So much to see!

So much to do! This is my favorite time of year in that most of our events are over, and we can kick back and enjoy the rest of the season, out and about with all of you! Last weekend, we participated in the Mega Winter Texan Fiesta put on by the Greater Mission Chamber of Commerce, and this weekend we’ll be at the Smokin’ on the Rio BBQ Cook-off in Mercedes at the Livestock Show Grounds. I’d like to take this opportunity to invite you to come to Communities on Parade, a Valleywide open house that will feature over 20 RV parks and retirement communities that would love to be your home next season. In the pages that follow, you’ll see a list of all of the participating properties. This two-day event is Friday, February 22, and Friday, March 1, from 10 a.m. - 3 p.m. and allows you to visit multiple properties in the same day. Grab some friends, and start shopping for next season! We also encourage you to think about taking material home with you to share with your friends and family back home, as we know this winter was a harsh one, and we reckon there’ll be a lot of interest in warm winter destinations in the fall! We would love for you to help us spread the word about our paradise here in the Rio Grande Valley. •

he 10th Annual Llano Grande Quilt Show set records all day long. From the 272 items on display to the 1462 people who came to see them, it was a great day. Congratulations to Show Chairman Cindy Maledy and her co-chair, Kathy Humann. We are especially happy to congratulate Helen Zaleski from Manitoba. She is the winner of the Grand Prize, a wonderful Janome sewing machine, generously donated by Llano Grande Resort and Country Club. People attending the show voted for their favorite entries in 10 categories and then chose the Best-of-Show. That coveted award went to Kathy Medlin, a quilter new to the Bee but definitely not new to quilting, for her exquisite Spring Bouquet applique quilt. In addition to the Best-ofShow winning entry, Kathy swept the Applique category by winning first, second, and third place. She then went on to win first and second place for Paper Pieced Quilts and first place for Embellished Quilts! Her outstanding entries were enjoyed by everyone.

Mary and Lee live at the park year-round and recently took up the positions of activity coordinators. “It’s quite a job,” said Mary. “So we’re learning together.” Another park resident who is part of a Canadian band, The Amigos, volunteered to perform at the event with his fellow band members from a park down the street. According to Mary, most Winter Texans begin leaving around midMarch. She said some of the park’s residents have been returning for 30 years. Barb and Jim Campbell, from Upper Michigan, converted last year to Winter Texans from Winter Floridians. “The community is so nice,” said Barb. “It’s so much more fun out here.” Barb said she appreciates all the activities the park offers. And while she was not able to make a team to compete in the Encore games this year, she is hopeful for next year. With members of the park playing bocce ball during the barbecue, she was able to get more practice. Barb and Jim spend five months away from their home in Michigan. At Southern Comfort, they were able to reconnect with some friends they hadn’t seen in over a decade. When planning for the event, Park Manager Victoria Rosado wanted to create the environment of a family cookout for the 400 people who attended. “The whole objective was to give them a taste of what I would have with my family because they’ve become family,” Victoria said. “I want to make sure the residents know how much I appreciate them.” •

Dr. Jose Cano from McAllen Family Residency Clinic will speak about immunizations and cancer screenings. The Senior Supper Series is a monthly outreach program for seniors 55 and older. Enjoy a meal and learn about important health topics during an informative presentation. anuary 18, a Crimson-collared Grosbeak became the first rare bird at Quinta Mazatlán in 2019. It isn’t the first time the grosbeak has been seen at Quinta Mazatlán. In 2010, a male grosbeak was seen foraging on berries and leaves in the park. This most recently seen grosbeak, however, is a young bird, lacking the deep crimson plumage of an adult male and instead sporting an olivegreen coloration. Initially reported January 18, the bird was not seen again until January 31 when it was found eating at one of the park’s birdfeeders. That resighting, along with photos and video shared in birdwatching groups, sparked a flurry of activity. Dozens of birders hurried to Quinta Mazatlán to get a glimpse of the grosbeak.

A Cape May Warbler, the second unusual bird at Quinta Mazatlán in 2019, represents the first winter record in the Lower Rio Grande Valley and the 265th bird species recorded at this urban nature center. While not rare nationally--they breed in the northern U.S. and Canada--most of them spend their winters in the Caribbean. For local birdwatchers, a Cape May Warbler seen in Hidalgo County in January is quite a treat. Quinta Mazatlán is located at 600 Sunset in McAllen, one block south of La Plaza Mall on 10th Street. Rachel Chu, originally from California, is an economics professor at New York University where her boyfriend, Nick Young, is also a professor. A native of Singapore, Nick was raised in London, growing up to be a humble and unpretentious man. But unbeknownst to Rachel, Nick is also from one of the wealthiest families in Asia, making him one of the most eligible bachelors there. So when Nick takes Rachel on a summer vacation to Singapore to meet his family, her expectations, and those of the family, couldn’t be more different. Somewhere

along the way, a person begins to build a moat around the castle and, over time, fills it with preconceived notions about things (people included). What comes to mind when you think of police officers? Car salesmen? Kindergarten teachers? Celebrities? Professional athletes? Politicians? Clergy? Anyone who doesn’t look, act, or talk like you? Jesus? God? Let’s use clergy as an example. Churched or unchurched, believer or unbeliever, everybody seems to have their own definition of “pastor.” One encounter about a year and a half ago surprised me. My wife was preparing a devotional for her coworkers that included the Bible verse above. She asked me matter-of-factly if the Greek word “quiet” in the ESV translation of Jesus’ words, spoken to calm the sea, actually meant “hush.” She was assuming that my level of Greek acuity (OK, that’s definitely the wrong word, but it colors this anecdote nicely) included a fastest-gun-in-the-West recall of a given New Testament verse in the original Greek, followed by a quick mental juxtaposition of more common English translations from

I think she was just as surprised at my initial response to her inquiry as I was at the question itself. Well, of course I did some digging. Jesus’ words from this verse in the original Greek are Σιώπα, πεφίμωσο. And this is typically translated as,

Be still!” The first word means, in the simplest sense, to be quiet/silent; however, I found a reference to The Epistle of Barnabas (an anonymous 4th Century, extra-canonical theological writing that attempts to reconcile the New Testament with Judaism), verse 10:3, in which the same Greek word is used for “silent.” “He mentioned the swine for this reason: you shall not consort, he means, with men who are like swine; that is to say, when they have plenty they forget the Lord, but when they are in want they recognize the Lord, just as the swine when it eats does not know its master, but when it is hungry it cries out, and after receiving food is again silent.” I didn’t see “to hush” as a translation, but there are often nuances in translating, so… The second word is literally “to

muzzle.” But it is used in a few places in the Bible in the meaning of “to be silenced.” More nuancing here, as Jesus likely wouldn’t have meant, “Be muzzled!” in His command to the raging storm and tossing sea. (Or maybe that’s exactly what He meant.) Really, one could write an entire sermon on this verse and why it is translated this way or that way. But back to preconceived notions. Most folks have a “moatful.” Sometimes lowering the drawbridge, the path to the Truth, is a struggle. God can help, and He’s only a prayer away. •

hursday, February 7, Dr. Edward Flores, cardiologist, was the guest speaker for Harlingen Medical Center’s Doc Talk Lecture Series because February is American Heart Month. Dr. Flores presented Risk Factors for Heart Disease (Men vs. Women) covering the differences in women’s hearts. Dr. Flores explained that women who deliver pre-term babies are at an increased risk of heart disease. He explained that pre-term delivery is often due to a medical issue related to heart health. Another group of women at increased cardiac risk are those who have undergone chemotherapy and radiation treatment for breast cancer. Broken-heart syndrome was also covered. Dr. Flores told of a Weslaco woman who was stranded in her car during the flooding along the frontage roads last year. Cardiomyopathy is triggered by stress. Women’s heart-attack symptoms are non-traditional in comparison to men’s and are dull vs. sharp symptomatic pains. Discussion of unhealthy lifestyle risks were noted as higher in women than in men. E-cigarettes are a much higher risk for women, who have smaller hearts and blood vessels than men,

causing vasodilation due to the large amounts of nicotine contained in one e-cigarette charge. E-cigarettes contain a higher concentration of nicotine than most regular cigarettes, although they contain less tar. Harlingen Medical Center is offering a Heart Saver CT Scan for $50. wo of Russia’s most outstanding classical musicians will perform at the Harlingen Municipal Auditorium Saturday, March 9, at 7:30 p.m. Internationally acclaimed accordionist Sergei Teleshev and world-renowned violinist and singer Natasha Popova will present works by Bach, Tchaikovsky, and Chernikov, original compositions, and more. Classically trained at the Academy of Music in Voronezh, Russia, Sergei Teleshev and his dazzling fingers have won many regional and international accordion competitions. Teleshev has been a jury member at international accordion competitions in Russia, Canada, and the United States. Recently, he won the National V-Accordion Competition. As the U.S. champion, he represented the United States at the 7th Roland International V-Accordion Festival in Rome, Italy, where he received a special prize for Most Online Votes on the festival’s webcast. Teleshev beautifully interprets pieces ranging from the baroque works of Johann Sebastian Bach to jazz to today’s new-age music. This incredible musician composes and arranges and has performed with several world-renowned artists, ensembles, and orchestras, including the London Philharmonic Orchestra, Doc Severinsen, and Semmy Stahlhammer. Teleshev also teaches online accordion lessons and master classes and presents educational programs for all ages. His colleague, Natasha Popova, is a world-renowned violinist,

singer, actress, and dancer. She started to play violin at age six and classically trained at the prestigious Gnessin Russian Academy of Music. Popova has won many regional and international violin competitions in Russia and Spain and performed as a soloist with major symphony orchestras in Russia, Germany, and Switzerland. She collaborates with many internationally recognized artists, including Arkady Shilkloper, Charlie Armstrong, and Sergei Penkin. Popova composes and arranges music in multiple styles. She has appeared in several movies and Russian TV series. Harlingen Concert Association (HCA) has been bringing internationally acclaimed touring artists to the Valley since 1933. This all-volunteer, nonprofit organization is committed to enriching the cultural life of the community through live performances. eatloaf has been my favorite comfort food since I was a child (plus the cold meatloaf sandwiches the next day). I had the pleasure of enjoying a very tasty meatloaf dinner at Bentsen Grove Resort, one of the meals they serve for their Monday-night dinners (4:30 – 6:00 p.m.) The feasts are open to anyone who loves good food. Monday entrées change weekly and are whatever Kitchen Manager and Co Activity Director Kathy Tyler is inspired to cook. My meatloaf (a nice big piece!) was snuggled next to real mashed potatoes and gravy, wholekernel corn, a dinner roll with butter and a lettuce salad. The meal is plated by Kathy’s crew of hardworking volunteers at the “Y Cook Cafe” counter. Next, diners make your way to the salad-bar table to add dressing and then find a seat. Cost for the meal is $6.75; dessert is available for an additional charge. On this occasion, it was apple pie...yum! The upcoming Monday meals are listed below:

Bentsen Grove’s kitchen. Every other Wednesday from 7:00 - 8:30 a.m., hot homemade donuts roll out in three varieties: vanilla, chocolate, and blueberry. At 75 cents each, you can eat your fill or pre-order a bunch to take home at $6.75 per dozen. Every other Friday at lunch (11:00 a.m. - 12:30 p.m.), there is a homemade pizza feed. The salad bar is filled with items to make your own combination. Enjoy your salad with a very large piece of pizza; several choices of toppings are available. The meal is only $7 and will fill you up. Whole pizzas can be pre-ordered, with prices ranging from $8 - $10, depending upon what is on the pie. This is a large park (875 lots) with loads of things to do. Co Activity Director Peggy Creach told me she oversees 64 different activities for residents each week. Many of those activities revolve around food. Bentsen Grove Resort, located at 1645 S. Bentsen Palm Drive in Palmview, has two campuses that are across the highway from one another. The meals are served in the Huddleston Hall on the west campus. For information or to confirm what is being served, call the Activity Office at 956-585-0703. Peggy, Bob, Kathy, or Brenda will fill you in on the latest menus. I had only one complaint about my meatloaf dinner: no sandwich the next day. I guess I should have ordered a dinner to go! •

he annual Winter Ranch 1st Responders Charity Golf Scramble between Winter Ranch and Trophy Gardens was held Wednesday, February 13, at the Winter Gardens Golf Course. The event helps support the Winter Ranch 1st Responders program and Trophy Gardens’ AirMedCare program. Burns Motors sponsored hole-inone prizes for the event. All golfers had the opportunity to win a 2019

Chrysler 300, but no one scored this grand prize. Welcome Home RGV furnished each golfer with a nice cooler filled with goodies and also provided door prizes. Knapp Medical Center and Weslaco Regional Rehabilitation Hospital provided lunch for the golfers and door prizes. Winter Ranch beat Trophy Gardens, but all of the golfers still went home happy. •

If you experience pain, weakness or difficulty during the tests mentioned here, it is highly likely that you are suffering from a rotator cuff tear. 1. This first test is called the Drop Arm Test. With your arm relaxed by your side, turn your arm out so your thumb faces directly to the side. Slowly raise your arm to the side, then slowly lower the arm. Test is positive if the arm suddenly drops or you experience severe pain on the way up or down. 2. The second test is called the Lateral Jobe Test. In this test for the right shoulder, raise your right arm out to the side by lifting your right elbow to 90 degrees, with your hand hanging down, fingers pointed to the ground, your thumb pointing to your tummy. With your left hand, push down on the right arm just above the elbow. Test is positive if you experience pain or weakness. 3. The 3rd test is called Lift-Off Test. The hand of the affected arm is placed on the lower back. Now try lifting the hand off the back without straightening your elbow. Test is positive if you’re unable to lift the hand off. Now you may be asking... can a rotator cuff tear heal and pain subside without medications, injections, or surgery? In most cases, yes... but it depends on, but not limited to, the following factors. ✓ What is the grade of the tear? There are 3 grades. ✓ Which of the 4 muscles of the rotator cuff is torn? ✓ How old is the tear?

This is a bit different from ordinary chicken soup but no less delicious. • 1 tablespoon vegetable oil • 1 medium onion, chopped • 1 pound boneless, skinless chicken breast • 1 tablespoon minced garlic • 1 small jar sun-dried tomatoes in oil, drained and chopped • 1 red bell pepper, thinly sliced • 1 teaspoon dried oregano • 1 teaspoon cumin powder • 1 teaspoon sweet paprika • 1 teaspoon mild chili powder • 1½ cups chicken broth or stock • 1 cup heavy cream or Half & Half • 1 package (4 oz.) cream cheese • 1 cup shredded cheddar cheese • Salt and freshly ground black pepper to taste Turn the pressure cooker to sauté mode and heat the oil. When it is hot, add the chopped onion and garlic. Stir for a couple of minutes. Add the chicken breast, sun-dried tomatoes, bell pepper, oregano, cumin, paprika, chili powder. and chicken broth. Stir to combine. and cover the pressure cooker. Make sure the pressure valve is set at sealing, not venting. Using the manual or pressure-cook button, set the cooker for 15 minutes. When the cooking is finished, carefully do a quick release. Remove the chicken from the cooker, and shred it with two forks. Return to the pot. Once again, set the cooker to sauté mode to heat up the soup while you stir in the cream cheese and cheddar. Stir until it is melted; then slowly add the cream or Half & Half. Stir until the soup is smooth. Adjust the seasonings and salt and pepper to your taste. Candied Grapefruit Peel

• 3 large grapefruits • 1 (3 oz.) package red gelatin • 2 cups water

• 1 cup sugar • ½ cup red hot candies • Sugar

Cut grapefruit in half; remove pulp. Scrape as much of the white pectin away from the peel as possible. Cover with boiling water and boil 15 minutes. Remove peel; scrape remaining pulp and white pectin from peel. Cut in ¼-inch slices and return to fresh boiling water; boil an additional 15 minutes. Drain. Mix gelatin, water, red hots, and sugar until dissolved. Add grapefruit peel; cook over medium heat until almost all liquid is gone, about 50 minutes. Lift out; roll in sugar. a perfect Valentine’s dinner because they are fancy but they also cook in minutes. To get a good, crisp sear, be patient and let the pan get quite hot before adding the scallops. Once you do, leave them alone to ensure a deeply golden crust. Toss them with pasta and candy-colored cherry tomatoes that burst and evolve into a jammy sauce. Bon Appétit! •

• Kosher salt • 1 pound linguine or other long, thin pasta • 1 pound large sea scallops, patted dry • Black pepper • 4 tablespoons pure olive oil or canola oil, plus more for drizzling • 2 shallots, thinly sliced into rings • 1 ¼ pounds cherry or grape tomatoes • 2 garlic cloves, thinly sliced • Pinch of red-pepper flakes (optional) • 1 ½ cups roughly chopped mixed herbs, such as tarragon, mint, parsley and chives, plus more for serving

Bring a large pot of well-salted water (2 heaping tablespoons kosher salt to about 7 quarts water) to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 1/2 cups pasta cooking water, then drain pasta. Season the scallops well on both sides with salt and pepper. Heat a 12-inch skillet over high until very hot, 2 to 3 minutes. Add 2 tablespoons olive oil. When it shimmers, add the scallops (working in batches to avoid crowding the pan, if necessary) and cook until golden brown and crisp, flipping once, 1 to 2 minutes per side. Transfer to a plate and cover to keep warm while you make the sauce. Wipe out the skillet and heat the remaining 2 tablespoons olive oil over medium. Add the shallots and cook until they begin to soften, 2 to 3 minutes. Add the tomatoes and cook, stirring occasionally, until they start to burst, 5 to 7 minutes. Add about 1/3 cup reserved pasta water and press the tomatoes gently with the back of a spatula or wooden spoon to get them nice and jammy. Stir in the garlic and red-pepper flakes, if using, and cook, allowing the sauce to simmer, 1 to 2 minutes. Season with salt and pepper. Add the pasta, 1 1/2 cups herbs and 1/4 cup reserved pasta water and toss to coat, adding additional pasta water if needed. Divide the pasta among shallow bowls and top with scallops. Garnish with additional herbs and a drizzle of olive oil, if desired. •
