Free informational event about Operation Reveille for veterans Special to Welcome Home RGV

bout two-thirds of the veteran population in Hidalgo County is not enrolled for VA health benefits. In an effort to reach unenrolled veterans of the Rio Grande Valley, the RGV Community Veterans Engagement Board is scheduled to host Operation Reveille, a free informational event, at the South Texas College Student Union (3201 W. Pecan Boulevard in McAllen) November 8 from 6:00 to 8 p.m. Operation Reveille will give veterans the opportunity to learn about various VA programs and services and, potentially, to enroll in the local VA Texas Valley Coastal Bend Health Care System during the event. Why is enrollment important? • Veterans enrolled in VA health care have health coverage that meets the healthcare law’s standard and do not have to take additional steps for healthcare coverage under the law. • Veterans enrolled in VA healthcare in the Rio Grande Valley have access

to top-rated mental health programs. Services include evidence-based therapy for PTSD, TBI, and MST. • From 2005 to 2016, there was a lower suicide rate among veterans enrolled in VA health care (13.7 percent) than among veterans who were not enrolled in VA healthcare (26.0 percent). Veterans are encouraged to bring a valid photo ID, their DD 214 Certificate of Release or Discharge, and a VA Benefits Summary Letter if they are already service-connected through the Veterans Benefits Administration. This documentation will help determine if veterans qualify for health benefits, employment assistance, living expenses, education assistance, or burial expenses. Childcare will be provided for children ages 4-12, and refreshments and door prizes will be provided. For more information, call United Way of South Texas at 956-686-6331. •

About the RGV Community Veterans Engagement Board (CVEB): The RGV CVEB started in May 2017 under the leadership of Thelma Garza, president of United Way of South Texas, and Jaime Longoria from the Hidalgo County Community Service Agency. The purpose of the RGV CVEB is to establish a better line of communication between veterans and the VA representatives in different offices. The RGV CVEB also aims to identify gaps in services and find the resources that will meet the veterans’ needs. Currently, the RGV CVEB includes representatives from various social-service organizations, higher-education institutions, and federal employees of the VA. Soon, the Board hopes to include business professionals and clergy.

Hip pain and arthritis treatment and healing to be discussed in Weslaco Special to Welcome Home RGV

rthritis of the hip, and how to manage pain many seniors experience while walking, will be discussed during a free Senior Health Talk by Dr. Michael Sander, orthopedic surgeon. The talk will be given Tuesday, November 13, at 12:30 p.m. at the KMC Conference Center, a two-story building on the west side of Knapp Medical Center, 1408 E. 8th Street in Weslaco. As part of his talk, Dr. Sander will discuss the option of hip replacement surgery, which, in many cases, can help restore mobility to patients with arthritis and other conditions by allowing them to walk again without pain. Many Winter Texans and Valley residents who have undergone this surgery say they simply wanted to be rid of their pain so they could return to a normal life with their grandchildren and to activities they enjoy. Dr. Sander is now performing a less-invasive type of hip surgery at Knapp Medical Center. The anteriorapproach surgery is a different way for the surgeon to operate on patients who have pain from arthritis and who need hip-replacement surgery or hip-fracture repair. With the anterior approach, the surgeon performs the surgery from the front of the hip joint, which results in less trauma to the hip muscles than some traditional approaches. “This is a less-invasive alternative to traditional hip-replacement surgery, as well as to hip-fracture repair in some cases,” Dr. Sander said. “It allows the surgeon to lessen trauma to muscles and tendons while performing hip surgery. There is less damage to the muscle because you leave the main hip muscles attached during the surgery.” Dr. Sander, a Weslaco native, has

WWII veterans, whose numbers are rapidly declining, will be recognized and honored for their service to our country. This is a day when we pause for a few minutes to remember all veterans who have placed their lives on the line to protect our precious freedom and independence. Many people may not remember that approximately 1.3 million American men and women serving in our military have lost their lives while gaining, and defending, our freedom. While at the Veterans War Memorial of Texas, everyone will also have a chance to see the construction of 18 new granite panels that will be inscribed with American history stories written by schoolchildren. McAllen Public Library awarded grant

from Texas State Library and Archives Commission Grant to assist patrons with free basic computer classes Special to Welcome Home RGV

he Texas State Library and Archives Commission (TSLAC) recently awarded McAllen Public Library a $6,000 grant under its Impact Grant program. Thanks to this grant, McAllen Public Library will offer patrons an opportunity to attend a free, eight-week computerbasics course that will be conducted three times per year. Get Started with Computer Basics will be delivered in English and Spanish to support the bilingual community. Classes will begin Wednesday, November 28. This project is one of 59 made possible this year by a grant from the U.S. Institute of Museum and Library Services (IMLS) to the TSLAC, under the provisions of the Library Services and Technology Act. The Impact Grant provides seed funds in three focus areas: business/workforce development and digital literacy; family and early childhood literacy;

and electronic content access and delivery. McAllen Public Library is one of only 22 Texas libraries to be awarded the grant for 2019. “This grant will allow us to give our users access to the tools they need to thrive in today’s economy, whether it’s business, workforce development, or electronic access to information,” said Kate P. We also promote spirit at school activities, literacy at different school-sponsored events, and social consciousness for serious topics, such as suicide, depression, cancer, and bullying. Making all of this happen requires

sizable funds. This year, we decided to host a fundraiser to not only raise money but also to give back to our community. IB Festive was the answer. We are also raising funds to send our students to our annual State Student Council Convention. The Texas Association of Student Councils hosts a convention where over 5,000 students in the state come together to learn new ways to promote a sense of community, not only in our schools but in our cities, as well. This year will be the first year our Council will be competing with other student councils in the state in the areas of “Top 10 Video” and “Top Ten Project.” The funds raised will pay for registration, hotel, transportation, and meals. In the words of Ralph Waldo Emerson, “To know even one life has breathed easier because you have lived---this is to have succeeded.” This is what we hope to instill in all Lamar Academy/IB Student Council members and in the people we serve. Vocal Trash kicks off fall concert series in Harlingen Special to Welcome Home RGV

Vocal Trash rescues items from landfills to create toolbox guitars and numerous repurposed industrial percussion props to accompany their skilled singing, breakdancing, and comedy. These world-class entertainers have toured extensively, made guest appearances on morning shows, been the subject of countless news articles and earned a substantial grassroots fan base from New York to Seattle and abroad. As Robert Kieth with the U.S. Department of State Cultural Programs explains, “We continually send Vocal Trash overseas for our Peace – Love – Recycle initiatives. By design, their performances transcend all barriers, connecting with the human spirit like no other.” On a recent tour of Europe, Asia, and the Middle East, the group also promoted their new original musical collection/CD, Let Peace Begin. With electrifying energy and a golden voice, Vocal Trash choreographer Kelsey Rae has been wowing audiences all her life. She first stepped on stage at the tender age of five, playing the spunky orphan, Molly, in the beloved

Tony-Award-winning musical, Annie. It wasn’t a “Hard-Knock Life” for Rae but rather a hard-work one as she went on to star in over 30 stage productions. Madison Avenue came calling, eventually, and she has since appeared in more than a dozen major television commercials. Vocal Trash creator and awardwinning songwriter Steve Linder was born in West Texas. Linder’s father played drums in the 40s and 50s, which greatly influenced this budding musician. His mastery on the drums soon led to keyboards, trumpet, bass, and harmonica. Though he considers himself mainly a musician, Linder also is a standout front man and vocalist with incredible comedic skills. Linder studied percussion performance at Hardin Simmons University and currently arranges and produces all of the music for Vocal Trash. Greg Dugan and Anthony Silva are among the other talented musicians and dancers in this large, crowdpleasing group. Dugan has been playing drums and nourishing his abilities since the age of eight when his parents gave him his first drum kit. He studied music at the University of North Texas, and his love of Latin/ Brazilian music enabled him to study the culture, music, and rhythms in Brazil. Anthony Silva of Houston, aka “Beast,” has been dancing for 14 years. When not touring, Silva dances with the Houston Rockets Launch Crew and his own group, Vicious Germz Crew. hanksgiving is a time to reflect, to look back on the people and experiences that have been a part of your journey and then to GIVE THANKS! We at The Lamb’s Loom have so very much to be thankful for, and we would like to share some of that with you. Our beginnings started approximately 13 years ago over a few cups of coffee with a bunch of KnitWits just dreaming of the possibilities. See, the KnitWits (short for Knitting a Witness for Christ) are a bunch of friends who meet weekly to knit, loom knit, and crochet items to send, with missionaries, all over the world. Over the past 13 years, there have been thousands of beautiful, handmade gifts sent around the world, way more than we ever dreamed! This all started by helping out a friend whose church was sending a medical mission team to Kenya. We all began loom-knitting hats and prayer shawls and then sent them off, full of love and prayers. Since then, we have also been invited to teach others in their homes and at schools and workshops and have enjoyed all the opportunities to teach and share what God has been doing through just a little bit of yarn. Over the years, we have met in coffee shops (Thanks to all those places that gave up space for a bunch of KnitWits!) and, sometimes, in each other’s homes. We often talked about one day having a place of our very own, a place where we could expand who we serve, teach more people, and encourage them to reach beyond themselves to help others. Four years ago, that dream became a reality when our friend, Jacque, moved her flower shop and had just enough space for a few KnitWits. We found ourselves standing in The

Lamb’s Loom, an “official” home of our own. After 13 years of bags of yarn, hats, and shawls stuffed in closets and in the back of our cars, it was amazing to see that coffee-cup dream become a reality. Thanks to everyone’s help, encouragement, and donations AND to new people joining in--you guessed it, it wasn’t long before we were bursting at the seams. So during this past summer, we moved to a larger location! That means we have received another answer to our dream. We are now able to expand who we serve and how. Our concept is simple. We have the yarn and gift shop to help raise funds, people bring in donations of handmade items that we disperse, and as a 501 (c)(3), we are able to accept financial support, too! There have been many projects over the years, and if we have learned anything, it is that we are blessed to have fun together, make new friends, play with yarn, and fill that donation chest. God is in charge of distribution. Our heartfelt thanks to everyone who continues to help us along this incredible journey. We do hope you’ll come by and visit and hear a few stories of the encouragement these gifts have been to so many around the world and become a PEG--Pray, Encourage, Give. The Lamb’s Loom is not just a yarn shop; it’s a ministry and a mindset. Our new shop is located at 1102 Tamarack in McAllen. I joined the U.S. Navy right out of high school and served 20 years as a Russian linguist and language instructor. My wife and I met in the Navy and were married in Japan in 1985. I was a high school ESL, English, and Russian teacher, as well as a high school bowling coach in the DFW area for 15 years. The name of this column, Sola Fide, is one of the three “solas”

that define how we are returned to a right relationship with the Creator: By God’s grace alone (sola gratia), through faith alone (sola fide), on the basis of Scripture alone (sola scriptura). I hope anything you find here will be received with an open heart and mind; the world can seem cruel, even God-less at times. Do you believe in God, Alex? A

couple of years ago, my wife and I lived in Indiana. One bleak and wintery December afternoon, I caught an interesting episode of the 80s sitcom Family Ties on the classic reruns channel Antenna TV, a two-part story in which character Alex Keaton (played by Michael J. Fox) loses his friend in a car accident. “My Name is Alex” aired in 1987 and is a departure from the typical weekly episode of the series; the theme behind the plot— death—caught my attention for a couple of reasons. The first and most obvious is that the death of a friend or a loved one stings with a pain like nothing else in this life. The second is that death, the same death that so callously wounds the living, without empathy yet with great chutzpah, presses a bony finger into the chest of the aggrieved and whispers, “Do you believe in God?” Even an atheist has to wonder at the gaping hole left by death. The first half of the episode sets up the second half, which is a semisoliloquy by Alex, who, after wrestling with the regret and guilt and shame and disruption of life that accompanies the loss of someone close, is asked by a counselor whether he believes in God. His response is very real. While the theological implications of this story are intentionally generic, and the message is not necessarily Christian, the questions we ask as fragile, emotional, irrational, and self-serving creatures in death’s wake invariably turn to God. And, typically,

by Rev. E.B. Holschuh it’s in a moment of weakness or anger when the question of God comes up. Because we want answers. People, generally speaking, religious or not, Christian or other, deal with death differently. Death brings the clan together, uniting siblings, cousins, aunts and uncles; it’s a chance to reconnect with those family members not only geographically distant but estranged for whatever reason. And a death in the family inevitably brings up the topic of separation.

It is with hope, rather than apprehension or fear, that Christians look upon the grave, secure in God’s promise that it is not the end.

Most Christians, especially those who have lost a loved one, are familiar with the story of Jesus raising Lazarus from the dead. The Apostle John relates a conversation between Martha, the sister of Lazarus, and Jesus, which begins with Martha blaming Jesus for her brother’s death because he arrived too late to heal him. Martha is just like the rest of us, really. We face off with God when He “takes” someone from us (and without so much as an explanation). Jesus knows that Martha is understandably upset but also knows that there’s a Gospel moment in all of this. Before he deals with

Lazarus, Jesus says to Martha, “I am the resurrection and the life. Whoever believes in me, though he die, yet shall he live, and everyone who lives and believes in me shall never die. Do you believe this?” (John 11:25-26) Funerals and memorial services are for the living, meant to reflect our Christian sentiments about physical death, seen as an end forever by the unchurched but as a transition by the believer through faith. As with Martha, the passing of a friend or loved one still provides Jesus with a Gospel moment. If we can listen to His words and answer His question, “Do you believe this?” with an unwavering “Yes!” then we are not only witness of, but witnesses to, the Gospel message of hope and the anticipation of bodily resurrection and a reunion with those we knew in this life--God’s promise of life everlasting in Christ. It is with hope, rather than apprehension or fear, that Christians look upon the grave, secure in God’s promise that it is not the end. Scripture assures us that, upon death, believers are in the hands of God. What could be a more comforting thought for the living? If you can find this Family Ties episode, watch both parts. Compare the Alex in the first 10 minutes to the Alex in the last 10 minutes. Consider his response to the counselor’s question, similar to Martha’s answer to Jesus (John 11:27). Then consider that inevitable whisper in the ear...“Do you believe in God?” •

Valley and Winter-Texan artists and poets asked to submit works for juried show

he University of Texas Rio Grande Valley College of Fine Arts, Edinburg, and South Texas Border Chapter Texas Master Naturalists are co-sponsoring an art and poetry show titled “Nature of the Valley.” The organizers have opened a call for artists’ and poets’ works to be submitted for review by December 7. Selection of works will be announced via e-mail by December 28. Selected works are to be delivered to the venue January 18. Submissions are open to artists and poets over the age of 18 who live, or have previously lived, in the Rio Grande Valley, including Winter

Texans and UTRGV students. The theme of the visual art and poetry submissions must have something to do with nature in the Valley. The purpose of the theme is to create awareness of the beauty, and conservation of the unique ecosystem and habitat, of the Rio Grande Valley by depicting local habitats, flora or fauna, landscapes, and more, artistically or in any poetic style. All media, two- and threedimensional, except photography, may be submitted. Poetry also must be inspired by nature in the Rio Grande Valley. This is a juried art show. Artwork

1 lb. raw shrimp, peeled and deveined • 2 Tbsp. tequila 4 Tbsp lime juice. • 2 cloves of fresh garlic – minced ½ tsp. cayenne pepper • ¼ tsp. salt ¼ tsp. fresh ground pepper ¼ cup chopped, fresh cilantro (optional) Place all ingredients in a plastic storage bag, along with the shrimp, and refrigerate for about one hour. (Longer than that, and the lime juice will begin to ‘cook’ the shrimp.) Skewer and grill for about 2 minutes per side or until shrimp are opaque. This works equally well with whole, head-on shrimp. If using whole shrimp, use a kitchen scissors to slit the shrimp from head to tail and devein them. Grill for about 3 minutes per side. We like to drizzle or dip the shrimp in melted butter with lemon juice. Enjoy! Buen apetito! •

ne thing I really miss when we are away from the Valley in the summer is the availability of gulf shrimp at a reasonable price. Tony, our H-E-B fishshop guy and I are on a first-name basis. Sometimes we buy them from the counter and sometimes packaged frozen. As the saying goes, “It’s all good!” Today I am suggesting a shrimp marinade for grilled shrimp – simple but good. This recipe will handle a pound of shrimp.

• 2 pounds cubed raw chicken breast (about 4 large) • 1 cup chopped onion • ½ cup chopped fresh parsley • 1 cup chopped celery • 2 cloves garlic, minced • 3 cups chicken broth (homemade or canned) • 1 teaspoon dried thyme • 2 cans (10.5 oz. each) cream of chicken soup • 1 teaspoon black pepper • 1 can “grands-style” refrigerated biscuits • 1 tablespoon low-sodium bouillon granules • Salt, to taste • 2 cups frozen peas and carrots Place the chicken, parsley, garlic, thyme, pepper, and bouillon granules into the pot of your pressure cooker. Mix well. Next add the vegetables and mix again. Pour the chicken broth over all, and mix once more. Pour the cream of chicken soup over the top, but do not mix this time. Cut each biscuit into quarters and place on top, making sure they are spread out evenly. Place the lid on the pot, set the pressure valve to seal, and cook on high pressure for 5 minutes. Allow for a complete natural release, which may take up to 30 minutes. Adjust salt and other seasonings according to your tastes. Serve and enjoy! •

Shortcut Boneless Pork Chops Submitted by Sandy Olson

• 4 center-cut boneless pork chops, 1-inch thick • ¼ cup tomato paste • 1 tablespoon vegetable oil • 2 tablespoons cornstarch • 2 cups water • 2 tablespoons cold water • 1 packet dry onion soup mix (your favorite flavor) • 1 can (8 oz.) mushrooms, drained Season the chops with salt and pepper to taste. Using the sauté option, heat the pressure cooker. When hot, add the oil. Brown the chops on both sides, two a time. When they are browned, remove and add 2 cups water to the pot and stir to unstick the browned bits. Cancel the cooker setting. Add the onion soup mix and tomato paste and stir. Return chops to cooker. Cover the pot, setting the pressure valve to seal. Set the cooker to manual high and cook for 15 minutes. Allow pressure to release naturally for 10 minutes then do a quick release. In a small bowl, combine cornstarch and cold water, stirring until well mixed. Remove chops from pot, turn on sauté setting again, and pour the cornstarch slurry into the pot, stirring constantly. Add canned mushrooms to the gravy and stir until it thickens. Serves 12-15 • 1 (16 oz.) can whole cranberry sauce • 3 medium bananas, mashed • 2 cups miniature marshmallows

In large mixing bowl, combine all ingredients. Mix with spoon and pour into glass dish. Place in freezer until firm.

This week we turn to a classic comfort food, just like Mom used to make.

Pot Roast. It starts with a cut of beef that, on its own, is rather tough. But through the braising technique (cooking in liquid, low and slow) is transformed into tender fall-apart yummy goodness. Together with fall’s root vegetables, this dish is classic comfort on a Sunday afternoon. On a side note, the renovations at Marcello’s are going well but a little slower than we had hoped. We will be open as soon as humanly possible and I promise you will be delighted with the fresh new look and changes! We are very excited to share our new home with you, our special guests & friends. Bon Appétit! • • 3 pound boneless beef chuck roast • Kosher salt and ground black pepper • 3 tablespoons canola oil • 4 tablespoons butter • 2 medium red onions, cut into quarters • 4 carrots, peeled and cut into 2-inch pieces • 3 stalks celery, cut into 2-inch pieces • 8 cremini mushrooms, halved

• 2 parsnips, peeled and cut into 2-inch pieces • 8-10 peeled garlic cloves (equivalent to one garlic head) • ¾ cup tomato paste • 2 bay leaves • 3 sprigs rosemary • 1 ½ cups red wine, preferably cabernet • 4 cups low or no salt beef stock

Preheat oven to 340 degrees. Season meat generously with salt and pepper. On the stove top, heat oil in a large Dutch oven, or other heavy roasting pan with a lid, over medium-high heat. Sear the meat until a dark crust forms, 3 to 4 minutes per side. Remove meat to a plate. Reduce heat to medium and add butter to the pan. Melt the butter and add the garlic and vegetables, stirring frequently and scraping the bottom of the pot, until the vegetables start to color, 8 to 10 minutes. Add tomato paste and cook, stirring frequently, until it darkens slightly, about 5 minutes. Add bay leaves, rosemary and wine and cook, stirring occasionally, until liquid is reduced to a thick gravy consistency, 5 to 7 minutes. Return meat to the pot. Add stock, then cover the pot and transfer to the oven. Cook for 2 hours 20 minutes.

From Causeway, turn right on Padre Blvd.

Let roast sit at room temperature for at least 10 minutes. Remove meat to a cutting board to slice. Discard bay leaves and rosemary stems. Taste the cooking liquid and season with salt and pepper as needed. Serve slices of meat in shallow bowls along with the vegetables and a generous amount of sauce ladled over top. •
