I
don’t know about you, but time seems to be moving at lightning-fast speed! I look at the calendar, and it seems like November came and went in the blink of an eye. As I look forward, it seems certain that December will follow suit. Is it me or does everyone feel that way? I’ve heard that the older you get, the faster time flies. I’m not sure I can imagine it going much faster! But the good news is, even though we are busy at Welcome Home RGV, we enjoy what we do. After 10 years of being in business, we have a really good handle on our workload. So over the course of the last few years, we’ve been able to strike a better balance between work life and home life. With my daughter off in college, it’s easier to work a little later to be prepared to not work quite as much while she’s home for the holidays. It was so nice for all of us at Welcome Home RGV to take a few days off over the Thanksgiving holiday to recharge and spend some time doing the things we enjoy, aside from work. Over the next few weeks, I look forward to seeing you all out and about and hope our time together doesn’t fly quite so fast. • We’re just connecting the dots,

Beautiful, Larger-than-Life-Size Murals Featured on Downtown Harlingen Tours Special to Welcome Home RGV
Anyone
interested in art and history will enjoy viewing and learning about 11 beautiful, larger-than-lifesize murals along the Downtown Harlingen walking-tour route. The walking tours are free and open to the public Saturday mornings through March 24, 2018, except on the first Saturday of each month, which is Jackson Street Market Days. The Saturday tours depart at 9:00 a.m. from J&B’s Café, 204 E. Jackson in Harlingen, and last approximately 90 minutes. Participants should wear comfortable walking shoes and dress for the weather. Free walking tours of Downtown Harlingen also may be scheduled
for schools, churches, RV parks, and Red Hat and reunion groups on other days of the week. Harlingen has a long mural tradition, with works from the 1940s and 50s still on public display. Among the most interesting artworks on the walking tour is the monumental History of Mexico and Mankind mural created by Raúl Esparza Sanchez of Torreón, Coahuila (Mexico) in 1975. This spectacular artwork, comprised of 905 handcrafted tiles, was commissioned by the Museum of Science and Industry in Los Angeles and now is displayed in Harlingen’s MURALS ON HARLINGEN TOURS CONTINUED ON PAGE 14 >>

City of Port Isabel Announces Annual Christmas Tree Lighting and Hometown Christmas Holiday Parade Special to Welcome Home RGV
The City of Port Isabel will kick off
the 2018 holiday season with their 10th Annual Community Christmas Tree Lighting Ceremony. Saturday, December 9, at 7:00 p.m., Beulah Lee Park will once again be the site for the Christmas Tree Lighting Ceremony. The event will feature live performances by school groups from Garriga and Derry elementary schools and Port Isabel High School. Vendors will be selling festive foods and drinks. Vendors will be open at 6:00 p.m. The public is invited to come together with the community for this holiday tradition. Also on December 9, and new to the schedule of events this year, is a holiday parade. The theme for the parade is Hometown Christmas.

There will be cash prizes for 1st, 2nd, and 3rd place overall. Winners will be announced later that evening at the Annual Community Tree Lighting in Beulah Lee Park. Winter Texans Spreading Some Love in the Rio Grande Valley Special to Welcome Home RGV
Sometimes
children end up in traumatic situations that result in the involvement of law enforcement, and the on-scene officers often have to provide comfort and reassurance to these frightened little ones. For the last several years, residents at Paradise South RV Resort in Mercedes have gotten together to create handmade stuffed bears, frogs, and dogs for the officers to carry in their cars and give to these children in need. Chairwoman Dixie South has generously given much of her time in organizing the groups who cut
out, sew, and stuff the toys, as well as coordinating delivery to the area police departments. She, along with the men and women volunteers, purchase all the materials needed and will even work on this project while back in their summer homes. One of the volunteers said, “We do this for the children who are scared or frightened because they may not understand the situation they are in. But holding on to a stuffed animal gives them some comfort and a feeling of security. It’s our way to give back to our winter community and support the local law enforcement.” •

United Methodist Church of La Feria will host its Live Nativity Saturday, December 16, and Sunday, December 17, from 6:00 to 7:30 p.m. At the Live Nativity, the church parking lot transforms into the town of Bethlehem. Visitors can either drive or walk through the village and see the original CHRIST-mas story of the birth of Jesus Christ. The Live Nativity will feature Joseph and Mary, as well as a full

Over 100 Pieces of Mexican Folk Art Donated from the Warmbold Collection
to the International Museum of Art & Science Special to Welcome Home RGV
The International Museum of Art
& Science in McAllen is pleased to announce a gift of 113 objects of Mexican folk art from Carolyn Warmbold, a long-time resident of San Antonio who now lives in Florida. Mrs. Warmbold first donated to IMAS in 1990 after the death of her husband, Ted. He and Carolyn became prominent collectors of Mexican and Central American folk art after living in San Antonio where Ted, former editor of the Los Angeles Herald-Examiner, was an editor for the San Antonio Light. Starting in the early 1980s and up until his death, Ted would travel to Mexico and Central America, purchasing folk art directly from artists. At home in San Antonio, Ted also helped establish the Austin Friends of Folk Art after being president of the San Antonio Friends of Folk Art, a well-established organization that serves as a fundraising arm of the San Antonio Museum of Art. In 1990, at the bequest of the Estate of Ted Warmbold, the majority of his collection was divided between the San Antonio Museum of Art, the Craft and Folk Art Museum in Los Angeles, and IMAS. The 411 pieces of folk art given to IMAS include Mexican masks, textiles, costume pieces, sculptures, ceramics, and figurines.
In late 2016, Carolyn Warmbold proposed a second gift to IMAS as she prepared for retirement. The 113 items newly acquired by IMAS complement the previous donation, filling gaps in the collection and rounding out areas by major Mexican folk artists, such as the Oaxcan ceramicists in the Aguilar family and woodcarver Manual Jimenez, along with papier-mâché works by David Linares of Mexico City. The vibrant papier-mâché sculpture shown with this story (in Spanish called an alebrije) was made by the grandson of the most famous of the alebrije artists, Pedro Linares. This baby chameleon was purchased by Ted Warmbold from Felipe Linares in 1987, and Ted believed he was the subject of the work. The objects most recently donated by Carolyn Warmbold include textiles, ceramics, figurines, sculptures, masks, and some religious objects. As part of the process of documenting incoming works to the permanent collection, objects are cataloged and photographed and assigned a permanent location in the vault. The IMAS folk art collection, now reaching over 1,000 objects, has from its founding been one of the museum’s strongest assets and continues to grow. •

Making Brownsville’s Streets Safer and Sociable Special to Welcome Home RGV
At least four times a year, miles
of streets in Downtown Brownsville are closed to cars and trucks so residents (and, increasingly, visitors) can gather to bike, walk, jog, dance, socialize, and simply have fun. The recurring city-sponsored event is inspired by the ciclovias — or open streets events — that have long, successful histories in cities including Bogotá, Colombia, and Guadalajara, Mexico. The latest event is scheduled for Friday, December 15, from 6:30 - 9:30 p.m. In Brownsville, a city of 175,000 along the United States-Mexico border, the “CycloBia” (spelled with a “B” for Brownsville) serves two important needs. The first is to improve the collective health of the city’s residents--a high proportion are poor, obese, and struggling with diabetes. The second is to enhance the city’s overall sense of community. “Our CycloBia gets people off the couch and out and about being active. It stimulates the economy, it’s fun, and, best of all for the participants, it’s free!” explained Rose Gowen, a Brownsville physician and elected city commissioner.
The Details The Brownsville CycloBia is organized by the city’s Department of Public Health in collaboration with local businesses, service agencies, and nonprofits. The city police and traffic departments assist with road closures and security and more than 50 volunteers help before and during the event. “This is truly a city collaboration,” said Kendra Stine, wellness manager for the City of Brownsville. To avoid the summer heat, a few of the CycloBias are held in the evening. (The daytime events typically run from noon to 5 p.m.) Free bike rentals are available for the many residents who do not own bicycles. Three or four “reclovias,” or recreation stations, located along the route offer fun and helpful services ranging from bike repair and refreshments to Zumba sessions, face painting, and educational kiosks. St. George Orthodox Church International Festival December 9 in Pharr Special to Welcome Home RGV
The
St. George Orthodox Church International Festival, hosted each year by St. George Orthodox Church, will take place Saturday, December 9, from 9 a.m. until 4 p.m. at 704 W. Sam Houston in Pharr. “This is a holiday event the community really looks forward to each year,” said Elizabeth Perdomo, International Festival director. “We make some of the best international foods in the Valley!” The International Festival is a Winter-Texan and familyfriendly activity. Father Antonio Perdomo, pastor of St. George Orthodox Church said, “The festival is our gift to the community each year. Yes, it’s a fundraiser, but it’s also so much more. St. George’s is the only Orthodox Christian Church in the Rio Grande Valley, and our parish likes to share our wonderful diversity of cultures and cuisine.” The International Festival has free entertainment and children’s activities all day. The event also has free admission, parking, and church tours. It features the sale of delicious, handmade international foods, such as soups and ethnic holiday baked goods. Included are made-fromscratch Greek, Eastern European, and other specialties, including the
church’s famous baklava, piroghies, spanakopita, cabbage rolls, blini, stuffed grape leaves, grilled souvlaki, and much more. Long-time parishioner Judie Geil said, “The festival is just different than most other local events. Whether you are a local student, a family with children, or a Winter Texan retiree, it’s lots of fun to attend. There’s something for everyone to do and lots of new things to learn and try.” The day’s entertainment schedule will include the St. George Choir Ensemble singing Eastern European Christmas carols, the Rio Grande Bluegrass Band, the Mariachi Juvenil Nueva Tradicial Mariachi, UTRGV’s Tuba and Euphonium Ensemble, Colibrí Children’s Choir, Rio Grande Valley Dulcimers, the Treble Thrivers from UTRGV, Magic Valley Women’s Chorus, Raul and the Nick of Time, and more. See the entertainment schedule on the International Festival website. Children’s Christmas activities will include gingerbread-cookie decorating and holiday crafts. In the morning, the Two by Two Petting Zoo will have farm animals available for children to touch and see. This year, the Valley Trotter Youth Ranch will also have
horses on hand for children to meet, greet, and groom. As in year’s past, various informational, educational and activity booths will be on site, include the Museum of South Texas History, IMAS, Milkweed and Monarchs Education, Texas Master Naturalist, Texas Master Gardeners, the Food Bank of the RGV, the Pharrmers Market and Community Garden, and the UTRGV CHAPS local history organization. The festival is a great place to do a bit of holiday shopping, too. Vendors include those selling fine international and locally made fine arts and craft items, as well as those who grow and make items, such as local honey, preserves, salsa, breads, homemade soap, and handmade beeswax candles. Even freshly squeezed lemonade and other great farmersmarket-type booths, including some native butterfly host and nectar plants for your garden will be available. You will find anything from Russian stacking dolls to handmade silvercrafted jewelry. The Russian Tea and Coffee Shoppe will feature gourmet Russian teas, hand-roasted specialty coffee, Greek coffee, and hot chocolate, plus
homemade scones, muffins, and other baked goods. The Greek Grill will serve grilled skewers on pita bread, with freshly made tzatziki sauce. “Don’t forget to bring a cooler along!” Perdomo said. “Lots of folks like to come and spend the entire day. Have some coffee and a scone for breakfast, browse around, and listen to music. Have some lunch, browse around, listen some more. Besides our ready-to-eat, on-site food, we have created frozen packages of many of our goodies. We know you’ll love whatever you try and will want to buy some to take home for later.” Labeled freezers with packaged foods can be found in the church hall. The festival is also the annual “Give a Can; Get a Cookie” food drive for the St. George Food Pantry. The food pantry has served over 70,000 hungry people since it began in 2004. Valley Baptist Medical Center Hosts RGV 1st Responders at Healthy Heart for the Holidays and Beyond Seminar by 1st Responder Program Coordinator Rita Huether

November 16, at 6 p.m., RGV 1st Responders attended the Healthy Heart for the Holidays and Beyond Seminar hosted by Valley Baptist Medical Center in Harlingen. Pedro De Leon, director of the Cardiac Cath Lab, spoke about the many cardiac services available at Valley Baptist, such as stents, balloons, electrophysiology testing, ablations, and pacemakers. He also covered the lab’s ability to screen for peripheral artery disease and discussed an Embolic Protection Device, which captures calcified particles during arterectomy calcification procedures. Another portion of the Valley Baptist Cath Lab area is used for strokes, specializing in endovascular procedures for blood clot retrieval to reverse a stroke and the debilitating issues the clot has caused. Another type of stroke is caused by a weakened blood vessel and causes leakage into the brain. Aneurysms can be
repaired using a coiling procedure to prevent a blood vessel from bursting or a stent for a blood-vessel-flow diversion. These endovascular procedures are performed at Valley Baptist with excellent results and no long-term recovery process normally required for stroke patients. New imaging equipment Valley Baptist is expecting includes Optical Coherence Tomography. The hospital is also working toward the TAVR (Transcatheter Aortic Valve Replacement) program, which will be used for heart-valve replacements and will further strengthen their quest for a higher level of comprehensive stroke center designation. Cardiologist Dr. Charles Mild’s presentation was Prevention, Diagnosis, and Treatment of Heart Disease, all important for a healthy heart. Denny Exman, a resident of Snow
to Sun RV Park in Weslaco, donated two Montezuma Cypress saplings to the park’s birding center. He bought the trees because many years ago he and his wife, Donna, watched Red Crowned Parrots fly into the cypress tree groves in Brownsville. “The sky just turned a kaleidoscope of colors when they came in,” Denny said. “It would be nice if Snow to Sun could become a parrot destination and we could see them here.” According to Kelley Stence, Snow to Sun community manager, “Our birding center is about seven acres of open field with mesquite trees, Tepequaje, and one lone Texas olive tree. Denny’s generous donation is just the first step in our effort to add native trees and plants, which will attract a wider variety of birds and butterflies to the park. Additional plants and wildlife will also help build our photography and birding programs.” Denny’s interest in nature began in high school when he served as a photographer on the yearbook staff. He discovered that it was easier to take pictures of “God’s outdoor creation” than people. Following high school, he enrolled in the photography program at Hawkeye Institute of Technology, now known as Hawkeye Community College, in Waterloo, Iowa, but after the first year, he ran out of money. It was during the Vietnam era when Denny thought he would become a naval photographer, but the U.S.
Navy was not accepting enlistments. He chose, instead, to join the Air Force, but there were no openings for photographers. His second choice was wideband radio communications. He served three years in Germany, followed by three years teaching in Biloxi, Mississippi. As he looks back, Denny said, “It’s a good thing I didn’t become an Air Force photographer; they would have put me behind a big box camera flying aerial reconnaissance all over Vietnam, where I probably would have been shot down. Radio communications was a lot safer.” After his obligation to the military was complete, Denny became an electrician, and with a steady income, he could begin buying photography gear. Currently, he shoots with a Canon DSLR and uses the editing software that came with the camera. He said he doesn’t edit his photos very much. He sometimes adjusts color, exposure, and sharpness, as needed. He creates a calendar every year using photos taken during his travels. The 2018 issue will include prints from a trip he took with his wife last year through the national parks in Utah. Although he doesn’t sell the calendars, he does give them to close friends and others he likes and admires. Additionally, he has catalogs of photos he has taken at other destinations, such as the Mississippi River, Grand Canyon, Big Bend National Park, the Petrified Forest in the Painted Desert, and Antelope Canyon in Page, Arizona.

About Antelope Canyon, Denny said, “Every step is another WOW.” Every year, Denny buys an annual Texas State Parks Pass and spends many hours at Estero Llano Grande State Park, about four miles south of Snow to Sun RV Resort, where he enjoys photographing birds and butterflies. •

Annual IMAS Guild Christmas Tree Forest Now Open in McAllen Special to Welcome Home RGV
The International Museum of Art &
Science Guild is excited to announce the opening of the annual Christmas Tree Forest at IMAS in McAllen. The popular regional contest features entrants from all around the Rio Grande Valley who display their unique craftsmanship to compete for monetary prizes. This year’s theme is Christmas in the Great Outdoors, celebrating the natural wonders around us, including plants, animals, and other environmental marvels. Participants also highlighted exciting outdoor activities and our wonderful national and state park systems. The Christmas Tree Forest offers a special opportunity for members of the community to increase public awareness about their organization while having some holiday fun. Gracie Cobo, IMAS Guild president, said the contest is “a long-standing tradition of the Museum since the mid-70s.” First Vice-President Nellie Rivera agrees adding, “This contest is a holiday tradition” in the Valley. Since its introduction, the number of contest participants has more than doubled. There is no charge to enter. The competition features five categories: Kindergarten-2nd; 3rd5th; 6th-8th; 9th-12th; and Families/ Organizations. Three winners were
selected from each category. First place receives $150, Second $100, and Third $75. McAllen Heart Hospital CEO Dan Caldwell welcomed all attendees and shared some of the remarkable milestones as the region’s first freestanding cardiology and cardiovascular hospital built in the U.S. South Texas Health System’s McAllen Heart Hospital recently earned 2017 Healthgrades Awards for excellence in quality, among the top 10 percent in the nation for overall cardiac services and coronary intervention procedures and in the top five percent for cardiac surgery. They were recognized in 2017 as one of America’s 100 Best Cardiac Care Centers and also earned the Cardiac Care Excellence Award for Cardiac Care and Surgery Excellence Awards, Americas 50 Best Cardiac Surgery, and Best in Americas 100 Coronary Intervention. Street Big Band is an 18-piece dance/show band that has been playing in the Rio Grande Valley since the 1990s. Started by Winter Texans, the band has evolved and is currently made up mostly of active and retired music educators from the Valley. Consisting of five saxes, four trumpets, four trombones, piano, bass, drums, guitar, and a female vocalist, several of the musicians are actually directors of award-winning high school bands from the area and

Centennial Park, located at 101 S. West Street. Each of the mural’s nine sections depicts a different story from Mexican history and legend. The Early Days mural nearby was created by Jermain Steed of Davenport, Iowa, in 2001 to illustrate aspects of Harlingen’s founding and early years. Another nationallyknown artist, Ric Luplow, of Truchas, New Mexico, created Harlingen’s Dia de los Muertos mural in 2008 in homage to local Day-of-the-Dead ceremonies. It depicts Katrina, the popular female skeleton figure, leading a parade of musicians and farmers through the city cemetery. The walking tours also include a stop at the popular mural, A Tribute to Bill Haley and His Comets, by John Aretakis of Detroit, Michigan. This 20-foot-tall mural was commissioned in 2003 in honor of Harlingen’s most famous resident, the late grandfather of rock ‘n roll. Images of mid-century Harlingen theatres, movie stars, and promotional

It faces the railroad tracks on the west wall of 201 W. Van Buren. Dr. Mild noted the American Heart Association’s change in healthy blood pressure levels, with anything over 130 points considered high blood pressure, indicating a need for medicine to control blood pressure for lower morbidity chances. Dr. Mild discussed the differences in ace inhibitor medications in comparison to ARB (Angiotensin II Receptor Blockers) prescriptions, as well as statin medications and the differences in mortality percentages gained with their use. Beta blockers were also covered in regards to prevention of a second heart attack. Heart-bypass surgical intervention differences on the left and right side were shared, as was the expected time lapse for further treatment and interventional procedures a cardiac patient could expect. Questions for Dr. Mild from the 1st Responders covered mechanical hearts, myocarditis, and cardiomyopathy. Attendees enjoyed light refreshments and door prizes. •

is a powerful portrait of a nation in deep trouble. The people of Israel have pretty much concluded that God has abandoned them. In God’s “absence,” their enemies have defeated and humiliated them. To further complicate their condition, the people have long since turned from God and sinned deliberately and shamelessly. Against this backdrop of defeat, sin, and moral degradation, the prophet pleads with God to get involved on their behalf. And he does not want a timid or marginal involvement – he wants God to show up with such force that the enemies of the people will tremble at God’s presence. It is only by an undeniable show of God’s power that Israel’s predicament can be redressed. Sound familiar? Just as it was in Israel’s day, it is still critically important for us, in 2017, to remember and recite the mighty acts of God from the past. As once again we enter into the season of Advent, we sing, preach, and pray about how, in the “fullness of time,” God intervened in human affairs in the coming of Jesus, the Christ. In our remembrance of the birth of Jesus, you see, we are asking God to “do it again.” There is a personal dimension
to this matter which we must not miss. As the year 2017 draws to a close, we are grateful for the wonderful blessings from God that we have celebrated in the season of Thanksgiving just past. But at the same time, this has also been a year in which we in America have faced some truly horrendous and traumatic challenges – the mass shootings in Las Vegas and Sutherland Springs come readily to mind. And we know from painful experience that there are times and situations in our individual circumstances in which we feel an overwhelming need for the power of God in our lives. We remember that God has shown up with power in the crisis experiences of our lives in the past, but we cannot live on past blessings. History is cold comfort when we are hurting right now. So we sing:
Come, Thou long expected Jesus, Born to set Thy people free, From our fears and sins release us, Let us find our rest in Thee. Israel’s strength and consolation, Hope of all the earth, Thou art, Dear Desire of every nation, Joy of every longing heart. And we pray that the Christ, who first came to earth over two millennia ago, will soon come again! Amen. •

The main expenses are for advertising, promotional items, logistical support (administrative staff, security, trash collection, traffic management) and rented facilities, such as portable restrooms. The Results The first Brownsville CycloBia was held in the fall of 2012 and welcomed 4,000 people. Since then, each event has attracted more than 10,000 participants. Before the CycloBia, “many people in Brownsville did not have bicycles or did not know how to ride a bike,” said Art Rodriguez, the city’s director of public health. “Those who could ride a bicycle mostly did so as a means of transportation, not

for enjoyment and physical activity.” Seven out of 10 CycloBia participants surveyed by the city revealed that if they hadn’t been at the CycloBia, they probably would have been involved in a sedentary activity. (A follow-up survey indicated that 45 percent of returning attendees increased their weekly physical activity as a result of their CycloBia participation.) There is another local benefit, according to Dr. Gowen. “Downtown merchants and restaurants along the route have seen substantially higher sales receipts on CycloBia days and nights.” Brownsville’s CycloBia has paid off in other ways. In 2014, the event helped the city win both the National Civic League All-AmericaCity Award and the Robert Wood Johnson Culture-of-Health Prize. •

They help keep us organized and ready for yarn fun every day! We like to think we are mentoring them and giving them a sense of volunteering for when they go out on their own. Marge’s Sauerkraut Noodle Casserole
• 1 large onion, chopped • 1 ring good-quality Polish sausage, the fully cooked type • 1 cup (2 sticks) real butter…no margarine, please • 32 oz. canned sauerkraut, rinsed briefly and drained • 1 Tablespoon caraway seeds • 1/2 teaspoon black pepper • 1 package (16 oz.) Kuski-style egg noodles. If you can’t find that style, use extra-wide egg noodles
Cut the sausage into slices about ¼-inch thick. Sauté the chopped onion in ½ cup of the butter until transparent; remove from the heat. Bring a large pot of water to a boil and cook the noodles until they are about halfway done. Drain, but reserve ½ cup of the water. Combine the hot, cooked noodles, sausage slices, sauerkraut, remaining ½ cup of butter, and caraway seeds. Mix well and add the reserved water, if the dish looks dry. Place in a greased slow cooker and cook on LOW for 3 hours. NOTE: This casserole can also be baked, covered, at 350 degrees F for 30 minutes and then uncovered for another 15 minutes (if it’s cool outside, and you don’t mind turning on the oven). Serves: 15-18 • 1 (22 oz.) box brownie mix • 1 (16 oz.) container whipped topping • ½ cup Kahlua • 8 Heath or Skor candy bars, crushed • 2 (3.5 oz.) packages chocolate mousse • 1 cup chopped pecans pudding mix Preheat oven to 350 degrees. Grease 13 x 9” pan. Prepare brownie mix according to the directions on the box. When the brownies are slightly cooled, poke holes in the top with a fork; pour Kahlua over the top. When the brownies have thoroughly soaked in the Kahlua, crumble into pieces; return to pan. Prepare mousse mix according to package directions. Assemble in layers; smoothly spread ½ chocolate mousse over crumbled brownies. Then smoothly spread ½ whipped topping over mousse. Spring ½ crushed candy bars over whipped topping; repeat layers and top with pecans.

STATE BIRD Western meadowlark The western meadowlark is abundant throughout the state and is noted for its joyous song. The birds are eight to 11 inches long and are brown and streaked above, with bright yellow underparts interrupted by a bold crescent of black across the upper breast and white outer tail feathers. The birds nest on the ground in grassy fields or meadows and feed largely on insects.
STATE FLOWER Goldenrod Numerous species of goldenrod grow throughout the state. The small flower heads, which are almost always yellow but sometimes have cream-colored or white rays, are grouped into either elongated or flattish clusters. The flowers appear from July through October.
STATE TREE Cottonwood The cottonwood often is associated with pioneer Nebraska. Several famous early landmarks were cottonwood trees, and their shoots often were collected by settlers who planted them on their claims. Today, the cottonwood grows throughout the state.

History of the Nebraska Flag
Nebraska’s state flag was designated by legislative action in 1925. It consists of a reproduction of the state seal, charged on the center in gold and silver on a field of national blue. State law says no part of the state flag is to be used as a business advertisement or trademark, and insulting the flag is forbidden. State law also requires the flag to be displayed under or to the left of the U.S. flag on or near the State Capitol, the governor’s mansion, all courthouses, city or village halls, schoolhouses and other public administrative buildings. The original flag is displayed in the Office of the Secretary of State in

EUGENE T. MAHONEY STATE PARK, ASHLAND This modern state park is the perfect yearround destination for a family escape. Families can visit the aquatic center and indoor playground, explore the park’s hiking and biking trails, climb the observation tower, and, when the weather turns cold, enjoy sledding and ice skating. The jewel of the park is Peter Kiewit Lodge, which offers 40 guest rooms, most with balconies that offer a stunning view of the Platte River Valley. The park also offers dining at The Lodge Restaurant, an arts and crafts center, an array of cabins, as well as camping opportunities. For the Bread: • 1 cup warm water • 3 cups bread flour • 1 tsp. salt • ¼ cup white sugar • 1 egg • 3 tsp. bread machine yeast • 2 Tbsp. butter, room temperature *Fill with fruit preserves like cherries, prunes, apricots, etc. or fill with cheese topping (recipe below) For the Filling: • 2 cups pitted prunes • 1 tsp. ground cinnamon (or to taste) • 2 cups prune juice or water • ½ tsp. ground cloves (or to taste) • ¼ cup white sugar • 2 Tbsp. lime juice For the Topping: • 1 cup white sugar • 2 Tbsp. butter, melted • ½ cup all-purpose flour • 1 tsp. cinnamon (optional) Cheese Topping Ingredients • 16 oz. farmer cheese or cream cheese • ½ cup granulated sugar or more to taste • 2 large egg yolks • 2 Tbsp. all-purpose flour (optional) • 1 tsp. vanilla extract, 1 tsp. grated lemon zest, ½ tsp. ground cinnamon, or ½ tsp. grated nutmeg Place the warm water, salt, egg, and 2 tablespoons butter in the pan of a bread machine. Add bread flour and pour ¼ cup sugar on the edge of the pan. Make a shallow hole in the flour and add the yeast. Close the lid and set machine for the DOUGH cycle. While the dough is mixing, combine the prunes, prune juice, ¼ cup sugar, cinnamon, cloves, and lime juice in a saucepan. Bring to a boil; then reduce heat to low and simmer until prunes are soft and the sauce has thickened, about 15 minutes. Remove from heat and blend in a mixer or food processor until smooth. (Skip this step if you want to fill the kolaches with the cheese topping. Mix those ingredients and use this filling instead.) When the bread machine signals the end of the dough cycle, transfer the dough to a lightly floured surface. Divide the dough into 20 small, egg-sized pieces. Cover with greased plastic wrap and set aside for 10 minutes. In a small bowl, mix together 1 cup sugar and ½ cup flour. Stir in melted butter and 1 teaspoon cinnamon to make a crumbly streusel. Preheat the oven to 350 degrees. Grease a large baking sheet or line it with parchment paper. Shape the kolache dough into balls and place them on the prepared baking sheet. Press a shallow hole in the center of each one and fill with prune filling (or cheese topping). Top each of the kolaches with streusel. Let the kolaches rest until doubled in size, about 20 minutes. Bake until the tops are lightly browned, 14 to 16 minutes.

For the Crust • 4 ½ cups all-purpose flour • ½ cup sugar • 2 packages dry active yeast • 1 tsp. salt • ¾ cup milk • ½ cup water • ½ cup Crisco shortening • 2 eggs For the Filling • 2 lbs. lean hamburger or ground chuck • 2 medium onions, chopped • 1 medium-to-large head of cabbage, shredded • 2 tsp. salt • 1 Tbsp. sugar • 1 tsp. pepper In a large mixing bowl place 1 ¾ cups flour, sugar, yeast, and salt. Stir to combine. In a medium saucepan, heat milk, water, and shortening over medium-low heat until it reaches 120 degrees. Pour milk mixture over flour mixture, add eggs and beat with an electric mixer on low until blended. Then beat on high for an additional three minutes. Stir in remaining flour, knead until smooth and elastic (about seven minutes), and place in a greased bowl. Cover with a tea towel and set in a warm place until it doubles in size (approximately one hour). Meanwhile, brown hamburger and onions on medium high in a large skillet. Drain. Place mixture back in skillet and add cabbage, salt, sugar and pepper. Cover and cook on medium heat until cabbage is wilted. Stir frequently. Preheat oven to 350 degrees. Punch down dough and roll out on a floured surface into 1/8-inch thickness. Cut dough into sixinch squares. (You can use a pizza cutter to cut the squares.) Place 1/3 cup of meat mixture in the middle of the square. (Add a ½ slice of American cheese to the inside for a Cheese Runza.) Fold edges to the middle and pinch to seal. Place on a greased cookie sheet with pinched side down. Bake for 20 minutes or until golden brown.

(It is widely agreed upon that the Reuben was created in Omaha, NE) For the Russian dressing: • ½ cup mayonnaise • freshly cracked pepper • 2 Tbsp. ketchup • pinch cayenne pepper • 1 tsp. Worcestershire sauce • salt to taste, if needed • 1 tsp. prepared horseradish For the sandwich: • 6 slices marble rye bread • 1 cup sauerkraut • ½ lb. thinly sliced corned beef • ½ cup Russian dressing • ¼ lb. thinly sliced Swiss cheese For the Russian dressing: Combine all ingredients; adjust according to taste. For the sandwich: Spread Russian dressing on one side of each bread slice; then layer corned beef, Swiss cheese, and sauerkraut in triple-decker fashion. Melt butter in large skillet, pan-grill sandwiches until nicely browned using a bacon press or similar item to weigh it down. Add additional butter; then turn sandwiches, browning other side. Refrigerate any unused dressing.

Pharr Community Theater Presents A Tejano Christmas Carol Special to Welcome Home RGV
In
May of this year, the Pharr Community Theater underwent a management change with Pedro Garcia, one of the original founders and artistic director of the theater, being appointed as the new CEO and artistic director. Pedro has directed plays for the theater over the past 10 years, is a member of the Screen Actors Guild, and has acted and directed in over 130 plays since 1987. As CEO, Pedro is focused on the operation and advancement of the Pharr Community Theater, a community theater that presents three to four plays a year, including touring plays in retirement parks and other area venues. The theater is currently presenting a Christmas play, A Tejano Christmas Carol, adapted and directed by Pedro. The play has a modern-day Rio Grande Valley theme and twist, with Christmas songs and music yet the intrigue of Dickens’ original Christmas story with Scrooge (Mr. Codos, performed by Pedro Garcia), three Christmas ghosts, Tiny

Tina, children, their families, and the battle between good and bad and an outcome that surprises everyone. This Christmas play was first presented last year and was such an artistic success and in such demand that it is returning to the theater and on tour again this Christmas season. The two-act play, with a cast of 16 local actors, is set in the city of Pharr. Performances will be presented at the 60-seat-capacity Elva and Keith Michal Performing Arts Center, 213 West Newcombe in Pharr, Wednesday, December 6, through Saturday, December 9, at 7:30 p.m. and Sunday, December 10, at 3 p.m. Tickets will be sold at the door starting one hour before each play, on a firstcome first-served basis. and room. This makes surgical procedures safer because surgeons are able to change course and start a new procedure if they need to. Traditionally, cardiovascular diagnostic and surgical procedures are performed in different rooms or on separate days. Hybrid ORs seamlessly convert from a cardiac catheterization lab to a surgical suite in moments, allowing heart specialists to collaborate and make assessments about a patient’s condition in real time. This efficiency means you could spend less time on the operating table and have a lower risk of complications during or after surgery. The hybrid OR is ideal for many common and complex cardiovascular procedures. In February we will be adding a heart topic program for the 1st Responders and other attendees interested in this information. Joe Gonzales, family nurse practioner at Valley Care Clinic, presented on common illnesses and afflictions that, if ignored, can become serious, such as the flu, shingles, and a urinary tract infection. Peanut Butter Blondies
I
was recently asked to reprint this popular bar cookie recipe. It’s a delicious twist on the classic “Blondie” with the addition of some peanut butter and peanut butter baking chips. Super yummy! They’re an ideal choice for your holiday baking line-up or as a compliment to your morning coffee to help get you going. They could not be easier to prepare. You can also try adding toffee bits or other baking chips as well – have fun with it. Happy baking & snacking! Bon Appétit! • 1-1/2 cups packed brown sugar ½ cup butter, melted ½ cup creamy peanut butter 2 eggs, lightly beaten 1 teaspoon vanilla extract 1-1/2 cups all-purpose flour
1/2 teaspoon baking powder 1/2 teaspoon salt 1/2 cup (3 ounces) semisweet chocolate chips 1/2 cup (3 ounces) peanut butter baking chips
In a large bowl, combine the brown sugar, butter, peanut butter eggs and vanilla just until blended. In a separate bowl, combine the flour, baking powder and salt; add to wet mixture. Gently stir in the chocolate chips and peanut butter chips. Spread into a greased 13 x 9 baking pan. Bake at 350° for 18-20 minutes or until a toothpick inserted near the center comes out clean. Take care not to over bake. Cool on a wire rack and cut into bars. •
