Happy New Year!

I hope you had a wonderful holiday and are as excited as I am about what lies ahead in 2018. Don’t get me wrong. Last year was a great year, but there is something about the start of a new year that is so refreshing. I spend the time between Christmas and New Year’s to reflect on what we’ve been able to accomplish and what we weren’t able to get done, and I think of ways to be more efficient with our time. At times, I feel like we move at a snail’s pace, so this time of reflection is good for my soul. When I slow down to think about all we did this past year, I find myself feeling amazed. I’m a dreamer, admittedly. I love to think of the possibilities out there and new ways to make even more happen. This is the time of year when my family and my work family are almost scared to ask me what I’m thinking about!

Residents got into the festive spirit right after the Thanksgiving celebrations when they begin hanging decorations and stringing Christmas lights. The mobiles were gaily lit and park lights were everywhere. The Park was transformed into a bright and joyful

this was a time of good cheer and fellowship, Park residents did not want to forget there were many less fortunate who need help, especially at this time of year. wonderland. Sunday, December 10, the first of two golf-cart Christmas parades met with much enthusiasm as over 20 residents decorated their carts. The second parade was scheduled for Sunday, December 23. Many residents practiced for a carol sing-along, where they went doorto-door and brought holiday cheer to friends and neighbors. Although

our recent cold snap, we needed to think about the homeless and needy. We need to help them all year, but especially during the winter months. Eastgate RV and Mobile Home Park invited the Harlingen Food Pantry to come and give a talk. Wende and Jim told us all about the services they offer their clients. Everything is available for them, from food for their families to clothing and household items. The homeless are given warm clothing and items that will help them make it through the

coldest of the winter days. Many families are also in need of clothing items and food to help extend their paychecks from week to week. Children need warm coats and shoes. Baby diapers are so expensive for young families to purchase. So much is donated from families in the community to businesses, including HEB and Walmart. entertainment is on tap for Harlingen next week – both literally and figuratively – as Two on Tap, featuring Broadway veterans Melissa Giattino and Ron DeStefano, takes the stage. This talented duo will showcase their gorgeous vocals, exciting choreography, and unique musical arrangements at the Harlingen Municipal Auditorium Thursday, January 11, at 7:30 p.m., courtesy of the Harlingen Concert Association. Since its debut in February 2010, Two On Tap has entertained tens of thousands at countless theatrical concerts and gala events across the United States and has enjoyed headliner status aboard luxury cruise liners. Heralded by presenters and critics alike, Giattino and DeStefano breathe new life into classic songand-dance with clever arrangements, a meaningful connection to the audience, and high-energy routines. “Our audience absolutely loved the show,” said the executive director of the Grand Opera House in Dubuque, Iowa. “I’ve never heard such universal praise and thanks for an attraction!” a reviewer with the New Orleans TimesPicayune agreed. “From the sizzling opening of I Got Rhythm, the pair showed throughout the 80-minute show that they certainly do -- rhythm, style, humor -- and a Broadway flair left the audience elated,” he wrote. Orphan Train Riders’ Whistle Stops in the Rio Grande Valley January through April Special to Welcome Home RGV

The

“Orphan Train Lady” has arrived in The Valley and is ready to take Winter Texans and others on train journeys to be “placed out” into new homes across America. Dorothy A. Lund Nelson will present her lively, interactive presentation at various parks this winter. During the program, the participants will learn how the first adoptions and foster care came about in America and how over 200,000 children during 75 years, from 1854-1929, received new parents and families. This American History story is amazing. Lund first presented Orphan Train Riders in 1985. Her husband began keeping a record in 1995, and since then, she has presented over 450 times in 12 states and in Japan. Recently, she received a second honor from the National Orphan Train Complex Board for telling the Orphan Train Story for over 30 years. The Complex/Museum is located in Concordia, Kansas. Lund wrote two books honoring Orphan Train Riders who became governors; Burke’s Journeys, about Andrew Burke of North Dakota, and That Brady Fellow, concerning the life of John Green Brady of the Territory of Alaska.

Following her program, Lund distributes The HOME We Shared, a memoir of living in the North Dakota Children’s Home in Fargo, North Dakota. Ebony Loop Free Guided Nature Walks Offered Twice Monthly in Harlingen by Anita Westervelt

Harlingen’s

Hugh Ramsey Nature Park boasts 250-some species of Rio Grande Valley native plants, shrubs, trees, cacti and an untold numbers of birds, butterflies, and critters that use this native habitat. Many of the plants are highlighted in specialty gardens around the park’s Ebony Loop, and the path is lined with many different species of trees native to the Valley. Rio Grande Valley Chapter, Texas Master Naturalist volunteers maintain these gardens and trails, working as a team every Thursday morning from 9 to 11 a.m. Many Winter Texans and local residents work alongside the naturalists. Volunteers are always welcome. In addition to the Thursday morning volunteer opportunity, Texas master naturalist native plant experts provide free guided nature walks on the first Friday and third Saturday of each month through May. There’s always something blooming around Ebony Loop. You’re probably familiar with a hummingbird favorite, the native wild olive, Cordia boissieri, that blooms its big white, bellshaped blossoms in all seasons here in the Valley. Mexican caesalpinia, Caesalpinia mexicana, is showy most of the year, too, even into the winter. Large clusters of bright yellow blooms also are a favorite of hummingbirds and butterflies. Considered the rarest of all trees in Texas, Runyon’s Esenbeckia, Esenbeckia berlandieri [E. runyonii] is showcased in the Loop’s recently rejuvenated Robert Runyon Garden. Also called limoncillo (little lemon), it is in the Rutaceae family, as are lemons. The tree was first reported in the Lower Rio Grande Valley by Robert Runyon. Runyon was a photographer and self-taught botanist in Brownsville in the early 1900s. He later was involved in local politics and served as Brownsville city manager and mayor. Runyon is responsible for naming several cacti and succulents, including Coryphantha robertii,

Echeveria runyonii, Echinocereus runyonii Orcutt, other native plants and grasses, and the curious phenomenon called Runyon’s Dodder, Cuscuta runyonii. While renovating Runyon Garden, the Thursday morning volunteers populated much of the center garden with Runyon’s Violet Wild Petunia, Ruellia nudiflora var. runyonii, and developed a side garden dedicated to Runyon’s Water Willow, Justicia runyonii. Both plants are a host to the malachite butterfly. Runyon’s granddaughter donated funds for the revamping of the garden that was dedicated to the works of her grandfather. One of the mysteries of our native trees is that many of them bloom after rain. With the recent rains, it’s a good opportunity to see which trees will begin pushing out winter blooms. Ebony Loop is an easy quarter-mile, level caliche trail. Wear sturdy shoes and bring water and bug spray for yourself, if desired. Restrooms are located at the park entrance. Hugh Ramsey Nature Park is at 1000 South 499, just two miles south of Harlingen’s Valley International Airport or Ed Carey Drive, just north of the Arroyo Colorado River Bridge. Meet up with the guides in the parking lot where the two-hour tour begins at 9 a.m. •

did help to provide much-needed relief for many local residents. There was a Park Christmas dinner Christmas Day and a freewill offered once again be part of bringing good cheer to those in need. Food Pantry contributions in our park have proved to be very successful, raising $1000 to $2000 each year, in addition to actual food items donated. One year the Park food-pantry drive actually topped

$3000. For almost 35 years, the First Presbyterian Church on Elizabeth Street in Brownsville has performed the duties of a food-pantry outlet. Winter Texans at Palm Resaca Park continue to support the Brownsville Food Pantry with food and financial donations, and various residents volunteer their time throughout the season. (The Church accepts food and monetary donations throughout the year and seeks volunteers, too.) •

Principles for Life

From the time we are born, there

are rules, rules, and more rules. From the very first “NO, NO,” we are surrounded by things we should not do or dare not do and are even forbidden to do. A lot of people follow the rules, which makes for a smoother life. Those who don’t follow them wind up in deep trouble, physically and, especially, spiritually. God gave the Ten Commandments to Moses for the personal well-being of His people. In Exodus 20:2, God said, “I am the LORD your God, who brought you out of the land of Egypt, out of the house of slavery.” He gave us these laws to protect us but also to remind us that we are human, thus sinful. As parents, we often told our toddlers to “be careful, the stove is hot” or “look both ways before crossing a street.” We didn’t do this just to show our authority but because it was for their own safety. The same way we wanted to protect our children, so God wants to protect His children. We cannot follow His laws to the letter. We sin every day, often without realizing it. Sure, we can admire our neighbor’s

new car, but to wish and desire that we have one and not be glad for them is sinful. We would never go out and rob a bank, but have you ever just wasted time at work or done some small personal chore while on company time? Stealing! Have you fudged on your taxes? Lying! Do you prize your personal possessions? Those become false gods and idols. Have you skipped church on Sunday to stay home and do work around the house because you were too busy during the week (golfing, shopping, Facebooking)? Were you disrespectful to your parents by not being there for them when they needed you? Of course, you have not murdered anyone, but do you do so by gossip, murdering their good name? You have not physically cheated on your spouse, but have you emotionally attached yourself to someone of the opposite sex? In the eyes of God, you have sinned, even though you may think you have not. We are human, not perfect, but through daily prayer and meditating on the Word, we can be aware of our failures. Our salvation is not based on how we follow the rules, but our spiritual life is enriched by doing so. •

Leila and her husband, Fred Preuss, are associate chaplains within Christian Resort Ministries serving in a hands-on ministry to the colonia called Caring Hearts Ministry. They deliver food, clothing, and other items to the colonia and help the residents learn how to help themselves through the generosity of others. led by RGV Queen Jan Bergman, will host their annual premier Red Hat event, the Festival of Tables, Monday, January 29. Trails Golf Course, formerly known as Martin Valley Ranch, was established in 1984. It was built and designed by local personnel and is located in Leisure Valley Ranch RV Park in Mission. In the spring of 2014, the course was purchased by the La Joya School District. The district’s intention was to give children in the community something to do in their spare time. They are planning to eventually build a planetarium, waterpark, and tennis courts, as well as other facilities in this area, so the community will have a wide range of recreational choices. At the present time, a number of renovations are being done to the course, including improving irrigation of the Bermuda greens and fairways. The layout is 27 holes with three sets of tees. Two sets of tees are rated for men and one for women. The ratings for men on holes 1-18 are 71.4/112 at 6175 yards and

67.9/108 at 5597 yards, on holes 10-27 are 72.2/114 at 6631 yards and 69.4/110 at 6088 yards, and on holes 19-9 are 71.4/112 at 6462 yards and 68.2/106 at 5911 yards. founders of Sunshine RV Resort, an Encore Park, have always had the Sunshine RV Church within the park. Presently, Chaplain Richard Elkins pastors the church, now in his fourth year. Pastor Richard claims to be “just a farm boy who loves the Lord.” Each year, the church has a guiding Bible verse for the season. The year before last, it was James 1:22: “Be doers of the word and not hearers only.” Pastor Richard said, “That was the year the congregation was moved to really take this scripture to heart.” Sunshine RV Church is involved in two mission works within the church-SONshine Ministries and Missions to Mexico.

SONshine Ministries (SM) ministers to needy families just across the border in Progreso, Mexico. We met a family of seven living in a 16’ x 7’ shack with an old curtain for a door and a roof that leaked when it rained. Just a week ago, they received a new 20’x 20’ house right before it snowed. SM has built over 100 homes like this over its 15 years of serving in Progreso. This year, SM is supporting 84 children to be able to go to school. The group has also built five churches within this last year and work ‘in the trenches’ with needy families on a weekly basis. 1st Responders met at the Valley Care Clinic, located at 1800 S. 5th Street in McAllen, December 13. Featured speaker was Ines Carrasquillo, MD FACS speaking on her specialty, plastic surgery and hands, specifically a new procedure for Dupuytren’s disease. This is a condition causing bent or contracted fingers of the hand due to a cord in the palm of the hand. She also discussed a variety of skin lesions and acute wound care.

Dr. Ebenezer Nii-Moi, obstetriciangynecologist with the Valley Care Clinic, covered the importance of continued gynecological screening for prevention of cervical cancer, especially in seniors. He also specializes in robotic surgical intervention for prolapse and urinary incontinence conditions, which affect many women who are not aware of the options available. Director Michael Powers presented an overview of hyperbaric medicine

within the Wound Care and Hyperbaric Services Department at McAllen Medical Center. Patients can make an appointment to come in and see the team of medical specialists for wounds and sores that show no signs of healing. (Please call 956-6324464.) Snow to Sun Resident Climbed through Ranks to Retire as Commander by Jess Merrill

battles raged within hearing distance of his position on the Tran Han Dao River north of Saigon. During the hot, steamy summer of 1971, Don Hazen repaired bullet holes in river patrol boats during his fourth tour of duty in Vietnam. The Army had already pulled out, and the fighting was getting closer. His repair barge pulled back to Nha Be, a Saigon suburb, five days before the North Vietnamese overran their previous position. That was near the end of a one-year tour in the war-ravaged country. By this time, he had served six years in the U.S. Navy as Damage Control Man (DCM) on troop transports, amphibious landing craft, and submarine tenders. He was eager to return home. Don was in his first year at San Diego State College when he received his draft notice. He ironically chose to enlist in the Navy rather than dig foxholes as an Army infantryman in Vietnam. He trained as a DCM, where he learned firefighting, sheet metal work, carpentry, fiberglass repair, and construction. His first assignment was aboard a WWII ship, the U.S.S. Cavalier, recommissioned for service in Vietnam. The ship, with a crew of 350 men, made two trips to Vietnam carrying 1800 marines. The ship also served as a hotel ship for U.S. Marines at Da Nang. Don recalled an incident when a Vietnamese junk attacked a Navy destroyer. The destroyer quickly sank the junk, and U.S. sailors plucked 11 Viet Cong sailors from the water. One of Don’s jobs was to build a brig for them aboard the Cavalier where they were imprisoned. One night, with the prisoners on board, enemy divers attached 11 mines to the ship’s anchor chain. The enemy plan was that the ship would swing with the changing tide, ride against the chain, trigger the mines, and sink, killing their own sailors. However, the security routine aboard ship placed

U.S. Navy divers in the water daily to inspect the hull and surrounding water looking for such sabotage. They discovered the mines and disarmed them. Don returned stateside to the U.S.S. Compton in Boston. He remembers emergency repairs on the bow of the ship with waves splashing over him while he welded a separation just above the waterline. The Compton, a worn out WWII ship, was transferred to Brazil in September 1972, where she served the Brazilian Navy until 1990 when it was scrapped. Don reported for duty aboard the U.S.S. Shreveport sailing out of Norfolk, Virginia. While stationed at Norfolk, he met his wife of 30 years, Aggie. They dated six months before getting married December 28, 1973. Don’s final tour on the Shreveport took him to Rotterdam, Holland. Aggie bought an airplane ticket and met him there for their four-day honeymoon. From Rotterdam, they took an idyllic tour to Dusseldorf, Germany, where no one spoke English. Don said, because of language difficulties, they were lucky to get back to Rotterdam

before his ship sailed and Aggie missed her flight. Aggie worked for Enlisted Personnel Distribution Atlantic Fleet, where she was responsible for the assignment of all personnel on every ship in the Atlantic. For the first 10 months of their marriage, Don cruised the Caribbean with the training fleet during the week and was home only on weekends. Not happy with that arrangement, Aggie had him transferred to the U.S.S. L.Y. Spear, a submarine tender that went to sea three days each quarter. He served on the Spear until 1974 when his enlistment was up. He was eligible for advancement to Chief Petty Officer, but he would have had to enlist for another two years. He chose, instead, to get out of the Navy. He moved to Erie, Pennsylvania, where he took a position with American Sterilizer Corporation as a welder and then an assembler. He also joined the Navy Reserve and quickly advanced to Chief Petty Officer. In 1992, he was promoted to Chief Warrant Officer (carpenter). After two years in that position, his captain urged him to apply for Limited Duty Officer as the Navy Reserve was in need of junior officers. He applied and rose to the rank of commander before retiring with 39 years of service in 2005. Diagnosed with ovarian cancer in 1993, Aggie faced a terminal prognosis with fewer than two years to live. However, she courageously struggled with chemo 11 years until 2004. Don said he was a basket case and was ready to retire both from his civilian job and from the Navy, but a hospice worker convinced him to continue working for another year before making any big decisions. He retired in 2005, sold his home in Erie, and bought a motor home. He had no particular destination plan, but while at a Winnebago rally, he made a friend who encouraged him to take up square dancing. She said, “Follow me to Texas, the square dancing capitol of the world, and learn.” Don

followed her, parked his motor home at Snow to Sun RV Resort in Weslaco, and learned to square dance. Now, he regularly attends dances at Alamo Rec Veh, Pine to Palm, and Tropic Star. He also enjoys golfing at Llano Grande and Tierra Santa. • Jess Merrill, activities assistant at Snow to Sun RV Resort, is a retired commercial photographer. Originally from Lansing, Michigan, he has had many careers, including truck driver, information systems director, executive vice president for a graphic arts company, and writer/ editor, although he considers himself primarily and always a photographer.

Mexico, that operates the Benito Juarez Children’s Home there. MM works with children of mostly single mothers who have been left behind on the border to care for their families. MM boards these children and teaches them in their established school. We have included a picture of some of our residents from Sunshine RV Park working on the new school presently under construction. “We are so blessed to be very

involved in both of these wonderful missions right here, close to our park,” Pastor Richard said. Pastor Richard said their church is made up of “older teenagers” who have caring hearts and who are willing to put their faith to work, truly being “Doers of the word and not hearers only.” “We are so appreciative of Sunshine Park and Encore for allowing our church to meet and work within the

park,” Pastor Richard said. “What a great and loving park to be a part of, allowing us (the church) to do the work we do every season.” Sunshine RV Church holds worship services every Sunday at 10:00 a.m., ‘hymn sing’ at 5:15 p.m., and Wednesday Bible study at 9:00 a.m. (The study of Revelation starts the second Wednesday in January.) That’s no joke; this fried-chicken dinner brings in people from all over the Valley who feast on three pieces of chicken, mashed potatoes/gravy, homemade cole slaw, green beans, and a roll with butter for $10 a plate. That includes iced tea, coffee, or water, too! It’s a meal I’ve heard about for years. I enjoyed it for the first time in the company of a whole bunch of other hungry Winter Texans, and we all left the building with big smiles and full stomachs. willing and able to cook and serve some of the tastiest meals around. The chicken feed has been offered for 52 years! It all started with a couple of guys frying chicken in some castiron skillets and has grown to an entire team utilizing seven commercial fryers (and 40 gallons of vegetable oil) to produce about 3600 individual pieces of fried chicken each Sunday the meal is served. The cole slaw is made on site, using 450 pounds of fresh cabbage. I couldn’t get the recipe for the potatoes and gravy or they would have to kill me! Trust me when I say it leaves nothing to be desired. We were joined by Charles and Rose, friends from Winter Ranch RV Park, and all four of us were amazed at the smooth operation those Elks Lodge members have perfected. The meal is served cafeteria style,

with several friendly ladies dishing up your choice of chicken pieces and the rest of the trimmings and pouring the iced tea and water. You locate a seat at long tables with dozens of other diners, but there is little talking at first since mouths are full. Later, however, over dessert (homemade pies and cakes offered for $2.00), you can learn where everyone is from and where they live in the RGV. During the winter season, January – March, chicken is served twice a month. (January 14 and 28; February 11 and 25; March 11 and 25). You can also order by telephone by calling 956-968-7115 and have your dinner waiting for you to pick up in a takeout box. Fried chicken isn’t the only thing you can enjoy at the Weslaco Elks Lodge. Wednesdays from 5:30 p.m. -7:00 p.m., they serve spaghetti with homemade sauce, green salad, breadsticks, and a beverage for $7. Chicken-fried steak is on the menu Thursdays from 6:00 p.m. - 8:00 p.m. and is served with mashed potatoes/gravy, green-bean casserole, a roll with butter, and a beverage. These meals are open to the public. I learned that when there are leftovers, the kitchen boxes them up and delivers them to the local fire station, police station, and hospice facility. That’s just a tiny bit of the

charitable work the Elks Lodge does as its mission to help those in need, especially children. On the tables, you’ll see red plastic piggy banks. Coins dropped into them are sent to the Texas Elks to assist special-needs kids. The local lodge also provides grants to organizations and individuals who need funds for projects, such as wheelchairs or other special equipment. The Elks send special-needs kids to camp each year at no cost to their families. In the early winter season, October – December, fundraisers for the local Christian school and scouts are held. We had the privilege of meeting and talking to Paul McDaniel, kitchen manager, Jim Nantz, exalted ruler and Jean Burch,

past exalted ruler and current district deputy for the South District of Texas Elks. These people are an example of what dedication, the heart of a servant, and hard work can do for an organization. new Knapp/UTRGV Family Residency Clinic in Mercedes December 14. Dr. Eddy Berges, MD, spoke about the full-scope Family Practice and Medical Residents Program staff and faculty serving the community. This newly built, spacious facility opened in August of 2017 and will increase to a total of 21 Resident MDs serving the needs of Mercedes and the Knapp Medical Complex. Knapp/ UTRGV Family Residency Clinic is a great addition to the community and very convenient for our Winter Texan population, with walk-ins and appointments available and excellent coverage by doctors and staff. Guest speakers were Evy Gonzalez, APRN FNP-BC from Dr Michael D. Sanders orthopedic and sports medicine practice speaking on arthritis. Star Ambulance service

provided two medics as additional guest speakers, discussing their service within the Mercedes area. Additionally, we toured the Mid Valley Nursing & Rehabilitation facility, led by Carlos Bello, meeting their staff and viewing this welcoming environment for short- and long-term patients or residents. Both of these impressive facilities are located at the NW corner of N Mile 2 West near the frontage road and Expressway 83 intersection and are very convenient for those needing these medical services. •

4 cups all-purpose flour 2 cups hot tap water 2½ teaspoons (usually one packet) instant yeast 2 teaspoons salt

Line your slow cooker with parchment paper or you will have a terrible time getting the loaf out once it’s baked. Mix the dry ingredients. Then stir in the hot water until you have a soft dough. Make a round loaf and place it into the lined slow cooker. Cover, set on HIGH, and cook for 2½ hours. Test to make sure the loaf is baked through, using a toothpick. If not, bake for another 20 minutes and test again. “Minne-cristo” SPAM® Stacker: Makes 2 mini loaves

• 1 (12-ounce) can SPAM® Less Sodium • 1 egg white (beaten) • 2 (8-count) cans crescent roll dough sheets • 2 teaspoons sesame seeds • ¼ cup raspberry preserves, divided • Cooking Spray • 4 deli slices Swiss cheese, divided Preheat oven to 375 degrees F. Unroll crescent roll dough sheets and cut into 8 rectangles (each 5½ inches x 3 inches in size). Brush with egg wash. Sprinkle sesame seeds on two of the rectangles, pressing lightly with fingers to adhere to the dough. Place on baking sheet sprayed with cooking spray. Bake 7-10 minutes until puffy and lightly browned. Allow to cool. Cut SPAM® lengthwise into 12 thin slices. Heat SPAM® slices in skillet until lightly browned on both sides. Spray two 5½ inch x 3 inch mini loaf pans with cooking spray. To assemble, place one baked crescent roll rectangle in the pan. Top evenly with two SPAM® slices. Spread SPAM® layer with raspberry preserves, then top with one slice Swiss cheese. (As needed, trim the crescents, SPAM® slices, and cheese to fit the pans.) Place second baked crescent roll rectangle over this and two more SPAM® slices. Place third baked crescent roll rectangle and two more SPAM® slices. Spread with raspberry jam; then top with one slice Swiss cheese. Finish by topping with baked crescent roll rectangle (fourth crust with sesame seeds). Repeat assembly directions to create the second “stacker.” Bake 10 minutes until hot and golden brown. Cool slightly before cutting. When ready to serve, cut each “stacker” into 6 slices. SPAM® and Wild Rice Salad: Serves 6

• 6 cups chicken stock or broth • 1½ cups wild rice • Juice of 1 lemon ® • 1 12-ounce can SPAM Classic or Less Sodium, diced • 1 cup match stick sliced carrots • ½ cup dried cranberries • 4 green onions, finely chopped • 6 cups chopped Romaine lettuce • ½ cup pumpkin seeds, toasted * For Vinaigrette Dressing: • 3 tablespoons apple cider vinegar • ¼ cup + 2 tablespoons canola oil • 2 tablespoons honey • ½ teaspoon salt • ¼ teaspoon ground black pepper In large stockpot, combine chicken stock or broth and wild rice. Bring to a boil. Reduce heat, cover. and simmer for about 45 minutes until the grains are just opened and tender. Drain any excess liquid from the rice. Toss rice with lemon juice. Set rice aside to cool. Sauté SPAM® in a large skillet until lightly browned; set aside to cool. Meanwhile, prepare vinaigrette. In small bowl, whisk together the cider vinegar, oil, honey, salt, and pepper. To serve, in a large bowl, add rice, SPAM®, carrots, cranberries, and green onions. Toss rice mixture with the vinaigrette and refrigerate for 1 hour. Serve rice mixture over Romaine and top with pumpkin seeds. * If desired, sunflower seeds or slivered almonds may be substituted. 2 c. white vinegar 2 tsp. celery seed 2 tbsp. dry mustard 1 tsp. turmeric 2 tsp. canning salt 1/2 c. water

Combine the corn, peppers and onions in large pot. Add the sugar, vinegar, celery seed, mustard, turmeric and canning salt. Bring to boil and boil uncovered for 5 minutes. Mix the corn starch with 1/2 cup of water. Add corn mixture and cook until thick. Pack into hot sterilized jars. Process in boiling water bath for 15 minutes. • Makes 6 pint jars •

Northwoods Salad-On-A-Stick : from Giggles’ Campfire Grill at the Minnesota State Fair

• 1 pint or 1 quart container of small mozzarella balls • 1 pint of grape or cherry tomatoes • 1 container or 3 large sprig cuttings of fresh basil • 1 box wild rice and quinoa mixture (easiest to locate in grocery stores is Minute® Brown Red • Wild Quinoa Multi-Grain Medley Rice) • 3 stalks celery, chopped • Balsamic vinaigrette (For making in your own kitchen, we like a mixture of balsamic vinegar, extra virgin olive oil, Dijon mustard, minced fresh garlic, salt, and fresh-ground pepper. Or you can purchase a bottled balsamic vinaigrette off the shelf at any grocer.) • Balsamic glaze • Salt • Pepper Wild Rice and Quinoa Salad Prepare wild rice and quinoa mixture according to directions on packages. Allow to cool and refrigerate for 1 hour. Chop celery. After removing from refrigerator, add chopped celery to mixture. Then, toss balsamic vinaigrette into wild rice and quinoa mixture so grains are covered but liquid doesn’t pool or drip. Add salt and pepper to taste. Let stand for another 10 minutes in refrigerator while you make the skewers.

Skewers Skewer one tomato, one mozzarella ball, and one basil leaf. Repeat, so you have two sets of the aforementioned combo on each skewer. Continue until all of your tomatoes, mozzarella balls, and basil are gone. Pulling it All Together Spoon wild rice and quinoa salad mixture into a small shallow salad bowl, covering the bottom ½ - ¾” full. Lay three skewers on top of each serving. Wisdom: Titles are but nicknames. and every nickname is a title. ~Thomas Payne I do a fair amount of historical research as a volunteer for our historical society. I find interesting all the nicknames I encounter throughout the old newspapers and history books. I brought this up in discussions with a few old timers in my community and assembled quite a list of names from the ‘olden days’ of my town. I have come to know just a bit about Dumby, Pood Nordstrom, Goofy Nordeen, Andy Gump Johnson, Kiffy Larson, Plyers Erickson and his brother Squeek, Squatty and Blink Anderson, Squeeky Latt, Bill the Bum, and more. There is also Shaky Carl, Bang Benson, Wimpy Eastling, Big Snoose, and Little Snoose. And then there is Stinky. (While some of the names are a bit of a mystery, that one might be obvious. I think it had something to do with hogs.) Some of us probably had one in high school way back in the day. I had one as a teenager and another in my twenties. Both shall remain lost in history. One thing I have noticed is

that nicknames seem to be a guy thing. I found no women among those noted in my research. I also realized something else. Among my entire social circle today, I know of absolutely no one who commonly goes by a nickname. So what has happened that we have lost the propensity to assign nicknames to people? Have we lost the familiarity with others that was enjoyed before the days of mass media, when people actually hung out or worked together? Or, have we become so sensitive to hurting the feelings of someone that we avoid anything that could be insulting or politically incorrect? Maybe we have all lost our sense of humor. I know when my nickname was uttered years ago, it wasn’t always with kind intentions. Yet I miss the friendship and comradery of those who felt comfortable using it in my presence. I don’t propose we go back to assigning nicknames. The world has changed too much for that to be a good idea. But it would be fun to hear, “Hey Stick,” and turn to find an old friend approaching. I’m just sayin.’ •

Directions using a gas grill: Create your own smoker by adding ½ -cup wood chips sealed and wrapped in foil. Next, poke several holes (about 10) with a toothpick into the foil and place on your hot gas grill. Wait until it starts smoking. Rinse rack of ribs and pat dry. Lightly season with salt and pepper and place on grill next to your smoking wood chips. Grill each side for 6 to 10 minutes; then remove from grill. Cut a large square piece of foil and spread about ¼ to ½ jar of your favorite Cappadona Ranch Mesquite Bean Jelly on the bottom of the foil; then place your slab of ribs on top. Spread the remaining jelly over the top of ribs. Seal aluminum foil around the ribs, making the foil airtight, and place the foilwrapped ribs back on the barbecue pit at low heat for approximately one hour. Enjoy! Serves: 6-8 • 6 chicken breast halves, skinned and boned 1 cup chopped green onions, tops included grated • 2 large jalapeños, seeded and chopped • ¼ cup jalapeño juice • 1 ½ cups sour cream • 1 jar pimientos

• Fried chalupa shells • 8 ounces Monterey Jack cheese, • Shredded lettuce • Diced tomato • Guacamole

Boil chicken and chop into chunks. Mix chicken with onions, jalapeños, juice, pimientos, and sour cream. Spread over chalupa shells; sprinkle with grated cheese. Broil until bubbly; top with lettuce, tomato, onion, and guacamole. and Artichoke Lasagna This yummy lasagna recipe

So if you are making it “to go” for the church pot luck or if you just want to make a larger batch, go ahead and use one the half sheet foil pans from the store and double up on everything! While not the sexiest pans around, they are fabulous for clean up because there is none! Bon Appétit! • • 3 cups shredded cooked chicken breast • 14 oz. artichoke hearts, drained, roughly chopped • 12 oz. shredded Mozzarella Cheese, divided • 3/4 cup Grated Parmesan Cheese • 3/4 cup chopped drained oil-packed sun-dried tomatoes Preheat the oven to 350 degrees F For the Chicken: 4 split chicken breasts, bone in, skin on Olive oil

• 16 oz. Cream Cheese, softened at room temp • 1 cup milk • ½ tsp. garlic powder • ¼ cup fresh basil, rolled and cut chiffonade • 12 lasagna noodles, cooked & cooled

Kosher salt Freshly ground black pepper

Rub the chicken breasts with olive oil and place them on a baking sheet. Season generously with salt and pepper. Roast the chicken for 35 to 40 minutes, until just cooked. Let cool slightly. Separate the meat from the bones and skin; cut or shred into 3/4-inch pieces. Set aside. Tip: If you are pressed for time, it is perfectly fine to use a rotisserie chicken from the grocery store, rather than roasting the chicken. In a bowl combine the chicken, artichokes, 1 cup mozzarella, Parmesan cheese and tomatoes. In a separate bowl, use a mixer to beat the cream cheese, milk and garlic powder until blended. Gently stir in 2 Tbsp. of the basil. Mix half of it with the chicken artichoke mixture and reserve the other half. Spread half of the remaining cream cheese mixture onto bottom of 13x9-inch baking dish; cover with 3 noodles and 1/3 of the chicken mixture. Repeat layers of noodles and chicken mixture twice. Top with remaining noodles, cream cheese mixture and remaining mozzarella. Spray a piece of aluminum foil with cooking spray and cover the lasagna, spray side down. Bake 20 min.; Remove foil and bake another 10 minutes until lightly browned and bubbly. Let stand 5 min. before cutting to serve. Garnish with remaining basil. •
