Time to do some bragging!

I’m so excited to announce that our graphic designer, Jenny Carpenter, came home last week with a silver ADDY award, awarded by the Rio Grande Valley Chapter of the American Advertising Federation! Jenny is the creative link to all you see, from designing the annual Winter Texan Living publication to this weekly newspaper... and everything in between. Jenny is invaluable to our team! She’s responsible for making all of our crazy ideas ‘look pretty,’ which isn’t nearly as easy as it sounds! We got to get dressed up and attend the cocktail party where the awards were presented. We were notified in advance that we had won, but we weren’t sure which submission was the winner. (We submitted several for consideration.) The suspense was killing us all! I was so happy to learn that the advertisement and collateral material for our 1st Annual Winter Texan Homecoming was what got the judges’ attention. 42nd HIDALGO BORDERFEST BEGINS TOMORROW

This year, the City of Hidalgo will

celebrate its 42nd Annual BorderFest, South Texas’ largest music, culture, and heritage festival. Each year, the festival celebrates a different country, bringing a bit of its culture and history to the Rio Grande Valley. At this year’s BorderFest, those in attendance will be Celebrating Spain! For the past 36 years, the ABRAZO has acted as the official kickoff event for BorderFest. Thursday morning, March 1, the mayors of Hidalgo, Texas, and Reynosa, Mexico, and their entourages will meet at 9:00 a.m. at the center of the HidalgoReynosa International Bridge, the bridge that connects the two sister cities. The mayors will share an abrazo, or friendship embrace. After this ceremonial kickoff, there will be square dancing and more in Reynosa. Another event you don’t want to miss is the Bloodless Bullfight Sunday, March 4, at the State Farm Arena in Hidalgo. World-class matadors will delight you. Friendship Quilts and More at the Alamo Rose Quilt Show March 7 Special to Welcome Home RGV Alamo Rose Quilt A Bees will everyone using their own design to display their Friendship Quilts at their Quilt Show March 7 from 12:00 – 3:00 p.m. at Alamo Rose RV Park. Each of the participating ladies made a nine-patch block of their own design and color. They made 12 blocks alike and shared them with each other. Then the ladies put their quilts together,

create the quilt. We also have a quilt we will raffle, antique quilts, and others on display. Vendors will have items for sale. There will also be a secondhand-rose table and quilts for sale. Admission is $2.00. There will be door prizes. Alamo Rose RV Park is at 938 S Alamo Road in Alamo. •

20th Anniversary Benefit for Mabel’s Free Clinic Raises a Whopping $10,000 Special to Welcome Home RGV

Comfort Resort (an Encore property) in Weslaco held their annual benefit for Mabel’s Free Clinic located in Nuevo Progreso, Mexico, February 8 from 7 to 10 a.m. Approximately 550 people from around the Valley attended the event, including Anne Dare, the current board president who resides at Country Sunshine in Weslaco, Dick Turner, the clinic administrator who resides at Victoria Palms Resort in Donna, Dr. Samuel Barrios, DDS, the dentist for the clinic from Nuevo Progreso, Mexico, and Russel Duer, the first board president who resides at Southern Comfort. After projected expenses, the event brought in approximately $10,000. The Biscuit-and-Gravy Breakfast was accompanied by a Silent Auction, with over 225 items and a quilt raffle for a quilt made by the Southern Comfort Quilting Group. Ms. Barnhardt from Leisure World won the quilt. Two other names were drawn, and Linda Stednyk from Victoria Palms won a handmade afghan and Ila Dombowsky from

Trails End won a framed crossstitch picture. Keyboard music was provided throughout the event by Judy Pinner. Linda Cesario of Vernon, British Columbia, and a winter resident of Southern Comfort Resort donated a gorgeous painting that she titled The Tree of Life. It was on display for the event. Mabel’s Free Clinic provides medical, dental, and optical care for the residents of Nuevo Progreso. The money raised from this event will help to pay the salaries of the dentist, doctor, optometrist, janitor, and receptionist for the clinic, as well as an eye surgeon when surgeries are required. About Mabel’s Free Clinic The Clinic is named after Mabel Proudley, who was a violinist with the Rome Symphony. She was injured in an accident and could not continue playing, so she returned to the Valley, where her sister lived. She began her work in Mexico in 1967 during the recovery efforts for Hurricane Beulah. She and her sister continued to work to provide basic needs for the citizens of Nuevo Progreso and the surrounding area until her death in 2003. Give $2,000 Valentine to Weslaco Rainbow Room

a park meeting February 14 in the Snow to Sun Main Hall. Emma Menchaca, Rainbow Room coordinator for South Texas, recounted a case as a Child Protective Services investigator nearly 10 years ago. It was a murder case. Over the course of a week, a five-year-old boy was beaten to death by his stepfather. “…and during that period of time, no one came forward to say anything,” she said. The case was so heart-wrenching, she wanted out of the profession. She recalled another case where a two-week-old baby had a broken arm and an open wound on the neck. “Often, when we removed children from a home they had no clean clothes, babies had no diapers, and there was little food in the house,” Emma said. “Caseworkers provided those necessities out of their own pockets because there was no state budget to reimburse them. Even now, we have new social workers who last only a few months on the job. When they begin, they have no idea what they are getting into.” When a new position opened in the department, one for which Emma felt particularly suited, she took the job. She said her training in theater and public speaking had prepared her to take on the responsibilities of spokesperson, also responsible for community engagement. Rainbow rooms were formed by a group of civic-minded women

through community efforts in partnership with the Department of Family and Protective Services/Child Protective Services of Texas. In 2017, there were 487 removals in Hidalgo County, but Emma said, “One removal can include several children.” She remembers one removal that involved 14 children. More than 60 percent of removals are the result of neglectful supervision and nearly 20 percent for physical abuse. The ultimate goal is to get the children back into their homes. To that end, the Department offers help with parenting classes, training in home cleaning, drug rehabilitation, and money management. “Many of our cases stem from financial hardship,” Emma said. Snow to Sun residents became involved many years ago through the efforts of Bubba and Frieda Clark, long-time residents who have since moved away, but Emma said they still travel to the Valley once in a while to help out the Rainbow Room. She said, over the years Snow to Sun gifts have helped more than 1,000 children in the Valley. In December of 2017, residents filled 99 festive stockings with gifts the Rainbow Room distributed to Weslaco children who may not have received anything else for Christmas. Welcome Home Cooks Up a Win at Smokin’ on the Rio Special to Welcome Home RGV

still on cloud nine after spending a windy (Very windy!) weekend at the 15th Annual Smokin’ on the Rio BBQ Cookoff. We’ve competed in all but one, so for 14 years, we’ve dedicated the last weekend in February to BBQ. My husband’s cooking team, the Smashed Potatoes, has not only participated locally but has also competed across the state of Texas and even in Kansas City, Missouri! This cookoff was different in that this was the first competitive ‘cook’ on the new barbecue pit. Factor in that a new pit means you’re still trying to figure out how ‘she’ cooks. With the unbelievable wind, we weren’t too hopeful when it came time to turn in. Imagine how excited we were to find out our ribs came home with a 7th Place trophy! Seventh place might not seem like something to write home about, but it sure is when you are competing against 223 entries! The best thing about our barbecue

cookoffs is that we share them with some of the most amazing friends we’ve met along the way. I’m so thankful that my husband’s hobby has given us the opportunity to meet new people and to maintain such wonderful friendships. Here’s to the next ‘cook’! •

Keith Routley, a Canadian dentist (now deceased) and encouraged him to use his retirement treating children in Mexico. He brought his own equipment from Canada for many years, setting up in donated rooms. After hearing his stories, Russ Duer and other Winter Texans decided to build a clinic to do his work. They worked with the Mexican government to find a place and obtain permission to build the Clinic. Over the winter months of 1998, a 40 x 28 building was constructed in Nuevo Progreso by American and Canadian volunteers from 17 local RV/mobile home parks. The new clinic officially opened March 29, 1998. This year we celebrate the 20th year of the clinic’s opening. The mission of Mabel’s Free Clinic and our mission, as well, is to keep children healthy so they can stay in school, finish school, and improve their lives. We focus on taking a team into the schools to examine the children’s vision. Those who need care will be brought to the Clinic, with their parents’ permission, for further examination by an optometrist. Likewise, our dentist goes into the schools to screen those who need dental care. Those who do are brought to the clinic. Care is also provided for adults. Of particular concern is education, testing, and care for those who are diabetic. In recent years, since we built the surgery addition, the Clinic has provided many surgeries to treat a common eye condition that causes a film to grow over the eye. When the right surgical team is available, we have also provided cataract surgery.

The colorful Spice of Friendship Opportunity Quilt was on display at the show. The drawing for this quilt was held Sunday, February 25, at the Llano Grande Show-and-Tell event. This “Spicy” quilt comes with pillow cases and a storage bag. The Llano Grande Quilting Bee thanks you for your support, which allows them to support many community service projects. Save the date for Llano Grande’s 10th Annual Quilt Show, which will be held January 29, 2019. •

American Cancer Society Golf Tournament at La Floresta Raises $2000 Special to Welcome Home RGV

Floresta RV Park was the scene of the 23rd Annual American Cancer Society Golf Tournament Saturday, February 3. Competing in the Mixed Scrambles (best ball) Tournament were 75 players. The players, plus many others who made donations, raised nearly $2,000. All money collected for the event, including golf fees and donations, went directly to the American Cancer Society. La Floresta RV Park and Golf Course is a small park located just a few miles north of Mercedes. Bob Fuller, a Winter Texan from St. Charles, Missouri, has been in charge of organized golf at La Floresta for 31 years. He started the American Cancer Society Tournament in 1996, and since that time, La Floresta has raised $45,845 for the American Cancer Society. •

Gadgets and Techniques to Keep your Heart and Brain Healthy” was presented by Dr. Frank Mazzola at Harlingen Medical Center February 15 for the Doc Talk Lecture during National Heart Month. Dr. Mazzola is a cardiac electrophysiologist, or EP, which is a subspecialty of cardiology. Dr. Mazzola described various devices for monitoring different types of heart issues, such as atrial fibrillation, which causes strokes. He also spoke about how to manage heart issues through treatment, including cardiac ablations. Many new types of technology are available for monitoring and treatment, including the Mica™ transcatheter, lead-less pacemakers, ICD, SICD, and other pacemaker/ defibrillators, which work differently for specific heart conditions depending on the dyssynchrony of each chamber of the heart. The new technology provides choices for the doctor, either long-term or short-term monitoring for optimal diagnosis. Additionally, new technology and placement of the various types of pacemakers is unique, as some

are along one side of the body with lead placement above the sternum. Many pacemakers and leads are now wireless and much smaller for internal heart devices. Sometimes leads can be located outside the heart, depending on the individual patient’s condition. A new option to close the left atria appendage is now available to prevent blood clots, which cause 93 percent of strokes from this area of the heart. Patients who receive this procedure can discontinue Warfarin, a blood-thinning treatment for A-Fib. All these procedures are available at Harlingen Medical Center through their Electrophysiology Lab, where Dr. Mazzola serves as medical director. Meet Kristy Meyer ••• My name is Kristy Hallock Meyer. I was born and raised in McAllen. I grew up in the middle of a citrus orchard my grandad and dad farmed for many years. My love of travel came from the many family vacations my parents took me on as a child. The best one was the cruise we took for my high school graduation. From that point on, I was hooked on cruising! I have now been on more than 30 cruises! After graduating from high school, I knew travel was my passion, so I enrolled in Pace Travel Academy in Austin. Soon after, I landed my first job as a travel agent. I worked as a travel consultant for many years, later managing a local travel agency for nine years. After the horrific events September 11, 2001, the travel world experienced many changes. The travel agency I had loved and managed for so long decided it was time to close. I then had the opportunity to work for a nonprofit organization that helps abused children here in the Rio Grande Valley. This experience certainly opened my eyes to a different world, a world I had never seen. After eight years and a lot of soul searching, I decided it was time to get back to my passion...TRAVEL! I am married to Bobby, the love of my life, and between us we have four wonderful children. I am one lucky girl because Bobby loves to travel as much as I do! to sit on the porch and rock. They realize “their” people have led busy, creative lives before coming to the Rio Grande Valley to be warm in the winter time. They realize it is hard for many of “their” people to be away from the kids and grandkids over the holidays. They realize the Rio Grande Valley is actually as much home to “their” people as their homes up north. A good activity director can actually make a lot of money for the owners of the park at the same time they are keeping people happy. When the activities program is successful, people are busy and happy, they attend programs, they volunteer, and they are very loyal to their park. THEY HELP BRING NEW PEOPLE INTO THEIR PARK! Sounds good, so far, doesn’t it? Then why do the parks have such a high turnover in activity directors every year? From our experience and from discussions with other activity directors, we have found two big issues: 1. Management and owners – Some managers want to micromanage activities. Guidance and cooperation are good; control issues are not. People have been evicted from parks because the manager didn’t want them making waves and questioning the manager’s actions. There have been residents who lost

big money because of a manager’s Ponzi scheme. Owners have come in and totally eliminated a good, working program to change it to the “corporate” way. We have watched people at parks like these move out in droves. They not only moved out, but many moved to Florida or back north and never returned to the Valley. 2. Grouchy people – We know some people don’t feel good, or they just aren’t happy. Activity directors have to have thick skin to get along with everyone, but sometimes there’s that straw that breaks the camel’s back. Then the activity director might say, “This is my retirement, too, and I don’t want to put up with this any more.” And another one bites the dust. When management and activity directors work as a team, it’s a beautiful thing! The activity director has the freedom to be creative, management has fewer complaints from the residents, and people enjoy their retirement. Sounds so easy, doesn’t it? There are all kinds of activity directors. Some are volunteers because no one else will do the job. Some are paid to do their job or receive free lot rent or other perks. heaven as we’ll get on this side of life. Searching for the best shrimp, scallops, oysters, and fish is an activity unto itself. Eating the bounty is the icing on the cake...crab cake, that is! This super simple recipe for shrimp cocktail will take only minutes to put together, but eat it slowly to savor all the complex flavors. •

Mexican Shrimp Cocktail

• 2 pounds medium, raw, wild caught Gulf shrimp, shells on • 2 large ripe tomatoes, chopped • 3-4 green onions, chopped (both white and green parts) • 2 cups tomato-vegetable juice (V-8) • ½ cup fresh cilantro, roughly chopped • ½ cup fresh lime juice • 1 large jalapeño, chopped, with seeds • 1 large avocado, chopped • Freshly ground black pepper and kosher salt, to taste Gently poach the shrimp until they turn pink, being careful not to overcook them as that will make them tough. Plunge into ice water when they are cooked; peel and devein when they are cool enough to handle. Place in a large mixing bowl. Toss the chopped avocado with the lime juice to keep it from discoloring. Add the avocado and the remainder of the ingredients to the bowl with the shrimp. Gently mix so you don’t break up the avocado pieces. Adjust seasoning, adding more salt or pepper, if necessary. NOTE: If you want your mixture to be less spicy, take the seeds out of the jalapeño before chopping it. After everything is nicely combined, place into a clear glass serving bowl to show the beautiful colors. Cover with plastic and chill thoroughly. Serves 6, as an appetizer with crackers or plain tortilla chips.

Bit-O-Heaven: The Soupiest Park in the Valley by Sandy Olson

was told by those in the know that Bit-O-Heaven is the “soupiest” park in the RGV. No, it isn’t because they have a poor drainage system; it’s the result of the amazing soup supper they serve to about 300 people each Thursday evening! That’s right--around 600 bowls of soup (since everyone is invited to have seconds) each week. Rosie Wilson, one of the three managers of Bit-O-Heaven, gave us the whole scoop, along with the whole soup! Bit-O-Heaven is located at 1051 W. Business 83 in Donna (956464-5191). For about 30 years, their kitchen staff has prepared and served several kinds of soup each week to hungry residents and guests who show up with their own bowl,

spoon, glass, beverage, crackers, seasonings, and anything else they want to eat with their soup. The supper, along with the 50/50 drawing, is a fundraiser for their activity department, and over the years, they have developed a great plan for feeding all those people smoothly with no one going home hungry. Tickets are $3, which you pay to Rosie when you get in line for your soup. Chef Martin Garcia, who was professionally trained at a culinary school in Mexico, and his helper, Manny, begin at 8:00 a.m. each Thursday, preparing five varieties of made-from-scratch soup. When kids come to the Rainbow Room, they will stay until a foster home becomes available. Their stay can be overnight but has been as long as eight days. They range in age from newborns to 17 years old. Upon arrival, they receive clean clothes, if necessary, a snack, a toy, and a new blanket. Teenagers frequently need hygiene items, such as deodorant and shampoo. “When children get here, we want them to see hope,” Emma said. Lamb’s Loom Moving On Up March 1 Special to Welcome Home RGV

Our prayer shawl ministry started

small and with no great expectations of where it was going to go or how it would grow. It started with a group at one church, then spread to another, then those ladies taught some other ladies at another church, and then some of us decided to have a group that didn’t meet at one particular church or denomination, to make it easier for those whose church didn’t have a group to be included. We had to change locations several times due to space issues, and then God gave us a plan now in place in the form of a shop called The Lamb’s Loom. The Lamb’s Loom is a locally owned and operated nonprofit small business, staffed by volunteer, and created to establish a community, encourage creativity, and support a worldwide ministry that sends prayer shawls, hats, scarves, baby blankets, dolls, and other handmade items to be distributed by missionaries or pastors. So far, our little local ministry has sent goods to Europe, Asia, South and Central America, and North America. This is an example of people working together to make a positive impact on the lives of others they will never meet, but we’re all God’s children and feel

a need for a sign of His love. This may come in the form of a tangible representation, such as a shawl or hat or scarf. The shop sells name-brand yarns, consignment items, and donated gifts to fund shipping and other costs and to continue our ongoing and ever-growing ministry. Some people donate yarn stashes that can be used for projects. Everyone, no matter age or health status, can find some way to contribute. Classes are available for those who would like to learn to crochet, loom knit, or needle knit. Consignment items and gifts are for sale, and donations are accepted for those who would like to support the ministry. Prayers are always welcome. The Sit-and-Knit Room provides a space for a bit of socializing and for opportunities to take classes and learn new crafts, as well as a place for those with common interests to get a bit of helpful advice, when needed. Having a mixed group with different talents and abilities means that those who join us can get encouragement to try new

things, can help design a project, can benefit from expertise when it comes to matching colors, and can get advice on how various yarns complement each other. God has so blessed us with meeting new friends, inviting others to participate, and expanding our horizons in every direction, so much so that we are now ready to move into our own space at a new location with expanded business hours. We will be moving to 1102 W. Tamarack Avenue in McAllen effective March 1. We will be open Tuesday through Saturday from 10:00 a.m. until 4:00 p.m. Please plan to come by and shop to support the ministry, learn a new skill, practice an old one, or just meet new friends with common interests. •

night we visited, they served potato, ham and bean, chicken noodle, broccoli cheese, and....the surprise! This last one was a mixture of veggies, ground beef, and noodles in a flavorful broth, but I won’t be “surprised” if it’s different the next time. The huge kettles hold several gallons, so the chopping, shredding, prepping, and cooking is quite a task. For example, in the kettle of chicken noodle, 10 pounds of chicken had to be cooked and removed from the bone; and that’s just the first step. Serving begins at 4:30, but people arrive hours early to stake out their tables, enjoy visiting, and even play some cards until the announcement is made that supper will be served. Each table has a number. There is also a table reserved for those who

might find it difficult to walk through the line. Helpers will ask them what kind of soup they would like to try, fill their bowls and deliver the hot soup to them at their table. This is a wonderful way for everyone to enjoy this good meal. After this group is served, the announcer on the stage randomly picks numbers, and tables proceed to the serving line in that order. Up the side aisle to the front, then back down the center aisle to your table...that’s the rule! This keeps the crowd moving smoothly, and no one is running into anyone with hot soup in his or her hands. After everyone has had the first bowl, “Seconds” is called, and those who are still hungry can come forward to enjoy another helping of whatever is left. You can even bring a container from home to take your second bowl with you in case you are too full to eat it there. Seconds depends upon leftovers; sometimes there isn’t much in the bottom of the pot because 300 people can eat A LOT of that good soup. Pie is available for sale at $2 per piece for that little bit of sweetness many of us like after dinner. Coconut cream and

lemon meringue were the choices we had. YUM! Bit-O-Heaven’s soup supper is both a nourishing, economical meal and a major social event. There were people there from several other parks, as well as BOH residents. Rosie is a ball of fire who is very proud of her park, her staff, and her soup. where a group of people make the decisions. All are important. “Activities” isn’t just something to “keep the old people quiet.” It’s the lifeblood of the park. It can be the difference between your park barely surviving or thriving and growing. If you have a good activity director, do everything you can to keep him or her. Let him/her know he/she is appreciated. If you don’t have a good activity director, get one! Work with this director and watch your park grow and improve. Healthy, growing 55+ parks are the lifeblood of the Valley. Let’s make them stronger by working together not just seeing what the bottom line for this month gives us. Look at the big picture! Retirees come south to enjoy their retirement. Let’s do everything we can to make them happy--and keep them happy-and then we will all be winners. •

Wisdom: For whatever its worth, it is never too late to be whoever you want to be. ~F. Scott Fitzgerald. Having retired from a profession and role I held for 33 years, I faced the prospect of losing my identity. It is the same loss so many before me have encountered when relinquishing a life role that was, for all practical purposes, the “who” of themselves. This is especially a challenge for retired farmers, so many of whom are a bit lost without the farm. So it is one thing to hear, and believe. that it isn’t too late to retool and become a whole new you. It is an entirely different thing to actually do it. But I believe Fitzgerald, in the quote above, was not referring to our profession. We equate our profession incorrectly with our identity. It isn’t. Identity is self–image, and that isn’t limited by age, physical ability, or past history. It is only limited by desire. I have watched many people over

a lifetime struggle with who they are. Life patterns and habits, both in actions and in thought processes, get locked in. It is too easy to live in a rut and accept what has always been. Some people get stuck seeing themselves as over-the-hill, a hasbeen, handicapped, dependent, alcoholic, alone, sick, helpless, and a long list of other identifiers. Others see themselves as relevant, a friend, an encourager, capable, engaged, fun, spontaneous, an overcomer, and more. The difference I see as I watch is that the second group made the decision at some point to be that. Those in the first group are still thinking about it… or maybe they aren’t. I think this identity thing could be fun. There’s a whole menu of new identities out there. Maybe I could choose a different one each day, maybe one for each color shirt in my closet. It would drive my wife crazy. Hehehe. I’m just sayin’! •

Valley Lemon Chicken Serves: 4-6

• 8 chicken breast halves, skinned and boned • Juice of 1 ½ lemons • ½ pound unsalted butter, melted • 2 cups Italian bread crumbs Preheat oven to 400 degrees. Combine butter and lemon juice; reserve ¼ cup for sauce. Dip breasts into mixture on both sides. Roll in bread crumbs. Place on 11 x 9” baking pan. Bake uncovered for 35-40 minutes. Do not turn breasts. Place on serving platter; pour reserved lemon butter over chicken breasts. Cameron County Master Gardeners are expanding their semiannual plant sale and expo and are inviting vendors with gardenrelated wares to join the day-long activities. This year’s spring sale is Gardener’s Market, scheduled for April 28 from 9 a.m. to 3 p.m. at the Cameron County AgriLife compound at 1390 W. Expressway 83 in San Benito. This well-attended master-gardener event highlights plants the members have grown from seed or propagated by various means. It is a money maker for the chapter and an opportunity to talk with the public about gardening and plant-growing information. This year, they are inviting vendors

with gardening-related items, such as garden furniture, planters, hand tools, wind chimes, bird houses, garden décor, and gardening gear, like hats and gloves, tool sharpening, and landscaping businesses to sell at the show. The cost to set up is $15, and vendors keep all their profits. Vendors are asked to bring their own tables and chairs. Ohio has had an official seal for more than 150 years. Over that time period, the Ohio government has made several modifications to the seal. The current state seal was adopted by the state legislature in 1967 and most recently modified in 1996. The seal illustrates Ohio’s diverse geography. In the background stands Mount Logan in Ross County. Separating Mount Logan from the rest of the seal is the Scioto River. In the freshly harvested wheat field stands a wheat bushel, illustrating Ohio’s important contributions to agriculture. Next to the wheat bushel stand 17 arrows, representing Ohio’s place as the 17th state in the Union. The sun has 13 rays protruding outward, representing the original 13 colonies. Early versions of the seal included a canal boat, but the modernday version removed this item. The idea for the Ohio seal originated during the early 1800s. It was thought to be based on the eastern view from Thomas Worthington’s home, Adena, located near modern-day Chillicothe. Worthington was Ohio’s first United States senator and also served as the sixth governor of the state. Today, Adena is a museum.

Recipes from Ohio • • •

The Buckeye • 1½ cups of peanut butter • 6 cups of confectioners’ sugar • 1 cup butter (softened) • ½ teaspoon vanilla extract • 4 cups semisweet chocolate chips. In a large bowl, mix together the peanut butter, confectioners’ sugar, butter, and vanilla. The dough will look dry. Roll into 1-inch balls and place on a waxed-paper-lined cookie sheet. Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until firm, about 30 minutes. Melt chocolate chips in a double boiler or in a bowl set over a pan of barely simmering water. Stir frequently, until smooth. Dip frozen peanut butter balls in chocolate, holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Put back on the cookie sheet and refrigerate until serving.

• 5 cups water • ¼ tsp. ground cloves • 6-oz.-can tomato paste • ¼ tsp. red pepper flakes • ½ oz. baking chocolate (unsweetened) • 1/8 tsp. black pepper • ¼ cup chili powder • ¾ tsp. salt • 1 tsp. cinnamon • ½ tsp. sugar • 1 tsp. garlic powder • 2 Tbsp. apple cider vinegar • 1 tsp. cumin • 1¼ lbs. lean ground beef • ¼ tsp. allspice Add the 5 cups of water to a large pot. Add the tomato paste and chocolate and heat over medium heat, stirring to combine, for about 3 minutes. Add chili powder, cinnamon, garlic powder, cumin, allspice, cloves, red pepper flakes, black pepper, salt, sugar, and vinegar. Next, crumble the raw ground beef into the pot with your fingers. Then use a potato masher, whisk, or fork to break the meat up into very fine pieces. Turn heat to high to bring to a boil. Once boiling, turn the heat down to medium low. Cook, uncovered, for 1 to 1½ hours at a low boil, stirring occasionally until sauce has thickened quite a bit. Serve over thin spaghetti or a hot dog.

Misuse of Wealth

In the Letter by James, the author

provided early Christians important words to recall. In James 5:1-6 we find a warning to the rich. An analysis of these six verses reveals the following: they open with a command for the rich, meaning the unrighteous rich; a listing of their types of riches and wealth; a description of the ultimate end of these riches followed by a second command--Look!; and, finally, a summary in four statements, or indictments, of their misuse of their wealth. These six brief verses, directed to Christians in the first century, apply to us today. There is a kind of cause-and-effect approach used by the author, James. He is essentially saying, “You lived and behaved in this way; therefore, this will be the result.” The evil behavior they indulged in first says they heaped up treasure for themselves in the last days. They

trusted in treasures for security and power. The rich heaped up treasures solely for the sake of having them-the very root of sin. In doing this, they further involved themselves in idolatry; their treasures became their god. Therefore, they will receive their judgment by God. They abandoned the principle taught in the Bible that only treasures stored in heaven will last forever (Matthew 6:19-21). Next, the wealthy have cheated those who have labored for them by withholding their wages. The cries of those who have been cheated… and the wages they withheld…have reached the ears of the Lord. James warns the rich that such a lifestyle is pure deception. Ultimately, the Lord rewards the righteous and punishes the wicked, here meaning those who misuse their wealth. Third, “You have lived in pleasure and luxury.” Misuse of wealth is contrary to the very essence of spiritual living. These rich people

lived for the very purpose of their extravagance instead of living and honoring God. They lived for money instead of for God. Therefore, in the end, they will lose everything. Fourth, they have condemned and murdered the just. The rich are never satisfied with what they have. To gain more, they condemn

the just and even murder them to get what belongs to them. The poor laborers referred to lived day to day on minimum subsistence. There was no credit system like today. Without regular, frequent pay, they literally could not buy their daily bread. The message was relevant in the first century and is true for us today! •

down, soup is a perfect comfort and pick-meup. Here is a dish that is packed with flavor and nutrition alike. It’s a snap to put together so you’ll be enjoying it with your family in no time. It’s perfect for a weeknight or a Saturday afternoon with some yummy crusty baguette. Bon Appétit! • • 1 tbsp. extra-virgin olive oil • 1 yellow onion, medium diced • 1 lb. chicken sausage links • 4 cloves garlic, minced • 28 oz. can, crushed tomatoes • 4 c. low-sodium chicken stock • 1 tsp. crushed red pepper flakes, as desired • Kosher salt • Freshly ground black pepper • 2 9-oz. packages refrigerated cheese tortellini • 15 oz. can white beans, drained and rinsed • 5 oz. fresh baby spinach • Grated Parmesan, for garnish In a large pot over medium heat, heat oil. Add onion and cook until tender and lightly golden, 6 minutes. Add chicken sausage and cook until sausage is golden, 4 minutes more. Stir in garlic, crushed tomatoes, chicken broth, and red pepper flakes and season with salt and pepper. Bring to a rolling simmer and add tortellini. Simmer 20 minutes. Stir in white beans and spinach and cook until wilted, approximately one minute. Garnish with Parmesan and serve.
