As we wind down, and the season

comes to a close, I have had a few spare moments to reflect on all we’ve done over the past six months (and 10 years!). It’s mind boggling to think of all we do at Welcome Home RGV, but we do it with a whole lot of help. We have a great team, that’s for sure, and boy do they make my life easy! Each season brings with it new ideas, which means more work for all of us. My team has a ‘bring-it-on’ attitude, and they very rarely complain. I also have a team of volunteers, and we’d be in big trouble without them! From manning booths at trade shows to helping with mail-outs to helping out in the office, our volunteers are invaluable. They give us so much, always with a smile on their face. I’d also like to take a minute to thank all of our columnists and everyone who has submitted a story this season. Our columnists write from the heart, and I know you’ve enjoyed their stories because of all the wonderful feedback we’ve received over the last few months! This is truly YOUR newspaper, so to all of you who have submitted stories, I thank you. As we get ready to say our goodbyes, I hope you’re already making reservations for the fall so you can see all of the new ideas we plan to put into action by the time you make your return! the 2018 Winter Olympics kicked off, South Texas’ Encore Games were already in full swing. Nearly 700 residents across 10 different Encore RV Resort locations had already been competing in various community games. The three weeks of events culminated in a dance/social, medal presentation, and dinner ceremony February 28. The Encore Games feature competition categories for men and women as they seek championships in events such as pickleball, bocce ball, swimming, horseshoes, slow bike, table tennis, shuffleboard, and darts. This is followed by select card games, featuring euchre, bridge, cribbage, pinochle, 10 Point Pitch and Texas Hold ‘Em. Now in its ninth year, the annual event is always an exciting time for residents. “Our manufactured home and RV resorts offer residents a variety of amenities, each highlighting their own events and activities,” said

Bill Englert, games coordinator for Encore RV Resorts in South Texas. “but the Encore Games bring all of our South Texas communities together. With it being an Olympic year, it makes for a little more topical competition, but every year our residents just love that the communities unite for a fun, friendly competition.” The 10 communities that participated span from Alamo to Harlingen: Alamo Palms, Country Sunshine, Fun-N-Sun Resort, Lakewood Resort, Paradise Park RV, Paradise South RV, Southern Comfort, Sunshine RV, Tropic Winds RV, and Victoria Palms. •

Rio Grande Valley Quilt Guild Presents Honor Quilts to Veterans at Snow to Sun RV Park by Jess Merrill

(RGVQG), in cooperation with Snow to Sun’s quilt club, Sew and Sew Bees, presented red, white, and blue quilts to 14 Snow to Sun residents at a ceremony during the annual Quilt, Art, and Crafts Show in the clubhouse Sunday, February 28. Veterans received quilts on behalf of the Quilt Guild, a grateful nation, and admiring friends and neighbors. veterans. “The Guild had always been interested in doing something for veterans in the Valley,” she said. “Nevertheless, for many years, their quilts had been shipped to San Antonio and points farther north. Explore Native American tribal culture and history in Oklahoma Special to Welcome Home RGV

has a rich American Indian history, and today, 39 tribes have their headquarters within the state. Cultural centers and museums throughout Oklahoma celebrate the tribes’ diverse heritage, and many tribes also run luxurious resorts perfect for a few days of relaxation. Located just 12 miles off Interstate 35 in south-central Oklahoma, the city of Sulphur is home to several Chickasaw Nation attractions. Visitors to the Chickasaw Cultural Center can learn about the tribe’s history, try traditional foods, and explore 18th-Century Chickasaw life at a recreated traditional village, where demonstrators participate in cultural activities like stickball and stomp dances. Nearby is the luxurious Artesian Hotel, Casino & Sole’renity Spa, a wonderful place to relax after a day of traveling. For those who want to venture into southeastern Oklahoma, the Choctaw Casino Resort in Durant makes a perfect home base while exploring. Guests can splash around at the Oasis Pool, dine in one of the resort’s many delicious restaurants, or see a concert in the state-of-theart Choctaw Grand Theater. Durant is also home to the Three Valley Museum, which features a Native American gallery highlighting the

history of tribes in the area, and the Fort Washita Historic Site & Museum. There, visitors can see original structures and explore the unique history of the fort, established in 1842 to protect relocated members of the Choctaw and Chickasaw tribes. Southwestern Oklahoma is home to several fascinating Native-Americanfocused museums. The Comanche National Museum & Cultural Center in Lawton offers artifacts and detailed historical information on the Comanche people, while Anadarko’s Southern Plains Indian Museum displays art and artifacts from many western Oklahoma tribes. The northern part of the state also has its share of tribal attractions. In 2017, the Muscogee (Creek) Nation opened a 27-story luxury hotel just miles off Interstate 44 in Tulsa. Alamo Palms RV Resort Hosts Scholarship Auction for Local High School Students Special to Welcome Home RGV

Alamo

Palms RV Resort hosted a Scholarship Auction in their Hall Friday, February 23. They had lots of interesting items up for auction, and many people bought and donated to the Scholarship Fund. P. C Long did a great job as auctioneer, and $11,129 was raised. The infamous purple tie and panties went to Frank Immig, who flew in for the auction, for $1000. The money from the Scholarship Auction, and the money from other Alamo Palms fundraisers and memorials, will be used to provide $1000 college scholarships to students at PSJA Memorial Early

College High School. Last year, Alamo Palms awarded a record 22 scholarships. Scholarship recipients and their families attend a luncheon at the Alamo Palms Hall to be recognized as winners, and each receives a quilt made by the Resort’s quilt ladies. The students are always SO proud and grateful. Be sure to remember the Scholarship Fund for memorials and gifts. Best Resort in Texas Helps RGV Citrus Industry and Local Charities by Wilma Jacobs, Victoria Palms Resort

the mornings of February 26, 27, and 28, volunteers at Victoria Palms Resort, awarded the Official Best Age-Qualified Resort in Texas and the coveted TripAdvisor Certificate of Excellence, conducted a resident-run Park Pick from the over 2,000 citrus trees in the 115acre Resort. Students from and representatives from bird sanctuaries helped. This event was done to: • help the trees stay healthy • reduce quarantine for the Mexican fruit fly in the RGV, and • donate fruit to the Weslaco and Mission school districts, a birding center, and the Food Bank of the Rio Grande Valley Lorenzo Garza, the South Texas Citrus Alert (STCA) outreach specialist, has been educating the

public about the citrus parasite problem and attended the Park Pick. “By picking the citrus, they stop the Mexican-fruit-fly infestation,” Garza said. “This fly can create a quarantine area in the RGV, which can stop citrus production in local citrus groves. And the fruit picked will not go to waste!” This was the second year for this project in the Park, with more involvement from the STCA, more volunteer pickers, longer picking hours, and more recipients for the picked fruit. Victoria Palms Resort is a leader in many successful resident-run programs, such as The Advisory Council, 1st Responders (for over 10 years), Green Team Recycling (now in its third year), and Helping Hands (newly established). •

Harlingen Concert Association Announces 2018-19 Season Celebrating 85 years of bringing live entertainment to the Valley! Special to Welcome Home RGV

(HCA) is pleased to announce the lineup for its 85th season of bringing live entertainment to the Rio Grande Valley. Six outstanding performances at the Harlingen Municipal Auditorium are planned this coming fall and winter. Mexican Whistling Ducks are the Cows of the Bird World by Dianne Miller, Winter Texan from Saskatchewan Canada

single file, seemingly with purpose. Soldiers mustering on the parade ground? Cows heading home at feeding time? Nope. Blackbellied Whistling Ducks. As a Winter Texan from Canada, I find the birds of Southern Texas fascinating. Dozens of Whistlers dwell along the Resaca de la Guerra that flows past our mobile home at Palm Resaca Park in Brownsville. Resacas are former channels of the meandering Rio Grande River formed after flooding. The city now maintains these canaltype waterways for flood control, irrigation, and natural habitat. The Whistlers, both males and females, are distinctive, rust-brown ducks with black bellies and tails, white patches on their wings, long necks and legs, and pink bills and feet. It’s not long before one of those marching in line spots a tempting seed or insect and drops out. A second one stops, and then another until the line is abandoned in favor of lunch. In a while, by some mysterious fowl reasoning, one of the birds will lead the way, and, as the others notice they’re being left behind, they scurry to fall into line. Away they march until distractions again interfere with their formation. The procedure is repeated until the satiated crew settles along

the Resaca wall for a mid-day snooze. Perhaps these are Whistler retirees. In March, we see the ducks prepare for breeding in their lifelongpair bonds. One of the permanent residents has erected nesting boxes at intervals along the Resaca. The boxes, about 3’ high, 2’ wide, and 2’deep, are anchored atop a fivefoot pole and can replace the usual nests in tree cavities. When it’s time to lay eggs, the female enters the box through a hole cut in the front. Often, the anxious dad perches on the sloped roof and leans over, stretching his neck to peer inside, probably saying, “Is everything OK?” or “Hurry it up, would you?!” Each female lays about 13 eggs, and as many as four females will share the same box. We must follow our own snowbird migration north before the eggs hatch, but we’re told that the chicks climb through the hole within two days of hatching and fall onto the grass below, where the adult parents come along to gather their young for an eight-week crash course in Whistler survival. By the time we return the next November, the fledglings are marching confidently as adult Black-bellied Whistling Ducks. •

McAllen to Celebrate Women’s History Month Special to Welcome Home RGV

City Commission proclaimed the month of March as Women’s History Month in McAllen in celebration of the of the social, economic, cultural, and political achievements of women. City leaders were proud to point out that the City of McAllen is unique amongst Rio Grande Valley and border municipalities, with an equal number of men and women who are directors of City of McAllen departments. The world of work is changing and with significant implications for women. “The City of McAllen is an organization where women flourish,” read part of a recent City proclamation, “and is proud to boast an equal number of women and men in positions of leadership, influence, and decision and policymaking as directors within the organization, helping to bring new vision and perspective to the growth and direction of the municipality and more importantly, the community.” According to Mayor Jim Darling, women have been an important part of the fabric of the growth and progress of society. There have been staggering changes for women in religion, in government, in employment, and in education that have come about in over eight generations since that first women’s meeting in Elizabeth Cady Stanton’s kitchen in upstate New York in 1848. These changes did not happen spontaneously. Women,

themselves, made these changes happen, very deliberately. Women have not been the passive recipients of miraculous changes in laws and human nature. Eight generations of women have come together to affect these changes in the most democratic ways: through meetings, petition drives, lobbying, public speaking, and nonviolent resistance. They have worked very deliberately to create a better world, and they have succeeded hugely. “Women are not only an integral part of nurturing families but often times also serve as breadwinners and role models for their community,” said Mayor Darling. “Whether on a small scale in their home, on a larger scale in jobs, such as education, medicine, or science, those cultures where women have played a role in the advancement of, or been a major part of, the innovation and responsiveness of government--those societies have flourished.” Concluded Darling, “It is an honor to be a part of the City of McAllen, where women have such key roles in moving our city forward.” In celebration of Women’s History Month and International Women’s Day (March 8), the City of McAllen will also host events that will help promote and encourage the contributions of women to the City. Below is the schedule of activities

the City of McAllen will host in honor of these initiatives: • International Women’s Day Breakfast Symposium, McAllen Convention Center, featuring a panel discussion of female trailblazers in the McAllen community, as well-March 8, open to all female City of McAllen employees • South Texas College Tour and Presentation, March 27, where female students from various degree programs will visit various City of McAllen departments led by female directors and hear from other female directors to learn more about opportunities in public service; This year’s theme for the City of McAllen Women’s History Month

has started a Flag Lease Program to honor our veterans. Monday, February 19, on Presidents’ Day, 20 flags were displayed in front of Eastgate RV and MH Park in Harlingen. We were so honored that 15 flags--14 U.S. and one Canadian were sponsored by veterans in our park. The others were sponsored by businesses in the community. A person or business can sponsor

a flag for $50 a year. The flags will be flown five holidays each year. Landon Jennings, the president of the Chapter, expects the program to grow. Our veterans at Eastgate, as well as all other residents, are so proud. We had our U.S. flags flying, along with the Canadian flag. What an awesome sight to see. All of our Winter Texan veterans’ flags, American and Canadian, were flown in unity! •

Fundraiser for Park Membership Program Held at Trophy Gardens Resort by Fran Adams

annual fundraising dinner to support the Park Membership Program in AirMedCare was held February 20 at Trophy Gardens Resort. It was well attended by the park residents, and everyone enjoyed a ham dinner with beans, potato salad, cole slaw and a brownie for dessert. The Park Membership Program provides coverage for any emergency air transfer from our park, or from an area hospital, to another medical facility where the patient can get

the best treatment for his or her condition. Diana Rodriquez, membership sales manager, and Abby Hope Cuellar, an independent representative, were both in attendance to answer any question for the residents concerning the program. They also explained the full-time coverage plan and the Fly-You-Home plan the company has available. The evening ended with drawings for several door prizes provided by the representatives of AirMedCare. •

When completed, it will be a multi-use court for pickleball and basketball. It will also have fencing on both sides to keep all of the balls contained and painted lines. Doc Talk Lecture: Dr. Morales Addresses Minimally Invasive Heart Valve Surgeon by Rita Huether, 1st Responders Coordinator

Dr.

John Frank Morales and his RN, Lisa Medina, were the featured speakers, discussing minimally invasive heart valve surgery, at the February 22 Doc Talk Lecture sponsored by Harlingen Medical Center. Dr. Morales practices in the RGV in numerous hospitals from Rio Grande City to Brownsville and in Corpus Christi, surgically replacing valves in adults and infants. Dr. Morales said approximately 10 percent of surgeons utilize the less invasive valve surgery, which was previously reserved for very ill patients. However, now they are successfully repairing valves in almost anyone, including people 70 years old and up to the mid-90s. Age is not a factor for this minimally invasive surgical technology, and it enables more people to have successful outcomes. Previously, the typical surgery, a sternotomy, split the sternum requiring six weeks of healing time, no lifting, and other conditions. This minimally invasive procedure, a thoracotomy, allows recovering patients to lift their arms above their heads, quickly returning to normal activities in their lives,

including work and physical labor. Additional benefits of the minimally invasive procedure are much smaller incisions, less scarring, less pain, and shorter stays in the hospital, often with fewer complications due to much faster recovery. Aortic valves are replaced via a 5-7-centimeter incision in the upper chest area, similar to pacemaker incisions, while mitral valves are replaced through an incision under the breast of the right chest with a 7-centimeter incision. The new minimally invasive technology is suture less, with highly versatile equipment and new technology allowing the surgeon to complete aortic valve replacements in oneand-a-half to two hours without requiring Warfarin or Coumadin. Rings are also used to repair mitral valves, and we saw examples of the new technology. Dr. Morales showed those in attendance the surgical process on screen and discussed the importance of old, calcified valve removal, including the tiny pieces of calcification, to prevent strokes. He discussed the optimal time for

valve replacement in relation to aortic valves and symptoms often unrecognized by cardiac patients. Other surgical interventions he discussed were minimally invasive heart bypass surgery through the side for revascularization of oneto-two vessels and lung surgery for cancer patients. Medina explained the process and expectations for getting scheduled for surgery, contact with the

family during the surgery regarding progress, and post-op expectations. Medina then shared the story of the November 13, 2017, surgery of Dr. Joseph Bender, a McAllen podiatrist, and Dr. Bender showed 1st Responders his tiny scar. Valley Symphony Orchestra presents the final concert of the Symphonic Visions season, Forbidden Pleasures of Carmina Burana, set to begin at 8:00 p.m. Friday, April 6, at the McAllen Performing Arts Center, 801 Convention Center Boulevard. The concert will feature the Valley Symphony Chorale, choral members from across the Valley, and RioBank-sponsored guest vocalists Heather Phillips, soprano, Brian Yeakley, tenor, and Lee Poulis, bass. Carmina Burana is a masterpiece and one of Carl Orff’s most recognizable pieces that has become a vital part of our cultural soundscape. cook outdoors. Smoking and grilling meats and veggies makes a great meal--with no oven heat, little clean-up, and a real Texas flavor. But it sometimes seems ho-hum to eat plain grilled beef, pork, and chicken. Now you can increase the taste of these great foods by adding a sauce you make on the stovetop. Chefs routinely use sauces to enhance the flavor of simply prepared meats or vegetables. Now you can, too. Here are two to start you off. •

Horseradish Sauce

This is traditional with beef but can also be used as a dip for grilled veggies. • ½ cup full-fat sour cream (you need this for the thickness; you can substitute Greek yogurt) • ½ cup refrigerated, prepared horseradish (don’t use the shelf-stable type) • ¼ teaspoon freshly ground black pepper • Kosher salt, to taste • ¼ teaspoon sweet paprika • 2 tablespoons chopped fresh chives Whisk all the ingredients together. Cover the bowl with plastic and refrigerate for at least 30 minutes while you grill the meat. When ready to serve, stir and adjust for seasonings. This sauce can be kept refrigerated for up to 2 days, if you want to make it in advance. Stir well, in case there is some separation. Serve on the side with grilled beef.

Brown Butter-Sage Sauce Try this with grilled salmon, scallops, or shrimp • 1 small green onion, chopped finely, white parts only • 4 tablespoons unsalted, REAL butter (no margarine, please) • ¼ teaspoon kosher or coarse sea salt • 1 teaspoon minced fresh sage leaves • 1½ teaspoons fresh lemon juice Melt the butter in a large, heavy skillet over medium-high heat, gently stirring, occasionally, to let it brown without burning. It will have a nutty aroma when it’s done, about 90 seconds. Remove from heat and stir in the onion and sage. Using the heat left in the skillet, stir for about 1 minute. Stir in the lemon juice and salt. Serve this sauce at once, drizzling it over the fish or seafood. Floresta Park and Golf Course enjoyed a full day of activities. Donuts were available at Hole #1 on the golf course. Then, 37 couples competed in the 26th Annual Valentine’s Day Golf Tournament. Random partners were chosen the previous evening, and as 9 a.m. approached, a wave of red descended upon the La Floresta

Golf Course. The fog slowly rolled in, but it did not deter the golfers from this annual competition. The winners were Dickie Hlady and Kim Humniski. There was a four-way tie for second place. Entertainment that evening was provided by Lynn Dvorak from Nebraska, who has been providing entertainment in the Valley for many years. It was a fun day! •

Floresta RV Park competed in the double-elimination event. Winners of the tournament were Roger Else and Ev Link. Winners on the B Side were Tom Immomen and Marg McNeill. UFTA tacos were prepared and served by Morris and Kay Haverland and their committee. It was an all-you-can-eat dinner with all the toppings! •

Winter Gardens Charity Golf Scramble Includes Hole-in-One Winner Special to Welcome Home RGV

Ninety golfers from Trophy Gardens

and Winter Ranch participated in the Winter Gardens Charity Golf Scramble February 16. Fran Adams and her group from Trophy Gardens prepared breakfast and lunch, sponsored by Knapp Medical Center and served by Winter Ranch 1st Responders. Knapp Medical Center provided gift bags for each of the golfers and Welcome Home RGV provided orange golf towels and gifts. The AirMedCare Life Team flew out in their helicopter to join us for lunch and provided numerous door prizes, later won by many of the golfers. Burns Motors was the hole sponsor, providing a 2018 Chrysler Pacifica for a hole-in-one on #3, which we all tried, unsuccessfully, to win. Mike Hardesty was the happiest golfer, as he had a hole-in-one on #7, with a choice of prizes provided by Burns Motors. He chose the fiveday Carnival Caribbean cruise for his winning shot. Mike also received a $25 cash award from the Winter Gardens Golf Group plus a trophy Winter Ranch Golfer Mike Hardesty made a on which he can display his ball hole-in-one and won a cruise, compliments of and a recognition plaque bearing Burns Motors.

Jalapeño Pie Serves: 8

• 3 eggs • 2 cups heavy cream • ¼ teaspoon salt • ¼ teaspoon black pepper • ¼ teaspoon nutmeg

• ¾ cup chopped, seeded jalapeño peppers (or less, according to taste) • ¾ cup cooked and crumbled bacon • 1 ½ cups Gruyère cheese • 1 (9-inch) deep dish pie shell, baked

Preheat oven to 375 degrees. Mix eggs, heavy cream, salt, pepper, and nutmeg. Place peppers and bacon in bottom of pie shell. Add cheese, then egg mixture. Bake for 40 minutes. Cook for 30 minutes. Cut and serve. (May be prepared as much as 8 hours in advance.) Get Ready, Get Set, Go!

And we’re off in the race of 2018.

We have great plans and great ideas. We’re energized and ready to run. But where are we headed? In order to run a race, there must be a starting point and a finish line. The starting point is obvious, but very few of us have put any thought into where we want to be December 31, 2018. The Apostle Paul wrote in 1 Corinthians 9:24-26, 24) “Do you not know that in a race all the runners run, but only one gets the prize? Run in such a way as to get the prize. 25) Everyone who competes in the games goes into strict training. They do it to get a crown that will not last, but we do it to get a crown that will last forever. 26) Therefore I do not run like someone running aimlessly, I do not fight like a boxer beating the air.” The writer of Hebrews wrote in chapter 12, l)”Therefore, since we are surrounded by such a cloud of witnesses, let us throw off everything that hinders us and the sin that so easily entangles. And let us run with perseverance the race marked out for us, 2) fixing our eyes on Jesus, the pioneer and perfector of our faith.”

We can pick no greater finish line than to run a race with a desire to seek Jesus, to diligently focus on the finish line that is a stronger, closer relationship with our Lord and Savior, Jesus Christ. Some days it seems like a daunting, almost impossible, task. But if we strive to walk just one step closer to Jesus each day, it becomes a doable task. We are on the right course, a course pleasing to God, but it takes effort on our part. After all, in Jeremiah 29:13, God’s Word tells us, “You will seek me and find me when you seek me with all your heart.” That’s a vitaI and often overlooked component of our walk with God. We must seek Him with all our heart. Attend Sunday services in a Bibleteaching church. Engage in daily, personal Bible study and spend time in prayer. Establishing a relationship with God and seeking His wisdom through prayer and the studying of His Word will provide a foundation for your lives that will give you peace and strength and the assurance that you will spend eternity with Jesus in heaven. And now you know where the finish line is. •

Meet Kristy Meyer ••• My name is Kristy Hallock Meyer. I was born and raised in McAllen. I grew up in the middle of a citrus orchard my grandad and dad farmed for many years. My love of travel came from the many family vacations my parents took me on as a child. The best one was the cruise we took for my high school graduation. From that point on, I was hooked on cruising! I have now been on more than 30 cruises! After graduating from high school, I knew travel was my passion, so I enrolled in Pace Travel Academy in Austin. Soon after, I landed my first job as a travel agent. I worked as a travel consultant for many years, later managing a local travel agency for nine years. After the horrific events September 11, 2001, the travel world experienced many changes. The travel agency I had loved and managed for so long decided it was time to close. I then had the opportunity to work for a nonprofit organization that helps abused children here in the Rio Grande Valley. This experience certainly opened my eyes to a different world, a world I had never seen. After eight years and a lot of soul searching, I decided it was time to get back to my passion...TRAVEL! I am married to Bobby, the love of my life, and between us we have four wonderful children. I am one lucky girl because Bobby loves to travel as much as I do! Together we have had countless opportunities to visit wonderful places, in addition to cruising! I am looking forward to helping you plan your trip of a lifetime. I was recently asked for our

Chicken Piccata recipe from Marcello’s. I thought it might be a great time to share it with you as well. This is a simple dish to prepare with just a handful of ingredients that you probably already have on hand anyway (my favorite kind of recipe). Yet it is elegant to serve to your dinner guests or for your family on we week night. It’s filled with yummy lemony flavor and deeply satisfying. Please remember that when cooking with wine, be sure to use good quality wine, and taste it first. Only cook with wine that is good enough to drink, not wine that is left over from last week’s dinner party. :) Bon Appétit! • SERVES 4 • 2 skinless and boneless chicken breasts, butterflied and cut in half • Kosher salt and freshly ground black pepper • All-purpose flour (for dredging) • 6 tablespoons unsalted butter • 5 tablespoons extra-virgin olive oil • 3 tablespoons dry white wine • 1/3 cup fresh lemon juice • 1/2 cup low or no sodium chicken stock • 1/4 cup brined capers, rinsed and drained • 1/3 cup fresh parsley, minced

Season chicken on both sides with salt and pepper. Dredge chicken in flour and shake off excess. In a large sauté pan over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle a little, add 2 pieces of chicken and cook for 3 minutes on one side. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. To the same pan, melt 2 more tablespoons butter and add another 2 tablespoons olive oil and repeat for the remaining 2 pieces of chicken. Remove the chicken and add to the plate. Return the pan to high heat and splash in a little dry white wine, such as Sauvignon Blanc or Pinot Grigio. This deglazes the pan, scraping up the brown bits from the pan for additional flavor. Add to the pan the lemon juice, stock and capers. Bring to a boil. Taste for seasoning and add kosher salt and pepper as needed. Return all the chicken to the pan and simmer for 5 minutes in the sauce. Remove chicken to a serving platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.
