is a time to give thanks, and I can’t tell you how thankful I am for each and every one of you! I am so very blessed to love what I do and to be able to surround myself with folks like you. They say if you love what you do, you’ll never work a day in your life. That’s the truth! I look forward to each and every day and to seeing so many of you out and about.

I’ll be spending Thanksgiving with my family. I am ready to spend some quality time with the people I love, giving thanks for all of my blessings. I’m also looking forward to eating my mother’s turkey and dressing-and topping it off with our traditional pumpkin chiffon! (See page 4 for recipe) I’m thankful that you have chosen my home as your home away from home. The Rio Grande Valley is such a wonderful place, and with the ‘chamber-of-commerce’ weather we’ve been having, it’s no wonder that you love it here. We accepted our mission and held the Welcome Home RGV 6th Annual Connection Fair November 8 at the McAllen Convention Center. We had over 100 vendors and over 100 attendees, and it was a HUGE success. Connecting these key players from our resorts and parks with vendors from across the Valley, all under one roof, allows bookings, outings, and events to be planned onthe-spot.

As a vendor, the response and interest in our service was beyond what I had expected. Thank you for all your hard work!” Russell Walker, general manager of Macaroni Grill in McAllen, was equally thrilled with the outcome. “Connection Fair was well worth our time. Being able to visit with other

vendors, as well as getting face-toface time with that many activity directors and park managers, was invaluable.” Connection Fair also allowed Russell and the Castle Hospitality (Macaroni Grill and Tony Roma’s) staff to share with those in attendance that these restaurants are locally owned and operated and have a wide range of services to offer our Winter Texans and other retirees in the community—private meeting areas, lunch and dinner deliveries, Happy Hour specials, and customized catering. Jack Henley, CamperForce program manager with Connection Fair 2016’s title sponsor, Amazon, said, “Thanks for hosting such a great show. I’ve been to LOTS of shows, and your show runs VERY smoothly. The

professionalism displayed by your staff is simply a direct reflection on you, so kudos! See you next year!” The vendors weren’t the only ones raving about Connection Fair. Anita King from Winter Ranch RV Resort said, “GREAT JOB! Thank you. This was very helpful, and I was able to speak with vendors I was planning to work with.” We accepted our mission and worked hard to carry it out. MISSION ACCOMPLISHED! VIP La Feria RV Park held a breakfast consisting of sausage, scrambled eggs, hash browns, homemade blueberry

muffins, fresh orange slices (donated by Marcella’s Fruit Market in La Feria), orange juice, and coffee November 11 to honor all of the Veterans in the park. Twenty-nine men who served our country in the military attended the breakfast and program in the park. Thank You, Veterans! •

3rd Annual A Season of Hope Arts Festival: Celebrating Education and the Arts Special to Welcome Home RGV

The lighting of the tree at 6:00 p.m.

by Mayor Jim Darling at McAllen’s Art Village on Main, Friday, December 2, will kick off a two-weekend holiday event henceforth known as A Season of Hope Arts Festival. This event will celebrate Arts in the Rio Grande Valley and encourage young people in our community to explore and appreciate the Arts. Following the lighting of the tree, the community is invited to visit the Event Center at Art Village on Main, where artwork created by McAllen ISD students in grades K-12 will be on display until 9:00 p.m. This exhibit will be held in conjunction with McAllen’s ArtWalk. Proceeds from the professional artists’ application fee and the selected artists’ booth fees will provide scholarships for 12 students, one high school and one middle school student in each of six categories. The categories are: drawing, mixed media, painting, printing, photography & digital art, and 3-D. Ribbons will be presented to each participant with a Best of Show awarded in each category. A Season of Hope Arts Festival will

continue Saturday, December 10, beginning at 10:00 a.m. and ending at 5:00 p.m. MISD performing arts students will perform throughout the day. In the courtyard, as well as in the Event Center, professional artists will be selling their masterpieces of jewelry, paintings, photographs, sculptures, and other media. All of their works of art for sale at A Season of Hope Arts Festival are original, hand-crafted pieces. The South Texas Clay Club will have some clay wheels at A Season of Hope Arts Festival and will be throwing clay all day Saturday. They will also have some of their wares for sale. Tipsy Canvas is sponsoring the Make Your Mark community painting project and invites everyone to come and paint on the canvas that will later be donated to the South Texas Literacy Coalition for their fundraiser. Don’t miss the 3rd Annual A Season of Hope Arts Festival -- a McAllen holiday tradition celebrating education and the Arts. Pumpkin Chiffon Special to Welcome Home RGV

Pumpkin Chiffon (A dessert served at church dinner for Mom Wagner’s family October 22, 1997) • 1 3/4 cup graham cracker crumbs • 1/4 cup sugar • 1/2 cup melted butter or margarine Combine ingredients and put in a 13” x 9” pan. Press down the crumbs to make a bottom crust. Set aside. • 2 – 8 oz cream cheese

• 3 eggs, beaten

• 1 1/2 cup sugar

Mix and beat until fluffy. Pour over the graham cracker crust. Bake at 350 for 35 minutes, or until it has the consistency of cheese cake. Set aside and let cool. • 2 small instant vanilla pudding mix • 2 cups cooked pumpkin • 1 - 8 oz cool whip

• 3/4 cup milk • 1 tsp pumpkin pie spice

Combine pudding mix and milk. Beat for two minutes. Add pumpkin and pumpkin pie spice. Add one-half of the cool whip, mix well and spread over cream cheese. Spread remaining cool whip over the pumpkin mixture. Sprinkle crushed pecans on top of the cool whip & refrigerate. Enjoy! Notes: This recipe was handed down to my husband’s family from Lois Culver. When my husband’s grandmother passed away, the ladies of the First United Methodist Church in Pharr, Tx provided desserts following the funeral. After much pleading by Phil Webb, Lois provided the recipe. We think about my husband’s Grandma Wagner every time we have it. Boys & Girls Clubs of Edinburg RGV Joins the Global #GivingTuesday Movement

Boys

& Girls Clubs of Edinburg RGV has joined #GivingTuesday, a global day of giving that harnesses the collective power of individuals, communities, and organizations to encourage philanthropy and to celebrate generosity worldwide. The Club will host a #GivingTuesday Phonathon. Occurring this year November 29, #GivingTuesday is held annually on the Tuesday after Thanksgiving (in the U.S.),and the widely recognized shopping events Black Friday and Cyber Monday, to kick-off the holiday giving season and to inspire people to collaborate in improving their local communities and to give back in impactful ways to the charities and causes they support. The phonathon, sponsored by T-Mobile, Inter National Bank, and Grindestone Coworking, will raise funds for scholarships for deserving club members, expansion of afterschool programs to support our mission of helping kids reach their full potential, and the improvement of club facilities. The Edinburg Industrial Foundation has issued a $50,000 challenge, and the phonathon is a pivotal part of helping us meet their challenge. In order get the $50,000, we must raise $50,000 from our community. Club alumni, board members,

staff, and volunteers from Inter National Bank, Wells Fargo, and PlainsCaptial will call more than 2,000 alumni, parents, and friends of the Club. There is still room for community volunteers. Calling hours will be from 8 a.m. to 7 p.m. Lunch and dinner, courtesy of Inter National Bank, will be served to the volunteers. The phonathon will be held at Grindstone Coworking Training Room, 506 W University Dr. Suite A in Edinburg. “The #GivingTuesday phonathon is an important event for the Club; it is an effective way to reach out to those alumni and friends who have a strong commitment to inspiring the next generation of youth in Edinburg and surrounding communities of the Rio Grande Valley,” said Sabrina Walker Hernandez, CEO. “We need help in spreading the word and getting folks to answer their phone!” Anyone interested in volunteering

Things I Have Learned

A somewhat random and reckless look at life from a fairly old guy

wisdom: If it wasn’t for the coffee, I’d have no identifiable personality whatsoever. - David Letterman Someday, when I am old and grey, someone will sit down with me and ask me what it was like growing up way back in the 1950s. I will go on to describe a world very different from the one the person grew up in or lives in today. As I tell my stories, I will remember back to 2016 when I sat in our local history center listening to the stories of men who grew up in the 1930s and 40s, as they told of a world sometimes a bit foreign to mine--sometimes not so foreign. We all grew up in small towns in rural Minnesota. We all were raised by whole communities, where mothers were interchangeable, and we kids roamed the whole town or countryside in search of adventures, friends, and, sometimes, a little mischief. For the past year, several fellows have gathered monthly at the local history center to share stories. Initially it was an exploration of the weather of the “olden days,” but it quickly digressed into a general conversation of everything, as is typical of men

holding coffee cups. The topics are endless. We have pretty much come to the conclusion that today’s winter weather is wimpy compared to days gone by. Tobacco was probably not the best cash crop for Meeker County, Minnesota, although it was once grown in our area. Sorghum sandwiches are actually better than one might expect. Kids just aren’t raised like they used to be, and we are worse off today because of that. And when was the last time anyone had a drunk hog fall into the creek? Those lucky enough to be in attendance when that one came up now know how to rescue a drunk hog. Oh yes, and chickens can tie one on with the best of them with a little moldy wine. Everyone in the group agrees they were lucky to have grown up in those days. I have been lucky to have been invited to sit in with the guys and hear their stories. My only regret is that too many great guys have come and gone in all of our communities, and the stories they might have shared with us are lost. Somewhere in your world, there is a group of guys holding coffee cups. Sit down and listen! I’m just sayin’. •

Kindness Parade November 25 Special to Welcome Home RGV

nfinite Love is excited to host the RGV’s first-ever Celebration of Kindness Parade at 3:00 p.m. Friday, November 25! The purpose of this event is to practice putting the values of brotherhood and sisterhood, generosity, and love first. Local schools and organizations will walk their parade floats down Tamarack Ave. by McAllen Municipal Park (between Bicentennial and 23rd Street). This is a perfect way to celebrate Thanksgiving weekend, so we hope

More About Infinite Love Infinite Love is a local volunteer-run nonprofit motivated by love to serve others and foster inner growth in the community. Over the past four years, Infinite Love has served over 50,000 warm, cooked meals to the homeless and underprivileged at a local park in McAllen. The group has also partnered with Texas Oncology to serve meals daily to patients going through chemotherapy. • 1/3 cup chopped nuts • 1 teaspoon baking soda • 1 teaspoon baking powder • 1 cup buttermilk • 1 egg

Preheat oven to 350 degrees. Prepare a 13 x 9” baking pan. Mix flour, sugars, cinnamon, salt, and oil to make a crumbly mixture. Remove ½ cup—mix with nuts to use as the topping. Mix the soda, baking powder, buttermilk, and egg with the remaining crumbly mixture. Pour into pan; sprinkle with the topping. Bake for 30 minutes. Test by inserting toothpick before removing from oven. It’s Durango Time at The Lamb’s Loom

...and this is one of the biggest weeks we work toward all year!!!

prayer shawl ministry, and we knit, crochet, and loom knit all kinds of wonderful things to send off with missionaries all over the world! Two years ago, we decided to go for it all and open a yarn shop to help fund all this FUN! This week we will be packing up LOTS of space bags to send with our friend, Pastor Mike of Charity Rescue Mission. He will be picking up over 500 hats and scarves and filling his little plane to fly off into the mountains of Durango, Mexico. We met Pastor Mike about 10 years ago and have helped provide Christmas presents for the village children he visits every year. During the rest of the year, Charity Rescue Mission flies in other items like medical supplies. This time of year, Pastor Mike and his team will be going into several schools with gifts and the Christmas story. As usual, our prayers and purls go with Pastor Mike and his team! Next week, we will be delivering prayer shawls and knitted hats/

scarves to Like Elijah Ministry. This group works with a community of people who live on the city dump in Reynosa, Mexico. There will also be a really big event called Celebrando Navidad that will take place December 27-29. They will serve food, play games, give out presents, and share about Jesus…the reason for the season! We have been blessed to help Melody and Nathan Durant with some of the Christmas gifts for the last four years. We are so very grateful for everyone who contributes to The Lamb’s Loom! Whether you add to the donation chest, purchase yarn or gifts in the shop, or give a financial contribution, you are a part of all this! Everyone is welcome to join in! Gardens Golf Course is a private, nine-hole par 3 course located between Winter Ranch RV Resort and Trophy Gardens RV Resort in Alamo. Both properties are owned and operated by the Wilder Corporation. They both have mobile home and park model sites, as well as travel trailer, fifth wheel, and motor home sites. They allow both seasonal and full-time residency. Both resorts have recreation halls, shuffleboard courts, swimming pools, and hot tubs for the residents’ enjoyment. The two parks share the golf course and also the horseshoe pits. All the amenities are for the sole use of the residents. he Museum of South Texas History (MOSTHistory), a museum chronicling the heritage of South Texas and Northeastern Mexico, has joined #GivingTuesday, a global day of giving that harnesses the collective power of individuals, communities, and organizations to encourage philanthropy and to celebrate generosity worldwide. Occurring this year on November 29, #GivingTuesday is held annually on the Tuesday after Thanksgiving (in the U.S.) to kick off the holiday giving season. It follows the widely recognized shopping events Black Friday and Cyber Monday and is designed to inspire people to collaborate to improve their local communities by giving back in impactful ways to the charities and causes they support. At the Museum of South Texas History, there are many ways to tell a great story that include adventure, challenge, and achievement. We believe the story of this unique borderland region is a story that deserves to be told, seen, heard, and experienced. One of the ways to best tell a great story is to get into character…and fashion. Whether a live interpreter is wearing representative clothing from a historical era or a museum visitor is trying on a conquistador helmet or a Victorian corset, fashion makes a lasting impression and piques curiosity. Burgers

on the grill? Of course! These stuffed burgers take the meal up a notch with just a little more effort than making a simple patty. They are sort of like “burgers cordon bleu”! •

Ham and Swiss Burgers • 1 pound ground beef • 2 tablespoons red wine • 2 tablespoons Worcestershire sauce • 1 teaspoon kosher or sea salt • 1 teaspoon freshly ground black pepper • 4 slices Swiss cheese • 8 thin slices Canadian bacon • Thousand Island salad dressing • Lettuce, optional In a medium bowl, combine the beef, Worcestershire sauce, wine, salt, and pepper. (NOTE: You may omit wine, if you don’t like the flavor, and substitute beef broth.) Mix gently but thoroughly. Form into 8 thin patties. Place a slice of cheese and two slices of Canadian bacon on top of four of the patties and top with four more, pressing the edges to enclose the cheese and bacon inside. On a hot grill, cook the burgers to your desired doneness but at least to 160 degrees F. Place each burger on a toasted bun that has been spread with a little Thousand Island dressing. Add a leaf of lettuce, if desired, or you can also use lettuce to make a wrap if you want to omit the bun. UTRGV Premieres New Comedy-The Life and Times of Winter Texans

Eight new short comedies offer an

evening of humorous vignettes about the Winter Texan experience. These plays are the latest concoctions from the workshop of local playwright Eric Wiley, who also wrote the hit comedies Late Bloomers, The Mystery of the Shady Palms RV Park, and Pachanga: The Dance Battle Comedy. The plays run about ten minutes each and, together, feature a great variety of subjects and characters. For example, the play Leaving the Country shows what happens when a man leaves the U.S. after getting disgusted with the results of a recent election. He ends up in a bar in Progreso having the time of his life, until ... well, we don’t want to give it away. In another play, The Country Singer, a traveling entertainer turns out to know from far-distant childhood a widow in the

RV park where he’s performing. Does she remember him? We don’t want to give it away here! In total, there are 23 characters played by a student cast of eight talented actors, with all the shows directed by the author. The production runs December 1-3 at 7:30 p.m. and December 4 at 2:00 p.m. at the Studio Theatre in the Edinburg Liberal Arts Building (ELABS) on the corner of University Drive and Sugar Road on the UTRGV Edinburg campus. The box office opens one hour prior to each performance. General admission is $5.00. There is limited seating. Group reservations are available. are tiny, but they have an immense power to capture the hearts and imaginations of people across the world. Over 300 species roam the skies over North and South America, and few authors have written guides that cover the entire family. The Gorgas Science Foundation has recently released the first in a set of books that will do just that. Join Seth Patterson at Quinta Mazatlan Thursday, December 1, at 6:00 p.m. for a special presentation on this magnificent new book! Written by esteemed avian biologist John C. Arvin and illustrated by three exceptional artists--Sangeetha Kadur, Raul Andrade, and Vydhehi Kadur-this large-format, fine art book celebrates the exquisite beauty and amazing diversity of hummingbirds. The first of a two-volume set, this volume showcases the 127 species of hummingbirds found throughout North America, Central America, and the Caribbean Islands. Each individual species has been meticulously studied and artistically rendered to showcase its beauty and splendor. They are set in a scene reflective of

their range and environment. Also included is the preferred flowering plant with which each species is most associated or the plant for which it serves as exclusive pollinator. Unique life history, distribution, adaptations, morphology, and conservation status is noted in the text. Seth Patterson is an avid naturalist and self-taught photographer who first discovered photography as a means to share his passion for nature with the world. Now a life-long pursuit, Seth focuses on using his photography as a tool to help educate and inspire the conservation of his subjects. He is an employee of Gorgas Science Foundation, a nonprofit organization focused on conservation through education. Seth’s work for GSF focuses on imagery and incorporates much of his photography and graphics design abilities. Seth is also a participating photographer for the international Meet Your Neighbours Project. An accomplished author in his own right, Seth is the perfect storyteller to introduce us to the newest book about the flying gems we call hummingbirds.

The Nature Speaker Series takes place Thursday evenings through May (2017) and is proudly sponsored by Thurmond Eye Associates. The Right Stuff: Becoming a Member of Razz-Ma-Tazz Special to Welcome Home RGV

R

owe High School’s Razz-MaTazz is the Rio Grande Valley’s premier show choir. This season, the ensemble is pleased to present 17 performances throughout the Valley, but being a member of Razz-Ma-Tazz is not all fun and games. Rehearsals for this year’s shows began well before school started in August. Students of the choir must prepare two onehour shows (Christmas and spring) in only the fall semester of class. This requires students to rehearse after school and on the weekends and to continue preparing the spring show while performing on a nightly basis in December. In addition, rehearsals for the musical still occur on a regular

ince auditions September 26, students at Rowe High School have been diligently preparing for their annual school’s musical. This year, the Rowe Choral Department is proud to present Once Upon a Mattress, based on the fairy tale The Princess and the Pea. For 27 consecutive years, Rowe High School has produced a musical spectacle for audiences of all ages. “This year’s musical will be one of the best in the school’s history,” said Stacy Gonzalez, choral director at Rowe. “From a talented cast of students and a giant, two-story set to the completely renovated auditorium sound equipment, everything is coming together to make an amazing show.” Veteran of the Rowe musical Carlos Salazar said, “This year’s show is a

rollercoaster of emotions. There are a lot of funny moments. You’ll laugh a lot.” Newcomer to this year’s musical Alex Pantone said, “I’m so excited to be a part of this year’s cast. I have always wondered if I could handle that kind of a windfall. I think I could. I know I could! I do not play the lottery, so I cannot win, but if I did: 1. I would not give large amounts of money to my heirs and descendants. Why? Because it would ruin their lives. 2. I would, however, pay off mortgages on their homes and/or businesses. 3. I would set up trusts to pay for college educations for my great grandchildren, with the following strings attached: Recipients would be required to maintain reasonable grades, behave appropriately, and maintain a lifestyle that reflects good taste. Not restricted to college but technical training, as well. 4. I would pay for needed medical treatment or surgeries. 5. I would consider paying outstanding debts for my church. 6. I would find motivated kids (one per year) who could not afford training beyond high school, whether it be technical or college training,

and subsidize them with the abovementioned strings attached (See # 3). The only criteria being motivation, not grade points. 7. I would take a worldwide Crystal Symphony cruise, preferably with members of my family. 8. I would arrange to pay out the remainder in increments to my heirs from a trust that would be set up to last for many generations. I believe we do not treasure what we do not earn. (Breath in, Breath out, it is all going to be alright!) Turkey drippings from your roasting pan 1 C white wine (whatever you have open that is dry and good quality) 1/2 cup all-purpose flour 8 cups no or low-sodium chicken stock or broth Dash of Worcestershire sauce Kosher salt and freshly ground pepper 3 tablespoons cold butter When your turkey is done, transfer it to a cutting board and pour all the pan drippings into a degreasing cup (oil separating cup). Place the turkey roasting pan on burners over medium high heat. Add the wine to the roasting pan and stir to loosen and scrape up the browned bits with a wooden spoon. Reduce to 1/3 and then pour the bits and liquid to the degreasing cup. Let the fat rise to the top of the degreasing cup, then spoon off 1/2 cup of fat and transfer to a large saucepan over medium heat. Then sprinkle the flour into the pan with the fat and cook, stirring constantly with a whisk, until the flour browns slightly to form a nutty paste, about 4 minutes. Take care not to burn the paste (also known as a roux) Bettina Tolin is a graduate of Le Cordon Bleu College of Culinary Arts in Austin, Texas. She has cooked in the kitchens of the Ritz-Carlton Amelia Island, Florida. She is currently the Executive Chef and General Manager at Marcello’s Italian Restaurant & Bar on the Piazza in Port Isabel, Texas.

his time of year I am often asked for my advice on making the Thanksgiving gravy. This is the one thing many people really stress over because it seems mystical and elusive. But it doesn’t have to be, I promise. There is a process to making it and it really is not difficult. Here I have laid out the steps to a fabulous and fool proof gravy to adorn your perfectly roasted bird! Don’t panic! In the words of Elizabeth Taylor, “Pour yourself a glass of wine, put on some lipstick, and pull yourself together!” You can do this! Now go forth and conquer your gravy fears! • Gradually add the hot stock/broth to the paste, whisking constantly to prevent lumps. Bring to a boil, and then reduce the heat to medium low. Pour the dark roasting juices from the degreasing cup into the gravy along with the Worcestershire sauce. Discard any remaining fat from the cup. Simmer, whisking occasionally, until the gravy thickens, about 10 minutes. Taste the sauce and season with salt and pepper. Whisk in the butter, until glossy and smooth.

Chef B’s Tip: Remember you are in control of the food, not the other way around. If for some reason, the gravy will not thicken, use a slurry to make it thicken. To do this, take 3 Tbls water and 3 Tbls corn starch (or flour if you don’t have corn starch) and stir together until combined in a small bowl. With your gravy at a rapid boil (this is critical) whisk in the slurry, stirring until the gravy is thickened.
