Winter Texans medal at 15th Annual Encore Games Story and photos by Eryn Reddell Wingert

ine-hundred-fifty people turned out for the Encore Games Awards Banquet February 27 at Fun-N-Sun in San Benito. The gathering was the culmination of a month-long competition among the 10 Encore resort properties. The games, held each February, promote active living through the spirit of competition. Resort residents compete in 18 different categories, including: horseshoes, egg toss, swimming, and Texas hold ’em, one of seven card games. Mark Rayhons competed for Southern Comfort RV Park in slow bike, 500, and euchre. He gives

credit for his medal wins to having great partners. “We have lots of fun!” he said. Points are awarded for each participant who places. The points are tabulated, and the resort with the most points wins the trophy. category. Sunshine RV Resort took home the trophy with 242 points, followed by Fun-N-Sun with 227, who beat out Paradise Park for second place by one point. Herman Torluemke from Fun-NSun competed in darts and bocci ball during the games. “We love the games! It’s one of the big reasons we enjoy the parks down here,” Herman said. Herman actively cheered on not only his park’s participants. He cheered for his opponents, as well. For his efforts, he was awarded the Good Sportsmanship award by Game Co-Coordinator Bill Englert. Herman’s wife, Sandy, said about his special recognition, “Oh, wonderful! That just took his heart over; he’s a special guy.”

Blessing of the Bikes held at Hidden Valley Ranch

astor Cliff Stewart from Hidden Valley Ranch held his annual Blessing of the Bikes Sunday, February 17. There were about eight motorcycles from Bit-O-Heaven Park in Donna and several from Hidden Valley Ranch. Pastor Cliff prayed over each

bike and all of the riders and gave them the blessing on a decal for their windshields. The riders attended the morning services and finished off the event with lunch at Riverside Club, on the Rio Grande River. •

Many of you know Stacy because she was the director of Nikki Rowe High School’s award-winning group, Razz Ma Tazz. Razz, as it’s known locally, has been a favorite for Winter Texans and locals alike for many years. Stacy also directed Rowe students in the popular annual musical at the school. Stacy inspired countless students over the years and was known for

moving the spotlight off of herself and onto them. She was also known for her joyful personality, her contagious smile, her high expectations, her ability to inspire, and her limitless love. Our hearts go out to Stacy’s two children, Emily and Joseph, her parents, Dennis and Gladys Trom, her sister, Peggy Trom, her students, and everyone whose lives she touched. Harlingen Concert Association announces 2019-2020 shows Special to Welcome Home RGV

he Harlingen Concert Association (HCA) is pleased to announce the lineup for its 86th season of bringing live entertainment to the Rio Grande Valley. Six outstanding performances at Harlingen Municipal Auditorium are planned for this coming fall and winter. HCA 20192020 season tickets are now on sale at the Municipal Auditorium, 1204 Fair Park Boulevard in Harlingen, and online at HarlingenConcert.com. Subscribers will enjoy an exciting mix of vocalists and instrumentalists, with music ranging from Broadway tunes and beach-party music to classical compositions, country music, Americana, and Scottish folk music. All shows begin at 7:30 p.m. The HCA season opens Friday, November 22, with Broadway Bound, featuring the Three Redneck Tenors. Expect lots of down-home laughs and big-city music by these exceptionally entertaining America’s-Got-Talent finalists. Versatile vocalists Matthew Lord, Blake Davidson, and Jonathan Frugé are sure to delight with this new show featuring many of Broadway’s greatest hits. Next, on Thursday, January 9, 2020, is an evening with one of Britain’s finest string quartets. The Maxwell Quartet will present chamber music and classical selections by Beethoven and Haydn, as well as original arrangements of Scottish folk music. This charming and talented Glasgow-based group broadcasts regularly on BBC Radio Scotland and performs at many festivals and venues across Europe. The Sons of Serendip take the stage Thursday, February 6, 2020, creating beautiful music through the use of harp, piano, cello, and voice. This Billboard-charting quartet has been gaining popularity since appearing on season nine of America’s Got Talent as

finalists and moving on to America’s Got Talent: The Champions just a few weeks ago. Their program is a fresh mix of emotionally expressive popular music, engaging stories, and audience participation. Dan Miller’s Cowboy Music Review rolls into Harlingen next, with an entertaining variety show Friday, February 21, 2020. This talented group from the award-winning Buffalo Bill Center in Wyoming has been featured on RFD-TV, The Travel Channel, ESPN, and GAC. Their music ranges from Americana and Western to bluegrass and gospel. The fifth show in the HCA season will be a lively tribute to “America’s Band” Wednesday, March 4, 2020. Sail On brings a young look and authentic sound reminiscent of the original Beach Boys during the prime of their career. The group’s harmonies will transport audience members to the beach for an evening of memories and Fun, Fun, Fun! Several members of Sail On are so good they have even performed with Brian Wilson’s band. The HCA season closes Friday, March 13, 2020, with Burlap to Cashmere, an outstanding folkrock trio that draws from many influential artists, including Simon and Garfunkel, James Taylor, and Bob Dylan. With a unique sound and energetic live show, Burlap to Cashmere resurrects the storied Greenwich Village scene. Now’s the perfect time to find out more! by Rev. E.B. Holschuh

One

of the definitive differences between my view of the world as a person, guided by faith, and another’s, guided by chance, is that I firmly believe there is no such thing as a coincidence. To wit: Is it a coincidence that the publication date of this issue falls on Ash Wednesday? For a Lutheran pastor with a biweekly faith column-not a chance (ha!)! For Christians and non-Christians alike, this is the perfect time of year to reflect on where life is leading, to consider what’s most important. New Year’s resolutions are dead and gone. The 40-day season of Lent--from Ash Wednesday to Easter--provides ample time to reflect, yes, but this is also the perfect time to find out more! And the best place to find out more is a nearby church (You can’t go wrong with Lutheran!) where you can make new friends, ask questions, and learn about the true meaning of Easter and how it can change your perspective--and your life. Most folks assume Ash Wednesday is a biblical practice; many Lutherans may assume Ash Wednesday is a rite shared with the Roman Catholic Church since the Reformation. Many

Protestant churches simply consider Ash Wednesday a manmade tradition and so leave it as nothing more than a calendar observation. The Protestant Reformation drew a clear line of demarcation around those practices in the Roman Catholic Church that could not be proven scripturally sound. Some, such as penance and indulgences, were deemed not just false but even detrimental to an adherent’s faith. Other practices, such as the observance of Ash Wednesday, were simply matters of indifference, neither permitted nor forbidden by God’s Word. Ash Wednesday begins a period of reflection, introspection, and spiritual calibration leading up to Jesus’ crucifixion on Good Friday; on this Friday before Easter Sunday, many believers gather for a somber service that helps to color the power and majesty of Easter Sunday in a way that should be experienced by every Christian. On Ash Wednesday, worshippers

receive ashes on their foreheads as a sign of penitence and baptismal remembrance, using ashes prepared by burning palm branches from the previous Palm Sunday, suggestive of God’s judgment and condemnation of sin, our frailty and total dependence on Him, and humiliation and repentance. The words, spoken as ashes are applied, “Remember that you are dust, and to dust you shall return,” were first spoken to Adam after his fall into sin and are an intentional reminder of the words heard at the committal during a Christian burial, “... earth to earth, ashes to ashes, dust to dust.” So, as this issue is hitting the newsstands all over the Valley, many a forehead will carry an “imposed” cross of ashes, identifying the wearer as one of God’s family in Christ. A more salient reminder of one’s standing with God comes when it’s time to wash off the ashes using the same element God does during Baptism--water--a reminder of the promise of Baptism: victory over

death and the devil, forgiveness of sin, and God’s grace. Maybe it’s time to stop following yourself and let faith be your GPS? I’m certain there’s a Christian church near you that’s open for business (I know for a fact that Zion Lutheran Church in Alamo is…). With God, it’s never too late to start (or restart) the journey through a life of faith rather than through one of chance. There are no coincidences, particularly this Ash Wednesday! •

The 16th Annual Smokin’ on the Rio State Championship BBQ Cook-Off took place February 22-23 at the Rio Grande Valley Livestock Show Grounds. Two-hundred-forty cooking teams from around the state took part in the event that raises funds for educational scholarships. In addition to sampling fajitas, sausage, chicken, and bean recipes, visitors enjoyed live entertainment, Luche Libre wrestling, camel rides, and live music performances.

Exploring Oklahoma’s American Indian and Western culture Special to Welcome Home RGV

klahoma’s heritage is like that of no other, and travelers in the Sooner State will find an array of museums and cultural attractions where they can learn about tribal and Western culture. Two of Oklahoma’s largest tribes, the Cherokee and Chickasaw nations, have large cultural centers where guests can learn about the tribes’ histories and see traditional villages, with demonstrations of activities like stickball and the stomp dance. The Cherokee Heritage Center is located in Tahlequah, while the Chickasaw Cultural Center is in Sulphur. In Lawton, the Comanche National Museum & Cultural Center features an interactive buffalo hunt and an exhibit on the Code Talkers, a group that used codes based on their native language to relay messages for the military during World War II.

The Choctaw Nation is building a cultural center in Durant, but in the meantime, travelers can visit the Three Valley Museum and the Fort Washita Historic Site & Museum to learn more about the history of the tribes in the area. In Ponca City, the Standing Bear Park, Museum & Education Center honors the legendary Ponca Chief Standing Bear with a 22-foot bronze statue. The museum tells the story of the six tribes headquartered in the area. Oklahoma’s two largest cities are home to museums that highlight the city’s Native American and Western heritage. Looking for that amazing treat that will satisfy your craving! Each week we will offer you a variety of recipes that you can try from those who truly enjoy food and want to share! •

Street-Corn Salad is a versatile recipe that can be used as a salad, as a garnish for tacos or tostadas, or as an appetizer dip with taco chips. You have options for preparing the toasted street corn; you can go authentic and use your outdoor grill or use wholekernel, frozen corn and a frying pan, as described here. This recipe is a threestep process. 1) prepare the dressing, 2) roast the corn, 3) combine all ingredients and serve (either warm or chilled). Enjoy! Buen apetito! • Dressing Ingredients: • 8 oz. plain low-fat yogurt • 2 Tbsp. fresh lime juice • About 1 Tbsp. honey • ½ tsp smokey paprika • ½ tsp. ground cumin

Salad Ingredients: • 3 cups frozen whole-kernel corn – thawed. (About 4 ears of fresh corn, if you go that route.) • 1 Tbsp. cooking oil • 1 clove garlic, minced • 1 Tbsp. fresh lime juice • Salt, to taste. Start with about ¼ tsp. • 1 can black beans, rinsed and drained • 1 red bell pepper, seeded and chopped • ½ cup red onion, chopped • About ½ cup chopped fresh cilantro • About ½ cup cotija cheese – crumbled. If unavailable, use crumbled feta cheese. Mix the dressing and set aside. Heat oil over medium high heat and sauté the corn, turning frequently, until the kernels begin to brown and char a little bit. Add the minced garlic when corn is nearly done; the garlic will burn easily. Remove from heat, and add lime juice and salt. Mix in other salad ingredients and drizzle the dressing onto the salad and toss. Garnish with cilantro and crumbled cheese. This was served to eight people, with corn chips, at happy hour. Optional: If roasting your corn on a grill, brush with a light coating of oil. When charred, use a paring knife to remove the kernels from the cob and mix in the minced garlic, lime juice and salt. • Randy Hoelscher is a transplanted Texan and half-time RGV resident. Quick Cookin’ with Sandy Olson Rio Grande Pot Roast

This is a zesty, spicy way to cook a plain old pot roast. Serve with hot, cooked egg noodles. • • • • • • •

3-5 pound beef chuck roast (depending on the size of your pressure cooker) Vegetable oil for browning 1 cup beef broth ½ stick real unsalted butter (4 tablespoons) 1 small jar hot cherry peppers, with juice. Note: If you want less zing, use sweet peppers. 1 envelope zesty spaghetti sauce mix, dry 1 envelope beef au jus mix, dry

Set the pressure cooker to sauté and pre-heat on high for 2 minutes. Trim off any large pieces of exterior fat on the roast. Put a tablespoon or so of oil into the bottom of the pot, and let it heat. When hot, brown the roast on all sides. Remove the meat to a plate, and press cancel on the cooker. Add the broth to the cooker and use a non-abrasive spatula to deglaze the pot and scrape up the browned bits. Add the roast back to the pot. Place the butter on top of the meat. Drain the cherry peppers, reserving the juice. Add the peppers to the pot. Mix both dry mixes with the pepper juice and whisk well. Pour this mixture into the pot. Cover the pot, making sure the pressure valve is set on seal. Cook on manual (or pressure cook) high for 45 minutes. Allow a natural release, which might take as long as 30 minutes. Remove from the pot and slice or shred. If making sandwiches, use the delicious sauce for dipping, or serve it on the hot noodles, along with the sliced meat. Note: If you make this a day ahead, you can “de-fat” the juices by chilling them in the fridge overnight. Put the meat in a separate bowl, with a cover or plastic wrap on top. To reheat, put the meat back into the juices, and slowly heat on top of the stove or in a slow cooker on low until heated through. This recipe features shrimp, but a wide variety of seafood, including flaky white fish, salmon or scallops would all shine with this quick poaching method. A squeeze of lime and a few fresh herbs keep this curry citrusy and bright. If you like your curry a little spicy, feel free to garnish with sliced fresh jalapeño peppers. Bon Appétit! •

4 SERVINGS • 3 tablespoons canola oil • 1 medium red onion, halved and sliced 1/2-inch thick • 1 (1-inch) piece fresh ginger, minced (about 2 tablespoons) • 3 garlic cloves, thinly sliced • Kosher salt and black pepper • ¼ cup white miso • ½ cup unsweetened canned coconut milk ~24 large shrimp, peeled, deveined • 5 ounces baby spinach (about 5 packed cups) • 1 tablespoon fresh lime juice, plus lime wedges for serving • Steamed rice, such as jasmine or basmati, for serving • ¼ cup chopped fresh basil • ¼ cup chopped fresh cilantro

• • • In a large pot, heat 2 tablespoons oil over medium heat. Add onion, ginger and garlic and season with salt and pepper. Cook, stirring occasionally, until softened, about 3 minutes. Add miso and cook, stirring frequently, until miso is lightly caramelized, about 2 minutes. Add coconut milk and 2 cups water and bring to a boil over high heat. Cook until liquid is slightly reduced, about 5 minutes. Stir in shrimp, reduce the heat to medium-low and simmer gently until just cooked through, about 4-5 minutes. Turn off heat and stir in spinach and lime juice. Divide rice among bowls. Top with shrimp curry, basil and cilantro. Serve with lime wedges for squeezing on top. •
