What fun we had entertaining

so many of you at the Winter Texan Expo! It gives us great joy to see so many of you having a good time and learning about all there is to see and do across the RGV and beyond. Many of you may remember when I first started this ten years ago, it was just me. We’ve now grown to 12! It takes a village to do what we do, and I’m so very thankful for my staff and team of volunteers who help make it all possible. We love what we do at Welcome Home RGV, and coming to ‘work’ every day is a real blessing. We try to instill fun into everything we do which has created an amazing work culture. Our company vows to do the right thing for the right reason. Period. We know that by doing so, everything we do makes us feels good and we are proud of the work we do because of it. I have to say, I love seeing February on the horizon. I’ll be setting sail on the 2nd Annual Cruise with Kristi with 172 of our Winter Texan friends on February 3 for our ten year ‘sail-ebration’ cruise. If you’ve missed the boat (literally) on this one – don’t despair - we’re booking now for 2019 (February 2-10). •

Museum of South Texas History in Edinburg welcomes Winter Texans and the retirement community in the Rio Grande Valley to its new Winter Texan Wednesday series. This program will introduce visitors to the museum and include a further, indepth presentation about particular periods in this region’s history. The next Winter Texan Wednesday: Conjunto in the Rio Grande Valley is scheduled for today, Wednesday, January 24, at 3:00 p.m. Museum staff will guide visitors on a short tour of a gallery that is part of the museum’s permanent Rio Grande Legacy exhibition. Following the tour, visitors will be invited to the Courtyard Gallery. Once settled, staff and guests speakers will lecture further on the topic. The presentation will highlight the Soy de Tejas exhibit. In the

1930s, migrant workers adopted the accordion and developed a new style of music called conjunto regional. Joseph Fox, the associate education officer at MOSTHistory, will lead the tour of the Soy de Tejas exhibit, which showcases a variety of musical instruments and records. Following the tour, Roy Rodriguez from the Hub City Conjunto and Tejano Museum will give a multimedia presentation on conjunto music. The Winter Texan Wednesdays series is included in the regular admission fee: Adults (18-61) $7 and Seniors (62+) $5. No reservations are required. The Side Street Strutters Present Vinyl Jazz: A Century Celebration Special to Welcome Home RGV

26, 1917, a group of moderately successful New-Orleansbased jazz musicians walked into the Victor Talking Machine Company studio in New York City and recorded Livery Stable Blues. When released on the Victor label, it became an instant hit and ignited the jazz world. Today Livery Stable Blues, by the Original Dixieland ‘Jass’ Band, is considered the very first commercially successful jazz recording. Music lovers in the Rio Grande Valley have a unique opportunity to hear Livery Stable Blues and other classic, endearing melodies performed live as the Side Street Strutters and vocalist Meloney Collins present Vinyl Jazz: A Century Celebration at the Harlingen Municipal Auditorium Friday, March 9, at 7:30 p.m. This is the final show of the nonprofit Harlingen Concert Association’s 2017-18 season. The March 9 concert will feature a potpourri of jazz, pop, and R & B songs, which have shaped our musical landscape over the last 100 years. These include Rhapsody in Blue, written by 25-year-old George Gershwin, Duke Ellington’s Mood Indigo, and All or Nothing At All, which launched the career of a young singer named Frank Sinatra. Journey back to 1946 when Nat King Cole took us down the famous Route 66 and Ella Fitzgerald launched us out of this world with her signature song, How High the Moon. Discover how pianist Dave Brubeck and saxophonist Paul Desmond composed a catchy little tune with five beats to the measure and hit it big with Take Five, the

first million-selling jazz recording. Relive the excitement of 1963, when Louis Armstrong’s recording of Hello Dolly knocked the Beatles out of the number-one spot on the pop charts. These jazz pioneers influenced many new generations of talented artists, even in the world of pop music and R&B. The Side Street Strutters and Collins will present the music of several crossover performers, such as Etta James, Aretha Franklin, Weather Report, and Michael Bublé. They will also explore how jazz spread around the world through vinyl, CDs, and digital sound, drawing on different national, regional, and local musical cultures and giving rise to many distinctive styles. Since 1983, the Side Street Strutters have shared their love of jazz and outstanding musicianship with audiences at jazz festivals, formal concerts, and special events for the Walt Disney Company and through recordings. They possess a burning desire to explore the colorful nuances and creative challenges of this indigenous American art form. The award-winning musical ensemble has performed over 500 concerts in 49 states and nine countries, creating a lasting impression in the hearts of people everywhere. Although

most people now associate the city of Liverpool (my birthplace) with The Beatles and world-class soccer, it was not always so. From the beginning of the Industrial Revolution, Liverpool was recognized as a major seaport. Millions of people from all over Europe made their way to Liverpool to book a passage to America, and more people left for America via Liverpool than any other port. By the early 1900s, Liverpool controlled much of the world’s shipping, and most of the world’s largest ships were Liverpool-owned, the SS Mauritania and the SS Titanic being amongst them. The port was so large that 40 percent of the world’s trade passed through Liverpool, From the earliest days of merchant shipping, vessels sailing from Liverpool would have crews composed mainly of local men, and this was a tradition which continued with local families well into the 60s. Just about everyone in Liverpool had at least one family member who was “in the Merch,” short for Merchant Navy. The 50s and early 60s were the heyday of transatlantic passenger travel, and most of the ships were owned by Cunard. They sailed from Liverpool (sometimes Southampton) to New York with crewmen who were commonly referred to in Liverpool as

“Cunard Yanks.” Why? Because they returned from the U.S. wearing the latest American fashions, bringing with them the latest hit records, and even trying to talk with a Texas twang! From childhood, I dreamt of travelling the world, and although transatlantic passenger traffic was greatly reduced by the 60s, I was still able to get a job as a waiter on the Cunard ship “The Sylvania,” sailing that summer between Liverpool and New York. By then, life on board a Cunard liner seemed like a trip back in time, as these were still the days of first-andsecond-class passengers, beef tea in the morning, and the Palm Court Orchestra playing for afternoon tea. The crossing took five days, arriving early morning, then overnight in New York, and sailing the following afternoon for the return to Liverpool. It was a dream come true for me to get to visit New York, and I took in all the obvious sights--The Empire State Building, Greenwich Village, Central Park, Radio City Music Hall and the famous Rockettes, and also one other sight, perhaps not so obvious. I was a great fan of blues, rhythm and blues, and soul music and knew that The Apollo Theater in Harlem was WHITE BOY AT THE APOLLO CONTINUED ON PAGE 18 >>

This Lemon is Very Sweet! Get Your Ticket While You Can! by Sandy Olson

I have discovered a secret that only

350 people can enjoy, at a location I had not heard of before this week--the monthly Omelet Breakfast at Lemon Tree Estates in Mission. What a treat! Lemon Tree Estates is a small, ownerowned and owner-operated park that has some of the most dedicated residents in the Valley. Located at 1510 E. Business 83, the park has been hosting this breakfast since 2010 when Chris Maher and Estella Boldt got the idea that a fundraiser to benefit their kitchen-remodel project needed a boost. Since then, the omelet breakfast, held once in January, February, and March of each year has served hundreds of omelets with three people cooking omelets

two at a time. (For 2018, you can still make it to the February 7 and March 14 breakfast.) Assisting them is a whole kitchen full of “roosters” cracking the fresh eggs. These guys take their job very seriously, and the rooster has become the mascot of the omelet feed. On lucky occasions,

the live musician (another rooster) will play the chicken dance, and the dining room staff starts flapping its wings! The breakfast consists of a twoegg omelet filled with your choice of ingredients. You pass along a line where diced tomatoes, diced onions,

ham, sausage, bacon, jalapeños, bell peppers, black olives, and mushrooms are offered. All these goodies are put into a cup, which you hand to one of the cooks when you take your place in the serving line. The assorted ingredients are cooked on a flat-top grill alongside the eggs, and when the time is exactly right, they are put on top of the omelet, which is folded over them. It’s perfect! The egg is thin and cooked through. The ingredients you’ve chosen lend their special flavor to the finished dish. Next stop is at the toast bar (one slice or two). meal. (And coffee, too, of course.) My omelet had “the works.” It was hot, hearty, and all I could ask for in a great breakfast. Everyone was friendly, and it’s obvious they love their home park and are willing to volunteer to keep things going smoothly. I was told it takes 75 volunteers about 450 hours of work to prepare, serve, and clean up for each event. That’s a ton of dedication. Only 350 tickets are available for the breakfast, all sold in advance at the Park or by residents who visit other parks for events and bring tickets along with them. It really pays to contact someone if you want to enjoy this feast. Serving hours are 7:00 – 11:00 a.m. Bring your

own table service. Cost per ticket is $6.50. The Lemon Tree Estates omelet breakfast is in its eighth season. From all indications, it will continue for a long time, but don’t wait. Let Your Taste Buds Dance the Mambo! by Sandy Olson

Mambo

Seafood is located at 4817 W. Expressway 83 in McAllen (956-682-2231). If you lust after fresh seafood cooked to order, this is a must-visit place. Everything except the dinner rolls and the French fries is made from scratch, including the seafood soup, which starts with a fish stock that is made daily. Mambo is part of a small chain based in Houston, with the McAllen restaurant the only one outside that area. There are currently 10 locations, all employing the same philosophy of freshly made Pacific seafood dishes with a Latin flair. The food here is truly amazing, and the prices are most affordable. We started with calamari served battered and deepfried (½ pound, $6.49). Those familiar with this delicate dish know that even a few extra seconds in the fryer turns those crispy rings into batter-covered rubber bands! The chef at Mambo cooked them perfectly, which is no small feat. One perfectly fried shrimp is included. Seafood soup was our next treat, filled with pieces of tender white fish and shrimp, plus veggies ($5.99/$8.99). Excellent! A nice touch was the cup of pico de gallo served alongside for those who want some heat in their soup; just dump it in! General Manager Jorge Oyervides suggested we try the grilled salmon Zarandeado ($15.99). Salmon is another tricky fish to prepare correctly as it tends to dry out quickly, but under-cooking is also not desirable. My piece of fish was moist and tender, blackened on the outside with a combination of spices that are flavorful but not hot. It was served with their signature Mambo rice (shrimp-fried rice), grilled veggies (red pepper, zucchini, carrot, and street corn), two small potatoes, and a dinner roll. The street corn was a cob of fresh corn (never frozen), grilled and topped with a homemade spicy mayo then sprinkled with chili powder. YUM! Mambo rice can be ordered by itself with pork or chicken, as well as shrimp, or a combo of all three ($5.99-$10.99). The regularsized order serves three people. This dish is prepared in a wok, so it has a distinct Asian flavor but without the typical soy sauce or Asian spices.

The menu at Mambo starts at only $5.99 for their classics of fried fish, fried shrimp, stuffed crab, whole tilapia, and more. There are many more complex dishes available, as well, with each one sounding more delicious than the one before. You can even order a hamburger or grilled chicken sandwich if someone in the party isn’t in the mood for seafood. The portions are hearty, and boxes to take home leftovers are always available. Mambo offers a large selection of beers, both imported and domestic, plus their famous frozen margaritas. Beer lovers will enjoy their Chelada cerveza made with their original Chelada sauce. The sauce can also be purchased to take home. The first thing you notice when entering this restaurant is the large fresh fish and seafood case. You can purchase everything from fresh shrimp to live lobster and have them prepared to order or take them home to cook yourself. We saw gar steaks, oysters, red snapper, and much more. The case is sparkling clean; the fish look fresh and appetizing. The entire restaurant is open and airy with lots of tables placed with adequate space between them so customers don’t feel crowded. Jorge has worked for the Mambo company for five years and has been general manager of the McAllen location for two years. He loves his job; he loves the company, and it shows. Assistant Manager Jose Luna is also a real asset to the restaurant, and both men are more than willing to answer any questions customers have. Mambo offers Family Packs that can be ordered to take out so groups can enjoy this excellent food at home. Selections serve 10-12 people with both fried and grilled choices. Auditions for Romeo and Juliet Adaptation at Pharr Community Theater Special to Welcome Home RGV

The

Pharr Community Theater (PCT) announces open auditions for its newest bilingual play, The Tragic Corrido of Romeo & Lupe. The new Shakespeare adaptation will be set in the Magic Valley within a time warp spanning from the days of the Republic of Texas, 1830s, up to the 2000s and is being written by Seres Jaime Magaña. Pedro Garcia, PCT artistic director and company cofounder, will direct the play. Garcia recently brought in young RGV writer and poet Magaña to adapt the famous tale to a Valley story. “Of course the premise is fiction but also historical with regards to agriculture, the lure of land acquirement, and displacement and growth in the RGV, including sending young men off to war,” said Garcia. “But the intense love story remains intact from the long-ago Shakespeare tale of an impossible love.” Playwright Magaña was born in Guadalajara, Jalisco, Mexico. He has published in several anthologies; his latest publication is “La Verdad Olvidada,” published in Gemini Ink’s 30 Poems for the Tricentennial: A Poetic Legacy. Seres is also host for Luna Coffee House’s Open Mic every Saturday and about once a month at Yerberia Cultura’s Mac Nights, both located in McAllen. the mecca of black entertainment, so I was dearly hoping I could make a pilgrimage there. Remember this was 1964, and racial unrest was not at its lowest, but I was an 18 year old from Liverpool and didn’t know any better. I somehow struck up a conversation in one of the Times Square record stores with a young black guy and asked him about The Apollo and how to get there. Before I knew it, for the price of his subway ticket and admission to the theater, I had my very own local guide. It was late afternoon and hot and muggy when we emerged from the 125th Street station, and there it was, The Apollo, featuring LIVE ON STAGE, Bo Diddley, Joe Tex, Sugar Pie DeSanto, and the Apollo Orchestra. I paid for our tickets and then, inexplicably, my guide disappeared, so I was on my own. I made my way to an aisle seat about halfway down the theater, huddled down into my seat, and did my best to not look white! The Apollo has a capacity of 1500 people, and although it wasn’t full, here I was,

surely the only white person in the whole place. What the heck! I was here for the music and also, although I didn’t realize it, for the show because the featured entertainers really did put on a show. First off was Sugar Pie DeSanto, who had toured in the UK, had a minor hit with a version of High Heel Sneakers titled Slip In Mules, and was recognized over there as a wellrespected blues singer. But here on her home turf, she was an entertainer… a vocalist, yes, but also a comedienne with some funny pantomime shtick, obviously a great audience favorite. Next up was Joe Tex. I had never heard of him, although I now know him as one of the legends of soul music, a contemporary of James Brown. (Tex would later claim that Brown stole his dance moves and his microphone-stand tricks, be that as it may). The ladies loved him. Every move he made--and he had all the moves--would elicit screams. He was dressed immaculately, looked great, and sounded fantastic. Who could follow that? How about Bo Diddley? The man who invented the Bo Diddley Beat did not disappoint. At this time, 1964, he had 10 years of hit recordings under his belt, and each

one he performed was met with a roar of recognition. The only band member I can recall from that show was “The Duchess.” She played back-up guitar clad in a figure-hugging outfit with a mile-high bouffant hairdo. It was almost more than this teenager from Liverpool could handle. The show ran continuously, with audience members coming and going throughout the performance. Finally, it was time for me to head back to the ship. I was on duty again in the morning. My sojourn on the Sylvania lasted only three months. By the end of the busy summer season, I was laid off, never to see the ship again…or so I thought. Fast forward 20 years, and I was performing on a cruise ship that docked in St Lucia. We were alongside a Sitmar vessel, The Fairwind, which, on closer inspection, turned out to be the old Sylvania. Sitmar had bought the ship from Cunard in 1968, and after a major re-fit, she sailed for another 36 years for various cruise lines before being finally being scrapped in 2004. And that young man who dreamt of leaving Liverpool and travelling the world? He’s now living in Canada and spending his winters in the Rio Grande Valley. •

A New Beginning

Have you ever thought about the

New Year and what it might bring to you? A lot of people think they can continue to do the same thing over and over but with different results. In reality, if you do the same thing over and over, you will get the same results. Now that we are starting a new year, most of us would like something new in 2018. If you are using drugs or alcohol, you will get the same results or worse. But if you could change your life completely, would you be willing to do it? You can change in 2018. The apostle, Paul, in his letter to the Romans, told them in Romans 10:13, “For whoever shall call upon the name of the Lord shall be

saved.” So if you are looking for a change in 2018, God has the answer for you. He sent his son to die for you and he offered the free gift of salvation to whosoever will accept it. If you are tired of the same results, you must change the way you are living, and if you choose Jesus, you will never have to change again. Remember the holiday season we just celebrated. Jesus was the reason for the season. Jesus is the answer for a new beginning. Will you change in 2018? Jesus is calling; will you accept Him? You can, and he wants you to change, but the choice is up to you. For whoever calls on the name of the Lord shall be saved. ~Romans 10:13 •

Spinach and Mozzarella Frittata • 1 tablespoon good olive oil • 1 clove garlic, minced • 1 cup low-fat shredded mozzarella cheese • 2 tablespoons low-fat milk • 1 cup (packed) chopped fresh baby spinach leaves (no stems) • 1 large Roma tomato, diced • ½ cup diced white onion • 3 large eggs PLUS 3 additional egg whites • ¼ teaspoon black pepper • ¼ teaspoon white pepper • Sea or kosher salt to taste In a small skillet, sauté the onion and garlic in the olive oil over medium heat until tender. Spray the inside of the slow cooker with cooking spray. Whisk together the eggs and egg whites in a large bowl until well combined and there is no separate white or yellow. Add ¾ cup of the cheese plus the sautéed veggies and the rest of the ingredients except the last ¼ cup of cheese. Mix gently but well. Pour into the slow cooker and top with the remaining cheese. Cover and cook on LOW for 1½ hours or until the eggs are set and a knife inserted into the center comes out clean. Texas Cheese Ring Yield: 4 cups • 1 pound cheddar cheese, mild or medium, grated • 1 cup mayonnaise • 1 cup pecans, chopped

• 1 small onion, grated • Dash red pepper • Dash black pepper • Strawberry preserves

Combine cheese, mayonnaise, nuts, and onion in a large bowl. Mix well and add peppers. Mold into ring with hands. Chill overnight. Before serving, fill middle of ring with strawberry preserves. Serve cheese on crackers topped with preserves. STATE BIRD Bluebird On March 30, 1927, the native bluebird became the official state bird of Missouri. The bluebird, considered a symbol of happiness, is usually 6½ to 7 inches long. While its upper parts are covered with light blue plumage, its breast is cinnamon red, turning rust-colored in the fall. The bluebird is common in Missouri from early spring until late November.

White hawthorn blossom On March 16, 1923, Governor Arthur M. Hyde signed a bill naming the white hawthorn blossom the official state floral emblem of Missouri. Known as the “red haw” or “white haw,” the hawthorn (crataegus) is a member of the great rose family. The hawthorn blossoms have greenish-yellow centers and form in white clusters. More than 75 species of the hawthorn grow in Missouri, particularly in the Ozarks.

STATE TREE

Flowering dogwood On June 20, 1955, the flowering dogwood (Cornus Florida L.) became Missouri’s official tree. The tree is small in size, rarely growing over 40 feet in height or 18 inches in diameter. The dogwood sprouts tiny greenish-yellow flowers in clusters, with each flower surrounded by four white petals. In the fall, the upper part of the leaves turns scarlet or orange, and bright red fruits grow on the tree.

The Great Seal was designed by Judge Robert William Wells and adopted by the Missouri General Assembly January 11, 1822. The center of the state seal is composed of two parts. On the right is the United States’ coat-of-arms containing the bald eagle. In its claws are arrows and olive branches, signifying that the power of war and peace lies with the U.S. federal government. On the left side of the shield, the state side, are a grizzly bear and a silver crescent moon. The crescent symbolizes Missouri at the time of the state seal’s creation, a state of small population and wealth which would increase like the new or crescent moon; it also symbolizes the “second son,” meaning Missouri was the second state formed out of the Louisiana Territory. The shield is encircled by a belt inscribed with the motto, “UNITED WE STAND ~ DIVIDED WE FALL,” which indicates Missouri’s advantage as a member of the United States. The two grizzlies on either side of the shield symbolize the state’s strength and its citizens’ bravery. The bears stand atop a scroll bearing the state motto, “Salus Populi Suprema Lex Esto,” which means, “Let the welfare of the people be the supreme law.” Below this scroll are the Roman numerals for 1820, the year Missouri began its functions as a state. The helmet above the shield represents state sovereignty, and the large star atop the helmet surrounded by 23 smaller stars signifies Missouri’s status as the 24th state. The cloud around the large star indicates the problems Missouri had in becoming a state. The whole state seal is enclosed by a scroll bearing the words, “THE GREAT SEAL OF THE STATE OF MISSOURI. •

Nearly 100 years after achieving statehood, Missouri adopted an official flag March 22, 1913. The flag was designed by the late Mrs. Marie Elizabeth Watkins Oliver, wife of former State Senator R.B. Oliver. The flag consists of three horizontal stripes of red, white, and blue. These represent valor, purity, vigilance, and justice. In the center of the white stripe is the Missouri coat-of-arms, circled by a blue band containing 24 stars, denoting that Missouri was the 24th state. •

STATE MUSICAL INSTRUMENT The fiddle became the state’s official musical instrument July 17, 1987. Brought to Missouri in the late 1700s by fur traders and settlers, the fiddle quickly became popular. The instrument was adaptable to many forms of music, could be played without extensive formal training, and was light and easy to carry. For generations, the local fiddle player was the sole source of entertainment in many communities and held a position of great respect in the region. •

HA HA TONKA STATE PARK The remains of a huge, circa 1905 European-style stone castle add an air of mystery to this park. Situated atop towering bluffs, the views of the Lake of the Ozarks are majestic. More than 15 miles of winding trails take you past caves, a spring, sink-holes, and a natural bridge and down to the lake. This park features camping, picnicking, hiking, and an ADA-accessible shelter. Island Cave is an “entry by permit only” cave. Call the park’s office to request a permit to enter. River Cave is a “supervised entry only” cave. Scheduled tours are given monthly, December through February, subject to the migration of federally-protected gray bats. Call the office for details and schedules. Overlooking the River Cave’s entrance, a deck with informational panels is open to all. Ha Ha Tonka State Park is located at 1491 Route D in Camdenton, Missouri. The phone number is 573-346-2986. The Park grounds and Visitor’s Center are open April through October from 7 a.m. to sunset daily and from November through March from 8 a.m. to sunset.

MISSOURI BOTANICAL GARDEN Missouri Botanical Garden is at 4344 Shaw Boulevard in St. Louis. The phone number is 800-642-8842. They are open daily from 9 a.m. to 5 p.m. Founded in 1859, this is the country’s oldest botanical garden in continuous operation. It is a National Historic Landmark with 79 acres of gardens and historic structures. Outdoor and indoor displays include the Climatron tropical rain forest, Kemper Center for Home Gardening, Japanese Garden, George Washington Carver Garden, historic Tower Grove House, and the seasonal Doris I. Winter White Missouri Sangria Recipe This time of year is full of holiday gatherings and get-togethers. Be the hit of your next shindig with this delicious and festive Winter White Sangria. With flavors of apple, cranberry, ginger and rosemary, it’s like the holidays in a glass. It’s made with a delicious and versatile Missouri wine called Vidal Blanc that helps it pair with a wide range of tasty treats from savory appetizers to sweet desserts. This recipe is simple to make and looks quite festive. Try it today!

Prep – 10 minutes // Chill – 2+ hours Yield: 6-8 servings • 2-3 apples, red and green • 1 cup fresh cranberries (or frozen and thawed) – extra for garnish • 1-2 rosemary sprigs – extra for garnish • 1 bottle Missouri Vidal Blanc (acidic white wine with apple notes) • 1 cup white cranberry juice • 12-16 oz. ginger beer (non-alcoholic) – chilled Chop apples and rinse cranberries. Layer the fruit in a pitcher for a festive look. Add rosemary. Pour in the wine and juice and chill for at least two hours to let the flavors combine. Add ginger beer and stir gently before serving. *Bonus* For a fun garnish, remove the leaves from the bottom third of a sprig of rosemary. Wet the remaining leaves and shake off excess water. Roll the damp leaves in sugar for a snow-covered tree effect. Spear 2-3 cranberries on the end of the sprig. Add to the glass to top off your festive Winter White Sangria. Enjoy! Seared Sea Scallops with

Brown Butter and Lemon Pan Sauce

Continuing with our theme

of some lighter (but delicious) dishes, here is a super yummy sea scallop dish you will adore. You can easily serve these lemony delights over some nice angel hair pasta, a parmesan risotto or even some orzo for a slightly more filling & satisfying meal. Bon Appétit! • • 3 lemons • 8-10 chives • 12 large dry sea scallops • Kosher salt, freshly ground pepper

• Extra-virgin olive oil or vegetable oil • 3 tablespoons unsalted butter, cut into pieces • 2 teaspoons drained capers

Slice 2 lemons in half lengthwise and squeeze juice into a measuring glass or small bowl; you should have ~1/4 cup juice. Set aside. Cut ends off the remaining lemon to expose flesh. Stand lemon on a cut end and remove peel and white pith from lemons (a paring knife works well for this); discard. Cut between membranes to release segments into bowl with juice; squeeze membranes to get any last drops of juice. Remove any seeds; set aside. Thinly slice chives and place in a small bowl; set aside. Pull side muscle off scallops, if needed; pat dry. Season lightly on both sides with salt and pepper. Heat a large saute pan, over medium-high. Add oil to lightly coat surface (~ 2 Tbsp.); heat until it shimmers and you see first wisps of smoke. Place scallops into pan, flat side down, and cook without touching until underside is deep golden brown, 3–4 minutes. Then to gently turn over; if they resist, cook another 30 seconds and try again. Cook on second side until flesh at top and bottom looks opaque but there is still a faintly translucent strip in the middle, 1–2 minutes, depending on size. Transfer scallops to a plate. Pour off any oil in skillet and set over medium heat. Add butter and cook, swirling, until butter foams, then browns, about 2 minutes. Add reserved lemon juice and segments; stir and swirl pan to emulsify sauce. Mix in capers and reserved chives and spoon pan sauce around and over scallops. •
