VSO presents A Chopin Affair - Chamber Concert December 5 Special to Welcome Home RGV

Veterans Day at Oleander Acres RV Park by Vern Kirsch

Once

again, Oleander Acres RV Park hosted our veterans on Veterans Day, and we had a really great feed. People again brought a very large amount--and variety of--delicious food. All branches of the military were represented at the dinner. Our activity director, Tammy, arranged the hall in red, white, and blue. Tammy also arranged for a guest speaker, Martin Villarreal, to come and address all of us. Martin served in the Marines in Vietnam in the late 60s and looked very dapper in his dress blues. In the picture, Martin is welcomed by Ed, the owner of Oleander. Martin spoke of his childhood and some memories of growing up that could very easily have caused bitterness lasting a lifetime. He spoke of joining the Marines at a young age and how it turned his life around. He earned his high school diploma while in the service and the Marines set him in the right direction for life.

Martin also spoke of those who have served in the military and the bond that is developed. He and I will vouch for this. Martin said it did not matter what branch of the military you were in--WE ARE BROTHERS AND SISTERS. He spoke of how now, and after leaving active duty, he lived to pay back his country for what he has. He encouraged each of us to do the same, regardless of our age. Martin concluded his presentation by saying, “I am very proud to have served the greatest country on earth, and I would do it all again, even being willing to die for it.” If you would like to hear Martin in person, he has given his permission for his number to be published. Fiddle Champions to Perform in Harlingen this Season

lovely and talented Quebe Sisters will rosin up their bows and fiddle their way into your hearts Saturday, February 10, 2018, in Harlingen. This talented trio will perform authentic Western Swing and vintage country music at the Harlingen Municipal Auditorium beginning at 7:30 p.m. This is one of five outstanding shows offered by the nonprofit Harlingen Concert Association in 2018. HCA season tickets are available at the Municipal Auditorium, 1204 Fair Park Boulevard in Harlingen, and online at harlingenconcert.com. When the Quebe Sisters take the stage and the triple-threat fiddle champions start playing and singing in multi-part close harmony, audiences usually are transfixed, then blown away. That’s partly because the trio’s vocal and instrumental performances are authentic all-Americana, always respectful of the artists who inspired them. Whether decked out in denim or fashionably dressed to the nines in skirts and heels, the fresh-faced, clean-cut sisters, all in their 20s, look as good as they sound. Not surprisingly, the Quebe Sisters receive standing ovations at just about every show they play. It has been that way since 2000 when they started fiddling together as pre-teens. The sisters’ past is as colorful and eventful as their future is bright. Growing up in Burleson, Texas, a suburb of Fort Worth, Hulda, Sophia, and Grace were ages 7, 10 and 12 in

1998 when they attended their first local fiddle competition and decided fiddling was what they wanted to do. The girls earned solo and group accolades early on, winning state and national championships in their respective age groups in 1999, 2000, 2001, and 2002. The Quebes evolution, from whiz-kid Western Swing fiddlers to the smoking-hot Americana band they are today, is a remarkable story by any measure. Along with headlining their own shows to ever-growing audiences, the Quebes have shared the stage with American music legends like Willie Nelson, George Strait, Merle Haggard, and many others. Snow to Sun Veteran Highlight: Paul Johnson

From Army to Air Force to world traveler and Winter Texan by Jess Merrill

Paul

Johnson was the only G.I. on the train to Harrogate, England. When the train arrived, he expected a military car or bus to pick him up for a ride to the U.S. military base. However, no one was there to meet him. It turned out that Paul was only the fifth person assigned to the Harrogate post. A base commander and more personnel followed soon thereafter. Operating out of a farmhouse as headquarters about nine miles from town, construction began on the new base, which included a barracks, operations buildings, and an activity club. This base would become one of the most clandestine military installations in the world, RAF Menwith Hill, a joint effort between the Royal Air Force and the United States National Security Agency. Paul remembers the night he met his wife. “I was asleep in the barracks. My roommate came in, woke me up, and said, ‘Paul, get up! There’s a dance down at the club house. A bunch of nurses are visiting, and there’s nobody to dance with them.’” Paul got up, went to the dance, and met his future wife, Rosemarie Shepherd. She was

a student nurse at Harrogate District Hospital, from which she graduated as an R.N. in 1961. Paul had about six months remaining on his assignment in England. He and Rosemarie continued to see each other. When it was time for Paul to get out of the Army, he chose instead to reenlist, extend his service in England, and make a career of the military. The couple married, and two years later, Paul received transfer orders to Colorado Springs, Colorado. With only nine months left in his enlistment, he was reassigned to Vietnam. In the meantime, Rosemarie moved to their house in Grant City, Illinois. Toward the end of his stay in Vietnam, Paul saw an ad in Stars and Stripes newspaper placed by an Air Force recruiter. He contacted the recruiter, who recommended that Paul accept his honorable discharge, return home, collect his separation pay, and then give him a call. In 1966, Paul joined the U.S. Air Force, and just before Christmas, he reported to RAF Mildenhall Air Force base in England. Upon arrival on Christmas Eve, Paul checked in at the base, bought train tickets to Harrogate, and he and Rosemarie

spent Christmas day with her parents. They stayed in England four years while Paul worked as an electronic equipment technician flying highly classified missions in reconnaissance airplanes, supporting White House intelligence operations. Paul served all over the globe, with his last post in Florida. where he retired from the military in 1977 after 20 years of service.

They thought Florida would be home during their golden years, but then came Hurricane Andrew, which wiped out everything they had. They still wanted to be in a warm climate but away from devastating hurricanes. After staying in several different parks, they settled in Snow to Sun RV Park in Weslaco. Rio Grande Valley Program/Activity Directors’ Association Going Strong 22 Years after its Founding by Jess Merrill

More than 125 program and activity

directors, representing approximately 70 RV parks in the Rio Grande Valley from Mission to Brownsville, attended the Rio Grande Valley Program/Activity Directors’ Association’s November meeting at Snow to Sun RV Park in Weslaco Thursday, November 17. The event, sponsored by Welcome Home RGV, encourages activity directors to discuss thoughts and ideas for the season’s entertainment. The meeting opened with welcoming remarks by Kristi Collier, publisher of Welcome Home Winter Texan and CEO of Welcome Home RGV, and

Kelley Stence, community manager at Snow to Sun. Robert Ferguson, the association’s president, announced two entertainment showcases where musicians and entertainers perform 10-minute auditions for activity directors. The first showcase, scheduled for January 10, 2018, will occur at Park Place in Harlingen. The entertainment schedule is full for this session. The second event will be held January 18 at Casa del Valle in Alamo, where there are still four open entertainment slots. These events are for activity and program directors only and are not open to the public.

Today’s Wisdom: Live your life in

such a way that when you die even the undertaker will be sad. ~Bruce Bickel I have noticed in life that old age is more than a matter of proper living. It seems there is also an element of luck involved. Most of us undoubtedly have memories of events in which we easily might not have survived. I have experienced several near-misses, times in which something really bad nearly happened but didn’t. Certainly many of our veterans have such stories, but others who have never put themselves in harms way also benefit from the dumb luck that defines who goes and who stays. Or is it really just dumb luck? Some say there is a greater plan, it wasn’t yet their time, or they still had work to do. The question of why some make it to old age and others don’t is almost too complicated to ponder. That doesn’t mean we don’t sometimes think about those ‘what if’ moments. What if my father’s deployment orders had said South Pacific instead

It’s a more complicated sauce recipe than just ground Sandy Olson beef and tomatoes but has a depth of flavor that makes it one of my favorites. This one does not include meat and can be served as a side dish with your choice of grilled beef or chicken. of San Diego? What if my wife hadn’t survived as a premature baby? What if that car had been just two more inches to the left as it passed us? If we let our minds run with those thoughts, we eventually come to grapple with the question of why we are here. We can get into some pretty thick dialogue about that. Or we can just do what we are equipped to do in the community we occupy, living as if we really were here for a purpose. My home community just lost one of those fellows who made a life of doing what he was equipped to do. Everyone who lived in his rural town more than a month was touched by his presence in some way. He never did it to achieve greatness. He just did it to serve. He had it figured out. I don’t know if he ever experienced one of those dumb-luck moments. I suspect he probably had many. I’ll bet you have had your share, too. Even today, that airplane that might have fallen out of the sky on your house didn’t. Why? Is there something you still need to do? I’m just askin’. •

Angel Hair Puttanesca • • • • • • •

2 cans (14.5 oz. each) fire-roasted diced tomatoes 1/3 cup diced white onion 8 ounces angel hair dry pasta • 1 tablespoon olive oil 3 large cloves garlic, minced • ¼ teaspoon black pepper 1 tablespoon capers, drained • 1 teaspoon dried oregano 1 teaspoon anchovy paste • ¼ teaspoon red pepper flakes 1 cup loosely packed fresh baby spinach

In a large heavy skillet over medium heat, sauté the onion and garlic in the olive oil until tender but not browned, about 5 minutes. Place in a large bowl with the rest of the ingredient--except the pasta and spinach. Mix well. Put the uncooked pasta into the slow cooker, breaking it, if necessary, to fit it in. Pour the vegetable and spices mixture over the pasta and mix, making sure all the pasta is covered with sauce. Cover and cook on LOW for 2-3 hours. (You want the pasta to be al dente not soft.) Add the spinach the last 10 minutes of cooking to allow it to wilt. NOTE: Don’t shy away from using ingredients, such as anchovy paste and capers. They add wonderful flavor without being overwhelming. River Bend Resort & Golf Club in

Brownsville was founded in 1983 and features an 18-hole championship golf course. The name is derived from the huge bend in the Rio Grande River that borders the resort and provides the property with a lush, tropical setting. There are numerous plants and birds that can be seen on the property that you don’t see elsewhere in the United States. The course was built and designed by Lou Falley. The greens are Miniverde grass, and the fairways are Bermuda 419. The grounds are manicured and feature 25-year-old oak trees. With the Rio Grande River as a border, there are numerous holes where water comes into play. Owners Mark and Jimmy Barnard revitalized the 30-year-old course with many improvements, including a complete rebuild of 16 green. There are four sets of tees, with three sets rated for men: 6735 yards rated 123/73.4, 6276 yards rated 121/71.1, and 5663 yards rated 113/68.2. Two sets of tees are rated for women. 5663 yards rated

122/73.5 and 4986 yards rated 109/69.7. This course has always been open to the public for play, but now it is also open to the public for membership play. All memberships include unlimited golf, advance tee-time booking, unlimited use of practice facilities (including range balls, handicap records, and access to special events), clinics, tournaments, and more. Step Up or Fall Down These things I have spoken unto you, that ye should not be offended. ~ John 16:1

Jesus knew it was time for him to

go. He had poured into the disciples for three years, teaching them God’s way of doing things by word and example. He had sent them on a trial mission, and using their faith, they had obtained the same results he had. It was time to pass the baton. He had been preparing them for his departure, but they still didn’t quite get it. Disbelief, sorrow, and fear were clouding their understanding. “My leaving is expedient for you,” he said, “the best way to obtain the results that achieve God’s purpose. If I don’t go, the Comforter will not come to you. You must receive God’s power through the Holy Spirit in order to do God’s will.” The Holy Spirit’s main work is threefold. He convicts us, making us aware of personal sin. He shows us our righteousness. If it’s based on works, it won’t hold up. Only righteousness based on faith in Jesus will stand before God.

And he brings judgement. We will either be condemned or acquitted on the two counts of sin and righteousness, based on our relationship, or lack of relationship, with Jesus. Jesus wanted to tell them more, but they just were not up to it. Each new teaching we learn from God can be either a stepping stone or a stumbling stone. We can believe what he shows us, apply our faith, and receive it. The teaching becomes a step up that takes us into a closer relationship with God. If we don’t believe and receive it, then it becomes a stumbling stone, an obstacle in our faith-path that keeps us at a distance from God, not walking in the new light he is shining for us. Lord, thank you for sending us your Holy Spirit. Help me apply my faith to each new thing you show me, so that I can draw ever closer to you. •

Zesty Grilled Chicken Serves: 6 • 2 large cloves garlic, finely chopped • ¼ cup olive oil • 1 large onion, grated • Cracked pepper • 2 tablespoons dried parsley • 1 tablespoon Worcestershire • ¼ cup Dijon mustard • 6 boneless chicken breast halves, • ¼ cup lemon juice skinned Prepare outdoor grill or preheat broiler. Stir together well the garlic, onion, parsley, mustard, lemon juice, olive oil, pepper, and Worcestershire sauce; coat each chicken breast. Refrigerate 2 to 3 hours. Reserve marinade. Cook chicken 5 to 7 minutes on each side until browned and cooked through. Heat marinade on stove; simmer 5 to 7 minutes. Pour a small amount of mixture over each chicken breast when serving. Since retiring, they have traveled the world riding on military transports. They visited Australia nine times and have been to Japan, Germany, Italy, Greece, Spain, and Panama. They travel as backpacking tourists and stay in hostels rather than expensive hotels. They recalled a trip to Tel Aviv, Israel, when they stayed in a hostel for $8.00 a night, right across the street from a Hyatt that charged $300 a night. Free travel on military transports is available to all retired military veterans who are willing to travel light, go at a moment’s notice, and are agreeable to minimum flight amenities.

Ten years ago, Rosemarie completed her U.S. citizenship in Brownsville. One of the rules is that the applicant must live in the same state at least five years. Before Paul retired, none of his U.S. assignments kept him in one place that long. Therefore, every time they moved, Rosemarie had to begin all over. If not for cancer and a fall that broke both her hips, Paul and Rosemarie would still be traveling. They love visiting exotic places and meeting many interesting people. “As soon as she gets her energy back, we’ll be taking a cruise,” Paul said. •

This is my recipe for Camarón del diablo – or, literally, ‘Devil Shrimp.’ This

recipe can be as hot as you like. The recipe below is mildly spicy. I am not a fan of extremely hot sauces, so I will rarely give you a recipe requiring fire extinguishers. This recipe serves 2 people. Enjoy! Buen apetito! •

Shrimp Diablo with Linguine • 1 lb. médium-sized raw gulf shrimp, cleaned, deveined, and tails removed. Pat dry with paper towels. • 1 – 14.5 ounce can of fire-roasted diced tomatoes • 1 cup yellow onion – finely diced • 1 fresh, diced jalapeño pepper – seeds and webbing removed • 1 clove garlic – minced • ½ tsp. red pepper flakes • ½ tsp. dried oregano – preferably Mexican • 3 Tbsp. olive oil • 1 tsp. kosher salt • ½ cup dry white wine • 1/3 pound linguini noodles • Lime wedges for garnish

Heat a pot of water for the pasta. Open and drain the diced tomatoes – set aside. Add the olive oil to the sauté pan and bring to medium heat. Sauté the shrimp in the oil until they are just cooked. Remove the shrimp and set aside. Add the onion salt, oregano, pepper flakes, and jalapeño pepper to the pan and sauté until the onions become translucent. Add the minced garlic for about a minute until the onions are almost done; the garlic will burn easily. Add a little more oil, if needed. This is a good time to get your pasta started. Finishing the sauce does not take long. Add the drained tomatoes and the white wine to the onions. Simmer and stir the sauce until it begins to thicken. This is the time to taste the sauce and add more pepper flakes or a dash of hot sauce, if you want more heat. When the sauce thickens, add the shrimp, stir, and simmer until the shrimp are heated through. Drain the pasta and spoon the sauce and shrimp over it. Garnish with lime wedges. Kuchen: This quintessential German Russian pastry is a sweet dough crust filled with custard, which is served plain or studded with fruit, such as prunes, peaches, blueberries, and apples. It was first introduced to the area in the 19th Century and has been a favorite among locals ever since. Small-town bakeries, especially in the eastern half of the state, commonly serve these tasty treats. Chislic: No single dish is more strongly associated with South Dakota than chislic. Those not from the area often mistake this beloved snack for shish kebab. And although the two are similar, the difference is in the details. While shish kebabs are a grilled assortment of meat and vegetables, the much simpler chislic consists of half-inch cubes of meat – typically lamb, venison or beef – which are deep-fried or grilled and served up in a dish or on skewers. You haven’t truly experienced South Dakota until you’ve had a proper plate of chislic.

Kuchen: Makes two 9-inch coffee cakes

• ¼ cup shortening • 1½ tsp. cornstarch • 1 package active dry yeast or 1 cake yeast • ½ cup half-and-half or light cream • 2 Tbsp. water (105-110 degrees) • 1 beaten egg • 2¾ cup all-purpose flour • ½ tsp vanilla • 1/3 cup sugar • ½ cup all-purpose flour • 1 tsp. salt • ¼ cup sugar • 1 beaten egg • ¼ cup butter or margarine, melted • 1/3 cup sugar • 1 pound fresh fruit of your choice • 1 Tbsp. all-purpose flour In a small saucepan, heat milk and shortening till very warm (115-120 degrees), stirring till shortening is nearly melted. Meanwhile, dissolve yeast in warm water. In large bowl, combine 2¾ cup flour, the 1/3 cup sugar, and salt. Add milk and yeast mixture, along with egg. Stir till well combined. Cover and let rise in a warm place until double, about 1 hour. Meanwhile, in small saucepan, combine 1/3 cup sugar, 1 Tsp. flour and cornstarch. Stir in cream and egg. Cook and stir till thick and just beginning to bubble (do not boil). Remove from heat and add vanilla. For crumb mixture, combine ½ cup flour, ¼ cup sugar and ¼ cup margarine till slightly crumbly; set aside. Stir dough down. Divide dough in half. With floured fingers, pat into two greased 9-inch pie plates (or, on floured surface, roll each half of the dough to an 8-inch round. Place in two greased 9-inch pie plates). Top crust with fruit. Spoon cooled filling over dough, spreading carefully to ½ inch from edge. Sprinkle with crumb mixture and a little cinnamon. Bake at 350 degrees for 25 minutes or until golden. • ½ cup + 2 Tbsp. butter • 1 gallon canned chicken broth • 1 cup flour • 1 Tbsp. parsley • 2 Tbsp. butter • 1 tsp. salt • 1 cup chopped celery • ½ tsp. pepper • 1 cup chopped onion • ¼ tsp. cayenne pepper • 1/3 cup chopped green pepper • ¼ tsp. nutmeg • 1/3 cup chopped red pepper • 1½ lb. pheasant (chicken can be used, as • 2 cups shoepeg corn well), cooked and chopped • 2 cups sliced mushrooms • 1 cup heavy whipping cream • 1 medium jalapeño • 3 cups cooked rice • ½ cup slivered almonds, toasted Heat butter; stir in flour. Cook on low 2 minutes until the consistency of a roux. Sauté celery, onion, red and green pepper, and carrots in butter. Stir in corn, mushrooms, and jalapeño. Cook until mushrooms are golden brown. Bring broth to a boil in large stockpot. Stir in roux. Simmer until thick. Stir in vegetables; add seasonings and simmer for a few minutes. Add chopped pheasant (or chicken) and rice to soup. Have lamb meat cut into 1-inch cubes. Season lamb meat with the salt, pepper, garlic salt, and seasoned salt. Skewer lamb meat with about 6 to 8 pieces on skewer sticks. Place skewers on preheated grill. Cook both sides until browned. (Turn skewers once first side is nice and browned.) Remove from grill, place on paper towels, and add more salt and garlic salt for more flavor or to your taste. (You may use other seasonings for a variety of flavor, as you wish) Recipe from Jo A. Fettuccine Alfredo This dish is a simple and

scrumptious variation on an Italian classic. It is ideal for a rainy weeknight dinner when you seek shelter after a long day or if you are looking to create a little romance. It is so easy to pull together with just a few ingredients that you probably already have at home in your pantry. Relax with a glass of wine and your love and enjoy! Bon Appétit! • Kosher salt 12 ounces fettuccine 1 cup heavy cream 1 stick unsalted butter, cold 1 to 2 teaspoons finely grated lemon zest (zest of one lemon)

2 cups freshly grated Parmesan or Pecorino cheese, plus more for garnish Freshly ground pepper Pasta cooking water, as needed Crusty Italian bread or French baguette, for serving

Preheat the oven to 375 degrees F. Bring a large pot of salted water to a boil. Add the fettuccine and cook as the label directs, until al dente. Drain, reserving about 1/2 cup of the pasta water. In a sauté pan, heat the cream to a simmer. Add the cold butter in pieces, shake the pan to incorporate or alternatively use a whisk. Add lemon zest to sauce and squeeze in a little juice from the lemon as well for brightness. Remove from heat and whisk in the cheese. Season with kosher salt and plenty of freshly cracked black pepper. Add the pasta to the sauté pan, and ladle in some of the reserved pasta water to thin the sauce as needed. Divide among bowls and garnish with more cheese. Serve with crusty Italian bread or French baguette! •
