Words cannot describe the fun

we had on our 3rd Annual Cruise with Kristi. It’s still so hard to believe it’s over. We loaded on our buses as acquaintances and have come home as friends. I can’t preach enough about group travel. There’s comfort in knowing that you are not alone (but can be if you choose). And oh, the sites we’ve seen! From Honduras to Belize to Cozumel, the fun kept coming! And so did the

food, I might add. We all might have put on a few pounds, and, luckily, most of us brought elasticwaistband pants! Everything about this trip was wonderful--the people, the staff, and the ship. We are so grateful that everyone had a wonderful time. People have already started booking for our 2020 cruise! I would be remiss if I didn’t add that I’m forever grateful for my amazing team for working all year

Winter Texans in the Weslaco/ Mid-Valley area who need to see a physician for heart-related problems, a cardiologist in Weslaco, Miguel Zabalgoitia-Reyes, M.D., F.A.C.C., F.A.S.E., was recently re-certified in echocardiography by the National Board of Echocardiography. Only a few cardiologists in the Valley hold this important board certification through the American Society of Echocardiography (ASE). To achieve this certification, a cardiologist must pass a rigorous examination to become nationally recognized as board certified in echocardiography. Cardiologists like Dr. Zabalgoitia may carry the abbreviation of “FASE” (Fellow of the American Society of Echocardiography) as a credential following their name. An echocardiogram is a test that produces pictures of the patient’s heart through the use of sound waves (ultrasound). Cardiologists use the test to check for problems in the valves or chambers of the heart. For example, if a patient has chest pain, shortness of breath, or other symptoms, Dr. Zabalgoitia can use an echocardiogram to “see” how the patient’s heart is beating and how the heart’s chambers and valves are pumping blood through the heart. The test helps determine if the heart valves are opening wide enough for an adequate flow of blood and whether the valves close all the way to prevent leaking of blood. An echocardiogram is a noninvasive test that takes about 40 minutes. The test can be performed in a physician’s office or in the hospital and has no side effects for the patient. An interpretation is ready within 24 hours, in most cases.

Dr. Miguel Zabalgoitia, a cardiologist in Weslaco, was recently re-certified in echocardiography by the National Board of Echocardiography.

In addition to echocardiography, Dr. Zabalgoitia is also board certified in cardiovascular disease and internal medicine. Dr. Zabalgoitia completed a fellowship in echocardiography at Northwestern Memorial Hospital in Chicago (through Northwestern University School of Medicine), as well as a fellowship in cardiology through the University of Ottawa Heart Institute in Ontario, Canada. Dr. Zabalgoitia specializes in treating patients with chest pain, abnormal EKGs, and other heart-related conditions. He also performs evaluations for patients needing clearance for surgery. ebruary 15 at 5:30 p.m., Hidden Valley Ranch in Mission is hosting a patriotic classic country jam. The jam is being utilized to honor and support all of our military units and the Penitas Food Bank. We are inviting any and all jammers to perform a patriotic number that night. If you are not comfortable performing patriotic tunes, you are welcome to perform the song of your choice. We are asking all jammers and attendees to wear red, white, and blue, if possible, but if you can’t, then wear the clothing of your choice. The patriotic colors will match the decorations in the Hall that evening. The La Joya High School ROTC will present colors that evening. Sharon Child, manager of the Penitas Food Bank, will be in attendance at the jam and will share

with attendees about their need. Everyone is encouraged to bring nonperishable food supplies, or, if you prefer, you may contribute to a passthe-hat cash donation that evening. In the event that anyone is not able to bring food or cash, please know you are still welcome, and we expect nothing more than prayer in exchange for your support of all honorees. Hidden Valley can seat about 350 people, and organizers are hoping to fill the house with jammers and audience members. Please join them February 15 and jam for the military and the Penitas Food Pantry. Hidden Valley Ranch is at 7600 Long Drive in Mission. At 12:30, veterans will be our guests for the presentation of Quilts of Valor. Fifteen quilts will be presented, with two of those quilts being given to World War II veterans. It’s all about Sax in this engaging Harlingen show Special to Welcome Home RGV

ive Sax, a modern brass quintet featuring accomplished musicians from the U.S., Latin America, and Europe performs at Harlingen Municipal Auditorium Tuesday, February 19, at 7:30 p.m. The group’s imaginative program will mirror the diversity of its members, rooted in classical music while venturing into American jazz, SouthAmerican-Latin styles, and European folk music. The individual members of Five Sax all are established solo musicians who hold many prizes from important national and international competitions. They converged in Vienna from all around the world, united by a modern conception of virtuosity and the constant urge to push the limits of performance. The ensemble began in an unusual way--performing street theater in the center of Vienna. Their first year together was an unforgettable experience of running from the police, surviving freezing temperatures, and dealing with angry shopkeepers. This “starving-artist” past echoes in Five Sax concerts through their use of theatrical elements and their spontaneous approach to making music. At the Harlingen show, Five Sax will use the saxophone’s full sonic range to take the audience on an unforgettable musical journey. The multi-continental trip begins in Vienna, the legendary capital of music, with a look back at some timeless classics. Then, they will jump on a train to explore the rich musical styles of Spain, Italy, Hungary, and the Balkans. From there, it’s off to Rio de Janeiro to experience the seductive rhythms

of Brazilian Bossa Nova and the passion of Argentine Tango and to visit the mythic Columbian town of Macondo. The last stop will be in sunny Los Angeles to rediscover famous hits of the silver screen. Five Sax has performed in some of the world’s most prestigious halls, including the Konzerthaus (Vienna), the Teatro del Lago (Chile), the National Concert Hall (Taipei), and the Concertgebouw (Amsterdam). The five musicians in this creative ensemble hail from Belgium, Chile, Italy, Poland, and the United States, and each brings his own unique and vibrant personality to the group. Harlingen Concert Association (HCA) has been bringing internationally acclaimed touring artists to the Rio Grande Valley since 1933. 2016 was the year of my lupus surprise. One night I went to sleep a strong, healthy 73 year old and awoke feeling ancient. Getting into my truck was a monumental task. Sleeping was painful and walking awkward. My doctor was sympathetic and got an appointment with a rheumatologist in record time. The doctor prescribed Prednisone, which relieved the symptoms but was not a cure. I can’t live on Prednisone, and no one can predict when lupus will give up. What can I do? Get bitter and blame God? Or WAIT ON THE LORD? I’m trying to wait. Spring 2018 was the year of my shingles adventure. April 12, we started north toward our Michigan home. The center of my left palm had a point of discomfort. I ignored it. It took us four days to get to Myrtle Beach, South Carolina. By then, I was driving one-handed. We had scheduled a week of ‘Singingin-the-Son’ concerts, but God had other plans. First, Ruthann got diverticulitis and spent four days in the hospital. During that time, I visited the ER, but no one recognized my monstrous left arm as shingles. For lack of space, I’ll summarize my symptoms at this point. Shingles entered the spinal cord, robbing the arm of strength and feeling.

Two-hundred-sixty Kansans gather in the Rio Grande Valley by Larry Schmitt

anuary 23, 260 Kansans from all over the Rio Grande Valley met to commemorate the anniversary of the state’s January 29, 1861, admission to the Union. This year’s event took place at Casa Del Sol RV Resort, and we extend our thanks to a group of their residents for their superb support for this event. A great lunch was prepared and served by Balli’s Catering of Mission. Entertainment was provided by Rusty Rierson, a “homegrown” entertainer from Augusta, Kansas. I have heard many positive comments about the speed of delivery and taste of the food, and about the entertainer! Jan Bergman, chair of the event and I (communications and reservations) facilitated the day’s events. Ken Naysmith served as the official photographer. The seating arrangement was by major sections of Kansas, so in addition to saying hello to previous friends, there were many new acquaintances made. (You could hear stories like, “We have lived in Basehor for many years, and we just met this couple that lives just a few blocks away….our kids went to the same school!)

Jan works hard throughout the year to gather door and raffle prizes. Many attendees took some great prizes home. Plans for the 2020 celebration are in process. Mark your calendars for Wednesday, January 22. (Yes, one week early.) The event will be at Trophy Gardens RV Resort. We will again enjoy food from Balli’s and entertainment by Rusty. If you experience pain, weakness or difficulty during the tests mentioned here, it is highly likely that you are suffering from a rotator cuff tear. 1. This first test is called the Drop Arm Test. With your arm relaxed by your side, turn your arm out so your thumb faces directly to the side. Slowly raise your arm to the side, then slowly lower the arm. Test is positive if the arm suddenly drops or you experience severe pain on the way up or down. 2. The second test is called the Lateral Jobe Test. In this test for the right shoulder, raise your right arm out to the side by lifting your right elbow to 90 degrees, with your hand hanging down, fingers pointed to the ground, your thumb pointing to your tummy. With your left hand, push down on the right arm just above the elbow. Test is positive if you experience pain or weakness. 3. The 3rd test is called Lift-Off Test. The hand of the affected arm is placed on the lower back. Now try lifting the hand off the back without straightening your elbow. Test is positive if you’re unable to lift the hand off. Now you may be asking... can a rotator cuff tear heal and pain subside without medications, injections, or surgery? In most cases, yes... but it depends on, but not limited to, the following factors. ✓ What is the grade of the tear? There are 3 grades. ✓ Which of the 4 muscles of the rotator cuff is torn? ✓ How old is the tear?

he 2018-2019 VITA Committee and partners look forward to another successful year of helping eligible South-Texas families and individuals with free income-tax-preparation services. This is the eighth year United Way of South Texas has offered this service in the Rio Grande Valley. In 2018, 375 IRS-certified volunteers offered free income tax preparation for 4,410 households, bringing in a total refund of $7.9 million. This tax season, volunteers strive to help more families and increase the total dollar refund. Eligible applicants to benefit from the VITA Program this season include families and individuals with household incomes of $55,000 or less (a predetermined income level set annually by the IRS). When working families and individuals receive free income-taxpreparation services, they save money and can use their refunds toward other important expenses and goals, such as paying for home taxes, medical bills, and children’s college tuition and opening a savings account). The more families save by not paying for incometax preparation, the more they can invest in the local economy. Between January 28 and April 13, volunteers at 14 different sites will serve families in Hidalgo and Starr counties. Sites include Bowie Elementary Parental Literacy Center, Calvary Baptist Church, College Career & Technology Academy Parental Engagement Center, Goodwill Industries, La Joya ISD’s Palm View High School and Juarez High School, Palmview Community Center, McAllen Housing Authority (two-day event only), Rio Grande City Hall, Roma High School, South Texas College Tech

y wife and I recently hit some garage sales. At one stop, we found a beautiful set of fine-china dishes. There they sat, for sale for just a few dollars, with no takers. I have seen these sets by the hundreds in antique stores. We have two sets of our own tucked away in the back of cupboards; one we bought, one we inherited. I believe we have declined some other offers from mothers and grandmothers. We just rarely use them. I suspect it is the same for many of you. It is hard to gather a family for a fine-dining event. The kids have

What are we saving the china for? scattered. People, in general, seem to have less interest in entertaining. I also think there is generally less interest today in all things formal. We see it everywhere. There aren’t many suits showing up in church anymore. The rule that all boys must wear ties at the school dances died 50 years ago. (I once actually got sent home from a school dance because I didn’t have a tie on.) And when we do entertain, the menu is more likely beer and brats on the deck than a formal, sit-down meal. I must admit I prefer the informal. I am more comfortable in jeans than a suit and tie. I don’t care that I really don’t know which fork is the salad fork in a formal setting. I also like the ease of just tossing the dishes into the dishwasher when it is over. But I can’t help thinking we have lost something. One of the things I have learned is that old traditions developed for a reason. There was a

reason we invited company, a reason we got out our best china, a reason for going to the expense and trouble of preparing a fine meal. Those things honored others. They created special moments in otherwise drab lives. They enhanced the dining experience and slowed the meal down, allowing for conversation. They created a unique moment, one that would be remembered in later years. I may not rush to pull out that old china. But I will savor the memory of our family around my grandmother’s table on Sundays. I can’t describe her china, but I can describe the comradery of the family. They were good times. If you are saving your china for the kids, guess what? They likely don’t want it. Why not just use it now? Maybe you’ll discover something you’ve lost. I’m just sayin’. •

inter Texans, retirees, and those interested in the region’s history are invited to participate in Winter Texan Wednesday-- Tumbleweed Band: Country Music from the Rio Grande Valley featuring country musician Casey Cantu February 20 at 3 p.m. at the Museum of South Texas History in Edinburg. Winter Texan Wednesday is a half-hour multimedia presentation followed by a half-hour mini-tour of part of a museum exhibit. They say, “if you’re going to play country music in Texas, you’re going to need a fiddle in the band.” However, country music in the Rio Grande Valley--sometimes called cross or Tejano country--often replaces the fiddle with an accordion. Many bands from across South Texas are famous for this particular type of genre, including the Tumbleweed Band. Local musician and front man of the legendary Tumbleweed Band Casey Cantu will present the timeline of the band’s rise from playing local gigs to

playing at famous Texas honky-tonks, such as Gilley’s in Pasadena, Texas, in the 1970s. Cantu, a native of Hargill, Texas, will also showcase posters and audio recordings. The presentation will be followed by a guided tour of the second half of MOSTHistory’s River Crossroads exhibit, which covers Valley history from the growth of the citrus industry in the 1920s to the present. Winter Texan Wednesday is included in the regular museum admission fee: Adults (18+) $8; Seniors (62+) $6. Museum admission also includes access to the signature Rio Grande Legacy exhibition. I love rice pudding! I know it’s full of sugar and carbs and all of the other things we’re supposed to limit in our daily food plan, but on those occasions when you need something warm and comforting, it’s the ticket. The electric pressure cooker makes it very easy, too. • 4½ cups whole milk • ½ cup uncooked white rice, short or medium grain • ¾ cup white sugar • ¼ cup chopped, mixed, roasted nuts (cashews, pecans, almonds, walnuts, etc.) Or you can use all pecans to make it more “southern” • 2 tablespoons raisins • 1 teaspoon cinnamon • ¼ teaspoon nutmeg

Everybody loves tacos. They are quick, easy to make, and good. This recipe

will give you an option to make your next tacos a little bit special. This recipe works with corn or flour tortillas, either soft or hard shell, and as pictured, with tostadas. I made a bunch for happy hour for my tasting crew, and they asked for seconds. That’s a good sign. We will ignore the basic recipe for a taco: a pound of browned hamburger and a packet of taco seasoning. You have all done that, I’m sure. Your normal toppings likely include lettuce, tomato, cheese, maybe avocado, cilantro, onion, and some type of hot sauce. These tasty tostadas are simply a smear of refried beans, taco meat, and our easy-to-make Jicama slaw. That’s all, unless you want a dash of hot sauce. I’ll bet many of you are unfamiliar with Jicama It is a root vegetable native to Mexico. It has a brown outer skin and the flesh is bright white. It is moist inside and has a crunchy texture. It will not oxidize in the air, so there is no need to add lemon juice or anything. It is hard to describe the taste, which I think is similar to a pear. It is an ingredient in the slaw we will make. A recipe for slaw dressing is given below; feel free to use your own favorite slaw-dressing recipe, if you have one. Enjoy! Buen apetito! • Jicama Slaw • 1 Jicama root, peeled and shredded • ¼-head red cabbage, shredded • 1 carrot, shredded (optional) • 1 Tbsp. fresh lime juice • 1 Tbsp. apple cider vinegar • 1 Tbsp. honey • 2 Tbsp. Canola oil or other light cooking oil- I used corn oil. • ¼ cup fresh cilantro leaves, chopped (to taste) • Salt and black pepper (to taste) Additional Ingredients 1 can refried beans, warmed in the microwave. Corn or flour tortillas or pre-baked tostadas, warmed in a 250-degree oven for a few minutes Prepare the taco meat, as directed. Make the slaw by thoroughly mixing all ingredients together. . Then put the beans, meat, and slaw on the tortillas; add any optional ingredients you like. • Randy Hoelscher is a transplanted Texan and half-time RGV resident. A long time cooking enthusiast, he enjoys being “The Border Cook” and spreading the word about Mexican and Tex-Mex cuisine on his website, TheBorderCook.com, as well as on social media.

Rinse the rice several times in cold water, draining each time in a strainer. This will wash away the white. powdery coating that comes from the milling process. Put the rice, with all of the other ingredients, into a 6- or 8-quart cooker. (Smaller cookers might allow the milk to boil out.) Close the lid, making sure the pressure valve is set to Seal. Cook on the Porridge setting (or if your pot does not have this setting, use Manual, High) for 20 minutes. When finished cooking, allow a natural pressure release. Carefully open the pan. Adjust for sweetness, as this is a personal preference. Stir and check for the thickness you like. If it is too thin, re-set the cooker to sauté, leave the cover off, and let the pudding cook down for a few minutes, stirring often so it doesn’t stick. • 1 large onion, diced • 1/3 cup Worcestershire sauce • 2 tablespoons oil • 1 cup beer • 1 cup vinegar • Salt and pepper to taste • 3 teaspoons prepared mustard In a medium saucepan, sauté onion in oil. Add vinegar, mustard, and Worcestershire sauce. Mix well and simmer for a few minutes. Creamy One-Pot Pasta with Sausage and Squash

This

dish is fuss-free (it’s prepared in one pot after all) and crazy delicious. It does feature some fresh vegetables so you can feel good about it at the same time. You could add other vegetables if you like and make it your own, so have fun and be creative. Bon Appétit! •

FOUR SERVINGS

• 3 Tbsp. pure olive oil or canola oil • 12 oz. Italian sausage (about 3 links), casings removed • 1 Tbsp. all-purpose flour • 2 cups milk • 1 cup heavy cream • 1/2 large butternut squash (about 1 lb.), peeled, seeded, diced into 1/2” pieces • 1/2 lb. fusilli pasta • 1 garlic clove, finely grated • 1 sprig sage • 2 1/2 tsp. kosher salt • 1/4 tsp. freshly grated nutmeg • 1 1/2 cups finely grated Parmesan, divided • Freshly ground black pepper

• • • Heat oil in a medium heavy pot over medium-high. Cook sausage, breaking up into about 1” pieces with a wooden spoon, until well browned, 5–7 minutes. Add flour and cook, stirring constantly, until evenly distributed, about 1 minute. Combine milk, cream, and 2 cups water in a glass measuring cup. Then, stirring sausage mixture constantly, slowly stream in milk mixture; bring to a simmer. Add squash, pasta, garlic, sage, salt, and nutmeg and stir to combine, making sure pasta is covered with liquid. Bring to a boil, then reduce heat to low and bring to a bare simmer. Cook, stirring occasionally, until pasta is cooked through, squash is beginning to break down, and sauce is reduced and glossy, about 20 minutes. Remove from heat, add 1 1/4 cups Parmesan, stirring constantly, until cheese is melted. Remove and discard sage sprig. Transfer pasta to a platter. Top with remaining 1/4 cup Parmesan and a few turns of pepper mill. •
