hat a way to kick off the season! Last week, we entertained over 150 activity directors and park managers at our 8th Annual Connection Fair. This event allows attendees to make quick connections with tour operators, event sites, and service providers from across the Rio Grande Valley. Immediately after the show, many of us packed our bags and headed to the island for the weekend for our annual Activity Director Boot Camp. In the weeks to come, we will give you tidbits from our adventures, but we also encourage you to ask your activity directors about it! Ask them to schedule some group outings or to give you advice on where to go and what to do across the Rio Grande Valley. We’ll also be visiting other area attractions over the next few weeks, so be sure to stay tuned on our latest adventures with your PMs and ADs. What does all of this mean for you? It means new ideas, new tours, and new activities brought straight to you. We want to make this your best season yet, and we know keeping your activity directors informed is the first step in that process! Free Things to Do at the Rio Grande Valley Birding Festival Special to Welcome Home RGV

The

Rio Grande Valley Birding Festival is going on in Harlingen at the Harlingen Municipal Auditorium November 9-12. The free schedule is full of activities, from walking the 60-booth trade show (called Birders Bazaar) to participating in a bird walk at Ramsey Park to attending presentations. Thursday offers the Birders Bazaar at the Casa de Amistad wing of the Harlingen Municipal Auditorium, 1204 Fair Park Boulevard. Vendors from tour companies, wildlife refuges, local nature organizations, optics companies, and everything “birdy” will delight your senses and quest for adventure. The Bazaar hours are from 12-noon to 6 p.m. At 1:00 p.m. and 3:00 p.m. is a flight show with educational birds by The Raptor Project. Friday offers a repeat of Thursday plus a special presentation on Birding the World at 2 p.m. Seven tour guides will talk about the birding opportunities in their respective countries, just in case you have wanderlust. their countries, you can get further information at their booths in the Birders Bazaar. Saturday begins with a free family bird walk at Ramsey Nature Park, 1001 S. Loop 499 in Harlingen. Meet in the Ramsey Park parking lot at 9 a.m. for a two-hour guided stroll through the park. Or you might want to see an hour-long presentation at

11 a.m. on raptors in the auditorium, including a flight show. Or maybe you want to join in the “Big Sit” adjacent to the parking lot with the Bay Area Birders. All day, they will be counting birds that are sighted from within a 17’ diameter circle. Come spot birds, get a button, and maybe win some prizes! Plus, the Birders Bazaar will run from noon to 6 p.m. again. If your motor is still running, you can grab dinner from one of the many food trucks outside the auditorium and eat dinner in the adjacent Lon C. Hill Park. At 7 p.m., the bands will officially start playing for Harlingen’s Blues on the Hill night, but be prepared to be entertained starting at 6 p.m. by some special local talent. Maybe even do some two-stepping! Sunday is the final day of the Birders Bazaar, which will be open from 12noon to 4 p.m. The Raptor Project will perform in the Bazaar for the last time during this festival at 1 p.m. and 3 p.m. So much to do, so little time… •

Located at the entrance of the MMA Parade Ground, the Iwo Jima Museum & Gift Shop is a small house packed with big history. Visitors will not only learn more about the Battle of Iwo Jima and Marine flagraiser Cpl. Block, but they will also delve into general World War II history and even some Korean War and Vietnam

BBVA Compass Foundation awarded the International Museum of Art & Science a grant for $2,500 toward its 3-D cinema. The only dedicated museum cinema in the Rio Grande Valley, the 3-D cinema will enable museum visitors to view science, natural history, and cultural films in both an educational and entertaining way. “The museum is very grateful to receive this generous grant from the BBVA Compass Foundation,” said Serena Pandos, IMAS interim president. “The 3-D cinema will raise our museum experience to an unprecedented level of fun and enrich our ‘edutainment’ mission, which seeks to engage people of all ages to have fun while learning.” Presently there are no dedicated museum cinemas in South Texas

other than the military-focused USS Lexington Theater in Corpus Christi, which is two hours away from the Rio Grande Valley. Some of the most recognizable names in the museum and immersive cinema business are involved in producing the types of movies that will be shown in the 3-D cinema: BBC Earth, Giant Screen Films, K2 Communications, National Geographic, and SK Films. The project will give the community access to a library of award-winning educational films covering a wide range of STEM and natural history curricula: space, oceans, weather, prehistoric life, ancient culture, and engineering, as well as world cultures. •

South Texas Health System to Build

New Freestanding Emergency Room in Alamo Special to Welcome Home RGV

South Texas Health System (STHS) officially signed an agreement with the City of Alamo and the Alamo Economic Development Corporation to build its sixth freestanding emergency room, known as STHS ER Alamo. Construction on the new emergency room is slated to start in early 2018. The freestanding emergency room will bring the total number of ERs at all STHS facilities to 10. STHS ER Alamo will feature nine treatment spaces, including six examination rooms, three triage bays, an internal waiting area, advanced imaging services, such as computed tomography (CT), ultrasound, X-ray, and digital radiography, and an onsite laboratory. The 10,000-squarefoot facility will be capable of

treating general emergency cases on an outpatient basis, as well as trauma and observation care up to 24 hours. Patients requiring surgical intervention, a higher level of care, or an overnight hospital stay will be stabilized and transferred. “We are pleased to meet the needs of Mid-Valley residents by offering high quality, efficient medical care,” said Douglas Matney, vice president of ambulatory emergency services. “The number of patients seeking care in the Weslaco and

Santa Golf Course is a public course and is among the most beautiful in the country, thanks to the unique tropical setting of the Rio Grande Valley. It has wide spaces, natural growth, and a fantastic layout for both the champion and the rookie player. It is a course you will play again and again and enjoy every time. The course was built and designed by Jeff Brauer, with the help of Steve Elkington. It opened in 1997 for play. In addition to being an excellent course for golf, it is also a perfect setting for an outdoor wedding, complete with a waterfall in the background. The facility has a large dining room suitable for corporate meetings. The restaurant is full-service and can satisfy the golfer with a sandwich and drink following a round of golf or prepare a banquet-style meal. The fairways are 419 Bermuda grass while the greens are Champion Bermuda. The course has sand traps strategically placed on every hole. Water plays an important part of your golf experience on this course

as there are a number of lakes. The front nine is set among a planned residential development community, with some beautiful large homes of varied architectural designs. The back nine is more open, with larger and straighter fairways. But you need to be alert or the traps, swales, howling winds, and mounds will bite you! The course has four sets of tees with 72 par. Three are rated for men: 7139 yards rated at 73.6/124, 6601 yards rated at 70.8/119, and 6045 yards rated at 68.2/110. Yardage of 5313 is rated for women at 71.2/121. This course is located in South Weslaco at 1901 Club De Amistad. David Martin is the general manager, and Joey Rios is the director of golf. Call 956-973-1811for tee times. Veterans’ Memorial at Pendleton Park Special to Welcome Home RGV

2007, upon the death of Harlingen native PDC Darrell Shipp, who was killed in Iraq, Harlingen citizens began meeting to organize and to find a venue where they could honor all veterans from Harlingen. Leaders from the community began to raise funds, and coordination with the City Parks Department began. First Responders would also be honored. Pendleton Park on Morgan Boulevard was the logical location for the venue. Shortly after the approval of Pendleton Park, the Veterans’ Memorial Park Committee formed a nonprofit organization to support the venue. The project was officially opened during a Prayer Service, followed by the Dedication Ceremony, on Veterans Day, November 11, 2012. The Veterans Memorial at Pendleton Park offers a distinct location for your loved ones, living or deceased, in a designated area such as WWI, WWII, Korea, Vietnam, or the Middle East or in the section dedicated to Purple Heart recipients, American who were POW/MIA , or First Responders.

Our hope is the memorial will encourage family and friends to honor all those who served in all wars, in conflicts and during times of peace, all who gave the ultimate sacrifice, and those who were able to return home. We pray all veterans and their families will now be recognized for their sacrifice and service. Pavers are available to the public to honor veterans and organizations that have supported them. Quick and Easy Chicken and Dumplins’ Submitted by Linda Boddy, Paradise South

Quick and Easy Chicken and Dumplins’ • 1 sweet onion • 2 chicken breasts, diced • 1 whole garlic, chopped fine • 1 box chicken broth • 1 stick butter • 2 rolls/cans Grands Biscuits Sauté sweet onion, garlic, and butter until onion is transparent. Put in crock pot. In your crock pot, put diced chicken breasts and chicken broth. Cook until hot and steamy. (If you use a “Hot Pot,” cook for 15 minutes.) Then cut two cans of Grands Biscuits into fourths and add to the pot. (In the Hot Pot, it take four more minutes.) In the crock pot, put in for 45 minutes to 1 hour, until the biscuits are not doughy. Wonderful chicken and dumplins’! •

Marne graduated from Loretta Heights College in Colorado with a major in art. She taught for two years in Waupasa, Wisconsin, and 21 years in Bloomington, Minnesota. After earning a doctorate in school administration, she took over the job of assistant principal in charge of discipline for the 1600 students at Olson Junior High School (now Olson Middle School in Bloomington, Minnesota). One year during the summer break, Marne took a job as an artist on an archeological dig in Egypt. It is one of the most memorable jobs she has ever had because living conditions were extremely difficult and she worked in a tent occupied by four water buffalo and a donkey. She says she will NEVER forget that job! Since retiring, Marne has committed herself full time to her art and is a member of the Leech Lake Art League and the Laguna Madre Art League. She is currently a member of the Laguna Madre Art Gallery, located on Lighthouse Square in Port Isabel. One of her contributions to the Art League is working as chairperson, with

fellow artist Carol Thorson, on the Art League’s art show held in conjunction with South Padre Island’s Market Days. This season’s Art Shows at Market Days will take place January 5, 6, and 7 and February 23, 24, and 25 (2018). Marne paints in watercolors and pastels. Her art reflects her joy of color and composition. She often paints her subjects against a semi-abstract background, creating a refreshing focal point for her subjects, which often include birds and butterflies. Facts about Caregivers Family caregivers provide the vast majority of care to older people who need help with daily tasks. If you aren’t currently a caregiver, you either

have been or will be one. The latest statistics show there are 42 million family caregivers in America -- about one out of every five adults -- and that number will go up as the boomers age. About two-thirds of caregivers are women and one-third are men. These individuals typically work outside the home and care for a parent, most likely a mother, who still lives alone about 20 minutes away. In all, caregivers will conduct this labor of love for nearly five years and spend 20-hours a week doing the job. Many times, they will go into work late, leave early, or take time off at lunch to care for their loved one. Although caregivers come in all genders and all ages, they all share a deep sense of commitment and a willingness to help those who depend on them. U.S. Army Veteran Excels as RV Park Manager by Jess Merrill, Snow to Sun RV Park

Stence, community manager at Snow to Sun RV Park in Weslaco, comes from a long line of military veterans, including a retired admiral and a grandmother who was an Army nurse during WWII. Her Aunt Janine, a U.S. Navy linguist, now retired, learned 10 languages, traveled the world, and became Kelley’s inspiration. With the exception of her grandmother, Kelley’s military forebears were all U.S. Navy veterans, but she chose to give up her wild and crazy life after high school to join the U.S. Army, just to be different. Kelley performed exceptionally well on the Armed Forces Vocational Aptitude Battery (ASVAB) and qualified for linguistics training. However, the linguistics school had no openings. Not wanting to wait, she chose her second option, 35E Radio Communications Security Repair. She was accepted and reported for basic training at Fort Jackson, South Carolina, in September of 1997, followed by one year of rigorous training at Fort Gordon, Georgia, where she graduated at the top of her class. Kelley loved the Fort Gordon area, and, as luck would have it, she was assigned to her first duty mission there in Ordnance Repair Communication Devices. If not for breaking her foot, she would have been sent to Kosovo instead. During her off-time, Kelley took evening classes at Augusta University and worked part time as a bartender. In May, 2000, she was transferred to Fort Sill, Oklahoma, near Lawton, where she completed her contractual obligation with the military in June of 2001. Re-enlisting was a definite option. Kelley loved the Army life, and she enjoyed her

job, but a grandmother she dearly loved had passed away, and Kelley was terrified of losing other family members while she an overseas deployment. She returned home to Corpus Christi, went back to school at Texas A&M – Corpus Christi, completed a B.S. in psychology, and earned a teaching certificate. She secured a job at Carroll High School teaching English and reading to special education students. However, experience revealed that she didn’t like teaching. “Basically, it was a babysitting job,” Kelley said. The education system made no sense to Kelley; students ranged from untrainable to moderately trainable to completely functional, but they were all expected to perform well on the same standardized tests. “It made no sense,” Kelley said. Kelley resigned her teaching job while going through a divorce and returned to her parent’s home with her seven-year-old son. She found a position as a part-time mail clerk at Snow to Sun RV Park, but after three weeks, she was promoted to full-time office manager at a higher pay grade with benefits at Casa del Valle in Alamo. After two seasons, she was promoted to community manager back at Snow to Sun. Now, with a very successful season in hand, Kelley is beginning her second year at the park, getting to know all the residents by their first names. “I just love seeing them at Saturday night dances and other park functions,” Kelley said. “People are here to have fun and enjoy life. We have a new activities director, and we’re here to make their stay at Snow to Sun a great experience.” •

unto him, “What sign shewest thou unto us, seeing that thou doest these things?” Jesus answered and said unto them, “Destroy this temple, and in three days I will raise it up.” Then said the Jews, “Forty and six years was this temple in building, and wilt thou rear it up in three days?” But he spake of the temple of his body. When therefore he was risen from the dead, his disciples remembered that he had said this unto them; and they believed the scripture, and the word which Jesus had said. John 2:18-21 (KJV) This conversation took place just after Jesus had cleaned house at the temple. The balance of power had changed. Not everyone was happy about the way things were going. People were taking sides. There was division between the establishment and the common folks. “Who are you, Jesus? You aren’t a Levite or a Pharisee! Who gives you the authority to come in here and change the way we do things? Show us your credentials!” Jesus explained what was coming in just twelve words.

“Destroy this temple and in three days, I will raise it up.” Jesus had overturned their system. He implied that they would retaliate. Thus, he would be sacrificed to restore peace. In this, he identified himself as the temple sacrifice. By identifying his body as the temple, Jesus showed the body as a dwelling for the presence of God. The building was coming down. God was moving out of quarried stone to take up residence on the inside of every believer. Finally, he identified himself as God through the demonstration of power to raise the body from death. “...he that is joined unto the Lord is one spirit..” What? “…know ye not that your body is the temple of the Holy Ghost which is in you, which ye have of God, and ye are not your own? For ye are bought with a price: therefore glorify God in your body...” (1 Corinthians 6:17-20) Believe the scripture. Christ in you is your only hope. (Colossians 1:27-28) Father thank you for your presence and power living within us. Help us to reveal you to the world, that we may glorify you in our bodies. Amen. •

VIP La Feria Hosts Welcome Party Special to Welcome Home RGV

La Feria RV Park held our Welcome Party Friday, October 27, at 4:00 p.m. with a sports theme. All new and returning residents were invited to attend this fun, late-afternoon event. All residents were given a bag with goodies from Rio Bank in Harlingen, and VIP La Feria added a sports ball for the party. Sports Trivia was played and enjoyed by many who could think back in time and get the answers correct. We also had a time for ‘mixing’ and greeting new residents and refreshing friendships. The menu for the afternoon was ballpark food, which consisted of hot dogs with chili and cheese or ketchup and mustard, nacho chips with cheese, peanuts, soda pop, and bottled water. Door prizes from area businesses were plentiful, and more guests were able to win this year.

We really appreciate area businesses that are so willing to contribute great items to our park for this event and throughout the year. This looks to be a great year at VIP La Feria RV Park as there are a lot more of our residents already back and lots of new people staying here this season. With the hurricanes and the snow arriving up north, we are getting more reservations this year. If you don’t have a site reserved, now is the time to call and make your reservation. Serves: 6-8 • 2 pounds ground beef • 1 package taco seasoning mix • 1 ½ cups water • 1 (16 oz.) package tostados • 1 cup grated cheddar cheese • 1-2 small onions, chopped

• 10 ripe black olives, chopped • 1 tomato, chopped • 1 cup sour cream • 1 cup shredded lettuce • 1 cup guacamole or avocado dip

Brown ground beef in large skillet. Drain excess fat; add taco seasoning mix and water. Bring to boil; reduce heat; simmer for 25 minutes, stirring occasionally. Put tostados in bowl and remaining ingredients in individual bowls around table. Serve meat in pan. To make dish, start with tostados, then a spoonful of hot meat, cheese, onion, olives, tomato, sour cream, lettuce, and guacamole. natural Texas is home to all of us, no matter where we live. The natural Texas, the real Texas, is still to be found all across our state, from the wilds of rural areas to the squirrels in a city park to a wildflower in our backyard. But as Texas grows more urban, we hurry to keep up with the hectic pace of urban, and even suburban, life. And we don’t take the time to notice, enjoy, and ultimately conserve the natural resources all around us. Through the Texas Master Naturalist™ volunteer program, you can help children and adults in the Rio Grande Valley learn about the region’s natural resources, inspire them to a new appreciation of our unique local environment, and ensure that others will be able to enjoy the natural Texas for years to come. M. Lee Brown, president of the Rio Grande Chapter, encourages community members to register for the training saying, “Our membership is a diverse group, with a variety of interests, who share a common goal of conserving the native habitats in the Rio Grande Valley. The program offers lifelong learning opportunities for adults of all ages who are interested in the natural

world and provides a wonderful way to meet people while volunteering to conserve our native plants, animals, and local ecosystems.” In the Texas Master Naturalist program, which is sponsored by the Texas Parks and Wildlife Department and Texas A&M AgriLife Extension, you will enhance your love of nature with research-based, scientific knowledge. You will receive at least 40 hours of in-depth training in wildlife and natural resource management taught by recognized experts in the field, customized to focus on the native ecosystems of the Rio Grande Valley. You will also have the opportunity to complete at least eight hours of advanced training in special subjects that interest you. In return, through our Chapter’s many partner organizations, you will provide our community with at least 40 hours of volunteer service annually in the form of educational activities, projects, or demonstrations. You might serve on a speakers’ bureau to make presentations to community organizations, or you might introduce children to local plants, insects, and animals through school field trips. You might serve as a guide at a local nature center, or you might build

Make Better Nachos

loves nachos. It is a favorite almost everywhere in the country. Follow this method and make sure your happy hour guests go home thinking you made the best nachos ever. This is not so much a recipe but rather a way to make the best nachos. I’m sure you have seen nachos where ingredients are piled on taco chips, sprinkled with cheese, and tossed in the microwave. The problem is that the ingredients do not get distributed evenly on all the chips. Some folks get a bunch of goodies, and some chips are bare. Try this method to make sure every chip is perfect. Let’s assume your nachos will have hamburger, refried beans, and some sort of salsa on them, followed by cheese, and maybe a selection of additional toppings. First, prepare your hamburger as if you were making tacos or as you normally would do. I use a pound of hamburger and a packet of taco seasoning. Follow the directions to brown the ground beef, and remove excess grease, if any. Add a can of refried beans to the cooked beef, along with a quarter cup of your

favorite salsa. Heat the mixture, stirring as you go. This ratio of meat, beans, and salsa makes a spreadable mixture. Line a cookie sheet with foil to make clean-up easier. A non-stick pan would also work. Use a spatula or kitchen knife to spread a dollop of the meat-and-bean mixture on each chip. Place them in a single layer on the sheet. Add shredded cheese of your choice to each nacho. Bake in a 400-degree oven until the cheese is melted. Watch to make sure the chips do not burn. Which cheese to use is up to you, but the most often-used cheeses are ones that melt easily like cheddar, Monterey Jack, mozzarella and even Gouda or Muenster. Either add additional ingredients or serve as is, and allow individuals to add their choice of toppings themselves. Toppings can include diced tomatoes, sliced ripe olives, chopped onion, fresh or pickled jalapeños, sour cream or Crema, or any other ingredients you choose. Follow this procedure and each nacho will be covered with the “good stuff.” Enjoy! Buen apetito! •

Robotic Orthopedic Institute hosted a live total knee replacement surgery Wednesday, October 25. Dr. Raul Marquez and his surgical team performed the surgery at Cornerstone Hospital on a female patient. A large group of attendees watched the procedure live, with narration provided by Dr. Marquez’s surgical assistant, Eddie Hinojosa. Several educational seminars are provided throughout the season. Another live surgery is scheduled for January 11, 2018. The NAVIO Surgical System is a tool Dr. Marquez uses to correctly size and position the total or partial knee implants with computerized and robotic precision, ensuring the best possible outcome for each specific knee. This robotic system assists the doctor with optimal information, which is precise and accurate, crucial for the

success of the surgery. Dr. Marquez removed his spaceage-looking, infection-controlled surgical suit following the surgical closing to speak to the attendees live and answer any questions potential surgical patients had. Medical students attended, as well as a number of Winter Texans and 1st Responders, plus the patient’s family, creating a wide range of technical, educated, and personal questions from the group. A catered lunch was provided outside the hospital for all attendees, with an opportunity to meet Dr. Marquez, his wife, Dr. Parra, the anesthesiologist, and surgical staff, Roxanna Godinez, CEO of the hospital, Marla and Kristina, marketing directors, and the NAVIO Surgical System representatives, who are very knowledgeable on the Journey II system. •

enforcement, EMS, first responders, and the general public attended the Brush Country Medicine and Survival Conference held Saturday, October 28, at the Edinburg Conference Center at Renaissance. Numerous doctors covered topics such as proper footwear to prevent blisters and foot injuries, emergency back-country splinting of arms and leg injuries, hearing protection to prevent hearing loss, gunshot wounds, insect and snake-bite treatment, plus heat exhaustion and heat stroke prevention and treatment. Additional professional speakers also presented to attendees. Game wardens discussed their professional scope--they are also state police— and ham-radio operators explained their expertise in natural emergencies when communications systems are down due to loss of our infrastructure and power grids. Legal discussions covered license to carry and new laws added in September. Weather information, such as climate, flash floods, and lightning strike education was provided by Tim Smith from KRGV Channel 5. A bug-out bag and

its uses and contents were shared by Ivan Trevino, who has extensive experience in natural-disaster rescue. Sr. Deputy Dan Fuentes from the Hidalgo County Sheriff’s Office discussed their extensive HCSO-EMP training courses that work in unison with other branches of EMS and lawenforcement agencies. He also shared the K-9 and buddy-aid considerations when working with these valuable canines. Air Evac demonstrated a helicopter landing, and their air crew offered a tour of the helicopter, which is invaluable for remote rescues. Videos of several uses of drones for law-enforcement, fire departments, and search-and-rescue were shown, and there was a live outdoor searchand-rescue demonstration. •

Public Library has launched an exciting new service for McAllen Public Library cardholders. The new service, Lit Kits, allows patrons to check out kits that contain everything needed to conduct a book club on your own. Lit Kit containers include up to 16 titles of the same book, a book club discussion guide with questions for use by the book club facilitator, a tracking guide, and other materials. Lit Kits can be checked out for six weeks, with a one-time renewal option, and are available for check out at the Main Library. “The library already offers book clubs for the community,” said Kate Horan, library director. “We know they are a popular and well-attended service. We are now offering Lit Kits to expand the reach of the library and to facilitate book club discussions throughout the city. Our goal is to make it easy for those interested in starting a book club and to offer existing book clubs a broad selection of titles for their enjoyment and use.” A total of 20 Lit Kits will be available and include popular titles, such as The Alchemist by Paulo Coelho, To Kill a Mockingbird by Harper Lee, and The Storyteller by Jodi Picoult. Chicken or Turkey Tortilla Casserole Preheat oven to 350 degrees. Choose 3 cans of soup from the following: Cream of Mushroom, Cream of Potato, Cream of Chicken, Cream of Celery, or Cream of Broccoli • 1 -2 cups of sour cream • 1 package of flour tortillas, torn into strips or small pieces about the size of a half dollar • 2 chicken or turkey breasts or Turkey breasts, cooked and diced/cut into bite-sized pieces • 1 cup shredded cheddar cheese Mix the three soups you chose and sour cream with a whisk. Using a 9 x 12 baking dish or pan, layer the following items until you have used all of the ingredients: Spread a layer of soup mix on the bottom. Add a layer of torn flour tortillas. Add a layer of chicken. Repeat two more times. Then top with tortilla strips. Bake 45 minutes. Remove from oven and spread the shredded cheddar cheese on top. Return to oven for five minutes until cheese is melted. Serve warm with green beans and rolls. Option 1: You can add a can of green beans or peas to the mixture. Option 2: You can divide the recipe into two smaller sizes and freeze one. Great to have on hand for an emergency. I have frozen this, cooked and uncooked.

26, Oleander Acres RV Park held a special Naturalist Day event. The outing was very nicely attended, and those of us there viewed and learned a great deal. We could see and understand the Butterfly Garden at the park and the many types of plants and bushes the butterflies enjoy. The staff-Seth, Cande, and Perly--are very knowledgeable and had a lot of fun explaining the life of a butterfly. The garden itself is three years old and starting to really fill in. According to Seth, there are now approximately 250 plants in the garden. Seth took us around the garden and stopped to explain the various

plants and their purpose. Cande demonstrated a large leaf bearing a cocoon and talked about the caterpillar. No one needed to show the butterfly, as they were everywhere. I personally never knew there were so many varieties. Perly showed us, via a netted environment, the cycle of life. If you have not seen the Butterfly Garden at Oleander Acres, drop by and look; it is located on the south end of the park. You will not be disappointed. November 18, there will be a special butterfly event at the park, so be sure to attend. I know you will enjoy it. •

Clam Chowder

recently visited Boston with my girlfriend Joanne – each Autumn we pick a new city and take a very fun girl’s trip. This year we chose Boston. What a fabulous city and the food is truly remarkable. I pretty much ate my weight in lobster and New England Clam chowder for about 5 days. I was feeling nostalgic for that today so I thought I’d share this yummy recipe. This is a classic comfort soup that most everyone loves. Creamy, velvety goodness together with luscious clams and bacon - what is not to love? This is not difficult to prepare either and if you want to make it even easier, you can substitute a can of good quality chopped clams for the fresh ones in the shell. It will be just fine. I would pair this delectable goodness with a nice creamy chardonnay, such as La Crema. • 3 pounds littleneck clams, scrubbed 6 slices thick-cut bacon, diced into lardons 2 tablespoons unsalted butter 3 stalks celery, finely diced 1 medium onion, finely diced 2 teaspoons chopped fresh thyme leaves

1/3 cup all-purpose flour 1 large russet potato, peeled and cut into 1/2-inch cubes 1 cup heavy cream 1 cup half-and-half Kosher salt and freshly ground pepper

Rinse the clams several times under cold running water and place in a large pot and add 3 cups water. Bring to a simmer over medium-high heat, then cover and cook until the clams open, about 6 minutes. Strain through a fine-mesh sieve into a large bowl; reserve the broth. Transfer the clams to a bowl and cover with plastic wrap, this will prevent them drying out. Cook the bacon in a large pot over medium heat until crisp, about 10 minutes; remove with a slotted spoon and drain on paper towels. Melt the butter in the same pot over medium heat. Add the celery, onion and thyme and cook, stirring occasionally, until soft, about 10 minutes. Add the flour and cook, stirring, 1 minute. Stir in the reserved clam broth, 1 1/2 cups water and the potato. Bring to a simmer and cook until the potato is tender and the soup thickens slightly, about 15 minutes. Meanwhile, remove the clams from their shells and roughly chop. Reduce the heat to medium low. Whisk in the half-and-half and cream and heat through, without boiling. Remove from heat and stir in the chopped clams; season with salt and pepper to taste. Ladle the soup into bowls and top with the reserved bacon. •
