It is such an honor to have worked with you, and for you, over the last 10 years, and we don’t need a holiday to remind us to give thanks for that. This year, we are hosting our very first Homecoming Party. This event is to celebrate all of you ‘early birds’ and to welcome you to South Texas! The event will take place Tuesday, December 5, from 11 a.m. to 2 p.m. at Riverside Club in Mission. Tickets are $10 and include lunch. We’ll also have live music, dancing, and, of course, DOOR PRIZES! Because we know you are all not only proud of being Winter Texans but also proud of your home state, we ask that you wear your home-state colors to the party!! Speaking of home-state pride, in this issue you will find the first article of our series ‘Your Homes away from Home.’ Each week, we’ll highlight a different state with information, trivia, and recipes. America’s Team, Stars to Shine Bright at Christmas in the Park H Peña Eye Institute to bring out Dallas Cowboys memorabilia H Special to Welcome Home RGV

looking to kick off the holiday season under the stars can do that by celebrating at Christmas in the Park. Located at Municipal Park, 1921 N. Bicentennial Boulevard, right next to McAllen Veterans Memorial Stadium, Christmas in the Park is a prelude to the muchanticipated McAllen Holiday Parade and features food, fun, vendors, and, thanks to sponsor Dr. Raul A. Peña and Peña Eye Institute and media partner R Communications, plenty of attractions and entertainment for the whole family. While the fun this year will kick off with a carnival winter spectacular Thursday, November 30, the excitement continues the next evening, Friday, December 1, when the familyfriendly event officially opens its doors starting at 5:00 p.m. There, attendees will get a chance to enter into the much-lauded Dallas Cowboys Hall of Fame Museum, featured for the first time at Christmas in the Park thanks to the Dr. Peña. The traveling exhibit

is a fan favorite among die-hard Dallas Cowboys fans as it features a variety of Cowboys memorabilia. Entrance to the museum is free. The Dallas Cowboys On Tour is a mobile program dedicated to bringing the Cowboys experience to the fans. This one-of-a-kind attraction provides an interactive opportunity for all fans to enjoy. The Hall of Fame Museum is filled with exhibits depicting

the history of the Dallas Cowboys, including Super Bowl trophies and rings, Super Bowl MVP lockers, historic uniforms, a Tom Landry display, seven flat-screen monitors, a jumbo screen, life-size statues of Bob Lilly and Emmitt Smith, and much more! During the McAllen Holiday Parade Saturday night, be on the lookout for the Peña Eye Institute float, which is a replica of the Dallas Cowboys home stadium featuring America’s Sweethearts, the Dallas Cowboys Cheerleaders and that smiling Cowboy mascot himself, Rowdy. Fans have a chance to be entered into a drawing to be one of the lucky few who will get an autograph-and-photo session with the cheerleaders, thanks to Peña Eye Institute. Harlingen Medical Center Receives “A” for Patient Safety Top score reflects high level of healthcare provided for Valley patients by Harlingen Medical Center Special to Welcome Home RGV

awarded an “A” for patient safety from the Leapfrog Group, a national healthcare ratings organization. The top grade indicates an above-average performance by the award-winning and nationally recognized hospital. The Leapfrog Group assigns letter grades of A, B, C, D, and F to hospitals nationwide based on their performance in preventing medical errors, infections, and other harms. Harlingen Medical Center received an “A” for “its commitment to keeping patients safe and meeting the highest safety standards in the U.S.,” according to Leapfrog, which is based in Washington, D.C. “This outstanding grade reflects the dedication of the physicians, nurses, and other health professionals at our hospital in serving our patients with safe, high-quality, compassionate, and personalized care,” said Brenda Ivory, president and chief executive officer at Harlingen Medical Center. “At Harlingen Medical Center, we are all committed to patient safety and to creating an exceptional patient experience,” Ivory added. “And that includes ensuring we effectively communicate with our patients, ensuring we are responsive to their needs and ensuring we provide a safe, quiet. and clean environment during their stay with us.” Amy Flores, chief nursing officer at Harlingen Medical Center, said the greatest asset Harlingen Medical Center has is its people. “We are here to serve,” Flores added. “At the heart of all of these ratings -- and of everything else that we do -- is to take care of our patients

We Fell in Love with Abilene…Kansas by Lisa Trudell and Sara Broers

Abilene,

Kansas, is one of those towns we quickly fell in love with this past summer. The people were exceptionally friendly, and the history in the town itself is remarkable for a small town in the Midwest. Most people know President Dwight D. Eisenhower is from Abilene, but many do not know Abilene is also part of the world-famous Chisholm Trail. If you appreciate the life of a cowboy and larger-than-large landmarks, you will adore Abilene. We challenge you to find the large landmark in Abilene. We hope you are as excited when you see it as we were. Abilene is home to a couple of bed and breakfasts, as well as several hotels that can easily accommodate your lodging needs. The one thing we found on our visit was that everyone we met was very passionate about their hometown. Residents were notably very proud of their theater. Be sure to see what is playing when you are in town; you will not be disappointed. The actors and actresses are seriousminded people. and the theater itself is upscale, not what most think of theaters in the Midwest. We would highly suggest spending two full days in Abilene. The Dwight D. Eisenhower Library and Museum will keep you busy for several hours. Be sure to visit Dwight D. Eisenhower’s gravesite, which is also located on the grounds of the Library and Museum.

A couple of blocks from this Presidential Library, you will find the Dickinson County Heritage Center, which is home to Abilene history. Here is where you will be surprised by all of the telephones and their history. While you are visiting, take a step back in time--hop on the carousel and take a spin. The Greyhound Hall of Fame is across the street from the Presidential Library. You will be greeted by a live greyhound upon your arrival. Learn how greyhound racing has evolved and continues to evolve. There are more than a few things to do while in Abilene, as the list is fairly long. A visit to any Midwest town would not be complete without a hearty meal. We would highly recommend the broasted chicken dinner at the Brookville Hotel. You will not go away hungry. It’s served family style and is a meal you will remember. •

Bacha-Garza, will present The Underground Railroad through South Texas to Mexico: Emancipated Slaves and Mixed Race Colonies Along the Rio Grande during the Sunday Speaker Series at the Museum of South Texas History in Edinburg November 19 at 2 p.m. Bacha-Garza is the program manager of the Community Historical Archaeology Project with Schools (CHAPS) Program at the University of Texas-Rio Grande Valley. Outlined in her thesis, San Juan and its Role in the Transformation of the Rio Grande Valley, is the succession of Spanish land grantees, displaced Civil-War families, Anglo entrepreneurs, and Mexican Revolution refugees and their migration to San Juan at various stages of municipal development. The Sunday Speaker Series is included in the fee for regular museum admission. FRIENDS of the Museum are admitted free as a benefit of FRIENDship. •

Golf Courses in the RGV • • • Alamo Country Club Golf Course: Take the Challenge By Fran Adams

This week’s course is a nine-hole,

private course located in Alamo. It is nestled amidst the homes in Alamo Country Club. If you are a resident of the Country Club, you are privileged to play golf on this very challenging course. The course was built in 1982 by designer Lonnie Sommers. It has Bermuda grass fairways and Mini Verde grass greens with two sets of tees. The back tees are 2216 yards with a rate of 31.7 and a slope of 112. The forward tees are 1881 yards with a rate of 31.7 and a slope of 98. Par for nine holes is 35. Although this is a short, nine-hole course, it is very challenging for the residents and their guests. Accuracy is a must on this course. The

holes meander through the housing addition; therefore, each hole is bordered with out-of-bounds areas. Bring plenty of golf balls because seven of the nine holes have water hazards. Sand traps bordering some of the greens keep golf interesting. The challenge of the Alamo Country Club Golf Course is real for the residents and their guests. at Country Sunshine had a day full of events this year on Halloween. It was a CS-style Amazing Race, where residents had to complete different tasks in order to obtain the next clue, leading them to the following stop on the race. Along the race course, reward posters were placed. Residents brought the ‘suspects’ into our

CS jail, where they were arrested. Court was held with our judge. Bail was collected from friends of the ‘criminal,’ and the bail money will be donated to the Humane Society. A Costume Contest and PumpkinCarving Contest were held, with prizes awarded to the winners. The evening ended with a Witch’s-Stew Dinner. •

Winter Ranch and Trophy Gardens Enjoy Frightfully Fun Competition Special to Welcome Home RGV

Texans at Winter Ranch RV Resort hosted Trophy Garden RV Park at their annual Halloween competition. Friends become rivals for a day of competitive games. The Baking Contest categories included Pies, Cakes, Bars or Cookies, and Other. All recipes had to contain apples in some form. Winners were selected for each category by our three taste testers, and Marti Senkler was named the Baking Champion. The two parks challenged each other in the timed Scavenger Hunt. The results were calculated by those having the fastest time with the most accurate answers. There was a winner from each park. The Bean-Bag Baseball game included cheerleaders, a bull horn,

and a cowbell. There were 22 participants and lively fans. Larry Chapin, Winter Ranch park manager, served as announcer and referee. The “squash” trophy was awarded to Trophy Gardens. The Golf Cart Parade traveled throughout the park. Participants were very creative in their personal and pet costumes. We had two sets of Flintstones, a cart of lively skeletons, witches, and other frightful Halloween attire. The evening ended with a Costume Contest at the Texas Wheels Dance. Fred and Wilma Flintstone, aka Marvin and Della Orndorff, won the Couples category, Ann Portel was the Female winner dressing as a “lighted lamp shade,” and Larry Chapin rode in on an ostrich. •

Wisdom: My life has no purpose, no direction, no aim, no meaning, and yet I’m happy. I can’t figure it out. What am I doing right? ~Charles Schulz You may not believe me, but odds are you are happier today than you were years ago. You may be surprised that those attractive, rich, and active young people who we assume have it all together often really don’t. Many young people quietly, even secretly, actually struggle with many life issues. These can range from body image to self-doubt, to fear and anxiety, to dependencies and more. Do you remember the mess in your own mind when you were 16 or 23? Most of those issues resolve with age and experience. I know mine have. Oh, I still have issues; I just don’t care so much anymore. There is little chance of me changing at this late date, and my baggage hasn’t harmed me yet so it’s proving to be

pretty benign. There is some science to back this up. Evidently, we older folks have stronger links between the emotional part of the brain and the thinking part. Skipping the technical details, we are just better at blowing off the bad stuff and embracing the positive. How’s that for a life motto already implanted into our DNA at birth? When we were younger, some of us needed chemicals to accomplish that. Although no one I knew actually inhaled, we all can imagine a smoky room of goofy friends with dumb smiles ‘embracing the positive’ to the vibes of the Grateful Dead, Led Zeppelin, or Janice. Now that I am old, it is much less expensive to embrace the positive. I just hit the delete button on all the junk and groove to the tunes in my head. I’m just sayin’. •

Southwest Black Bean Soup • • • • • • • •

3 cans (15 oz. size) black beans, rinsed well 1 jar (12 oz.) salsa, as mild or hot as you like it 2 cups chicken stock or broth (canned, low-sodium can be used, or make your own) 2 ears fresh sweet corn kernels, cut from the cob, OR 1 cup of frozen corn, thawed ½ teaspoon ground cumin ½ teaspoon freshly ground black pepper ½ large red bell pepper, seeded and diced 2 Tablespoons chopped yellow onion

Combine all the ingredients in the slow cooker, mixing well. Cover the cooker and set on LOW. Cook for 6 hours or so. Taste and adjust seasonings. had an idea – let’s do a butterfly garden! So I brought it up at a meeting to see if some residents would be interested in helping with the project. Several couples came forward to help with the planning, planting, and caring for the garden. While deciding on our next step, we decided to visit Oleander Acres RV Resort where they have one. What a resource of information! We were able to see how theirs was laid out and the types of plants they had. Our next stop was the National Butterfly Center for more ideas. Our small group of residents got to work. Once it was planted, we had a small celebration and dedication. That was in March.

All summer long, we watered, weeded, and watched it grow. As a city girl, I thought, “How will the butterflies find it? Will one come along and tell the others? Do they smell the flowers flying by and decide to stop? Or by planting it, will they come?” I’m so happy to say plant it, and they will come! •

One

of the great things about returning to South Texas in the fall, especially this year when the RGV has had ample amounts of rain, is the profusion of beautiful flowering plants everywhere you look. While wandering around the park at Snow to Sun RV Resort in Weslaco the day before Halloween, I took photos of many gorgeous blossoms. Many of them are native to the Rio Grande Valley. The reason to think about native plants is that everything in an ecosystem works together. Most insects are host-plant specific; that means they only eat and thrive on a single-plant species. If the native plant is overgrown by an invasive non-native species or otherwise disappears, the native bugs will also disappear. “That’s good – great – I hate bugs,” you might think, but if the insects disappear, the birds that depend on them as a food source will also disappear, and if the native birds disappear… I wanted to fill two pots in front of my trailer with flowering plants, something that will attract birds and butterflies. Mike Heep at Mike Heep’s Nursery in Harlingen specializes in native plant species. He helped me pick out what I needed--two tropical milkweed plants and two rose

Although there are dozens of varieties of milkweeds and Monarch butterflies thrive on all of them from the northernmost reach of their migration to Deep South Mexico, they only eat milkweed. The one milkweed native to the Rio Grande Valley is Tropical Milkweed. Other varieties may not do so well in the South Texas Plains ecosystem. The rose mallow plants are related to hibiscus and will attract butterflies and birds. I’m hoping for hummingbirds. His plants are generally less expensive than those you will find at big-box stores. •

Although Crown of Thorns is native to Madagascar, it does well in the RGV, and many people have these plants in pots and gardens.

While there are hundreds of hibiscus varieties, only one is native to the Rio Grande Valley – the Heart Leaf Hibiscus. It has a red blossom.

Night Blooming Cereus usually blossoms after dark, but this one displayed its beautiful splendor mid day. This cactus is native to the RGV.

Purple Sage (Cenizo) is native to the RGV. Its soft, hairy leaves help it retain moisture in the mid-day sun.

Memories

Most of us who read this paper are

old enough to have a lot of memories accumulated throughout our lives. I grew up on a farm in far northern New York, and the memories from those years abound. Memories from my experiences with the cattle, calving and feeding, can be recalled very easily. We had draft horses we used on the farm, and I did love to drive them. In fact, when referring to my 49-year career as a truck driver, my son, David, delights in telling people I learned to drive a truck on a horse and wagon! There just might be some truth to that. We can all tell stories from the memories from our past, and they will be as varied as the lives of those telling the stories. Some will be good and some will be bad; some will be funny and some will be sad, but they are all uniquely ours. For a great many people, one date will stand out above all others as that time and that place when they accepted Jesus Christ as Lord and Savior. I am one of those people. It is the most important, life-changing

event in our lives. It is the point when we now know for certain we can and will spend eternity with God in heaven. God’s Word assures us of that. It is a time when those who felt hopeless suddenly found hope, and those who felt powerless suddenly find themselves finding strength in God’s Word and His Promises. Do you have a date like that? I spent a lot of years looking for something to make me happy. That translates into trying to find love in all the wrong places and trying to put a worldly shaped peg in a God-shaped hole. But it is God’s desire that all of us should come to repentance and invite Jesus Christ to be our Lord and Savior, and that’s when we find the joy and the contentment we have sought for so long. Philippians 4:7 calls it “The peace of God that surpasses all human understanding.” Make a new memory. Ask a Christian Resort Ministries RV chaplain or ask someone in a Bible-believing church to show you how you can find Jesus Christ, too. •

many years, Oleander Acres has a new activity director. This year, Karen, who led activities, has moved on and decided to enjoy retirement, and we at Oleander wish her the best and command her to stay in touch. The new activity director is Tammy, and she brings with her a desire for the folks at Oleander to get to know her and to get excited about winter life here. “After 30 years of service, I retired this year from the Clackamas County Sheriff’s Office in Oregon City, Oregon,” Tammy said. “My husband, Jay, and I decided that we wanted to see the U.S.A. We sold most of our possessions, including our home, and started traveling the new adventure.

I was having a hard time adjusting to retirement, so I started looking for workcamping jobs in Texas as we knew we wanted to spend our winter here. I was excited to get the opportunity to work at Oleander Acres RV Park as the activities director. My goal as your activity director is to have activities and special events that engage all the residents and encourage socialization. This is your home, and I want to make sure you enjoy your time here. The motto of Dakota Territory was Liberty and Union, One and Inseparable, Now and Forever. This language was suggested by Dr. Joseph Ward of Yankton, South Dakota, who was quoting from Daniel Webster’s Reply to Hayne. However, the motto used for the Territory had two of the phrases reversed; when North Dakota became a state that error was corrected. [North Dakota Constitution Article XI, Section 2]

This translates from Latin as “One sows for the benefit of another age.” A group of Fargo high school Latin students lobbied for the motto. [North Dakota Century Code 54-02]

History of the North Dakota Flag

January 21, 1911, Representative Colonel John H. Fraine introduced H.B. No. 152 designating an official flag for the state of North Dakota (1911 S.L., ch. 283). The legislation specifically required that the flag conform to the color, form, and size of the regimental flag carried by the North Dakota Infantry in the SpanishAmerican War in 1898 and Philippine Island Insurrection in 1899; the only exception was the name North Dakota placed on the scroll below the eagle. On March 3, 1911, the Legislative Assembly adopted the North Dakota state flag. North Dakota Century Code Section 5402-02 describes the state flag in detail. In 1951 S.B. No. 156 established the North Dakota State Flag Commission to consider changes to the flag (1951 S.L., ch.303). The commission concluded the flag “too closely resembled the coat of arms of the United States and that the flag was not symbolic of North Dakota.” The commission’s conclusions were widely challenged and its suggested changes rejected. S.B. No. 265 was introduced during the 1953 session and contained the recommendation of the flag commission. That legislation was defeated. The 2011 Legislative Assembly adopted and the Governor signed House Bill No. 1097 that amended 54-0202 (quoted below) of the North Dakota Century Code (2011 S.L., ch 384). The emphasized portion, beginning with the words “To ensure historical accuracy...” became effective August 1, 2011.

STATE BIRD Western Meadowlark Sturnella Neglecta, approximately the size of a robin, the meadowlark sports a yellow breast with a black bib over its mottled brown body. These song birds are found from Wisconsin to Texas and westward to the Pacific.

STATE FLOWER Wild Prairie Rose Rosa Blanda, or Arkansana, has been identified as Rosa Pratincula in species. The flower sports five bright pink petals with a tight cluster of yellow stamens in the center. The Wild Prairie Rose grows along roadsides, in pastures, and in native meadows.

STATE DANCE Square Dance The 1995 Legislative Assembly designated the square dance the official American folk dance of North Dakota.

The flag of North Dakota must consist of a field of blue silk or material which will withstand the elements four feet four inches [132.08 centimeters] on the pike and five feet six inches [167.64 centimeters] on the fly, with a border of knotted yellow fringe two and one-half inches [6.35 centimeters] wide. On each side of said flag in the center thereof, must be embroidered or stamped an eagle with outspread wings and with opened beak. The eagle must be three feet four inches [101.6 centimeters] from tip to tip of wing, and one foot ten inches [55.88 centimeters] from top of head to bottom of olive branch hereinafter described. The left foot of the eagle shall grasp a sheaf of arrows; the right foot shall grasp an olive branch showing three red berries. On the breast of the eagle must be displayed a shield, the lower part showing seven red and six white stripes placed alternately. Through the open beak of the eagle must pass a scroll bearing the words “E Pluribus Unum.” Beneath the eagle there must be a scroll on which must be borne the words “North Dakota.” Over the scroll carried through the eagle’s beak must be shown thirteen five-pointed stars, the whole device being surmounted by a sunburst. The flag must conform in all respects as to color, form, size, and device with the regimental flag carried by the First North Dakota Infantry in the Spanish American War and Philippine Insurrection, except in the words shown on the scroll below the eagle. To ensure historical accuracy, reproductions of the flag of North Dakota must adhere to the official design and industry color chart codes provided by the state historical society. A description in writing of the flag must be made available to the public by the state historical society. Flags purchased by a state entity or a political subdivision must substantially meet the requirements of this section. This section does not apply to the purchase of an item that is not a flag but which portrays a likeness of the flag of North Dakota, for example, a miniature flag, food, clothing, a lapel pin, a paper product, or other non-flag item.•

NORTH DAKOTA’S 13 STATE PARKS Each of North Dakota’s 13 state parks offers a unique blend of scenic beauty, outdoor recreation, and camping opportunities. Hike, bike, swim, boat, and sleep under the stars. •

MAAH DAAH HEY TRAIL The Maah Daah Hey Trail is a 144-mile non-motorized single track through the Badlands of North Dakota. It is at times rugged, challenging, and relaxing and always amazing. The International Mountain Biking Association (IMBA) has designated the hiking, biking, and horseback riding trail as EPIC, meaning it’s one of the top mountain biking trails in the United States. •

NORTH DAKOTA HERITAGE CENTER & STATE MUSEUM The North Dakota Heritage Center and State Museum expanded to 97,000 square feet of world-class exhibit space to celebrate the state’s 125th Anniversary in 2014. Located on the State Capitol grounds in Bismarck, the facility boasts four new galleries and is home to a 67-million-yearold hadrosaur named Dakota found near Marmarth, North Dakota, a NASA spacesuit built by the team at the University of North Dakota, and one of the premier displays of Northern Plains Indians artifacts. •

NATIONAL BUFFALO MUSEUM In the National Buffalo Museum, visitors can discover the vital role bison played for early plains settlers while learning about history dating back to Prehistoric times. Just outside the museum, you’ll find a live bison herd roaming the pastures. Each year, thousands of visitors come to this area to spot these rare, majestic creatures grazing the grasslands. For the ultimate photo op, make sure to visit Dakota Thunder, the World’s Largest Buffalo Monument, located just outside Frontier Village. Knoephla Soup:

A Germans-from-Russia traditional cream-based soup with dumplings Broth • 8 cups water • 2 bay leaves • 3-4 tablespoons chicken base • 4 medium potatoes, peeled and diced • ¼ stick butter (2 tablespoons) Traditional Knoephla • 2 eggs • ½ cup + 2 tablespoons milk

• ½ medium onion, chopped • 1 pint cream • salt and pepper to taste • ¼ teaspoon dill weed • ½ teaspoon baking powder (optional) • cups flour

Combine water, bay leaves, chicken base, and potatoes in a large heavy-bottomed pot. Cook over medium heat until the potatoes are tender. In a separate pan, melt the butter and sauté onions until tender and slightly browned. Add to the broth. While potatoes are cooking, make the Knoephla. Combine eggs and milk in a large bowl; beat to combine. Add flour and baking powder and mix together well until dough forms. Drop Knoephla into the broth. You can do this by either rolling the dough into a rope (about ½ inch) and cut into pieces (about ¼ inch) or you can use a spaetzle maker. Cook for 5-10 minutes or until the dumplings begin to rise. Just before serving, add cream and warm. Salt and pepper to taste, and season with dill weed. If desired, thicken with 1 teaspoon of cornstarch + 1 tablespoon of water.

Norwegian Lefse: A special treat for the holidays

• 10 Lbs. Russet potatoes, peeled • Salt • 1 lb. unsalted sweet cream butter • 2½ cups all-purpose flour (room temperature) Materials Suggested: • Electric Lefse Griddle • Pastry Board and 3-4 Pastry Cloth Covers • Corrugated Rolling Pin and 3-4 Rolling Pin Covers • Lefse Stick • Potato Ricer • Flour Dredger/Shaker Bring a large stockpot full of water to a boil. Cut your peeled potatoes into 2-3 pieces, depending on size, and cook until they are tender. You may need to do multiple batches if you are using a smaller pot. Rice the cooked potatoes into a large bowl with your potato ricer. Once you have riced all of the potatoes, cover and let them cool overnight in your refrigerator. Remove your potatoes from the refrigerator and let them warm slightly. Move approximately half of the riced potatoes to a smaller bowl. Add the flour in ¼-cup increments, along with ½ stick of butter, in chunks, and 1 tsp. salt. Knead the mixture until everything is well mixed. Test the consistency of your dough; you are looking for a texture similar to light pie dough. It should form into a ball without sticking to your hands and hold its shape without cracking if you press the dough ball lightly with your thumb. If the dough feels too sticky, add a little more flour; if it is too dry or is cracking when pressed, add another couple pats of butter. Taste the Lefse dough as you go; it should taste like potatoes, not flour. The dough should be slightly salty and buttery, but be careful not to overdo it on the salt. Warm your griddle to 400°F/200°C. If you are using a traditional lefse griddle, remember to place it on a surface that will not be damaged by the high level of ambient heat. (IMPORTANT: The heat from your lefse griddle could cause your stone countertop to crack or your laminate countertops to delaminate. It is recommended that you use something to cover your countertop to help dissipate the heat.) Form the finished potato mixture into balls about the size of a golf ball. Flour a pastry board covered with a pastry cloth and rub the flour into the cloth. You want enough flour so your lefse will not stick but not so much that your lefse is completely covered in flour. Roll out your lefse on your pastry board until it is 1/8-inch thick. Using your lefse stick, transfer the lefse to your griddle. Cook on the griddle until bubbles form and each side has browned. Place the lefse on a damp towel to cool slightly and then cover with a damp towel until ready to serve. If you are storing the lefse, after it has cooled, fold it in quarters and place 8-10 sheets into a one-gallon freezer bag. Store in your freezer for up to three months. To thaw, remove from freezer, place on a plate covered with paper towels, and allow to reach room temperature. (Note: Can be eaten with butter and sugar.)

am often asked for this recipe, so I wanted to share it again. It is super fun and a bit decadent! Sometimes that means “complicated” but this dish is not complicated to make at all. You will enjoy preparing it and everyone will love it’s rich and luscious texture. If you can’t find Cavatappi pasta (the cork screw), you could also use elbow macaroni or penne. Don’t use bow-tie though because it won’t hold up. :( • Kosher salt 1 pound Cavatappi pasta 1 quart whole milk 8 tablespoons (1 stick) unsalted butter, divided 1/2 cup all-purpose flour 1/4 cup Cognac (optional) 12 ounces Gruyere cheese, grated (4 cups)

8 ounces extra-sharp white cheddar, grated (2 cups) 1/2 teaspoon freshly ground black pepper 1/2 teaspoon freshly grated nutmeg 1 1/2 pounds cooked lobster meat 1 1/2 cups fresh white bread crumbs (a day old baguette in a food processor works well)

Preheat the oven to 375 degrees F. Bring a large pot of well salted water to a boil. Add the pasta and cook according to the directions on the package, 6 to 8 minutes. Drain well. Gently heat the milk in a small saucepan. In a separate large pot, melt 6 tablespoons of butter and add the flour. Cook, stirring with a whisk, over low heat for ~ 2 minutes. While whisking, add the hot milk and cook, stirring, for a minute or two, until thickened and smooth. Add the cognac (if using) and simmer for 1 minute. Turn off the heat, add the Gruyere, White Cheddar, 1 tablespoon salt, the pepper, and nutmeg. Add the cooked pasta and lobster and stir well. Place the mixture in 6 to 8 individual gratin dishes. Melt the remaining 2 tablespoons of butter, combine them with the fresh bread crumbs, and sprinkle on the top. Bake for 30 to 35 minutes, or until the sauce is bubbly and the macaroni is browned on the top. •
