It’s hard to believe this is our last

issue of the season! It has been a wonderful 22 (Yes, 22!!) weeks, bringing you news and information all about opportunities to have fun across the Rio Grande Valley. We are already working on next season, so when you make your way back to South Texas in the fall, be sure to look for us!

Winter Texans bring so much life and color to our community each season. From stimulating our economy to volunteering across the Valley, your presence will be greatly missed over the long, hot summer.

And if our winter foreshadowed what’s to come, a hot one it will be!

In all honesty, though, the summers aren’t THAT bad. We just get our work done in the mornings and stay in our air-conditioned homes and offices during the heat of the afternoon. Those of us who live here year round, including our Converted Texans, know that once the sun goes down, the cool breeze off the coast makes the evenings hard to beat.

Please don't be a stranger while we are apart. Drop us a line every now and then. We like to hear from you!

Outpatient Rehabilitation and MedCare EMS Tour

7, RGV 1st Responders attended an open house of the new STHS Outpatient Rehabilitation Center, located at 1800 S. 5th Street in McAllen, across the street from McAllen Medical Center. This new facility complements McAllen Medical Center's inpatient service offerings by continuing care within the same hospital system (with all of your health records available for efficient continuum of care), with outpatient therapy services at a convenient location.

Their specially trained staff, consisting of Amy Garza, physical therapist, Mario Perez, her assistant, and Marissa Trevino, handling the reception area within the front office, greeted all the 1st Responders and discussed common physical therapies they provide. We toured the facility and learned how they care for their patients using stateof-the-art equipment for a variety of conditions. For more information on

We’re Going to Miss You, Betty Emmons

Betty

Emmons has been coming to the Rio Grande Valley since 1985.

She and her husband first came to the Valley with a travel trailer and stayed at Winter Ranch when it was new. They used the trailer for many trips back and forth to Minnesota but sold it and bought their mobile home in Casa del Valle a couple of years before her husband died (in 1995).

Betty began making the 1,600 mile trip by herself every October and back home in April. She still drives by herself but never drives at night. She said people often ask her daughter, “How can you let her drive all that way by herself?” Betty said her daughter replies, “How could I keep her from it?

When they first came to Casa del Valle, the park was called Patio Villas; Betty still has her Patio Villas pin.

April will mark the end of Betty’s last season in the Rio Grande Valley.

She feels she is getting too old to make the trip by herself anymore. Her northern home is Winona, Minnesota, on the Mississippi River, where her

daughter and two grandsons live. She also has a son who lives in Fairfield, Iowa, where she grew up. She will visit him for a while before continuing on to her little house in Winona.

Some of her Valley memories include going to Mexico with her husband. She still has some pretty combs she uses once in a while, but there just isn’t anything in Mexico she needs anymore, so she hasn’t been across the border for many years. She remembers that farmers and growers in the Valley used to let seniors and others scavenge the fields after they had been picked. She used to love going to the swimming pool (especially the hot tub) but hasn’t done that since she started to become self-conscious in a bathing suit.

Still, there is plenty to do here in the park. There’s wine tasting on Monday, Happy Hour on Friday, and Bible study Sunday evening. Betty practices Tai Chi with a group in the main hall at Casa del Valle every weekday morning. Tuesday morning she has her blood pressure taken,

which is very important. During her last doctor visit, her prescription strength was doubled, but she's pleased that it’s the only medication she takes.

Betty uses a tablet for e-mail. When she gets home to her little house, she’ll go to the Verizon store to get more lessons so she can learn things she doesn’t know how to do yet.

Sunday, March 5, Friends at Casa del Valle threw a surprise farewell party for Betty. Friends offered to pick her up for dinner. They indeed picked her up but drove directly to the hall, instead, for a surprise party.

She received lots of cards, so many she hasn’t had time to read them all, but she said, “It’s nice to know you’ll be missed.” At the party, she received balloons and a beautiful bouquet of roses. When she got home, the balloons had to come inside because the motion detector on her porch kept turning the lights on.

What will she do in Minnesota during the winter?

friends for lunch or dinner and enjoy seeing her daughter more often. She loves sitting on her patio and watching hummingbirds and her flowers.

In 2016, Betty was named “Winter Texan of the Year” by the Alamo Chamber of Commerce. She says, “It was a big deal. I got a plaque and everything.” •

48th Harlingen Flower Show Set for March 25 and 26 Special to Welcome Home RGV

The Harlingen Council of Garden

Clubs presents its 48th Flower Show March 25 and 26 at the Cultural Arts Center, 576 ’76 Drive (next door to the Harlingen Public Library).

Show hours are 1 to 4:30 p.m. both days. Admission and lectures are free, and the public is invited to attend. Lecture space is limited and is on a first-come, first-served basis.

Leafing Thru Literature is this year’s theme. Talks by local experts are scheduled for both days during the show.

Jennifer Wilson of Wild August Nursery & Flower Farm in Harlingen will speak at 2 p.m. Saturday on Growing Cut Flowers in the Rio Grande Valley.

Sunday at 2 p.m., Mike Heep of Heep’s Native Plant Nursery in Harlingen will speak on Citrus Varieties: Their Origins and Growing Them.

There will be competition in 17 horticultural classes, including container grown plants, shrubs either for foliage or blossom, cacti and succulents, roses, hibiscus, and other indoor and outdoor specimens-both native and non-native to the Rio Grande Valley.

Floral designs, arts and crafts, and educational exhibits created by members of the Harnito and Town and Country garden clubs will be on display. •

Children’s Museum of Brownsville

Welcomes Children’s China!

A cultural exhibit about a day in the life of a child in China Special to Welcome Home RGV

The

Children’s Museum of Brownsville is honored to be the only museum in Texas to showcase the Children’s China exhibit this summer. Through a partnership with the Freeman Foundation, and in collaboration with the Camille Playhouse and Texas Southmost College, the Children’s Museum of Brownsville will host Children’s China June 15 – September 15.

“This is a great gift and a way to bring exposure of the Chinese culture to the families in our region. Adults and children are able to visit a faraway destination right here in their own backyard,” said Felipe Peña, executive director at the Children’s Museum of Brownsville.

As the Children’s Museum of Brownsville continues its mission of introducing children to the world of learning through play, it’s important to expose the residents of our community to new and diverse cultural experiences. Not only will children be able to see the differences--but

also the similarities--in our own local and ancestral culture. The exhibit will showcase a school, a market, a home, a park, and the great hall. One of the most adorable components is the Panda Reserve, where children will be able to take part in caring for stuffed animal baby pandas.

While Children’s China is being exhibited, the Camille Playhouse will also have scheduled performances of Disney’s Mulan Jr. Guests will be entertained by the young cast as they portray the story of a young Chinese woman defending her family’s honor during a time of unrest. The children will showcase their amazing talent through the Disney compositions Honor to Us All and A Girl Worth Fighting For. Special guest Hilary Swarts will be at Quinta Mazatlan Thursday, April 6, at 6 p.m. for a revealing discussion on South Texas Ocelots and to talk about her efforts in ocelot conservation. This informative discussion will shed light on conservation threats of the ocelot and recovery strategies to preserve the ocelot population.

Hilary Swarts is a wildlife biologist working at the Laguna

Atascosa National Wildlife Refuge.

She attended Pomona College in Claremont, California, where she received her bachelor’s degree in biological anthropology. She then went to the University of California at Davis where she received her graduate degree and her Ph.D. in ecology with an emphasis in conservation ecology. Her love for being outside and being around nature has helped her flourish in her career field. She is working with other biologists on ocelot conservation.

Mike Bennett started playing golf “If you’re not laughing, you’re not doing it right.”~ Mike Bennett very early. He said, “I always had a club in my hands.” His uncles, Vern and Elsworth, taught him not only the game but the etiquette of the game.

When he was 10, his mom prepared a peanut butter and jelly sandwich every summer day. He strapped a bag of clubs to his back, held the sandwich in his hand, and biked about 10 miles to the Green Lea Golf

Course.

He later joined his Albert Lea High School (Minnesota) team and placed in the junior varsity state championship. Following his high school success, he entered and won a number of city tournaments.

Paula, Mike’s wife, has played golf about 40 years. She started when

Mike took her to the course. She said, “If I wanted to see him, I had to play golf.” She has since played a few ladies’ tournaments and many couples’ tournaments with Mike After starting a family, they dropped out of golf for about 10 years. Mike said, “There are other things to do when you have kids.” They bought a

pop-up camper and went camping on weekends. He said, “A lot of people don’t even start golfing until after the kids have gone.” (Golf is a good game for seniors because you can pick it up anytime.)

During the summer, Mike and Paula now live on the city course in Albert Lea where they learned the

morning, March 3, the Mercedes community came together to hold the Second Annual Prayer Ceremony for First Responders.

The event was a combined effort by the City of Mercedes, the area’s local churches, the Mercedes-area American Legion, local firefighters and police officers, Border Patrol agents, Llano Grande First Responders, and sheriff’s constables. The event was held in the Culinary Arts Center of Mercedes ISD. The purpose of this ceremony is for city leaders to connect with churches and, in friendship, unite in seeking the ‘Face of God,’ praying for public officials and the safety of those who serve and protect our communities.

The program began with music provided by Brother Fidencio Soto and a welcome to the attendees by MISD Superintendent of Schools Dr. Daniel Trevino, Jr., and Henry Hinojosa, Mercedes mayor.

The colors were presented by the Mercedes High School JROTC Members of the Ruben Hinojosa Elementary Choir sang the National Anthem and other patriotic songs.

Members of the community gave inspirational messages and thanked the First Responders serving the Mercedes area. The ministers in attendance offered prayers and performed ‘laying on of hands’ over all the First Responders in attendance.

After the program concluded, everyone enjoyed breakfast prepared and served by Adriana Gonzalez and her students in the MISD Culinary Arts program. •

It occurs to me that my kids have very little understanding of what life was like for people not so many years ago. I look at my kids’ world now and struggle with what they just take for granted. There was a whole lifestyle transition between their generation and mine. Then I realize the same was true between me and my parents.

This profound thought occurred to me as I was using the very comfortable and warm “indoor” facilities in my home. My mother tells me that very welcome transition came for her family in 1947. My wife tells me she enjoyed the outdoor experience up until 1962.

I do recall that old outhouse on her ‘home place.’ It served well into the 1970s as the backup plan for her seven-member family, plus the occasional visitor. It was the upscale model (two holes), but I have no personal recollection of ever having a second guest in there with me.

Neither does she, so there is some mystery as to the purpose of the

second option. Perhaps her brothers had a more liberal outlook on that.

There is certainly no shortage of outhouse stories today. My father long ago told me of his family’s difficulties with theirs being tipped on Halloween night. That was solved when his dad moved the house a few feet forward one year, just before the appointed hours for the ‘goblins’ to arrive. I’m told the effort was effective.

We have it pretty nice today.

The collective memory of outdoor privileges, cold trips in the night, spiders larger than a fist (at least when seen by flashlight), and slowly dwindling Montgomery Ward catalogs is fading fast as that generation leaves us.

One thing I have learned is that it took courage to approach the unknown after dark, alone, out in the elements, at the mercy of who knows what wild creatures that may have been lurking about. To all my old friends still among us who exhibited such an abandonment of fear, we salute you. Perhaps your actions were the source of the character of your generation. I’m just sayin’. •

CASA DEL VALLE GOLF GROUP CONTINUED FROM PAGE 5 game. Their house is located just off the second tee. Paula loves that they can step out the back door and “tee off.”

In the winter, however, they are Winter Texans living at Casa del Valle in Alamo, where they have been visiting for the past seven years. When they first arrived, Mike began playing right away with the Casa group. Back then, they played at Ebony Hills Golf Course in Edinburg. Two years ago, they began hearing rumors that the course would be closing. (The course did not close but was eventually sold to the city of Edinburg.) Nonetheless, Mike began looking for alternative courses where they could play on Friday mornings for a reasonable rate on a high-quality course. Many of the courses he visited could fit them in but not on Friday morning and others’ rates were too high. When he checked out Monte Cristo Golf & Country Club at 2919 N. Kenyon Road in Edinburg, Mike said, “They were very accommodating. We could get on the course by 10:30 Friday morning, the price was right, it was a beautiful course, and they made us feel as though we belonged.”

They began playing there last season, and the group has grown from about a dozen people at Ebony to more than 30 regular players at

Monte Cristo, including two teams of women golfers.

Mike and Paula lead the group with a different game every week. Winners are declared not on best score but rather on a random draw. This gives everybody a fair chance to win. There are usually five teams of men and two of women.

Mike gives lessons for Casa residents at no charge on Thursday mornings. There is a good mix of people with varying experience, and Mike sees everyone improving.

“There is a lot of laughing and good times with this group,” Mike says. “If you’re not laughing, you’re not doing it right.” •

Monterey Chicken and Rice Serves 6 • ½ cup cottage cheese • 1 (4 oz.) can diced green chilies • 1 (3 oz.) package cream cheese • 3 cups cooked, diced chicken • ½ cup sour cream • 3 cups cooked rice • 1 (10 ¾ oz.) can cream of chicken soup • 1 cup grated Monterey Jack cheese • 1 teaspoon salt • ¾ cup coarsely crushed corn chips • 1/8 teaspoon garlic powder Preheat oven to 350 degrees.

Blend cottage cheese, cream cheese, and sour cream until smooth. Add mixture to remaining ingredients, except corn chips. Pour into 2-quart baking dish. Sprinkle with corn chips. Bake for 25 to 30 minutes.

Laguna Madre Art Gallery, the Laguna Madre Art League, and El Paseo Arts Foundation are celebrating National Youth Art Month this March with a Port Isabel High School Art Show at the Laguna Madre Art Gallery, located at 405 E. Maxan Street across from the lighthouse in Port Isabel.

Students participating in this 4th Annual Student Art Show are Clara Christensen, Joanna Cuevas, Hadassah Daigle, Brisia Gonzalez, Sayra Hernandez, Jasmine Saldivar, Rebecca Sanchez, Declan Salazar, Stephany Bessichy, Candy Cabanas, and Diana Quintanilla.

These students’ artwork will be on display March 20 through April 3.

Please join us for a reception honoring these students Saturday, March 25,

from 5 to 7 p.m.

The winners of the Laguna Madre Art League Port Isabel High School Art Scholarships will be announced at the reception.

The local art organizations, along with the high school art teacher, recognize the importance of Youth Art Month as it emphasizes the value of art education, encourages support for art programs in schools, and promotes art material safety.

The Council for Art Education (CFAE) administers Youth Art Month at the national level. This program recognizes the high level of curricular skills developed through the visual arts. These include problem solving, creativity, observation, and communication, superior to those developed in other school subjects. •

Zoës Kitchen: Mediterranean-Style Eating Right Here in the Rio Grande Valley

If you have not tried Zoës Kitchen

in McAllen yet, you are in for a major treat. The focus at this Mediterraneanstyle restaurant is “simple, tasty, fresh,” and they mean it! The food is real, not covered with sauces or highly spiced or battered and fried.

As General Manager Gilbert Colunga explained, the chicken actually tastes like chicken. Often we forget the true taste of food because it is served with so many other flavors competing on our tongues. Not so at any location of the Zoës corporation.

There are approximately 208 stores, but the next closest to the RGV is in San Antonio! So we have a jewel in our midst that may be a well-kept secret for those people outside the Convention Center area.

Gilbert knows the restaurant is a favorite for all ages. At lunch, you'll find young professionals from area businesses; between lunch and dinner, shoppers or others who are in the area and need refreshment stop in at Zoës. Then at dinner, it's a mix of people who are looking for a good meal. The dining room is clean and airy, decorated in sunny, upbeat colors with a variety of seating arrangements. From a tall bistro table for eight to a round table for six to square tables for four and cozy booths, every seat is inviting and comfortable. Outdoor seating under colorful umbrellas beckons diners when the weather is right.

We had a delicious lunch at Zoës.

All of their food is freshly made on site, including the three soups. Only olive oil is used in food preparation in the Mediterranean style. I ordered their “Pick 2” feature. You order ½

sandwich and one other choice (soup, side, Greek salad, or dessert.) Mine was the tomato bisque soup, and it didn't disappoint. The thick soup was served with a touch of fresh basil and shredded mozzarella as garnish. It was bright with ripe tomato flavor and a few pita wedges alongside to dip into the Zoës homemade Greek salad dressing that sits on each table. My sandwich was pimento cheese, grilled and topped with a slice of tomato and field greens ($7.19). Gregg opted for one of the pita sandwiches, which is served with your choice of side dish. The tuna pita was stuffed with albacore, capers, red onions, olives, lettuce, and tomato--no mayo on this

Mr. Todd Mann, CEO of McAllen Medical Center, and his assistant, Daniel Rincones, welcomed all the 1st Responders and discussed some of the new additions to STHS coming soon. We had an opportunity to discuss Urgent Care facilities and some additions we would like to see added to the Free Standing Emergency Departments to better serve our resident patients.

South Texas Health System hosted us for a lunch with food from Sweet Temptations.

Following lunch, we drove to the MedCare EMS Ambulance Service for a tour of their Dispatch Unit.

Reynaldo Ramos, communications compliance officer, discussed the certification by the National Academy of Emergency Medical Dispatch and their protocols required for certification. They are proud of their achievements and work hard to meet this accreditation, enabling them to procure advanced dispatch equipment to better serve emergency patients within the upper RGV. MedCare EMS provides 20-24 ambulances daily to cover the emergency calls within Hidalgo County, employing 150 trained Emergency Medical Service staff

to cover the calls received at their facilities across this part of the Valley.

Ben Martinez, clinical liaison officer, presented training on Stop the Bleed, a certified course for all 1st Responder attendees.

1st Responders learned how to use tourniquets to control bleeding of the injured, as well as compression bandages, in order to save lives. A person can bleed to death in three

minutes without proper intervention.

Ben provided very good examples and discussion as to why the new training has been initiated to save lives across the U.S. We practiced compression bandages and use of the tourniquets, in addition to learning about the Epi Pen for anaphylactic shock or an allergic reaction.

MedCare EMS is a wonderful

resource for the 1st Responders, and we enjoyed them hosting us for the training and tour. We appreciate their service--providing excellent care and treatment while transporting our residents to the most appropriate facility. This was a great opportunity to learn and share how best we can work with EMS and the resident patients we serve in our resort communities. •

Dinner is Ready

I

think the divorce rate is high because America’s wives and mothers prepare a meal, call “Dinner is ready,” and nothing happens.

There is no headlong rush to the table as one would expect but rather a dead space in time. On hearing the call to dinner, someone will go out to pet the dog, look up a school assignment, decide to change into flip flops, or just continue to gaze at the TV screen, iPhone, or iPad. Have you ever noticed this?

This bad gene has passed down through my multi-generational family, and I consider it a flaw from my husband’s side and a sign of dysfunctionalism, over which I have no control. After some cursory inquiries, I found many mothers and wives are experiencing the very same thing with identical resulting frustrations.

Have you ever heard a hostess announce that lunch/dinner was ready, only to note that the guests just sit there, no one wanting to be the first in line? I began noticing this phenomenon at an early age and decided for the rest of my life, I would always step right up and start the line a-movin’. This I have done.

It probably seems to many that I am always hungry, which is not the case; it is just that I don’t like mealtime dilly-dallying when it happens to me, and I don’t like my hot food to cool off.

Through the years, I have tried a bell. Too loud. A whistle. Too annoying. Then, recently, I tried sending out a group text that dinner was ready, that if they didn’t jump right into line, I was dumping it in the garbage. This had fairly good results, actually.

At 7:15 a.m. on any given morning, there will be a dozen or more pickup trucks at any and all convenience stores that sell fresh burritos or some other breakfast fare. I think wives have thrown in the dish towel and stopped making the effort to serve food at the family table. Modern-day families have probably covered the stovetop with a large board and are using it for painting on glass or some other hobby, and the oven is now a storage bin for pet food and kitty litter, maybe a bookcase or a toy box.

Restaurant fare is not altogether the healthiest diet, but the restaurants are full of families with children, and most are reading/sending texts or playing a game on their smart phones as they wait for their food to be served. They are sipping from a soft drink and leaving half of it in

the can, along with plates of barely touched food to be discarded on their departure.

When my children were young, eating in a restaurant was a treat reserved for special occasions.

Even then, the kids ate food shared from our plates. My husband and I discovered that the moment our kids walked into a restaurant, they thought they were hungry but actually lost their appetite the minute the food arrived at their place at the table.

My kids like to say they had to eat what we were willing to share from their father’s and my plates until they were 14 years old. I personally think that is an exaggeration, although they swear it isn’t.

Economic experts say spending too much money in restaurants jeopardizes a head-of-household’s ability to retire in comfort at the age of 65. Are those of us who grew up the opposite of affluent the only ones who notice these things? I still live by the “waste not, want not” rule.

We can’t use the “starving children in China” ploy anymore. We hear there aren’t any, but I am sure there are hungry children somewhere.

To improve quality of life, lower the divorce rate, lower cholesterol, bring families closer together, save for your retirement, and rescue our Western culture we should do the following: 1. Promptly come to the table when called. Make eating time a family time.

2. Families with children should eat in restaurants on special occasions only. (And leave all electronic equipment in the trunk of the car.)

3. Use the family stove and oven to prepare nutritious meals.

Seth Patterson is an avid naturalist and self-taught photographer who first discovered photography as a means to share his passion for nature with the world. Now a life-long pursuit, Seth focuses on using his photography as a tool to help educate and inspire the conservation of his subjects. He is an employee of Gorgas Science

Foundation, a nonprofit organization focused on conservation through education. Seth is also a participating photographer for the international Meet Your Neighbours Project.

Recipes for All Outdoor Chefs with Sandy Olson

Following close behind hamburgers,

steaks, and hot dogs, chicken is a favorite meat to cook on the grill. There are so many good recipes; it would be hard to run out of ideas. This one comes from the Hill Country of Texas and does need to be prepared the day before you plan to serve it. It marinates a long time to pick up lots of flavor. •

Saltgrass Trail Marinated Chicken Breasts

• 1 cup bottled zesty Italian salad dressing • 1 ½ cups vegetable oil • 1 can (12 oz.) papaya juice • ¼ cup soy sauce • ½ cup dry Italian dressing mix • ¼ cup seasoned salt • 1 tablespoon black pepper • 2 cloves garlic, minced • 1 fresh jalapeño • ½ bunch cilantro • 8 boneless, skinless chicken breasts Remove the seeds and stem from the jalapeño. (Use gloves to protect your hands.)

In a blender, place the bottled Italian dressing, oil, papaya juice, dry Italian salad dressing mix, seasoned salt, pepper, soy sauce, minced garlic, and the jalapeño.

Mix for approximately three minutes (or more, if necessary) until very well blended (emulsified). Pour into a large bowl. Chop the cilantro and stir into the marinade.

Add the chicken; cover and refrigerate for 24 hours.

When ready to cook, set the grill to medium heat and grill the chicken until a meat thermometer shows it is done. If you can cook it over mesquite wood, all the better as it adds a distinctive flavor.

Tropic Winds Hosts 1st Responders from Across the Lower Valley Special to Welcome Home RGV

Responders from across the Rio Grande Valley met at Tropic Winds in Harlingen March 8 to take a training course titled ‘Bleeding Control for the Injured.’ The course was taught by Ernie DeLeon, trauma program coordinator with Valley Baptist Medical Center in Harlingen.

The course covered treatment and techniques used for arterial and serious bleeding, including tourniquets and QuikClot products.

This course is part of the U.S. Department of Homeland Security and is being taught by members of the Trauma Advisory Team across the RGV. All 1st Responders in attendance received a certificate of completion

for the training from the National Association of Emergency Medical Technicians. Following the training, Dr. Eisen, sports medicine doctor, spoke to over 200 residents about staying active, dealing with injuries, and osteoarthritis. Dr. Eisen covered all treatment options to ensure Winter Texans can stay active and that you don’t let the disease stop you from doing the things you love and enjoy most.

Golf Courses in the RGV • • • Howling Trails Golf Course: One Beautiful Part of a Community Vision

Trails Golf Course, formerly known as Martin Valley Ranch, was established in 1984.

It was built and designed by local personnel and is located in Leisure Valley Ranch RV Park in Mission.

In the spring of 2014, the course was purchased by the La Joya School District. The district’s intention was to give children in the community something to do in their spare time.

They are planning to eventually build a planetarium, waterpark, and tennis courts, as well as other facilities in this area so the community will have a wide range of recreational choices.

At the present time, a number of renovations are being done to the course, including improving irrigation of the Bermuda greens and fairways.

The layout is 27 holes with three sets of tees. Two sets of tees are rated for men and one for women.

The ratings for men on holes 1-18 are 71.4/112 at 6175 yards and

67.9/108 at 5597 yards, on holes 10-27 are 72.2/114 at 6631 yards and 69.4/110 at 6088 yards, and on holes 19-9 are 71.4/112 at 6462 yards and 68.2/106 at 5911 yards.

The rating for women on holes 1-18 is 69.3/110 at 4881 yards, on holes 10-27 is 71.1/111 at 5394 yards, and on holes 19-9 is 70.4/111 at 5233 yards.

This course is open to the public with affordable green fees.

Mediterranean As spring and warmer days approach we seek out lighter dishes

packed with brightly colored vegetables and amazing flavor. This Mediterranean style pasta dish fits the bill and it is easy and relatively quick to prepare. It’s a perfectly lovely vegetarian dish but you could easily add some grilled shrimp to it as well. Enjoy! • • • • • • • • • • • • • • • •

1 can baby artichoke hearts, drained well 2 tablespoons pure olive oil 2 garlic cloves, minced 1 shallot, minced 1/2 lemon, cut in thin sliced circles 2 bay leaves 1/2 teaspoon red pepper flakes 2 cups unsalted vegetable stock 1/2 cup black olives, pitted and sliced in half 1/4 cup fresh basil, cut chiffonade 2 fresh tomatoes, diced 2 tablespoons butter Salt and pepper, to taste 1 pound penne pasta, cooked 1/2 cup feta cheese, broken into pieces

Bon Appetit!

Cook the penne pasta al dente, according to package instructions.

Coat a saucepan with 2 tablespoons olive oil and place over medium heat. Blot the artichokes dry and slice in half then add them to the pan. Add the garlic, shallot, lemon slices, bay leaves and red pepper flakes, sauté for 2 minutes, stirring occasionally. Add the stock and let simmer for 6-8 minutes. Add the olives, basil, tomatoes and butter, stir to incorporate. Taste and season with salt and pepper and remove from heat. Drain the hot pasta and place in a large bowl or into individual serving bowls. Top with the artichoke sauce and Feta cheese before serving.
