It’s hard to believe the season is

coming to an end. What fun we’ve had over the last six months! I take that back; what fun we’ve had over the last 10 YEARS!! It’s been fun reflecting on how far we’ve come in those 10 years but even more exciting thinking about what’s next. I would like to ask a favor of all of you as you make your plans to head home--HOMEwork, if you will! I’d like to ask each and every one of you to help us spread the word about how much fun the winter is in the Rio Grande Valley and try to bring some friends back with you next season! Ask your managers if they have any specials for first timers and take area literature home with you. It’s no doubt that you come to the Valley for the sunshine and great weather and because it’s so affordable, but you also come back year after year because of the people you meet and the friendships that bloom and flourish. The Valley is a wonderful place, I thank you for allowing us into your lives. For those of you getting ready to head home this week, we wish you safe travels! • We’re just connecting the dots,

Food-Packaging Event Held at Leisure Valley Ranch Special to Welcome Home RGV

Taking a stand against hunger in

the Valley. This is what the Leisure Valley Ranch in Palmview hoped to do by hosting a Kids Against Hunger food-packaging event February 10, and what a success it was! Working with the KAH satellite from Corpus Christi, and with the help of donations and volunteers, nearly 34,152 meals were assembled in a few hours and distributed to eight area food pantries and churches. Ingredients were rice, soy protein, dried vegetables, and a chickenflavored vitamin formula, which supplies the optimum amount of daily nutrition for six children.

Trophy Gardens took first place in

the Senior Division and first place in the Overall category at the Alamo Independence Parade March 3. The theme for the parade this year was Pirates. Trophy Gardens had numerous elaborately decorated golf carts in the parade, as well as their line dancers all decked out in pirate attire. Darrel Hardy, pastor at Trophy Gardens, was chosen Winter Texan of the Year, sharing the title with Joe Brayer, a Winter Texan who is 100 years young. •

Pat McGrath Avery Photography Display at Port Isabel Library throughout March

the month of March, Laguna Art League member Pat McGrath Avery will display her photography at the Port Isabel Library. Pat, an author and photographer, focuses on nature photography, especially the beautiful birds that live in, or visit, the Rio Grande Valley. In the 1970s, she brought her parents down for the winter and fell in love with the Texas coast. Now she is living her dream and spending her days with her fingers on her keyboard or with her camera in hand. “The Rio Grande Valley is a photographer’s dream,” Pat said. “The diversity, natural beauty, and culture blend into a unique setting. It’s easy to fall in love with the subjects I find. I am equally entranced by pelicans, roseate spoonbills, prickly pear cacti and yucca in bloom, and shrimp boats.” Pat lived in Laguna Vista for 10 years before her recent move to Brownsville. She frequents the island, Boca Chica Beach, the shrimp boatyards, and the area wildlife refuges, forever in search of the perfect shot. Some of Pat’s favorite pelican and spoonbill shots will be among the photographs featured in the Port

Birding and Photography Group Develops Birding Center at Snow to Sun RV Resort by Jess Merrill

Spearheaded by Sue Vick at Snow

to Sun RV Park, the Birding and Photography Group lists 19 members this season. Last year, the group began development of a Birding Center on a seven-acre plot at the back of the park. Sue donated six native plants; five of the six survived the summer. Glen Landwehr, her husband, built and installed seven green-treated benches for everyone’s birdwatching comfort. Sue and Glen have been residents of Snow to Sun eight years but just began the Birding and Photography Group last year. They initiated extensive development of the Birding Center this season, with advice and guidance from Tony Henehen, Texas Parks and Wildlife biologist. New planting of native species that will attract both birds and butterflies began in February and includes a mulberry tree, four varieties of sage, granjeno, coral bean, mistflower, lantana, and many others. Sue said she had help with planting from three surprise volunteers who are not even members of the group--Judy and Jerry Engelsman and Frank Hurt, who, while walking his dog, decided to stop and help. Each new plant is staked and labeled.

In addition to the new plantings, the group erected a bird blind with portholes for cameras and binoculars, stretched 600 feet of hose so birds will have access to fresh, running water, built up a brush pile in which birds can hide, and erected a fence to prevent mowers and golf carts from intruding in the bird area. Volunteers built the blind, designed by Glen, from a photo he took at Resaca de Palma. Those who helped build and put it in place were Snow-toSun residents Ken Sweat, Bob Kirk, Vern Cooly, and Jim Touet. Snow-toSun management shared expenses for the new blind and native plants with the Activities Department. “The entire area is designed so people with limited mobility will have access,” Sue said. “They can view

birds through the blind from their golf carts, electric chairs, or walkers. We’ve tried to make it accessible to everyone.” Among the more than 30 species of birds she has seen in the park this season are Curved Bill Thrashers, golden-fronted woodpeckers, ladderbacked woodpeckers, orangecrowned warblers, yellow-rumped warblers, eastern phoebes, vermillion flycatchers, lesser goldfinches, meadowlarks, Swainson’s hawks, Harris’s hawks, egrets, and a Mississippi kite that held a snake in its talons. In addition to developing the birding center at Snow to Sun, the group is committed to an outing every two weeks. According to Sue, there are usually about six people, but there have been up to 11 members who attend the outings. The group has gone to places such as the Salineño Wildlife Sanctuary, Falcon Dam, Roma Bluffs, Hugh Ramsey Park in Harlingen, Estero Llano Grande State Park, and Bentsen State Park. Group meetings, activities, and outings are open to all Snow-to-Sun residents, as well as residents of

Celebrating Bill Pitkin: A Prince of a Man Special to Welcome Home RGV

Bill Pitkin has many aliases here

at Bit-O-Heaven and in the Valley. Also known as “Cookie Bill” or “Coffee Bill,” he began his journey March 31, 1924, in Ridder, South Dakota, where he lived and worked on his parents’ farm. Bill later purchased that same farm and house, living there for 82 years. He raised a family, which includes four wonderful daughters. Bill served in our armed forces and was a mechanic when he wasn’t farming. Bill will tell you he once was asked to rebuild a carburetor on a 1926 Auburn, estimated as a quarter-of-a-milliondollar car at that time. In 1983, after the crops were harvested, Bill started coming down to the Valley and has returned every year since. He drives himself, taking the lesser-travelled roads, starting in late August or September and, with some reluctance, returning to South Dakota in May each year. Bill tells us that when he first visited the Valley, it cost a nickel to get across into Mexico and two cents to return. He recalls that all of the streets, and many of the building floors, were

dirt, and fresh meat often could be seen hanging on storefront poles. Bill enjoys square dancing and often travelled to Reynosa, showing off his moves. He moved to Bit-O-Heaven in 2000 and remains a beloved resident. Bill also remains active at church, where he is a trustee for our Bit-OHeaven congregation. Every Wednesday and Saturday, Bill bakes hundreds of molasses (or sorghum) cookies, which he offers for free to the morning coffee groups at the Park and after church service. He also does Swedish weaving and has taught it to many residents. Bill completes an afghan monthly. When asked how many afghans he has made, he says he stopped counting after 200 or so, and that was in 14 years! Bill gives all of his work--cookies and afghans--away. Bill shies away from politicians and doctors. He will reluctantly tell you that giving away his cookies and afghans makes him feel good; therefore he needs no doctor! Grove Resort (BGR) in Palmview is widely known for its great variety of activities, excellent facilities, and proximity to the Bentsen Rio Grande State Park, one of the top birding centers in the country. The BGR website lists 35 popular activities, but there are more, including new ones this year. Facilities include four recreational halls hosting many sports, craft classes and shows, dance lessons, weekly entertainment, auctions, numerous games, and food service. BGR has an indoor and outdoor swimming pool, a fitness center, horseshoe pits, shuffleboard courts, pool tables, table tennis tables, a chipping and putting green, organized tours, and much more. BGR is a very active resort, and that means it is a leader in the fastest-growing sport in the country – pickleball. Some RGV resorts have outdoor pickleball courts, but on a rainy or windy day, pickleball cannot be played. BGR has long had one of the few indoor pickleball facilities. Due to this, the Pickleball Club has grown to over 140 members. BGR

ownership recognized the appeal and need for a larger facility. So this year, BGR resident players are thrilled to enjoy a new heated and air-conditioned pickleball building with two courts, with restrooms and bleachers, in addition to the existing indoor court. BGR now has the capacity to satisfy more pickleball players, offering various levels of scheduled training and play, from beginner to competitive. Bentsen Grove Resort invites Valley residents and people considering becoming Winter Texans in the Rio Grande Valley to come experience BGR pickleball. A one-day visitor pass is available to those interested in experiencing the new facility and considering becoming a BGR resident. Staff will be happy to put you in contact with a Pickleball Club member who can host your visit. Quinta Mazatlan to Host McAllen Monarch Festival Special to Welcome Home RGV

The McAllen Monarch Festival will

take place Saturday, March 17, from 10 a.m. to 3 p.m. at Quinta Mazatlán. The festival will focus on educating the public about monarch butterflies (Danaus plexippus) through familyfriendly activities, such as arts and crafts, music and dancing, face painting, garden walks, informative speakers, and scout activities. The festival will also have food and native-plant vendors. Children and adults will learn about the life cycle of these amazing and iconic insects. Monarch butterflies were adopted as the official State Insect of Texas in 1995. The iconic butterflies migrate through Texas on their way to Mexico; however, their population has dwindled by more than 80 percent in the last 20 years. This is an incredible loss to the species and can be attributed to the degradation and loss of summer-breeding habitat in the United States and wintering habitat in Mexico. Every citizen in the City of McAllen and across

the Lower Rio Grande Valley can make a difference starting in his or her own backyard through smart landscaping techniques and nativeplant propagation. Help the City of McAllen return the monarch butterfly to its once-historic population. The festival fee is $5 per person (ages 2 and under, free) and no advance reservation is required. Reaching the Goal

spent last summer paddling down the Mississippi River, with my son, from Lake Itasca, Minnesota, to the Gulf of Mexico. While on the river one day, my glasses broke. Having a “poor-me” moment, I started thinking, ‘I hope they don’t fall off; I hope they hold together.. what if I lose the lens?’ Well, what to do in the meantime? Paddle – not be discouraged, but work with gusto, enjoying the scenery, scanning the river for obvious dangers and trouble yet keeping an eye on the goal, knowing this was a possible and acceptable risk--it just might happen, and you deal with it when it does. You can’t complete a successful plan by worrying about or focusing on obstacles and what may happen; you need to focus on knowing your goal and working toward it. What if we faced life the same way? What if we spent our time enjoying the scenery and focusing on the goal of heaven instead of trying to tiptoe our way around obstacles and worrying about what may happen in the meantime? We tend to hyperfocus on people who may (or have) hurt us, situations and arguments

that hold us back or frustrate us, and obstacles and stumbling blocks that only serve to keep our eyes off the goal. Focusing on my goal of eternity in heaven won’t keep this world from trying to pull me down or pulling me under, on occasion. But I can’t let that fear of what may happen to me keep me from paddling with all I’ve got, loving and living big and loud, pouring God’s love, and sharing my goal of heaven along the path. I must be smart and avoid obvious pitfalls, but I have to accept there are acceptable risks. It will happen at some point, and God will continue to be faithful, providing His people and His comfort in my time of need. So I continue paddling in my life, with my eyes on my goal, not on the pettiness and mess around me. If you happen to see me sprawled out along the way, I may need help to my feet. I may need encouragement and comfort while I reenergize. But I invite you to come alongside me, “running” this race with perseverance, fixing our eyes on Jesus, working together toward the goal. •

Meet Kristy Meyer ••• My name is Kristy Hallock Meyer. I was born and raised in McAllen. I grew up in the middle of a citrus orchard my grandad and dad farmed for many years. My love of travel came from the many family vacations my parents took me on as a child. The best one was the cruise we took for my high school graduation. From that point on, I was hooked on cruising! I have now been on more than 30 cruises! After graduating from high school, I knew travel was my passion, so I enrolled in Pace Travel Academy in Austin. Soon after, I landed my first job as a travel agent. I worked as a travel consultant for many years, later managing a local travel agency for nine years. After the horrific events September 11, 2001, the travel world experienced many changes. The travel agency I had loved and managed for so long decided it was time to close. I then had the opportunity to work for a nonprofit organization that helps abused children here in the Rio Grande Valley. This experience certainly opened my eyes to a different world, a world I had never seen. After eight years and a lot of soul searching, I decided it was time to get back to my passion...TRAVEL! I am married to Bobby, the love of my life, and between us we have four wonderful children. I am one lucky girl because Bobby loves to travel as much as I do! Bringing Joy to Our Veterans Blossoms into Free Gospel Sing-Along Special to Welcome Home RGV

The Patriots are a group of people

who love their country and love their Lord. They are singers from park church choirs at Casa del Valle and Bibleville, both in Alamo. Each one of the Patriots was handpicked by entertainer Paul Pagel. Paul has entertained in the Valley since 2006, playing at happy hours, shows, and dances and even appearing at BorderFest with his five-piece polka band, Midwest Bellows and Brass. Currently, Paul limits his appearances to assisted-living facilities and the Alfredo Gonzalez Texas State Veterans Home in McAllen. Paul plays the keyboard and sings. His fellow Casa-del-Valle resident, Larry Meeks, an active and seasoned ‘barbershopper,’ sings harmony and adds groaner-type humor between songs. The enthusiastic Patriots join

the singing and give the vocals a complete sound. As the Patriots had hoped, the entertainers are not the only ones who sing. The residents are the ones who turn the event into a true sing-along. Veterans have expressed that they are happy to feel a part of the event and truly enjoy singing along. Although the Patriots often share their copy of the lyrics with a resident, it is not unusual to see a resident who knows all of the words to all of the songs, by memory! This winter, the Patriots have volunteered four times at the Veterans Home, and it has been a very gratifying experience to entertain those who served our country. The staff told us that attendance at Patriot performances has risen dramatically. The feedback from residents reflects

their sincere appreciation. They know and enjoy this type of music, and it brings back great memories. Some say the Patriots are the best entertainment they have ever had. One staff member said, “It’s great that you people bring Jesus to our residents---to God be the glory!” Because the Patriots have enjoyed great success this season, they want to share their songs with people in the RGV. They will present a free Gospel sing-along Monday, March 19, at 7 p.m. at Casa del Valle, 1048 N. Alamo Road in Alamo. One final note--this is a sing-

Pearland is the perfect playground

Coconut Sweets

• ¾ stick of real butter • 2 cups dry, unsweetened flaked coconut • ¾ cup sweetened condensed milk (not evaporated) • 2 drops of red food coloring (optional) • Whole roasted almonds for garnish Melt the butter in a large, heavy saucepan over medium heat. Add the coconut to the melted butter, stirring to mix well. Stir in the condensed milk and the food coloring (if you are using it). Mix, over the heat, for 7-10 minutes, stirring constantly so the bottom doesn’t stick or burn. Remove pan from the heat and let the mixture cool slightly. Once it is cool enough to handle, use your lightly buttered hands to form the coconut into “cookies” and place on a parchmentlined cookie sheet to cool completely, about an hour. Serve with cups of hot tea for a delicious treat. NOTE: Coconut is used extensively in Indian cooking, both in sweet and savory dishes. It adds flavor and creaminess. You can find unsweetened flaked coconut at specialty stores, such as Sprouts. Regular baking coconut is sweetened and more moist.

Visit the Edinburg Scenic Wetlands & World Birding Center (EWBC) in March and April for a series of family-friendly survival sessions presented by Texas Master Naturalist and survival expert Neil Cassady. This program is a simple and practical guide to dealing with probable emergencies. Dates and topics are: March 24 – Communications, March 31 – Cutting Tools and Techniques, April 7 – Containers and Combustion, April 14 – Cover and Cordage. Each session includes a hands-on component. The program runs from 10 – 11 a.m. on each date. The fee for each session is $2 for non-members; members are free. A Closer Look at Oklahoma’s One-of-a-Kind Museums See outlaw guns, Egyptian mummies and the world’s largest collection of Western art

Throughout the state of Oklahoma,

fascinating museums dot the landscape. These showplaces take visitors inside the state’s history and culture, display works from legendary artists, and showcase carefully cultivated, one-of-a-kind collections. Many of these cultural jewels reside in the state’s capital city. In Oklahoma City, visitors can see a colorful collection of Dale Chihuly art glass--including a 55-foot tower in the atrium-- at the Oklahoma City Museum of Art. The nearby American Banjo Museum has one of the world’s largest collections of banjos and regularly hosts performers of the stringed instrument for jam sessions. The National Cowboy & Western Heritage Museum, meanwhile, is dedicated to preserving the spirit of the American West and features a wide-ranging collection of Western

art and artifacts. Just north of Oklahoma City--and not far off Interstate 35--is Guthrie. The city was Oklahoma’s capital during its days as a territory, and today it celebrates its rich history with several museums. Visitors can learn about Oklahoma’s frontier days and the land run at the Oklahoma Territorial Museum & Carnegie Library and the Oklahoma Frontier Drugstore Museum & Apothecary Garden. East of Oklahoma City in Shawnee, travelers will find one of the state’s oldest museums. Founded in 1918, the Mabee-Gerrer Museum of Art focuses on ancient art from around the world and is the only museum in Oklahoma where visitors can see ancient Egyptian mummies. Tulsa is another city filled with worldclass attractions. There are two art museums, the beautiful Philbrook

Some of the food was cooked and sampled during the event, and all agreed it was tasty. Dr. Cecilia Rhoades, coordinator of the KAH satellite, said, “Thanks to all of the volunteers who, by their efforts, helped feed people in the Mission region. Museum of Art and the Gilcrease Museum, which contain the world’s largest collection of art and artifacts of the American West. There’s also The Sherwin Miller Museum of Jewish Art, with a collection that includes three gorgeous stained-glass windows and a moving Holocaust exhibit. Another popular attraction is the Tulsa Air and Space Museum, where the exhibits include full-size fighter jets and a cockpit trainer. Located northeast of Tulsa, Claremore offers several one-of-akind museums. At the Will Rogers Memorial Museum, which honors the late Oklahoma humorist and actor, visitors can see memorabilia from Rogers’ life, watch his movies in the museum’s theater, and pay their respects at his tomb. The nearby J.M. Davis Arms & Historical Museum contains the largest privately owned

collection of firearms in the world. Among its treasures is a gallery of outlaw guns, including weapons belonging to Jessie James and Charles “Pretty Boy” Floyd. Those traveling with kids will want to make time for a visit to Leonardo’s Children’s Museum & Adventure Quest, a hands-on museum in Enid with interactive, educational activities and an outdoor science playground. Enid, only a 30-minute drive from Interstate 35, is also home to Simpson’s Old Time Museum & Skeleton Creek Productions, where travelers can tour a movie set and see an extensive collection of Western memorabilia. Walkin’ Proud

Wisdom: I take a lot of pride in being myself. I’m comfortable with who I am. ~James McAvoy I recently saw a lady on the road in front of my house, strolling slowly by with the aid of a walker. She was obviously of advanced age and moving with some degree of difficulty. I did not know her. My only thought about seeing her was that it appeared to be a challenging situation, but she must be a tough lady to even get out and take the walk. Then she, and the moment, passed. It later occurred to me that I had not really “seen” her. I had only observed her, like I observed a bird fly past or a leaf fall from a tree. The moment was irrelevant, just background noise in my own life. What if I could have really seen her? What if we all carried a banner with us that told our story? What if I could have read that banner as she passed and seen, “Survived the depression, veteran, mother, lost my first husband in 1973, nursed my second husband through five years of dementia, beat

cancer, twice, was a nurse,” and a hundred more things that really defined who she was. Would her passing on my street have been so irrelevant, or would I have honored her with a salute and a hearty greeting? One thing I have learned, especially in my long career working with older folks, is that everyone has a history of a significant life. Every story is unique, which makes them all interesting. Our stories make us significant. The good things, the bad things, the accomplishments, the trials, they all make up our book, or our banner, if you will. They make for some pretty interesting reading, and I wish I could have read my walker lady’s story. There is an old song from my younger life that was a regional hit by the Pete Klint Quintet. The song was titled Walkin’ Proud, with lyrics that described a bunch of negatives that were happening, but that the guy was still doing life with his head held high. I hope my walker lady was walkin’ proud. We all should be. I’m just sayin.’ •

premiere vocal group, Cadence, is coming to the Valley next season, with one performance February 9, 2019, at the 1515-seat Harlingen Municipal Auditorium. This award-winning, a cappella ensemble produces the powerful, rich sounds of a full band using only four voices. Whether performing at sold-out jazz clubs and concert halls, music festivals, or corporate functions, the members of Cadence bring an infectious energy and uncanny verve to every song they sing. While the Harlingen date has just been announced, the only way to guarantee a seat at the popular group’s show is to buy a Harlingen Concert Association (HCA) 2018-19 season subscription. The Cadence concert is part of the Association’s 85th season of bringing world-class, live entertainment to the Rio Grande Valley. All shows begin at 7:30 p.m. Toronto-based Cadence has been wowing audiences across the continent and around the world since 1998. The group’s four criticallyacclaimed studio albums, Cool Yule (2011), Speak Easy (2010), Twenty for One (2005), and Frost Free (2000) have won, or been nominated for, numerous awards. This includes three nods from the JUNO Awards and 10 from the Contemporary A Cappella Recording Awards (CARA). Cadence’s live shows feature a hypnotic blend of complex harmonies, intricate arrangements, vocal dexterity, and just plain fun. On-stage antics and audience participation are par for the course at any Cadence show, as is a mesmerizing display of musical genius. Group members David Lane (baritone/bass), Ross Lynde (tenor), Lucas Marchand (tenor), and Kurt Sampson (bass/vocal percussion) each bring many years of training and performance experience to create a rich musical event. Hailing from Red Deer, Alberta, David Lane’s musical life began with piano lessons from his mother and as a member of his elementary school choir. In middle school, Lane also explored saxophone and drums, then went on to further pursue

vocal training. After high school, Lane left Western Canada to attend the School for Music Vocations in Iowa. It was here that he developed a love for jazz piano and vocalensemble jazz. While in college, he performed and played in a variety of student-led projects, ranging from beatboxing (a natural merging of his love of voice and percussion) to playing keys and singing in a Funk band. Lane has a Bachelor of Music with First Class Honours in Jazz performance from St. Francis Xavier University and a Bachelor of Music Education from Memorial University of Newfoundland. Ross Lynde’s musical training began in high school, where he played first trumpet and placed in the Top 5 at the Canadian National Stage Band Competition. Self-taught on piano, guitar, bass, and drums, Lynde has been involved with a variety of performances and productions ranging from rock bands to recording projects. Despite constant activity in the Toronto music scene, Lynde desired a deeper musical experience. He made the decision to enroll in the music program at York University and went on to study piano, vocal improvisation, world music (with Casey Sokol), and South Indian drumming (with mridangam virtuoso Trichy Sankaran). He graduated with a Bachelor of Fine Arts in performance in 1998 with the intention of pursuing his education degree but instead became the second tenor in the newly formed group, Cadence. Lynde now is fulfilling his dream by performing for audiences of all ages worldwide. Originally from Victoria, British Columbia, Lucas Marchand has sung on stage since the age of three. In high school, Marchand played keyboard and sang with the Vic High R&B Band. His time with the band is decorated with countless performances, including one alongside Martha Reeves. He went on to study voice at the University of Victoria, earning a Bachelor of Music with distinction. During his college years, he sang with the UVic Chamber Singers, touring and performing across four continents. In 2005, Marchand moved to Toronto and performed

as a tenor with the Nathaniel Dett Chorale for six seasons. During that time, the Chorale was chosen to represent Canada by performing at Barack Obama’s inauguration. Marchand has since built his own private voice-teaching practice and frequently travels to Los Angeles to study vocal pedagogy with renowned instructor Seth Riggs (Stevie Wonder, Michael Jackson, Luther Vandross, and others). He also completed a master’s degree in music education at the University of Toronto before joining Cadence in January 2012. Kurt Sampson, a native of Charlottetown, Prince Edward Island, began his musical endeavors at the age of 11. A child with a wide range of musical interests, Sampson studied the trombone, guitar, singing, bass, drums, and piano. At 17, he moved to Montreal to study jazz music at McGill University, where he earned both his bachelor’s and master’s degrees in jazz trombone performance. Sampson returned to McGill to direct one of its widely acclaimed jazz orchestras and also taught at the University of Toronto, conducting the Hart House vocal jazz ensemble, Onoscatopoeia. Sampson has gained experience in multiple musical disciplines while performing across North America, Europe, Asia, and the Caribbean. He has performed in several million-dollar, award-winning productions, such as C’est Formidable and Point & Click. He has worked for Carnival Cruise

Lines and the Ceremonial Guard Band (Ottawa) and has taken part in numerous festivals, workshops, and camps throughout Canada. In addition to performing with Cadence, Kurt continues teaching private lessons, doing voice work for TV and film, arranging and composing music, contributing to Canada’s jazz scene, and supporting all facets of music. The Harlingen Concert Association has been bringing internationally acclaimed, touring artists to the Valley since 1933. This allvolunteer, nonprofit organization is committed to enriching the cultural life of the community through live performances. Tobacco Prevention and Control Coalition Offers Cities Help with Smoke-Free Ordinance Training Special to Welcome Home RGV

an effort to enhance the compliance and enforcement endeavors of smoke-free ordinances across Hidalgo County, the Tobacco Prevention and Control Coalition is offering training opportunities to local municipal enforcement departments. Steven Kotsatos, McAllen’s director of health and environmental code enforcement, requested the assistance of the Coalition following the implementation of the city’s comprehensive smoke-free ordinance. The training afforded the officers a unique opportunity to learn about tobacco products on the market that fall under the ordinance, as well as the dangerous health effects of nicotine and tobacco and different scenarios when the ordinance can be applicable. “McAllen is the first city to reach out to us for this new training opportunity,” said Gilda Bowen, TPCC coordinator. “Our biggest concerns are to ensure the protection of the public’s health and to make sure people and businesses are following the law. We appreciate the city being proactive in making sure their officers have all the right tools and resources available to them.” All members of the community are invited to attend to learn about the Coalition, its collaborative partners, and how advocating for tobaccoprevention initiatives is an important topic in our community. Tobacco use creates many burdens, such as social and financial hardships, and the Coalition seeks to mobilize members of the community to raise awareness and to educate the public on the damaging effects of tobacco. The monthly coalition meetings are held the last Wednesday of every month from 12 to 1 p.m., with lunch

• 1 cup sugar • 1 ¾ cups water • 2 tablespoons cornstarch • 1/8 teaspoon salt

• 1 (3 oz.) package strawberry gelatin • 3 or 4 grapefruit, sectioned and drained • 1 (9 inch) pie crust, baked • Whipped topping

Cook sugar, water, cornstarch, and salt until thick. Add gelatin. Stir until dissolved. Add grapefruit. Put filling in pie crust. Top with whipped topping. Banana Nut Muffins

These delightfully moist muffins are perfect for your Easter brunch table, an afternoon picnic or for a yummy snack on the go! Rich, moist and delicious they are sure to make you smile! Bon Appétit! •

• 2 1/2 cups all-purpose flour • 1/2 teaspoon baking soda • 3/4 cup brown sugar, firmly packed • 1/4 teaspoon ground cinnamon • 2 cups ripe bananas (about 4 bananas) • 1/2 cup vegetable oil

• 1/2 cup milk • 2 large eggs, at room temperature • 1/8 teaspoon fine salt • 1 teaspoon pure vanilla extract • 3/4 cups chopped walnuts

Preheat the oven to 375 degrees F. Lightly brush a 12-muffin tin with butter and set aside (or use muffin liners). Stir the flour, baking soda, brown sugar, and cinnamon together in a large bowl; set aside. Mash the bananas on a plate with a fork. Then whisk the banana, oil, milk, eggs, salt, and vanilla in a medium bowl. Make a small well in the center of the dry ingredients. Pour wet ingredients into the center; then stir gently with a wooden spoon until the dry ingredients are moistened but still lumpy. Do not over-mix the batter or muffins will come out dense and oddly shaped. Gently fold in the nuts. Divide the batter evenly into the muffin tin. Put the muffins in the oven and immediately reduce oven temperature to 375 degrees F. Bake until golden brown, about 25 minutes, rotating the pan halfway through the cooking. (Insert a toothpick into the center of a muffin to check if it is done. Toothpick should come out clean). Cool muffins in the pan on a rack for a couple minutes. Turn the muffins out of the pan and cool on the rack. Serve warm or at room temperature.
