the top). Shingle as you work until bottom of dish is covered. Tuck smaller slices into any gaps to fill. Pour cream mixture over potatoes and cover dish tightly with foil. Bake potatoes until tender and creamy, 60–75 minutes. Let cool. Place rack in highest position; heat broiler. Remove foil and top potatoes with Gruyere and Parmesan. Broil until cheese is bubbling and top of gratin is golden brown, 5–10 minutes. Serve garnished with more thyme leaves. Chef’s tip: Gratin can be baked 1 day ahead. Cover and chill. Bring to room temperature before broiling. •
