your RV park, I’ll be far, far away sail-ebrating on the 2nd annual ‘Cruise with Kristi’. As a matter of fact, I’ll probably more than likely be snorkeling with stingrays in Grand Cayman. It’s a tough job, I know – but somebody has to do it! This year, we have 172 Winter Texans who have signed up to go with us. It’s hard for me to wrap my head around that – that so many people want to celebrate with us. I’m beyond thrilled with the response and we look forward to doing it all over again next year.

Clogover Vine! Cowboy! Stomp Double! Special to Welcome Home RGV

The

RGV annually hosts an afternoon clogging festival, aptly named Clog-in-Fest Fun Dance, which is open to all cloggers. This year’s event was held January 23 and was hosted by the Texas Country Cloggers at Bentsen Grove in Mission. Clogging steps are cued by the instructors, and the dancers execute

them with style and flare. Outhouse! Clogover Vine! Stomp Double! Walk the Dog! Cues are given in time for the dancers to complete the current step in anticipation of the next one. Plein Air Painters in Port Isabel Library in February Special to Welcome Home RGV

The

pictures you see hanging in the Port Isabel Library in February were painted “en plein air”--in the open air--as opposed to in a studio. Painting “en plein air” was considered a revolutionary approach to art in the mid-19th Century as impressionist artists, such as Monet and Renoir, moved outside the academy and studio to capture light, shadow, and color in natural settings. A “plein air” approach is an important element in the art of the United States, particularly in the work of California impressionists. Canadian visitors will recognize “plein air” as central to the work of the Group of Seven and its associates. The “plein air” group is part of the Laguna Madre Art League, and you will see us around Port Isabel and the Island trying to capture the picturesque buildings, waterways, beaches, and street corners in oils, acrylics, watercolors, or pastels. • • • Karol Tucker • • • Winter Texan Karol Tucker is always ready to go when it comes to “plein air” painting. Board of Directors of the Children’s Advocacy Center of Hidalgo County invites you to join them for a fabulous evening featuring fine wines, craft beers, and tantalizing cuisine provided by local restaurants. This annual fundraiser, Vinos, is Saturday, February 17, from 7:00 –11:00 p.m. at the Embassy Suites McAllen Convention Center. The Children’s Advocacy Center provides services to child-abuse victims and their families. Working with law enforcement, Child Protective Services, and the District Attorney’s Office, the Center provides in-house forensic interviews, family advocacy, and counseling services and facilitates the prosecution of child-abuse cases. Since the Center opened in 2000, over 14,000 child-abuse victims have been helped. Unfortunately, the need for our services continues to rise annually.

Over 1,300 children were served in 2017. With the statistics showing that only 1 in 10 children reports abuse, this number is staggering. Through our program, these children receive the services and help they need to grow up and give back. By providing them with much-needed services, the Center is able to play a huge role in breaking the cycle of abuse! Now, down to the business of it... the Children’s Advocacy Center cannot continue this critical work without community support! Our federal funds work on a 20-percent cash-match system for all grant monies received. This means that every $1.00 donated has the potential to become $4.00! H.O.P.E. Gene Gay: Air Force Veteran, Newspaper Executive, Business Owner by Jess Merrill

Gene Gay enlisted in the U.S. Air

Force when he was 17, September 23, 1953, about two months after the end of the Korean War (July 27, 1953). Gene served his basic training in San Antonio and then went to tech school in Biloxi, Mississippi, where he trained as an electronic technician and air-traffic-control radar technician. In 1954, he reported for his first duty assignment as Airman Second Class (A2C) at James Connally Air Force Base near Waco, Texas. While stationed at Connally, mutual friends introduced him to the woman who would later become his wife, Gail Bartee. After a short engagement, they were married in June of 1957. Gail traveled with Gene to most of his duty stations throughout his 20-year career. She said she loved every minute of it, except when he was in remote places like Vietnam, Thailand, the Northwest Territories, and Greenland. Gene’s Air Force duty stations included assignments at Robins Air Force Base, near Warner Robins, Georgia, Reese AFB, about six

miles west of Lubbock, Texas, and Frobisher Bay in the Northwest Territories (now Nunavut Territory), where he worked with the Canadian Air Force in support of the Distant Early Warning (DEW) Line. The DEW Line was a system of radar stations above the Arctic Circle set up during the Cold War to detect invading Soviet bombers. In the summer months, (JulyAugust), mosquitoes were so thick, Gene said, “You could swing your hand through the air and catch a dozen mosquitoes in one swipe; you couldn’t go outside unless you were completely covered with protective clothing. They didn’t buzz; they just landed and bit. Any patch of exposed skin was immediately covered with them. During winter months, the temperature often dropped to minus-55 degrees F. On the other hand, the fishing was fantastic.” In 1964, Gene and Gail reported to the Philippines, which was a staging point for Gene’s assignments in Thailand and South Vietnam, where his unit set up communications equipment while Seabees built

landing strips for new airbases to support the Vietnam War. He would stay at each site 60 to 90 days, until the military shipped in permanent personnel. Then he returned to the Philippines for a short time until his next mission.

Annual ‘For Men Only’ Deli Lunch in McAllen February 22 Special to Welcome Home RGV

Over

30 years ago, the Temple Emanuel Sisterhood decided it was time to add a kosher-style kick to the local lunch scene. So they specialordered some deli meats and NewYork rye and invited all the men in the community to enjoy a delicious meal in return for a small donation. From that day on, the ‘For Men Only’ Deli Lunch at Temple Emanuel became a much-anticipated McAllen tradition. Thursday, February 22, from 11:30 a.m. to 1:00 p.m., over 2200 people will be served heaping sandwiches (corned beef, salami, or turkey) with all the trimmings. Volunteers prepare for the event, making hundreds of pounds of delicious cole slaw and potato salad, slicing hundreds of garlicky kosher pickles, and baking over a thousand fudge brownies to add a sweet final touch to the meal. A ticket for all of this deliciousness is only $12. “People look forward to this event every year,” said Pat Blum, event chair. “I think the community has really come to appreciate this oncea-year opportunity. After all, who can resist a real deli sandwich with all the trimmings?” Each year, a sea of hungry men sit in the Social Hall to enjoy the sumptuous meal and catch up on local gossip. But why only men? “The idea was to hold a fundraising event men would actually enjoy,”

community are welcome to learn more about South Texas history through the Winter Texan Wednesday series at MOSTHistory in Edinburg. This program will introduce visitors to the museum through half-hour mini tours through portions of the museum’s exhibits. Winter Texan Wednesday: Leatherwork in the Rio Grande Valley is set for Wednesday, February 7, at 3:00 p.m. Museum staff will guide visitors on a short tour of a gallery that is part of the museum’s permanent Rio Grande Legacy exhibition. Following the tour, visitors will be invited to the Courtyard Gallery. Once settled, staff and/or guest speakers will lecture further on the topic of choice. Echoing the theme of MOSTHistory’s Pioneer Ranching and Crafts Day, museum staff members Tom Fort and Joseph Fox will present the different uses of leather through the ages, including by Rio Grande Valley bootmakers. After all, a cowboy--or vaquero-wouldn’t be able to get far without a good pair of boots! Fort and Fox

will also provide a mini guided tour of the River Highway exhibit, which features ranching items donated from the McAllen Ranch. She works in acrylics and enjoys recording her travels. This exhibit illustrates the use of “plein air” painting while travelling and features a view of Venice, Italy, which she visited in October of 2017. The original drawing for this picture was done from the landing dock of her hotel, but the color work had to be completed from a photograph after she dropped her art kit in the canal. Her work has been exhibited in Ottawa and Southampton, Ontario, as well as at Market Days on SPI. • • • Donna Gordon • • • Gordon, a Winter Texan, is a pastel painter and teacher who primarily paints landscapes. She is intrigued by the coastal light and how it can transform the ordinary into the extraordinary. Her landscape paintings are of places where she has experienced that magic. She is

a charter member of Austin Pastel Society and a member of the Pastel Society of New Mexico and Plein Air Painters of New Mexico. She and her husband, David, own Cloudcroft Gallery in Cloudcroft, New Mexico. • • • Diana Grenier • • • Grenier, also a Winter Texan, lives and paints in the Les Cheneaux Islands of Michigan, making her winter home in Port Isabel. She is a member of The International Association of Pastel Society, The Pastel Society of America, and The Great Lakes Pastel Society. Her work includes oil, pastel, acrylic, collage, and watercolor, combining realism and impression in portraits of people, landscapes, and marine subjects. Grenier’s work has received many awards, including the 2011 “Best of Show Gold Medal” for Huron Point, and has been juried into major competitions, including the Great Lakes Pastel Society National Competition and the Pastel Society of America Annual Show. Grenier’s work is displayed at Les Cheneaux Islands Art Gallery and may be seen at Market Days on SPI. This is a simple recipe. It involves brining the Cornish hens, making a

basting sauce, and baking the birds. The connection to Mexico is the use of mangoes, which grow and are popular throughout tropical regions of Mexico. The recipe was adapted from the book Mexico – The Beautiful Cookbook. This recipe is for two hens, but the sauce is actually enough for up to 6 hens. The only ‘exotic’ ingredient is the canned mangoes. H-E-B sells a 15-ounce can of Libby’s mangoes in syrup. Enjoy! Buen apetito! •

Cornish Hens with Mango Sauce Brine the hens:

• 1 quart cold water • 1 tsp. fresh ground black pepper • 2 Tbsp. kosher salt • 1 large garlic clove, finely minced Rinse the thawed hens and remove giblets, if included. Whisk the salt, pepper, and garlic in the water until the salt is dissolved. Place the Cornish hens in a gallon freezer bag and add the brine. Refrigerate for 2-3 hours. Make the mango sauce: • 1 15-oz. canned mangoes in syrup. • 1 Tbsp. butter • 1 Tbsp. brown sugar Puree the canned mangoes with their syrup. Melt the butter in a skillet. Add the puree and the brown sugar and stir. When the mixture comes to a boil, remove from the heat and set aside. Baking the hens: • 4 Tbsp. melted butter – more if needed Preheat the oven to 450 degrees. Place the hens, breast side down, on a greased or sprayed cooking sheet. Baste with melted butter and bake for 20 minutes, basting occasionally. Turn the hens, breast side up, baste with butter, and bake 20 minutes, basting occasionally. Turn the oven heat down to 375 degrees, turn the hens again, and bake for 10 minutes. Turn the hens, breast side up, and baste liberally with the mango sauce. Bake another 5 to 7 minutes, basting with the sauce a couple times or until the birds are golden brown. Check the temperature of the meat to ensure it is at least 165 degrees. Serve immediately. Garnish with fresh, sliced mango, if desired. Serve with leftover sauce for added mango flavor. Randy Hoelscher is a transplanted Texan and half-time RGV resident. High School Theatre has been rehearsing its Valentine’s weekend production of Almost, Maine by John Cariani. A romantic comedy is set in the town of Almost, Maine, where the townspeople are all falling in and out of love in the most bizarre ways. rotisserie chicken from the supermarket gives us the best of both worlds--a perfectly roasted bird without the heat of the oven and a bounty of meat, requiring little effort, that can make more than one meal for about $6. Simply take all of the chicken off the bone-carefully to avoid those pieces of gristle on the legs or wings--and shred it or cut into bite-sized pieces. Using a toaster oven keeps the kitchen cool. This recipe serves 6. •

Red Chicken Enchiladas • About 5 cups of cooked chicken, shredded • 3 Tablespoons olive oil • 3 medium onions, peeled and sliced lengthwise • ½ teaspoons Mexican oregano • 1 can prepared enchilada sauce • 12 white corn tortillas • 1 cup grated Mexican-blend cheese • 16 oz. sour cream In a large heavy skillet, heat the olive oil over medium heat. Add the onions and oregano plus salt and pepper to taste. Stir until the onions are soft, about 15 minutes, then stir in the chicken and remove from the heat. In another heavy skillet, heat vegetable oil (just enough to cover the bottom of the pan). Fry the tortillas, one at a time, just until they are soft and pliable, a few seconds per side. Fill each tortilla with about ½ cup of the chicken and onion mixture and roll into a tube. Place the enchiladas into a lightly sprayed baking dish in a single layer. Spread the enchilada sauce over the top and sprinkle on the cheese. Cover with foil and heat in either a toaster oven at 350 degrees or on the grill, set at medium, with the top closed. Heat until the cheese melts, about 10 minutes. Serve topped with the sour cream. NOTE: The non-stick style of foil is perfect for this dish as it won’t pull the melted cheese off the top of the casserole. Military Academy will hold its annual Iwo Jima Parade Saturday, February 17, at 10 a.m. on the MMA Parade Ground. This year marks the 73rd anniversary of the Battle of Iwo Jima during World War II. Open to the public, this event is a tribute to the courage and sacrifice made by The Greatest Generation to preserve freedom around the world. Because of the subtropical climate of South Texas, MMA is the only organization in the country that holds a battalion-size parade on the actual anniversary (February 19, 1945) of the Battle of Iwo Jima. Last year, 13 World War II veterans attended the parade and more than 350 people filled the parade stands! There will be special reserved seating for Iwo Jima survivors in front of the parade stand, which directly faces the historic Iwo Jima Monument. During the parade, the Iwo Jima survivors will join the MMA superintendent for the ceremonial pass-in-review. Eventgoers are encouraged to stop by the Iwo Jima Museum & Gift Shop after the parade to watch

a video depicting the Battle of Iwo Jima. You are also encouraged to view the Iwo Jima Monument and the gravesite of Cpl. Harlon Block before or after the parade. Since April of 1982, MMA has been home to the Iwo Jima Monument. The magnificent statue depicts six Marines raising the American flag February 23, 1945, during the Battle of Iwo Jima. of assignments. He chose Morón Air Force Base near Seville, Spain. During his three years in Spain, he earned a promotion to master sergeant. Spain was his favorite overseas assignment. Gail recalls a 30-day vacation: “We packed all three kids and their gear in the back of a Toyota and went camping.” They traveled throughout southern Spain, France, Italy, Yugoslavia, Austria, and Switzerland. “Europe is set up better for camping than the United States, at least it was then (1968),” Gene said. The family returned to the U.S. in 1969. Gene transferred to Norton AFB near San Bernardino, California. He worked as a quality-control inspector of radar installations throughout the west. By this time, the Federal Aviation Administration had taken over air-traffic control, and Gene’s job gradually shifted overseas. He stayed in California about one year before a reassignment to support the Ballistic Missile Early Warning System (BMEWS) in Greenland. BMEWS, a cooperative effort with the United States, Canada, and Denmark, replaced the DEW Line. According to Gene, northern Greenland was just cold. There were no facilities for civilians, so Gail and the children couldn’t join him. In 1972, he got an assignment to Tyndall AFB at Panama City, Florida, where he continued to work with air-traffic-control radar. After about six months, he received notification that his next assignment would take him back to Greenland. With no desire to return to Greenland, he decided – at the age of 37 – to retire from the U.S. Air Force. He

had served 20 years plus one day. They returned to Gail’s hometown, Waco, where Gene started college at Baylor University and took a job with the Waco Tribune-Herald. In 1977, he graduated with a B.S. in education, but teaching jobs didn’t pay enough to support a family of five. Instead, he continued with his job at the Waco Tribune-Herald. He worked in printing and distribution and eventually became circulation director and a member of the paper’s board of directors. After approximately 13 years with the Tribune-Herald, Gene bought a small hobby farm near Waco, where they raised cattle. He also joined Gail in her bakery business. They specialized in wedding cakes, birthday cakes, quinceañera cakes, and other custom cakes. They sold the business in 1999, six months before Gene turned 62, and they began RVing. At first, they traveled with fellow RVers. In 2005, the group began caravanning to the Rio Grande Valley. They stayed in RV parks near Mission. However, at the end of each rally, Gene and Gail split from the group and traveled farther down the Valley because they wanted to be closer to their favorite border crossing in Progreso, Texas. They would stay a couple weeks at a time; however, in subsequent years they stayed longer. Then, in 2011, they bought their home at Snow to Sun RV Resort in Weslaco, where they are now full-time residents. Gail is an enthusiastic card player and Gene volunteers as summer activities director. •

Originally from Lansing, Michigan, he has had many careers, including truck driver, information systems director, executive vice president for a graphic arts company, and writer/editor, although he considers himself primarily and always a photographer.

City of McAllen Wants Residents to Know It’s Time to Get Healthy Texas-sized competition to promote healthy living Special to Welcome Home RGV

Mayor Jim Darling and the McAllen City Commission recently voted to have the city compete in the It’s Time Texas Community Challenge, a statewide competition where residents earn points for their community by simply making healthier choices. It’s free, fun and holds people accountable for their New Year’s resolutions! Simply register for the Community Challenge-make sure to select McAllen--and encourage family, friends, and coworkers to compete, as well. “This is an amazing opportunity for McAllen residents to get healthy and possibly win some grant money to increase community healthy activity opportunities and have bragging rights over same-sized cities in Texas,” said Mayor Darling. “I encourage everyone to sign up and to do all of the very simple and healthy activities identified in the It’s Time Challenge to help McAllen earn points.” In order for the City of McAllen to earn points, residents must sign up for the competition at ittcommunitychallenge.com. STATE BIRD American Robin The American Robin (Turdus migratorius) has been the state bird since 1931 and has been called the “best-known and best-loved” of all birds in Michigan.

STATE FLOWER Apple blossom The apple blossom (Pyrus coronaria) blooms on the apple tree. It has been an official state symbol since 1897 and was noted as “one of the most fragrant and beautiful species of apple.”

STATE TREE White Pine The White Pine (Pinus strobus), is a symbol of Michigan’s rich logging history. From the 1860s to the late 1890s, Michigan led the nation in lumber production.

Michigan’s Great Seal was designed by Lewis Cass, Michigan’s second (non-acting) Territorial governor. The seal was patterned after the seal of the Hudson Bay Fur Company. It was presented to the Constitutional Convention of 1835 and adopted June 2, 1835, as the official Great Seal of Michigan. At the top of the Seal are the words E Pluribus Unum. These words come from our national motto meaning, “From many, one,” or, in other words, forming one nation from many states. Below is the American Eagle, our national bird. This symbolizes the superior authority and jurisdiction or control of the United States. In its claws, the eagle holds three arrows and an olive branch with 13 olives. The arrows show that our nation is ready to defend its principles. The olive branch means we want peace. The olives stand for the first 13 states. Tuebor, meaning, “I will defend,” refers to Michigan’s frontier position. The shield is held by two animals representing Michigan, the elk on the left and the moose on the right. Michigan is on an international boundary, and the figure of the man shows his right hand raised in peace. The left hand holds a gun to say that although we love peace, we are ready to defend our state and nation. Si Quaeris Peninsulam Amoenam Circumspice means, “If you seek a pleasant peninsula, look about you.” It is believed this refers to the Lower Peninsula. The Upper Peninsula was added in 1837 to pay for the loss of a strip of land on our southern border given to Ohio when Congress made Michigan a state. The words The Great Seal of the State of Michigan, A.D. MDCCCXXXV complete the state seal. When you take away these words and border, this becomes the Coat of Arms of the State of Michigan. Changes in the Great Seal have been made from time to time. However, the present seal has not been changed since 1911.

Michigan’s state flag was first unfurled at the laying of the corner stone at the monument of the Solders’ National Cemetery at Gettysburg on the Fourth of July, 1865. By Act 209 of 1911, the State of Michigan flag was adopted with a simple phrase, “The State Flag shall be blue charged with the arms of the state.” The state flag, Michigan’s third since becoming a state in 1837, features the coat of arms showing an eagle holding an olive branch and arrows. An elk and a moose support a shield displaying a man standing on a grassy peninsula. ...making magic with Food Recipes from Michigan Great Foodini’s Michigan Koegel Coney Island Dip by Renee Chodkowski (greatfoodini.com) • 8 oz. cream cheese, softened • 1 cup shredded cheddar cheese • 4 Koegel hot dogs, grilled and coarsely chopped • 12-14 oz. prepared Coney-dog sauce • ½ cup finely chopped onion • Prepared yellow mustard • Tortilla chips or Fritos Preheat oven to 350. Combine softened cream cheese with shredded cheddar cheese until smooth. Spread mixture in bottom of pie plate. Sprinkle with coarsely chopped hot dogs. Cover mixture with prepared Coney-dog sauce and bake at 350 about 20 to 25 minutes or until mixture is heated through and bubbling around the edges. Remove and sprinkle with finely chopped onion and drizzle mustard in a decorative pattern. Serve with tortilla chips or Fritos.

Michigan Chocolate-Covered Cherry Scones by Renee Chodkowski (greatfoodini.com) • 3 cups all-purpose flour • 2 ½ teaspoons baking powder • ½ teaspoon salt • 1 cup half and half • 1 teaspoon almond extract • ¾ cup dark chocolate chips

• ½ cup sugar (plus more for garnish) • ½ teaspoon baking soda • 1 stick butter, room temperature • ½ cup milk • ¾ cup Michigan dried cherries

• Additional ½ cup chocolate chips, melted Preheat oven to 350. Mix all dry ingredients. Cut in butter until coarse. Add almond extract, half and half, and milk and blend until just mixed. Fold in cherries and chocolate chips. Lightly grease large baking sheet. Using floured hands, divide dough into 2 equal parts. Form into balls and place on baking sheet. Flouring hands, if necessary. Press dough into a circle about 1” thick, leaving two-inch space between dough. Using floured knife, cut circles into 8 wedges. Sprinkle with a little sugar. Bake 20 to 22 minutes or until golden and dry in the middle. Remove, cool at least 10 minutes, and cut again with sharp knife. To drizzle, place melted chocolate chips in a freezer-style zipper bag and squeeze to one corner. Snip off just a tiny bit of the bag to form a piping bag and drizzle melted chocolate over the scone. Serve with unsweetened whipped cream, if desired.

God’s Worthy Women Conference February 17 in Donna

This

is the 10-year anniversary of the God’s Worthy Women ladies Christian conference. Because of this special anniversary, we are focusing on memories. I recently read an excerpt from the devotional book, Upper Room, by Rosa de Crabb, which touches on this perfectly. “Reflecting on the Influence or the Weight of Memories; Memories of difficult events can easily become burdens we carry for the rest of our lives. But memories can be beautiful gifts,” de Crabb writes. We are so blessed to have the written Word today. In Ancient times, the only way God could insure that people would remember His promises was to create memories through physical actions and the spoken word. Throughout the Bible, God placed stones of remembrance in everyone’s path so He would not be forgotten. Joshua 4 reminds us that as Joshua crossed the River Jordan into the Promised Land, he instructed a member from each tribe to take a stone from the river bottom and place it on dry land where they were going to stay that night “… to serve as a sign among you. In the future, when your children ask you ‘what do those stones mean?’ tell them that the stones are to be a memorial to the people of Israel

forever.” (Joshua 4:4-7.) Today we have so many modern ways to remember the many stones of remembrance God has placed before us that we sometimes overlook them. Our ladies conference this year will be based on memories-memories of the past 10 years of touching women’s hearts, lives, and minds with the presence of the Lord. Cheryl Perkins of the singing duo Ambassadors of Grace will present God’s many stones of remembrance He left for us. She and her husband, Dennis, will combine a Bible study with music. Also featured will be award-winning Walter Plant and his repertoire of beautiful gospel music. We look forward to seeing you there as we explore God’s stones of remembrances. The event is sponsored by the three clogging clubs in the Valley: Crown Cloggers from Victoria Palms, Tippy Toe Cloggers from Tip ‘O Texas in Pharr (open to the public), and Texas Country Cloggers from Bentsen Grove in Mission. Each of the clubs alternates hosting the annual Clogin-Fest, usually around the third Wednesday in January. Last year, the Tippy Toe Cloggers hosted the event with a gypsy theme. Next year, Crown Cloggers of Victoria Palms will be the hosts. Instructors Jacque, Pat, and Karen and guest, Paul, volunteered their time to lead the dances. This is a nonprofit event; all proceeds are transformed into door prizes for every dancer present. Each club put on an exhibition dance. Pat’s group danced to Abba’s Voulez Vous. Karen’s group wore green sequined hats with flashing lights and performed to Ed Sheeran’s Nancy Mulligan, and Jacque’s group performed to Real Good Feel Good Song by Mel McDaniel. For the last performance, Karen and Kay danced to Good to be Alive by Andy Grammer, and near the end of the

routine, all the Tippy Toe Cloggers joined in for the last segment of the routine for a surprise Flash-Mob ending! The mini festival is the brainstorm of Nancy Campbell, whose club was in Harlingen many years ago. Since then, dancers and instructors have come and gone; however, the activity remains alive and well in the RGV. There are many YouTube videos of clogging if you want to feel inspired enough to join the activity. It’s high energy, a fabulous workout, and you can tell by watching the cloggers that it is just plain FUN! •

his is one my baking favorites! I haven’t met a person yet who doesn’t like blueberries so it’s a safe coffee cake to make for your houseguests or just as an afternoon snack for you and your family. Blueberries are also healthy, with all of their antioxidants. I’m not really sure exactly what that all means, but I know they are good for me so that’s enough. :) Additionally, this is an easy treat to make so I hope you will try it this weekend! • 1/3 cup sugar • 1 tsp ground cinnamon • ¼ cup (4 Tbls) unsalted butter

• ½ cup all-purpose flour • 1/8 tsp salt

• 2 cups all-purpose flour • ½ tsp salt • ¼ cup (4 Tbls) unsalted butter, slightly softened • 1 tsp pure vanilla extract • 2 cups fresh or frozen blueberries

• 2 tsp baking powder • ¾ cup sugar • 1 large egg at room temperature • ½ cup milk

Preheat the oven to 375°F. Lightly grease an 8” square or round cake pan. To make the topping: Mix the sugar, flour, cinnamon, and salt in a small bowl. Cut or rub in the butter with a pastry cutter, two knives or your fingertips just until it reaches a crumbly state. Set aside. In a medium-sized bowl, blend the flour, baking powder, and salt together. In a separate bowl, beat together the sugar, butter, egg, and vanilla. Alternately add the milk and the flour mixture to the sugar/butter mixture, ending with flour. Add blueberries. Stir just enough to blend. Take care not to overmix. Pour the batter into the prepared pan. Sprinkle the streusel topping over the batter. Bake the cake for 40 to 45 minutes, or until a toothpick or knife inserted into the center comes out clean. Remove the cake from the oven, and set it on a rack to cool for 10 minutes. Serve right from the pan. Or transfer to a serving plate. Yield: about 12 to 16 servings. •
