Tropic Winds RV Resort Welcomes Bowie Elementary Students for a Morning of Christmas Fun and Games Special to Welcome Home RGV

For

the seventh year in a row, Christmas came early for 30 students from Bowie Elementary School in Harlingen. The first and second graders at Bowie are part of the HOSTS program--Helping One Student to Succeed. During the school year, several residents from Tropic Winds join other Winter Texans and local residents to mentor the students in the program. Many other Tropic Winds residents got involved and joined the students at the park for a morning of fun. The activities began with dancing. Just imagine the smiles and giggles as everyone wiggled their hips to the Chicken Dance and The Hokey Pokey. Cheering and excitement continued as the children participated in holiday carnival games, escorted by residents. Prizes were handed out

by resident carnival barkers. No Christmas party would be complete without a visit from Santa. Dressed in his red suit, cowboy boots, and a cowboy hat, he entered the hall on a decorated sleigh (aka a golf cart), joined by Mrs. Claus and a friendly North-Pole elf. Chimney RV Resort Adopts Families Special to Welcome Home RGV

For several years, the residents of

Chimney RV Resort in Mission have donated to projects to help families in need. This year, led by Joann Manley and Patty Woodruff, six families (nine adults and 24 children) chosen by the Mission Food Bank were ‘adopted’ by the group of volunteers who shopped for food, clothing, and gifts. Turkeys and other ingredients for a complete Christmas meal and a month’s supply of staples were

also provided. Thrivent Insurance provided the volunteers with T-shirts and some monetary support. Chimney residents also filled boxes with toys and other items for His Hands Mission and the Mission Police Department toy drive. A permanent food and clothing donation box in the activity hall fills often and is delivered to the Food Bank. As the volunteer shoppers’, packers’, and loaders’ shirts read, “Give generously.” •

Kansas City Museum Shares World War I Story by Tim and Lisa Trudell of The Walking Tourists

It

started with two shots fired in the dark. A continent on edge for years had now fallen into war. The “Great War” engulfed Europe, following the assassination of the Archduke Ferdinand of AustriaHungary. From 1914-1917, the United States managed to stay out of the war during its period of isolationism. The United States joined the war April 6, 1917, following a series of naval attacks on the high seas and a German plan to persuade Mexico to attack the United States. American forces quickly joined European allies

in fighting the German alliance. Once the United States became involved, the war started to turn for the allies. In the end, the allies lost almost two million soldiers in Europe. Combined, the American allies had 6.2 million soldiers fighting, while Germany had about 3.5 million. The war’s story is told through artifacts and film at the National World War I Museum and Memorial in Kansas City. The museum opened almost 20 years ago, but the memorial has been in place since the 1920s. Liberty Tower

stands tall, with the city’s skyline as a backdrop. Two exhibition halls house special exhibits, including murals highlighting the memorial’s history. As visitors enter the museum, they cross a glass bridge over a poppy field. The poppy field represents nine million people who died during the war, with each of the 9,000 poppies representing 1,000 deaths. More than 116,000 Americans died during the war. January Programs at Edinburg World Birding Center Special to Welcome Home RGV

The

Edinburg Scenic Wetlands and World Birding Center (EWBC) is offering activities for adults and families throughout the month of January. Enjoy some relaxation in nature, an adventurous photography exploration, a puppet show, and more. Saturday, January 20, take your family on a photography scavenger hunt throughout the gardens. Join Texas Master Naturalist and Adventure Guide Neil Cassady as he leads groups in an exploration of the trails to search for, and photograph, wildlife. Cameras will be provided, but families are encouraged to bring their own. These photo adventures will run from 9:30 – 10:30 a.m. January 20 and February 17. Participation is free with regular paid admission: $3 adults, $2 seniors and children, youngsters ages 5 and under and EWBC members are free. Saturday, January 27, the EWBC will present a puppet show titled “Teeth and Skulls.” Meet Ruby Rat and her puppet friends as she learns what the differences are in the teeth of plant- and meat-eating animals. After the show, enjoy a skull showand-tell and see if you can figure out what type of food the animal eats. The free puppet show begins at 2:30 p.m. Saturday, January 27, is also Spectacular Saturday, where the EWBC opens its doors, free of charge, from 8 a.m. – 5 p.m. Spectacular Saturday visitors can enjoy indoor crafts or activities or a walk along the gardens. Children can also read a book in the mini children’s library or color a favorite animal at the Center’s coloring tables. Families with older children are

invited to rent a Junior Ranger Field Pack to use on the grounds. They include items such as binoculars, magnifying lenses, animal-and-plant field guides, scavenger hunt sheets, and more. Those with younger children can rent Children’s Garden Play Sets. Choose from ten play sets, including Trucks, Explorers, Dinosaurs, Fairies and Gnomes, and Music Making. Ranger Packs and Play Sets are available throughout the week during regular business hours. Rentals are free; however, a picture ID is required for the loan. Spectacular Saturday occurs every last Saturday of the month. The Edinburg Scenic Wetlands & World Birding Center is located at 714 S. McAllen Memorial Student Council Hosts March against Human Trafficking January 20 Special to Welcome Home RGV

High School’s Student Council is hosting an event to educate the community about one of the issues in existence here in the Valley-- Human Trafficking. The event will take place January 20 at 8:30 am at McAllen Memorial’s Boxer Hernandez Stadium. They will have several guest speakers, including Rosie Martinez, the Hidalgo County Victims Unit director, John Montemayor, McAllen ISD’s safety manager, and Tracy Hughes, founder and director of Tamar’s Tapestry, a

shelter for trafficked women. There will be a kick-off event where the speakers will educate the community and raise awareness by having a FREE 3K/5K walk/run. McAllen Memorial Student Council is also looking for vendors and food trucks that will display/sell their products during the walk. History of the Port Isabel Lighthouse Special to Welcome Home RGV

The

Port Isabel Lighthouse has long been a dominant feature at the southern tip of the Texas Gulf Coast. Its heavy brick walls have stood against the elements for more than a century, and for most of that time, its light has been a familiar aid to seafarers. This area, long known to coastal Barrado Indians, was discovered by the Spanish explorer Pineda in 1519 while on a mapping expedition of the Gulf shores. Spanish control was established here in the late 1700s, as ranchers began moving into the vicinity from Mexico. By the 1830s, a small settlement, El Fronton de Santa Isabella, served as headquarters for a large Mexican ranch owned by Don Rafael Garcia. The Point Isabel region passed almost uneventfully through the period of the Texas Republic to statehood, but it gained widespread attention in 1846. In late April, General Zachary Taylor moved his troops into this area north of the Rio Grande when hostilities between the United States and Mexico seemed imminent. Within two weeks, war had begun. The opening battles of Palo Alto and Resaca de la Palma were fought north of present-day

Brownsville. Point Isabel received the wounded from these initial struggles and served as an American supply depot for the duration of the war. The point continued in use after the war to supply two military stations on the Rio Grande–Fort Brown and Ringgold Barracks. Because of the heavy shipping traffic through Brazos Santiago Pass to Point Isabel, a navigational light became a necessity. Land at the point was made available by the War Department, money was authorized by Congress, and construction of a lighthouse was underway by 1851. Two years later, the brick tower had been completed and was topped by a stationary white light that could be seen for almost 16 miles. The Civil War brought armed conflict once again to Point Isabel. Confederate forces held this area in the early stages of the war but gave way in 1863 to federal troops who were sent to strengthen the blockade on southern shipping. Women of St. Alban’s 47th Antique Show Special to Welcome Home RGV

The

47th Antique Show and Sale, sponsored by the Women of St. Alban’s Episcopal Church, will be held January 18 through January 21, 2018, at the Casa de Amistad in Harlingen. Show hours are from 10 a.m. to 6 p.m. on Friday and Saturday, and from 11 a.m. to 4 p.m. on Sunday. The long-running show features antique dealers from all across the country who bring a wide variety of merchandise. The show features Country, English, and Victorian furniture, antique and estate

jewelry, all types of glass, crystal, linens, china, silver, silver repair and replating, glass grinding and much more. The Women of St. Alban’s will be serving their famous brisket, soups, and sandwiches all three days, as well as all types of cakes, pies, cookies, jams, jellies, and relishes. Admission tickets good for all three days of the show are $6 each. Proceeds from the non profit show are used to fund St. Alban’s charitable projects during the year. •

Don’t Squat – Jump

today’s culture, many people have the opinion that we should live by our own standards, oblivious to the Word of God. Some want the blessings of the promises of God without subjecting themselves to obedience to God. However, to truly be happy and fulfilled, we must examine ourselves in the light of God’s Word and live by it. The Bible reads, “Your word is a lamp to guide my feet and a light for my path” (Psalm 119:105). The stress and tensions of life become more unbearable when we live in selfish disobedience to the Word. Yet simple submission and obedience to God’s Word relieves the stress that disobedience and today’s culture impose. Doubt is crippling, but faith is empowering, so make that leap! Faith in action brings victory! We must be doers of the Word and not just hearers. It is so human to hear the Word, rejoice in what we hear, and then…. ponder. Pondering plants seeds of doubt; this grows into the mighty tree of procrastination that bears the poisonous leaves of inaction. “But they delight in the law of the LORD, meditating on it day and

night. They are like trees planted along the riverbank, bearing fruit each season. Their leaves never wither, and they prosper in all they do” (Psalms 1:2). We must be like good soldiers and jump to attention, springing into action at the orders of our commander, the Lord. But what do we do instead? We hear the order and then prepare to jump, but inaction and hesitation cause us to get caught in the preparation, and we fail to jump. What a sad sight, to see the army of the Lord procrastinating before Him! How undignified! It is better to jump and fall than be stuck squatting down to jump. Squatting is a horrible place to stay. You can’t sit down. You can’t rise up. You can neither rest in your success nor stand in the knowledge of a job well done. Go ahead and jump! You can ask how high on the way up! Better to relieve the tension and stretch in the jump than to live with the constant strain of being stuck in the squat. Obedience in the jump is the better way. Make that leap of faith. We’ll see you on the way up! •

Winter Texan Wednesdays at Museum of South Texas History Special to Welcome Home RGV

The

Museum of South Texas History welcomes northern visitors to the Rio Grande Valley with its new Winter Texan Wednesday series. This bi-monthly program, scheduled from 3 to 4 p.m., will introduce visitors to the museum, as well as select stories from our region. Museum staff will guide visitors through a short tour of the galleries, which will highlight a different part of the exhibit. Following the tour, visitors will be invited to the Courtyard Gallery. Once settled, staff and guest speakers will lecture further on the topic of choice. The Winter Texan Wednesday series is included in the regular admission fee. Adults (18-61) $7 and Seniors (62+) $5. Citrus in the Rio Grande Valley How did the citrus industry come to define the Rio Grande Valley? What was the process that sent grapefruit from Valley farms to the rest of the country? Get a closer look at the citrus industry inside the River Crossroads exhibit and learn more about it with a presentation from special guest Neil Cassady, who has insight of the Valley’s citrus industry.

Conjunto in the Rio Grande Valley In the 1930s, migrant workers adopted the accordion and developed a new style of music called conjunto regional. Joseph Fox, the associate education officer at MOSTHistory, will lead the mini-highlight tour in the “Soy de Tejas” exhibit, followed by Roy Rodriguez from the Hub City Conjunto and Tejano Museum, who will give a multimedia presentation on conjunto music.

February 7:

Leatherwork in the Rio Grande Valley Echoing the theme of MOSTHistory’s Pioneer Ranching and Crafts Day, museum staff members Tom Fort and Joseph Fox will present the different uses of leather crafted by mankind,

including residents of the Rio Grande Valley. After all, a cowboy – or vaquero – wouldn’t be able to get far without a good pair of boots! Fort and Fox will also provide a mini-highlight tour of the River Highway exhibit featuring ranching items donated from the McAllen Ranch.

February 21:

Weber/Jackson Family Legacy While African-American slave labor fueled cotton plantations in the American South and the rest of Texas, the Rio Grande Valley became a refuge for interracial families, such as the Webers and Jacksons. Follow a mini-guided tour of the River Highway exhibit followed by a presentation featuring Roseann Bacha-Garza, a professor from UTRGV, who will discuss the legacy of these two ranching families and how they found their home in South Texas.

March 7:

Rio Grande Valley Livestock Show History Once a year, ranches from around the Rio Grande Valley and South Texas showcase their livestock at the Mercedes Livestock Show. The Museum of South Texas History welcomes Mike Risica, president of the Rio Grande Valley Livestock Show, to discuss the history and legacy of the Rio Grande Valley Livestock Show.

U.S. Navy Petty Officer 1st Class Ivan Aguilar presents a plaque from the Navy Recruiting District, San Antonio, and Navy Recruiting Station, McAllen, honoring Harry R. James for his 100th birthday and an appreciation certificate commemorating his WWII service aboard submarine chaser PC-569.

in the November 1, 2017, issue of Welcome Home Winter Texan) celebrated his admission to the “Centenarian Club” at Snow to Sun RV Resort in Weslaco January 2. U.S. Navy Petty Officer 1st Class Ivan Aguilar and Petty Officer 2nd Class Shauna Allen presented Harry with a memorial plaque and a commemorative certificate of service. Petty Officer Aguilar cited Harry’s service on the submarine chaser PC-569 (USS Petoskey) from 1941 through 1943 and thanked him for his dedicated service. Harry left a wife and little baby at home when he deployed in 1942 from San Francisco to the Northern Pacific, where his ship patrolled off the coast of Alaska and the Aleutian Islands

looking for enemy submarines. More than 100 Snow to Sun residents, many of them also veterans, were on hand to wish Harry a happy birthday and to share cake and ice cream. Harry is a little hard of hearing but still very active. He lives at Snow to Sun now, where he spends his time creating beautiful oil paintings and watching TV. Until a few years ago, he carved wood sculptures. “I had to give that up because the dust interfered with my breathing,” Harry said. “I’d like to pick it up again, but I have to get a breathing apparatus that will keep the dust out of my face.” 100th BIRTHDAY OF NAVY VETERAN CONTINUED ON PAGE 15 >>

Texas or Territory? The 1850 Brownsville Separatist Movement In the year 1850, separatists in Brownsville tried to rally support for the creation of a territory of the Rio Grande Valley separate from the State of Texas. Would the people of the Rio Grande Valley choose to become a separate territory or stay a part of Texas? Museum staff members Tom Fort and Joseph Fox will recount this unique episode in South Texas history. •

Bernie and Red Farewell Texas Tour by Bernie Crawley

Clinton was president, the film of the year was Titanic, gasoline cost an average of $1.15 gallon, and Bernie and Red made their first foray into the RGV. The year was 1998, and they have performed here each year since then. Bernie and Red will be back again, with their first show January 14 at Bentsen Grove in Mission. However ………. this will be their Farewell Texas tour. Bernie and Red retiring? Definitely not, but we are refining our touring schedule and, unfortunately, that means concentrating our efforts in California and Arizona, which are much closer to our home base in British Columbia, Canada. We love the Valley and have made countless friends here, but we are trying to cut down on travel. (The round trip from our home to the Valley is almost 6,000 miles.) Back in 1998, we came to the Valley at the end of our winter tour of Arizona and California in March, and in that first year, we performed at just three locations. But we had an amazing reception; the phone began ringing, and before we knew it, we were spending the month of January here and have done so for the past 20 years. In the process, we have been voted Top Comedy Show in the Valley Star Awards on half-a-dozen occasions. The Winter Texan entertainment scene in 1998 was really in its infancy, and the accent was definitely on country music, so the variety and professionalism of the Bernie and Red show was something of a change from the usual acts. Then, of course, our cheeky husband-andwife comedy routines really caught people’s attention, and in no time, our winter datebook was full. One of the reasons for our continued popularity is our ability to keep adapting to the changing demographic of the average winter visitor audience. Ever since our first winter season in the Valley, we have strived to present a new show every year, usually with a theme. A recent one was One Hit Wonders, and last year’s show was The British Invasion, which, of course, was made up of great 60s hits by The Beatles, Gerry and the Pacemakers, The Searchers, and others. And it’s

not just the music that you get in these shows. There are also lots of fascinating facts about the artists and the songs. (I have been described as something of a scholar of popular music, so I’m responsible for most of the musical trivia.) This year’s new show is titled Magic Moments and concentrates on songs from The Great American Songbook and songs that were Academy-Award winners, so you’ll hear the themes from both Midnight Cowboy and Butch Cassidy and the Sundance Kid, a 40s medley that includes Bye Bye Blackbird, and much more. There is also plenty of the comedy audiences have come to expect in this new show, including a completely new Carnac the Magnificent section. Bernie and Red will be performing in the Rio Grande Valley beginning January 14, and their final Farewell Texas show is Friday February 2, at 7 p.m. at Alamo Palms RV Resort in Alamo. Fittingly, this show will be their annual fundraiser for the St Baldrick’s Foundation, raising awareness of childhood cancer and will be the 11th annual concert Bernie and Red have presented for St Baldrick’s. One-hundred percent of the proceeds will go to the charity. To date, over $20,000 has been raised to be used here in the Valley. We always try to make this an extra special concert and encourage requests from the audience, plus we try to include some of our lesserheard songs, routines, and material you likely haven’t heard before. This concert is for a very worthy cause, so we encourage as many people as possible to attend, support the charity, and take in our final show in the Valley. Soy de Tejas Exhibit Highlights Conjunto Music in South Texas Special to Welcome Home RGV

Throughout the months of December and January, the Museum of South Texas’ “Soy de Tejas: Conjunto Music in the Rio Grande Valley” exhibit will tell the story of conjunto regional and feature instruments, records and record players, 8-track cassette tapes, and pictures of musicians and venues for display. With help from the South Texas Conjunto Association, Hub City Tejano and Conjunto Museum, and the Texas Conjunto Music Hall of Fame and Museum, MOSTHistory

is commemorating this unique genre popularized by Valley musicians. In the 1930s, a unique music style known as conjunto regional emerged among Mexican-Texan farmworkers, many of whom were from the Rio Grande Valley. From German and

Czech immigrants in Texas, the Tejano workers adopted the accordion and, with it, polka music. Combining that distinctive sound with their bajo sexto guitar produced the conjunto style, its songs reflecting the migrant workers’ experiences. Through live performances and record albums, conjunto music spread throughout the Rio Grande Valley and beyond. Echoes of conjunto are still heard today in Tejano music, as well as through the organizations and bands that keep the

genre alive in the Rio Grande Valley. Museum visitors can view the temporary exhibit Tuesday through Saturday from 10 a.m. to 5 p.m. and Sunday from 1 to 5 p.m. throughout the month of January. Group Travel Insurance

was sorting through my mail at home, gathering the junk mail to throw into recycling. One letter caught my eye because it had the logo of my credit-card rewards program. Intrigued, I opened it. What looked just like junk mail at first turned out to be “official” notice that my travel insurance protection was being cut from 31 days to 15 days. An hour later, I was back at my office and discussing travel insurance quotes with a client. He wanted to use the 31 days on his credit card prior to a top-up plan, and I told him about my junk-mail-sorting surprise. Later that afternoon, after he’d left my office, he called to tell me what happened when he called his creditcard company to verify his coverage. He had been assured over the phone that he was completely covered for 31 days, but after hanging up, he found the same “official” notice I had received that reduced his coverage to 15 days. How many people that year traveled for 31 days but were unknowingly only covered by their credit card for 15 days? Given that their “official” notice looked like junk mail, there’s a good chance it happened a lot. This kind of group travel insurance is nice to have, but there are a few tricky parts to the arrangement. A group policy can be created by any large group with a common interest and an insurance company. In addition to credit cards, group travel insurance can be provided by current or former employers, as well as unions or associations. Remember that the contract for group insurance is not an agreement

between the insurance company and you but rather between the insurance company and the group. Those are the two parties that agreed upon its terms, and individual group members have no control over the agreement. Since individuals aren’t part of the negotiation, the policy may turn out to be excellent, terrible, or anything in between. It mostly depends on how much the group is willing to pay for the coverage and to charge its members. For example, if their goal is to offer lower premiums, they must reduce benefits and/or increase exclusions accordingly. A good practice is to consider some questions about the coverage being offered. For example, is the amount of coverage sufficient? Two million dollars should be the absolute minimum coverage. Watch out for policies that carry a lifetime maximum of insurance. If you have previously made a claim, your protection will be reduced. Some other considerations: Has your coverage expired due to your age? Can you top-up the coverage for longer trips? Do you have to pay the bill initially then seek reimbursement? Are pre-existing medical conditions covered? These are only a few questions to ask. For a more detailed list, visit hotwinters.ca/credit-cards. How I Found the Bates Motel by Bernie Crawley

I

hope you’re ready for a quintessentially Canadian story containing references to ice hockey, Hollywood North, and Tim Horton’s doughnuts. Ice hockey? Self-explanatory. And we all eat doughnuts--or maybe donuts--but you may not be up to speed on Hollywood North, although if you ever watched an episode of The X-Files on TV you’ve experienced a Hollywood North production. Back in the mid -90s, the bean counters in Hollywood realized that fewer than three hours flying time away was the city of Vancouver, Canada, where movies and TV shows could be filmed with great talent for a far lower cost than in California. And so was born Hollywood North. Business today is brisker than ever. Juno, 50 Shades of Grey, Godzilla, Night at the Museum, Rise of the Planet of the Apes, Man of Steel, Mission Impossible IV, Twilight: New Moon, Legends of the Fall, and Robocop were all shot in Vancouver. I had little firsthand knowledge of these productions until I headed out recently to watch my grandson play in a hockey tournament. The rink was only a short distance away in the next township but on a road I rarely travel. Halfway up a slight incline, on my

left-hand side, I noticed an unusual building; the architecture was not the type normally seen in Western Canada but definitely the kind of Gothic edifice that turns up in horror movies. And there it was…the Bates Motel… and only five minutes from home! At the time, I had no idea there was a TV series based on the Hitchcock classic, Psycho, and much less idea that the filming of the series was taking place on my doorstep. (Since then, I made a point of watching the show, and it’s not half bad.) The reasons that make Vancouver a prime vacation target for North Americans are the same ones that make it an attractive movie production destination. The city enjoys four distinct seasons of mild weather. It does rain a lot in Vancouver, but it’s a rain forest, and the rain is needed to nourish all of the beautiful greenery found throughout the city. (And it keeps the city so clean!) On sunny days, however, the city is simply gorgeous. During the summer months (June-August), there is hardly any rain, while spring sees the city filled with colorful flora and cherry blossoms everywhere. Autumn arrives in October and November and provides a picturesque array of colors

as the leaves start changing. As well as an inventory of sound stages and production talent, Vancouver has a unique geography that can supply a wide variety of outdoor film locations. You want mountains, oceans, sandy beaches, rocky beaches, dairy farms, subways, futuristic architecture, rushing rivers, mansions, ski hills, gridlocked freeways, corn fields, fishing boats,

industrial parks, deserts (with sagebrush), vineyards, grubby innercity back alleys, racetracks, dams, train yards, waterfront, shipyards, cattle ranches, rodeo grounds, suburban wastelands, malls, manufacturing, venerable old boys’ schools complete with ivy—really, we’ve got just about BATES MOTEL CONTINUED ON PAGE 19 >>

May 13, 1865, more than a month after General Robert E. Lee’s surrender at Appomattox, in what has since been acknowledged as the last battle of the war. In 1866, the lighthouse was repaired and relit. For the next two decades, its beacon guided large numbers of commercial vessels to Southernmost Texas. The light was extinguished between 1888 and 1894 during negotiations over ownership of the site; when finally reactivated, its years of service were numbered. The lighthouse was abandoned permanently in 1905 after shipping traffic declined. And although the coast was later active with defense measures during the two world wars, the tower at Point Isabel stood a dark watch. The lighthouse and its associated buildings were donated to the state in 1950 as a historic site by Mr. and Mrs. Lon C. Hill, Jr., and the Port Isabel Realty Company. The State Parks Board remodeled the tower by replacing the iron platform with concrete and by raising the glass dome to provide easier access for visitors. Additional repair work by the Parks and Wildlife Department was completed in 1970. Presently, the tower, with its mercury-vapor light, is marked on sea charts as an aid to navigation. Of 16 lighthouses constructed along the Texas coast, Port Isabel Lighthouse is the only one now open to the public. Hours of Operation: 9 a.m. to 5 p.m. daily (weather permitting). Summer hours are extended to 8 p.m. Tickets may be purchased

in the Lighthouse, the Keepers Cottage (Chamber of Commerce & Visitors Center), the Treasures of the Gulf Museum, and the Port Isabel Historical Museum. (The Port Isabel historic lighthouse has been closed and undergoing renovation since November of 2016. The exterior has been resurfaced and two sets of railings at the top of the lighthouse have been manufactured and replaced. The catwalk will now be accessible to the public. This optional part of the tour adds an immersive 360-degree 16-mile view. The lighthouse reopened January 2, and plans are underway for a mid-January Grand Re-Opening Celebration. That date will be announced shortly.) •

anything you could wish for, all within a three-hour drive. Then there is Victoria. No visit to the area would be complete without visiting one of the oldest cities in the Pacific Northwest, located a short, but picturesque, ferry ride away on the southern tip of Vancouver Island. British settlement began here in 1843, and the city has retained a large number of its historic buildings, including its two most famous landmarks, the legislative buildings, home to the BC government, and the iconic Empress Hotel (opened in 1908). With its red, doubledecker buses, rose gardens, and cricket fields, Victoria is regarded as essentially English by most North Americans. One of the “must do’s” for

tourists and locals alike, is afternoon tea, preferably at the Empress. But if not there, you’ll find lots of other great afternoon tea choices throughout British Columbia. So what are you waiting for? Make plans now. Oh, and did I mention the doughnuts? I’m just finishing my Tim Horton sour cream glazed. If you’re considering a trip to Hollywood North, be sure to visit moviemaps.org/cities/2 where you will find full (and I mean FULL) details about the locations used in your favourite TV shows and movies. (The Vancouver Art Gallery is one of the most utilized buildings and was featured prominently in the movie Night at the Museum.) Toward the end of the last Ice Age, winds picked up soils that had been ground as fine as flour and formed dunes along the ancient waterway that became today’s Missouri River. The process repeated itself during the thousands of years the Ice Age took to end, enlarging the dunes. Because the prevailing winds were from the northwest, the dunes on the Iowa side of the river were higher than those west of the Missouri. Today, the definition of a Loess Hill is a hill made of loess that is more than 60 feet in height; using that definition, about 640,000 acres of land in western Iowa constitute the Loess Hills landform.

• 1 lb. ground beef • ½ lb. ground pork • 1 egg • ¼ cup milk • 1 Tbsp. catsup • ½ Tbsp. prepared mustard • ½ tsp. thyme

• ½ tsp. sage • 1 tsp. garlic powder • 1 Tbsp. onion powder • ½ tsp. smoked paprika • ½ tsp. salt • 4 slices dry bread, crumbled

Mix together all ingredients; mix well. Shape into loaf; place in loaf pan. Bake in 350° oven until thermometer registers 150°.

Although deposits of loess are found across the world, nowhere else but China are those deposits higher than they are in Iowa. Eventually, top soils evolved on the dunes and a unique natural community developed. Ice-Age animals like wooly mammoth, camel, giant beaver, and giant sloth roamed the Loess Hills during the Hills’ early years. Humans have lived here off and on for 6,000 years, as evidenced by stone tools, spear points, pottery, and burial sites.

Farmer Meatloaf

Mac N’ Cheese

with Beer Bread Crumbs and Bacon!

• 1 lb. macaroni noodle • 2 oz. Gouda, grated • 8 Tbsp. butter, divided • 1 tsp. white pepper • ½ cup all-purpose flour • 1 tsp. ground mustard • 2 cups beer of choice • 1 tsp. Worcestershire sauce • 2 cups half and half • 1 tsp. salt • 8 oz. cream cheese, cubed • 4 slices thick-cut bacon • 8 oz. sharp cheddar cheese, grated • 2 cups beer bread crumbs • 8 oz. Monterey Jack cheese, grated Cook macaroni according to package directions; drain and set aside. Melt 6 tablespoons butter in large pot. Slowly add flour while whisking. Allow to cook 2 minutes while whisking. Add beer, half and half, and cream cheese; whisk until melted. Add other cheeses, one at a time; whisk until melted. Add pepper, mustard, Worcestershire, and salt to sauce. Pour macaroni into sauce; stir to combine. Pour into 3-quart dish; set aside. Fry bacon; drain and dice. Sprinkle on top of macaroni and cheese. Melt remaining butter; stir in bread crumbs. Sprinkle over bacon. Bake in 375° oven 30 minutes.

The Unusual World of Patty Gregg Special to Welcome Home RGV

To label Patty Gregg as an artist

would be an understatement. It would be more appropriate to say she is an extremely creative, artistic, and talented individual. Since an early age, she has embraced and excelled in so many different forms of art that it is difficult to mention them all. Born in Mexico City, Gregg has a natural love for bright colors and she’s not afraid to use them. This is reflected in the smile on people’s faces when they view her work. She first started her path to art as a painter, using oil and acrylic. Her surrealistic work was soon noticed by famed Mexican master engraver Ignacio Miranda, who invited her to work as an assistant in Valle de Bravo. Later, after moving to the Yucatan, she became enthralled with the Mayan culture and began carving intricate pieces of limestone of Mayan inspiration. But her most popular-selling work in Cancun came when she started creating large mixed media, 3D collages with acrylics, and articles provided by

nature while beachcombing. After marrying a Canadian, Gregg moved to multi-cultural Ontario. It was here that she diversified into Japanese Sumi ink drawings, kilnfired ceramics with “The English Potter” Studio, and ornately painted and decorated masks using Plaster of Paris mixed media. After being invited to join a studio tour near Toronto, Gregg began creating incredibly colorful and surrealistic painted driftwood “creatures” collected around the lake of her northern lake house. They were so popular that she sold over 150 pieces over the course of three years. Now living in Laguna Vista during the winter months, Gregg has once again become inspired by her surroundings. She is a member of the Laguna Madre Art League and will display some of her work at the Port Isabel Library throughout January. For Library hours, call 956-943-2265. A timeline in the gallery highlights key dates and events during World War I. Weapons and artillery from several nations involved in the war are displayed. From a German cannon to American weapons, each item is authentic. Other memorabilia include uniforms and equipment. Another exhibit examines trench warfare, which consumed much of the war. Armies were unable to advance far from the trenches. As a result, items started piling up, with trash, ammo containers, and human remains among the soldiers in trenches. With water and mud rampant in them, trenches would give way, collapsing on soldiers. A British officer referred to trenches as the “long grave.” As each side sought superiority, air power played a major role in a war for the first time. Machine guns were mounted on planes and synchronized to fire between propeller turns. Pilots battled each other, as well as dropping bombs on ground forces. German pilot Baron Rettmeister Manfred von Richthofen

– AKA “The Red Baron” – notched 80 kills in the air. As the United States and its allies eventually advanced beyond the trenches, Germany lost its strength along the Western Front. Germany and its allies surrendered November 11, 1918. Known as Armistice Day, it marked the end of the World War, though fighting didn’t end until about a year later. Being able to serve crispy “fried” foods without all the grease is amazing! • with

• 2 (23 oz.) cans Ranch Style beans • ¼ cup chopped cilantro • 1 (23 oz.) can water

Lightly brown bacon pieces; remove from skillet. Sauté onions and tomatoes in drippings. Combine bacon, sautéed vegetables, beans, cilantro, and water. Simmer for 30 minutes. You may use beans with jalapeños, if desired. • 4 medium Texas sweet onions • 4 teaspoons real butter • 1 tablespoon olive oil • 1 teaspoon onion salt Preheat the air fryer to 350 degrees F. Peel the onions and slice off the root end so they will sit flat. Cut about four slices from the top to the bottom of the onion, but DON’T cut it all the way through. You want it to look like the fried onion from that famous restaurant! Place the onions in the basket of the air fryer. Drizzle each with a bit of the olive oil and sprinkle with the onion salt. Cook for about 30 minutes, testing for tenderness. Enjoy with your favorite dip.

The Stage is Set… but Tickets are Disappearing… for the Rowe High School Musical Special to Welcome Home RGV

Rowe High School Choral Department is putting the finishing touches on this year’s musical, Thoroughly Modern Millie. “The show is really starting to come together, as we’ve added the set, props, sound, and costumes,” Assistant Choir Director Micah Bland said. “We can’t wait for the audience to arrive and to see what the students have been working on since October.” Tickets are going fast. There are only four shows with tickets still available: January 22, 23, 26, and 27. Cost of admission is $14.00. A discounted ticket price of $12.00 is available in a very limited quantity for senior

citizens on the following select days: January 22 and 23. A matinee performance is scheduled for 2:00 p.m. January 27. Evening performances of the show are scheduled for January 22, 23, and 26 at 7:00 p.m. All shows will be held at the Rowe High School auditorium. it’s cold outside! And I’m looking for easy, stress-free and fun winter dinners. This soup fits the bill perfectly. And it features one of my favorite pastas ever – tortellini. They are so cute and also delicious with their yummy cheese perfectly tucked inside – what is not to love!? And if you have not yet thought to put them in soup, here is your chance! Bon Appétit! •

FOUR SERVINGS

• 1 tablespoon olive oil • 4 ounces hot or mild Italian sausage, removed from casings • 1 onion, diced • 1 medium rib celery, diced • 1 medium carrot, diced • One 15-ounce can white cannellini beans, rinsed and drained • One 15-ounce can diced tomatoes • 2 cups no or low-sodium chicken or vegetable stock • One 8 to 9 ounce package of refrigerated tortellini • Kosher salt and freshly ground black pepper • 1/4 cup prepared pesto • Grated Parmesan, for serving Heat the oil in a medium pot over medium heat. Add the sausage and cook until browned, about 4 minutes. Add the onions, celery and carrot and continue to cook, stirring, until the vegetables are softened, about 5 minutes. Add the beans, tomatoes, stock and 4 cups water and increase the heat to medium-high to bring to a simmer. Continue to simmer, adjusting the heat if necessary, until the vegetables are tender, about 10 minutes. Add the tortellini and continue to cook until they are tender, about 7 minutes. Season to taste with salt and pepper. Serve in bowls and garnish with a dollop of pesto and a bit of grated Parmesan. •
