love seeing our Winter and Converted Texans out and about! I had so much fun in Progresso at the Welcome Back event last Friday. I knew so many people, and it was fun celebrating with you out in the streets of Mexico! I also had a great time at Alamo Palms at their entertainment on Sunday. So many friendly faces and words of encouragement. I absolutely LOVE what we do at Welcome Home RGV, and it is so much fun to getting out there and seeing all of you enjoying your retirement. Over the next few months, we will have plenty of opportunities to see each other, and I hope you’ll mark your calendars for January 17-18 for the 24th Annual Winter Texan Expo, which will be held at the McAllen Convention Center. It’s my party, and you are all invited! And the best part about it is, admission is FREE! We have an exciting line-up of entertainment, and dancing was such a huge success last year that we’re doing it again this year! Park RV Resort‘s management and residents want to express our sincere THANK YOU to the many local organizations and private parties who were so very generous in the difficult days following the tornado that almost destroyed our winter home. The many residents who returned to Chimney Park to help with the massive cleanup, worked so very hard in the heat with no electricity and no water, and the gift of meals from others—we can never thank you enough. When you come to Chimney Park now, signs of the destruction are gone. The park is beautiful, with pretty landscaping, new homes, and smiles everywhere. The contributions of time and effort from the following organizations and individuals cannot be measured in any way: the Mission Police Department (for guarding the park, keeping everything safe, and feeding us); Texas State Troopers (for guarding and patrolling the grounds); the Mission Fire Department (for your fast response and rescuing efforts); Border Patrol (for your constant presence, cutting down trees, and help moving debris); the City of Mission (for all of your extra effort in removing branches and trees and for feeding us); our local Lions Club (for
donating 40 cases of water, when we had none); our good neighbor Johnny Hart, owner of Riverside Club, who brought his equipment in to help in many ways; and James Cardoza, emergency management coordinator, who was always available to help us with many situations. Chimney Park RV Resort, with its historical chimney and our close proximity to the Rio Grande River, remains one of the premier parks in the Rio Grande Valley. It is truly a ‘one-of-its-kind’ in location and setting, and most of all ‘one-of-akind’ in its fortitude and spirit. Walking through the bushlands of
the lower Rio Grande Valley (LRGV) is to walk through nature’s pantry. Though most of us may not recognize the many edible plants that surround us as we walk down the trail or drive down farm-to-market roads, our ancestors, whether indigenous or of European descent, knew well the multitude of culinary uses native plants literally bring to the table. Much of the information regarding the edibility of native plants is perpetuated by means of oral tradition. A grandfather will concoct a tea for his grandson, and so on and so forth. I, personally, was taught by an older woman from northern Mexico to make a kind of coffee substitute out of the beans of the Texas ebony tree, something she and her family had routinely done in the past. It becomes immediately apparent that the ancient and historical practices of the people of the LRGV are very much alive and are carried out by those whose lifestyles involve intimate interaction with the wilderness of the Rio Grande Valley landscape. Cowboys and early settlers quickly learned which plants were edible and which were toxic from information disseminated by native peoples. Consequently, vaqueros (cowboys) and their cocineros (cooks) in the rangelands of South Texas integrated native plants into their culinary routines. Plants like the mesquite provided sweet legumes, which could be eaten raw (assuming the ants didn’t get to them first) or ground into

a flour to form a kind of flatbread. The berries of the Brasil tree were mashed, fermented, and made into a wine substitute. The flowers yielded by the stalk of our native yucca were collected and cooked with eggs, a fairly common practice to this day. Some of the most common edible plants are as follows: Sugar Hackberry, Granjeno, Amaranth (the most important food crop of the Aztecs, before chia and corn), Turk’s Cap, Manzanita, Ebony, Mesquite, Texas Persimmon, and the fruit of various species of cacti. The list, of course, goes on. (NOTE: Please exercise caution when handling all plants and consult with experts when identifying plants for culinary use. Each person has distinct metabolism and should bear in mind that some plants should be avoided because they may have adverse effects either upon contact or consumption.) Of course, the edibility of wild plants is no secret to wildlife. For instance, the relationship shared between animals and many native plants is one of mutual dependence. Many plants require that their seed coats be broken down by the stomach acids of animals in order to kick-start germination. Some might find it surprising that native plants such as salvia coccinea (Scarlet Sage/Salvia Del Monte) are commonly used as a kind of tea in Mexican cuisine, along with other popular edibles like the prickly pear or the nopal. Still, most historical uses of native plants for food have been long forgotten and are kept only within the memories of those who live closely with the land. Blinking Stop Sign Enlarged
At the November Activity Directors’
Meeting held at Mission West RV Park, we were approached by an enthusiastic activity director from Weslaco. She wanted us to know about a blinking stop sign the City of Weslaco installed on a street that previously was considered dangerous. Several accidents had occurred at this particular intersection, we were told. This activity director suggested we find out about the blinking stop sign and let all of you know about it. So that’s exactly what we did. We called Mike Perez, city manager in Weslaco. Mike told us the city had received a large number of complaints about the intersection at 6th Street and Oklahoma near St. Pius X Catholic Church. He verified what the activity director had told us. There had been a high number of accidents at that intersection. Mike said several people requested that the city put a traffic signal at the intersection because so many people ignored the small stop sign there. The cost to do so? $100,000. In an effort to save taxpayers’ money, city staff explored other options. “Because of the trend in the number of accidents, we knew we
needed to make something happen,” said Mardoqueo Hinojosa, Weslaco’s city engineer. The city took a four-step approach to address the problem, improve safety, and save money. The street was restriped. A bike lane was added. Small traffic buttons were added to the street that get drivers’ attention when the buttons make their cars vibrate. And then the city added a larger stop sign framed with blinking LED lights that are easy to see during the day and at night. The lights work on solar power. The cost to the city? $2500. Big difference from the $100,000 price tag for a stoplight. “This has significantly reduced the number of accidents,” Mike said. Great job, City of Weslaco. Texas, will celebrate the holidays with a luncheon and fashion show December 10 beginning at 11:30 a.m. The luncheon is a fundraising event organized by the Museum Guild and volunteers. Enjoy the three-course meal, including dessert and beverage, and see the latest fashions from Lionel’s Western Wear. Lionel’s Western Wear, at 332 S. Texas, was established 55 years ago (in 1959) by Lionel Oliveira, Sr. Since 1984, Sandy Oliveira Pena has been in charge of the store, a complete western wear store for men, women, and children, plus a beautiful ladies’ boutique and unique gift shop. 1st Responders Tour the New South Texas Diabetic and Metabolic Institute Special to Welcome Home RGV
The
South Texas Diabetic and Metabolic Institute hosted an open house for the RGV 1st Responders Tuesday, November 15, to celebrate American Diabetes Month. We met the team and toured the Institute, located at 5416 S. Jackson Rd. in Edinburg, at 4:30 p.m. A multimedia presentation covered Healthy Weight for Life, describing why we are overweight as a society, how most diets fail, and inflammation and detoxification. Inflammation is the root of most diseases, and by managing blood sugar levels, we can burn fat and keep it off. We also learned about healthy eating while enjoying light and healthy refreshments. A dietician consultation was offered for all those present, as well as reading materials and a glucometer. STDMI, which is a South Texas Health System outpatient facility led by Medical Director Monzer Yazji, MD, is a multi-disciplinary clinic focusing
on metabolic disorders, such as metabolic syndrome, prediabetes, and diabetes. Metabolic syndrome is a group of conditions that can exist together, such as excess body fat around the waist, high blood pressure, high blood sugar, and elevated cholesterol levels. The Institute’s team includes Dr. Yazji, who is board certified in internal medicine and obesity, as well as an endocrinologist, cardiologists, sleep medicine specialists, a general surgeon, a gastroenterologist, a bariatric surgeon, dieticians, psychologists, and other clinicians. In the Heights is an award-winning musical about a family of friends in a Dominican-American community in New York City. Fast-paced and filled with musical styles ranging from hip-hop to salsa, In the Heights was created by the renowned leader of the Broadway sensation Hamilton, Lin-Manuel Miranda. In The Heights was nominated for 13 Tony Awards, winning many, including Best Musical. It also picked up a Pulitzer Prize nomination and a Grammy Award. Since teaming up a few years ago, McHi Theatre and Choir have begun raising the bar for local musical
theatre productions. With a focus on contemporary award winners, performing In The Heights seemed inevitable. “It’s funny and it’s poignant. It’s about Latinos finding their place in this world. It’s hard not to believe that this was written for students like ours,” said McHi Director Jason Barrera. Our prayer shawl ministry started so
small and with no great expectations of where it was going to go or how it would grow. A few ladies heard someone at a church luncheon speak about making shawls and using them for ministry opportunities and decided that even if they weren’t particularly ‘crafty,’ they could do that. It started with a group at one church, then spread to another, then those ladies taught some other ladies at another church... and then some of us decided to have a group that didn’t meet at one particular church or denomination to make it easier for those whose church didn’t have a group to be included. The KnitWits were meeting in a bookstore and gathered participants of every age (4 to 84, more or less). We found we had some knitters who are homebound permanently or temporarily due to health issues, but they can still knit. We had to change locations several times due to space issues, and then God gave us a plan that is now in place in the form of a shop called The Lamb’s Loom. The shop sells consignment items and donated gifts to help fund overhead, such as rent, shipping the prayer shawls and hats to various locations, and other costs that continue our ongoing and ever-growing ministry. The outlet for the handmade products we make has expanded. It began with gifts for friends or
family members and then friends of friends. Then God put us in contact with some missionaries in various places, such as orphanages, medical missions, and churches. Prayer shawls, blankets, hats, scarves and even dolls have made their way to Africa, South and Central America, Europe, China, Mexico, and all over the U.S. and North America. This is an example of people working together to make a positive impact on the lives of others they will never meet, but we’re all God’s children and feel a need for a sign of His love, which may come in the form of a tangible representation like a shawl or a hat or a scarf. Our prayer card sums it all up: As this was created, we prayed for you. We asked the Lord to give you many blessings and encouragement--to bring strength, wisdom, and courage to you. As you wrap this shawl around you, may it serve as a reminder of God’s love for you and bring you a comforting peace. Love is more important than anything else. It is what ties everything completely together....So let the peace that comes from Christ control your thoughts. And be grateful. across the open field. For those who have spent a night in a combat theater, the beginning of each day with the sun rising is very special. It meant you and your brothers survived another night. Many an 18-22-year-old spent the lonely night sitting in the darkness of an AP (ambush patrol) or LP (listening post) hoping for a very quiet evening. Then the sun would rise, and in your heart, “Joy, I made it!” This is one of the great blessings I find here at Oleander Acres is the open fields--the ability to sit out and watch the sun rise, the colors so bright and beautifully painted across the sky for us. I only wish I had the photographic ability to capture them. Another blessing of the morning is the flowers you see that the Lord has given and the morning dew to refresh them. I find these just fascinating,
and the closer you look, you see how delicate and papery they are. I did not know what they were called for sure until Salome at Oleander told me they are called Morning Glories. And they truly are a glory of the morning. After the sun is up, their glory fades. Also, the morning dew that makes them more picturesque is gone. A friend of mine told me when we get old we start to take pictures of flowers. This may be very true. I think up until this stage of life, we are in too much of a hurry to enjoy the variety we are given. To truly appreciate the beauty of a sunrise or the flowers of the morning, get up and get moving early. If you have trouble getting out of bed, do like I do. Get a dog who must do his bodily functions each morning between 4:30 and 5:00. Grab a cup of coffee and enjoy the new day. •

you heard the American’s prayer about patience? “God, give me patience; and I want it right now!” A sentiment like this is understandable in a culture that brought us instant coffee, immediate communication, the fast food industry, and huge “parking lots” that we call rush hour. We want everything to be easier, faster, quicker, and more efficient. People are endlessly looking for ways to save time and avoid travel difficulties, so we build subways, light rail, and expressways that ring our major cities. Thus, it seems such a contrast when we look at Bible verses that deal with the subject of patience or perseverance. James 1:2-4 (NKJV), “My brethren, count it all joy when you fall into various trials, knowing that the testing of your faith produces patience. But let patience have its perfect work, that you may be perfect and complete, lacking nothing.” Like many in this current age, I want things to be easy, without difficulties, problems, or trials. Frequently, however, I encounter frustrating issues with one or more of the electronic gadgets that populate our lives. Sometimes, it appears that more effort and time
is required to make these marvelous devices work than they’re worth. However, rather than seeing these things as ways that test my faith, I often get angry and wish for simpler times. However, have simpler times ever existed? The Industrial Age of the nineteenth century produced dramatic changes that still resonate in modern times, and the Electronic Information Age has done no less— making many seniors feel like dinosaurs. What do we do with this contradictory thought from James? Is this just an ancient writing from an obscure culture we can ignore because it does not seem to fit into our modern world of the easy and fast? Might this thought in Scripture be God’s answer to the hectic pace of life, to help us keep our heads when everyone around us seems to be losing his/hers? I have discovered that applying God’s Word, even if I do not completely understand it, is the best way to live life--because it actually works. Therefore, I choose to be joyful in the midst of my difficulties, even when I feel like screaming. Such decisions are not easy, but they please God, which allows patience to accomplish His work in my life. •

The Beauty of a Good Fish Fry by William Ward
Today’s
wisdom: “All men are equal before fish.” ~Herbert Hoover I recently attended a big fish fry in our community. It was fun. The food was about average, what one would expect from a local restaurant. But there were hundreds of people there, and it was even hard to find a place to park. What is the attraction at these small town events? Whether is it a fish fry, lutefisk supper, or pancake breakfast, these things pull the people. Of course some of it is the fact that we are usually supporting a local civic club. These typically contribute to the community in some way so are deserving of our funding. Maybe a few people go for the food, especially when it is lutefisk. But fish, beans, potato salad, or pancakes? We can get them anywhere. Then it hit me. We had walked in just after some old friends, so we got to sit and chat with some interesting folks and catch up on life. As we sat there, many other people came past
with greetings. Many we hadn’t seen in a long time--in some cases, many years. We got to poke fun at a few-even threatened to redo a sprinkling baptism with a dunking to make sure it stuck for one fellow. This event wasn’t about fish. This was social. In small towns, our social lives are too often segregated by our church affiliation. But this was everyone--Lutherans, Catholics, Evangelicals, even those claiming none of the above. It was community. It was all of us coming out to declare ourselves among the undead. I only spoke with about eight people. But a hundred others saw me talking with those eight. That validated me as a part of their community, a part of the social fabric of their town, an “insider.” Next time you see a fish fry advertised in your town, you might want to show up. Declare your space among the living and your rightful spot as a member of the community. I’m just sayin’. •

like to take this opportunity to pay tribute to a wonderful lady, Judy Shuck. Judy took me under her wing, taught me so much about the Winter Texan lifestyle, and helped me grow from peddling coupon books to building a business around serving the Winter and Converted Texan markets. Welcome Home, RGV lost one of our own this week. Judy was a legend in her own right. She was a fearless leader, never met a stranger, helped anyone who was in need... and loved life to the fullest. It is so maddening to me that someone so

It wasn’t until 2008 when she answered my plea for help around the office that we truly connected. We became fast friends, two of a kind, partners in crime, both passionate about having fun and getting the job done right. There are no words to describe the loss we feel, but take comfort in knowing that after such a long battle, she is no longer in pain. Judy was blessed with so many great friends

Lakewood RV Resort: 23rd Year Serving Families at Christmas Time Special to Welcome Home RGV

Texans are returning to the Valley. At Lakewood RV Resort, that means preparation for our 23rd Annual Christmas for the Needy program. Our residents make quilts, and each child receives a gift. Providing Christmas groceries for 1012 needy families with children at Stuart Place Elementary is funded by our events the first week of December. Many of our Winter Texans spend time mentoring the students. This all started with our Worship Committee years ago. We raise funds for Christmas groceries for the families through fundraisers, which are open to the public. We begin with a Soup for the Needy luncheon and Bake Sale from 11 a.m. to 1 p.m. December 2, a Western/ Ballroom Dance for the Needy from 7-10 p.m. on December 3, and a Line Dance/Square Dance/Round Dance from 1-3 p.m. December 4, all here at Lakewood RV Resort, 4525 Graham Rd.
Raffle tickets for a large quilt are sold at these events. The following weekend, these needy families come to our RV resort for FUN with Santa and our residents. The kids enjoy cookies and punch, and our residents fellowship with these families and send them home with their groceries for Christmas dinner, gifts, and a handmade quilt for each child. We receive a warm sense of the season in our hearts, serving God in His work. • in Harlingen.

Book Release for Quinta Mazatlan: A Visual Journey Special to Welcome Home RGV
Saturday, December 10, marks the
release of the book Quinta Mazatlan: A Visual Journey, a celebration of the architectural and natural wonders of McAllen’s most distinctive mansion and landscape. The public is invited to the book launch party to be held at Quinta Mazatlan at 10 a.m. The 30-page book, in advancedphoto-album format (instead of offset printing), is the result of a collaboration between architectural photographer Deval Pino Shah and regional writer Eileen Mattei. Filled with over 100 stunning images, Quinta Mazatlan: A Visual Journey is a high-quality production that presents new artistic and historical perspectives of one of Texas’ largest adobe homes and its surrounding native thorn forest environment. A Spanish Colonial Revival structure, Quinta Mazatlan was built of adobe bricks made on site in the 1930s. This year marks the tenth anniversary of its transformation into an urban wildlife habitat as a World Birding Center and City of McAllen park.
“Quinta Mazatlan is the best-kept secret in McAllen,” said Mike Blum, a local commercial real estate broker. “What you are doing will be most useful to help everyone understand the special and unique value of Quinta.” Pino Shah is a photographer based in McAllen and in Ahmedabad (India) who specializes in architecture and the performing arts (ArtByPino.com). Currently, Pino has a photography exhibition Architecture of The Rio Grande Valley: A Visual Journey at The International Museum of Art & Science (IMAS) in McAllen that will be on display until April 9, 2017. Twenty-three years ago, Eileen Mattei moved to Harlingen from Mexico and began writing what she knew about, and that was fish farming. From writing fish stories, Mattei branched out into ghostwriting health columns before taking on business, history, and travel story assignments. Her articles have appeared in Texas Highways and in Texas Wildlife Association, Texas Parks & Wildlife and Texas Coop Power magazines,

as well as in OnPoint: The Journal of Army History. Mattei is the author of four books: Valley Places, Valley Faces; At the Crossroads: Harlingen’s First 100 Years; Leading the Way: McAllen’s First 100 Years; and For the Good of My Patients: The History of Medicine in the Rio Grande Valley. She is currently the editor of the monthly publication Valley Business Report.

6-8 servings • 5 cups chopped Rio Star grapefruit sections, undrained • 1 8-oz. pkg. vanilla instant pudding • 2 cups thawed whipped topping • 1 10-inch round angel food cake • ½ Rio Star grapefruit, sectioned • 5 strawberries Place the 5 cups of chopped grapefruit sections and the dry pudding mix in a medium bowl. Gently stir in whipped topping. Cut cake horizontally into three layers. Place bottom cake layer, cut-side up, on serving plate. Top with 1/3 of the pudding mixture. Repeat layers two times. Refrigerate for at least 1 hour. Top with remaining grapefruit sections and strawberries just before serving. Store leftovers in refrigerator. Spicy Shrimp Dip Makes 2 cups • 1 (14-oz.) can artichoke hearts, drained • ½ cup picante sauces • 1/3 to ½ pound shrimp • ¼ cup Parmesan cheese, grated • 1 (3-oz.) package cream cheese • Thinly sliced green onion tops • ½ cup mayonnaise Preheat oven to 350 degrees. Dice artichoke hearts. Add shrimp, cream cheese, mayonnaise, picante sauce, and Parmesan. Mix well. Pour into a 9-inch pie plate and bake for 20 minutes. Top with sliced green onions. I’ve
heard it said that if we ever saw how sausage is made, we would never eat it! I don’t think that’s really true, but just in case--make your own and you’ll know exactly what it contains. I’ve made my own Italian sausage for years. Try this recipe for something different to eat on a bun or with your morning eggs. •
Smoky Maple Sausage
• 2 pounds ground pork, not too lean or the sausage will be dry • 1 tablespoon maple flavoring • 2 teaspoons red pepper flakes, optional • 1 teaspoon poultry seasoning • 1 teaspoon black pepper • 1 teaspoon kosher or sea salt • 1/2 teaspoon ground coriander • 1/2 teaspoon liquid smoke In a medium bowl, gently combine all ingredients. Don’t over-mix or the sausage will be tough, but make sure the spices and flavorings are evenly distributed. Refrigerate for 15 minutes while you fire up the grill. Oil the grate to keep the sausage from sticking. When the mixture is cold enough to form into patties, make 4 – 6 (or you can form them into links.) Grill until at least 165 degrees F. internal temperature. (NOTE: if you have a basket, it helps so the sausage doesn’t fall through the grate, or use one of those grill mats that has holes for the grease to drain through.) What is Art?
Art is a generic word that has as
many facets as words, like wealth, economics, sex, or happiness. Even trying to narrow it down to the world of putting paint on canvas or the world of sculpture is a wide one that, in this case, bypasses music, the performing arts, and all of the other arty endeavors that are supposed to elevate us as a civilization. Art varies and changes, and that is inevitable. Art, as it pertains to what we put into museums for the world to view and appreciate, or not appreciate, as the case may be, is supposed to lift us up, right? I have toured many of the great museums of the world (the Prado, Louvre, Vatican, the museums of Venice and Florence, as well as many of the major museums in the United States), and I have firm opinions of what I consider to be art and what I do not. A crucifix standing in a glass of urine is not art. Neither is dung flung and arranged on a picture of the Virgin Mary, both on display in New York City. Great artists don’t always produce great art, although with enough public recognitions from a commercial standpoint, they assume they have done just that. Pablo Picasso is a prime example.

Once he became famous, the public did not allow him to produce trash, even though it was just that sometimes. I read an interview long ago, which described a discussion with Picasso. and he said just that and laughed about it. He stated, “No matter what I put on canvas, someone will declare it is art and exhibit it as such.” He relied on the socially prominent people of the world to do his promotion and marketing. He knew they would do it. And they did. I have seen Picasso’s work from all of his periods: blue, rose, constructed sculpture, cubist etc. He was a vain and gifted man and produced some trash along the way. He was obsessed with bulls, balls, and women, and when he painted, he was not careful where he placed their body parts. I am not sure people should be

presumptuous enough to declare what is and what is not art. Every pair of eyes sees art differently. The more we see of artistic works. the wider our acceptance. My sister-in-law was almost brought to tears at the sight of the Guernica in a small museum in Madrid, Spain (Reina Sophia Museo). That black and white effort left me thinking it had a real case of the uglies. I considered it an amateurish, politically motived cartoon. People have interpreted that painting in many ways. My beloved relative was shocked when I told her that I considered the Guernica an offence to my senses and would wait outside for her. When asked about what all those weird figures meant, Picasso said, and I quote, “The bull is a bull, the horse is a horse. If you give meaning to certain things in my paintings it may be very true, but it is not my idea to give this meaning. I make the painting for the painting…I paint objects for what they are.” However, four years ago, I experienced a case of the tingles when I saw the immense painting, Rosa Benheur’s The Horse Fair, which covered a large portion of a wall in the Metropolitan Museum of Art in New York City. My introduction to that painting was as a 10-by-14 inch black-and-white copy of the painting on the wall of the little one-room school I attended in Union County, South Dakota. I had studied and admired that picture for eight years. It was a thrill to see it in its original form. My point? Beauty is in the eye of the beholder, and so is art. •

This first week of December is a bit hectic, isn’t it? 1 pound dried split peas (soaked overnight) 1 ham hock (or 4oz piece of salted pork) 3 tablespoons unsalted butter 1 large yellow onion, finely diced 2 stalks celery, finely diced 1 large carrot, peeled and finely diced 2 teaspoons minced garlic 1 lb thick ham steak or center ham slice, diced 1 teaspoon kosher salt 1/2 teaspoon freshly ground black pepper 1/4 teaspoon crushed red pepper flakes (or to your taste) 8 cups water 1 bay leaf 2 teaspoons fresh thyme (remove leaves from stems and lightly chop) Place the peas in a large bowl, cover with water by 2 inches and soak 8 hours or overnight. Drain the peas and set aside. With a knife, score the ham hock. Place in a small pot, cover with water and bring to a boil. Reduce heat and let simmer for 1 hour. Drain ham hock from water and set aside. If using salted pork, omit this step and just add the Bettina Tolin is a graduate of Le Cordon Bleu College of Culinary Arts in Austin, Texas. We are all tired from the Thanksgiving festivities, decorating our Nobel Fir tree, and shopping Black Friday & Cyber Monday. To soothe our spirit, we need something warm, comforting and tasty – something that doesn’t involve Turkey Day leftovers. One of my favorite classic winter soups is Split Pea and Ham soup – it only takes a little bit of prep (soaking split peas overnight) and it is loaded with flavor and love to satisfy everyone. This soup pairs well with a savory Pinot Noir, such as A to Z from Oregon (I adore this wine!) • Chef’s note: The ham hock is the lower segment of the pig that corresponds to the ankle or calf region. It is not fatty and will offer a great deal of flavor to this soup or to beans. If you cannot find it in the store, just ask your butcher. If that doesn’t work just substitute with a piece of salted pork. “Scoring” the ham hock means to make small shallow cuts in the meat allowing the meat to be evenly cooked or flavored.
In a large pot, melt the butter over medium-high heat. Add the onions and cook, stirring, until soft and translucent, about 2 minutes. Add the celery and carrots, stirring. Cook until just soft, about 3 more minutes. Add the garlic for 30 seconds, taking care not to let it burn.

Add additional water as needed if the soup becomes too thick. Remember to remove the bay leaf and ham hock bone, and discard. Taste the soup and adjust the seasoning as needed. Enjoy!
