Orphan Train Riders continues on track Special to Welcome Home RGV

he Orphan Train is beginning to make its stops across the Rio Grande Valley once again. The American History Stories are told by Dorothy A. Lund Nelson of Rochester, Minnesota, who is a Winter Texan for five months. She brings the America History Stories to Valley parks and museums through an interactive Powerpoint presentation. The Orphan Trains delivered 250,000 children throughout our nation from 1894-1929. The main agencies “placing out” children were the Children’s Aid Society and the New York Foundling Hospital. These are “depots” where the stories will be told. Please arrive 15 minutes ahead of the scheduled presentation time:

The Don Wes has novelty items, too, such as T-shirts that read: The last mosquito that bit me was hungover for a week! and more practical things like crocheted scrubbing pads and kitchenware (not to mention wood crafts, spinning lawn art, bedazzled handbags, and cheese. Yes, cheese!) Papa’s Cheese & Smoked Meat Shoppe is located inside the main barn and over 61 cheeses are listed on their brochure. In addition to cheese, they sell Amish Roll Butter, cheese curds, pickled meats, smoked meats, and summer sausages. If cheese doesn’t do it for you, there’s gourmet coffee and award-winning Kettle Korn, as well as Amish jams and roasted nuts. Also inside the main barn is the bar and restaurant, where you might find the owner, Debbie, serving up a burger--made to order--with a side of onion rings. The delicious aroma, casual atmosphere, and live music will make you want to settle into a booth and stay awhile. Debbie and her husband, Jim, have owned the Don Wes for 20 years. They recently celebrated Customer Appreciation Day, providing door prizes and live entertainment in the restaurant and in the pavilion. The pavilion is a great place to set your shopping bags down, kick back, and people watch. The Don Wes Flea Market is filled with treasures and bargains. Things I Have Learned

A somewhat random and reckless look at life from a fairly old guy

was recently doing some archiving work at my church and came across an old confirmation photo from 1949. It showed about 20 fine-looking young ladies and gentlemen in confirmation robes. They were looking pleasant enough, but I’m sure all were thinking, “Whew! Glad I finally got that over with.” I suspect that because that is what I was thinking on my confirmation day. Confirmation was much different in the olden days. Today’s kids have it easy. My Lutheran congregation had confirmation for two hours every Saturday morning for three years. Who, today, gives up three years of Saturdays to learn about church doctrine? Anyway, I looked at the photo and recognized no one. Then I turned it over and read all the names. Among them, I found three guys who are in my social circle today. My how they have changed! People who know these things tell us that we turn over all the cells in our body every seven to 10 years (except brain cells, which we are stuck with for life.). Well, no wonder I didn’t recognize them. My friends are all about nine bodies removed from that 1949 photo. As I look at them today, it occurs to me that something seems to have gone wrong in the replication process.

Actually, it did. One of the things I have learned is that with each body replacement, there is a decline in quality. Scientists call that the Second Law of Thermodynamics, meaning all natural systems degenerate when left to themselves. My boys are clearly victims of this law, as am I. The odd thing is that the self-aware “me” part that rides in this old body is still me. There haven’t been nine “mes” in me, just the one. What’s even weirder is that my “me” still feels young. Could the part that is me be immune from the law? Might there be something really spectacular going on here that is above the law? I’ve wondered about that long enough to write a book about it. My book, In Search of Life, The Journey: An Exploration of the Idea of Life After Death, is available at Amazon or Barnes & Noble. You might find it interesting. I’m just sayin’. •

Chimney Park volunteers celebrate another wonderful season of giving.

esidents of RV parks in the Rio Grande Valley find ways to volunteer time and to support charitable causes throughout the year, especially at Christmas time. Chimney RV Park Resort in Mission has been ‘adopting’ families recommended by the Mission Food Pantry since Lois Wilmot organized the first “adoption” in 2000. This year, four families (eight adults and 19 children) were adopted. Organized by Patty Woodruff and Joann Manley and with donations from park residents, volunteers shop for food, clothing, and gifts, including toiletries. Each family receives a

turkey and all the ingredients for a Christmas dinner. They also receive a month’s supply of grocery staples. Thrivent Insurance provided the volunteers with shirts and some monetary support. Chimney residents also filled boxes with toys and other items for His Hands Mission and the Mission Police Department Toy Drive. A permanent food-and-clothing donation box in the activity hall fills often and is delivered to the food bank. As the volunteer shoppers’, packers’, and loaders’ shirts read… Give Generously. •

Canada’s premiere vocal group coming to Harlingen Special to Welcome Home RGV

usic lovers are in for a treat this season when Cadence, Canada’s premiere vocal group, arrives from the frozen north. Cadence produces the powerful, rich sounds of a full band using only four voices. Based in Toronto, this a cappella ensemble has been wowing audiences across North America and around the world since 1998. Whether performing at sold-out jazz clubs and concert halls, at music festivals, for educational outreach, or at corporate functions, the members of Cadence bring an infectious energy and uncanny verve to every song they sing. The group’s four critically acclaimed studio albums, Cool Yule (2011), Speak Easy (2010), Twenty for One (2005), and Frost Free (2000) have won, or been nominated for, numerous awards, including three nods from the JUNO Awards and 10 from the Contemporary A Cappella Recording Awards (CARA). he Red Hat ladies from Split Rail RV Park & Resort in Mission have a lot to be proud of. They donated 83 pairs of children’s PJs and nightgowns to foster children for Christmas. They not only donated these items, but they also gave several toys to the children at Leal Elementary School. In November, a car full of school

supplies and coats drove up to the school to deliver these gifts donated by local residents. Another carload as delivered in December. We have a park filled with residents who give so much to the community with a cheerful heart, not only at Christmas time but throughout their stay! •

• Happiness • What is happiness? If you ask 100

people what happiness is or what makes them happy, you will probably receive 100 different answers. If you look up happiness in the dictionary, you will read: “Happiness is the state of being happy.” No help there. Happiness is a mental or emotional state of mind ranging from contentment to euphoria, depending on where you are at the moment. Psalm 144, verse 15 reads, “Happy are the people who are in such a state: happy are the people whose God is the Lord.” God’s people were living in a time when their barns were full, their livestock were productive, and there was peace in the villages. They were happy, living in a time of abundance. Psalm 144 is all about praising God for His grace and provision. What makes you happy? Are you so wound up in worldly happenings and possessions, thinking that the more you possess the happier you are? Or are you happy and content that Jesus is your Savior, the Lord of Lord and King of Kings who died for your personal salvation? Yes, He died for YOU as well as me and everyone else. The book of Psalms refers to happiness many times. Psalm 3:13 reads, “Happy is the man who finds wisdom and the man who gains understanding.” Wisdom is not found in reading books or listening to the news. Wisdom is reading God’s word until you really know and understand it. Wisdom is knowing that God wants you to live His word

Quick, Quick Pizza Soup Submitted by Sandy Olson

• 1 pound bulk Italian sausage, mild or hot • 3 large cloves fresh garlic, minced • 1 small yellow onion, diced • 1 medium green bell pepper, diced and divided • 2 cups marinara sauce, bottled or homemade • 2 teaspoons Italian seasoning • ½ cup mini pepperoni slices or regular pepperoni, diced and divided • 4 cups low-sodium chicken broth, canned or homemade • 4 oz. regular cream cheese (not low-fat or non-fat), softened • 4 oz. sliced ripe olives, divided • ½ cup shredded Mozzarella cheese Turn the pressure cooker to sauté mode and add the sausage. Brown for 2-3 minutes, breaking the sausage up into small pieces. Add the garlic, onion, and about ¾ of the diced green pepper. Sauté for 4-5 minutes or until the veggies are slightly softened. Add the marinara sauce, Italian seasoning, and ½ of the pepperoni. Mix well and let this cook for a couple of minutes. Add the chicken stock and stir. Turn off the cooker to cancel the sauté mode. Put the lid on, setting the pressure valve to sealing position. Cook on manual for 6 minutes; then allow the pressure to release naturally for 10 minutes. Release remaining pressure and remove the lid carefully. Add the cream cheese and ½ of the olives, whisking to incorporate the cream cheese into the hot soup. This will thicken the soup as well as giving it a creamy consistency. Adjust for seasoning, adding salt and/or pepper to taste. Ladle into serving bowls and garnish each with 2 tablespoons of shredded mozzarella. Sprinkle on reserved green peppers, olives, and pepperoni. Pineapple Empanadas

Submitted by The Junior League of McAllen, Inc. Yield: 3 dozen • 4 cups flour • 1 tablespoon white vinegar • 1 teaspoon sugar • ½ cup water • ¼ teaspoon salt • 1 (10 oz.) jar pineapple preserves • 1¾ cups shortening • 1 cup sugar • 1 egg, well beaten • 1 tablespoon cinnamon Preheat oven to 400 degrees. Sift flour; mix with sugar and salt. Cut in shortening using 2 forks. In a large bowl, combine well-beaten egg, vinegar, and water. Using your hands, mix the dough to form a ball. Chill for 30 minutes. Divide the dough into balls about 2 inches in diameter. With rolling pin, roll into circles about 2 inches in diameter. Place ½ teaspoon pineapple preserves on 1 side of each circle; fold the other half of dough over preserves. Pinch edges to seal. Bake on ungreased cookie sheet for 15-18 minutes. While the empanadas are baking, mix sugar and cinnamon in a large bowl and set aside. Gently remove baked empanadas from cookie sheet and coat with cinnamon and sugar mixture. Place on platter to cool. Note: Other flavors of preserves may be substituted, if desired. If you find yourself invited to the ever popular cookie exchange party, I

offer you this “sure thing” bar cookie recipe everyone will be sure to love. It’s a delicious twist on the classic “Blondie” with the addition of some peanut butter and peanut butter baking chips. Super yummy! They’re an ideal choice for your holiday baking line-up or as a compliment to your morning coffee to help get you going. They could not be easier to prepare. You can also try adding toffee bits or other baking chips as well – have fun with it. Happy baking & snacking! Bon Appétit! • • 1-1/2 cups packed brown sugar • ½ cup butter, melted • ½ cup creamy peanut butter • 2 eggs, lightly beaten • 1 teaspoon vanilla extract • 1-1/2 cups all-purpose flour • 1/2 teaspoon baking powder • 1/2 teaspoon salt • 1/2 cup (3 ounces) semisweet chocolate chips • 1/2 cup (3 ounces) peanut butter baking chips

• • • In a large bowl, combine the brown sugar, butter, peanut butter eggs and vanilla just until blended. In a separate bowl, combine the flour, baking powder and salt; add to wet mixture. Gently stir in the chocolate chips and peanut butter chips. Spread into a greased 13 x 9 baking pan. Bake at 350° for 18-20 minutes or until a toothpick inserted near the center comes out clean. Take care not to over bake. Cool on a wire rack and cut into bars. •
