Great fun was had by all who came out for our first annual Welcome Home RGV Winter Texan Homecoming! Over 250 Winter Texans from across the Rio Grande Valley attended the event, held Tuesday, December 5, at Riverside Club in Mission. We had live music performed by Curt James. We danced, we ate, and we all had a great time! We asked the crowd if they thought this should become an annual event, and the response was an overwhelming YES!

Members of the Parula Winds are all members of the McAllen Wind Ensemble. They are local band directors, woodwind consultants, and private lesson teachers. •

hours are here again at Snow to Sun RV Resort in Weslaco. Music and dancing begin at 3:00 p.m. and end promptly at 4:30 p.m. The weekly line-up of artists began the first week of November, with Diego appearing Mondays through the end of the season. All partygoers are welcome. There is no entry fee; however, volunteers pass the hat during intermission to compensate musicians. Beer, wine, and soft drinks are available for a nominal charge. Outside drinks are prohibited, with this exception: guests may bring their own container of liquor to mix with various soft drinks. The 2018 schedule begins Monday, January 1, 2018, and ends March 26 when large numbers of Winter Texans begin to head north. • Mondays – Diego • Tuesdays – Lynn Dvorak

• Wednesdays – The Hitman • Thursdays – Regan James • Fridays – Johnny D According to Shannon Clugston, activity director, “Happy Hours generally draw 60 to 100 people, although sometimes we have had a full house, especially on Mondays. But we usually have plenty of room, and everyone is invited.” Other events scheduled during the season include Saturday night dances ($6.00) from 7:00 – 10:00 p.m. and A New Year’s Eve party with Diego (advance tickets only, $15.00 per person). Tickets for New Year’s Eve are now on sale during Happy Hour and will be available each successive Happy Hour until they are gone. Past New Year’s parties have sold out early, which means there will be no tickets available at the door New Year’s Eve. •

Busy, busy as little honey bees. Our

resort, River Bend, is in full swing. Our activities are many, including water aerobics, pickle ball, yoga, walking program, quilters, crafters, and card players, just to name a few. Throw in golfing at the River Bend Golf Club (a separate entity), and you have the makings of an active season. We don’t stop there, however; as we are also a very community-minded group. In December, we have two huge events we work with. One is the Brownsville Police and their Christmas giving to the children. First up is building bikes, and both men and women participate. Everyone has a job. Second, a few days later, is candy-bagging where we set up tables in factory fashion, something like the I Love Lucy episode where they were working in a candy factory. We have our bag openers. Then, each station adds a piece of candy, passing the bag on down the assembly line until it is full. Then people seal the bag-about 3000 bags each year--and we get it done in record time. It is a great time of fellowship. Then, on another day, we get so

lucky. One of the primary schools comes to present us with a Christmas program, making those of us away from our own grandchildren feel good. Of course, we do have Santa visit, and they each receive a gift and lunch. Since we are a 55-plus gated community, we own our own roads, so lots of walkers, bicycle riders, and golf carts can be seen along the roads. People are oh so friendly. We are part-homes with a part-RV section that has park models and campers. Sometimes, due to stopping to visit different people, the ride around the park can take a couple of hours. We are also a tropical paradise, so many of those elusive birds and butterflies are found right here. In fact, I dragged my husband all over looking for the great Kiskadee and now have them in my own backyard! We are having our first (hopefully annual) Christmas Show and Luncheon Saturday, December 9, from 9:00 a.m. to 2:00 p.m. Admission is free. River Bend Resort and Golf Club is located at 4551 U.S. Highway 281 in Brownsville, Texas. •

Texans in the Mid-Valley who need to see a physician for heartrelated problems, a new cardiologist, Miguel Zabalgoitia-Reyes, M.D., F.A.C.C., F.A.S.E., is now seeing patients in Weslaco. Dr. Zabalgoitia is now available to see patients at South Heart Clinic’s Weslaco office at 902 S. Airport Drive, Suite 5B (phone: 956-9686430). The South Heart Clinic also has an office in Harlingen and includes a team of some of the most experienced cardiologists in the Valley. Dr. Zabalgoitia specializes in treating patients with chest pain and abnormal EKGs and other heartrelated conditions and is conducting evaluations for patients needing clearance for surgery. Dr. Zabalgoitia, who previously practiced at the Heart Institute of Brownsville, said he is glad to be in the Mid-Valley and looks forward to helping further educate people on heart health in our area, as well as treating patients. “There is so much that we can do to prevent heart disease and to improve our health, through lifestyle improvements such as healthy eating, exercise, not smoking, controlling high blood pressure and diabetes,” Dr. Zabalgoitia said during a recent event at Knapp Medical Center. “I enjoy working with my patients to address these and other issues, which can make such a difference in the process of heart disease and with their quality of life.” Dr. Zabalgoitia, who is fluent in English and Spanish, is board certified in cardiovascular disease, echocardiography, and internal medicine. He completed a fellowship

in echocardiography at Northwestern Memorial Hospital in Chicago (through Northwestern University School of Medicine), as well as a fellowship in cardiology through the University of Ottawa Heart Institute in Ontario, Canada. In addition, Dr. Zabalgoitia completed a residency in internal medicine at the National Medical Center in México City through the National University of Mexico. He completed medical school at the University of Guadalajara. In addition to his extensive experience as a practicing cardiologist, Dr. Zabalgoitia has received several academic appointments, having previously served as professor of medicine at the University of Texas Health Science Center - San Antonio, as well as assistant professor of medicine at Northwestern University School of Medicine in Chicago. He has also provided research support for numerous studies related to cardiovascular disease and authored and co-authored articles in various medical journals and other publications, including eight book chapters and more than 100 peerreviewed manuscripts on topics such as advanced coronary artery disease, congestive heart failure, treatment of high blood pressure (hypertension), atrial fibrillation, stroke prevention, echocardiography, trans-esophageal echocardiography, and myocardial perfusion imaging. Dr. Zabalgoitia’s office is located two minutes to the southeast of Knapp Medical Center, on S. Airport, a-blockand-a-half south of E. 8th Street. Sewing Frenzy at Winter Ranch RV Resort

as RGV Quilters Created 20 Quilt Tops in Under Six Hours Special to Welcome Home RGV

from seven RGV parks gathered with sewing machines in tow to create quilts. Winter Texans from the U.S. and Canada represented Winter Ranch, Trophy Gardens, Green Gate Grove, Snow to Sun, Tropic Star, Texas Trails, and Sandpiper. A talented group of 40 ladies set up a small manufacturing system as they selected fabrics and patterns to sew. Machines were humming, laughter abounded, and chatter over quilt patterns, color selection, and past quilting experiences filled the air as they created 20 quilt tops in under six hours. One of our quilters came to the hall to assist and got caught up in the excitement of all the handiwork. She returned home, gathered up her sewing machine, set up shop, and almost finished a quilt top.

The Winter Ranch Quilters serve the community in many ways with their donations to Safe Haven for Kids, First Responders, McAllen Medical Neonatal Unit, Alamo Fire Department, Easter Seals, Mexico Children’s Haven, children of our military, and more. They also make cloth diapers for Easter Seals. During 2016-2017, they made and donated 246 quilts to various organizations and individuals in the Valley. WR Quilters are not just here to enjoy the beautiful weather. They are here to make a difference in the lives of the children. As they arrive from their other homes, they are bringing fabric, sewing machines, and donated supplies. Hosting the RGV Military Quilt Guild became the perfect fit for this group. •

Dr. Riccardo Pizzinato Speaking at IMAS on A Closer Look at Mexican Prints Special to Welcome Home RGV

Dr.

Riccardo Pizzinato will be speaking at the International Museum of Art & Science (IMAS) Saturday, December 16, starting at 3:00 p.m. Dr. Pizzinato’s presentation, A Closer Look at Mexican Prints: Highlights from the Takeda Biennial of Printmaking, will explore Mexican prints with a special focus on the styles and printmaking methods of the Oaxacan artists featured in the Takeda Biennial. This is the second presentation in the IMAS and UTRGV College of Fine Arts Lecture Series. Dr. Pizzinato is assistant professor of medieval art history at the University of Texas, Rio Grande Valley (UTRGV). He received his Bachelor of Arts (2000) and his Master of Arts (2005) from the Catholic University in Milan, Italy. Advised by Professor Herbert Kessler, he earned his Ph.D. in 2012 from Johns Hopkins University. Before joining the faculty at UTGV, Dr. Pizzinato served as the Zanvyl Krieger Curatorial Fellow in the Department of Manuscript and Rare Books at the Walters Art Museum in Baltimore from 2009

to 2013. From 2013 to 2015, he taught as visiting assistant professor of medieval art at the University of Minnesota, Morris. His research interests focus on pictorial arts in the West from 800 to 1300, with a primary interest in early medieval manuscripts, and museum studies. His research gives particular emphasis to the study of medieval image theory, artifacts material, and the relationship between art, theology, philosophy, and aesthetics. Having served as cultural mediator and interpreter for the 31st Medical Group at the United States Air Force Base in Aviano, Italy, Dr. Pizzinato is moreover trained in medical language and translation. The setting for Dr. Pizzinato’s talk is the exhibition The Fifth Mexican Shinzaburo Takeda Biennial, which features works by artists from both Mexico and China, this year’s guest

country. The Biennial was created in 2008 by a group of Oaxacan artists headed by Japanese printmaker Maestro Shinzaburo Takeda as a way to promote contemporary printmaking using traditional techniques. These efforts have brought new energy to the city of Oaxaca, which is now a major center of printmaking. The National Shinzaburo Takeda Printmaking Biennial is an initiative of Takedart A.C. and is made possible thanks to the support of the Secretary of Culture and Arts of Oaxaca (SECULTA) and the Benito Juárez Autonomous University of Oaxaca. The exhibition at IMAS is made possible through the generosity of Kirk and Jeri Clark, Clark Chevrolet and Clark Knapp Honda. This Lecture Series program is free to IMAS members and included in the cost of general admission. •

Carrying on a Tradition

of Great Live Entertainment in Harlingen Special to Welcome Home RGV

Harlingen? Wow! Who knew? But there it is, deep in the bowels of the Harlingen Arts & Heritage Museum, the glossy 1941 program that memorializes when one of the world’s greatest musicians came to town. “His majestic personality and genius have colored three fields of music,” NBC Artists Services boasts, “bringing him fame as a pianist, composer, and conductor.” Like Rachmaninoff, the roster of performers who have graced the stage of the Harlingen Municipal Auditorium over the decades reads like a who’s who of international and American stars. Paul Robeson, the Von Trapp Family Singers, Mitch Miller, the Tommy Dorsey Orchestra, and Guy Lombardo are among the more familiar names. “America’s Foremost Tenor” boasts the program for Jan Peerce’s 1945 appearance. The yellowing playbill for violin virtuoso Heiftez waxes eloquent on his favorite instruments, a 1731 Stradivarius and a 1742 Guarnerius, which accompanied him on all of his concert tours. There have been ballet and dance troupes, big bands and orchestras, choral groups, vocalists, pianists, folksingers, brass, jazz, and string ensembles, banjo quartets, harpists, harmonica virtuosos, and much, much more. In 1933, soon after the Harlingen Municipal Auditorium was built, the Rio Grande Valley Civic Music Association formed to bring topnotch entertainment to the area. In the 1940s, the Association began working with a booking agency out of New York City. Groups like Civic Concert Services, Inc. helped music lovers around the nation work together to bring reasonably priced artistic attractions to their

communities. By raising money first, through memberships, and having a secure tour route of suitable venues, artist fees were kept reasonable and seasonal memberships very affordable. Between 1945 and 1950, the total number of community concert associations rose to an alltime high of 1,008. The Rio Grande Valley Civic Music Association was superseded by the Harlingen Community Concert Association in the 1960s and now is known as the Harlingen Concert Association. This all-volunteer, nonprofit organization remains committed to enriching the cultural life of the Harlingen area through live performances. Thanks to season ticketholders and a strong partnership with Live on Stage, based in Nashville, Tennessee, outstanding concerts continue to be offered at very affordable, family-friendly prices. There are five HCA performances at the Harlingen Municipal Auditorium in 2018, as follows:

Birds at Center of Laurel Alvarez Art Display Special to Welcome Home RGV

The

artwork of Laurel Alvarez of Laguna Vista is on display throughout December at the Port Isabel Library. Alvarez has selected several of her “Birds” paintings for this month’s exhibit. Born, raised, and educated in the San Francisco Bay Area, Alvarez has traveled extensively throughout Mexico, Central America, South America, and Europe, as well as the United States. Her interest in various locales and cultures is reflected in her art. In 2005, she retired and was able to devote time to painting, an avocation she set aside while raising her family and working. Alvarez studied with a number of Pacific Northwest painters while living in Coos Bay/North Bend, Oregon. On various trips to the Valley, where her husband was raised, she studied watercolor with local artists Marilyn Brown, Marne Law, and Beth Fedigan. In 2014, Alvarez and her husband moved to the Valley full time, so she is now able to spend more time painting and enjoying local art activities. Alvarez is a member of the Laguna Madre Art League, Brownsville Fine Arts Museum, and Laguna Madre Art Gallery, where she displays and sells her work. Golf Courses in the RGV • • • Shary Municipal Golf Course : Ranks Number One in the City of Mission By Fran Adams

Shary Municipal Golf Course is a

27-hole course that is open to the public. During the winter months, Shary Municipal Golf Course is the number-one tourist attraction for the City of Mission. The original 9-hole course opened in 1929, with open fairways and slow, average-sized greens. The other 18 holes were added in 1994, and the renovation was done under the direction of George Williams. Daily play can be by a tee-time reservation or on a walk-in basis. It is an easy walking course, so most golfers walk the course; however, we now have 60 new 2018 E-Z GO golf carts available for rent. Private carts are allowed, for a nominal fee. Daily green fees are competitively priced, and annual green fees are available. This 27-hole layout has Bermuda fairways with Bermuda 328 greens on holes 19-27 and Tiff Dwarf Bermuda greens on holes 1-18. It has four sets of tees. Three sets are rated for men and two for women. The ratings for men on holes 1-18 are 67.3/112 at 5860 yards, 65.9/109 at 5552 yards, and 65.1/107 at 5306 yards. The ratings on holes 10-27 are 70.9/119 at 6333 yards, 69.4/116 at 6053 yards, and 68.6/114 at 5837 yards and on holes 19-9 are 68.4/118

Shary Municipal Golf Course’s Golf Shop offers a complete selection of golf equipment and attire for both men and women. This facility also provides golf handicaps and a lighted driving range. The clubhouse has a full-service snack bar for you to enjoy. There are three associations/ groups based out of Shary Municipal. They include Shary Ladies Golf Association, the Monday Night Stroke League, and the Weekend Early Birds Golf League. Today’s Wisdom: Forget what hurt

you but never forget what it taught you. ~Shannon L. Alder I had another of those “suspended in time” moments last month. I have had them before, as I suspect many of us have. Those are the moments like the time I was on the roof and dropped my pliers. It seemed to take a long time for those pliers to fall the full distance to the glass-topped patio table. I can still see them hanging in the air en route to the inevitable, me powerless to change its trajectory. Another was recently when I found myself suspended in mid-air, partway between the wet dock I had slipped on and the surface of the water below. Again, hanging briefly en route to the inevitable, me powerless to change my trajectory. On the most recent one, I was in the hospital, all prepped for surgery, connected to the IVs, groggy and rolling down the corridor, pushed along by strangers. Again, I was en route to the inevitable, powerless to

change my trajectory. It seems these moments usually end with the arrival of something negative. Each of these examples certainly did. For that reason, we try to avoid them. We try to stay in control, but it doesn’t always work. Some days are just bad days. Perhaps we have those moments to keep us humble. There is nothing prideful about a drenched man standing in a lake or modeling a hospital gown (although they do come in some attractive colors now). Hearing the C word from the doc is one of the most humbling. One of the things I have learned in life is that we don’t control everything. Sometimes all we can do is watch and let time bring the situation to its conclusion. The issue really is not keeping all the balls of life in the air but how we respond when we do lose control. Sometimes we just need to go into recovery mode and get right again. I’m just sayin.’ •

An Architectural Enthusiast’s Dream Come True: Mason City, Iowa Special to Welcome Home RGV

the I-35 corridor is a popular route through the middle of the country. If you travel this route through North Iowa, you may have stopped at the popular interchange in Clear Lake, Iowa at MM 194. If you travel approximately five miles to the east, you will find yourself in Mason City, Iowa. Mason City is home to the worldfamous American composer and playwright Meredith Willson. It is also home to the Park Inn Hotel, the lastknown hotel in the world designed by award-winning architect Frank Lloyd Wright. Mason City is often referred to as River City and it’s well worth the short drive off of the I-35 corridor. Music Man Square is located in the heart of Mason City and is home to Reunion Hall, the 1912 River City Streetscape, the Meredith Willson Boyhood Home, and a museum filled with memorabilia, including the actual piano on which he composed his hits. The Music Man, which premiered on Broadway in 1957, is how most people know who Meredith Willson is. He also composed It’s Beginning to Look a Lot Like Christmas, Seventy-Six Trombones, and several other tunes with which many people are familiar. While in Mason City, plan to spend one night in the iconic Historic Park Inn Hotel. This hotel is a treasure in North Iowa, as it is the last known

hotel in the world designed by Frank Lloyd Wright. Here you will experience the architecture recognized by many throughout the world. The Stockman House, another property designed by Frank Lloyd Wright, is also located in Mason City. A self-guided walking tour is a great way to explore Mason City and the properties Frank Lloyd Wright designed in River City. A must while in Mason City is a visit to the Northwestern Steakhouse. Here you will enjoy the most flavorful steak you have ever eaten. We have eaten many steaks throughout our travels, and we can honestly tell you that this is still the best steak around. Enjoy the history, music, arts and architecture while visiting Mason City, Iowa.

Transoral Incisionless Fundoplication (TIF) is a minimally invasive procedure to treat acid reflux (GERD) and heartburn at its source. This approach uses the EsophyX device to reconstruct an anti-reflux, or gastroesophageal valve (GEV), at the top of the stomach where reflux splashes up the throat, washing the esophagus in acid--due to backflow--through a dysfunctional

Rare Bird and Butterfly Sightings at Quinta Mazatlan Special to Welcome Home RGV

December 2, brought two rare sightings to Quinta Mazatlan: a Greenbreasted Mango (hummingbird) and a Tiger MimicQueen (butterfly). Both are species typically found in the tropics to our south. According to eBird, a citizen science program started by the Cornell Lab of Ornithology and National Audubon Society in 2002, the Green-breasted Mango has not been seen in the United States since 2009 when it was seen in Louisiana. It was last seen in Texas earlier the same year, and its last sighting in Hidalgo County was in 2005 when it was seen in a McAllen resident’s back yard. It is a large hummingbird with a 4.75inch length and a heavy, decurved bill. The bird was identified as having juvenile plumage; the rufous, white, and dark central stripe on its throat and belly are distinguishing features. It has regularly been foraging for insects around a large native Sugar Hackberry tree, flying up to 15 feet above the tree line in pursuit of aerial insects. One effect of finding a rarity is that as other people come in search of the original rarity, they sometimes find other interesting sightings, as well. This “many-eyes effect” can be seen regularly during the Rio Grande Valley Birding Festival, where the gathering of excellent birders often leads to a spike in unusual bird sightings. Such was the case at Quinta Mazatlan when a visitor spotted the Tiger Mimic-Queen while searching for the mango. It was distinguished from the similar-looking Isabella’s Heliconian by its shape and closed-loop markings on the hindwings. It is related to Monarchs but hosts on leaves of figs, papaya, and other plants. They have only been seen in the U.S. a few times and attracted the attention of many visiting butterfly watchers. Both the mango and the mimicqueen have been sighted again as of Sunday, December 3. •

Tropic Winds RV Resort Uses Diverse Talents to Benefit Young Girls around the World Special to Welcome Home RGV

Imagine a world where every girl

owned at least one dress. Hope 4 Women International, a nonprofit organization, created the campaign “Dress a Girl Around the World,” which helps bring the dream of a world where every girl has at least one new dress to reality. Since 2006, this independent Christian organization has been bringing dignity to women around the world by letting them know they are worthy, respected, and loved by God. To date, Hope 4 Women has delivered over 500,000 dresses to over 80 countries. Leo and Patricia Cassidy, residents at Tropic Winds RV Resort, heard about the organization last summer while attending a quilting class in Illinois. They knew in their hearts that this was something special, so they decided to share the idea with their Tropic Winds family and make

a difference to some special girl somewhere in this world. In order to undertake this project, Leo and Patricia had to attend a seminar to learn the stringent guidelines and to practice sewing the dresses. The dresses are made from men’s 100-percent-cotton dress shirts and are sewn according to strict guidelines established by the organization. Each dress is screened by Hope 4 Women before it is sent to its destination. The dress each girl receives may be the ONLY dress they ever have, so only the highest-quality product is accepted to help insure that each girl will feel dignified and beautiful. conventional surgery. Medications provide temporary relief but do not treat the underlying problem or stop the disease from worsening. Studies have shown that long-term use of the medications known as PPI (Proton Pump Inhibitors), such as omeprazole (Prilosec) lansoprazole (Prevacid, Prevacid IV, Prevacid 24Hour), dexlansoprazole (Dexilent, Dexilent Solutab), rabeprazole (Aciphex, Aciphex Sprinkle), and pantoprazole (Protonix) are generally approved for eight weeks. Published risks associated with PPI use include dementia, PPI interaction with Plavix, Vitamin B12 deficiency, chronic kidney disease, magnesium deficiency, increased risk of bacterial gastroenteritis and bacterial infections of the small intestine, increased risk of stomach polyps, pneumonia, osteoporosis fractures, and reduced gallbladder

motility. The TIF procedure rebuilds the valve through the mouth, with no scars, and restores the body’s natural protection against reflux. It also minimizes complications for a quick recovery, with fewer side effects than conventional anti-reflux surgery. Additional benefits of the TIF procedure include no external skin incisions or internal cutting or dissecting of the natural anatomy, the

fact that it’s safe, it has fewer adverse complications, and it does not limit future treatment options. Dr. Reyes recently presented an educational seminar on this procedure at the McAllen Public Library, which was open to RGV 1st Responders and to the public. He will present one more seminar February 7, 2018, at 6 p.m., at the McAllen Heart Hospital Conference Room. The seminar will explain the causes and effects of frequent and painful heartburn and provide solutions to chronic acid reflux. Dr. Reyes can answer questions to determine if you may be a good candidate for the TIF procedure and what to expect before, during, and after the minimally invasive TIF procedure. Pasión’s Sing We All Noel December 22 in McAllen Special to Welcome Home RGV

22, Pasión, the Rio Grande Valley’s first professional chorus, will host its Christmas concert, Sing We All Noel, at First Presbyterian Church of McAllen at 7 p.m. Admission is free to the public. McAllen native and founder/ artistic director Dr. Eric Posada shares, “Our desire is for those in attendance to enjoy hearing their favorite Christmas carols arranged by today’s hottest composers, to participate in a ‘sing-a-long’ with our chorus members and organist, and to leave with a sense of goodwill and community as we prepare our hearts for the Christmas season.” Pasión’s mission is to share the highest artistic choral product with Hidalgo, Cameron, Willacy, and Starr counties. Pasión is deeply rooted and committed to community outreach. June 17, professional singers, instrumentalists, and dancers from the Rio Grande Valley united with singers from across Texas and the United States for Noche de Lluvia. This historic inaugural performance at First Presbyterian Church in McAllen was recreated the next morning as Pasión traveled to Brownsville and enhanced worship at Unity Church. The concert weekend was received by

three thunderous standing ovations and a tangible outpouring of love, support, and anticipation from the community. crowned a king and queen! Louis and Chari Heldenbrand from Winter Ranch RV Resort in Alamo are the couple crowned. Louis has been coming to the Rio Grande Valley for 31 years. His parents were here before that. He remembers when there was no expressway, and McAllen had more orchards than doctors’ offices and hospitals. He met and married Chari in 2012. They live in rural Guthrie County, Iowa. They met at a National Music Festival where Chari was entertaining. They love to dance, and FOOD AND WEATHER bring them back every year. They are the perfect couple to hold the titles, and we look forward to having them back next year to crown

next year’s king and queen. We had so much fun planning the first annual event, and we are already planning for a bigger, better party in 2019. Stay tuned for more details! lie but that His word will stand the test of time. In the New Testament, Jesus says in John 14: 2 and 3, “There is more than enough room in my Father’s home. If it were not so, would I have told you that I am going to prepare a place for you? When everything is ready, I will come and get you, so that you will always be with me where I am.” Just in these words, Jesus makes several promises. First, Jesus promised that in the Father’s house were many mansions, but He was going to prepare us a place. What a blessing that Jesus would prepare us a place to live forever with Him in a place called Heaven. Second, Jesus promised that He would come back for us. He did not say He was sending an angel or someone else for us, but He Himself would come for us. How special can we be that Jesus cared enough about us to do this for us? Third, He promised us that where He

was, we could also be. That promise is that all who believe and trust and have a personal relationship with Him will spend eternity with Him. What a blessing this is to us, that even though we go through a lot of turmoil on this earth, Jesus is preparing a place for us. Sickness cannot hurt us, there will be no more tears, death will be swallowed up, and we will live with the One who saved us forever and ever. So when we feel the world is crushing in on us, remember the promise of God. In the Christmas season, we celebrate the birth of our Lord and Savior, Jesus Christ. I wonder if we will celebrate His return to this earth. You can, by placing your trust in the living Savior and inviting Him into your heart and asking Him to forgive your sins. Heaven is a prepared place, and it is for prepared people. Are you ready to meet the Lord? He is coming back for His people, and we must be prepared. •

They also make lap robes for various organizations. • Ladies of Ronald’s Angels at Fun N Sun: These folks gather weekly to knit and crochet children’s items to help bring joy and solace to sick babies, children, and families. All items are donated to Ronald McDonald House Charities of the Rio Grande Valley in Harlingen. • Fun N Sun Library Group: This group donates books and other literary items to San Benito Library, Harlingen Library, Salvation Army, Repeat Performance Thrift, Second Chance Thrift Shop, and Valley Baptist Hospital. • Fun N Sun Angels: These folks visit the homes of shut-ins and those who are grieving a lost loved one, those providing caregiving, and those feeling depressed. They bring good cheer and conversation, read to them, pray with them, if they wish, decorate their door for different holidays, bring small gift baskets and cookies, and perform other random acts of kindness to brighten their day. • Volunteer at TSTC Interview Practicums: These volunteers donate their time to help college students fine-tune their job-interview skills and to offer other valuable workexperience advice. *CRABS (Fun N Sun Motorcycle

children’s home, who arrive by bus and enjoy a festive Christmas with gifts provided for each child by our residents, a visit with Santa Claus, and all the homemade Christmas cookies they could ever want! After many of our events, proceeds are donated to area charities, such as shelters, nursing homes, Boys and Girls Clubs, and more! History of the Indiana Flag

The Indiana General Assembly adopted the Indiana state flag in 1917. The flag was designed by Paul Hadley of Mooresville as part of Indiana’s centennial celebration flag-design contest. The flag has a blue background with yellow symbols. The torch in the middle of the flag represents liberty and enlightenment. The rays illustrate their far-reaching influence. There are a total of 19 stars on the flag, with the outer circle representing the 13 colonies. The stars in a semicircle stand for the states admitted to

COVERED BRIDGE FESTIVAL (From their website: coveredbridges.com) This countywide festival, Indiana’s largest festival, always starts on the second Friday in October and is nationally known as one of the largest. Enjoy visiting communities throughout the county with a wide array of shopping and a variety of food that is sure to please everyone. Headquartered on the courthouse lawn in Rockville, Indiana, since 1957, you will find food served by many of the nonprofit organizations of the county that use funds from the Festival to promote their organizations throughout the year. INDIANAPOLIS MOTOR SPEEDWAY

• 2 cups heavy whipping cream • 1 cup sugar • 1/2 cup flour • 1/2 teaspoon vanilla

• Speedway - The Racing Capital of the World • Hosts the Indianapolis 500, Brickyard, and Red Bull Air Race • 2 ½ mile famed oval • On the grounds of the speedway is the Indianapolis Motor Speedway Museum, which opened in 1956 and houses the Auto Racing Hall of Fame • Also is home to a Pete Dye golf course, Brickyard Crossing.

• 2 tbls. unsalted butter, cut into 1/2-inch pieces • 1/8 teaspoon freshly grated nutmeg • 1 pie crust

• Chill pie crust. • Place baking sheet on middle oven rack and preheat to 450. • Whisk the heavy cream, sugar, flour and vanilla in a bowl until just mixed. Pour into the chilled crust, dot with the butter and sprinkle nutmeg on top. • Carefully transfer pie to hot baking sheet. • Bake at 450 for 10 minutes. Reduce the heat to 350 and continue baking until the crust is golden and the filling is bubbly in spots, about 55 more minutes (the center will still jiggle slightly); cover the crust edges with foil if they’re browning too quickly. • Transfer to a rack and let cool completely. Serve chilled or at room temperature. • Eat.

has its turkey with all the trimmings, but a Christmas ham is becoming just as much a tradition in many Sandy Olson homes. Last year, it was 90 degrees F. in the RGV Christmas Day--way too hot to light the oven! This recipe for a delicious holiday ham won’t cause anyone to break a sweat. •

Lime Soup – Sopa de Lima For cooking the chicken and making the chicken stock: • 2 whole chicken breasts – about 24 ounces • 10 cups of water • 3-4 cloves of garlic – skin removed • ½ small onion – skin removed – cut into quarters • 3 sprigs fresh cilantro • 1 Tbsp. salt For completing the soup: • ½ tsp. ground cumin • 1 whole clove • 1 Tbsp. olive oil • ½ cup diced green (bell) pepper • juice of 2 limes

Fruited Christmas Ham • • • •

1 fully cooked, boneless ham. Find one about 6 pounds and cut it in half, if necessary, to fit into your 6-8 quart slow cooker 2 cans (20 oz. each) sliced pineapple in its own juice. 1 jar (about 6 oz.) maraschino cherries, well drained 1 jar (about 12 oz.) orange marmalade

Drain the pineapple but save the juice and set aside. Place ½ the pineapple slices into an ungreased 6-8 quart slow cooker. Top with the ham. Add the cherries, remaining pineapple slices, and pineapple juice. Spoon the marmalade over the ham, letting it drip down the sides. Cover the cooker and set on LOW. Cook for 6 hours or until completely heated through. Remove to a warm serving platter and let the ham stand under a tent of foil for 10-15 minutes before slicing. Put the pineapple and cherries in a serving dish to pass with the ham. Yield: 18-20 servings.

• ¼ tsp. ground cinnamon • 1 tsp. dried oregano • ½ cup diced onion • 2 cups peeled and chopped tomatoes (1 lb.)

For serving and garnish: • 1 slice of lime per bowl • 1 avocado – sliced and peeled, for garnish • fried corn tortilla strips (optional) slice into thin strips andfry in medium-hot corn oil until just crispy Cook the chicken. Place all of the ingredients for the broth and chicken in a large pot, bring to a boil, and cook for 35-40 minutes or until chicken is cooked through. Strain the mixture, reserving the chicken stock. Shred the chicken when cooled; set aside. Prepare the broth. Briefly toast the cumin, cinnamon, clove, and oregano in a small skillet over medium heat until aromatic. Place the spices in a blender and add about a half-cup of the broth. Blend. Place the olive oil in a stockpot. Add the diced onion to the oil and cook for about two minutes or until transparent. Add the diced pepper to the mixture and cook an additional two minutes. Add the tomatoes and cook an additional 7 minutes, stirring constantly. Add the chicken stock and pureed spices and bring to a boil. When boiling, add the shredded chicken and the juice of two limes. Cook over medium heat for 10 minutes. Taste and correct the seasoning, if needed.

NOTE: If you have time to chill the ‘sauce’ left in the slow cooker to remove any excess fat, this sauce can then be reheated and served with the ham.

Serving: Place a slice of lime in each bowl and cover with hot soup. Sprinkle each bowl with fried tortilla strips, if used. Serve the avocado, sliced, and lime wedges separately.

Corn Salsa Yield: 4 cups • 4 ears fresh corn • 1 cup diced zucchini squash • 3 tablespoons olive oil • 3 medium tomatoes, diced • 1 serrano chili, seeded and minced • ½ cup chopped cilantro

• 1 medium onion, diced • 2 tablespoons lime juice • 2 teaspoons liquid smoke • ½ teaspoon cumin • 1 (8 oz.) can tomato sauce

Boil corn for 2-3 minutes; cut off cob. In a skillet, sauté squash in olive oil until squash is bright green but still crisp. Remove from heat; add remaining ingredients. Mix well and refrigerate. Serve cold Excellent served with chips and with broiled and grilled fish or chicken. Bean Soup

with Spicy Sausage With

this cold snap of weather we are enjoying I thought I hearty, healthy soup might be in order. This recipe features two different white beans which offers a unique texture for the soup and the spicy sausage, along with the vegetables gives great flavor and a little kick as well. Stay warm and enjoy! Bon Appétit! • 1 cup dry Great Northern Beans 1 cup dry Navy Beans 8 oz. Cajun or spicy Italian sausage 1 carrot, diced small 1 red bell pepper, diced small 1 tomato, peeled & diced small 1 large onion, diced small

2 medium cloves garlic, minced 1 Tbsp extra virgin olive oil 1/2 tsp thyme 1/2 tsp paprika 1/2 tsp black pepper 2 tsp kosher salt / to taste

NOTE: The beans must first be soaked overnight. To do this, place beans in large saucepan with about 7 cups water. Cover and let stand overnight, or at least 6-8 hours. When you are ready to make the soup, after the beans are presoaked, drain and rinse them and place them in a large pot or Dutch oven and add cold water to the beans to cover them by about 1 inch. Bring to boil over high heat and boil for 5 minutes. Add sliced carrot, red bell pepper, tomato, onion, garlic, and drizzle about 1 Tbsp extra virgin olive oil. Season with salt, pepper, paprika, and thyme. Reduce heat to medium low and simmer for about 1 hour, stirring occasionally, or until beans are tender. Just before soup is ready, slice sausage and brown in a saute pan. Add to the soup and cook for another 5 minutes to incorporate the flavors. Taste and season to taste. Serve soup while it’s warm. •
