can it be mid-January? The time is flying by, and we have so many things to do and people to see. It’s been so exciting to see so many new faces. If you ask me, this is going to be one of our best seasons yet, and it’s thanks to all of you who have helped us spread the word about how great the Rio Grande Valley is during the winter! If you happen to be a first timer, I’d like to take the opportunity to say, “Welcome!” We’re so glad you chose South Texas as your winter-retirement destination. We are also glad you’re here to play with us! We work tirelessly to compile all that’s going on across the Valley so you can stay up to date on all the events and activities that will keep you busier than you ever dreamed you’d be in retirement! Women of St. Alban’s South Padre Island Kite Fest February 1-3 47th Antique Show

A kite festival that started out as

a mere ‘fun fly’ and grew to being recognized as Kite Festival of the Year in 2010 by Kite Trade Association International is back and never disappointing. February 1, 2 and 3--Thursday night, Friday, and Saturday--SPI Kite Fest will once again descend onto the flats of South Padre Island. The festival will kick off Thursday evening with indoor kite performances at the South Padre Island Convention Centre from 6:30 8:30 p.m. This year’s indoor performance lineup is outstanding. John Barresi is an internationally known kite

flier who holds an astonishing 26 national championship titles. Connor Doran is best known for his indoor kite performance as the Season 5 semifinalist on America’s Got Talent; while mom, Amy’s, most memorable flying experience is flying a kite from a hotair balloon. Lisa Willoughby has performed in an Ibex Production on Broadway with her kites, and James Fletcher was the 2014 AKA National Indoor Champion. The 47th Antique Show and Sale,

sponsored by the Women of St. Alban’s Episcopal Church, will be held January 19 through January 21 at the Casa de Amistad in Harlingen. Show hours are from 10 a.m. to 6 p.m. Friday and Saturday and from 11 a.m. to 4 p.m. Sunday. The long-running show features antique dealers from all across the country who bring a wide variety of merchandise. The show features country, English, and Victorian furniture, antique and estate jewelry, all types of glass, crystal, linens, china, silver, silver repair and re-plating, glass grinding, and much more. The Women of St. Alban’s will be serving their famous brisket, soups, and sandwiches all three days, as well as all types of cakes, pies, cookies, jams, jellies, and relishes. Admission tickets, good for all three days of the show, are $6 each. Proceeds from the nonproﬁt show are used to fund St. Alban’s charitable projects during the year. •

Learn about Native Plants and Trees at the Roma World Birding Center

The Roma World Birding Center is

now open Tuesday through Sunday from 8 a.m. - 4 p.m. Winter Texans Jerry and Rosemary Higgs from Georgia and Mason and Pam Rivers from Oregon are currently serving as volunteers. Roma is one of the nine birding centers along the Rio Grande and is the one furthest west. We hope to increase awareness of the Valley environment along the river. There is so little of the natural land left, and it is critical that we preserve it. This area of Texas hosts several birds and butterflies that cannot be seen anywhere else in the United States. Visiting birders are a large source of income for cities along the Rio Grande River. Historical Roma has several original buildings that provide excellent photo opportunities. There is an excellent walking tour available, upon request. The Roma World Birding Center welcomes all visitors from near and far. We look forward to meeting you. As pesticides and lack of habitat become handicaps that our birds and butterflies have to overcome, we need to do all we can to help save both so all will survive. Sally and Volker have lived in the Valley since 2003. They are both certified Texas Master Naturalists and are passionate about saving our natural world. Arts Gallery welcomes its latest exhibit, One more time with feeling, featuring the work of Jesus De La Rosa, an associate art professor at Texas A&M University-Kingsville. De La Rosa’s focus on both sides of the border lends substance to the artwork he produces. He creates from his insight of the Texas/ México landscape, where cultures, languages, and identities constantly conflict and bind. The exhibition consists of several colorful two-dimensional works of acrylic and mixed-media paintings on canvas and wood panels. De La Rosa will bring his latest body of work to Beyond Arts Gallery in Harlingen Thursday, January 18, at 6:30 p.m. “Artwork has many different languages, and I approach my practice knowing that I understand several of these languages,” said De La Rosa. “Layers of paint allow me to cover my mark-making, while the process of cutting away paint and carving of a wood panel allow me to reclaim and rediscover a personal history.” De La Rosa was raised in the Rio Grande Valley and Nuevo Progreso, Mexico. He spent his early life traveling across the U.S-Mexico border as a result of his parents working in Mexico and living in Texas. His borderland experience plays a

pivotal role is his art practice. De La Rosa earned a Bachelor of Fine Arts from Texas A&M UniversityKingsville and a Master of Fine Arts from Ohio State University in Columbus, where he was awarded a Graduate Enrichment Fellowship. As an associate professor of art at Texas A&M University-Kingsville, De La Rosa teaches beginning and advanced courses in printmaking and graphic design. His artwork has been reviewed and featured in numerous publications, including the San Antonio Current, the Austin American Statesman, the Columbus Dispatch, the Austin Chronicle, the Houston Press, and Voices of Mexico. His work is held in museum and private collections. De La Rosa exhibits his artwork throughout the United States and abroad in solo, juried, and invitational exhibitions. The artist and his family currently reside in Kingsville Texas. One more time with feeling is free and open to the public. Gallery hours are Tuesday, by appointment, Wednesday through Friday from 1 – 5 p.m., and Saturday from 10 a.m. – 5 p.m. You can visit the gallery’s website at beyondartsgallery.com. Jason Petty Brings Hank Williams Tribute to Harlingen January 27 Special to Welcome Home RGV

Hank Williams impersonators on the scene today, Jason Petty is bringing his hit show, Hank & My Honky Tonk Heroes, to the Harlingen Municipal Auditorium Saturday, January 27, at 7:30 p.m., courtesy of the nonprofit Harlingen Concert Association. Jason Petty is no stranger to the stage. Beginning his career at Nashville’s Opryland Theme Park, 50 miles from the farm where he grew up, Petty went on to perform at prestigious venues like the Ryman Auditorium and even Broadway’s Little Shubert Theatre. His show, Hank & My Honky Tonk Heroes, has been praised by big-time critics like Rolling Stone, Variety, and the New York Times. Petty brings the authentic and insightful story of Hank Williams to life by giving the audience a personal look at Williams’ upbringing, his road to fame, his influences, and the performers of today who he influenced. “Jason and his band are authentic, honest, and respectful to the originals without being imitative,” wrote the artistic director of the Barter Theatre in Abingdon, Virginia. “Barter’s audience, who know the heart and

“Sprint” National Professional Bull Riders Come to Mercedes January 27 and 28 “Hottest Eight Seconds of the Year” is back…and it’s bigger and better than ever!

Bull Riders bring some of the nation’s top bull riders to town for a two-day event January 27 and 28 in the Payne Auto Group Arena at the RGV Livestock Show Complex in Mercedes. Top cowboys will compete for an average of $14,000 in money and prizes. This includes a chance to win one of three $600 Monsoon Silver Champion Trophy Buckles and a sack full of money. The NPBR is one of the premier bull riding tours in the country and has been entertaining crowds since it was established in 2000. The four-footed beasts cowboys will be trying to score points on will be top bucking bulls that are the upand-coming stars of professional bull riding. Many of the bulls that have performed in the Mercedes NPBR in the past have been featured bucking bulls on television. This is your chance to be up close and personal with the bulls and the bull riders. You will experience the thrills and spills of each one and be able to cheer on your favorite contestant. Afterwards, join the NPBR Bull Riders for the “After

Party” Saturday night at Mustang Lounge!! Returning this year is the South Texas Bull Fight Challenge. This will be the first stop on the South Texas Bull Fight Challenge Tour. Five top bull fighters will be competing against each other, not only for money in their pockets but also for a chance to perform in the finals held in September. In a freestyle bull fight, the bull fighter goes one-on-one against a Mexican fighting bull for 70 seconds. The bull fighter is judged on his willingness to expose himself to risk and on his aggressiveness.

Pro Rodeo Clown and Barrelman Joey “Hashbrown” Hackett from Hutto, Texas, will be showing off his comedy routine from inside the “clown barrel” at each performance. Joey has established himself as one of the hottest barrelman and funny-guy personalities in the world of professional rodeo. He is a homegrown, southern boy with family roots going deep into Cajun country. Working rodeos from Florida all the way to Washington, he brings southern-family Cajun humor to

relieve any stress or worries your life holds. You can be promised topnotch, family-oriented entertainment for both performances. Val Verde RV Park & Apartments in Donna Special to Welcome Home RGV

enjoy reading the articles you print highlighting some of the parks in the Valley. What a good way to “get to know” some of our neighbors. That being said, I would also like to tell you a small bit of the history of our park. Val Verde RV Park & Apartments is said to be the oldest operating RV park in the Rio Grande Valley. Begun in the early 1920s, it was originally envisioned as a complete town. Those plans died with the developer in a car wreck as he was returning from Mexico. This park boasted the only Olympic-size swimming pool in the Valley, as attested to by the 1920 Olympic swim team practicing here. Esther Williams often swam here, too. Unfortunately, the pool no longer exists. Nor does the tower apartment where Bette Davis stayed. However, the clubhouse is standing and used often. This was a favorite place for many socialites in the 1920s and 30s. It is even rumored that Al Capone stayed here during prohibition and used a trapdoor (still here!) to the basement for “questionable activities.” Today, we are not the largest or

the fanciest park in the Valley. But those of us who “live” here believe we are the friendliest and most cost-efficient park to be found. Our residents join together in work and play, to eat, sing, or listen to entertainment. It really doesn’t matter what we are doing--we are enjoying the company and the weather of the Rio Grande Valley. Saturday, January 6, we had the largest country music jam held at our park in recent history. We (our audience and musicians alike) agreed to start our jams at 6:00 pm in order to give everyone a chance to entertain. I would suggest that if you are looking for something to do on a Saturday evening, make the trip to 1400 W. Business 83 (if you are using GPS you must enter it as 1400 West Hooks Ave) in Donna. Be advised that we do have one rule at our jams….you must have fun. If you are interested in more information, there are a number of us who will be happy to tell you about our park. Brownsville Golf Center has an 18-

hole golf course for your enjoyment. The course opened in 1971 and was renovated in 1999, making it one of the best municipal courses in Texas. In 2009, the course underwent a three-year renovation plan and received drainage improvements and landscaping upgrades. a lot of teenagers in 1960s Liverpool, I started playing guitar, but when I bought it, they wanted half as much more for a case, so I did without. (This was in the days before we had these great soft cases everyone uses now). Anyway, after a year or so, I realized I needed some kind of protection for my axe, so one Saturday I headed into town to check out the second-hand stores and pawn shops to see what I could find. Back then, although we had been heavily bombed in the early 40s, there were still a lot of very old buildings in Liverpool, and in one of these, there was a small second-hand/pawn shop. If you can picture something like Dickens’ Old Curiosity Shop, then you have the idea. The store was piled high with “stuff.” There was nowhere to sit, and it seemed as though there was little attempt at any kind of order or organization. The woman who ran the store was also straight out of Dickens and told me I was free to look through the empty guitar cases she had piled six or eight high on a counter in front of her. I checked out three or four of the cases, which weren’t suitable, and then, when I came to the next one, it was VERY heavy, so of course I opened

it to see what it contained. Imagine my delight…amazement…when I saw the beauty nestled inside. It was a pre-war Dobro. I was deeply into Afro American blues and knew that all the old legends used resonator guitars, such as National or Dobro, although the Dobro was used more in country music. So, trying to play it cool and hide my excitement, I asked how much for the case AND the guitar. “Ooh, son, I’d have to have 25 quid for that,” she said. At the time, I was making about 25 pounds a week in my job as a salesman, and I certainly didn’t have 25 pounds in my pocket, but I just knew that guitar was worth way more than she was asking. However, it was Saturday afternoon. All the banks were closed, she wouldn’t take a check, we didn’t yet have credit cards, and, of course, there were no ATMs. Thank God, even back then, we did have the “Bank of Mum and Dad.” Mum loaned me what I needed, and I rushed back to snap up that beauty before she changed her mind or someone else beat me to it. Lessons from a Crate of Peaches by William Ward

Today’s

wisdom: “Preserving is not about immediate satisfaction (for that, eat the cherries fresh). It’s about anticipation. And in that sense, it’s an act of optimism.” ~Eugenia Bone I recently assisted my wife in canning a crate of peaches. (I blanch and slice, and she does the technical stuff.) We got to wondering how many people under the age of 60 still do that. When I returned to the store a week after we bought our crates and saw half their inventory still there, I had my answer. Not many. She learned the art of canning from her mother. Her mother learned from Grandma, and so it goes, back into time. I, likewise, got some of my handyman skills from my father, who I suspect learned a lot from my grandfather. In spite of my local observation, I discovered that the people on the internet who know these things claim that while there was a big drop in popularity, the act of preserving foods is on an upswing. But unlike the old days when it was a necessity,

now solved by refrigeration, modern grocery stores, and greater affluence, today’s resurgence is more of a cultural hobby. Also, unlike the old days, it is focused on condiments rather than staples. Think salsa and pickles. It is probably true. We can buy peaches in a can, and I don’t really need the few cents we might save by canning. We do like the taste better, but store-bought are okay, too. I can’t help but think half the reason we go to all the work is because it’s what we always do. In late July, we watch for the crates to show up, buy a couple, and start peeling. One of the things I have learned is that we anchor our lives in the familiar patterns of old, self-reliance being one of the big ones. There is a comfort in seeing a pretty row of peaches on the shelf in the basement, sitting next to the cherries, plums, apricots, and tomatoes. If a disaster occurs, we are good for at least a week. It’s the same comfort I get in fixing my own lawnmower. All is well with the world. I’m just sayin.’ •

Wichita - Large Town with a Small-Town Feel by the Midwest Travel Bloggers

Kansas, is one of those larger towns with a small town feel. This Midwest town lies on the corridor of I-35, which makes it super easy to get there. There are several reasons why you should hop off of this main thoroughfare that runs border-toborder and experience the love Wichita has for guests. The first reason we believe you should hop off of I-35 is the fact that Wichita is the perfect place to keep your “southern” on before you return home. The Museums on the River District includes the worldfamous Cowtown Museum. Here is where you can meet up with some of the characters of the Old West and observe a shoot-out on Main Street. What’s not to love about an old western in the Midwest? Art enthusiasts will appreciate the Chihuly Glass displayed at the Wichita Art Museum. This is one of the most unique displays of Chihuly Glass we have ever come upon. We do not know of another venue where you can walk on this beautiful glass (with a protected cover). It is located in the Museums on the River District, which makes it easy to visit. Tip: This district is one area of Wichita where you can spend a whole day. Every evening for 15 minutes, the iconic Keeper of the Plains sculpture lights up a ring of fire. This iconic sculpture is located at the confluence of the Big and

Little Arkansas rivers. Weather can impact the lighting of the firepots, so plan and dress accordingly. The schedule is as follows: November 1March 7 (7 p.m.) and March 8-31 (9 p.m). Tip: Bring a camera, as this area is one you will want to photograph. Frank Lloyd Wright enthusiasts will also appreciate the Frank Lloyd Wright Allen House. Tours are available through flwrightwichita.org/ events. Keep in mind that there are no self-guided tours, and tours fill up quickly. Register ahead of time so you are not disappointed. A stop in Wichita would not be complete without a visit to the worldfamous Old Mill Tasty Shop located at 604 East Douglas Avenue. We highly recommend the malts! We love Wichita and hope you will embrace the history, culture, and love of people we found on our visit. •

Easy-to-Make Molletes

Now for the recipe. Think of a mollete, a Mexican-style Italian bruschetta. It can be made from bolillo loaves or, if desired, from a French bread loaf. The steps are easy, and this makes a great happy-hour snack. In a nutshell, you slice the loaf of bread lengthwise, scoop out most of the soft center, butter the inside of the bread, and bake until it is lightly toasted. Let the toasted bread cool until you can handle it, spread the re-fried beans in the loaf, add the cheese, and bake until the cheese melts. Slice and serve warm with salsa or pico de gallo. Enjoy! Buen apetito! •

Easy-to-Make Molletes • 1 – 16-inch French bread or several bolillo rolls – cut in half lengthwise, top and bottom • 4 Tbsp. butter – softened • 1 cup re-fried beans • 8 ounces shredded cheese, such as Chihuahua melting cheese or a Mexican blend. • 3 tomatoes – cored, seeded, and chopped • ½ cup finely chopped sweet onion • ½ cup fresh cilantro leaves – chopped • 1 jalapeño pepper – stemmed, seeded, and minced • 1 clove garlic – minced • 2 Tbsp. lime juice • Salt and pepper

Prepare the pico de gallo salsa: Chop the tomatoes and sprinkle with about ½ tsp salt and mix. Place in a colander and let the tomato drain for 30 minutes. While they drain, layer the onion, garlic, cilantro, and jalapeno on top. Shake to remove excess juice from the tomato. Place in a bowl, sprinkle with the lime juice, and season with salt and pepper to taste. Toast the bread: Place the oven rack in a middle position. Preheat the oven to 400 degrees. Cover a sheet pan with foil. Split the loaf in half horizontally and scoop out the center of the loaf, leaving about ¼ inch of bread inside the crust. Use a spatula to spread the softened butter evenly inside the split loaf. Place the split bread, open side up, on the baking sheet and bake until the bread is lightly toasted and browned – about 8 minutes. Remove from oven and cool until you can handle it. Spread the re-fried beans evenly inside the split loaf. Add the cheese on top of the re-fried beans, and place back in the oven until the cheese is just melted. Cut the bread into 2-inch slices. Top with salsa and serve warm. If you like, you can embellish the loaf with other ingredients--chorizo, meat, avocado, olives, etc. (I do not have a photo of this recipe. Google ‘mollete’ and select images for great ideas.) Since I have been publishing my recipes for a couple of years, people recognize me and occasionally have comments. Everything needs to be renewed.

Vehicle license plates, drivers’ licenses, subscriptions, and prescriptions. You also have to check the expiration dates on products, and these are but a few of what needs to be renewed. Our knees, hips, and shoulders often get a renewal when they wear out from all the things we have done in our lives. But what about the human soul? Does it get a new lease on life, and, if so, what exactly would that look like? We can’t go to the local medical facility and get a soul renewal. I know the big-box stores don’t carry them, although that could be a booming business. When we are weary, we rest, and we are refreshed for a time. Then we get tired and rest again. Jesus stated, “Come to me, and I will give you rest.” What exactly did he mean by that? A darkened, quiet room to lie down and rest, and when we awaken, a gourmet meal? No, He was talking about a more profound, more meaningful rest--the resting (renewal) of the soul.

Let’s face it; we are burdened with all kinds of stress points that suck the joy out of us: bumper-to-bumper traffic, world conflict, increases in pricing without a substantial increase in income. Like quicksand, we try to walk through, only to find we are sinking deeper and deeper into frustration at life, which can lead to depression. However, there is a way to renew the soul, to bring greater hope into our lives, and to see that there is a beautiful light at the end of the tunnel. Years ago, this type of renewal was called a revival. Today we use the word of the times-renewal. January 22 through January 26, there will be an opportunity to renew your outlook on life. Freedom in Christ, a renewal, will be held at 7:00 p.m. in the evening at Bethany Baptist Church, 851 Breyfogle Road in Mission. Excellent preaching, teaching, and outstanding music will bring a new meaning to your life. There is no charge to get recharged. I then headed home to show the missus what I’d bought and to play a couple of tunes. After that, I wanted to know more about the instrument I’d acquired--when and where it was made, exactly what model it was, and how much it might be worth. I was also fascinated to know how a fairly high-quality, Americanmade guitar had turned up in a pawn shop in Northwest England. This was the pre-internet era, but we were very fortunate in the UK to have a weekly musical paper, The Melody Maker, and they had a free service where they would trace the history/origin of old and collectable instruments. I took a couple of Polaroids (Remember them?) and sent all the relevant details about the guitar--serial number and other information--and then waited patiently. After about three months, I got the reply, and if memory serves me right, they had established that it was made in the mid 1930s and was a model

#60. At that time, t h e m i d 1960s, t h e company had gone out of business, and no new Dobros were being made. Thus, it was difficult to put a price on my instrument, but it was probably worth three-to-fourhundred pounds. Do I still have the Dobro? I’m afraid not. Like a lot of musicians (especially guitar players), I have bought, sold, and traded countless instruments over the past 50 years, and I let the Dobro go after we arrived in Canada because I needed a more versatile instrument to use on stage. I used the money from the sale of the Dobro, (about $600) to buy a new, 1974 Martin guitar, Model 000-18. And here lies a lesson in musical instrument investing. If I had

kept the Dobro, it would probably sell today for between $1500 and $2000. However, if I’d kept the Martin, it would be worth between $3500 and $5000!! So, fellow musicians, think twice before selling or trading that old guitar. •

STATE BIRD Scissor-tailed flycatcher The scissor-tailed flycatcher, whose nesting area is centered in Oklahoma, is known for its beautiful plumage and a long, sleek tail twice as long as its body. The deeply forked tail resembles a pair of scissors. The bird has a black and white tail, a dark gray back, a light gray chest and head, and pale, orange-red coloring beneath its wings.

STATE FLOWER Oklahoma rose Named the state’s official flower in 2004, the Oklahoma rose is known for its deep red-velvet color, magnificent fragrance, and hardiness, especially during the summer months.

STATE FLAG

The Oklahoma state flag is a rich sky blue and features an Osage warrior’s buckskin shield decorated with seven pendant eagle feathers. In crossed positions over the shield are a calumet, or peace pipe, and an olive branch. Both of these items are symbols that represent peace. The state adopted the flag design in 1925 and added the word Oklahoma beneath the shield in 1941. •

STATE TREE Redbud The redbud tree grows across the state in valleys and ravines. In early spring, its reddish-pink blossoms brighten the landscape.

Chicken Fried Steak • 1 egg, slightly beaten • ½ cup buttermilk • ½ cup water • 1 teaspoon Worcestershire sauce • 2/3 cup bread crumbs, dry

Combine first four ingredients; mix well and set aside. Combine bread crumbs and next three ingredients and mix well. Dip steaks in buttermilk mixture and then dredge in flour mixture. Let stand 10 minutes on paper towels. Pour oil to depth of ¼-inch in heavy skillet. Fry steaks in hot oil (375° F) over mediumhigh heat, adding oil as necessary until the meat is browned. Remove steaks from pan and drain on paper towels; set aside. Use drippings to make cream gravy or serve plain.

Shrimp Scampi

• ½ cup real butter...no margarine, please • 3-6 cloves fresh garlic, minced • 1 pound large wild-caught gulf shrimp • 2 tablespoons fresh lemon juice • 1 tablespoon dried parsley flakes • ¼ teaspoon kosher salt • ¼ teaspoon freshly ground black pepper Peel and devein the shrimp; rinse and pat dry. Place all ingredients except the shrimp into an 8x8-inch glass baking dish. Cook, uncovered, in the microwave on HIGH (or power level 10) 2-3 minutes or until the butter is melted. Stir twice during cooking time and don’t let the butter brown. Stir the shrimp into the butter sauce. Cover the dish with microwave-proof plastic wrap and make a small slit in the wrap for a vent. Cook for 3-5 minutes on HIGH, watching for the shrimp to begin to turn pink. It’s really easy to overcook shrimp and make them tough. Stir once or twice during this cooking time. Let the dish stand for 5 minutes, covered, to finish cooking. Serve over hot, cooked egg noodles. NOTE: Adjust the garlic to your taste; usually scampi is very garlicky as that’s the only flavoring used other than a bit of salt and pepper. Some people like ¼ teaspoon red pepper flakes in their scampi. Enjoy, either way!

Balsamic Ginger Grilled Flank Steak

with Bleu Cheese Dressing

With

the holidays behind us I think we might all be fairly focused on making some healthier nutritional choices. I’m choosing more vegetables and fruits and almost no grains and processed foods. This dish is perfect over some field greens or paired with some grilled spring asparagus. The flavors begin with the marinade and if you want to go lighter you could skip the sauce and choose a vinaigrette for sure. I hope you enjoy it as much as I do! Bon Appétit! • • 1 1/4 pound beef flank steak • 2 tablespoons olive oil • 2 tablespoon balsamic vinegar • 1 teaspoon brown sugar • 1 teaspoon minced fresh ginger • 2 cloves garlic, minced • 1 medium red onion • 1/2 teaspoon salt • 1/4 teaspoon freshly ground black pepper • Fresh parsley for garnish

For the sauce: • 4 ounces crumbled blue cheese • ½ cup low-fat buttermilk • 1 teaspoon Worcestershire sauce, or more to taste • Fresh lemon juice to taste • Kosher salt to taste

Place the steak pieces between 2 pieces of plastic wrap or parchment and pound to ¼ inch thickness. Slice the onion into 1/8-inch slices and separate into rings. In a small bowl, whisk together the olive oil, balsamic vinegar, brown sugar, ginger and garlic. Place the steak and onion rings into a sealable plastic bag with the marinade and let sit for at least 1 hour in the refrigerator (you may have to cut it into two pieces). Allow to rest at room temperature for 20-30 minutes before grilling. In the meantime, in a small bowl combine/mash the blue cheese and buttermilk until creamy. Stir in the Worcestershire, lemon juice and salt and set aside in the refrigerator to allow the flavors to come together. Spray a large grill pan or grill with cooking spray and preheat over medium-high heat. Remove the meat from the marinade and season both sides with salt and pepper. Discard the marinade. Cook the meat over medium-high heat for about 3 minutes per side for medium rare. Add an additional minute for a slightly more well done steak, keeping in mind it will continue to cook after you remove it from the grill. Slice it against the grain and serve it with the grilled onions. Serve with blue cheese sauce and garnish a sprinkling of minced fresh parsley. •
