Cheers to 25 years: Rio Grande Valley Birding Festival turns 25 Special to Welcome Home RGV
I
n its 25th year, the Rio Grande Valley Birding Festival is gearing up to receive over 800 visitors to the City of Harlingen. The festival kicks off with a Welcome Reception, where festivalgoers, guides, speakers, and VIP guests will come together and Mayor Boswell will issue a proclamation honoring the l o n g s t a n d i n g Great Kiskadee efforts and contributions of the RGVBF to the City of Harlingen and the Rio Grande Valley. Also on the slate to commemorate the 25th Anniversary is a Reunion Celebration, which will honor the founding members of the RGVBF and give invited guests a walk down memory lane. The festival will run from November 7th to 11th, touting more than 120 field trips into the area’s unique habitat, led by experienced guides. The Rio Grande Valley’s ecosystem is comprised of Ferruginous Pygmy Owl coastal habitats in the east, desert habitats in the west, and a lush corridor of riparian woodlands along the river. This diversity makes the RGV an optimal home to over 500 species of birds, 30 of which can only be found here--birds we call our “RGV
Specialties.” The RGVBF has curated a slate of speakers, including Richard Crossley, with his lecture There & Back, Rosemary Mosco, with her innovative discourse on how she is Giving Science Wings, and Steve Howell teaching his method for 12-Step Identification. The RGVBF prides itself on its offering of a variety of activities for birders and nonbirders alike, including Jonathan Wood and his Raptor Show, a live performance of a falconer with his collection of magnificent hawks, owls, eagles, and falcons, The Big Sit, where anyone can help count birds from within a 17-foot circle, and Baile Folklorico, a celebration of the RGV’s local music and dance, all open to the public! The RGVBF will also hold a Silent Auction and the Birder’s Bazaar, a soldout trade show available for patronage. t The Lamb’s Loom, we just celebrated our FOURTH BIRTHDAY! This past spring, as some of you know, we relocated the shop. We have our own place now, located just a few blocks from our old location. The new address is 1102 Tamarack in McAllen. The new Sit-n-Knit Room is cozy and has a chair waiting just for you. We would love to have you come join us. For those who are new to the area, let us introduce ourselves. We are an ALL-volunteer, nonprofit, prayershawl ministry and have opened a yarn shop to help fund some of the many things we do. Our wonderful group of volunteers we affectionately call “The Shepherds,” are eagerly waiting to help you. These terrific ladies have done a little extra training just for you; whether you are interested in our class schedules, you’re looking for special yarn or gifts, or you just want to put your feet up in the Sit-n-Knit Room, The Shepherds are here to help “shepherd” you about. As on a loom, every peg is important.
while back, I was sitting in a comfortable chair watching a baseball game. The score was 3-1. All of a sudden I noticed the score was 9-1. My team had scored six runs. I had missed it all. While this loss of time might be evidence of an alien abduction, it is more likely that I fell asleep for a few minutes. That was bad, but nothing like my wife’s comment as we were sitting with our son wondering what to do when we visited him in New York. I said we could see a Yankees game,
Oh, where did the time go? which everyone vetoed. Noting that we were staying in Brooklyn, my wife suggested we see a Dodgers game. When we pointed out that the Dodgers had moved from Brooklyn some time ago, she asked, “When did that happen?” That is really the question. When did life happen? Where did the time go? I was in the middle of a career, raising kids and doing life. All of a sudden, everything is different. Much of what I had valued, dreamed of, and worked hard for was over. I was retired. We all face that time when everything changes. Even though it took us many years to get to where we are today, most would agree that the time went fast…too fast. I don’t miss the work life too much, although it was very interesting and the sense of worth it brought was invaluable. I do miss the adventures of growing up, and the thrill of getting
to know a young lady. But what I miss most is the kids. I would ‘give much’ to have another chance to do the tuck-in routine at bedtime, play those ballgames in the backyard again, or watch them off on their first dates. I would even enjoy going through the pain of unloading their stuff in their freshman college dorm. Although I would give much, there is no one to whom I can write the check. No one can send us back. We can only go forward. So forward it is, but with the joy of seeing all those great times with those kids now manifest into the sum total of who they have become as adults. Maybe it was all designed to be that way. Going backward is not usually a productive movement. I know it never was in all those Candy Land games we played. Forward is good. At least we can go with all the good memories. I’m just sayin’. •

Invitation to join the Texas Master Naturalists Special to Welcome Home RGV
R
egistration is open to join the 2019 Rio Grande Valley Chapter Texas Master Naturalist training class. Cameron, Hidalgo, and Willacy County residents and Winter Texans are welcome. Texas Master Naturalist is a unique volunteer educational program sponsored by Texas A&M AgriLife Extension Service, Texas Sea Grant Program, and the Texas Parks and Wildlife Department. “Texas Master Naturalist chapters are made up of volunteers with diverse interests who are involved in myriad activities to learn about, work with, and help educate others about the special land in which we live,” said chapter sponsor, Texas A&M AgriLife Extension Agent Tony Reisinger. “When nature is left to itself, a unique ecosystem develops -- after hundreds of years,” Reisinger said. “Today, that unique ecosystem is what Texas Master Naturalists learn about and help sustain, the Rio Grande Valley’s native habitat and the critters that depend on it.” Classes are taught by local university professors and field experts from the Texas Parks and Wildlife Department and the U.S. Department
of Agriculture. Beginning January 9, trainees attend weekly Wednesday-evening classes in San Benito from 6 to 9 p.m. The courses run through April 3 and are held at the Cameron County Annex Building conference room at Williams Road and Highway 83/77. There are Saturday field-trip classes to many of the Valley’s nature parks and other locations of interest. Enrollment will be capped at 25 trainees. Trainees are encouraged to join volunteer teams with other chapter
members and work among more than 60 local partners, which include federal and local wildlife parks, coastal naturalist programs, cities, schools, and other public entities. There are hundreds of opportunities available to volunteers, from studying ocelots and other mammals to joining cutting-edge university studies, developing public native gardens, and learning about native plants and habitat, bird migration, shore birds, and Gulf and beach inhabitants and trends.
The Rio Grande Valley Chapter Texas Master Naturalists also offer free PowerPoint presentations to groups on a variety of native subjects and free guided nature tours at Harlingen’s Hugh Ramsey Nature Park; they train as docents and nature guides at local wildlife preserves. The chapter has monthly guest speakers the second Tuesday of each month at 7 p.m. Meetings are free and open to the public. The deadline to apply for the 2019 class is November 30. The cost is $150 and includes the textbook, fees, and a one-year membership. Full scholarships are available. Requests for scholarships are due November 15. he Epilepsy Foundation Central & South Texas announces the Walk to End Epilepsy-McAllen. The walk will be held Saturday, November 3, at 8:30 a.m. at Fireman’s Park, with refreshments and family-friendly activities also scheduled Community members are invited to run or walk along a noncompetitive route at Fireman’s Park. Those unable to attend can register as a “virtual walker.” The walk provides social and educational opportunities for people with epilepsy and their family members. More than 154,000 people in Central and South Texas have epilepsy. Families of people with epilepsy face daunting annual medical expenses for doctors’ visits, medications, and diagnostic tests. Proceeds from the walk will help build an Epilepsy Foundation RGV Family Support Network to assist with health costs, transportation, and the operation of a soon-to-be-announced SouthTexas support group for individuals and caregivers. Individuals, families, businesses, and community organizations can form a fundraising team and set a financial goal to raise by asking friends and family. McAllen resident April Flowers was inspired to organize the walk after her daughter, Lily, was diagnosed with epilepsy. “When my daughter was first diagnosed, we were completely blindsided,” said Flowers. “We had to learn everything the hard way, and if not for the Epilepsy Foundation,

we would have been completely lost. I don’t want any person affected by epilepsy to ever feel as alone as we did in those early days.” Lily attended Camp Brainstorm, a summer youth camp for children and teens with epilepsy. Many people with epilepsy in South Texas are in need of services to improve their health and lives but may be unaware that services like Camp Brainstorm are provided by the Epilepsy Foundation Central & South Texas at no cost. “It is time we ensure that every one of our families has a support network to help them make informed decisions regarding medical care, educational supports, social services, and recreational options,” April said. “This walk is where it’s all starting.” Visit EpilepsyRun.org for information, to donate, and to register

Online registration ends November 2 at 4 p.m. People can register inperson on the day of the event at 7:30 a.m. EFCST is seeking sponsors for financial and in-kind support, as well as volunteers on the day of the walk to help with operations, including event set up and break down. E
very day we make choices for our lives; some are insignificant, and others can be life changing. Many of the decisions we make are influenced by what others say. Some of our decisions are made from our heart, listening to what we actually feel is right, in spite of negative remarks made by others. When the Lord God led the Israelites out of Egypt, they made a choice to trust in His word to bring them to a promised land flowing with milk and honey. We constantly need to learn to trust and obey, each day, for the promises from God’s Word. Sometimes we become weary in the journey we are on in this life, just as the Israelites began to doubt where the pathway was taking them. They grumbled to
God because they were out of their comfort zone where they were once slaves to the Egyptians and living in sin. Each day brought new challenges to test their faith in God. Those tests weakened their faith in God’s promise of a future home full of riches and glory. This journey was God’s plan to see if His chosen people would remain faithful and trust Him for their needs and truly believe He would lead them to the Promised Land. It was a test of their spiritual core value. However, a 30-day journey turned into a 40-year trip because of the bad choices that were made. At a point in this journey, 12 scouts were sent to search for the Promised Land. They returned to report their findings; 10 said there were giant people there,
which put fear in them. Two scouts reported there is a land with flowing milk and honey, and, with God, there is nothing to fear from the inhabitants. So the bad choice was made by the people to side with the fearful report of the 10 scouts instead of trusting in the promise of God’s Word. Consequently, God led them for another 38 years, wandering in the desert until that generation of unbelievers died off.

ho doesn’t love the many lowcost music, dance, and dramatic performances at venues throughout the Rio Grande Valley in the fall and winter? It’s wonderful to see a great show without spending an arm and a leg, yet as we all know, many free and reasonably priced events are firstcome, first-served, necessitating early arrival and long lines for seats. Internationally acclaimed and versatile accordionist Sergei Teleshev takes the stage Saturday, March 9, 2019, performing works by Bach, Piazzolla, Tchaikovsky, and more. Classically trained at the Academy of Music in Voronezh, Russia, Teleshev and his dazzling fingers have won many regional and international accordion competitions. This incredible musician composes and arranges and has performed with several world-renowned artists, ensembles, and orchestras, including the London Philharmonic Orchestra, Doc Severinsen, and Semmy Stahlhammer. The season closes Thursday, March 21, 2019, with an exuberant salute to Chicago, one of America’s most beloved rock/pop bands. Beginnings: the Ultimate Chicago Tribute Band brings together talented, seasoned musicians who have worked with the likes of Peter Frampton, Don Henley, Steve Miller, and Lynyrd Skynyrd, and share a love and deep respect for the popular band’s inspired music. Holiday shopping galore at IB Festive Special to Welcome Home RGV
G
et your holiday shopping done early at IB Festive Saturday, November 10, from 10:00 a.m. to 3 p.m. at McAllen ISD’s Lamar Academy. Over 60 local vendors have signed up to entice you with their beautiful jewelry, clothing, beautiful products from Ecuador and Mexico, and much, MUCH more. The Lamar Academy/IB Student Council works year round to promote a sense of community. Our recent projects include working with the Catholic Charities to help immigrants who need assistance, clean-ups with the City of McAllen’s Keep McAllen Beautiful, anti-bullying rallies, and a mental-health fair. We also promote spirit at school activities, literacy at various school-sponsored events, and social consciousness for serious topics, such as suicide, depression, cancer, and bullying. Making all of this happen requires sizable funds. This year, we decided to host a fundraiser to make money, but also to give back to our community. IB Festive was the answer to this decision.
We are also raising funds to send our students to the annual State Student Council Convention. The Texas Association of Student Councils hosts a convention where over 5,000 students in the state of Texas come together and learn new ideas to promote a sense of community, not just in our schools, but in our cities. The funds raised will pay for registration, hotel, transportation, and meals. In the words of Ralph Waldo Emerson, “To know even one life has breathed easier because you have lived---this is to have succeeded.” This is what we hope to instill in all Lamar Academy/IB Student Council members and in the people we serve. ikki Rowe Theatre in McAllen opens this week with their fall production, Noises Off! The dizziest, funniest, backstage farce ever written, Noises Off takes us through the rollercoaster lives of a troupe of actors as they go through the motions of a cringeworthy comedy known as “Nothing

On.” In a brilliant turnabout of door slamming miscues, ‘misdirections,’ and misunderstandings, onstage romantic intriguers are foiled by bunglers and burglars, while the players backstage exhibit their best follies and worst foibles, spinning the play toward a hysterical climax. The theater world turns with side-splitting results to reveal mystery and mayhem as the cast and crew pull out all the stops to keep track of newspapers and cactuses, former and future lovers, missing cast mates, and the odd sardine. Quick Cookin’ with Sandy Olson
• Salt to taste • Black pepper • 1 can tomato soup • 2 tablespoons brown sugar • 3 tablespoons real butter • 3 tablespoons milk
Place the washed and peeled potatoes in the bottom of the pressure cooker so they are level. Place the metal rack over them and pour in the water. Set aside. In a medium-sized bowl, combine the beef, eggs, oatmeal, onion, ketchup, salt, pepper, half of the can of soup, and 1 tablespoon of the Worcestershire sauce. With clean hands, mix gently but well. Form into a round loaf that will fit into a round baking pan, the correct size to go into the cooker. (You can also form a pan from heavy-duty foil.) In a small bowl, stir the brown sugar and the remainder of the Worcestershire sauce and soup, and pour this sauce over the meat loaf. Place into the cooker and secure the lid. Set the pressure value to SEAL and cook on manual high pressure for 25 minutes. Do a quick release of the steam. Remove the pan from the pot. Remove the cooked potatoes at the bottom and add butter, milk, salt, and pepper, mashing the potatoes to desired texture. Serve with the meatloaf. •

• 2 cans (12.5 oz. each) canned chicken breast • 1 pound baby carrots, cut in half • 1 can whole kernel corn, drained • ½ medium onion, chopped • 6 cups chicken broth • ½ teaspoon garlic powder • ½ cup chopped green onion tops • 12 oz. uncooked egg noodles • Salt and pepper to taste Place everything in cooker, stir, and close the lid. Set the pressure valve to SEAL and cook on manual high for 5 minutes. That’s it! To use raw chicken, cook it and the broth for 20 minutes, release pressure, and add remaining ingredients. Super-Fast Chicken Noodle Soup
Pressure-Cooker Style
• 6-8 small potatoes • 1 cup water • 1½ pounds lean ground beef • 2 eggs, lightly beaten • 2 tablespoons Worcestershire sauce • 1 cup uncooked oatmeal (not instant) • 1 medium yellow onion, chopped • ¼ cup ketchup

Blueberry Cream Cheese Pie Submitted by The Junior League of McAllen, Inc.
Serves 8 • 1 (8 oz. package cream cheese, softened • ¾ cup sugar, divided • ¼ cup sour cream • ½ teaspoon vanilla extract • 1 (9 inch) pastry shell, baked • 2½ cups fresh blueberries, divided • ½ cup water
• 2 tablespoons cornstarch • 1 tablespoon lemon juice • Sour cream • 2 tablespoons powdered sugar • Dash of ground cinnamon • Blueberries • Grated nutmeg
Combine cream cheese, ¼ cup sugar, sour cream, and vanilla. Beat at medium speed of an electric mixer 1 minute or until smooth. Spread mixture in baked pastry shell; cover and chill for 1 hour. Place 1 cup blueberries in a small saucepan; mash with a potato masher. Add water; bring to a boil. Reduce heat and simmer 3 minutes. Remove from heat. Strain berry mixture. If necessary, add water to juice to make 1 cup; return to saucepan. Combine ½ cup sugar and cornstarch; stir into berry liquid. Bring to a boil and boil 1 minute, stirring constantly. Stir in lemon juice; cool. Place 1½ cups blueberries over cream cheese mixture; pour berry liquid glaze over top. Chill 2-3 hours. To serve, dollop each slice with sour cream. Combine powdered sugar and cinnamon; sprinkle mixture over sour cream. Garnish with blueberries and freshly grated nutmeg. Pasta with Acorn Squash and Sage Brown Butter
I enjoy cooking with the treasures of the season. Various squashes are plentiful right now and this hearty yet healthy (and vegetarian) dish is yummy and attractive. Don’t let the various steps deter you, this dish is not difficult at all. Bon Appétit! • 4–6 SERVINGS • 1/2 cup (1 stick) unsalted butter • 14 large fresh sage leaves • 1/2 cup panko (Japanese breadcrumbs) or plain coarse breadcrumbs • 2 medium-sized acorn squash (about 1 3/4 pounds), halved lengthwise, seeded, sliced crosswise into 1/4”-thick half-moons. • Kosher salt • Freshly ground black pepper • 12 ounces thick spaghetti or bucatini • Thinly shaved Parmesan cheese

Melt butter in a large skillet over medium. Cook, swirling pan occasionally, until butter turns caramel-brown and smells nutty, 2–3 minutes. Add sage leaves and fry until crispy, 10–15 seconds. Remove from heat. Using a slotted spoon, transfer sage to paper towels to drain. Pour all but 2 Tbsp. brown butter into a small bowl. Cook panko and 4 sage leaves in same skillet, stirring to break up sage, until mixture is toasty, about 2 minutes. Transfer to a plate. Cook squash and 3 Tbsp. brown butter in same skillet over medium heat, stirring frequently, until squash begins to brown, about 5 minutes. Add 1/2 tsp. salt, 1/8 tsp. pepper, and 3/4 cup water; cover pan and cook until squash begins to soften, about 5 minutes. Remove lid and continue cooking, stirring occasionally, until liquid has evaporated and squash is tender and caramelized, about 5 minutes more. Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente, 8–10 minutes. Drain, reserving 3/4 cup pasta cooking liquid. Add remaining 3 Tbsp. brown butter to skillet and stir until squash is evenly coated. Add 1/2 cup pasta cooking liquid and simmer until a thin sauce forms, about 1 minute; season with 1 tsp. pepper. Add pasta, tossing to coat and adding pasta cooking water as needed to coat pasta. Remove from heat, top with half of the reserved sage, and stir to combine. Transfer pasta to a large serving bowl or individual pasta bowls. Top with panko mixture, remaining sage, and a generous shaving of Parmesan. •
