RGV performances a highlight for Freddie and Sheila Special to Welcome Home RGV

he Freddie and Sheila Show returns to the RGV January 4-28, with great songs, guitar picking, singing, and lots of laughs! Freddie, on lead acoustic and electric guitar and vocals, demonstrates his heritage by clogging while playing guitar. He plays country, bluegrass and 60’s rock instrumentals and has spent his life learning the Chet-Atkins-style of guitar picking. Sheila, on vocals and rhythm guitar, sings classic country, folk, 60s, and 70s and yodels. Freddie spent many years playing lead guitar for singer-songwriter Ian Tyson (writer of the Carter Family’s Four Strong Winds). The married duo has performed at resorts each winter for 17 years in Texas, Arizona, and California and across western Canada in the summer. Mission Bell/Tradewinds Resorts in Mission have been long-time sponsors of the Freddie and Sheila Show. Freddie and Sheila are offering guitar lessons at Friendship Hall at Mission Bell every Monday from January 7-28 from 1:00-2:30 p.m. These drop-in group sessions are free to Mission Bell/Tradewinds residents and $10/ lesson to out-of-park guitarists. No pre-registration is required, and all levels are welcome, from beginner to advanced. Those attending must

unday, December 9, found many residents of Paradise Park in McAllen sipping a cup of “Christmas tea,” seated at beautifully decorated tables. The program began with a sing-a-long of Christmas carols led by Dwight Brackman on guitar and Tom Malchow on keyboard. We were then treated to interesting stories behind cherished quilts displayed one-byone on a bed. There were memory quilts, a four-generation quilt, gifted quilts, and even a baby quilt. As more tea and coffee were served--along with elaborately decorated Christmas cookies--Troy Reese very capably entertained the crowd with a reading of the book, A Cup of Christmas Tea. More Christmas caroling brought the afternoon to a close. A nonperishable food item was the cost of admission to the program. Approximately 15 grocery bags of various items were delivered to Star of Hope, a local food bank. Many thanks to Dilla Arneson, Penny Reese, Zelma Toerber, Pam Frankowski, and all their helpers for organizing a very entertaining and classy activity. •

On-site hospital backup helping with treatment of emergency patients in Mid Valley Special to Welcome Home RGV

ull-service hospital backup, on site in the Mid-Valley, is helping in the treatment of Winter Texans and local residents needing emergency care at Knapp Medical Center in Weslaco. Patients at the Knapp Medical Center ER have access to the entire 227-bed hospital, including Knapp’s all-digital imaging and radiology services, located just a few steps from the emergency room, as well as Knapp’s state-of-theart pharmacy and a medical staff of more than 200 physicians representing over 30 different specialties. In addition, Knapp Medical Center serves as the Mid Valley’s only Level III Trauma Center designated by the Texas Department of State Health Services to provide resuscitation, stabilization, assessment, and treatment to injury victims. Knapp also serves as an Advanced Primary Stroke Center for the Mid Valley, and is certified by the Joint Commission, the national accrediting organization for healthcare organizations. Dr. Heriberto Alanis serves as medical director for Knapp’s Emergency Room, leading a team of experienced boardcertified emergency physicians, while Carol Carmichael, RN, serves as ER director for Knapp. The physicians provide comprehensive medical care, treating all types of patients, ranging

from those with various types of injuries and illnesses to life-threatening emergencies. Knapp patients also have 24hour access to board-certified neurologists through state-of the-art telemedicine technology, which is used for ER patients presenting with symptoms of stroke, seizures, and other neurological emergencies. A “clot-busting” medication called tPA (tissue plasminogen activator) is used at Knapp when medically indicated to reverse strokes. In many cases, this medication has been shown to help improve a patient’s chances of surviving a stroke without permanent disability or to minimize the severity of disabilities. The medication is most effective if it is administered as soon as possible from when symptoms of a stroke start and no later than three to four-and-a-half hours after the onset of a stroke. Because of this tight timeframe, it is important to call 9-1-1 immediately when a loved one or another person shows symptoms of a ‘brain attack.’ For more information on stroke, please visit StrokeAssociation.org. McAllen High School Choir and Theatre present Disney’s Newsies beginning December 17 Special to Welcome Home RGV

cAllen High School is proud to present the RGV premiere of the awardwinning musical, Newsies. Set in New York City at the turn of the century, Newsies is the tale of Jack Kelly, a leader of a ragged band of teenaged “newsies” who dreams only of a better life. But when publishing titans raise distribution prices at the newsboys’ expense, Jack rallies newsies from across the city to strike against the unfair conditions and to fight for what is right. Students at McAllen High School have been working since August on their production. Jayden Prater, a senior who plays Davey, said, “We started things

differently. Because this musical is so popular, we wanted to do it justice. We started with the choreography while learning the music instead of going directly into the singing. This show has brought so many new faces who have been waiting to be a part of a McHi production, and we are excited for all of them to perform.” Pre-sale tickets are now on sale at McAllen High School for $5 until January 10. United Way of South Texas president/CEO announces retirement Special to Welcome Home RGV

ovember 14, 2018, President of United Way of South Texas Thelma M. Garza announced her retirement, effective March 29, to the organization’s board of directors and staff. Garza has been in the United Way system since 1985--nine years with United Way of Coastal Bend and 24 years with United Way of South Texas. Garza was instrumental in establishing many new programs in Hidalgo and Starr Counties but believes the most impactful work resulted in working with volunteers and increasing volunteer capacity for the entire organization. “We have an outstanding board of directors, always visionaries in setting goals and holding themselves accountable for exceeding expectations,” said Garza. “Working with the board of directors is extremely rewarding. They are professional and progressive, and together we have helped thousands of residents in our two-county area.” Garza also recognized her staff for their willingness to do more and help each other in executing quality work. “The organization’s accomplishments could not have happened without the team of volunteers and staff,” she said.

Since 1994, Garza has established or expanded innovative programs to benefit residents in need. One of the first tasks she accomplished was expanding United Way of South Texas’ jurisdiction to include Starr County. The organization’s name changed from United Way of Hidalgo County to United Way of South Texas to reflect the expanded service area. Garza helped increase the number of partner agencies and programs that serve both Hidalgo and Starr counties. Additionally, she gathered representatives from various federal and state agencies to start the Combined Federal Campaign and the State Employee Charitable Campaign for the Rio Grande Valley area. She also collaborated with other community leaders to establish “2-1-1” as a valley wide agency.

Within this organization, Garza has established programs to offer direct assistance to residents. These programs include the following: The annual Backto-School “In Style” Shopping Spree for 120 middle-school students, the Day of Caring, which benefits 3,300 freshmen every year, the 12 Days of Christmas, the Transportation Voucher Program, support for LatinaHope, establishment of the Education Council/Work Ready Program, the Volunteer Income Tax Assistance (VITA) Program, Volunteer South Texas, and the establishment of the Community Veterans’ Engagement Board – RGV. United Way of South Texas is announcing the opening for the position of chief professional officer position. The organization is looking for an individual with the following skills, experience, and education: • Must have a bachelor’s degree or higher in health and human services, business, or a combination of the two • United Way leadership experience is preferred or experience in a leadership position for a nonprofit organization for at least five (5) years or more • Must demonstrate leadership in the following areas: budgeting, overall project management, and relationshipbuilding •

Symphony of Color combines indigenous Wixárika art and musical instruments Special to Welcome Home RGV

aturday, January 19, the International Museum of Art & Science (IMAS) will open the internationally acclaimed Symphony of Color exhibition in association with the Hermes Music Foundation, the Secretaria de Cultura en Mexico, and the Festival de Música Contemporánea para un Mundo Mejor. World-renowned sculptor Sebastián writes about the exhibition, “The Huichols have given our country an enormous strength in the color and design ability and in the whole cosmogony of the expression of what they design, turning the Wixárika culture into a fundamental base for many and very great artists. The soulstirring art exhibit of the Wixárika people awakens in each of us the sacred and the divine. Their ancient art, so vibrant in color and rich in symbolism, combined with musical instruments, effortlessly draws you into their compelling world of magic and myth. These works of art are the true expression and soul of humanity.” In conjunction with the exhibition, the IMAS will be offering workshops led by Huichol artists. The Huichol artists will share about their technique and use of symbols to further enhance understanding of the Wixárika (Huichol) culture. Huichol art is one of the most preserved indigenous art forms of the ancient Mexican pre-Hispanic cultures. Symphony of Color is comprised of a collection of over 40 musical instruments that have been decorated with colorful beads by artisans from the Wixárika community, also known as Huicholes. Each musical instrument is a depiction of

the Wixárika culture and art and is deeply embedded with their beliefs. The Hermes Music Foundation supports the Wixárika community by employing Wixárika artists, selling the instruments and returning the funds to their community. “The pieces in Symphony of Color are bound to inspire our community and our youth, as the experience goes beyond the exhibit itself and into the programming of our educational department,” said Anastasia Perez, IMAS development and marketing director. “This exhibit aligns inherently with the mission of the IMAS, promoting a deeper appreciation of the arts and sciences through culture and artistic enlightenment. We believe this collection will inspire and resonate with each and every visitor.” The exhibit is made possible by the generous sponsorship of the Charles Clark Chevrolet Company and Clark Knapp Honda. Symphony of Color was organized by the Hermes Music Foundation through the support of the Secretaria de Cultura en Mexico and the Festival de Música Contemporánea para un Mundo Mejor. Symphony of Color will be on display January 19 through June 30. Admission is free for IMAS members and included with the price of regular admission. •

least enough to allow one to begin the process of making the lifestyle changes that may be required. Other mentalhealth counseling professionals can help sort out the cognitive issues that are often at the root of--or the result of--mental illness. The next step is to get going and get active. That includes a long list of things. Exercise helps. Getting a part-time job, volunteering at a place where there are other people, and social connections help. Church is a great place to start that process, but the local coffee shops with a table of friends are great, too. Building and re-engaging in a social network is critical. Finding enjoyable activities that occupy the mind and body help. The key is to engage in something significant and rebuild a sense of purpose and connection. Some of us figure all this out after we have experienced the big crash. Those who are more prepared ahead of time deal with it before retirement. They pre-plan those activities and relationships before the transition, thereby avoiding all of the mental trauma that goes with change. For those who may be heading toward retirement in the very near future who aren’t ready, part of the key to survival is to recognize and expect that trouble

might happen. Being blindsided as I was is dangerous. However, if you know it is coming and anticipate its arrival, it becomes less of a big deal. You can manage it without fear, knowing there is a way out. It is easy to say we should be volunteering and staying socially engaged. It is quite achievable in the big city. Living in rural America, as most of us do, there are fewer resources and agencies seeking our participation. However, that does not leave us without resources. The greatest resource we have in our small towns is each other. Know that one in every five of your own friends and relatives is struggling. Have the conversations and figure out who they are. You might be the person they need in order to avoid theirs being the next unanticipated funeral in your town where everyone says, “Well, he/she never showed any hint that something was wrong.” In the world of abuse and exploitation, they have a saying--“Tell someone.” It is no less important for us seniors. If you are struggling, tell someone. There is no reason to feel ashamed. It isn’t your fault. Sometimes stuff just happens. The worst and most dangerous thing is to bear the burden alone. •

Who am I to question God? by Rev. E.B. Holschuh

“After these things he appeared

in another form to two of them, as they were walking into the country. And they went back and told the rest, but they did not believe them.” (Mark 16:12-13) Which event would likely send the unsuspecting public--among them, many Christians--into a mass panic, an appearance by Jesus or a visit from extraterrestrial lifeforms? What if either showed up tomorrow, unannounced, to say hello, to reassure us that we’re not alone? Imagine if I reported that I not only saw Jesus in the flesh, but interacted with him, maybe had a cup of coffee or lunch with him? I would be branded, at the least, a religious wacko; most likely, you’d think I was just a nut… certifiable. Same as if I told you I interacted with E.T. (though probably not over coffee or lunch). I got to thinking what it might be like to see and talk to Jesus in today’s world. What would/could I say to God? What would it feel like to look into the eyes of this man who knows absolutely everything about me— every dark secret, every regret, every

And how could I not help but wonder why God would want to spend time with an everyday, average schlep like me, of all people? What could Jesus—God Himself—possibly want with me (when there’s so much war and pestilence elsewhere, what with that devil on the loose and all)? Let’s imagine that I wouldn’t stutter like a cartoon character or, worse, become so fraught with guilt and anxiety that I’d lose my faculties or have an accident but that I find such an encounter purposeful and so get myself together to simply spend time with my Savior. (Oh, who am I fooling? I’d be a mess.) Let’s also suppose that for just such

an occasion, I already had a few preselected questions (in case I was a mess and couldn’t think straight) to ask Jesus. I actually do have a bunch; however, at the risk of being branded a heretic, I’ve narrowed the list to five: 1. Why is Scripture silent on your whereabouts between your preteen years and your baptism by John? 2. Why was Satan allowed into the Garden of Eden, a place of blissful innocence where God walked with Man? 3. From a human standpoint, if punishment is meant to incapacitate, deter, get restitution, exact retribution, or rehabilitate, then is there a means to the end of eternal damnation under the Law? 4. If it is even possible for a man like me to comprehend what heaven is like, could you describe it? 5. In a seemingly infinite universe, it’s difficult to believe that ours is the only life-sustaining planet. Is there other sentient life out there? What an awesome fantasy, huh? To be able to ask God certain questions like these. But, seriously, what would I do with the answers? (And suppose

that, during my encounter with Jesus, he had questions for me? Yikes!) Thankfully, all the answers we need can be found in Scripture, even to heartfelt, but misguided questions such as, “How can a loving God send people to hell?” (The better question is, “How can a holy God let sinful people into heaven?”) And only one answer really matters to God: faith. All sinners can be brought back into a right relationship with Him through faith in Christ, to share in His victory on the cross over death and Satan. (No questions asked!) •

ene Turner began his career as a pickpocket entertainer almost by accident. As an insurance salesman, Gene would perform magic tricks for his clients. But soon, they wanted him to perform at parties more than they wanted to talk insurance. By 1985, Gene found he was successful enough with his comedy, magic, and pickpocket demonstrations to leave the world of actuarial tables behind and dedicate himself to his real love--performing. Since that time, the demand for Gene’s talents as a corporate magician, pickpocket infotainer (someone who uses entertainment to inform or educate), and speaker has grown to over 150 events each year and includes performances and speaking engagements for many Fortune 500 companies. He wows audiences at seminars, conferences, stockholder meetings, trade shows, awards banquets, and celebrity receptions. He is an incredible keynote speaker and master of ceremonies, using his skills to motivate, inform and entertain. Gene is a Certified Identity Theft Risk Management Specialist and makes numerous presentations weekly on the subjects of identity theft risk reduction, travel safety and security, and pickpocket prevention. 35-year veteran of Branson Entertainment, Rick McEwen has performed with some of the biggest entertainers in show business. He has a passion for performing classic rock, classic country, rhythm and blues, and soul music. Rick is a member of the Traditional Country Hall of Fame and has been nominated for Male Vocalist of the Year in Branson, Missouri. Rick spent eight years honing his skills in Nashville before moving to the live-music capitol of the world, Branson, in 1984. He performed with such greats as Earl Scruggs, Webb Pierce, The Dillards (They were the Darling family on the Andy Griffith Show). Randy opened many shows for Waylon, George Jones, Loretta Lynn, Dottie West, and other country-music legends. After moving to Branson, Rick was the featured singer with the great Jim Stafford for 14 years. He has produced eight musical shows, 10 albums, and music for a Walt-Disney production. alph Kuster’s lifelong passion for music became a reality with the production of his first three CDs from 2003 to 2005. In 2006, he was thrilled and honored to perform I May Never Get to Heaven by Conway Twitty and Unchained Melody by the Righteous Brothers before over 2200 people at the annual COSAP Variety Show at the renowned Roy Thomson Hall in Toronto, Canada. In 2008, Ralph opened his one-man variety show in Branson, Missouri, and continued shows there at the God and Country Theater through December of 2013. In 2012, he began to perform in the Rio Grande Valley. With over 600 songs now in his repertoire, Ralph produces, directs, and performs a series of shows. Ralph now includes a visual presentation for every song in every show to add to the enjoyment of his performances. Ralph loves to interact with his audiences, and his musical diversity has resulted in various return engagements in the Rio Grande Valley. He can tailor a show to meet specific musical and time-restricted preferences. Ralph enjoys performing gospel music and has been a guest soloist at various churches and gospel functions. ainoa Kamaka (aka KAI) is a professional, sponsored KoAloha Ukulele artist, born and raised on the Big Island of Hawaii and now residing in San Antonio. Recognized as an “Ambassador of Aloha” by the lieutenant governor of Hawaii and the L & L Hawaiian Grill franchise, Kainoa’s wide repertoire of music (from Hawaii to the mainland), combined with his energy and ability to entertain every audience, makes him a much-sought-after entertainer for all events! This is KAI’s first season to entertain Winter Texans. He moved from Hawaii to San Antonio after visiting a colleague. He was ready to experience life outside Hawaii and fell in love with Texas, especially San Antonio. For the past 10 years, he served as a director at the University of Texas at San Antonio in the College of Science. He was in charge of the state Science and Engineering Fair. KAI’s girlfriend is from Edinburg and has told him for a long time he needed to entertain at Winter-Texan parks, but his schedule would not make doing so an easy task. KAI took early retirement in January of 2018, which allowed him to participate in the Entertainer Showcase, and he booked over 20 gigs for this season! ason Whorlow is in his fifth year of entertaining Winter Texans. He has been nominated--and won--several awards during this time and is now in high demand for his extremely versatile, unique, and interactive show. Jason has had crowds of over 400 singing along to Sweet Caroline, with their hands raised high in the air. At his shows, you will find couples dancing emotionally to Can’t Help Falling in Love and Unchained Melody. Winter Texans have enjoyed his energetic performances with music by Jerry Lee Lewis, Billy Joel, Elton John, and others. Jason also enjoys playing to laid-back Island crowds with songs by Kenny Chesney, the Zac Brown Band, Otis Redding, Jimmy Buffet, and so many more. He prides himself on his ability to effortlessly enjoy each and every performance with gratitude because he is living out his dream as an entertainer. Jason often features his young daughters, with songs from The Greatest Showman, Alison Krauss, Linda Ronstadt, and others. He will be performing at over 50 venues this 2018-2019 season. usty Rierson is a native of SouthCentral, Kansas. Growing up on the family farm he fell in love with agriculture earning a bachelor’s in agricultural economics and a master’s in animal science. Rusty got into music when he was 14 years old. He started singing in church and soon it became a passion. He learned guitar when his father, Roger, suggested they take lessons together. Rusty has played all over the U.S., including Alaska. He has toured abroad in Canada, Mexico, Central America, Scotland, and London. He often travels with the Better Horses Radio Show and has played rodeos, barrel races, and horse events all over the Midwest. Rusty has opened for, and shared the stage and worked with, artists such as Sawyer Brown, John Berry, Doug Stone, Michael Martin Murphy, Dustin Lynch, T. G. Sheppard, Moe Bandy, David Frizzell, R.W. Hampton, Johnny Lee, Bill Gentry, Leroy Van Dyke, Helen Cornelius, Billy Dean, Johnny Western, Love and Theft, Collin Raye, Suzy Bogguss, Radney Foster, Logan Mize, Jimmy Fortune, Craig Campbell, John Anderson, Walker Montgomery, Ronnie McDowell, Cassadee Pope, Joe Diffie, Maddie & Tae, Don Williams, and many others. He always plays tribute to George Strait, Don Williams, and some of his other heroes, as well as delighting crowds with his own music. Rusty said he hopes people will see his music as “a breath of fresh air.” He has produced eight albums and one DVD. There are now more than 100,000 copies of his albums in print. Creamy Rice Pudding, Pressure-Cooker Style Submitted by Sandy Olson

• 1½ cup Arborio rice • ¾ cups white sugar • ½ teaspoon salt • 5 cups milk - 2% works well

• 2 eggs • 1 cup Half & Half or light cream • 1½ teaspoons real vanilla extract • 1 cup dark raisins

In the pot of your pressure cooker, combine the rice, sugar, salt, and milk. Set the cooker to sauté mode, and bring the mixture to a boil. As soon as this happens, cover the cooker and lock the lid into place with the pressure value set on sealing. Turn the cooker off to cancel the sauté function and reset on manual pressure, low mode. Set timer for 16 minutes. While the rice is cooking, whisk the eggs with the Half & Half and vanilla. When the cooker beeper sounds, turn it off and wait for a 10-minute natural release. Use a quick release for the remaining pressure and carefully remove the lid. Stir the rice. Add the egg mixture slowly to the pot, stirring as you go. Select sauté mode once again and cook, uncovered, until the mixture starts to boil. Turn off the pressure cooker and stir in the raisins. Serve hot or allow to cool a bit, and then pour into individual serving dishes or a serving bowl. Cover with plastic and chill. The pudding will thicken as it chills so adding a bit more Half & Half may be a good idea if you are serving it cold. Spanish Rice

Serves 6 • 3 tablespoons oil • ½ teaspoon garlic powder • 1 cup rice • ½ teaspoon ground cumin • Few slices of onion • 1 teaspoon chicken bouillon granules • Few slice of green bell pepper • 1 cup hot water • ½ can whole tomatoes • ½ cup canned or frozen peas and with green chilies carrots (optional) • ½ teaspoon salt • ½ teaspoon ground pepper Heat oil on medium heat in skillet. Add rice, onion, and bell pepper and brown. Do not let rice burn! Blend tomatoes and spices in blender. (It should measure 1 cup liquid.) Add hot water and blend again. Add liquid mixture to rice and stir. Return to boil for 30 seconds. If desired, add peas and carrots at this time and stir once or twice only. Cover skillet with a tight-fitting lid. This signature Julia Child dish is perfect this time of year. It’s warm, comforting and satisfying. We served this at Marcello’s the other night on New Year’s eve and I was asked to print the recipe. If you have ever wondered what it would feel like to cook as the French, in their classic old world technique, this is it. This is the quintessential method of braising and it is perfect for transforming an inexpensive cut of beef into a luscious, tender, flavorful French stew, ideal on a rainy cold day. And fear not, it is not as difficult as the name would suggest. And best of all, when you make this dish, you will feel Chef Julia with you, by your side. In her immortal words, “Cooking is like love; it should be entered into with abandon or not at all.” – Julia Child Chef’s note: This dish is absolutely the perfect job for a colorful Le Creuset Dutch oven if you have one.

• 1 tablespoon pure olive oil • 8 ounces thick cut smoked bacon, diced into lardoons (thin strips) • 2 1/2 pounds chuck beef cut into 1-inch cubes • Kosher salt • Freshly ground black pepper • 1 pound carrots (~ 3 ½ cups), peeled and sliced diagonally into 1-inch pieces • 2 yellow onions, sliced • 4 cloves chopped garlic • 3/4 cup Cognac • 1 (750 ml.) bottle quality dry red wine (I use Merlot) • 2 cups beef stock (low or no sodium)

• 1 tablespoon tomato paste • 1 teaspoon fresh thyme leaves, removed from stem • 4 tablespoons unsalted butter at room temperature, divided • 3 tablespoons all-purpose flour • 1 bag 16 oz frozen whole small onions • 1 pound fresh mushrooms, stems discarded, caps thickly sliced To serve: • Country French bread toasted or grilled and rubbed with garlic clove • 1/2 cup minced fresh parsley, optional

Preheat the oven to 250 degrees F. Heat the olive oil in a large Dutch oven. Add the bacon and cook over medium heat for ~10 minutes, stirring occasionally, until the bacon is lightly browned. Remove the bacon with a slotted spoon and set aside. Increase the heat to medium high. Dry the beef cubes well with a paper towel and sprinkle with salt and pepper. Working in batches in a single layer, sear the beef in the hot oil for 3 to 5 minutes, turning to brown on all sides. Remove the seared cubes and set aside with the bacon. Continue searing until all the beef is browned and set aside. In the fat in the same pot, add the onions and carrots, 1 tablespoon of salt and 1 teaspoon of pepper and cook for 10 to 15 minutes, stirring occasionally, until the onions are lightly browned. Add the garlic and cook for 1 minute, taking care not to burn the garlic. Add the Cognac and carefully ignite with a match to burn off the alcohol. Once the flames subside, return the bacon and beef to the pot with the juices. Add the tomato paste and thyme, stirring to combine. Add the bottle of wine plus enough beef stock to almost cover the beef. Bring to a simmer and cover the pot with a tight-fitting lid. Remove from heat and place in the oven for approximately 1 1/4 hours or until the meat and vegetables are tender when pierced. Remove from the oven. Combine 2 tablespoons of butter with the flour with a fork and stir into the stew. Add the frozen onions. In a small pan, melt 2 tablespoons of the butter and sauté the mushrooms for ~8 minutes until lightly browned and then add to the pot. Over a burner, bring the stew to a boil then lower the heat to simmer uncovered for 15 minutes. Season to taste with kosher salt and freshly ground pepper. To serve, toast the bread gently under the broiler in the oven. Remove and rub each slice with a cut clove of garlic. Place a piece of the crusty bread on each plate and spoon the stew over it; garnish with minced parsley. •
