I’m still on cloud nine after

spending a wonderful week in the Caribbean with three busloads of folks from all over the country! The fun we’ve had getting to know each other and the camaraderie we’ve shared has been priceless! We’ve laughed until we’ve cried, swapped stories, and cut up throughout the trip. I advised the group that just because we can eat it all doesn’t mean we should, but, luckily, I think we all packed elastic waistbands so we weren’t too miserable on the ride home. Group travel is definitely the way to go. We left with our suitcases and came home with a week’s worth of memories and 170+ new friends. Be on the lookout for more travel opportunities with us! Bud and make sure he gets special attention. Now 90, he has celebrated his last few birthdays there with friends. Bud met Verna in 1949 after returning home from serving in the U.S. Army Constabulary in Germany. Bud ran his own dairy farm, and when his parents passed away, he and Verna took over running the familyowned general store in Thomaston. Pizza Hut’s Most Faithful Fan Lives Each Day to the Fullest by DeWayne Johnston, Chimney Park RV Resort

There

wasn’t much to do in South Thomaston, Maine, in the late 1960s, so when a Pizza Hut opened in nearby Rockland, the Baum family decided to give it a try. They enjoyed the experience so much that they kept going back every Sunday, and as Joseph (Bud) and Verna Baum’s family grew, it became a family tradition. Their three children, Brenda, Marsha, and Joe Jr., their eight grandchildren, and their 16 great-grandchildren in Maine still meet at Pizza Hut in various combinations. Bud and Verna became Winter Texans in 2003 and continued to visit the Pizza Hut in Mission on East Expressway 83 weekly until Verna passed away in 2014. Several of Bud’s friends from Chimney Park RV Resort still accompany him to Pizza Hut for Sunday supper, where he usually enjoys a Meat Lovers or a Supreme. The waitresses all know

the chalk doggy bank, was purchased in Mexico in November and brought home to the Monte Cristo RV Park. A plan was quickly concocted to fill the bank for a charitable cause with winnings from golf games, donations from RV park residents, and even donations from the golf pro for golf instruction. It was decided that charitable cause would be St. Jude Children’s Research Hospital. As the word spread, Turo started filling up with donations from others in the Monte Cristo RV Park, neighboring homeowners, and players in a weekly golf tournament at Monte Cristo Golf Course. An anonymous person offered to match all of the donations in Turo. St. Jude’s was contacted, and they advised us that they wanted to have a representative present when Turo was opened and the money counted. Tuesday, January 30, at 4 p.m., members and friends of Park residents gathered with the St Jude’s representatives in the clubhouse. We opened Turo and counted the money inside. We were very happy to present St. Jude’s Children’s Research Hospital with $6041.80! •

Victoria Palms Sewing Quilting Stitching Room is proud to present their seventh biennial quilt and creative arts show, with an exceptional display of quilts, from king-size to throws, antique, hand-quilted, and machinequilted. There will be a variety of outstanding pieces, including wall hangings, table runners, purses, totes, and jackets on display, along with needlework, Swedish weaving, hooked rugs, knitted and crocheted pieces, and fabric sculptures. The SQS Room will also have a display of pieces created for this year’s challenge. The challenge was to choose an advertisement for inspiration and to create a piece at least 12 inches by 12 inches. The variety of challenge pieces is astounding, from embroidered pieces to quilts to totes. Victoria Palms will once again have other artisans from the resort in attendance to showcase their talents. Some of the artisans include stained glass artists, woodcarvers, woodworkers, painters, scrapbook experts, and card-making crafters. Vendors will be available to help plan your next project, with a wide array of fabric, tools, and gadgets. Scissor sharpening will also be available the day of the show. There will be informative

demonstrations throughout the show, including rug hooking, pine-needle basket weaving, and a circular sockknitting machine. Vendors will also be conducting demos in their booths throughout the day. Everyone attending the show will receive a ticket to enter the drawing for a Bernina Bernette B37 sewing machine with rolling case and quilting attachments, which will be awarded at the close of the show. Attendees will also have the opportunity to win one of the many outstanding door prizes. Tickets may be purchased to win the 2018 Opportunity Quilt, Rainforest Rhapsody. The queensize quilt, complete with a storage bag, is a variation of Autumn Braid, pieced from beautiful, rich, batik fabrics in blues, turquoises, greens, and oranges. It is a stunning piece and a must see. Tickets are $2.00 each or 3 for $5.00. The drawing will be held at the close of the show. Victoria Palms Restaurant will be open offering both breakfast and lunch specials, as well as the full menu. Groundbreaking Ceremony Kicks Off Construction of Newest Free-Standing ER in McAllen Special to Welcome Home RGV

Texas Health System administrators and staff were joined by McAllen city leaders, chamber representatives, and local law enforcement January 18, breaking ground at its newest free-standing emergency department construction site. Local dignitary, McAllen Mayor Jim Darling, expressed his support for the new STHS ER in McAllen in front of a large crowd, including all STHS CEOs, members of the STHS board of directors, representatives from the McAllen Chamber of Commerce, the RGV Hispanic Chamber of Commerce, and the RGV Partnership, McAllen Police Chief Victor Rodriguez, representatives from other law enforcement teams in Hidalgo County, and first responders.

The large group took part in a ceremonial shoveling of dirt at the corner of Ware Road and Nolana, which will soon be home to South Texas Health System’s newest 24hour emergency department, the eighth ER for the largest healthcare system in the Rio Grande Valley. STHS ER Ware Rd. will be staffed with medical personnel and equipped with the same diagnostic technology available in South Texas Health System’s hospital-based emergency rooms. South Texas Health System is honored to serve the growing communities across Hidalgo County. •

Snow to Sun RV Resort to Host 3rd Annual Wedding Anniversary Celebration by Jess Merrill

21 will mark the Third Annual Wedding Anniversary Celebration for couples at Snow to Sun RV Resort who have been married 60 years or longer. Irene Gale has been wintering at Snow to Sun six years and volunteering since she first arrived from Buffalo Point, Manitoba. When the 60th wedding anniversary celebration began three years ago, she worked on the decoration committee and helped serve dinner to celebrants. This year she chairs the event. “In past years, we have had as many as 15 couples sign up,” Gale said. “This year, there are 12 so far.” The celebration will occur as an add-on to the regularly scheduled 5:00 p.m. Hamburger Night, with the Hitman extending his Happy Hour performance to provide music. When newlyweds of this group recited their vows in the 1950s, Dwight Eisenhower was the 34th president, succeeding Harry Truman in 1953. The average cost of a new home was $9,000 – $13,000, the

average annual income was less than $5,000, and the average price of gasoline was less than 25 cents per gallon. In 1951, I Love Lucy premiered on CBS, and the first commercial computer (UNIVAC) was installed at the U.S. Census Bureau. Ralph and Lois Torreson met at a high school homecoming dance in Grettinger, Iowa. He asked her to dance, and Lois said, “We’ve been dancing ever since.” They were married December 5, 1953. Lois worked as a cosmetologist until the children--three girls and a boy-were born and then became a stayat-home mom. Ralph farmed and operated an oil-and-gas business, including several convenience stores. Ralph is also a U.S. Navy veteran. He served at the Pensacola air station, working on airplanes throughout his two-year service. When asked for the secret to being happily married 64 years, Lois said, “Have fun.” Ralph said, “She’s very understanding.”

communities we love to visit all year long. Most do not think of Midwest destinations as a foodie paradise; well, we beg to differ! Kenosha has some of the best bakeries on the planet. If you like pie, you need to visit Elsie Mae’s Canning, located at 5507 6th Avenue. From pies to other baked goods, it’s a dessert lover’s dream come true. Lighthouse enthusiasts will appreciate the views, as well as the history that lies within them. A visit to Kenosha would not be complete without a climb to the top of Southport Lighthouse. The thing we loved about this lighthouse is that if you climb to the top of the lighthouse, it’s a fairly easy climb. When you make the climb, see if you can distinguish the four districts of Kenosha: Library Park Historic District, Third Avenue Historic District, Civic Center Historic District, and the Pearl Street Historic District. The Civil War Museum is a must while visiting Kenosha. If you have not thanked a veteran in the past

year, you will find yourself wanting to thank all of them you see. If you are like us, you will leave with a sense of gratitude and a desire to be more appreciative of the freedoms we have in the United States of America. This museum is unique in that it focuses on the upper Midwest states of Illinois, Indiana, Iowa, Michigan, Minnesota, Ohio, and Wisconsin. The stories told throughout the attraction focus on the perspective from these midwestern states. Have you ever taken a ride on a street car? If not, Kenosha is where you can do that! Hop on, hop off, and explore all Kenosha has to offer. One important note is that these street cars are wheelchair friendly. The best advice we can give you is to get out of the car and explore. Kenosha also offers numerous parks throughout the town with beautiful views of Lake Michigan and other interior lakes. You will find something that inspires you, as Kenosha offers a little something for everyone. •

There will be a $1.00 donation collected at the door, which will be used to further our work on charity quilts and military quilts. This donation provides you with delicious free refreshments, a delightful time visiting with the quilters, and a viewing of the newest additions to

the quilting world. Your ticket will be placed in a container, and several tickets will be drawn throughout the afternoon for door prizes. There will also be tickets available for sale for a chance to win our opportunity quilt, a wall hanging, and other items. You do not need to be present to win. The chairperson is Sandra Johnson, a very talented and gifted quilter. She works very diligently on the show, making sure each faction of the show is complete and insuring that we have a grand event to attend. Mark this on your calendar as your highlight of the season. South Padre Island Golf Club is actually in Laguna Vista, surrounded by nature and located along the Laguna Madre Bay. It is a public course that will allow you to take in the sights, sounds, and smells of nature along the bay as you golf. The South Padre Island Golf Club course was built in 1996 by Landmark Land Company. The fairways are Bermuda grass and the greens are Champion Bermuda. The course is complete with sand traps, water hazards, and natural borders of wildlife corridors that run from the property into the bay. The course has four sets of tees, so the golfer has a choice. Par for the course is 72. Men’s tees are rated 73.5/129 from 6931 yards,

69.3/125 from 6291 yards, and 66.6/120 from 5542 yards. The shorter tees at 5406 yards are rated for women at 69.5/121. The Oak Tree Grill, located on the property, serves breakfast and lunch during the season from 7 a.m. until 3 p.m. It also has a full-service bar with great daily Happy Hour specials on food and drinks. LEXINGTON Museum On the Bay Board President Pat Veteto has announced plans for the 25th Annual Stage Door Canteen to be held aboard the USS LEXINGTON Museum Friday, February 16, at 7:00 p.m. The event will commemorate the 75th anniversary of the commissioning of USS LEXINGTON (CV-16). Steve Banta, Museum executive director, said this year’s show will recreate the Canteen shows from WW II, when famous entertainers traveled the world performing for

service men and women far from home. Headlining the star-studded cast will be the USS LEXINGTON Big Band Orchestra. Celebrated vocal artists Jason Armstrong, Flicka Rahn, Carla Gardiner, and Victoria Majors will perform songs of the era. Scott Plant, a recipient of the Texas CMA Hall of Fame Award, will entertain you with his fiddle! Described as a magical evening of nostalgia, the show has been a complete sell-out for the last 24 years. Tickets are $60 per couple and

$35 for singles for open seating. Reserved tables of ten are available for either $400 or $500. The higherpriced tables are closer to the dance floor. Advance ticket purchase is required. With the large number of Mexican

and Tex-Mex restaurants in the RGV, it’s refreshing to find one that is not just another pretty face. Palenque Grill has two locations in our area; we visited the one at 421 E. Nolana (956-631-2632). A statement we read is “un rinconcito de Mexico,” meaning a little piece of Mexico. The roots of this chain began in Guasava, Mexico, and those roots have grown into the Palenque group of eateries: Taco Palenque, Pollo Palenque, and Palenque Grill. While the first two are essentially fast-food restaurants, Palenque Grill is more fine dining, but with a casual, family-friendly flair. The word “palenque” refers to a small town surrounded by a wooden wall. In Mexico, such places were used for cock fights (explaining the large, blue rooster in front of the restaurant) but are now locations for concerts and other events. A unique feature of this restaurant is the dual menus. One is a typical listing of dishes and prices; the second is filled with mouth-watering, full-color pictures of some of their specialties so you will know exactly what you are ordering and how it will look. Menu descriptions are in “Spanglish,” a combination of both Spanish and

English wording, fun to read and translate (with help from the wait staff). Our lunch was orchestrated by Jose Camacho, assistant general manager, and Marcelo Rodriguez, field marketing manager. They worked with the kitchen staff to make us special sampler plates of several of their most popular dishes so we could taste them all. Tortilla chips were presented to the table with a pair of signature dips. The refried beans with chorizo dish were described to us as being “like grandma would make.” They were excellent, with just enough of the sausage flavor to announce to your tongue that it is there but not enough to be hot.

These beans are only available as an appetizer. Second was a spicy, salsa-flavored dip with tatemada (charred) jalapeño peppers. It is a nice complement to the neutral flavor of the flour tortilla chips. Both were different and excellent starters. Gulf Shrimp Recipe

• Shrimp—the number and size according to your taste and your plans • Flour • Spice(s) of your choice • Eggs • Panko breadcrumbs • Cappadona Ranch Mesquite Bean Jelly with Chilli Pequin Peel, rinse and butterfly shrimp. Get three bowls--one with flour and a little bit of spice, the second with egg and a splash of water (mixed well), and the third with Panko breadcrumbs. Dip the shrimp first in the flour mixture and then in the egg. Roll the shrimp in the Panko bread crumbs. Heat vegetable oil in a pan and fry all of your shrimp. Place cooked shrimp in the oven or warmer at 200 degrees until all of your shrimp is fried. Get another pan and place a teaspoon of butter over medium heat with half a jar (or a full jar) of Cappadona Ranch Mesquite Bean Jelly with Chilli Pequin, and fold shrimp into the jelly mixture, making sure it’s well coated. iced tea made with hibiscus flowers-very different and very flavorful. Next up was pasta cuchi cuchi with chicken (con pollo). Spaghetti was nestled into a light but creamy white sauce with strips of poblano pepper and kernels of sweet corn. Strips of grilled chicken breast were in the mix, but it can also be ordered with shrimp. The kitchen created a plate of garritas leon, which are thin slices of grilled ribeye steak, grilled shrimp, grilled chicken, onions, and peppers. The steak was well seasoned; the chicken was just right for us to savor with the trio of sauces and lime-with a squeezer!--that accompanied the plate. These three sauces are salsa casera, salsa trompo, and salsa avocada. They ranged from no heat to a moderate pepper intensity. Taste each one first to see what is to your liking. They are served with grilled entrees. Dessert was the most delicious piece of tres leches. This is a cake that can be soggy if not made correctly. This tall piece held its

shape very well and was sweet and decadent and sharing it was exactly enough at the end of the meal. A children’s menu is available, with kid favorites such as hamburgers and chicken fingers. Palenque Grill specializes in North Pacific Mexican cuisine. The menu describes this as being “100% Mexican” with the flavors of the North Pacific coast of that country, including dishes from Sinolao and Sonora and Baja, California (north and south). All I know about that area is that they must have some awesome cooks and complex flavor profiles, basing this statement on what we enjoyed at Palenque Grill. • Sandy Olson--

was the town clerk. A friend got Bud to join him part time in the gravedigging business, which led to an association with the local funeral directors and burial-vault company. He bought the cement-vault company and sold the store. After retiring, Bud and Verna enjoyed travelling in the U.S. and Canada and took four RV trips to Alaska. They also spent some time in the winters at their hunting camp at Duck Lake, only accessible by snowmobile. They missed pizza night and decided to seek warmer winter weather. While visiting Verna’s older sister, Louise, in the Rio Grande Valley, Bud and Verna decided to give it a try. In 2003, they set up ‘housekeeping’ at Chimney Park RV Resort in Mission. Bud’s neighbor, Larry Boggs, invited Bud to a senior league softball game, and Bud decided he would like to play. He played until two years ago. Bud also has won a couple of pool tournaments in Valley Senior Olympics. He is an avid bicyclist, having toured the trails in the Mission area, still going on group rides for up to 10 miles. Bud misses his wife of 65 years, but his children visit him in the winter, and he lives close to them in when in Maine. He also enjoys his friends in Texas. Bud’s philosophy is “live each day to the fullest.” •

That is why, as arts organizations around the nation struggle with dwindling attendance and rising costs, the nonprofit Harlingen Concert Association invests time and resources to engage local students in master classes and performances with touring artists it brings to town. Since 1933, the Harlingen Concert Association (HCA) and its predecessors, the Rio Grande Valley Civic Music Association and Harlingen Community Concerts, have provided high-quality, yet affordable, live entertainment to adults and children in South Texas. A commitment to lifelong learning through artistic experience is a core value of HCA and integral to its efforts to help audiences of all ages and backgrounds develop a personal connection with music and the arts. This season, HCA contracted with two groups to conduct master classes with students prior to their evening shows at the Harlingen Municipal Auditorium. The first student outreach program was with the performers in Two on Tap last month. The second will be next week when the 3 Redneck Tenors come to town. In the case of Two on Tap, Broadway veterans Melissa Giattino and Ron DeStefano sent a teaching video of the soft shoe classic, Tea for Two, to three Harlingen dance studios long before they arrived in Harlingen. For weeks, students at Rio Grande Valley Arts Studio (RGVAS), Monarch Dance Studios, and Palm Valley Gymnastics and Dance practiced the number repeatedly, both individually and collectively. Then, on the afternoon of January 11, they met and rehearsed with Giattino and DeStefano, getting tips on choreography and staging as they prepared for the evening’s show. In addition to a superb rendition of Tea for Two, the students also presented short pieces of their own creation. The packed house of more than 1,000 Winter Texans and local families were treated to a riveting modern dance by youngsters from Palm Valley Gymanastics, a graceful ballet performed by RGVAS students, and a lively jazz performance by those from Monarch. It was a memorable experience for all involved and hopefully sparked greater interest in the performing arts. Wednesday, February 21, the

talented and versatile 3 Redneck Tenors will conduct a master class with students in the Harlingen Consolidated Independent School District prior to that evening’s show. America’s Got Talent finalists Matthew Lord, Blake Davidson, and Jonathan Frugé are sure to make a lasting impression on the youngsters. Lord, a native of California, has a voice capable of repertoire ranging from the 18th Century to contemporary compositions. His stage work is consistently praised for its naturalness, intensity, and commitment. Davidson is an awardwinning singer who has performed all over the world. His experience includes opera, symphony, and musical theatre, as well as solo concerts at Lincoln Center, Carnegie Hall, and the Tokyo Opera House. Jonathan Frugé, the third part of this talented trio, has been hailed as “always funny” and “gripping” in his vocal performances. A native of Lubbock, Texas, Frugé holds a Bachelor of Arts degree in music performance and a Masters of Music in vocal performance from Texas Tech University. Financial support from several local businesses has helped make these student-outreach programs possible. Peace in the Valley

Ernie Ford and Elvis made popular the hymn Peace in the Valley. Both of their deep, baritone voices soothed the notes, asking for peace. We all want peace in our lives, with our spouses and children and with the people with whom we interact and work. Comfort, happiness, and contentment are attributes for which we strive. However, life gets in the way. There are bills to pay and repairs to be made to our RV, our home, and to ourselves. It seems like doctors’ appointments, aches, and pains come more frequently. Then peace gets shoved under the calendar of events and replaced by stress, discomfort, and frustration; but peace in our soul is always possible. Jesus said “Come to me, all you who are weary and burdened, and I will give you rest.” (Matthew 11:28) What He is saying is, in so many words, I will take your burden, I will carry your uneasy feelings, I will disperse your fears. You do not have

to do it, I will. His gift to mankind was His sacrifice, and this gift of sacrifice is offered to every one of us freely; all we have to do is ask Him to be our Lord and Savior. Will our burdens be entirely lifted and will our lives be joyful every minute? No, but our Savior is our comforter, our refuge. He becomes the foundation of our burdens; the weight is lifted when we lift our lives to Him. It has been proven--those who pray and give their concerns to Jesus recover sooner, worry less, and have a happier life because of their faith. Peace in the Valley, be it here in the Rio Grande Valley or even the Valley of the Sun in Arizona, starts within us, with our comfort in knowing there is a far, far higher power than us, and He is willing to take our burdens, to carry them for us. Real peace is within our reach through prayer. •

Country Apple Coffee Cake • 2 tablespoons butter, divided • 1 1/3 cups peeled and chopped apples, divided • 1 (10 oz.) can Hungry Jack Flaky Biscuits • 1/3 cup brown sugar, firmly packed

• 1/3 cup light corn syrup • 1 1/3 teaspoons whisky (optional) • 1 egg • ½ cup pecan pieces

Preheat oven to 350 degrees. Grease bottom and sides of 9-inch round or 8-inch square pan with 1 tablespoon of butter. Spread one cup of apples in pan. Cut each biscuit into four pieces. Arrange point-side up over apples. Top with remaining apples. Mix remaining butter with brown sugar, cinnamon, corn syrup, whiskey, and egg for 2 minutes. Stir in pecans. Spoon over biscuits. Bake 35-45 minutes until deep golden brown. Cool for 5 minutes. Then drizzle glaze over cake. Glaze: • 1/3 cup powdered sugar • ¼ teaspoon vanilla extract

Mix powdered sugar, vanilla, and milk together until smooth. (cooked) salsa, you are in for a major treat when you make your own— fresh--version of our favorite condiment. This simple sauce is most wonderful. It’s easy and quick, and the results will make your tongue sing! Since there is no cooking, the kitchen remains cool. •

Spicy Cherry Tomato Salsa • 1 pound cherry tomatoes, washed • 2 large cloves garlic, finely minced • 2 tablespoons chopped fresh cilantro • 1 tablespoon white vinegar

• 1 large white onion, peeled, minced • 2 teaspoons fresh lime juice • 2 jalapeños, seeded and chopped • Salt and black pepper to taste

NOTE: If you are a person who dislikes the flavor of cilantro, just omit it. The same amount of chopped fresh parsley will give you the nice, green flecks in your finished salsa. If you like a hot, spicy salsa, leave the jalapeño seeds and veins in when you chop them or use a hotter pepper, such as serrano Put the tomatoes into a food processor. (Do this in batches if you have a small processor.) Pulse them until they reach a coarse consistency. Transfer the tomatoes to a large bowl, along with all the juice. Add the remaining ingredients and combine gently but thoroughly. Cover with plastic wrap and refrigerate for about 2 hours. If the salsa looks too watery when you put it into a serving dish, drain away some of the liquid, but don’t discard it. It makes a delicious drink, hot or cold. THE NATIONAL ANTHEM O Canada was proclaimed Canada’s national anthem July 1, 1980, one century after it was first sung in the City of Québec June 24, 1880. The music was composed by Calixa Lavallée, a well-known composer born in Verchères, Canada. French lyrics to accompany the music were written by Adolphe-Basile Routhier, a poet and judge born in Saint-Placide, Lower Canada. Many English versions have appeared over the years. The version on which the official English lyrics are based was written in 1908 by Robert Stanley Weir, a poet born in Hamilton, Ontario.

THE MAPLE LEAF TARTAN

The Maple Leaf Tartan was declared an official national symbol March 9, 2011. Created in 1964 by David Weiser, the Maple Leaf Tartan was designed in anticipation of the 100th anniversary of Canada’s confederation in 1967. Inspired by the colours of the maple leaf through the changing seasons, the tartan’s pattern incorporates the green of summer leaves, the gold of early autumn, the red of the first frost and finally, and the brown tones of the fallen leaves before winter. The Maple Leaf Tartan is used by The Royal Canadian Regiment Pipes and Drums and has also been worn by the 2nd, 3rd and 4th Battalions. A symbol of national pride, the tartan was designed to be worn by Canadians from all backgrounds – regardless of their ancestry – especially on national days like Canada Day (July 1) and Tartan Day (April 6).

NATIONAL TREE Maple tree Although the maple leaf is closely associated with Canada, the maple tree was not officially recognized as Canada’s arboreal emblem until 1996. Of the 150 known species of maple (genus Acer), only 13 are native to North America. Ten of these grow in Canada: the sugar, black, silver, bigleaf, red, mountain, striped, Douglas, vine, and Manitoba maples. At least one of the 10 species grows naturally in every province. Canada’s arboreal emblem is the generic maple species. Trees have played a meaningful role in the historical development of Canada and continue to be of commercial, environmental and aesthetic importance. Maples contribute valuable wood products and sustain the maple sugar industry; they are ideal for promoting Canada as a world leader in the sustainable management of forests.

The beaver was given official status as an emblem of Canada when “An Act to provide for the recognition of the Beaver (Castor canadensis) as a symbol of the sovereignty of Canada” received royal assent March 24, 1975. However, the beaver was a part of the Canadian identity long before Parliament passed the National Symbol of Canada Act. After the early European explorers realized Canada was not the spice-rich Orient, the main profit-making attraction was the beaver population. In the late 1600s and early 1700s, the fashion of the day demanded fur hats, which needed beaver pelts. As these hats became more popular, the demand for the pelts grew. King Henry IV of France saw the fur trade as an opportunity to acquire much-needed revenue and to establish a North American empire. Both English and French fur traders were soon selling beaver pelts in Europe at 20 times their original purchase price.

TOTEM POLES AT BROCKTON POINT (STANLEY PARK) The nine totem poles at Brockton Point are British Columbia’s most visited tourist attraction. The collection started at Lumberman’s Arch in the 1920s when the Park board bought four totems from Vancouver Island’s Alert Bay. More purchased totems came from Haida Gwaii (Queen Charlotte Islands) and the BC central coast Rivers Inlet to celebrate the 1936 Golden Jubilee. In the mid1960s, the totem poles were moved to the attractive and accessible Brockton Point. The Skedans Mortuary Pole is a replica, as the original was returned home to Haida Gwaii. In the late 1980s, the remaining totem poles were sent to various museums for preservation and the Park board commissioned and loaned replacement totems. The ninth and most recent totem pole, carved by Robert Yelton of the Squamish Nation, was added to Brockton Point in 2009.

SKYLON TOWER IN NIAGARA FALLS ONTARIO Skylon Tower in Niagara Falls Ontario is the tallest total entertainment complex. It includes indoor/outdoor observation of the Falls from 233 meters (775’) and two great dining rooms, both overlooking the Falls. At the base is Niagara’s largest indoor amusement area, complete with a food court and 4D Theatre. Shop in 12 specialty shops on the main level as a prelude to your ride to the top in the glassenclosed Yellow-Bug elevators. Construction on the Tower was started in May,1964, and the Grand Opening was October 6, 1965. The total height of the tower, from the base to the top of the flashing beacon, is 520 feet. The height of the tower above Niagara River is 775 feet. There are three elevators to take you to the top in 52 seconds. The number of steps in each of the two stairways from the lower exhibition floor to the observation floor is 662. • 1 lb. PEI pork tenderloin, cut into ½-inch strips • 2 carrots, sliced thinly • ½ cup roasted cashews, unsalted • 1 Tbsp. cornstarch • Salt to taste

Heat the oil in a wok or a deep, heavy skillet over high heat. Add pork and stir-fry for 3-4 minutes or until lightly browned. Add soy sauce, and stir-fry for 1 minute. Reduce heat to medium and add carrots; cover and cook for 3 minutes. Add peppers and cashews and stir-fry for 3 to 4 minutes. Sprinkle with brown sugar and stir until dissolved, about 1 minute. Dissolve cornstarch in water, add to wok or skillet, stir, and cook until sauce thickens and clears. Season with salt. Serve immediately with rice. Makes 4 servings.

(STLC) hosted its 3rd Annual South Texas Literacy Symposium in collaboration with Literacy Texas and the UTRGV Office of Public Art. More than 100 professionals from across the RGV participated in a day-long premier professional development conference, discussing topics and regional issues relating to literacy. Designed for leaders of nonprofit organizations, volunteers, local literacy providers, librarians, teachers, and agency representatives working with the community, participants were able to attend Saturday, January 27, free of charge. Literacy transcends our entire lives each and every day. From the food we select at the grocery store to the news we read, increasing literacy rates in the Rio Grande Valley will help our children and our community be more successful. “We’re proud to be able to offer this unique opportunity to bring speakers and resources to the RGV,” said Dr. Ida H. Acuña-Garza, executive director for the STLC. “By providing the quality sessions, free of charge, we hope to share with as

Comforting Classic

Beef Stew

ith this gloomy overcast weather, we look to dishes that are warm and comforting. Here is a classic dish that will lift your spirits and warm you from the inside out. Admittedly, it does involve a longer list of ingredients but it isn’t difficult to make at all. The flavors build starting with the red wine and the fresh herbs and through the braising process the inexpensive meat becomes tender and delicious. Go ahead try it. I promise it will be worth the effort! Bon Appétit! •

• 1/4 cup pure olive oil • 3 tablespoons butter • 2 cups all-purpose flour • 2 to 3 lbs beef chuck shoulder roast, cut into • 2-inch pieces (this cut may also be called boneless chuck roast) • Sea salt and freshly ground black pepper • 1 bottle good quality dry red wine (recommended: Burgundy or Merlot) • 8 fresh thyme sprigs • 6 garlic cloves, peeled and smashed

• 1/4 teaspoon ground cloves • 2 bay leaves • 2 1/2 cups beef stock, low or no sodium • 9 small new potatoes, scrubbed clean and cut in 1/2 • 1/2 pound carrots, peeled and sliced thick • 2 cups frozen pearl onions • 1 pound white mushrooms, cut in ½ • Sugar • Extra Virgin Olive oil • Fresh flat-leaf parsley, chopped, for garnish

Preheat a large heavy-bottomed saucepan or Dutch oven over medium-high heat with the oil and butter. While the pan is heating, arrange the flour on a large dish. Season the cubed beef with some salt and freshly ground black pepper and then toss in the flour to coat. Shake off the excess flour and add the beef pieces in a single layer to the hot pan. Do this in batches so as not to over crowd the pan. Be sure to brown all of the pieces on all sides and then remove them to a plate and set aside. Add the wine to the pan over high heat and bring up to a simmer while you scrape the bottom of the pan with a wooden spoon being sure to loosen up all those delicious bits. Once the wine is hot, add the browned meat, thyme, smashed garlic, ground cloves, freshly ground black pepper and salt, to taste, bay leaves and beef stock. Bring the mixture to a boil and then reduce the heat to a simmer and cook uncovered until the liquids start to thicken, about 15 to 20 minutes. Cover and cook on low heat for 2 1/2 hours. After 2 hours add potatoes, carrots, pearl onions and mushrooms, as well as a pinch of sugar, which will balance the acid from the red wine. Turn the heat up slightly and simmer, uncovered, for 30 minutes more, until the vegetables and meat are tender. Taste and season with salt and pepper and remove the thyme sprigs and bay leaves. To serve, place the stew in a soup bowl, garnish with parsley, and drizzle with olive oil. Serve with a piece of crusty bread. •
