struggle over ‘what’s for dinner’ is real. This is the time of year that I need fast and easy ideas that can be thrown together in no time flat...that will also appeal to my husband and my daughter, a task that seems easier than it actually is. I’m the type of cook who likes to cook in ‘bulk’. Ground beef can be tacos on Monday, spaghetti on Tuesday and then stuffed bell peppers on Wednesday. But cooking for two, and sometimes three is more of a challenge than you might think. We tend to always have too much, and unfortunately, I’m the only one who loves leftovers in my house. Trust me, I’ve tried every way I know to make leftovers look ‘sexy.’ Much to my dismay, however, I haven’t been able to master that successfully. I only have so many go-to dishes, and I need help. So, I’m turning to you, my friends! Each week, we publish a variety of recipes, and we want to publish yours! From salads to sides to main courses, we want what you’ve got. In recent years, they have been wintering in the Rio Grande Valley, where Ron calls and teaches at the Alamo Palms RV Resort in Alamo. They have attended many national and state conventions, with Ron serving as the round dance program chairman for the Illinois State Convention in 2008, 2010, and 2011. •

Christmas in Port Mansfield Special to Welcome Home RGV

December 17 will be a day filled

with Christmas celebrations in Port Mansfield. The Chamber of Commerce and the Willacy County Navigation District will be host to visitors from the larger Rio Grande Valley. Plans for the day include helping Santa feed his reindeer, a parade of decorated boats in the harbor after dusk, and a Kid’s Klub Christmas party at the Chamber Pavilion from 2:00 to 5:00 p.m., to which Santa has returned his RSVP. Rumor has it he is also planning a relaxing vacation in the town to rest up for the big day. The party will feature a bouncy house, refreshments, and a cake walk. Skydive the Valley will be holding a skydiving demonstration at 1:00 on TX 186 across the street from Poco Loco Bait Shop. Skydive owner Sean Tillery will also provide tandem jumps at a 34 percent savings during this celebration weekend. The chief of police, David Mayes, is sponsoring a house-, boat-, business- and boatbarn-decorating contest. According to Mayes, “We thought it would be a great way to build community and bring a Christmas spirit to town, and by inviting our RGV neighbors, we have an opportunity to show off our unique little town.” The day’s events will be followed by caroling and hay rides through town to view the winning Christmas light displays and hot cocoa provided by the Boy Scouts. Renee Toft, president of the Port Mansfield Chamber of Commerce said, “Many people in the Rio Grande Valley have never been to Port

Mansfield, so we planned this day of celebration to get the word out to let people know what they have been missing.” She recommends you come early to shop for holiday specials on stocking stuffers at the local stores, as they will be in limited supply. Visitors may also want to enjoy a discount on their meals at one of the participating local restaurants. Even the vacation rental companies, Vic’s Rentals and Y-Knot rentals, are offering deals on lodging that weekend. I drove around Mission this morning, I thought--it was nearly 50 years ago when my parents first came down to the Rio Grande Valley to visit a friend who had recently moved down here from Minnesota. They fell in love with the Valley (and the fruit trees at the time) and came back every year for the next 30+ years. My wife’s parents did the same thing at about the same time.

Twenty years ago, I came down here to visit a friend from Minnesota and also to see a young lady I knew who was down here visiting her parents. Her first husband and I had been good friends, and then he died. It was now two years later, and she and I took a walk over at Santa Ana Wildlife Refuge. About halfway through our walk, I asked her to marry me, and, well, the rest is history. While we did

What was it that attracted them to the Valley? Coming out of Minnesota in the winter? Yes, that would be a real possibility. It was that and much more. Over their years here, both sets of parents made friends from different areas of the country and would look forward to getting back here and catching up on the summer doings and gossip.

not, as our parents, come every year, we did come down and enjoy our time here. Last year was our first full-time winter here, and we enjoyed meeting lots of new friends. The torch had been passed. A few weeks ago, I called my mother, who has Alzheimer’s, and told her where I was. She immediately said she and my father

would come over and see the place. My father has been gone for many years. She wanted me to have lots of food and also to pick fresh fruit from the orchard. I think that is one thing I miss from before is the number of orchards. Shopping malls and roads have replaced them. What brings me to the Valley? As I mentioned above, as with our parents, it is the people you meet, the people who share the same lifestyle as you do. I found that when I lived up north, there was always too much to do to really have time to just sit and chat with people. I recently met a man who is 85 years young, and he and his wife travel the country in a 19-foot Airstream. These two were really happy people. He was taking pictures and writing a book about two questions of life. His study field was only those over 95, and his two questions were: 1. How do you find happiness? 2. How do you stay young? The number one answer to finding

happiness -- get your mind off yourself. The number one answer to staying young -- be curious. This is where I believe the RV park community is vital to keeping us happy and young. So many I know say, “Maybe next year I will give it a try.” Then they return to their TV shows and wish they were doing something exciting. And so this year, for me, two things are going to keep me young. I am starting the year at a new park, Oleander Acres, I am going to focus on things other than myself, and I am going to be curious. I really look forward to meeting new friends and also to going over and visiting old friends at different parks. Life in the motorhome is fun, and it is exciting. Hopefully, this will be a tradition I will pass on to my kids as my parents passed it on to me. •

She was inducted into the Latino Legends Hall of Fame in 2000 and earned her star on the Hollywood Walk of Fame in 1981. City of Edinburg invested over $6 million to create the Los Lagos Golf Course, which opened in 2001. Since the city was named in honor of John Young, a prominent businessman who was born in Edinburgh, Scotland, the links-style layout would have made Young feel right at home. The course is a von Hagge, Smelek, and Baril design and is ranked as one of the top courses in the Rio Grande Valley. Los Lagos has been selected as Readers’ Choice #1 Golf Course in The Monitor, our region’s largest daily newspaper, several years, including 2016. Eleven acres of lakes highlight the course, with more than 75 strategically placed sand traps to capture the errant shots. The fairways, which are lined with dramatic mounding, and the breeze from the Gulf of Mexico require the players to have a variety of shots in their bag to play well here. Los Lagos is a well-balanced course with almost equal yardage on both nines. There are four sets of tees. Three of the sets are rated for men. The black tees at 7188 yards rate 74.7/132, followed by the blue tees at 6789 yards that rate at 72.8/127, and lastly, the white tees at 6211 yards that rate at 70.1/122. Two sets are rated for women. The white tees at 6211 yards rate at 76.9/133 and the red tees at 5561 yards rate at 72.8/120. The fairways are common Bermuda grass while the greens are TifEagle Bermuda grass. This facility is open to the public and has a complete Pro Shop, as well

as a café to grab a quick sandwich before or during your round. They have a large, open-area pavilion, which provides a great place to enjoy your post-round beverage. Join us Thursday evening, December 15, at 6 p.m. at Quinta Mazatlan for a look into Ancient and Modern Mexico with speaker Rachael F. Brown. Rachel Brown is an artist and art historian with deep interests in the environment and the many challenges faced Rachel F. Brown by contemporary society. She found significance in the thriving artistic communities of Oaxaca during a summer program titled ‘Pictorial Histories: the ‘Graphic Novels’ of the Mixtec and Aztec’ in Oaxaca, Puebla, and Mexico City. Rachel has been teaching in South Texas College’s Art Department since 1997. Her background is in an MA in art history, a certificate in museum education, and a BA in archeology, to which she added an MFA, 2D concentration, and a certificate for

Creative Journal Expressive Arts. Rachel has a strong interest in guiding her students in their discovery of creative talent and the practice of artistic discipline. She believes it’s important for students to discover and appreciate their own cultures and creativity, as well as that of others. Ultimately, teaching art is most rewarding because art demonstrates that we are all united as humans, and at the same time, we can express our individuality. The Nature Speaker Series takes place on Thursday evenings through May 2017 and is proudly sponsored by Thurmond Eye Associates. Praising God How

do we NOT praise God for all He has done? My wife, Barb, and I have been across the United States seeing His work in action, commitment, and works. From churches of only a few to seeing the mega works of larger congregations. Visiting RV resorts and seeing the continuing miracles of His designed handiwork. Looking at the expansive beauty He has created that we call breathtaking scenery. A chaplain shared Jesus with an individual in an RV park in Alamo, and that 90-year-old individual accepted Jesus and went to be with Him only two weeks later. During the past season, church services in RV parks

have increased, and individuals and couples have learned about Christ. How do you NOT praise God for all HE has done? You praise Him by continuing to sing His praises for the grace He gives you. You continue to say a constant prayer for His direction in your life, your marriage, and your commitment to serve Him. There are no circumstances in God’s world. We are all part of His master plan, if we allow it; we can be thankful and praise Him for all He provides. When it comes down to basics, God is in control and He “ain’t” nervous, so why should we be? Just praising Him is enough. •

When

I speak of nourishment, I am speaking of more than the food we eat, the love we feel from spouse or family, or the spiritual nourishment from our religious beliefs. Beyond those sources of sustenance, we mortal types rely on other things that keep us wanting to get out of bed in the morning so I have made a list. Some Things That Nourish Me: Hibiscus flowers, breakfast facing east toward a rising sun. Whole wheat toast. Hummingbirds feeding outside my kitchen window. Polished wood. Marching bands preceded by our nation’s flag. Writing newsy letters. Soft music and stained glass windows. Watching white clouds and green trees interacting with the breeze. Birds singing. Softly falling rain. And laughter. A letter from someone dear. Butterflies and the Sunday crossword puzzle. Homemade jelly. Giving a motivational talk on a topic I consider

important. Tall trees. A dinner out with friends. And laughter. Monday mornings, pillows that have aired all day and E-mail from a friend. Praying as I drive. My family around my dinner table. Fresh coffee. Family weekends on Padre Island. Whistling. Poinsettias and Christmastime. Writing this column. And laughter. I encourage all who read this to make a list of what nourishes YOU. • M. Randy Hoelscher: The Border Cook Special to Welcome Home RGV

Cowboy Candy Recipe

I was introduced to this recipe by my cousin, Michelle, while visiting in

Minnesota. She called them Candied Jalapeños. They are widely known as Cowboy Candy. There are many versions of this recipe online, all very similar. These can be used as a stand-alone treat, as a relish, on top of crackers spread with cream cheese, etc. This recipe produces colorful, sweet, flavorful, jalapeño slices. You can make these either sweet or sweet and HOT. It depends on how you cut and trim the jalapeño peppers. If you want them sweet and very mild, remove the webbing and most of the seeds from the peppers. None of my tasters thought they were hot. An apple corer works well for this. If you want really zingy peppers, leave the webbing and seeds intact. They will taste sweet, but then the heat kicks in! This recipe makes about six half-pint jars. •

Cowboy Candy Recipe Ingredients: • 3 pounds fresh firm jalapeños, washed (about 8 cups sliced) • 2 cups apple cider vinegar • 6 cups granulated sugar • ½ teaspoon turmeric • ½ teaspoon celery seed • 3-4 garlic cloves, cut in half (2 or 3 pieces per jar) Instructions: *Hint – Wear gloves during this step to prevent your hands from burning the rest of the day. 1. Remove stems from all of the jalapenos and slice into 1/8- to ¼-inch rounds. Set aside. For mild peppers, remove the web and stems. 2. In a large pot, bring the cider vinegar, sugar, turmeric, and celery seed to a boil. Reduce heat and simmer for 5 minutes. 3. Add the pepper slices and garlic and simmer for 5 minutes. 4. Using a slotted spoon, transfer the peppers into clean, sterile canning jars. leaving ¼ inch at the top of the jar. 5. Turn up the heat and bring the syrup to a full, rolling boil. Boil for 6 minutes. Pour the syrup over the jalapeño peppers in the jars but still leaving ¼ inch from the top. Make sure there are no air pockets by sliding a plastic utensil down the inside of the jars. Wipe the rims of the jars with a clean, damp cloth or paper towel and place lids and rings on the jars. 6. To complete the canning process, place the jars in a large pot of hot water covered by 2 inches. Bring the water to a full boil and boil for 10 minutes for half pints and 15 minutes for pints. When the time is up, transfer jars onto a thick towel or rack to cool. Leave them undisturbed for 24 hours. Check to make sure all lids have sealed by pressing on the center of the lid. If the lid does not seal, place the jar in the refrigerator. All sealed jars can be stored in a cool, dark place for up to a year. 7. These are best if you wait a couple weeks to eat them so the flavors have time to mix. Randy Hoelscher is a transplanted Texan and half-time RGV resident. Grilled veggies are good, but we tend to stick to

same old, same old: potatoes, zucchini, onions, and peppers. How about sweet potatoes, that darling of the vegetable world that is so good for us? (And this recipe ramps up the heat to balance out the natural sweetness.) Of course you can eliminate the Chimichurri sauce if you like your food on the milder side. •

Cowboy Caviar

4 servings • 2 Tablespoons freshly squeezed Red Rio Star Grapefruit juice • 2 teaspoons hot sauce • 1 1/2 teaspoons salad oil • 1 clove garlic, minced • 1/8 teaspoon cracked black pepper • 1 firm, ripe avocado, cubed • 1 can black-eyed peas, drained and rinsed • 1 can corn kernels, drained and rinsed • 2/3 cup sliced green onions • 2/3 cup chopped cilantro • 1/2 cup Red Rio Star grapefruit sections, roughly chopped

Sweet Potatoes with an Attitude

• 1 1/2 pounds sweet potatoes, scrubbed, unpeeled, and sliced to 1/2-inch thickness • 1 tablespoon olive oil • Salt and pepper to taste Toss the potato slices with the olive oil and seasonings. Cover and microwave until softened, 6-8 minutes, stirring halfway through the cooking. Drain well.

Chimichurri Sauce • 1 cup fresh parsley leaves • 1/2 cup extra-virgin olive oil • 2 tablespoons water • 4 garlic cloves, minced

• 1/2 cup fresh cilantro leaves • 1/4 cup red wine vinegar • 1 teaspoon kosher or sea salt • 1/2 teaspoons red pepper flakes

In a large bowl, mix grapefruit juice, hot sauce, oil, garlic, and pepper. Add remaining ingredients and gently fold to coat. Serve with chips. Serving suggestions: Serve with grilled steak or chicken. Add 1 jalapeño, minced, for a kick of spice! Winter Sweetz™ Grapefruit is “surprizingly sweet with a hint of zing.”

Process all these ingredients in a food processor or powerful blender until smooth, 30 – 60 seconds, scraping down the bowl, as needed. Clean and oil the cooking grate of your grill and prepare for indirect cooking. Place the potato slices on the cooler side of the grill. Cook with the cover closed, turning the potato slices over, as needed, until they are tender, usually 8-12 minutes. Transfer the potatoes to a platter and cover with the sauce to serve. Mexican Spoon Bread

Serves 6-8 • 1 cup yellow corn meal • 1/3 cup oil • 2 eggs • ½ tablespoon baking soda • 1 (16 oz.) can creamed corn • 1 (8 oz.) can whole green chilies • ½ cup sweetened condensed milk • 12 ounces cheddar cheese, grated Preheat oven to 350 degrees. Lightly grease 11 x 9” baking pan. Thoroughly mix corn meal, eggs, corn, sweet milk, oil, and baking soda in a large bowl. Pour ½ of the batter into prepared baking pan. Rinse green chilies and remove the seeds. Lay chilies on top of the batter and sprinkle with cheese. Pour remaining batter atop cheese. Bake 40 to 45 minutes. Variation: Substitute sweetened condensed milk with evaporated milk and green chilies with 2-3 jalapeños for a caliente (HOT!) alternative.

Jalapeño Cranberry Relish • 12 oz. cranberries • One bunch cilantro • 3/4 cup white sugar • A can of jalapeños- 5 slices or to taste (the ones with no vinegar) • 1/3 cup chopped onion • 2 tablespoons lime juice Mix all together and enjoy. Great on almost anything!

1 cup dried cranberries 1/4 cup fresh orange juice 2 cups unbleached all-purpose flour 2 teaspoons baking powder 1/4 teaspoon fine salt 1/2 cup unsalted butter, softened, plus more for preparing the muffin tin 1 teaspoon grated orange zest 2/3 cup granulated sugar, plus up to 1 tablespoon for topping the muffins, if desired 2 large eggs, at room temperature 1/2 cup milk Preheat the oven to 375 degrees F. Put the cranberries and orange juice in a small saucepan, and bring just to a simmer over medium heat. Remove berries from the heat, and set aside to cool and plump. Drain off any excess liquid and set aside. Bettina Tolin is a graduate of Le Cordon Bleu College of Culinary Arts in Austin, Texas. She has cooked in the kitchens of the Ritz-Carlton Amelia Island, Florida. She is currently the Executive Chef and General Manager at Marcello’s Italian Restaurant & Bar on the Piazza in Port Isabel, Texas.

Baking muffins just seems like a good idea when the weather

begins to cool and as we prepare for the holidays. These are a fresh idea to share with your family or with house guests you may enjoy in the coming weeks. •

Lightly brush a 12-muffin tin with butter. Sift the flour, baking powder, and salt into a medium bowl and set aside. In a standing mixer fitted with the paddle attachment, or with an electric hand-held mixer in a large bowl, cream the butter, orange zest, and 2/3 cup sugar until light and fluffy, about 2 minutes. Scrape down the sides of the bowl with a rubber spatula. Add the eggs, one at a time, beating well after each addition.

Remove the bowl from the mixer. Fold the flour in 3 parts into the butter mixture, alternating with the milk in 2 parts, until just combined. Fold in the cranberries. Do not over mix. Divide the batter evenly into the muffin tin and sprinkle the tops with sugar. Bake until golden brown, about 25 minutes. Cool muffins in the pan on a rack. Serve warm.
