Rio Grande Valley for St. Baldrick’s. The Vannie E. Cook Jr. Children’s Clinic in McAllen has received over $462,000.00 in grants from the St. Baldrick’s Foundation. The event is run by senior volunteers and volunteers from Doctors Hospital at Renaissance. Texas Trails RV Resort has had a team of “shavees” since the event began in their park in 2009. The St. Baldrick’s Foundation began in 2000 as a casual conversation between friends and has exploded into the world’s largest volunteerdriven fundraising program for childhood-cancer research. Over $39

million was raised in 2018, bringing the total awarded in grants since 2005 to over $240 million. The St. Baldrick’s Foundation awards more grants for childhood cancer research than any organization except the U.S. government. It is important to note that childhood-cancer research receives less than four percent of the federal cancer research funds. Come and watch the hair fly and truly make a difference for children who are currently undergoing treatment for cancer and those who will be diagnosed in the future. •

anuary 22, Dr. Michael Sander presented a Senior Health Talk, Shoulder Pain: Causes and Treatment, at the Knapp Medical Conference Center in Weslaco. Knapp also provided lunch and beverages to the group. Dr. Sander is an orthopedic surgeon and sports-medicine doctor, who has been practicing in Weslaco for over 10 years. His new office is located at 1315 E. 6th Street, Suite10. (Call 956-447-9797 for an appointment.) Dr. Sander’s discussion covered bursitis and tendonitis, rotator-cuff tears, arthropathy, arthritis, and frozen shoulder. He explained the symptoms, causes, treatment options, and recovery process and presented a video and photos showing these conditions. Dr. Sander also explained

the treatments he provides, including knotless anchors presently used in tendon repairs. Many attendees asked specific questions pertaining to shoulder complications during the questionand-answer period. Dr. Sander, in response to one question, said he normally completes 1-2 shoulder surgeries per week in his practice. Usually Winter Texans need about four weeks for most procedures, with recovery time included. Seniors develop many of these conditions due to injuries, overuse, and arthritic issues. Physical therapy and injections can be used for some conditions. The talk was both informative and interesting and an important topic for the Senior Health Talk Series. •

o amount of rain could keep down the spirits of those looking to celebrate one of Mission’s longest-held traditions--The Texas Citrus Fiesta. The celebration of one of the Valley’s most booming industries began in 1932. Eighty-seven years later, the event is still going strong. Due to its warm climate, the Rio Grande Valley contributes the majority of citrus production in Texas, and its harvest is sold internationally. With an all-day Fun Fair at the Leo Peña Placita Park, the Fiesta started early Saturday morning. Food vendors and local businesses set up booths around the track, selling and promoting their services and interacting with visitors. Fred Biery, a first-year Winter Texan, said he has fallen in love with the Rio Grande Valley and its “outgoing” people and will definitely be coming back. Biery and his family chose Texas so they could escape the 200 inches of snow they receive every year in Marquette, Michigan. “It’s too bad the rain is drizzling today, but it’s still a festive atmosphere,” he said. “We’re just enjoying strolling around… and discovering places in Mission, McAllen, and the rest of the Valley.” The Texas Citrus Fiesta is celebrated throughout the month of January, with costume shows, grapefruit-pie competitions, and other activities. But

the largest attraction is the Parade of Oranges. An estimated 150,000 attended the parade, according to Texas Citrus Fiesta Board Member Nora Hinojosa. Each year, the parade takes on a theme. This year’s theme was Citrus Celebrates Hollywood Movies. Many of the 35 floats, each adorned with citrus, captured the spirit of the theme by modeling their displays after Hollywood productions, such as The Cat in the Hat and Jurassic Park. The community is represented in every festivity of the Texas Citrus Fiesta, with Mission High School’s celebrated football team, the city’s mayor, and Citrus King and Queen Citrianna taking part. For several miles down Conway Avenue, spectators wrapped in thick coats and blankets lined both sides of the street to enjoy the parade with their loved ones. Racheal Martinez, a Mission resident, attended with her mother, husband, and two young children. Since she was a little girl, Martinez said, it has been a tradition for her to watch the parade, and she enjoys witnessing a new theme each year. “It’s great because it brings together the community and highlights one of our (the Rio Grande Valley’s) most thriving industries,” she said. “Mission is the perfect place to live and raise a family.” •

Cadence, one of Canada’s top a-cappella groups, performs at Harlingen Municipal Auditorium Saturday, February 9, at 7:30 p.m. The show is presented by the nonprofit Harlingen Concert Association. HCA Vice President Cheryl LaBerge recently interviewed tenor Ross Lynde via email and is pleased to share her interview with Welcome Home Winter Texan readers.

Cheryl: How do you select songs? Ross: Many of our songs are chosen for a specific show or audience, but much of our repertoire was built by each of us simply bringing a song to the table from an artist they admire. David Lane’s arrangement of the Beatles’ “Here Comes the Sun” is a great example of a song we all know and love but arranged in a way that brings renewed interest and new life to the piece. Cheryl: Maybe something about a song you will definitely be performing? Ross: Several years ago, we were invited to perform alongside a host of other musicians in a celebration of the music of Gordon Lightfoot. One of the songs we arranged was “The Wreck of Edmund Fitzgerald,” and as the response was overwhelmingly positive, it’s one that has become part of our regular repertoire and was the first song recorded on our new ‘all-Canadian’ a-cappella album Home (released in 2018). The lyrical mastery of Lightfoot transports the listener to a place of heart and emotion as the story unfolds the details of that fateful day some 40 years ago. After one such performance, we actually met a retired seaman who used to work on these ships, traversing the same waters. With tears in his eyes, he recounted memories brought fresh to the surface. A testament to the power of music! Cheryl: How does the music at live shows and recordings differ, in your opinion?

Cheryl: Is this your first time performing Texas? Ross: In 2015, we were asked to open for Jay Leno in Midland, Texas, as part of Midland College’s endowed Phyllis & Bob Cowan Performing Arts Series. It was an honor to entertain for thousands of Texans and warming up the stage for such a talented and famous comedian!

Ross: The obvious difference between live shows and our recordings is the number of simultaneous parts you’d hear. In the studio, we can layer voice after voice, adding auxiliary backgrounds, vocal drum sounds, effects, etc., but onstage we are confined to 4 live voices with a bit of reverb and equalization. The other main difference is heart and spontaneity. Since every audience is different, so is every show. We try our best to engage our audiences and deliver a truly unique experience, not only to them but to ourselves.

Hormone replacement therapy: Is it right for me? by Dr. Kristy Morales, OB/GYN, Valley Care Clinics

ormone replacement therapy gets a lot of buzz in the press and online. Men and women can both receive benefits from properly administered and dosed hormones. Specifically, as it relates to women, most hormone replacement is aimed at easing the menopausal transition. Menopause occurs when a woman’s ovaries stop producing hormones and will result in her cycles stopping. According to UpToDate, a physician medical resource, the average age of menopause in North America is 51. The time leading up to a woman’s cycles permanently stopping is called perimenopause, or the menopausal transition, and typically starts around age 47. The most common symptoms reported by women during this time are hot flashes, vaginal dryness, and painful intercourse. Some women also experience significant changes in their mood and sleep. After menopause is complete, the risk of chronic diseases like osteoporosis and heart disease increase. So, what are the facts about hormone replacement? Who needs hormone replacement? Treatment is aimed at relieving the symptoms of menopause, and if you are not bothered by your symptoms (or if you are one of the lucky few without symptoms), you do not need to see your doctor outside of your regularly scheduled visits. Estrogen is the medication most commonly prescribed, and it is approved for treatment of hot flashes and vaginal dryness. Progesterone is also used and is a necessary part of treatment if you still have your uterus. If you suffer from hot flashes or vaginal dryness/painful intercourse, you could be a candidate for treatment. Testosterone is also used in women in some cases--for example, with low libido.

Estrogen and progesterone are not approved for the treatment of mood symptoms or insomnia or to assist in weight loss, although in some cases they are used in conjunction with other medications that can treat these symptoms. Who can’t receive estrogen treatment? If you have a history of breast cancer, heart attack, a blood clot in your leg (a deep vein thrombosis), stroke, liver disease, uterine cancer, or unexplained vaginal bleeding, then higher-dose estrogen therapy may not be appropriate for you. There are other options for treatment of your symptoms, so be sure to talk to your doctor. What forms of hormone replacement therapy exist? Estrogen is the most commonly prescribed hormone replacement for women. It is available in pills, a patch you place on your skin, a cream that is absorbed through your skin, and vaginal creams, rings, and pills. Progesterone is available in pill form, and testosterone is usually dosed in a cream that you absorb through your skin. Everyone responds to each of these medications in a different way. What may work for some will not work for others, so talk with your doctor about his/her recommendations for starting your treatment. What are the risks of hormone replacement? The most important risks with hormone replacement are breast cancer and clotting events (stroke, blood clots, and heart attack). ours of work and dedication led up to Kenwood RV Resort’s first ever Quilt and Needlework Show. Every Thursday, Care N Share--a group within the park--meets to work on items that are to be donated to local churches and shelters. Due to the volume of contributors, Activity Coordinator Phyllis Miles decided the items deserved to be exhibited. Volunteers from the park made the show possible by promoting the show and inviting quilters to lend their creations. Thirty-four quilts, along with 64 other handcrafted items, were put on display in the park’s Rec Hall. A mix of antique and modern pieces filled the room. To Miles, who forgoes the use of technology and prefers working by hand, quilting is a skill that has been passed down generation to generation in her family. “I quilt because my grandmother and mother were quilters,” she said. “My granddaughters don’t quilt, but they love to get them.” While she finds fabric from craft stores, Miles also likes to repurpose

older quilts by adding new materials to revive each quilt’s life. The Quilt and Needlework Show was open to other local parks. Over the four hours of the show, many individuals from other parks stopped by to appreciate the detailed, colorful, and uniquely crafted pieces. Denise Sutherland, a second-year resident at Kenwood, contributed to the show with quilts, placemats, and children’s hats. When looking for inspiration to get started, Sutherland said she likes to think about where the item might end up. In addition to making quilts and garments for her 31 nieces and nephews, she sends knitted hats for children with cancer to her local hospital in Sault Ste. Marie, Ontario. “I’ve been quilting since I was five years old,” she said. “This is something that’s in your blood to do.” Miles said she and other volunteers were very happy with the event’s turnout, and they hope to continue with--and expand--the show in years to come. •

Rock out at IMAS Family Fun Night Geology Bash and guest UTRGV lecture Special to Welcome Home RGV

he International Museum of Art & Science (IMAS) will be rocking out during its February Family Fun Night Thursday, February 7, from 3:00 until 8:00 p.m. On the first Thursday of each month, the IMAS is open for extended hours and special, themed activities for the whole family. In January, things bubbled up during Chemistry Fest. February’s theme is geology, and visitors can paint rocks in the Ann Moore Art Studio, learn about Mohs Hardness Scale, and mine for “gold.” IMAS Director of Education Claudia Martinez said, “I am excited to host Geology Bash because the museum’s earliest collection includes rocks and minerals, and this event is a celebration of that. I encourage families to come out and learn together!”

The IMAS presents a lecture by Dr. Juan Gonzalez from UTRGV at 5:30 p.m. Titled New Insights into the Geologic History of the Lower Rio Grande Valley, this presentation will cover 43 million years of geologic history in South Texas, featuring the Catahoula volcanic ash in Starr County, the unique El Sauz Chert formed from the ash and its use as a raw material by Native Americans for making stone tools, and the possibility of a petrified forest near the town of Escobares. This lecture also supports the mission of the UTRGV Community Historical Archaeology Project with Schools (CHAPS), which is “to create archaeologically and historically literate citizens who are aware of their local culture and natural history and of its importance to the future of the Rio

Grande Valley.” Dr. Juan Gonzalez is a native of Colombia and an associate professor at the School of Earth, Environmental, and Marine Sciences at UTRGV. He received his PhD at Tulane University. His research interests include paleoclimate, past and present sealevel change, geoarchaeology, and the geologic history of the Rio Grande Valley. His research is multidisciplinary and largely field based. He has over 30 peer-reviewed publications in scientific journals. Visitors can also explore the IMAS fine-art galleries, including Recent Acquisitions, Clean Water Here: Global Photography Exhibit and the newly opened Symphony of Color, a display of over 40 musical instruments decorated

It pays to recycle at Victoria Palms by Wilma Jacobs, Winter Texan and Proud VPR Green Team member

n 2015, the residents of Victoria Palms Resort (VPR) started a recycling program in order to do our part to reduce landfill waste and help save the environment, not to save money. But three years in, the numbers show that not only have we kept over 128 thousand pounds of waste from going to the landfill, but we also saved the equivalent of over $181,000 in gallons of water, kilowatt hours of electricity, pounds of landfill waste, and trees, and that is a conservative estimate.* In 2015, many of our Winter-Texan residents were used to recycling at home. One resident said, about coming south to the RGV where there was little to no recycling at the time, “I felt like a criminal, throwing recyclables into the trash.” The VPR Advisory Council established a Green Team to research and develop the recycling program. VPR management was completely supportive of the effort. The program was started using a ‘single-stream’ system. Residents placed plastics, metal cans, paper, and cardboard into one large container provided by RedFish, a local recycler. Later, additional recycling areas were set up for white styrofoam and glass bottles. Eventually, batteries, light

bulbs, and inkjet cartridges were added to the recycling program. Finally, the resort’s hotel and restaurant began participating, and citrus recycling was added. Residents quickly got on board, and the participation grew steadily through a concerted, multi-level communication program involving Town-Hall presentations, in-house television, in-house website, and a weekly electronic newsletter. The volume of recycling materials kept out of the landfill was carefully tracked over time. RedFish also tracked and reported on savings in trees, gallons of water, kilowatt hours of energy, and cubic yards of landfill space, based on the average composition, per ton, of single-stream recycling collected and facts from experts, such as the Environmental Protection Agency. For example, according to the EPA, recycling aluminum cans saves 95 percent of the energy needed to make new ones from raw materials. More water is saved by processing recycled materials than by making new stuff. As a result, the efforts of Victoria Palms are improving the environment by saving: That’s an average saving of just over $60,000 per year! This analysis does

NOT include the additional savings from keeping recycled glass, large cardboard boxes, white styrofoam, batteries, light bulbs, ink cartridges, and citrus from going to the landfill. In 2019, Victoria Palms was certified as a Plan-It Green Friendly Park by the National Association of RV Parks (ARVC). This designation is awarded to parks that demonstrate a positive environmental impact based on an evaluation of the park’s current green practices. Some might argue that recycling is a good thing, but it costs money.

We were prepared for that. However, we learned that recycling generates revenue to more than pay for itself, while incineration and landfilling do not. At Victoria Palms, we can’t afford NOT to recycle! • *Red Fish Recycling reported that the recycling efforts of Victoria Palms Resort – between November 9, 2015 and November 30, 2018 – kept over 128,900 pounds of waste from going to the landfill.

here definitely is no lack of good food in the RGV, but German cuisine is not typically served at most restaurants and parks. That may be one reason the annual homemade sauerkrautand-pork supper served at Heritage Square Recreation, Inc. packs people in. And, yes, I said HOMEMADE SAUERKRAUT; nothing from a can, jar, or plastic bag at this meal! Since Perry and Doris Terwilliger (who lived in Minnesota during the off season and were of German and Czech heritage) started the tradition in 1996, the volunteers at this friendly park have provided the talent, time, and tremendous effort to make this fundraiser happen. They are passionate about good sauerkraut. Activity Director Ardelle Wiebers spent a lot of time getting me information about the history of this event. It’s evident she is proud of her park and the people who make this meal possible. Over the past 22 years, various teams of kraut makers have handchopped the cabbage and packed it into crocks with salt to ferment for exactly 21 days. Last year it took over 500 pounds of green cabbage to fill those crocks to make sure there would be enough to go around. They babied it, squeezed it, checked it, and rinsed it. When it was just right, they added roasted pork and simmered it all together. It was then ready to be served to as many as 299 people at a time. It’s a process that takes a lot of dedication, and the result is one of the most flavorful meals you will have the opportunity to enjoy in this part of Texas. I want to stress that it happens only once a year, and the 2019 feast is scheduled for Saturday evening, February 23. Serving begins at 5:00 p.m. Heritage Square is located at 300 S. Bryan Road in Mission. We had the pleasure of attending the event last season. Sandy and Bill Horning were co-chairs with Rich and Bonnie Darkow in 2018. The meal we enjoyed consisted of a hearty helping of kraut and pork, mashed red potatoes, green beans, and a dinner roll. There was a long table

Boil potatoes and eggs. Cool, peel, and chop up into a bowl. Add chopped onion and onion tops. Mix together. Mix remaining ingredients in smaller bowl and add to potato mixture, a little at a time. Mix until it is the consistency of moisture you prefer. (Some like it dryer than others.) Can be made a day before so flavors blend better. Refrigerate until ready to serve. If there is sauerkraut left over, it’s sold to those in attendance to enjoy at home. Serving is done in an orderly manner, one table at a time--no ‘budging the line,’ although one is definitely tempted to get to that serving counter as soon as possible. The fun does not start or stop with the kraut at Heritage Square. Polka music begins two hours before the 5:00 p.m. serving time for the listening pleasure of all those who arrive early. Last year, it was a four-man band: Al Moudry, Dennis Schwiebert, Bob Olejniczak, and Ed-Vern Black. After dinner, tables can be pushed back to accommodate those whose feet just need to dance to the beat. Tickets to the Heritage Square sauerkraut supper are sold in advance. The activity director’s phone number is 563-340-6493. She can tell you where to get tickets, but make sure to call early. They are on sale now and are cut off when the quota is reached. It’s unique, it’s delicious, and the setting is one of the friendliest parks around. Everyone can be German or Czech for an evening! Lass uns essen! (Let’s eat!) •

history research as a pastime (armchair genealogy) is far from an exact, um...science. In fact, both the recording and researching (as well as the procreating--not the act itself, mind you, but the he-saidshe-said that often follows) is prone to human error. I enjoy it, as it provides at least some pieces of my (and my family’s) identity puzzle, even if only myopically. DNA analysis sheds light on a person’s (not necessarily on the entire family’s) more recent origins, but is a useful tool, nonetheless, to redirect a search or eliminate a possibility. Ancestry’s DNA analysis report is very broad and consists of estimates based on probabilities. Church and science both agree that we all came from somewhere; both point confidently to a “Mitochondrial Eve” and a “Y-chromosome Adam.” Genealogy—the bona-fide science— is really interesting! While it remains more of a hobby for me, I still enjoy finding connections, where I fit in on the backdrop of the rest of the human population. So, in an effort to keep it all in perspective (If you are unsure what I mean, go to YouTube and search for

“...the biblical truth about our past helps us with the future in a way Darwin cannot.” Ancestry DNA results; it’s really not about race, ethnic superiority, fueling the creation-evolution debate, or bragging rights), I offer three very good sources of information on the topic, all of a Google search away: 1) “What DNA Says About Human Ancestry— and Bigotry,” an article posted to MIT’s website, 2) “The AncestryDNA Witch Hunt,” an insightful post to The Genetic Genealogist blog, and 3) “What Ancestry DNA Kits Reveal About God, Our Past, and the Way Forward,” at CBN.com. Our concept of race is arbitrary. Each individual’s characteristics are determined by genes. There is no common genetic heritage shared by “white people,” all of whom come from different lineages that migrated from Africa and Asia. That all living humans go back to one common ancestor in Africa is much more than a theory; however, even the most seasoned of genealogists must admit that the most documented family tree is likely wrong, due in large part to paternity issues, inaccurate source documents,

and the nearly impossible task of finding information never publicized or lost over time. And, somewhat ironically, DNA will ultimately reveal the errors in a tree, such as mine, which has roots extending back to the Middle Ages (when recordkeeping was only as good as the record keeper). We typically pass a random sampling of half our DNA to our children. Then, at about 5-9 generations, ancestors start to completely fall out of our second family tree, which contains only those ancestors who contributed to our DNA (a “genetic,” rather than “genealogical,” family tree, soon to be a reality given the many advances in genetic sequencing). A Christian perspective on all of this reveals what modern DNA testing cannot; the Bible teaches that we are born in the likeness of the first parents, who bore the characteristics of the image of God before the Fall (see Genesis 5:3; only Adam was “created” in the image of God). And while we are often tempted to look at each other’s outward appearance,

God looks on the heart; the biblical truth about our past helps us with the future in a way Darwin cannot. Though we have no description of what he looked like, Jesus’ genes were completely human. The “human race,” all of God’s children, Christian or not, regardless of skin color, ethnicity, culture, gender, or language—find true definition in him as the very IMAGE of God. Hmm... Maybe in the end (as in the beginning), we’re not so different after all? Hmm, indeed. •

Senior Health Fair and Senior Health Talk scheduled at Knapp Medical Conference Center Special to Welcome Home RGV

uesday, February 19, a Senior Health Fair will be held at the Knapp Medical Conference Center from 8:30 - 11:00 a.m. The Conference Center is located at 1408 E. 8th Street in Weslaco, on the west side of Knapp Medical Center. This fair is free and open to the public. Tuesday, March 26, there will be a Senior Health Talk with Dr. Miguel Tello at the same site from 12:30-1:30 p.m. Lunch will be provided. Dr. Tello

will present on Preventive Medicine. Dr. Tello is a family-practice physician with Knapp/UTRGV Family Health Center. The royal Russian family, the Romanovs, would have used beef tenderloin if they made this dish. The rest of us will find tasty, beefy sirloin to make a much more modern dish! This recipe has several steps but is so worth it! • 2 pounds beef sirloin steak, external fat trimmed off. Cut into six pieces that will fit into your pot. • 2 tablespoons olive oil, divided • 1 medium yellow onion, finely chopped • 1 cup PLUS an additional 2 tablespoons beef broth or stock (store-bought or homemade) • ½ cup dried mushrooms (Porcini is best, but a wild mix is also delicious.) • 1 tablespoon Worcestershire sauce (I like Lea and Perrins.) • 2 tablespoons all-purpose flour • ½ cup real sour cream (not low-fat or fat-free) Rinse the dried mushrooms to remove any grit. Set the pressure cooker to the Sauté mode and adjust to High or More if your pot has that option. Season the steak pieces with salt and pepper and drizzle with one tablespoon of the olive oil. Cook in batches, so there is no crowding, until all pieces are browned on both sides. Place meat on a cutting board. Cancel the Sauté mode and re-set to Sauté, Normal or Medium. Put the remaining oil into the pot, add the onion, and cook until tender, about 4 minutes. While the onion cooks, slice the seared meat into strips about ½-inch wide, returning the meat to the pot as you work. When all the meat is back in the pot, press Cancel to stop the cooking. Add 1 cup of the broth, the dried mushrooms, and the Worcestershire sauce to the pot. Stir to combine. and scrape up all the browned bits (called fond) from the bottom of the cooker. Lock the lid in place, making sure the pressure valve is set to Pressure. Using Normal or Pressure Cook, set the time to 20 minutes. When the time is up, let the cooker do a natural release for 10 minutes, then quick release the remaining pressure. Place the flour in a small bowl and gradually whisk in the remaining 2 tablespoons of broth. Add this mixture to the pot, turn it back onto Sauté mode and simmer, stirring very gently until the sauce has thickened, about 2 minutes. Cancel the cooker and remove the inner pot. Gently stir in the sour cream, and season to taste with salt and pepper. Serve with egg noodles (traditional) or with rice. NOTE: If you can find “cultured” sour cream, it is more stable and less likely to separate or curdle when added to hot liquid. Otherwise, it is sometimes good to temper the sour cream by adding a bit of the hot liquid to the bowl of sour-cream mixture before adding it back into the cooker pot. • Sandy Olson--lifelong foodie, restaurant reviewer, cooking teacher, Summer Iowan, and Winter Texan, she spends the season at Palm Shadows RV Park in Donna. Serves 1 • 1 large onion • Dash garlic powder • 1 whole bay leaf • 1 tablespoon butter • 1 teaspoon seasoned salt • 2 tablespoons Worcestershire sauce • 1 teaspoon seasoned pepper Preheat oven to 350 degrees. Cut off ends of onion; remove outer layer or two. Place core-end down, cut center out (about ½- to ¾-inch), and quarter onion without cutting completely to bottom. (Onion should still be fairly intact.) Place on square of foil large enough to wrap around onion. Slide bay leaf down in cut of onion. Sprinkle top with salt, pepper, and garlic powder. Put butter in center pocket; pour Worcestershire sauce over top. Seal foil tightly; bake on cookie sheet about 1½ hours or until transparent. With this wind and chill, I’m looking for easy, stress-free and fun winter

dinners. This soup fits the bill perfectly. And it features one of my favorite pastas ever – tortellini. They are so cute and delicious with their yummy cheese perfectly tucked inside – what is not to love!? And if you have not yet thought to put them in soup, here is your chance! Bon Appétit! •

FOUR SERVINGS • 1 tablespoon olive oil • 4 ounces hot or mild Italian sausage, removed from casings • 1 onion, diced • 1 medium rib celery, diced • 1 medium carrot, diced • One 15-ounce can white cannellini beans, rinsed and drained • One 15-ounce can diced tomatoes • 2 cups no or low-sodium chicken or vegetable stock • One 8 to 9 ounce package of refrigerated tortellini • Kosher salt and freshly ground black pepper • 1/4 cup prepared pesto • Grated Parmesan, for serving

• • • Heat the oil in a medium pot over medium heat. Add the sausage and cook until browned, about 4 minutes. Add the onions, celery and carrot and continue to cook, stirring, until the vegetables are softened, about 5 minutes. Add the beans, tomatoes, stock and 4 cups water and increase the heat to medium-high to bring to a simmer. Continue to simmer, adjusting the heat if necessary, until the vegetables are tender, about 10 minutes. Add the tortellini and continue to cook until they are tender, about 7 minutes. Season to taste with salt and pepper. Serve in bowls and garnish with a dollop of pesto and a bit of grated Parmesan. •
