not enough time! As I look through the event calendar in this week’s paper, it’s hard to imagine ever being ‘bored’. From early bird breakfasts to late night dances and all things in between, there’s no shortage of things to do. Every single day of the week! We have a few events to kick off, our first annual golf tournament will be held at Tierra Santa Golf Course in Weslaco on March 7. Registration is $75 per person and includes breakfast, lunch, green fees and your cart. Not to mention, we always have a lot of door prizes and a goody bag that can’t be beat. It’s a 4 person scramble and we’ll have three flights based on a full field. Join the party! Registration opens next week. And for those of you Converted Texans out there, make sure to save the date for April 11 for our Converted Texan Fiesta! Stay tuned for details. llison ‘Ali’ Schneider likes to attend dances. Seeing a need for a singles group in the Valley, Ali planned her first meeting, created informational fliers, and handed them out at dances. The first meeting was held December 28 at Denny’s in Weslaco, where Ali shared the primary idea behind creating the group.

“We can go do things together as a group, and we’re not going to be feeling like a third wheel,” Ali explained. Her plans for the group include gathering for meals--like the day’s breakfast get-together at Denny’s to movie outings to a road trip to the San Antonio Rodeo to see Brad Paisley in concert. oused outside the library of FunN-Sun RV Resort sits a miniature golf course, the latest amenity to be offered by the San Benito resort. After three-and-a-half years of petitioning and fundraising, the park held its ribbon cutting at 2 p.m. sharp on the first Saturday of the new year. Fun-N-Sun is a part of the Encore resorts of Texas, with 1,400-plus sites, it is one of the largest parks of the group and is the only resort to have its own golf course. Park Manager John Van Wyk says the park’s addition is a great way to keep the residents active, as well as a great solution for golf enthusiasts who are unable to travel to an outside course. Equipment is provided by the park, and residents are free to golf at any time of the day. Van Wyk said (hopefully soon) they’ll be able to purchase additional lighting so nighttime golfing can also be enjoyed. Lee and Mary Bledsoe, full-time residents at the park, played a large part in the course’s creation. Lee, an architect, designed and redesigned, as the location of each of the holes was moved several times. “We both really enjoy miniature golf,” said Lee. “This is definitely

another great addition to the park, our home.” Mary said she believes it’ll be a great activity to enjoy with their children and grandchildren when they visit. More than 30 park residents showed up to golf at the grand opening, adding their names to the list and waiting around the library in their lawn chairs, golf carts and automobiles for their turn. Engraved bricks featuring park members’ names, which were sold during fundraising, pave the holes for the course. The fundraising began in 2016, and by February of 2018, the park had raised more than $7,000. The success was in large part thanks to Marti Shaw, who organized several fundraising initiatives and helped present signatures to Encore’s corporate officials. “I’m just so pleased we finally got everything done,” said Shaw. Van Wyk invites anyone interested in the park to stop by and check out the course. “Feel free to come by anytime,” he said. “We’ll be happy to show it to you.” •

r. Sandra Esquivel recently completed her 500th robotic surgery and provided Winter Texan 1st Responders with a video presentation on surgical hernia repairs. She shared the advantages of robotic surgery with the less-invasive procedure, including less pain and quicker recovery, as compared to larger incisions. Previous surgical repairs used screws to attach mesh in place, causing more pain and a longer recovery. Even laparoscopic surgeries used straight equipment, which are not as easy to use within the body. Robotics allow the doctor much more dexterity in repairing the tissue over other types of surgery. Pictured above is the trocar, which

allows the doctor to pass precise and smaller equipment into the body to repair hernias with a tiny incision the size of the extending tube. Dr. Esquivel operates at Edinburg Regional Hospital. Lisa Killion, assistant administrator of marketing and public relations for South Texas Health System, announced that free hernia screenings would be performed at the Welcome Home RGV Winter Texan Expo. South Texas Health System sponsors this annual event at the McAllen Convention Center. The second and final day of the WTE is today, Wednesday, January 16, from 9 a.m. to 3 p.m. •

rofessor Timothy Brush, Ph. D., will be the guest speaker for the January 21 meeting of the Texas Master Naturalist South Texas Border Chapter. Brush’s presentation, What’s new with Valley birds, will take a look at the change concurrently happening within birding communities of the Lower Rio Grande Valley and the broader trend as birds begin to expand and contract their ranges. Although human alterations have impacted some birds negatively, according to Brush, others have taken advantage of their new environment, he said. Hear how some of your favorite local Valley specialty birds have been holding their own or making a move. Brush also will talk about his research methods and how interested citizens can help. Brush is a professor of biology at the University of Texas Rio Grande Valley in Edinburg, where his research and emphasis include ecology, conservation, and riparian corridors of birds along the Lower Rio Grande Valley. He has particular interest in the

changing bird distributions and effects of habitat restoration. In addition, Brush assists with bird banding studies. He has written numerous scientific articles and is the author of Nesting Birds of a Tropical Frontier, the Lower Rio Grande Valley of Texas. Brush’s presentation begins at 6:30 p.m., with a 6 p.m. social and a general meeting after the presentation. The public is invited, and admission is free. the group and sought feedback on activities of interest. An engaged couple was among the gathered singles. Joyce Groom and Jimmy Hansen met at a dance last year and plan to marry in February. Joyce and Jimmy said they like to meet new people and had done just that, visiting with Vicky Heise of Michigan. Vicky, Joyce, and Jimmy chatted about line dancing, Cowboy Church, and all the region has to offer, including the Valley heat, which Vicky professes she loves to soak up. Vicky has been enjoying the Valley heat off and on for 20 years. The meeting is her first venture into a singles group. “It’s a new thing, and it’s going to be fun,” Vicky said. A native Texan also in attendance was Delma Holcombe. Delma lives in Houston and has been visiting the Valley since her husband passed away 19 years ago. She originally came down to visit her vacationing brother and sister-in-law and liked the area and the people so much she bought her own place. In Houston, she said, neighbors don’t really know each other. She went on to say, “I’m in a regular neighborhood, and there are not many singles.” The social life here and the opportunity to meet new people keep her returning to the Valley. Rodney McKee from Colorado knows this about Delma first hand. He’s been single for a year and says Delma took him under her wing and showed him around. “When I became single, I became lonely. A group like this is great,” Rodney said. Initially it was breakfast that brought David Long of Topeka, Kansas, to the singles group meeting. He excitedly talked about local meal deals and the region’s overall low cost of living as his friend, Vera Nail, agreed. After talk about cheap, but delicious, gas-station taquitos, David decided coming to the singles group meeting was really about the camaraderie and being social. David has visited South Texas for four of the past five years, and had selfdiagnosed ‘Skip-It Syndrome’ the year he opted out. “It’s a fun time for a single person,” David said. “There’s plenty to do!” • Eryn Reddell-Wingert is a photographer and handles social media for Welcome Home RGV. Internationally acclaimed and versatile accordion virtuoso Sergei Teleshev will take the stage of the Harlingen Municipal Auditorium at 7:30 that evening, performing works by Bach, Piazzolla, Tchaikovsky, and more. This exciting concert is one of five upcoming performances sponsored by the Harlingen Concert Association as part of their 85th season of bringing great live music to the Valley. Although the accordion is most commonly associated with polkas and Tejano music, it has a long history in classical music. Teleshev has the ability to beautifully interpret pieces that range from the baroque works of Johann Sebastian Bach to jazz to today’s new-age music. This incredible musician composes and arranges and has performed with several world-renowned artists, ensembles, and orchestras, including the London Philharmonic Orchestra, Doc Severinsen, and Semmy Stahlhammer. Classically trained at the Academy of Music in Voronezh, Russia, Sergei Teleshev and his dazzling fingers have won many regional and international accordion competitions. Teleshev has been a jury member at international accordion competitions in Russia, Canada, and the United States. Recently, he won the National V-Accordion Competition. As the U.S. Champion, he represented the United States at the 7th Roland International V-Accordion Festival in Rome, Italy, where he received a special prize for Most Online Votes on the festival’s webcast. Teleshev also teaches online

accordion lessons and master classes and presents educational programs for all ages. His colleague, Veronika Shabashova, is a world-renowned violinist, singer, actress, and dancer. She was born in the Ukraine to a musical family. Classically trained at the prestigious Gnessin Russian Academy of Music, she became a soloist at the State Musical Theatre of National Art and has since travelled all over the world as a performer. Shabashova collaborates with many internationally recognized artists, including Larry J. Livingston, Oleg Menshikov, Vladimir Nazarov, and others. She has recorded several soundtracks for movies and TV series and composes and arranges music in multiple styles. The Harlingen Concert Association (HCA) has been bringing internationally acclaimed, touring artists to the Valley since 1933. This all-volunteer, nonprofit organization is committed to enriching the cultural life of the community through live performances. very day is Show-n-Tell-Time here at The Lamb’s Loom! Seeing what others are doing (or have done) sparks creativity and appreciation in everyone else. It’s encouraging to see the end products of our labors. Some projects take a long time to complete while others are fairly quick and simple, but they all are lovely, colorful, eyecatching, and useful in a practical way. Some of us love to do the work but have no one to give these things to who would appreciate them. Donating them at The Lamb’s Loom insures they will go to a good home. Another great thing about our shop is that we have such a variety of talents,

interests, abilities, and experiences coming together on this journey. Some of our flock are Winter Texans from Canada, Iowa, Massachusetts, and all of the states between them. Our shepherds (volunteers) come from all over the world--Cameroon, Puerto Rico, Mexico, Israel, and Texas, just to name a few! We all love The Lamb’s Loom because we can share in our love of yarn, express our creativity, make friends, and socialize, as well as minister to each other as we work together to show God’s love by helping others. Sunshine RV Resort’s 1st Pet Fun Match January 8, 2019

Pet lover Sharon Battocletti from St. Peters, Missouri, organized Sunshine RV Park’s Pet Match event to help promote good pet ownership and to support the Humane Society of Harlingen. Within six weeks, she garnered vendors and crafted a program that included a parade of pets and adoptable animals, training demonstrations, and friendly pet competitions. At least one life was saved as a result of the event. A cat named Poppy found her fur-ever home with Lexa Bentley of North Carolina.

Tie one on at the South Padre Island Kite Fest Special to Welcome Home RGV

et’s tie one on! What started out as a mere ‘fun fly’ is now one of the biggest kite festivals in the country. January 31, February 1, and February 2--Thursday night, Friday, and Saturday --SPI Kite Fest will descend onto the flats of South Padre Island. The festival kicks off Thursday evening with indoor kite performances at the South Padre Island Convention Centre from 6:30 - 8:30 p.m. The indoor performance lineup boasts an array of internationally known kite fliers. John Barresi holds 31 national championship titles and is the 2018 Open Individual Unlimited Ballet champion. John will be joined by Scott Weider and Phil Burks, who both were invited to fly in Saudi Arabia in 2017, and James Fletcher, the 2014 AKA National Indoor Champion. Other invited performers are Mario Di Lucca from Victoria, British Columbia, Spence Watson, Paul de Bakker, Paul Lamasters and Brett Marchel. All of these amazing indoor fliers dedicate their choreographed routines with one passion in mind --“creating peace through kiting…worldwide.” If you have never been to an indoor kite performance, this is the event you do not want to miss! Tickets for the Indoor Kite Exhibition are $6 per person and can be purchased or reserved in advance at B&S Kites (956-761-1248). Tickets are not available at the door. The festival continues Friday and

Saturday when the festival moves outdoors from 10 a.m. to 4 p.m. on the flats just north of the Convention Centre. Several kite fliers from all over the United States are scheduled to bring their magnificent ‘show kites,’ which will be on display throughout the day. Just imagine--a huge 3D dragon, a 150-foot octopus, a 90foot gecko, or a 24-foot spinning bol. Whatever you can imagine, you might see it soaring in the air. No kite fest is complete without the mesmerizing performances of individuals, as well as teams. Three teams are scheduled to perform at this year’s event: John Barresi is returning with Team Kitelife, consisting of John (Portland, OR), Scott Benz (Jacksonville, FL), Eli Russell (Portland, OR), and Brett Marchel (Harbor Springs, MI). Next up is Team Rev-Riders, consisting of Scott Weider (Vancouver, WA), Paul LaMasters (Germantown, MD), James Fletcher (Baltimore, MD), and Drayton Callison (Treasure Island, FL) and Team End of the Line from Austin. Completing the performance roster will be Spence “Watty” Watson (Bellevue, WA), Paul de Bakker (Oak Harbor, WA), and Mario DiLucca (Victoria, BC), as well as several Winter Texans who have found they not only have a passion for kite flying but a talent for performing, as well. Admission for the outdoor event is free. So bring a cooler, bring a lawn

chair, come for the day, or stay for the weekend. Just make South Padre Island your destination the first weekend in February. You’ll be delighted you did. You’ll get amazing photos to share with your friends and may even start a new tradition.

ay back in my college days, a few friends and I went out on the town for a Saturday afternoon. We returned to campus, and having tipped a few, someone in our group suggested we go watch TV in the girls’ dorm. It seemed like a good idea, given our state of mind, so we all piled into their TV lounge. There were a couple of young ladies already there, and they seemed somewhat amused by our presence. Today, one of those two ladies has shared my life for the past 45 years. It was a very small idea on an uneventful day that had a huge impact, as that idea sprouted to an opportunity that grew to a life partnership. Some years later, in a period of career crisis, I drove by a longterm-care facility. A small thought occurred, wondering what professional life inside that organization might be like. I resolved to go chat with the administrator someday. Today, I look back on a very rewarding 33-year career as a healthcare administrator. It was another very small idea on an uneventful day that had a huge impact, sprouting to an opportunity that grew to a life career. One of the things I have learned is that many of the big deals in our life don’t start out as big deals. They start out as passing whims, vague ideas, or inconsequential thoughts.

With nurturing, they bear fruit slowly, sometimes almost in spite of our own intentions. It almost gets one wondering whether we control our own life, or if fate, or God, or something is planting little seeds along our path. Some grow, some are lost, and some turn out to be weeds. I don’t know how we would ever recognize all those little seeds as we travel through life. There may be thousands of them. But I think that at some point we can become aware of having encountered them. I’ll bet you can identify a few in your own life journey. Once we are aware of one, we have to decide what to do with it. Some need watering and nurturing. Some need a quick squirt of Round-up. The adventurous part of life is figuring out which is which. I’m just sayin’. •

Mangia! Mangia! Pizza Palooza at Aladdin Villas West in Mission by Sandy Olson

ll the homemade pizza you can eat (many different types from plain cheese to meat lovers’ and more), fresh crisp green salad, iced tea, lemonade or ice water, and a cup of ice cream with toppings for $7 per person! Not possible, you say? Oh, but it is, and it fills the hall at Aladdin Villas West in Mission with happy people. For those who really love pizza with all the delicious toppings, this is a meal that shouldn’t be missed. They even offer a gluten-free option, upon request. Nancy Rogers is the “pizza supervisor,” and she has organized a team of 25 willing workers who top the crust with sauce and favorite ingredients, cut up the tomatoes, onions, olives and lettuce for the salad, make up the iced tea and lemonade, serve the pizza with a smile, and are ready for you to come back for seconds, thirds, and more. They even bus the tables so you don’t have to dispose of your own trash. Nancy and Aladdin Villas’ Activity Board Chair Lars Nelson told us the story of how the pizza feed started last season, and it has continued to be very popular this year. They will have their pizza feed again Tuesday, January 29, and Tuesday, March 26, from 4:00 – 6:00 p.m. We found the pizza selections, both traditional medium crust and flatbreads, to be everything we wanted. I enjoyed Chicken Alfredo with spinach

and a meat-lovers’ style with too many toppings to mention. Gregg loved the Canadian-bacon-and-pineapple, as well as the sauerkraut-and-pineapple style. Vegetarian eaters will find several styles that are meatless (although not vegan), and traditional pizza fans who love pepperoni only won’t be disappointed. It was impossible to sample everything because there were at least 12 different types on the long serving tables. You get a disposable plate for the pizza, but everything else is “real.” Metal tableware makes cutting the pizza easy if you’re not one to pick it up, roll it, and bite it. The salad bowls are glass, so pile them high and don’t worry that they will collapse. There was plenty of seating, and conversations with old and new friends were animated. Aladdin Villas serves other meals during the month, as well, such as hamburgers, tacos, and baked potatoes. Lars suggested those interested in learning more go to the community’s website (aladdinvillas.org) to check out the calendar and see what is being offered on which days. Aladdin Villas West is located at 1501 Aladdin Villas Boulevard West in Mission. (The other part of this campus, Aladdin Villas East, is across the road.) Speer Memorial Library to host discussion on The Handmaid’s Tale by William Renner, reference librarian

oin us at Speer Memorial Library in Mission Tuesday, January 29, for a discussion of The Handmaid’s Tale, to take place in the library’s Community Room at 5:30 p.m. in Spanish and at 6:30 p.m. in English. Everyone is welcome to attend and discuss the book. In the story, a theocracy has overthrown the U.S. government and established the Republic of Gilead. Among the most notorious policies of the new regime are the ones that relate to the treatment of women. Legally, women are now the property of their husband or father and are forbidden to vote, read, own property, or be independent in any way. Women who are fertile are especially valued by the government as part of an effort to reverse declining birth rates. Called “handmaids,” these women are required to bear children for ruling-class couples when the wife is infertile. The story is narrated by Offred, a handmaid whose tale reveals the cruelties and inner workings of the theocratic government. But, as the story progresses, Offred learns of an underground resistance group whose goal is to overthrow the regime. Written by Margaret Atwood and first published in 1985, The Handmaid’s Tale is a dystopian novel about a future theocratic regime based on

the strict New England Puritanism of the 1600s. In the years since its publication, the novel has become part of the cultural lexicon and has even influenced political debate. ast night, my euchre-playing friend said her goodbyes to us. Not just for the summer but forever. I have been playing cards with Audrey for 10 years, so it was with a sad heart that we had our last contact. Having wintered in Brownsville for the past 30 years, she has now reached an age that puts this beyond her abilities. We never know if our time with others will be our last, as life is precious but unpredictable. This experience polarized the feelings that I have been experiencing for the past few weeks. I have never had the luxury of staying in South Texas this long or this late in the season, so seeing neighbors leave is new to me, as are the feelings it triggers. As this winter season winds down, the whole issue of life’s changing seasons is hitting me. Friends who have left or are leaving for their summer homes up north are saying their farewells through hugs and tears. How can something so sweet be so bitter at the same time? Just as taste buds are impacted and struggle with the contrast of sweetand-sour sauce on chop suey, so too is my heart, which struggles between the goodbyes with my winter friends and

the anticipation of hellos upon seeing my family and summer friends again. As I begin my fourth year of retirement, I am finally getting used to not setting an alarm clock every night and not feeling guilty that I didn’t work on any projects on a given day. It is OK to play games with friends…or not. Sometimes I get busy with something really important--like a crossword puzzle--and then realize I missed shuffleboard that morning. All joking aside, I suppose this newfound license to be late or absent, affords more opportunity to appreciate time with those for whom I care. I have two very best friends. My next-door neighbor will be 93 years old this April, while my youngest grandchild will be four in May. They exemplify the contrasts in my life. This season was our eleventh anniversary of migrating to South Texas for our winter escape. Palm Resaca Park was our first and only seniorsonly community, which in and of itself is bittersweet to me. It is good to have the peace and quite of living with seniors, but the sound of kids laughing and playing here when grandchildren come to visit is such a joy to my heart

and soul that it hurts. Life is filled with contradictions. Just as it hurts to say goodbye to summer family in the fall as we head south, it hurts again when heading back home, yet each is rewarded with fresh reunions. This spring, intensity is the predominant sense I am experiencing. They call seniors’ parks “heavens waiting room.” This thought is sad but true. Many of my friends here are in their late 80s and 90s. Although we don’t dwell on the inevitable, we know our time with them is limited and unknown, not that it is necessarily through death that our relationships will be cut off. With age, our migratory practices may come to an end, regardless of our preferences through

a plethora of possible circumstances. I soothe my separation anxiety with the knowledge that without bitterness, there would be no sweetness, so I shall do my best to savor each moment with each friend with whom I am blessed and learn to live in the moment. •

faith and not by our works! Praise the Lord for this freedom--being saved by grace--by grace alone and not by our list of do’s and don’ts. We are not saved because we attend church; we are not saved because we give, we are not saved because we help others, and we are not saved by anything we can do. We are saved simply by the grace of God and by His grace alone. Are we worthy of such a gift? NO! Yet God lavishes his grace over us as a loving parent. So where do we stand in this? What then is our response? Our response is by faith, knowing that we are covered by His grace--the feeling of complete forgiveness, the washing away of our sin--a faith in the grace he has so lovingly poured over us. We stand covered by His grace, firm in our faith, not because of what we DO (hoping in the end we have done ‘enough’). Being saved by grace, through our faith, we choose to serve, now out of a thankful and completed heart. We strive to give all we are to the one who so selflessly saved us by serving others around us. When you stand at the gates of heaven, and the Lord asks why He should let you into heaven, you

Endangered hornbills back at the Gladys Porter Zoo after 45 years Special to Welcome Home RGV It has been 45 years since the hornbill’s casque isn’t just about having Gladys Porter Zoo has last cared for rhinoceros hornbills. In 1971, the zoo acquired two male rhino hornbills, but after a brief period, one was transferred to another zoo in 1972, and the other was transferred the following year. The zoo has grown a great deal since then, and staff are thrilled to be able to house these endangered tropical birds once again. The Gladys Porter Zoo is now home to two endangered rhinoceros hornbills. The birds, a male and female, arrived from Sacramento Zoo Friday, October 27. After undergoing the standard quarantine period, the pair will make their debut in the newly renovated IndoAustralian Aviary. These birds are native to the rain forests of Malaysia, Sumatra, Java, and Indonesia. As one of the largest species of hornbills, they also have one of the largest casques, a hollow “horn-like” feature above their beaks, which is formed from keratin, the same material as fingernails. Like fingernails, the rhinoceros hornbill’s beak and casque are naturally white, but from rubbing its beak and casque against an oil gland under its tail, it eventually produces the shiny red-yellow-orange color, which is so vibrant in adult birds. The rhinoceros

good looks; the structure is thought to amplify the hornbill’s calls so they can be heard from afar. This is a feature shared with duck-billed dinosaurs, also known as hadrosaurids, which existed more than 60 million years ago. One can determine rhino hornbills’ sex by a slight difference in the size of their hornbills, males having a slightly larger hornbill than females. However, another striking feature is that one can clearly determine their sex by the color of their eyes. The color of the males’ eyes are mahogany red, and the females’ eyes are white. Rhino hornbills are listed as “vulnerable” by the International Union for Conservation of Nature’s Red List of Threatened Species, and their population continues to decline. Their biggest threats include habitat loss and poaching. Poachers hunt them for meat, as well as for their hollow casques and feathers, which are used as an accessory. Shockingly, the rhino hornbills also suffer from a case of mistaken identity. They are often mistaken for the helmeted hornbill, which has a similar casque that is worth more than ivory on the black market, placing the rhino hornbill at a great risk. •

inter Texans, retirees and all of those interested in the region’s history are invited to participate in Winter Texan Wednesday: Smuggling in the Borderlands 1848 to 1881 featuring George Díaz, Ph.D., January 23 at 3 p.m. at the Museum of South Texas History in Edinburg. Winter Texan Wednesday is a half-hour multimedia presentation followed by a half-hour mini-tour of part of a museum exhibit. In an age of shifting boundaries across South Texas and Northeastern Mexico, many people who were caught between the resulting conflicts and battles flaunted international laws by smuggling goods across the Rio Grande. Díaz is the author of Border Contraband: A History of Smuggling Across the Rio Grande, and he will present a program

on the first 30 years following the Treaty of Guadalupe Hidalgo. He will also discuss the smuggling still ongoing along the Rio Grande. A complementary mini-tour of part of a museum exhibit will follow the presentation. Winter Texan Wednesday is included in the regular museum admission fee: Adults (18+) $8 and Seniors (62+) $6. • 4 slices of good bacon, diced • 1 medium yellow onion, diced • 1 pound mixed dry beans, washed. (You can use a bag of mixed soup beans for this recipe, but don’t use any seasoning packet that might be inside. No need to soak the beans, but wash and pick out any shriveled beans or little pieces of anything else.) • 1 can (15 oz.) tomato sauce • ½ cup packed brown sugar • 1 tablespoon dry mustard • 3 cups water • Dash of cinnamon (optional) • Jalapeño peppers (optional—if used, add when sautéing the onion)

This recipe was rated an 8-plus by my tasters. Oddly, some said it was too salty and others said it needed salt. As presented to them, I thought it was seasoned just right. The moral of this story is to taste, taste, taste when making almost any recipe. Also, it is easier to add salt than to remove it. This recipe is easy to make and has no weird ingredients. 1½ Tbsp. olive oil 1 large yellow onion – finely chopped 1 large carrot – finely chopped 1 celery stalk – finely chopped 1 jalapeño pepper – seeds and webbing removed – diced 1 clove minced garlic 1 Tbsp. dried oregano – preferably Mexican 1 tsp. dried coriander 2 tsp. cumin ½ tsp. smoked paprika 2 14-oz. cans diced tomatoes with juice 1 small zucchini squash – peeled, cut in half lengthwise, and sliced 5 cups chicken or vegetable broth. ½ green bell pepper – seeds and webbing removed and roughly chopped ½ red pepper - seeds and webbing removed and roughly chopped 1 can whole kernel corn – drained 1 can black beans – rinsed and drained 1 can garbanzo beans (chickpeas) – rinsed and drained Salt and pepper to taste 2 Tbsp. fresh lime juice ¼ cup chopped fresh cilantro

Heat the olive oil in a stock pot and add the onions. Cook onions at medium heat until translucent. Add the carrots and celery and cook a couple more minutes. Add the herbs, spices, and broth. Next, drain and rinse the beans, corn, and chickpeas and add to the broth. Add the zucchini last. Add the salt, pepper, and lime juice. Bring to a boil and simmer for about 20 minutes. Adjust seasoning. Add the fresh cilantro and serve. Garnish with fresh lime wedges and cilantro. • Randy Hoelscher is a transplanted Texan and half-time RGV resident. Set the pressure cooker on sauté. When it’s hot, add the diced bacon to cook. Break up any clumps of bacon pieces and stir occasionally until cooked through, about 5 minutes. Remove the bacon with a slotted spoon and place on a paper towel to drain. Add the diced onion to the bacon drippings and cook, stirring just until tender but not browned, about 2 minutes. Press cancel on the pot to turn it off. Add all of the remaining ingredients to the pot, including the water; stir to mix. Secure the lid, making sure the pressure valve is on sealing. Cook on manual at high pressure for 90 minutes. When cooking is complete, allow pressure to release naturally; then cancel the pot to turn it off. Carefully remove the lid. Start the pot again in the sauté mode and let the beans cook, uncovered, for about 10 minutes to thicken the sauce. Turn the pot off again and ladle into serving bowls. NOTE: You can also add some diced fresh jalapeño peppers to the beans at the same time you sauté the onions. Serves 20-25 • 2 pounds dry pinto beans • 1 medium onion, chopped • ¾ pound salt pork, ham, or bacon • 1 serrano chili, chopped • 1 clove garlic, minced • ½ bunch cilantro, chopped • 1 tablespoon salt • 3 tablespoons thick and chunky • 3 tomatoes, chopped picante sauce

Place beans in large pot filled half full of water. Cook on medium low heat for 1 hour; add salt pork, ham, or bacon, garlic, and salt. Cook for 2 hours on medium heat. Reduce heat to very low and cook 1 more hour. Refill pot with water and add tomatoes, onion, chili, cilantro, and picante sauce. Simmer until beans are soft, adding water every 15 minutes, if needed. Here is a zesty dish that is sure to win over your guest’s taste buds. Paired with an ice-cold beer, you have a winning strategy! This recipe makes 2 dozen poppers so you may want to double it for a large crowd. Bon Appétit! • • 2 links Mexican chorizo, casings removed (I recommend Chorizo de San Manuel) • 1/2 pound smoked gouda, shredded • 1/4 cup red onion, finely diced • 1 egg • 1/2 cup cream cheese • 3 tablespoons sour cream • 1 tablespoon hot sauce (such as Frank’s) • Kosher salt and freshly ground black pepper • 12 large jalapeno peppers, stemmed, seeded and halved
