like a little friendly competition among friends. Whether it’s at the RC track, at the pickleball courts, at the card table, or on the golf course, you’re never at a loss for games here in South Texas. RC car racing is a sport that has made its way to RV parks in South Texas. As you’ll read on the pages that follow, the RC bug has hit San Benito, but Fun-N-Sun is certainly not alone when it comes to RC fanatics. I got a tour of the tracks at Alamo Palms and Bit-OHeaven not too long ago, and it made me want to go “play,” too! No matter what your game is, I’ll wager that there’s enough of you to put a team together and put on a friendly match. If you’re into golf, join us November 29 for our very first Winter Texan Golf Tournament at Tierra Santa in Weslaco. Going off track doesn’t matter for RC racers

It’s Friday evening and the light is
getting dim in the sky over Fun-N-Sun RV Resort in San Benito. Standing on a wooden deck, 11 people line up shoulder-to-shoulder as a computer’s voice starts a countdown over a loudspeaker. 5-4-3-2-1, followed by a loud beep. At that moment, high-pitched squeals of nearly a dozen small motors pierce the evening air as four-inch tires peel away dirt from the Zoomers RC Car Club track. The Zoomers is a radio-controlled car club that has operated and maintained a 100-by-60-foot dirt track at the RV resort for the past four years.

he Harlingen Concert Association’s 2018-2019 season opens in just two weeks, and some very affordable tickets are still available! All shows begin at 7:30 p.m. at the Harlingen Municipal Auditorium, located at 1204 Fair Park Boulevard. The opener, Thursday, November 29, is Vocal Trash, a green-minded troupe of singing drummers, musicians, and award-winning breakdancers. Vocal Trash repurposes items from landfills to create toolbox guitars and percussive props to help spread their message of peace, love, and recycling. This will be an inspiring evening of high-octane entertainment, best described as “Glee meets Stomp!” Up next on Friday, January 25, 2019, is authentic, down-home country music in its most raw, unfiltered form. The Malpass Brothers toured with the late Don Helms, former steel guitarist for Hank Williams, opened for music legend Merle Haggard on multiple tours, and have appeared on stages from the Shetland Islands to the Ryman Auditorium. If you like cornbread and hushpuppies, you’ll love their smooth vocals, skillful musicianship, and offthe-cuff quips. Canada’s premiere vocal group, Cadence, takes the stage in Harlingen Saturday, February 9, 2019. This a cappella ensemble has been wowing audiences across the continent and around the world since 1998, producing the powerful, rich sounds of a full band using only four voices and four microphones and no instruments! Their exciting show features a hypnotic blend of complex harmonies, intricate arrangements, vocal dexterity, and just plain fun. The musical journey continues Tuesday, February 19, 2019, with Five Sax, a modern brass quintet featuring accomplished musicians from the U.S., Latin America, and Europe. Five Sax’s creative approach has taken them from street theater in Vienna to some of the world’s most prestigious concert halls and music festivals. The group’s imaginative program mirrors the diversity of its members, rooted in classical music while venturing into American jazz, South-American Latin styles and European folk music. The fifth show, Saturday, March 9, 2019, features accordion virtuoso Sergei Teleshev. Classically trained at the Academy of Music in Voronezh, Russia, Teleshev and his dazzling fingers have won many regional and

“The club started with eight of us,” said Pete Gray, 80. “At first we were playing around out in the big parking lot out there. We started having meetings; we started generating some interest.” Soon the parking lot was not enough for the enthusiasts. “Tony Ortiz was the park manager at the time,” said Bruce Nelson, 85. “He said he would build a track if we had 10 members.” Not long after, they had their 10 members. In the summer of 2014, the park moved a bocce ball and volleyball court and began work on a wooden drivers’ deck and RC car track. “The very first layout I did myself,” said Nelson. “(The club) grew quite rapidly once we got the track built. It was a humble beginning compared to what we have now.” The club now has over 90 members and from January to mid-March holds competitive racing every Sunday in divisions based on car class and driver ability. “I thought, ‘Man, I want one of those cars,’” said Gail Richman, 79. “I never had done it. My husband said ‘Oh you’re crazy,’ so he’s taking a nap one day and I came up here and bought a car. My husband wouldn’t even touch it. About three months later I bought him one; now he’s driving too.” For those who are worried they are not mechanically inclined, Gray encourages them to give it a try. “This truck and the truck most of us bought are ready to run,” said Gray.

Gray said a RC car can be purchased for $200 to $400. “You bring it home, charge the battery, and go. Most of us started that way. I think most of them are still that way.” Building the cars is not an issue for Gray, who now has 15 in his home. “I have a workshop. My wife would call it a laundry room,” joked Gray. “Since I like to build things, it’s natural. I love to build them. I love it when they break.” That joy for building does not always translate to ability on the race track for vehicles that can go up to 35 miles per hour. “They say I am not a good racer, but I love to practice,” said Gray. “I tend to get excited about it; then I go off the track.”

“When you first get this thing, you are going off sideways and you don’t know left or right,” said Nelson. “After a while, you find that you’re not thinking about it.” For those with a knack for driving the cars, it can get quite competitive. Lap times are closely monitored. “About 32 seconds, that is the hot wheels guys,” said Nelson. “I am running about 36 to 37. A lot of them run around 40, 42. A few of us do it right.”
“I am very competitive,” said Richman. “I got an award here last year. I was the most improved driver from one year to the next. It’s a fun park here; it’s amazing. I love the racing.” For Gray, who spends his summers in Canada, the track is a highlight during his time in South Texas. “This is where I love to be,” said Gray. “This is why I love to be here.”

In
the culture in which we live, servitude is not considered a glamorous concept. Who in their right mind would sign up for a life of servitude? And yet that is what God has in mind for his people. God knows how service to others will bless us, as well as the community around us. Serving is the way to put aside our self-centeredness, and in turn, we become connected, possibly indebted, to those around us. When we start seeing the genuine needs of others, it deters our own sense of entitlement. None of us have become the people we are alone--but by the sacrifice and investment of many others from our earliest years. And that doesn’t take into account what Christ has done for us. Serving reflects the love of God in us and reveals the bonds between us. When we notice service to us and when we serve others, we experience God’s grace, and it then points people to Christ. Jesus modeled grace that goes way beyond our understanding. He emptied himself for us, though we deserved nothing. His example calls us to “submit to one another out of reverence for Christ” (Ephesians 5:21).
In our “me-first” culture, God calls us to put others first. What a challenge! Are we looking out for others the way we look out for ourselves? Can we put their needs ahead of our own? How are you serving in your community? •

aterpillars are masters of disguise, often hiding in plain sight while quietly munching under their favorite leaves. Local butterfly specialist Berry Nall will present “Uncovering Cryptic Critters: Tips and Tricks for Finding Caterpillars” at the South Texas Border Chapter, Texas Master Naturalist‘s meeting Monday, November 19. Following clues like a detective and looking at things in a different light can help reveal hidden caterpillars. Nall’s presentation will include photographs, as well as different methods of locating these illusive and often misunderstood stages of a butterfly’s life cycle. Nall is a pastor and high school teacher. He has been fascinated by butterflies, at all stages of their lives, for more than 10 years. He has been seeking to identify, document, and rear as many species as possible from egg to adult. Living in Starr County near the Mexico border, Nall has had the opportunity to raise and study a variety of exotic tropical butterflies. write another column for my community’s newspaper based on the news of 100 years ago. It is amazing how many times, as I read through those old news stories, I find names of people I knew. Granted, they were much younger men in 1918 than when I knew them, but still. That is a century ago. I get the same weird sensation when I connect with ancient artifacts. I recently read a book about the Barbary
Coast pirate war. One of the American ships that served in that adventure in 1801 was the USS Constitution. I have been on that ship. It sits today in the Boston Harbor. That ship sailed 217 years ago, yet I have walked her deck and experienced her five-andone-half-foot-high ceilings below deck. It’s freaky! My experiences are no different than most other folks. We all have connections to our history. There is no better confirmation of that than those TV ads for getting your DNA tested to find out your ethnic heritage. No doubt, many people have some interesting surprises when they do that. One thing I have learned is that we are not totally the products of
our own formation. Each of us is shaped by the sum total of many generations of accumulated tradition, ethnicity, struggle, accomplishment, moral choice, and DNA. As a retired person it is tempting to think I am who I am today because of what I did and accomplished. Certainly there is a percentage of each of us about which that is true. There is also some percentage we owe to all who went before us, both within our lineage and in our communities and nation. I just read a little quotation. It reads, “Every once in a while I open my mouth and my mother comes out.” So true, but perhaps understated. I think there is a whole family reunion in there. I’m just sayin’. •

It’s Fiesta Season!

leepy Valley Resort in Mission has a Taco-Tuesday feed that is open to the public and serves about 200 people each week. I was invited to be their guest to see what all the excitement was about since tacos are pretty common in the RGV. Sleepy Valley, however, has an unexpected star of the show--Kent’s famous charro beans, and they are wonderful! I have been a charro-bean fan since my first season as a Winter Texan. They are unheard of in Iowa, where I live the rest of the year. We have baked beans, ham-and-bean soup, calico-bean casserole, but not a charro bean anywhere in the Hawkeye State, unless someone has enjoyed them in Texas and brings home the recipe. Kent’s beans are the best I’ve tasted, and I know my charro beans! I seek them out whenever I visit a restaurant. Kent and Debbie Taylor are the activity directors at Sleepy Valley. They have a food operation that is pretty
unique. Over the years, they have tweaked the kitchen process so it now works like a well-oiled machine. They serve everything from these popular tacos to a full prime-rib dinner New Year’s Eve. The Taco-Tuesday meal features hard-shell tacos with all the trimmings, a cup of those super beans, and coffee for $6. Bottled water and pop are available for purchase. And, are you ready? It’s all you can eat! Every Tuesday, they go through 120 pounds of filling, 800-1000 crisp corn taco shells, 20 heads of lettuce, three gallons of salsa, and 17 pounds of shredded Cheddar cheese plus sour cream, chopped onions, and jalapeños. They also go through nine #10 cans of pinto beans! When you step up to the serving counter, which begins serving at 11:30 a.m., you are given three filled shells. You add the toppings of your choice at another table and then chow down. During the meal, you’ll be treated

• 2 #5 cans pinto beans (This is the size can tomato juice comes in. Or use the equivalent weight in smaller cans.) • 1 large onion, chopped • 2 cans Rotel tomatoes • 6 tablespoons Fiesta-brand pinto bean seasoning • 1 pound bacon, cut into pieces • 1 bunch fresh cilantro, rinsed and chopped • 6 cups beef broth • 1 tablespoon chopped garlic • 1 tablespoon black pepper Drain the beans and put them into a slow cooker with all of the other ingredients. Set on LOW for about 5 hours or until the bacon is cooked through. Enjoy!

Pre-heating the covered slow cooker before you put the ingredients into it helps the cooking start more quickly. • to music by either Evelyn or Ginni, who take turns at the keyboard. We enjoyed Evelyn’s playing and singing very much--not too loud, so you can still have a table conversation. The tacos are tasty; no doubt about it. I would feel badly if I didn’t share the recipe for those wonderful beans, though. Kent told me he uses about 1½ pounds of bacon for each roaster of beans; this night they had three full roasters, and I doubt there were many left. I know I had seconds! The
“secret” ingredient is Fiesta-brand pinto bean seasoning. I already have my jar to take home since I know I won’t find it outside of Texas. I would suggest other Winter-Texan bean lovers do the same. (Sleepy Valley kindly reduced the quantity in this recipe so you don’t have to invite a few hundred of your closest friends to dinner! The beans were originally made by another resident of the park, which is why they are named after her.) •

Serves 12 • 2 cups crushed graham crackers • ¼ cup sugar
• 6 tablespoons butter, melted
Preheat oven to 350 degrees. Using a food processor, crumble the graham crackers. Add melted butter and sugar. Press into 9-inch springform pan.

Beat cream cheese, sugar, and brown sugar; mix until light and fluffy. Add eggs, one at a time, beating well. Add remaining ingredients on medium speed, mixing thoroughly. Pour batter into prepared crust; bake for 1 hour.

Electronic Pressure Cooker Spaghetti Submitted by Sandy Olson
• 2 tablespoons olive oil • 1 jar (24 oz. or so) spaghetti sauce • ¼ cup diced yellow onion • 8 oz. uncooked spaghetti • 1 teaspoon minced fresh garlic • 2 cups water • 1 pound lean ground beef • Salt/pepper to taste Set the cooker on sauté (or, if your pot does not have this option, use a skillet on the stovetop). Add the olive oil, onion, and garlic and cook until the onions are softened a bit. Add the ground beef and cook until no longer pink. Cancel the cooker setting and drain off any drippings. Turn the cooker back on and choose the Manual setting--on high. (If you browned the ingredients on the stovetop, add them to the cooker.) Add the jar of spaghetti sauce. Break the spaghetti in half so it fits into the pot and lay it on top of the sauce. DON’T STIR. Pour the water around the edge of the cooker so it goes into the bottom and doesn’t wash the spaghetti sauce away. Push the spaghetti down into the liquid until it is covered. Secure the lid and set the pressure valve to SEAL. Set the cooker for 10 minutes. (NOTE: if you are using thin angel hair pasta, you might want to set it for 8 minutes as it cooks more quickly.) When the cooker beeps, use the quick release. Carefully remove the lid, stir the spaghetti and sauce and serve! •
Topping:
• 6 teaspoons butter, melted • 1 cup walnuts • ½ cup brown sugar (1 cup for sweeter taste) Mix together melted butter, brown sugar, and walnuts. Sprinkle topping on cheesecake; bake 15 minutes longer. Let cool in a draft-free area. Run a small knife around the edge of springform pan to prevent the cheesecake from cracking in the middle. When completely cool, cover and refrigerate. Note: Use dental floss to cut cheesecake neatly; then pull floss out sideways. • 4 cloves fresh garlic • 1 medium onion, diced • 3 tablespoons flour • 4 tablespoons tomato paste • 4 cups chicken stock • 2 tablespoons real butter • 1 tablespoon EACH parsley flakes and Italian seasoning • 1 teaspoon celery seed • 2 cans (14 oz.) fire-roasted, diced tomatoes • ¼ cup heavy cream • 2 teaspoons sugar Using sauté function, cook garlic in butter. Mix in flour until incorporated. Pour chicken stock into the pressure cooker with remaining ingredients, except cream. Mix well; set cooker on Manual and set valve to SEAL. Cook for 15 minutes and do quick release of steam. Using an immersion blender, blend until smooth, or if you do not have an immersion blender, place one half at a time into a regular blender to process. but I urge you to get to know this buffalo chicken dip a little better. It’s a quick, one-pan snack, spicy from the frank’s hot sauce, luscious from sour cream and cream cheese and a little funky-do from the blue cheese. With just the right amount of acid and salt, it’ll keep people coming back for more. It also plays well with a cold beer, but you already knew that. Marcello’s is open and more beautiful than ever! Bon Appétit! • • 1 tablespoon unsalted butter • 2 cups shredded, cooked chicken • ½ cup Buffalo-style hot sauce • ½ teaspoon fresh lemon juice • ¼ cup sour cream • 4 ounces cream cheese, cut into pieces and softened • ½ cup freshly shredded white Cheddar cheese • ¼ cup crumbled blue cheese • 1 ½ teaspoons finely chopped chives, or to taste • Celery sticks, carrot sticks, bread, potato chips, and-or tortilla chips, for serving

Heat the oven to 375 degrees. In an 8-inch cast-iron or ovenproof skillet, melt the butter over medium-high heat. Add the chicken and hot sauce and simmer until the sauce has thickened and reduced by half, 2 to 3 minutes. Turn off the heat, then stir in the lemon juice, sour cream and cream cheese until combined. Sprinkle the Cheddar cheese over the top. Bake until bubbling around the edges and the cheese has melted, about 10 minutes. Immediately garnish with blue cheese and chives. Serve with chips, bread or vegetables for dipping. •
